Vom Rausch der Geschwindigkeit<br />
Es gibt keine Starken und Schwachen – nur Schnelle und<br />
Langsame. Dieser Leitsatz des Informationszeitalters hätte<br />
auch im <strong>Hangar</strong>-7 erfunden worden sein können. In der<br />
Küche von Roland Trettl beispielsweise. Ein Molekularkoch<br />
aus Moskau wird von einem klassisch kochenden Franzosen abgelöst,<br />
der wiederum einem belgischen 3-Sterne-Künstler weicht. Alles innerhalb von<br />
90 Tagen. Die Fähigkeit umzuschalten wird dem Trettl-Team fast im gleichen Tempo<br />
abverlangt, das Sie benötigen, um die Porträts der Köche in diesem Journal zu lesen.<br />
Auch in Franz Tosts Leben dreht sich seit jeher alles um Geschwindigkeit. Der Toro Rosso<br />
Teamchef, unter dem die Karrieren von Ralf Schumacher und Weltmeister Sebastian<br />
Vettel Fahrt aufnahmen, gewährt uns Einblick in einen Alltag, in dem sich alles um Zehntel-<br />
und Hundertstelsekunden dreht.<br />
Regelmäßig für Rekordzeiten sorgen die Entwicklungen von Red Bull Racing in der<br />
Formel 1. Ab August werden sie auch die Herzen von Designliebhabern in der Getreidegasse<br />
in Salzburg höher schlagen lassen. In der neuen Red Bull World werden u. a.<br />
zu Interieurgegenständen umgestaltete Motorenteile aus dem Werk in Milton Keynes<br />
erhältlich sein.<br />
Höchste Beschleunigung bei völliger Entspannung erwartet die Gäste unserer erst kürzlich<br />
eröffneten <strong>Hangar</strong>-7 Outdoor Lounge. Während die Flugzeuge des Salzburg Airports mit<br />
maximalem Schub von der Runway abheben, laden Spezialitäten vom Grill zum Verweilen<br />
ein. Womit wir wieder im Informationszeitalter angelangt wären. Denn auch die<br />
Schnellen lassen sich unterteilen: In jene, die sich hetzen lassen – und die, die zur rechten<br />
Zeit genießen können.<br />

The exhilaration of speed<br />
There are no strong people or weak people – only slow ones and fast ones. This guiding<br />
principle of the information age could have been invented in <strong>Hangar</strong>-7. In Roland Trettl‘s<br />
kitchen, for example. A molecular chef from Moscow is replaced by a Frenchman who<br />
cooks classically, who gives way in turn to a Belgian 3-star artist. All within 90 days. The<br />
Trettl team have to be able to switch over in pretty much the same time that you‘ll need<br />
to read the portraits of the chefs in this magazine.<br />
In Franz Tost‘s life, everything‘s always been about speed too. The Toro Rosso team boss,<br />
under whom the careers of Ralf Schumacher and World Champion Sebastian Vettel took<br />
off, allows us a glimpse into an everyday life in which everything turns on a tenth or even<br />
a hundredth of a second.<br />
The developments achieved by Red Bull Racing in Formula 1 have regularly given us<br />
record-breaking times. From August onwards, they‘ll also be causing the hearts of design<br />
fans to skip a beat in Getreidegasse in Salzburg. Engine parts from the plant in Milton<br />
Keynes transformed into interior furnishings will be just some of the items available to<br />
buy in the new Red Bull World.<br />
Visitors to our recently opened <strong>Hangar</strong>-7 Outdoor Lounge can expect outstanding acceleration<br />
combined with total relaxation. While the airplanes take off with maximum thrust<br />
from the runway at Salzburg Airport, barbecue specialties will encourage guests to stay<br />
a while. Which takes us back to the information age. Because even fast people can be<br />
divided into two types: those who let themselves be rushed – and those who can take a<br />
moment to enjoy life now and again.<br />

Mit der 18. Ausstellung der Reihe HangART-7 liegt, nach Polen, der Fokus des diesjährigen<br />
Programms auf Osteuropa und lässt uns diesen Sommer nach Tschechien blicken.<br />
Ein Land, das eine reiche Kulturgeschichte mit internationaler Bedeutung vorzuweisen<br />
hat. In der Literatur sind große Persönlichkeiten wie Franz Kafka und Milan Kundera zu<br />
nennen, die Namen der Komponisten Bedrˇich Smetana und Antonín Dvorˇák hinterlassen<br />
in der Musik einen weltbekannten Klang.<br />
Aber nicht nur Musik und Literatur durchwandern dieses Land mit ihrem klassischen<br />
Klang und bewegenden Worten: auch die junge Kunstszene lässt sich entdecken, und dies<br />
besonders in der Hauptstadt Prag. Künstler werden aus den verschiedensten Regionen<br />
des Landes angezogen und finden hauptsächlich in der Prager Akademie der Bildenden<br />
Künste (AVU) – die historisch eine starke Malerei-Tradition hat – die Möglichkeit, ihre<br />
Kunst zu entfalten und sich in der tschechischen Kunstwelt zu etablieren.<br />
Insgesamt wurden acht KünstlerInnen von der Kuratorin Lioba Reddeker in Zusammenarbeit<br />
mit dem tschechischen Künstler und Kurator Daniel Pitín für die Ausstellung<br />
ausgewählt. Das Ziel war, die Vielfältigkeit der Ansätze zur figuralen Malerei zu zeigen<br />
und nicht nur denjenigen Künstlern und Künstlerinnen eine Plattform zu geben, die sich<br />
der Malerei schon seit längerem professionell widmen, sondern auch denjenigen eine<br />
Chance zu geben, die die Szene gerade erst betreten.<br />
With the 18th exhibition in the HangART-7 series, this year‘s program continues to focus<br />
on Eastern Europe; after Poland, we turn this summer to the Czech Republic – a country<br />
with a rich cultural history of international significance. Its literature contains such<br />
important figures as Franz Kafka and Milan Kundera, and the names of composers Bedrˇich<br />
Smetana and Antonín Dvorˇák resound through the history of music all over the world.<br />
But it is not only music and literature that permeate this country with classic sounds and<br />
moving words: the young artistic scene is also being discovered here now, especially in<br />

