Hardy taprooted biennials with wide leaves<br />
make scrumptious and medicinally charged<br />
roots the first year. Sow in the spring by planting<br />
directly in beds where the soil is deep and<br />
easy to dig. Sow seed 2 inches apart and 1/2<br />
inch deep, in rows 2 feet apart. Seed germs in<br />
6 to 12 days. Harvest in 10 weeks or more. In<br />
the second year the root becomes woody and<br />
the plant gives rise to characteristic flowers<br />
followed by catchy burrs. Most gardeners cut<br />
them back in early flower and mulch the crown<br />
with the top <strong>of</strong> the plant.<br />

yields vigorous, stocky plants with thick, solid,<br />
tender yet crisp stalks. Celery seed is one <strong>of</strong><br />
