4 THE PENNSYLVANIA ODD FELLOW Fehruary 2007GRAND MASTER'S COLUMN CupidBarney was looking at some old Valentine'sDay cards, late on a blustery afternoon inearly February. He liked to reminisce. Hewent out to feed Warden and Conductorand then returned tohis easy chair. When hegot home from school, his wife was gone. Her Rebekah lodge was having a covereddish before the meeting. She left Barney'sdinner in the oven. Barney always lookedthrough things he had accumulated over theyears, while his wife was away. Mrs. Wellswas a fastidious housekeeper and would notallow Barney to spread out his preciouscollections in the house.Barney noticed that one ofthe cards fromhis youth had a photo of a statue of Cupid,in Rome, as its cover. Strangely, he noticedthat Cupid's sash was fastened by a threelinkpin.Barney thought there might besome meaningto the pin. On most days, Barneywasstllckworking on the farm after he was done teachingschool.Sinceitwas 1943 and the war hadmonopolized all aspects of life, the opportunitiesfor diversion were limited. The week before Valentine's Day, Barneythought he would take a trip to the library atPrinceton to see if one of his Army buddiesfrom World War I, and a lodge brother, wasstill a librarian at the University.Barney brought the old Valentine Cardwith him. He entered the library and sawTom performing some maintenance on thecard catalog.Barney walked over to Tom and said, "Isee the old soldiers are still working on thehome front."Tom looked up and began laughing. Hegrasped his right lapel and asked, "Are youlooking for me?" Barney replied, "For you."FROM THE DESK OFTHE GRAND SECRETARYAfter more than an hour catching up on oldtimes and the events of several years, Barneypulled outthecard. Heasked Tom ifhe knewanything about the statue or the pin. Tomsuggested Barney give him a week to do someresearch. Barney agreed to come back thenext Saturday.Tom was waiting for Barneywhen he returned the followingSaturday. The answerlong and surprising. Tomhad spoken to the ArtHistory faculty membersand poured overmany books. The sculpture wasover 1,700 years old.The artist was unknown. He was believed to be a member ofa secret group in Rome that used thethree links as its recognition symbol. Thegroup was formed as a response to the repressionofthe Roman government. The societyused the principle of friendship, love andtruth as guides.Barney exclaimed, "Wow, it sounds likethey were Odd Fellows."Tom replied, "Yes, but it gets even moreinteresting.""How?" Barney asked."Well" said Tom, "This is where the storygets a little hard to believe."Barney was quite anxious, so Tom told thestory."The ancientsociety used cupid as its guideand protector. When hesaw a person wearinga three-link symbol in trouble, he wouldshoot an invisible arrow at the assailant andall that person's anger and ill feeling would beconverted to friendship, love and truth. Thisseems to be what we follow in the Odd FelDear Readers,To all you gardeners that are looking at your seed catalogs planning for the coming growingseason. Two things to think about: 1-What can you do to make your lodge look better? Afteryou come up with something, get your lodge brothers to he lp you in doing the project. 2 -Sinceit will be the growing season, think about what you can do to make your lodge grow. Becomeactive in your community as a group ofOdd Fellows. This way the people to your commuOitywill get to know about your Lodge, and may even want to join to he lp you with your projects.By this I do not mean to limit this to gardeners - you can all be gardeners plantmg the seedsof good will in your community, with the end result your lodge will grow.Fraternally,William L. Locke, Grand Secretarylows, except without Cupid."Barney thought this may be the ancientbeginning of our Order. Tom agreed andfelt that they needed to spread this story.A t the next meeting ofhis lodge, Barneytold the story to the members. The memberswere interested and started thinkingofways to use the newfound know ledge. The lodge decidedthat it would commissionthree-link pinswith cupid as the background. The lodgemembers would givethe pins to their wives. After much pleading, a memberwho was a jeweler was able toget the pins done before the end ofFebruary. The pins were distributed at the lastmeeting in February. The members tookthe pins home and gave them to theirwives. The magic happened. After receiving the attractive pins, thewives began responding more favorablytoward the lodge. It was as though Cupidhit all the wives with an F.L.T. arrow. The moral of the story is that we shouldinclude our families in our lodge activities. If we don't bring in our family members, our lodge will not continue. We needto use the family as the seed for lodgegrowth and expansion.Next month - Barney goes on vacationComments and questions are alwayswelcomed by the Grand Master. TheTownship people who needed to approve itsaw very quickly the problem we had. The bridge will not fall as we cross over to the other sideof the stream, or the airplane will not crash because the Pilot is welltrained and the airplane is well engineered, tested, and proven.HOPE is a feeling of what is wanted to happen, like hope for peacein the world. For this to take place we must put our hope in God. WithFaith in God that his will shall be done on earth as it is in Heaven.CHARITY is the act of good will, benevolence, kindness, orleniency in judging others. Now you have FAITH, HOPE, andCHARITY but the greatest of these is CHARITY. Although wepossess ~Il other ventures, if we are destitute ofCHARITY we are butas sounding brass, or a tinkling cymbal. We are directed to a Faithin God, the Father ofSpi rits, the maker and preserver ofthe Universe. He wants to impress upon eachone the importance ofalways showingCHARITY to each brother, sister, and every person you meet. The DSGM, by direction of the SGM, declared the SovereignGrand Lodge open for hllsiness. 