At this writing we are packing our bags to depart for Cape Town, South Africa. We are on our way to attend the 36th
International Relais & Chateaux Congress, where Westglow will be inducted as a new member of this elite group. It is
hard to believe we are about to become a part of the Relais & Chateaux family. We are both delighted and humbled by
this great honor. As we have traveled around the world, we have always sought out Relais & Chateaux properties as the
finest resorts on the planet. There are only 42 properties with this distinction in the United States, and only a few
hundred around the globe.
While in South Africa, we will be staying at Le Quartier Francais, where we look forward to observing and learning
the nuances of what makes a seasoned Relais & Chateaux property an experience like no other. After our induction
ceremony, we are taking a Butterfield and Robinson bicycle tour where we will explore the Cape Peninsula coast before
heading inland to the Franschhoek Valley, with its magnificent vineyards. Afterward, we will spend a day on safari and
then conclude our trip in Hermanus, a fishing village famous as a whale watching destination.
In addition to the excitement over our new relationship with Relais & Chateaux, we have more good news to share.
Westglow Resort & Spa was chosen by the SpaFinders Readers Choice Awards as a top ten spa in four out of ten
categories this year: Best Boutique Spa, Best Spa for Hiking, Best Cuisine and Best Spa for Romance. With these
great honors, comes great responsibility to live up to the highest standards in our industry, and it will continue to be

At the 36th International Relais & Chateaux Congress in Capetown,
South Africa, Westglow Resort & Spa was inducted as a
new member of the elite Relais & Chateaux.
Westglow’s acceptance by Relais & Chateaux, is the
ultimate validation for the hard work and vision of Bonnie
and Jamie Schaefer. Established in France in 1954, the
association accepts only the most outstanding properties
with truly unique character. There are only 42 properties
with this distinction in the United States and only a few
hundred around the world. We are in very good
company in our region with the Inn at Little Washington,
Blackberry Farm and the Fearrington House.
Relais & Chateaux is also known for its tradition of “la Route du Bonheur” or “Road to
Happiness.” In 1954, five unique small properties in France banded together to create a
touring route from Paris to Nice called the Route du Bonheur. Guests were welcomed to
each unique and special property in turn as they traveled south. As guests experienced
the quality and service theses properties offered, the Relais and Chateaux association
began to grow. Today, Relais & Chateaux is an exclusive collection of the finest hotels
and gourmet restaurants, including Westglow Resort & Spa!

Favorite Winter Recipe:
Foie Gras Bread Pudding
Serves 8-12
1 Lb. foie gras, cut into large cubes
1-1/2 C. onion, julienned
3/4 C. fennel, diced
3/4 C. leek, sliced
1 Lb. wild mushrooms, such as chanterelles, chopped
5 eggs
2 C. heavy cream
8 slices rustic bread, cubed, about 4 cups
1/2 C. parmesan cheese, grated
Preheat oven to 375°. Grease a 2 quart baking dish with butter (or for a
more refined plated presentation, grease 8-10 individual size ramekins).
Heat a large saute pan over medium high heat until very hot, add the
foie gras and sear for 30 seconds, stirring constantly.
Remove the foie from the pan, drain on paper towels, reserve. Add the
chopped vegetables to the foie gras fat left in the pan and saute until soft
and a little browned.
In a mixing bowl, whisk together the eggs and heavy cream. Stir in the
cooked vegetables; add the bread and mix well; fold in the foie gras;
season. Pour mixture into baking dish (or ramekins), top with shredded
cheese, and bake about 1 hour (it will take closer to 30 minutes if using
ramekins). Allow to rest before serving. If using the ramekins, run a knife
around the edge of bread pudding, and invert onto plates.

that burn up mega-calories. Or stay indoors and work out at our beautiful Life Enrichment Center.
There are classes waiting for you every day from Pilates and Yoga to Cycle and Sculpt.

assessment a year. Now is the perfect time to get on a great program.
As for diet, the holiday season presents many calorie challenges. Helpful tips include the following:
eat a healthy snack before you go to a party and you will be less likely to over eat; watch your
drinking as mixed drinks and beer contain an abundance of calories; stick to the vegetable and fruit
trays when you celebrate; and if you are the host, learn to make low-calorie and low-fat treats.
