New Officers Installed at December Holiday Meeting<br />

The December meeting of the <strong>Middlebrook</strong> <strong>Ruritan</strong> Club was certainly one of celebration.<br />

The color for the evening was definitely red with a sprinkling of green. Redeemer<br />

Lutheran Church in McKinley prepared the meal and decorated the community center.<br />

As usual, they did a wonderful job and everyone certainly was well fed. The dessert was<br />

special and many have asked for the recipe. The recipe is included in this newsletter.<br />

thank those officers and board members who have completed<br />

their terms of office: Mike Johnson, Kathy Feher, Dale Hungarford<br />

and Jerry Jarvis. John Pilson was honored for over 40 years of<br />

service to the club as Sergeant‐at‐Arms. (Pictured at the right.) As<br />

the incoming President, Rick presented Mike Payne with a Past<br />

President pin.<br />

Entertainment for the night was provided by Rick Dellinger. The<br />

Christmas program of singing and good will was enjoyed by all. Rick<br />

has donated his talent to <strong>Ruritan</strong> Clubs across the state, including last<br />

years <strong>Middlebrook</strong> Fish Fry.<br />

We look forward to <strong>2010</strong>, to a time of fellowship and helping our community<br />

be the best that it can be. A special thank you to all members<br />

and their families for their support during 2009.<br />

Message from the President<br />

I am honored to be your President this year. We are an active club with<br />

many good works and fellowship that improves every aspect of our community.<br />

We can look forward to another successful year starting with the benefit<br />

breakfast on <strong>January</strong> 23rd for Richard Smith. Richard has been diagnosed<br />

and is being treated for cancer. While Richard does have insurance, he is<br />

unable to work and needs help for co‐pays and household expenses.. Richard’s<br />

career as a farrier has spanned 25 years. He lives on Cherry Grove in <strong>Middlebrook</strong> and has<br />

two daughters at home.<br />

Let’s have fun and make a difference in <strong>2010</strong>. Rick<br />

Kitchen Corner: Striped Delight<br />

35 OREO cookies, finely crushed (about 3 cups)<br />

6 Tbsp. butter or margarine, melted<br />

1 Pkg. (8oz) Cream Cheese<br />

1/4 Cup sugar<br />

2 Tbsp. cold milk<br />

1 Tub (12oz) Whipped topping, thawed, divided<br />

3 1/4 Cups cold milk<br />

2 Pkg. (4‐serving size each) Chocolate Instant Pudding & Pie Filling<br />

Mix crushed cookies and butter in medium bowl. Press firmly onto bottom of 9x13 baking dish. Refrigerate<br />

10 minutes.<br />

Beat cream cheese, sugar and 2 Tbsp. milk in medium bowl with wire whisk until well blended. Gently<br />

stir in 1‐1/4 cups of the whipped topping. Spread over crust.<br />

Pour 3‐1/4 cups of milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes or until<br />

well blended. Pour over cream cheese layer. Let stand 5 minutes or until thickened. Drop remaining<br />

whipped topping by spoonfuls over pudding : spread to cover pudding.<br />

Refrigerate at least 4 hours. Cut into squares. Store leftover dessert in refrigerator.<br />

Tip…..For a festive look, sprinkle dessert squares with crushed candy canes<br />

Riverheads Patriotism Day<br />

The <strong>Middlebrook</strong> <strong>Ruritan</strong> Club supported the Riverheads Patriotism<br />

Day with a donation. In addition, members participated in<br />

the parade. A student at Riverheads Elementary School wore the<br />

Rudy Bear costume. Guided by a classmate, he enjoyed his time<br />

in the spotlight.<br />

<strong>2010</strong> marks the 70th Anniversary of the <strong>Middlebrook</strong> <strong>Ruritan</strong> Club. The April meeting will celebrate<br />

this accomplishment. Mark you calendars and plan to attend. Entertainment will be provided by<br />

Ben Heizer.