26 THE PENNSYLVANIA ODD FELLOW February 2007GRAND MASTER'S RECIPE COLUMN ChickenAftersix months as Grand Master, I have learned that Odd Fellowslike chicken. Well, the Grand Master likes chicken too. I have listedthree recipes that will satisfy the chicken-lover in you.Chicken Croquettes1 y,; cups cooked chicken-chopped fine or groundliz teaspoon saltliz onion - grated1 teaspoon lemon juice1 teaspoon celery leaves - finely chopped2 teaspoons chopped parsley1 cup half and half-warmed (I have done this with regular milk andeven with skim, very little difference)1 liz Tablespoons bu tter2 VI Tablespoons flour (all-purpose)1 VI cups bread crumbs2 eggs - beaten1 liz teaspoons dill weedMix the chicken with the salt, grated onion, lemon juice, choppedcelery leaves, dill weed, and parsley (and spices if desired; somerecipes add cayenne, others thyme or nutmeg, I think you are betteroff sticking to just salt). The lazy (or efficient) way to do this is toput the ingredients in a food processor do all the chopping, leavingyou with asmooth paste. Some consumers would prefer a paste whileothers like their food chunky, I believe the older crowd would preferthe paste.Heat the butter in a saucepan, stir in the flour and cook slowly, stirring constantly for 2-3 minutes (this is called a roux). Pull off theheat, blend in the warm halfand halfwitha whisk; return to the heatand continue whisking till you have a thick white sauce (\-vhole milkmight work too, some recipes use it instead of half and half, I haveeven used skim). Season with a little salt and other spices if youprefer.Add the chicken mixture and stir through thoroughly. Spread themixture in a cookie sheet to cool, refrigeration is preferable. After cooled, use 1 heaping Tablespoon to form each croquette, the cone shape is obtained by pressing the chicken lightly into aflexible plastic funnel (not required). You may need to coat thefunnel lightly with vegetable oil if the chicken sticks. If you are alittle artistic, use your hands to form whatever shape you desire(gloves preferred). If the chicken is too sticky to work with, add morebread crumbs. If is too dry, add milk.If you form all the croquettes at one time and set them on cookiesheets covered with parchment or waxed paper, they may get toowarm, refrigerate again before breading so they don't flatten out. Ifyou have two people working, you can easily bread them and putthem on the sheet pans in the same step as forming them.Breading requires two pans ofcrumbs, then the eggs then the finalpan of crumbs. After you have formed and breaded the croquettes, they must be thoroughly chi lied, overnight if possible. Freezing maycause ice crystals to form. Ice crystals degrade your cooking oil sofreezing should be avoided.Fry indeepfat in a wire basket for about 1 minute; if you don't havea deep fryer, make the croquettes smaller and cook them in a deepskillet in about ~ inch of vegetable oil, turning frequently.Observations1. This is a "scrap" recipe. If you served fried or roast chicken theday before and it did not sit in the danger zone between 41 Q and140 Q F for more than four hours, you can use it again and savecosts.2. The way I would plate it is to serve three or four croquettes withmashed potatoes and gravy and a vegetable. The croquettes arecone-shaped and resemble mountains, the gravy should bedrizzled slightly on the top to resemble a snow-capped peak, nota flood. The vegetable should have color. A light dusting ofpaprika around the edge of the plate will add color too; colorfulplates are better received, regardless of taste.3. Use the leftover mashed potatoes for soup (or potato cakes) thenext dayChicken CasseroleCook four medium to large chicken breasts, cool and dice intosmall chunksMix the diced chicken in a bowl with1 can of mushroom soup3 VI ounces crushed "ripple" potato chips4 Tablespoons butter4 Tablespoons floury,; teaspoon pepper2 y,; cups milkMove into baking dish, sprayed with non-stick spray, and bake at375 Q for 35-40 minutesChicken Cheese Log1 8-oz package of Philadelphia Cream Cheese1 Large can of boneless Chicken breastparsleygrated onion, enough for tastedash of W orcestershire sauceMix all ingredients together, shape into logor ball, roll in crushed/sliced almondsPotato CakesThis is the ultimate, use up your left-overs recipeFor each cup of left over mashed potatoes, chop one-half a smallonion. Saute the onion in a small amount of margarine until clear.Mix the mashed potatoes and onions together.Form into cakes that look like thick hamburgers.Lightly dust the cakes with flour.Put about one-half inch of vegetable oil in a skillet and get it hot.Fry the cakes till golden brown, turning once.Periodical MailJOHN & EMILIE CUPP2 W.
