Unique features<br />

The gelatination properties of ELIANE starch resembles that of<br />

conventional potato starch. However the gelatinization proceeds<br />

faster and as a result of the absence of amylose extreme clarity<br />

is obtained. Also unique is the formation of broken granules by<br />

shear of modified ELIANE . This is not observed with regular<br />

potato starch. This feature imparts excellent creamy taste and<br />

shiny appearance in liquid style products like fruit fillings,<br />

desserts, sauces and bakery cream.<br />