the country‘s capital, Prague. Artists are attracted here from different regions throughout<br />
the country and are finding, particularly in the Prague Academy of Fine Arts (AVU) with<br />
its historically strong tradition of painting, an opportunity to develop their art and to<br />
become established in the Czech art world.<br />
Eight artists in total have been selected for the exhibition by curator Lioba Reddeker<br />
in consultation with the Czech artist and curator Daniel Pitín, with two aims: firstly, to<br />
demonstrate the diversity of approach in figurative painting, and secondly, to offer not<br />
only a platform to those artists who have already been painting professionally for some<br />
time but also an opportunity to those who are only just entering the art scene.<br />
HangART-7 – Die andere Art der Art<br />
Bildende Künstler, die in ihrer Heimat schon bekannt, aber international noch nicht<br />
etabliert sind, finden hier im <strong>Hangar</strong>-7 eine außergewöhnlich atmosphärische, temporäre<br />
Plattform. Jede Edition dieser Ausstellungsserie stellt die junge Kunstszene<br />
eines anderen Landes vor, derzeit ist (nach Österreich, China, Spanien, New York,<br />
Russland, Südafrika, Mexiko, Island, Schweiz, Frankreich, Los Angeles, Portugal,<br />
Italien, Deutschland, Österreich, England und Polen) Tschechien bis Mitte September<br />
zu Gast. Die HangART-7 ist eine Zusammenarbeit zwischen <strong>Hangar</strong>-7 und basis wien.<br />
Lioba Reddeker kuratiert und leitet das Programm. Die aufwändig gestalteten Kataloge<br />
zu allen Ausstellungen sind kostenlos an der Rezeption des <strong>Hangar</strong>-7 erhältlich.<br />
HangART-7 – Another kind of art<br />
Artists who are known in their own countries but have not yet established themselves<br />
on the international scene are offered an exceptionally atmospheric temporary platform<br />
here at <strong>Hangar</strong>-7. Each edition of this series of exhibitions introduces emerging<br />
art from another country. At present, it is playing host to Czech Republic (following<br />
Austria, China, Spain, New York, Russia, South Africa, Mexico, Iceland, Switzerland,<br />
France, Los Angeles, Portugal, Italy, Germany, Austria, England and Poland) until the<br />
mid of September. HangART-7 is a collaboration between <strong>Hangar</strong>-7 and basis wien.<br />
Lioba Reddeker is the curator and director of the programme. The lavishly produced<br />
catlogues are available for free at the <strong>Hangar</strong>-7 reception.
ALžBĚTA JOSEFy (*1984)<br />
Malerei ist für die Künstlerin die natürlichste<br />
Ausdrucksform. Aus den vielen Möglichkeiten,<br />
Kunst zu schaffen, ist dieses Medium die Form,<br />
in der Alžběta Josefy ihren Ideen einen Raum<br />
anbietet – einen Raum, in dem sie mit dramatischen Effekten<br />
modelliert und inszeniert werden. Vor hauptsächlich dunklem<br />
Hintergrund malt die junge Künstlerin Portraits oder, besser<br />
gesagt, Attribute und Symbole, anhand derer die dargestellten<br />
Figuren bezeichnet werden. Die geheime Welt der Geishas,<br />
die tiefe Konzentration eines Toreros, bevor er sich zur Arena<br />
begibt, oder benutzte Tanzschuhe; die Künstlerin wählt einen<br />
Augenblick kurz vor oder nach dem Höhepunkt der Aktion,<br />
um die Spannung im Bild zu steigern. Auf subtile Weise werden<br />
damit latent vorhandene, aber häufig unsichtbare dramatische<br />
Gefühle und Situationen zum Hauptthema der Arbeiten<br />
gemacht: die Scheinwerfer sind nicht auf die Hauptbühne, sondern<br />
hinter die Kulissen gerichtet.<br />
Painting is the most natural form of expression for this artist.<br />
From the many possible ways for creating art, this medium is the<br />
form in which Alžběta Josefy provides a space for her ideas –<br />
a space in which they are modeled and staged with dramatic<br />
effects. Against a mainly dark background, the young artist<br />
paints portraits or, more accurately, attributes and symbols on<br />
the basis of which the figures shown are described. The secret<br />
world of the geishas, the deep concentration of a torero before<br />
he enters the arena, or used dancing shoes; the artist chooses a<br />
moment shortly before or after the climax of the action in order<br />
to increase the tension in the picture. In this subtle way, latent<br />
but often invisible dramatic feelings and situations become the<br />
main theme of the works: the spotlights are focused, not on the<br />
main stage, but behind the scenes.<br />
VERONIKA HOLCOVá (*1973)<br />
Das Schaffen von Veronika Holcová stellt eine<br />
der markanten und zugleich heute relativ seltenen<br />
Erscheinungen des malerischen Ausdrucks<br />
dar, der auf einer unmittelbaren, rein sinnlichen,<br />
illusionsbildenden Methode gründet. Sie beschäftigt sich zwar<br />
langfristig mit dem Thema der eigenen inneren Gefühle, den<br />
Quellen des individuellen und kollektiven Gedächtnisses, aber<br />
ihre Verbindung metaphysisch-surrealer Figuration mit der<br />
emotionalen Wirkung starker Farbigkeit hat immer wieder die<br />
Fähigkeit, bis hinter die Grenzen der sichtbaren Welt zu blicken.<br />
Eine Serie großformatiger magischer Landschaften (wie<br />
z. B. Dream of Roots, 2009, Dream of a Meeting, 2010), wurde<br />
mit einer Technik erstellt, die auf den ersten Blick wie zufällig<br />
wirkt. Zufällig ist hier allerdings nichts. Sorgfältige Pinselarbeit,<br />
die Farben auf der Leinwand fließen ineinander, Farbkleckse<br />
schichten und häufen sich, vegetative Formen verwandeln sich<br />
in gleichsam biologische Gebilde mit detaillierter Ausgestaltung.<br />
The works created by Veronika Holcová represent one of the<br />
striking yet now relatively rare phenomena of painting expression<br />
based on a direct, purely sensual method that creates an<br />
illusion. She has been dealing for a long time with the theme<br />
of her own internal feelings, the sources of the individual and<br />
collective memory; but her connection of metaphysically surreal<br />
figuration with the emotional effect of the use of strong colors<br />
constantly has the ability to look behind the boundaries of the<br />
visible world. A series of large-format magic landscapes (such<br />
as Dream of Roots, 2009, Dream of a Meeting, 2010) was created<br />
with a technique that seems random at first glance. But nothing<br />
is random here. The brushwork is careful. The colors on the<br />
canvas flow into each other, blobs of color build layers and accumulate,<br />
vegetative forms are transformed into almost biological<br />
structures with detailed shaping.<br />

