CRITERIA FOR RECOGNITION AS A COOK:<br />

Section 1. To be considered for Recognition you must satisfy one of the following criteria.<br />

Minimum of 6 years experience as a Cook with no formal qualifications<br />

Cert III in Hospitality – Commercial Cookery + 2 years post certificate experience as a Cook<br />

Cooks Grade One Course - Trained by & employed in Royal Australian Army, Navy & Air Force<br />

+ 6 years as an Army Cook<br />

Overseas qualification as a Cook<br />

Section 2. To be considered for Recognition as a Cook you must be able to perform the following tasks.<br />

Task<br />

Prepare stocks, soups, sauces, vegetables, appetisers, salads, eggs and farinaceous dishes<br />

Prepare hot and cold desserts, pastry, cakes and yeast goods<br />

Prepare and cook poultry, meat, game and seafood<br />

Plan and prepare food for buffets<br />

Plan and control menu based catering<br />

Use basic methods of cookery<br />

Prepare, cook and serve food for menus<br />

Work with colleagues and customers and work in socially diverse environments<br />

Receive and store kitchen supplies<br />

Product costing and recipe formulation<br />

Follow health, safety and security procedures<br />

Food safety regulations<br />

Occupational Health and Safety regulations<br />

Understanding of requirements to oversee and support training of apprentices and trainees<br />
