Our wines are designed to capturethe essence of the region ensuring absolute quality all the way. This begins in our vineyards, through every step of winemaking,to the glass in front of you. We trust you will enjoy our selection of wines carefully crafted by our dynamic winemaking team ofScott Collett, Ben Glaetzer and Trevor Roether.2010 <strong>Woodstock</strong> ‘Mary McTaggart’ Riesling Estate Grown 7 28In honour of the Collett family matriarch, Mary McTaggart. A lover of all things aromatic, Mary started at <strong>Woodstock</strong> estate’sflourishing herb garden, from which we source for parts of the coterie menu. The delicately perfumed Riesling grape made herfavourite wine, and this scented example comes solely from a small north facing vineyard on the sandy slopes of the highest partof the estate.This wine makes a fine companion to fresh seafood dishes, just how Mary enjoyed it. A delicate wine showing elegance andfinesse with citrus, floral aromas and underlying mineral notes. Its lean natural acidity is appealing, ensuring the palate is clean,crisp and refreshing.2009 <strong>Woodstock</strong> Riesling Estate Grown 6.5 25This Riesling was made from 36 year old Estate Grown vines planted on sandy soils in a north facing vineyard. To ensure wecaptured the delicate flavours of the Riesling varietal while maintaining its natural acidity, the fruit was harvested in the cool ofnight. Only free-run juice was used to ensure intensity and purity of flavours.The 2009 Riesling is a delicate wine displaying citrus notes, grapefruit pith and a Granny Smith acidity on the palate. With its leannatural acid structure, it will age gracefully for many years to come!2010 <strong>Woodstock</strong> Semillon Sauvignon Blanc <strong>McLaren</strong> <strong>Vale</strong> 5.5 22Planted in 1988 on rootstocks, this Semillon clone was specifically chosen for its tropical fruit character and zippy acidity. Toensure we get the best flavours from this variety, yields are deliberately kept low. Sauvignon Blanc sourced predominantly fromselected cooler vineyards in <strong>McLaren</strong> <strong>Vale</strong> provide intensity and lift.The 2010 vintage displays intense gooseberry and passionfruit characteristics which are, reminiscent of a New ZealandSauvignon Blanc. The palate is clean and refreshing with traces of starfruit, loquats and a hint of green capsicum is evident. TheSemillon ensures the flavours linger with intent, and finishes crisp with vivid lemon peel and grapefruit acidity.2009 <strong>Woodstock</strong> Chardonnay Estate Grown 6.5 25This single vineyard wine comes from a specially selected clone of the chardonnay variety and resides in our ‘Creek Block’ since1981. The grapes are picked when the flavours are rich and the natural acidity is still high.A fruit driven wine showing hints of kiwi fruit, rock melon and an abundance of cling stone peaches on the palate. There isnotable fruit purity and an underlying minerality which appeals. Subtle oak flavours enhance the mouth feel adding complexity.The flavours linger on the palate and finishes clean with zippy, crisp, citrus acidity.2010 <strong>Woodstock</strong> Grenache Rose <strong>McLaren</strong> <strong>Vale</strong> 5.5 22Made of Grenache sourced from 80 year old vines planted on the Estate, the grapes are hand-picked and made to a style weenjoy at <strong>Woodstock</strong>. Free run juice is kept on skins for somewhere between 4 and 24 hours to ensure good colour. It is thencold soaked and fermented to the desired level of residual sweetness.Bright crimson in colour, this wine is bursting with lots of flavour. Ripe raspberries, strawberries and white cherries, TurkishDelight, rosewater and fairy floss all feature. The natural acidity and sweetness in balance, carry these flavours and leave alingering finish which is clean and crisp.<strong>Woodstock</strong> <strong>Coterie</strong> – Built in 1988