In seinen Malereien verdichtet Josef Bolf szenische (Erinnerungs-)Inhalte und<br />
zeigt sie als bereits bearbeitetes und überformtes Geschehen, in das unterschiedliche<br />
Kräfte einwirken. In Kindheitserinnerungen fließen spätere Erfahrungen<br />
ein, sowie Wirkungsreste von Filmen, Bildern und Gesprächen.<br />
Auch scheinbar zufällige Anlagerungen von Fernsehbildern, Zeichnungen aus Comics,<br />
aber auch Geschehnisse der Gegenwart werden zu Erinnerungsbildern verschmolzen. Das<br />
Medium der Malerei ermöglicht es Josef Bolf, erzählerisch stimmige Bilder zu schaffen, die<br />
dennoch durch die malerische Gestaltung, Komposition und Zusammenführung disparater<br />
Bildelemente aus unterschiedlichen zeitlichen, medialen und inhaltlichen Quellen jene<br />
Momente des Unheimlichen und Fraglichen zeigen, die Wirkungsreste des anderen sind,<br />
das uns eigen wurde.<br />
In his paintings, Josef Bolf compresses scenic (remembered) contents and presents them as<br />
events that have already been processed and subsumed and which are affected by various<br />
forces. Childhood memories incorporate later experiences, along with the residual effects of<br />
films, images and conversations. Apparently random agglomerations of television images,<br />
drawings from comics and even incidents from the present are blended into remembered<br />
images. The medium of painting allows Josef Bolf to create in a narrative way coherent<br />
images which nonetheless, through the pictorial shaping, composition and amalgamation<br />
of disparate image elements from different sources as regards time, media and content,<br />
show those moments of strangeness and mystery that are residual effects of the other that<br />
has become part of us.<br />

