8oz butter<br />

8oz light brown sugar<br />

4 eggs<br />

7oz S.R. flour<br />

1 teasp baking powder<br />

2 teasp ground cinnamon<br />

2 tablesp orange juice<br />

rind <strong>of</strong> half an orange<br />

4 oz walnuts (chopped)<br />

10oz carrots (grated)<br />

Topping<br />

7oz cream cheese<br />

1 tablesp icing sugar<br />

Orange juice to mix<br />

Place first 7 ingredients in<br />

mixer/food processor and mix<br />

for 20 secs. Fold in carrots and<br />

walnuts. Place in a lined, greased<br />

tin (base lined) 8” square or 9”<br />

round x 2” deep. Oven 180C, 1hr<br />

20 min cooking time. When completely<br />

cool spread on the topping.<br />

Brothers Trophy<br />

Biggest is not necessarily best. The judges are looking for what would be the best eating, if cooked, so in Class 14,<br />

giant but coarse stems <strong>of</strong> rhubarb will lose out to more slender but tender ones. At the same time, appearance is<br />

just as important. The three stems should be straight, should match in size and length, should be without blemish<br />

and have a good red colour. They should be clean, but complete, so leaves and an untrimmed base should be left<br />

on. The same criteria apply to the other classes. For instance, the culinary herbs shouldn’t be in flower, because<br />

it’s the leaves, not the flowers, that are used in cooking. Complicated? That’s why judging is so skilled and we are<br />

so grateful to the judges who give their time and expertise every year.
