2 PRODUCT CHARACTERISTICS<br />
2.1 Product groups<br />
The subject of this report is the market for spices <strong>and</strong> herbs. The main international trade is<br />
for spices <strong>and</strong> herbs, dried <strong>and</strong> in crude form, cleaned but not further processed. It is<br />
estimated that about 85 per cent of the trade is in this form. The remainder is for crushed or<br />
ground spices, essential oils or oleoresins. Information on related products may be found in<br />

The ready-to-use spice mixtures, as described in section 3.1.2 are mixes of spices <strong>and</strong><br />
herbs combined with salt <strong>and</strong> often with garlic, lemon, dried vegetables or other<br />
ingredients. Appendix 1 gives a description of each major spice/herb <strong>and</strong> its use.<br />