Michal Pěchouček arbeitet mit<br />
verschiedenen künstlerischen<br />
Medien, und seine Gestaltungsmittel<br />
sind ebenso vielfältig wie<br />
fallweise ungewöhnlich. In den Bildern dieser<br />
Ausstellung aus seiner Serie Time for Bed<br />
sind es beispielsweise reale Textilien, die mit<br />
der Leinwand, dem Malhintergrund, vernäht<br />
sind und als das auftreten, was sie als reale<br />
Objekte definiert, wie etwa Hemden, Unterwäsche<br />
und Pyjamahosen. Diese sind plastisch<br />
in das „Gemälde“ eingearbeitet und definieren<br />
dieses unabweisbar als Objekt, obgleich<br />
es figurative Bilder sind. Die Körper der so<br />
abgebildeten Personen erheben sich reliefartig.<br />
Sie sind aus dem Bildkörper herausmodelliert,<br />
wodurch der Bildträger nicht nur zum<br />
passiven Material wird, welches das Bild trägt,<br />
sondern selbst Medium und Bildinhalt ist.<br />
Michal Pěchouček works with various artistic<br />
media and his means of design are also<br />
varied, and often unusual. In the pictures in<br />
this exhibition from the Time for Bed series,<br />
it is, for example, real fabrics that are sewn to<br />
the linen, the painting substrate, so that they<br />
appear as what defines them as actual objects,<br />
such as shirts, underwear and pajama pants.<br />
These are incorporated in plastic terms into<br />
the “painting”, defining it irrefutably as an<br />
object, although they are figurative images.<br />
The bodies of the people depicted in this way<br />
are raised, like reliefs. They are modeled out<br />
of the body of the picture, which means that<br />
the picture carrier is not only a passive material<br />
carrying the image, but is itself a medium<br />
and part of the content of the picture.<br />

Die Interessen von Tomáš Němec sind weit-<br />
läufig: Er liebt Filme von Pasolini, Hitchcock<br />
und Tarantino, begeistert sich für Musik, für<br />
Chopin und Callas genauso wie für Blondie<br />
und Édith Piaf. Und dennoch, all diese Interessen konvergieren<br />
auf ein gemeinsames Ziel hin, die Malerei. Sie führt<br />
uns Piaf vor, lässt sie singen, posieren und den Publikumserfolg<br />
genießen. Andere Bilder zeigen Alltagsgegenstände<br />
und Szenen, die tagebuchartig seine Welt festhalten: eine<br />
Krähe beispielsweise, inmitten eines Setzkastens, und<br />
vieles mehr, das, ganz im Gegensatz zu den theatralisch<br />
aufgeladenen Szenen mit der Piaf, unspektakulär und<br />
anekdotenhaft wirkt. Szenen, denen für gewöhnlich kaum<br />
das Überdauern als Kunst zugedacht werden würde. Die<br />
Malereien selbst, obgleich „klassisch“ in Öl auf Leinwand,<br />
gestaltet Tomáš Němec in einer Weise, die ihnen vielfach<br />
die Spontaneität von Aquarellen verleiht. Sie sind den<br />
flüchtigen Eindrücken jedoch angemessen: eine Rose,<br />
das kleine Hündchen, ein Teller oder ein Baum in voller<br />
Blütenpracht.<br />
The interests of Tomáš Němec are wide-ranging: He loves<br />
films by Pasolini, Hitchcock and Tarantino, is enthusiastic<br />
about music, about Chopin and Callas as much as Blondie<br />
and Édith Piaf. And still, all these interests converge on a<br />
common aim – painting. It presents us with Piaf, makes<br />
her sing, pose and enjoy the audience‘s applause. Other<br />
pictures show everyday objects and scenes that capture his<br />
world like a diary: a crow, for example, in the middle of<br />
a letter case, and lots more which, in contrast to the theatrically<br />
charged scenes with Piaf, seem unspectacular and<br />
anecdotal. These are scenes which normally would hardly<br />
have been considered as likely to survive as art. Although<br />
Tomáš Němec creates the paintings themselves “classically”<br />
in oil on canvas, he does it in a way that often gives<br />
them the spontaneity of water colors. Yet they are just right<br />
for such fleeting impressions: a rose, a little dog, a plate or<br />
a tree in full, splendid blossom.
ROBERT šALANDA (*1976)<br />
Eine Reihe zentraler Elemente<br />
definiert das gesamte Werk des<br />
in Olmütz geborenen Künstlers:<br />
reduzierte Sprache, geometrische<br />
Formen, Symbole und leere Flächen.<br />
Aber seine Gemälde sind nur ein Teil seines<br />
künstlerischen Œuvres. Robert šalanda, der<br />
2002 das Kunststudium an der Akademie der<br />
bildenden Künste bei Prof. Jirˇí Sopko absolvierte,<br />
entfernte sich für anderthalb Jahre vom<br />
Medium der Malerei, um danach wieder auf<br />

