Atthe Zauner Hut, it hangs abovea brick fireplace. It is filledwith skimmed milk, since thecream is destined to be turnedinto butter, which then quietlysimmers away over a low heat.The milk baht … the dialect term describing the clotting process of milkas it turns into a curd cheese. The Zauneralm continues to make use ofgenerations-old herbal recipes to make their cheese.Alpine Flavor – Zauner HutHenasteign, essentially a hot, deep-fried cake, is a Lungau specialty,traditionally enjoyed as a delicious, meatless summertime treat. It isaccompanied, of course, by any one of a number of mixed milk drinksfrom the “Milk Bar” or simply pure, fresh milk from the farm’s very owncows. For an alternative, take a ride on the valleybus or drive your own car (toll road/€ 8 fee, incl. valley bus during themain vacation season) to the Schliereralm (elev. 1,495 m). From therecontinue on foot via the Almenwanderweg path, or ride the valley busto the Königalm, after which you will make your way up to the ZaunerHut (about a 15-minute walk). Time on trail from the Schliereralm tothe Zauner Hut is about 1 ¾ hours. But the BergmannFamily never gave up, finallycreating their own little pieceof paradise amid these lushalpine pastures. The Longaflows languidly by, nestledamid the glorious naturalsetting of the Weisspriach Valley. Their humorous emblem: an antique,70-year-old wooden child’s bed, standing at the entrance to the hut. Thechildren who once slept in it have long since grown up, so now the bedframe serves as a garden spot for fresh herbs used in the kitchen. Ofcourse, they continue to invest an abundance of love in the place, saythe owners. Even a playground for kids can be found at the Grangler Hut.Alpine Flavor – Grangler HutHiking always results in a hearty appetite, as we well know. At theGrangler Hut, you will be greeted by hearty, healthy traditional dishes.The specialty is their Blood-Sausage Griddle featuring homemade bloodsausage, caramelized onions and Lungau potatoes. In the old days,the dairymaids would gatherto compare and admire thebeautifully decorated slabs of butter. Nowadays, these molds enjoya place of honor in every hut. At the Toni Mörtl Hut, for instance, yourhosts have managed to preserve a number of exceptionally beautifulexamples. After ca. 200 m, a marked hiking trailleads off to the left to the Toni Mörtl Hut (serving refreshments), locatedvery close to the Wirpitschsee (see page 20). The rustic huts in thislittle village are close together- like plucked from the pagesof a picture book. Hill-farminghas always played a valuablerole here, with many of theold tools (butter churn, butter molds, etc.) and techniques preserved tothis day.Alpine Flavor – Hansal HutOf course, there are plenty of tasty things to eat at the Hansal hut,including their specialty “Kaiserschmarrn”, fluffy sugared pancakeswith raisins made to mother’s recipe. This is a unique alpine village (9 huts in total,1 of which serves refreshments), also easy for seniors and parentspushing a pram to reach.
