My daughter was recently diagnosedwith celiac disease and milk intolerance (only the casein protein)and the difference has been huge in everything from her sleepinghabits and personality to the amount of food she eats!I remember the doctor asking me if Peyton was a good sleeperand my response was, “Yes, but it takes her a bit to fall asleep.”Then she asked me how her bed was in the morning, and I laughedand said we called her “our little lion” because her bed is a messand her hair is matted and sticking in all directions. The doctor thenasked me questions about everything regarding how much she ateto how many times she visited the restroom. By the end of our conversation,she told me she guessed Peyton had milk intolerance, butshe would begin testing her for a variety of intolerances. She toldme to not let her drink milk for 48 hours and then see how she is themorning after that.We did and it was wild the difference it made! She went to bedafter I tucked her in, we didn’t go back and forth for an hour, herhair was stick straight in the morning, and the best part, she washappy! She didn’t fight me to brush her teeth and hair! I thought,wow, this must be a coincidence! So we continued with no milk tosee what the rest of the week was like and, sure enough, it was thesame happy, well-rested little girl! The best part, my skinny little girlwanted to eat! No more of my trying to bribe her to eat—she wasasking me for food and she didn’t stop! For the first time in her life,she couldn’t get enough food!Shortly after our little experiment, we got the test resultsthat she did have milk intolerance, as suspected, but we did geta shocker when she tested positive for celiac disease. So, whilewe were on the right track with no milk, we had to add no gluten(wheat, barley or rye) to our list. Being that I am a super A-type personality,I took it very seriously and began doing a ton of research,and within a day we had donated our pantry, refrigerator and freezerfull of milk and wheat foods to my sister, cleaned the whole kitchenand were on the way to getting all of our gluten-free foods, cookbooksand new cookware. We are now officially a gluten-free kitchenand house!
