Our special place in the mountains is blessed with four distinct seasons, each as uniquely different and beautiful as
the others. As we write this letter, we have experienced the peak of fall foliage in the breathtaking Blue Ridge Mountains.
This is usually the time we leave the High Country. This year we decided to stay longer and enjoy the winter season in
all its beauty.
For many of us snow still holds a memory of childhood play. With the first snow of the season comes a renewal of our
spirit, a recollection of simpler times, and the purity and innocence of our youth.
After a brisk morning hike, we cozy up in front of the fireplace with a mug of hot chocolate or mulled apple cider and a
good read to enjoy the tranquility. While watching the mist rise majestically off the mountains it is the peace and quiet
that we most enjoy and appreciate. Many of our guests come to Westglow for the serenity of the season. Curling up with a
good book and a glass of wine is the perfect antidote to the rush of their daily lives while others find watching their favorite
game in our library to be the perfect conclusion to a day of relaxation. Whatever your passion, you’ll find it here.
There’s so much history and tradition tied to the mansion that draws our guests back. We really have a strong passion and
connection with our resort, and we want to share it with others. We hope you enjoy our home as your home as you uncover
the magic of the winter season.

make it an extraordinary one by creating a beautiful place, with multi course menus inspired by seasonal,
farm-fresh products and produce, superbly prepared, beautifully presented and served with grace.
The menu at Westglow's dining venue Rowland's changes seasonally so that we may take advantage of
the best and freshest local produce available to us every time of the year. Our signature dishes include
Prime NY Strip with seasonal side dishes and Sea Bass with Black Forbidden Rice, and for dessert, the
legendary Chocolate Earth.
Reserved seating is available from 5:30pm until 8:30pm. Come early to enjoy your favorite wine or cocktail
at the Bar in the Library. Small Bites at the Bar extend the dining experience to a quick and casual setting.

Favorite Recipe:
Chocolate “Earth”
with Chocolate Ganache, Chocolate Bisque
and a Chocolate Soil (crumble)
This dish has been one of our favorite desserts. It’s a chocolate lover’s fantasy, and all the different textures of
chocolate come together to create a very unique dish. This dish can be tailored to the seasons by changing
the temperature of the bisque. Adding a hot bisque for colder weather or the bisque can be chilled for the
warmer summer months.
Serves 6
Chocolate Bisque
1 C. Heavy Cream
1/4 C. Sugar
1/2 C. Chocolate (high quality
dark chocolate)
3 Large Eggs
Chocolate Soil
3 Tbs. Butter
1/2 C. Sugar
2 Whites of Large Eggs
1 C. Flour (all purpose)
1 tsp. Cinnamon
1 tsp. Brown Sugar
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
Chocolate Custard
1. Preheat the oven to 300° F.
2. Bring the heavy cream, half and half, sugar and vanilla to a simmer.
Whisk in chocolate until it is completely dissolved.
3. Slowly temper the cream and chocolate mixed into the
whisked egg yolks. Strain through a fine mesh sieve.
4. Place into a 5x9 baking dish. Wrap with aluminum foil.
Place the baking dish into another larger baking dish
with a hot water bath in the bottom.
5. Bake for 45 minutes to one hour until done.
Chocolate Soil
1. In an electric mixer, cream the butter and sugar together.
2. Add the egg whites slowly until fully incorporated.
3. Add the remaining ingredients and incorporate completely.
4. Spread in a thin layer on a baking sheet with parchment paper.
5. Bake at 300° F for 35-45 minutes. Break large chunks apart
and bake for another 5-10 minutes until really crunchy.
6. Pulse in a food processor until a fine crumble results.
Chocolate Bisque
1. Combine the sugar, heavy cream and chocolate in a medium
sauce pan. Bring to a simmer and whisk until chocolate
and sugar are both completely incorporated.
2. Whisk the eggs together. Temper the chocolate cream mixture
into the whisked eggs slowly as to not cook the eggs.
3. Strain through a fine mesh sieve and retain hot for service.
For plate up drag a line of the chocolate soil across the edge of the
bowl. Spoon the chocolate custard into a ring mold in the center
of the plate. Stud the dish with the washed raspberries and the mint.
Pour the bisque onto the dish tableside and enjoy.

4 C. Heavy Cream
1 C. Half and Half
1/2 C. Sugar
1 tsp. Vanilla Extract
1 C. Chocolate
8 Yolks of Large Eggs
1 pint Raspberries (for garnish)
1/8 Mint (for garnish)