zum anderen bezeichnet er selber als Bruch.<br />
Auch in seinen Bildern bricht der Künstler<br />
ganz bewusst die Oberfläche der Leinwand,<br />
um Irritationen zu verursachen. Eine Linie<br />
endet abrupt, oder ein Zweig wird gnadenlos<br />
abgeschnitten (untitled, 2009) – alles Versuche,<br />
das Bild von der Fläche zu befreien und Wahrnehmungssysteme<br />
zu hinterfragen.<br />
A series of central elements permeates the<br />
work of this artist, born in Olomouc: reduced<br />
language, geometric shapes, symbols and<br />
empty spaces. But his paintings are only part<br />
of his artistic oeuvre. Robert Šalanda, who<br />
completed his study of art with Professor Jirˇí<br />
Sopko at the Academy of Fine Arts in 2002,<br />
abandoned the medium of painting for a year<br />
and a half, and then returned to it later. He<br />
himself describes working with a range of<br />
media and changing from one to another as<br />
a break. In his pictures too, the artist quite<br />
deliberately breaks the surface of the canvas<br />
to cause irritation. A line ends abruptly or a<br />
branch is mercilessly cut off (untitled, 2009) –<br />
all attempts to liberate the picture from<br />
the surface and to cast doubt on systems of<br />
perception.<br />
JAKUB šPAŇHEL (*1976)<br />
Jakub špaňhel malt seit seiner Kindheit. Treu hält er auch<br />
an den Themen fest, die er bearbeitet. Immer wieder keh-<br />
ren sie zu ihm zurück, und mit gewissem zeitlichen Ab-<br />
stand revidiert er sie von neuem. So entsteht eine Serie<br />
von – oftmals wirklich monumentalen – Bildern, die zweifellos das<br />
gewisse Etwas besitzen, was sich nur sehr schwer in Worte fassen lässt.<br />
Seine Malerei ist elementar, direkt, spontan, wild, unförmig, fließend,<br />
leuchtend, durchlebt, wahrhaftig, souverän, schwarz und golden. Durch<br />
formale Reduktion gelingt es ihm, den Zeichencharakter der Motive<br />
zu minimalisieren, gleich ob es sich um den immerzu selben Luster<br />
handelt, der einmal golden, einmal leuchtend ist, einmal über die<br />
Leinwand herabfließt oder allmählich verschwindet, oder um den<br />
dramatisch konzipierten Raum einer gotischen Kirche.<br />
Jakub Špaňhel has been painting since he was a child. He also stays<br />
true to the themes on which he works. They come back to him constantly,<br />
time after time, and he revises them afresh after certain periods<br />
of time. In this way, a series of often truly monumental pictures<br />
is created which undoubtedly have that certain something that is difficult<br />
to put into words precisely. His painting is elemental, direct,<br />
spontaneous, wild, unformed, flowing, glowing, vital, authentic, confident,<br />
black and golden. Through the reduction of form, he succeeds in<br />
minimizing the drawing character of the motifs, no matter whether it<br />
is the constant luster that at times seems golden and at times glowing,<br />
flowing down across the canvas or gradually disappearing, or the dramatically<br />
conceived space of a Gothic church.<br />

Stadtlandschaften und urbanes Alltagsleben sind die zentralen Motive im Werk von<br />
Zbyněk Sedlecký. Sein lasierender, fast aquarellhaft anmutender Farbauftrag unterstützt<br />
den Eindruck von flüchtigen Szenen, die seine Bildfindungen kennzeichnen:<br />
Menschengruppen in Passagen, vor Geschäften und auf öffentlichen Plätzen. Es ist kein<br />
gemeinsames Interesse, das diese Menschen zusammen führt, sondern die gebaute Realität der Stadt,<br />
mit Gebäuden, Verkehrsanlagen, öffentlichen Plätzen und Geschäftszonen. Diese Stadtarchitektur<br />
strukturiert die Alltagsabläufe ihrer Bewohner und steuert mit unsichtbaren Regeln Bewegungen,<br />
Blicke und Tätigkeiten. Die flüchtigen Szenen und die scheinbare Beiläufigkeit des Geschehens, die<br />
in den Malereien gleichsam im Vorübergehen dokumentiert werden, sind im Kontrast zur Anmutung<br />
dieser, mit vorgeblich leichter Geste gestalteten Bilder, dichte Beschreibungen der Gegenwart und<br />
Lebensrealität einer ganzen Generation.<br />
City landscapes and everyday urban life are the central motifs in the works of Zbyněk Sedlecký. His<br />
glazed, almost watercolor-like application of color supports the impression of fleeting scenes that<br />
characterize his imagery: groups of people in passageways, in front of shops, in public squares. It is<br />
not a common interest that brings these people together, but rather the built reality of the city, with its<br />
buildings, traffic systems, public squares and commercial areas. This urban architecture structures the<br />
everyday goings on of the population and, with invisible rules, controls their movements, views and activities.<br />
The fleeting scenes and apparent random nature of incidents which are also documented almost<br />
in passing in the paintings are, in contrast to the feeling of these pictures that were created with such<br />
ostensibly light gestures, dense descriptions of the present lives and the reality of a whole generation.

SIE EIGENTLICH KEINE INTERVIEWS?<br />
FT: Ich sage meiner PR-Abteilung immer, ihr<br />
macht einen guten Job, wenn es von mir im<br />
Jahr zwei Interviews gibt. Und ihr macht einen<br />
brillanten Job, wenn es von mir im Jahr ein<br />
Interview gibt. Und ihr kriegt eine Prämie,<br />
wenn es überhaupt kein Interview gibt.<br />
H-7: VERSTANDEN. WOBEI, DIE EINGANGS-<br />
FRAGE BLEIBT.<br />
FT: Passen Sie auf: Interviews sind Teil meines<br />
Jobs, die gehören nun mal dazu. Aber wir<br />
haben bei Red Bull eine spezielle Philosophie,<br />
und zwar, dass die Fahrer im Mittelpunkt<br />
stehen. Um die geht es, und die sollten dann<br />
auch bei den Interviewanfragen im Mittelpunkt<br />
stehen.<br />

FT: Deswegen sitzen wir ja jetzt hier. Ich akzeptiere,<br />
dass Klappern zum Handwerk gehört,<br />
so lange akzeptiert wird, dass mir das<br />
Klappern keinen Spaß macht.<br />

