Hot PotThe best thing about this recipe is that it takes very little effort to create but is sensationally tasty. Perfectfor the end <strong>of</strong> summer BBQs, a quiet night in or a pre-boozy night charge. Kangaroo is remarkably cheap andthe difference in flavour from beef isbarely noticeable. It is also a more viableagricultural alternative to cattleand the meat is exceptionally lean soyou can eat more without the extra fat.Ingredients-Lillydale chicken burgers - althoughyou could make some patties withchicken mince, an egg, and somebread crumbs.-Kangaroo burgers-Tomato-Cucumber-Beetroot-Cheese-Lettuce-Satay sauce-Relish (your mother's home-made, local market boughtor store bought pickle)-Fresh rollsMethod1. Fry up your chicken and kangaroo burgers (cook themseparately). Whilst they cook, slice your cucumber, tomato,cheese and lettuce. If you're cooking for multiplepeople it may be best to place all the ingredients ona platter so that people can build their own burgers totaste. There will always be someone who doesn't liketomato or, unbelievably, beetroot.2. Cut the rolls. You can butter the buns if you like butwhat is the point, you can barely taste it with all the goodstuff on it.3. Add the cheese. It's best to place cheese on the baseand the cooked burger on top. This allows thecheese to melt.4. Add the satay sauce to the chicken burgers, relishto the kangaroo.5. Top with chosen salad additions. Grated carrotworks really well with satay chicken and if youwant to go for a fresher option, grated beetrootworks wonders with the kangaroo meat.6. Top with lettuce and the other half <strong>of</strong> your roll.If you’re conscious <strong>of</strong> losing weight, then deletethe roll (especially if this is for dinner when youleast need the carb fuel). Have the same set upbut with lots more lettuce on the bottom - havea burger salad instead.
