ISOMALT's recipe for successISOMALT is a sugar replacer consisting of disaccharide alcohols. It is the only sugarreplacer derived exclusively from beet sugar. ISOMALT is manufactured in a two-stageprocess in which sugar is first transformed into isomaltulose, a reducing disaccharide(6-0-alpha-D-glucopyranosido-D-fructose), which is then hydrogenated, using a metal catalyst.ISOMALT is a white, crystalline substance containing about 5% water of crystallisation. It isavailable in a wide range of particle sizes – from granulate to powder – to suit any application.BENEO-Palatinit > Food Ingredients > ISOMALT > Manufacturehttp://www.beneo-palatinit.com/en/Food_Ingredients/Isomalt/Manufacture/Page last modified on 2009-04-09 14:52Page 1
