New Officers Installed at December Holiday Meeting
The December meeting of the Middlebrook Ruritan Club was certainly one of celebration.
The color for the evening was definitely red with a sprinkling of green. Redeemer
Lutheran Church in McKinley prepared the meal and decorated the community center.
As usual, they did a wonderful job and everyone certainly was well fed. The dessert was
special and many have asked for the recipe. The recipe is included in this newsletter.

thank those officers and board members who have completed
their terms of office: Mike Johnson, Kathy Feher, Dale Hungarford
and Jerry Jarvis. John Pilson was honored for over 40 years of
service to the club as Sergeant‐at‐Arms. (Pictured at the right.) As
the incoming President, Rick presented Mike Payne with a Past
President pin.
Entertainment for the night was provided by Rick Dellinger. The
Christmas program of singing and good will was enjoyed by all. Rick
has donated his talent to Ruritan Clubs across the state, including last
years Middlebrook Fish Fry.
We look forward to 2010, to a time of fellowship and helping our community
be the best that it can be. A special thank you to all members
and their families for their support during 2009.

Message from the President
I am honored to be your President this year. We are an active club with
many good works and fellowship that improves every aspect of our community.
We can look forward to another successful year starting with the benefit
breakfast on January 23rd for Richard Smith. Richard has been diagnosed
and is being treated for cancer. While Richard does have insurance, he is
unable to work and needs help for co‐pays and household expenses.. Richard’s
career as a farrier has spanned 25 years. He lives on Cherry Grove in Middlebrook and has
two daughters at home.
Let’s have fun and make a difference in 2010. Rick
Kitchen Corner: Striped Delight
35 OREO cookies, finely crushed (about 3 cups)
6 Tbsp. butter or margarine, melted
1 Pkg. (8oz) Cream Cheese
1/4 Cup sugar
2 Tbsp. cold milk
1 Tub (12oz) Whipped topping, thawed, divided
3 1/4 Cups cold milk
2 Pkg. (4‐serving size each) Chocolate Instant Pudding & Pie Filling
Mix crushed cookies and butter in medium bowl. Press firmly onto bottom of 9x13 baking dish. Refrigerate
10 minutes.
Beat cream cheese, sugar and 2 Tbsp. milk in medium bowl with wire whisk until well blended. Gently
stir in 1‐1/4 cups of the whipped topping. Spread over crust.
Pour 3‐1/4 cups of milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes or until
well blended. Pour over cream cheese layer. Let stand 5 minutes or until thickened. Drop remaining
whipped topping by spoonfuls over pudding : spread to cover pudding.
Refrigerate at least 4 hours. Cut into squares. Store leftover dessert in refrigerator.
Tip…..For a festive look, sprinkle dessert squares with crushed candy canes
Riverheads Patriotism Day
The Middlebrook Ruritan Club supported the Riverheads Patriotism
Day with a donation. In addition, members participated in
the parade. A student at Riverheads Elementary School wore the
Rudy Bear costume. Guided by a classmate, he enjoyed his time
in the spotlight.

2010 marks the 70th Anniversary of the Middlebrook Ruritan Club. The April meeting will celebrate
this accomplishment. Mark you calendars and plan to attend. Entertainment will be provided by
Ben Heizer.
