each week. Our themes this<br />
session are Happy Birthday<br />
<strong>and</strong> the Olympics. The themes<br />
next session are Space is the<br />
Place <strong>and</strong> Spirit Week.<br />

We had a great time celebrating<br />
the camp this week. Many<br />
campers marveled at the fact that<br />
the camp is older than they are. I<br />
guess it is hard to believe<br />
anything happened before they<br />
were born!<br />

In addition to all of the birthday<br />
madness, we also shared some fun<br />
times in cooking, clay <strong>and</strong> all the<br />
other fantastic things we did this<br />
week. Campers also took some<br />
time to recognize the start of the<br />
Olympic Games with an olympic<br />
all camp event. Groups<br />
participated in track <strong>and</strong> field,<br />
aquatics, <strong>and</strong> gymnastics events<br />
to earn points for their teams. Let<br />
the games begin!<br />

We had a great time playing in<br />
the moon bounce <strong>and</strong> swimming<br />
at the pool. The highlight of the<br />
night was the birthday sing-along<br />
<strong>and</strong> delicious ice cream<br />
cake!<br />

Mini-Quiche with<br />
Ve g e t a b l e s<br />
8oz broccoli<br />
1tsp extra-virgin olive oil<br />
8 oz mushrooms sliced<br />
1/4 cup sliced scallions<br />
1/4 cup shredded swiss cheese<br />
5 eggs<br />
3 egg whites<br />
1 cup 1% milk<br />
Position rack in center of oven,<br />
preheat to 325F. Coat non-stick muffin<br />
tin generously with cooking spray.<br />
Heat large non-stick skillet ,add oil<br />
<strong>and</strong> mushrooms, then cook stirring<br />
often until golden brown (5 minutes).<br />
Transfer to<br />
bowl <strong>and</strong> let<br />
cool for 5<br />
minutes. Stir<br />
in scallions,<br />
cheese <strong>and</strong><br />
pepper.<br />
Whisk eggs, egg whites <strong>and</strong> milk.<br />
Divide the egg mixture among<br />
prepared muffin tin. Sprinkle heaping<br />
tablespoon of the mushroom mixture<br />
into each cup.<br />
Bake until the tops are just beginning<br />
to brown, 25 minutes. Let cool on a<br />
wire rack for 5 minutes then flip over<br />
muffin tip <strong>and</strong> turn quiches out onto a<br />
rack. Turn upright <strong>and</strong> let cool<br />
completely.