FT: Österreichischer Formel-Ford-Meister?<br />
Okay, wir hatten damals eine super Zeit, aber<br />
der österreichische Formel-Ford-Titel ist ungefähr<br />
so viel wert wie der Titel des besten<br />
Ski-Abfahrtläufers in der Sahara. Nein, bitte<br />
vergessen Sie’s. Wenn ich an uns Fahrer damals<br />
zurückdenke, wir waren alles Blinde, da<br />
war nicht einer dabei, der das rechte Pedal<br />
auch nur annähernd gefunden hätte. Obwohl,<br />
aufgepasst, warten Sie, ein Rennen bin ich<br />
zusammen mit dem Gerhard (Berger) gefahren,<br />
neben ihm oder eine Reihe vor ihm, auf jeden<br />
Fall waren wir knapp zusammen. Allerdings<br />
nur in der Startaufstellung, denn dann hat der<br />
Gerhard einen brutalen Frühstart hingelegt.<br />
Wie gesagt, war alles sehr lustig.<br />
H-7: HERR TOST, WÜRDE DAS INTERVIEW<br />
ZUSÄTZLICH AN SCHWUNG GEWINNEN,<br />

FT: Der Jochen Rindt war wirklich mein<br />
Hero. Zu seiner Zeit gab es für mich nur Jochen<br />
Rindt. In meinem Zimmer hing ein riesiges<br />
Poster von ihm, ich hatte eine große Collage<br />
gemacht aus Bildern von ihm, und jedes Jahr<br />
gab es im Deutsch-Unterricht mindestens<br />
einen Jochen Rindt-Vortrag meinerseits.<br />
H-7: JACKIE STEWART WAR DOCH VIEL<br />
ERFOLGREICHER.<br />
FT: Rindt verkörperte für mich den „richtigen“<br />
Rennfahrer. Diese sensationelle Fahrzeugbeherrschung,<br />
diese Lockerheit außerhalb des<br />
Fahrzeuges, dieses Image des wilden Hundes,<br />
der viel riskiert. Für mich war er der Schnellste,<br />
ein Jackie Stewart war für mich immer<br />
der Berechnende, der eher Vorsichtige. Das<br />
hat mir nie so richtig gefallen. Jochen Rindt<br />
war für mich bedingungslose Hingabe an den<br />
Speed. Da wusste man immer, der geht ans<br />
Limit und teilweise auch mal darüber hinaus.<br />
H-7: HABEN WIR VERSTANDEN. TROTZDEM,<br />
WAS WÜRDEN SIE DENN ALS TEAMCHEF<br />
HEUTE MACHEN, WENN BEI EINEM VÖLLIG<br />
VERREGNETEM SAMSTAGSTRAINING, KEIN<br />
AUTO IST AUF DER STRECKE, IHR BUEMI AUS<br />
DEM FAHRERLAGER RAUS FAHREN WÜRDE,<br />