2008 <strong>Woodstock</strong> Shiraz Cabernet <strong>McLaren</strong> <strong>Vale</strong> 5.5 22This classic Australian blend is a rare gem comprising of 61% Shiraz and 39% Cabernet Sauvignon. The Shiraz provides sweet fruit,spice and middle palate weight while the Cabernet Sauvignon provides a sturdy backbone, good structure and slippery textureto the wine… a lovely synergy indeed.A burst of juicy grape flavours showing plums, dark berries, black currants, a touch of pepper and spice. It is lush and livelydisplaying good harmony between 2 of Australia’s most prominent varietals. Maturation in 2 and 3 year old American andFrench oak barrels adds complexity. It is clean and approachable with good intensity built around a fine tannin backbone.2009 <strong>Woodstock</strong> Cabernet Sauvignon Estate Grown 7 28Situated in the higher end of the <strong>Vale</strong>, <strong>Woodstock</strong> Estate is the perfect home for the Cabernet Sauvignon variety. Warm daysand cool gully and sea breezes ensure the Cabernet fruit ripens well with lovely berry flavour and natural acidity whichcontributes to its beautiful structure.<strong>Woodstock</strong> has enjoyed a good reputation for Cabernet since 1982. The 2009 Cabernet Sauvignon shows classic cabernetcharacters.. Blackcurrants, cassis, hints of dark green foliage, eucalypt and earth all feature with rhubarb notes and whitecherries on the finish. The wine is juicy with good acidity and a firm tannin structure which will reward years of careful andpatient cellaring.2005 <strong>Woodstock</strong> Cabernet Sauvignon Estate Grown Museum Release 45Some leafy herbal notes over berry fruits with complex spice on the nose. Focussed Cabernet flavours with savoury edges adddepth to a warm chocolate heart. Aging has softened this wines graceful Cabernet structure to give the long finish added class.Intense Cabernet nose from the herbal 2005 vintage is softening with a savoury aromas and a lengthening middle palate. Thiswine has benefited from 6 years cellaring and suggests being matched with rich, hearty dishes for balance.2009 <strong>Woodstock</strong> Shiraz <strong>McLaren</strong> <strong>Vale</strong> 7 28Being a vigorous red variety, we manage our Shiraz canopies carefully to ensure the best from our Shiraz fruit. The number ofleaves is reduced to ensure perfect ripening of the berries and yields are deliberately kept low to ensure good flavourconcentration. The fruit is de-stemmed and gently crushed with seeds and stalks removed. The wine sees a combination ofFrench and American oak. Compared to many Shiraz’s from the region, <strong>Woodstock</strong> is made to a more elegant fruit driven style.The 2009 Shiraz has a vibrant cerise colour with purple hues in youth. Aromas of blackcurrants, pepper, spice and a hint of chocmint. The palate bursts with lush mulberries and a dense and alluring texture of lingering, savoury tannins. A food friendly wineand a great example of lasting <strong>McLaren</strong> <strong>Vale</strong> Shiraz.2008 <strong>Woodstock</strong> ‘Pilots View’ Shiraz <strong>McLaren</strong> <strong>Vale</strong> 10 42Flying Spitfires during World War II, Douglas Collett A.M. was privileged to a pilot’s eye view of the vineyards of Europe.Returning home, Doug saw the future for an Australian table wine industry, moving on from fortified styles. Equipped withanimation, initiative and perseverance, Doug planted many vineyards and made wines in many regions. He loved the naturalbeauty and robust flavours of <strong>McLaren</strong> <strong>Vale</strong>, acquiring <strong>Woodstock</strong> Estate in 1973. Doug’s own flight helmet represents the visionand passion of this inspirational man whose philosophy was “The glass is always half full... so lets fill it up!Sourced entirely from estate grown fruit, expect lots of dark berries fruits, pepper, spice and savoury fine grain tannins ThisBeautifully layered wine would make a fine companion to a juicy piece of steak... <strong>Woodstock</strong> ‘The Stocks’Single Vineyard ShirazNamed after a set of medieval wooden leg Stocks which stand in the town of <strong>Woodstock</strong> in Oxfordshire, England, historicallyused for the public punishment of the town folk who over-imbibed, “The Stocks” Shiraz is <strong>Woodstock</strong>’s flagship wine. A replicaof this leg stocks has been built at the entrance to <strong>Woodstock</strong> <strong>Wine</strong> Estate.The ‘Stocks Shiraz’ is only produced in excellent vintages from the fruit of century old low yielding vines planted on the northface of the <strong>Woodstock</strong> Estate. This single vineyard which comprise of 31 rows, was planted in the early 1900’s on sandy top-soilover a layer of clay on an ironstone base. The light coloured sand reflects the sun which guarantees optimum ripeness. <strong>McLaren</strong><strong>Vale</strong>’s typically warm days and cool nights, with sea and gully breezes make ideal growing conditions.To ensure that this vineyard achieves maximum quality, the vines are inspected thoroughly during veraison. Exposed bunchesare removed to prevent sun burn and the canopies