FoodGwav Winter 2010Gwav Winter 2010FoodStargazie pieaccording to Sanjay KumarIngredients100g short crust pastry, rolled2 sardines or mackerel, gutted4 dry king scallop with roe1 boiled egg2 native <strong>Cornish</strong> oysters200g hake fillets2 smoked bacon rashers1 fennel, large, chopped1 garlic clove, peeled and chopped2 tomatoes, choppedPreparation time will be about 20minutesBaking time will be 20 minutesA total of 40 minutes for this dishChristmas Celebrations in Cornwall will not be complete without themention of an age old tradition. In this recipe, I use the best of <strong>Cornish</strong>fish to produce a unique blend of ancient and modern British eatinghabits. Starry Gazie pie is a type of <strong>Cornish</strong> pie made with sardines orpilchards (small herrings can be used instead). <strong>The</strong> name Starry Gaziecomes from the fact that the heads of the fish appear looking upwardsthrough the pastry lid. This Christmas why not try this at home?1 tsp turmeric powder1 tsp corriander powder1 tsp cumin powder1 tsp chilli powder10ml eggs washSaffron strands, a few15ml milk20ml vegetable oil5g <strong>Cornish</strong> sea salt2g peppercornMethod1. Preheat the oven to 180 degrees.2. Heat a sauce pan with vegetable oil, andsoften the fennel, garlic and tomatoes,with spices.3. Neatly arrange the scallops (sliced inhalf), oyster, hake fillet and boiled egg inthe base of a pie dish.4. Season the fish with crushed <strong>Cornish</strong> seasalt and freshly crushed pepper.5. Spread the tomato and fennel mixtureon top of the fish mix; place the baconrashers on top, and lay the sardines onthem (arranged in the form of the spokesof a bicycle wheel) with their heads facingskywards.6. Cover the pie dish with short crustpastry, leaving the heads of sardineslooking out of the pastry and seal theedges with egg wash.7. Brush the surface of the pastry withsaffron soaked in milk8.