H-7: DAS WAR JETZT NICHT DIE FRAGE. DIE<br />
GING AN SIE ALS TEAMCHEF, NICHT ALS FAN.<br />
FT: Null Problem, wenn der Buemi mit dem<br />
Auto nicht anschlägt und alles heil zurückbringt.<br />
Ich würde ihm gratulieren, weil<br />
Formel-1 auch Entertainment ist und weil er<br />
dann die Phase, in der nichts geschieht, sinnvoll<br />
genutzt hätte, wahrscheinlich auch im<br />
Fernsehen wäre, also auch die Sponsoren viel<br />
Sendezeit gekriegt hätten. Kein Problem.<br />
H-7: GEGEN DIE RENNRICHTUNG? DER<br />
WÜRDE HEUTE DIE LIZENZ AUF LEBENSZEIT<br />
VERLIEREN.<br />
FT: Wieso, es fuhr doch niemand. (Lachend)<br />
Und ein bisschen Schwund ist immer.<br />
H-7: KOMMT MAN IN DER FORMEL-1 IM<br />
JAHRE 2011 NOCH AUF SEINE KOSTEN,<br />
WENN MAN CHARAKTERE WIE JOCHEN<br />
RINDT BEWUNDERT HAT?<br />
FT: Ja. Umgemünzt auf die heutige Zeit sind<br />
diese Typen von damals heute die Vettels,<br />
die Alonsos und die Hamiltons. Klar hat sich<br />
in der Zwischenzeit einiges geändert, aber<br />
nicht das Grundprinzip. Man muss das so<br />
sehen: die genannten heutigen Fahrer sind<br />
die sogenannte vierte Kart-Generation. Das<br />
heißt, die sind im Umgang mit Medien und<br />
Marketing ganz anders geschult, nicht mehr<br />
so wild und unkontrolliert wie früher. Aber<br />
in ihrer Bedingungslosigkeit hinsichtlich des<br />
absoluten Speeds sind das die Jochen Rindts<br />
von heute. Der Sebastian Vettel beispielsweise,<br />
seine absolute Fahrzeugbeherrschung,<br />
seine fahrerische Kaltschnäuzigkeit, nein, da<br />
gibt es viele Parallelen. Auch wenn ich einen<br />
Lewis Hamilton sehe, seine Aggressivität, die<br />
Kollisionen, in die er verwickelt ist, so etwas<br />
gefällt mir.<br />
H-7: FÜR SIE SIND KOLLISIONEN MANCHMAL<br />
EIN GÜTESIEGEL, SOLANGE ES DIE RICHTI-<br />
GEN SIND?<br />
FT: Aber natürlich. Ein Fahrer muss seine<br />
Position untermauern und markieren. Wenn<br />
jemand in den Rückspiegel schaut und ein<br />
richtiges Kaliber erblickt, dann weiß der halt<br />
genau, dass dieses Kaliber notfalls durch ihn<br />
hindurch fährt, wenn er jetzt nicht beiseite<br />
geht. Und diesen Ruf muss man sich erarbeiten.<br />
Nein, mit Status bildenden Kollisionen<br />
habe ich überhaupt kein Problem. Im Gegenteil,<br />
das gehört dazu, und bei einem jungen<br />
Fahrer erst recht. Ich nenne das dann die<br />
Crash-Period, die ist Teil der Ausbildung. Als<br />
der Vettel für uns fuhr, ist der die ersten drei,<br />
vier Rennen gar nicht aus der ersten Runde<br />
zurückgekommen, weil er jedes Mal eine<br />
Kollision mit irgendjemand hatte.<br />
H-7: 2008 HABEN SIE SICH DANN FÜR IHRE<br />
ART EXTREM WEIT AUS DEM FENSTER GE-<br />
LEHNT MIT DER BEHAUPTUNG, 2010 HÄTTE<br />
VETTEL WELTMEISTERFORMAT...<br />
FT: Ich kann mich noch genau daran erinnern,<br />
wie der Sebastian zu uns ins Team gekommen<br />
ist, weil es damals hieß, dem fehlen ja fünf<br />
Zehntel. Was wollt ihr mit dem? Wenn der<br />
schnell wäre, würde BMW ihn ja nicht ziehen<br />
lassen. In der Tat hatte man ihn dort mehr<br />
oder weniger abgeschrieben. Für mich war<br />
das unvorstellbar, kannte ich den Sebastian<br />
doch immerhin schon aus der Formel Junior.<br />
Ich war bei seinen ersten Formel-1-Testfahrten<br />
dabei, damals war ich ja bei BMW. Nein, zum<br />
Glück hat Red Bull erkannt, dass der Sebastian<br />
alle Eigenschaften und Fähigkeiten hat, um in<br />
der Formel-1 erfolgreich zu sein.<br />
H-7: DIE DA WÄREN?<br />
FT: Talent, Leidenschaft, eiserne Disziplin<br />
und Innovation.<br />
H-7: INNOVATION?<br />
FT: Dass er alles genau beobachtet, dass er<br />
dabei detailverliebt ist und dass er sich dann<br />
zusätzlich noch Informationen einholt und zusätzliche<br />
Aktionen startet, um andere auszutricksen<br />
oder besser zu sein als andere. Und<br />
das hat der Sebastian alles mitgebracht, alles.<br />
H-7: SEHR GELITTEN, ALS ER 2008 TORO<br />
ROSSO VERLIESS?<br />
FT: Überhaupt gar nicht, Sebastian hat Toro<br />
Rosso verlassen müssen. Wenn Sebastian damals<br />
gesagt hätte, er bliebe bei Toro Rosso,<br />
dann hätte ich erwidert, das darfst du nicht<br />
machen, du musst jetzt gehen. Wir können dir<br />
nicht mehr das Umfeld bieten, das dir weiter<br />
hilft. Wir können dir kein Auto bieten, mit dem<br />
du auch in Zukunft Rennen gewinnst. Weil<br />
wir einfach noch nicht die Infrastruktur haben.<br />
H-7: DAS MUSS MAN VOR DEM HINTER-<br />
GRUND DES MINARDI-KAUFES SEHEN.<br />
FT: Exakt. Ich bin ja im November 2005 zu<br />
einem Minardi-Team mit 85 Mitarbeitern gekommen.<br />
Dietrich Mateschitz hatte das Team<br />
deswegen gekauft, weil sowohl die FIA als<br />
auch Bernie (Ecclestone) ihm fest versprochen<br />
hatten, dass er ab 2008 mit vier identischen<br />
Autos fahren darf. Und plötzlich hat sich das<br />
Reglement geändert, und wir standen da und<br />
mussten die ganze Infrastruktur ausbauen. Da<br />
wäre uns ein Vettel versauert, dessen Karriere<br />
hätten wir kaputt gemacht. Nein, stattdessen<br />
hat sich das alles super ergeben. Ich bin froh<br />
und stolz darauf, dass Toro Rosso einen solchen<br />
Fahrer hervorgebracht hat und zudem die<br />
Red Bull-Philospohie zum Erfolg geführt hat.<br />
H-7: HERR TOST, SIE GELTEN ALS PERFEKTI-<br />
ONIST UND WORKAHOLIC. KANN ES SIE DA<br />
BEFRIEDIGEN, WIE EIN VERRÜCKTER ZU AR-<br />
BEITEN, NUR UM ALLE ZWEI WOCHEN VÖL-<br />
LIG ABHÄNGIG VON DER LEISTUNG ZWEIER<br />
ANFANG ZWANZIGJÄHRIGER ZU SEIN?<br />
FT: Völlig richtig, die Frage. Doch ob diese<br />
Anfang Zwanzigjährigen das alles richtig umsetzen,<br />
hängt auch davon ab, ob wir als Team<br />
alles richtig umsetzen. Denn wenn wir diesen<br />
beiden Jungens eine Scheißkarre hinstellen,<br />
dann können die keine Wunder bewirken.<br />
Wenn wir die jungen Fahrer nicht ordentlich<br />
vorbereiten, dann können die auch keine gute<br />
Leistung bringen. Zur Betreuung von jungen<br />
Fahrern gehört so viel. Das physische Training,<br />
das mentale Training, die Ernährung, die Anreise.<br />
Das klingt jetzt lächerlich, aber wenn man<br />
ihnen Tipps gibt für die Überseerennen, wenn<br />
man ihnen sagt, wann sie abreisen müssen,<br />
was sie machen müssen, dann macht sie das<br />
zu besseren Rennfahrern auf der Strecke. Woher<br />
sollen die denn das alles wissen? Je besser<br />
man die Fahrer auf alles vorbereitet, desto<br />
eher kann man am Sonntag zwischen 14 Uhr<br />
und 15 Uhr 30 ein Erfolgserlebnis erwarten.<br />
H-7: WANN SPRICHT EIN FRANZ TOST VON<br />
ERFOLG?<br />
FT: Das ist in der Tat eine Frage der Erwartungshaltung.<br />
Ich bin momentan happy, wenn meine<br />
Fahrer zwischen Platz acht und 12 fahren. Mehr<br />
ist zum gegenwärtigen Zeitpunkt nicht drin.<br />
Und wenn meine Fahrer das erreichen und ein<br />
Rennen gut zu Ende fahren, dann ist das ein