reduced to ensure perfect ripening. Yields are deliberately kept low and thevineyard essentially dry grown resulting in intense concentration of flavour evident in this wine. The Shiraz fruit is harvested atnight to capture and preserve the delicate flavours of the berries.These grapes were then crushed, cold soaked for 24 hours before fermentation in small open vats. To ensure the excellentcolour and ripe tannin structure so necessary for a wine built to age, each fermenter is hand plunged twice daily. The wine thenaged in carefully selected French and American oak barrels in a temperature controlled room for 9 to 18 months. Each barrel isthen tasted individually by winemakers Scott Collett and Ben Glaetzer and only the finest chosen to continue the lineage of<strong>Woodstock</strong>’s flagship “The Stocks” Shiraz.2008 <strong>Woodstock</strong> ‘The Stocks’ Shiraz Single Vineyard Estate Grown 16.5 63Silver Medal – 2010 International <strong>Wine</strong> Challenge, LondonThe 2008 ‘The Stocks’ Shiraz is a rich and complex wine, with layers of aromas and flavours which continue to evolve in thetasting glass, and in the cellar. Pure fruit richness balanced with sturdy tannin structure will reward 10 or more years of patientcellaring as those layers open up and further integrate with the oak flavours.Ask our staff about our older bottles and magnums available from cellar door.<strong>Woodstock</strong> <strong>Coterie</strong> – Built in 1988


2009 <strong>Woodstock</strong> Botrytis Semillon (375ml) Blend of Regions 8 25Nicknamed ‘Miss Dicky, The Sticky’ this is one of our favourites in the <strong>Woodstock</strong> stable. Made from Botrytis affected Semillon,this delightful wine is sure to win your heart.Aromas of apricot and quondong jam, orange and mandarin peel set the scene for an explosion of luscious array of honey andcitrus flavours on the palate. Some subtle nutmeg & spice is also detected … a perfect balance of sweetness and acidity butfinishing clean and leaving you wanting more!2003 <strong>Woodstock</strong> Barbera ‘Recioto’ Style (375ml) Langhorne Creek 8 25‘Recioto’ is an Italian word meaning semi‐dried. It refers to the winemaking process where grapes are harvested and then laidout on racks to dry until they are raisin‐like so that flavours are rich and concentrated. For Recioto wines, fermentation isstopped so that there is sweetness which makes a lovely dessert wine. The Barbera grape variety, which originates in PiedmonteItaly is a naturally high acid red variety very suited to this style of wine‐making.Stewed plums, rhubarb and toffee nuances invite you to an intriguing palate of sweet and savoury flavours which linger. Aninteresting step to taste between a big red and a fortified with goats cheese and dried grapes.2006 <strong>Woodstock</strong> Vintage Fortified Shiraz (375ml) <strong>McLaren</strong> <strong>Vale</strong> 8 25Capturing the essence of old vine <strong>McLaren</strong> <strong>Vale</strong> Shiraz, the fruit for this wine is picked when fully ripe, usually around 16 Baume.Red winemaking techniques transform the grapes into wine. Pure grape spirit is added mid way through fermentation to ensurea level of natural sweetness is preserved.A rich and powerful wine with a great tannin structure, silky yet chewy tannins! Drinks well now but will develop complexitywith age.<strong>Woodstock</strong> Muscat (375ml) <strong>McLaren</strong> <strong>Vale</strong> 8 25A highly perfumed wine made from white and red Frontignac grapes. Grape selection and degree of ripeness are crucialdecisions to ensure a fabulous Muscat. Very ripe to the point of raisin development is desired to ensure lusciousness in the finalwine. Long term maturation in oak adds complexity.An outstanding example of this wine style, displaying raisin characters on the nose with orange zest adding lift and a glimpse ofGrandma’s Christmas pudding making it an ideal partner for something sweet!Winner- Melbourne <strong>Wine</strong> Show class 67 Gold Medal 2010.<strong>Woodstock</strong> Very Old Fortified (500ml) <strong>McLaren</strong> <strong>Vale</strong> 14 48Traditionally known as Tawny Port, this wine is very special to <strong>Woodstock</strong>. A big portion of this blend was made by Doug Collett,the founder of this Estate. Like the Vintage Fortified, pure grape spirit is used to stop fermentation ensuring a desired sweetnesslevel. The wine is then aged in small 200 – 300 litre oak casks. New wine is constantly blended to ensure consistency andfreshness.
