~Foods were often cooked in a clay oven in Ancient Egypt and were served on gold,silver, bronze or faience plate.~ Egyptians were among the first people to invent writing and the use of ink andpaper, which was called papyrus.Lemon semolina cupcakesCooking and preparation time- 25-35 minutesServes- 12 cupcakesIngredientsCake batter~ 125 grams of unsalted butter, softened~ 1 tablespoon of finely grated lemon rind~ 1 cup of caster sugar~ 2 eggs~ 2/3 cups of semolina~ 1 ½ cups of self raising flour, sifted~ ½ cup of milkSyrup~ 1 cup of caster sugar~ ½ cup of lemon juice strained~ 1 small lemon thinly slicedMethod1) Pre-heat oven to 180°c fan forced, fill a muffin tin with patty pans2) Using an electric mixer beat together butter, lemon rind and sugar on high speeduntil pale and creamy. Add eggs one at a time beating well between each addition.Stir in semolina, flour and milk.3) Spread mixture into the prepared patty pans. Bake for 20-25 minutes or until askewer comes out clean when poked through the centre of the cakes.4) Meanwhile make the syrup, place sugar lemon juice and ½ cup of cold water in asaucepan over a low heat. Cook, stirring for 5 minutes or until sugar has dissolved,add lemon slices and increase temperature to high. Bring to the boil, without stirringto allow the syrup to thicken.5) Once syrup and the cakes are ready place on the presenting dish and pour somesyrup over each cake.