Erfolgserlebnis, und das rechtfertigt dann auch<br />
wieder diesen enormen Einsatz. Dann fahr’ ich<br />
heim nach dem Rennen, sitze im Flieger und<br />
überlege, was wir alles besser machen könnten,<br />
und am Montag geht es dann wieder mit Vollgas<br />
weiter.<br />
H-7: SOWEIT DIE THEORIE. DIE PRAXIS GIBT<br />
ES DANN, WENN MAN IHNEN BEISPIELSWEISE<br />
ZU EINEM SECHSTEN PLATZ GRATULIEREN<br />
WILL, WAS SIE GERNE MIT EINEM HARSCHEN:<br />
„WAS GIBT ES ZU GRATULIEREN, HEUTE<br />
WAREN FÜNF BESSER“, QUITTIEREN.<br />
FT: Das ist richtig, was Sie jetzt sagen. Aber<br />
Träumen muss doch erlaubt sein. Und eine<br />
Vision muss man auch haben dürfen. Und<br />
irgendwann gehe ich mal davon aus, dass wir<br />
vier, fünf oder sechs Red Bull-Fahrer haben,<br />
die nicht mehr ausgebildet werden müssen<br />
und dass wir auch bei Toro Rosso die Infrastruktur<br />
und die Leistungsfähigkeit so gesteigert<br />
haben, dass man vorne mitfahren kann. Klar<br />
möchte ich das auch irgendwann erreichen.<br />
Aber das geht nur Schritt für Schritt.<br />
H-7: WARUM IST DAS WORT WORKAHOLIC<br />
FÜR SIE NICHT NEGATIV BESETZT?<br />
FT: Freude, weil man gern, viel und hart arbeitet?<br />
Daran kann ich überhaupt rein gar<br />
nichts Negatives erkennen. Ich arbeite doch<br />
gar nicht, ich fröhn’ doch nur meinem Hobby.<br />
H-7: UND DANN GIBT ES TROTZDEM FREI-<br />
ZEIT-MOMENTE, DA LASSEN SIE SICH NAHE-<br />
ZU GEHEN. AM ERSTEN JÄNNER EINES JE-<br />
DEN JAHRES BEISPIELSWEISE FAHREN SIE<br />
EINEN GANZEN TAG SKI. KEIN SCHLECHTES<br />
GEWISSEN DABEI?<br />
FT: Nein, da habe ich schon deswegen kein<br />
schlechtes Gewissen, weil am ersten Januar<br />
ganz in der Früh die Pisten menschenleer<br />
sind. Und dann kann man richtig Ski fahren.<br />
Heuer hatte ich allerdings eine Diskussion,<br />
weil die den Lift nicht schon um halb neun<br />
anmachen wollten. Die waren zu spät.<br />
H-7: ES GEHT DIE MÄR, DASS SIE SICH MAL<br />
VON IHRER FRAU VERABSCHIEDET HABEN<br />
MIT DEM SATZ: WIR SEHEN UNS MITTE JULI –<br />

FT: Stimmt nur zur Hälfte. Das habe ich meiner<br />
Frau gesagt, als ich mich für ein Jahr nach<br />
Japan aufgemacht habe, um Ralf Schumacher<br />
in der Formel Nippon zu begleiten. Es gehörte<br />
ja zum damaligen Lernprogramm, dass Ralf<br />
das ganze Jahr dort bleiben sollte, und ich als<br />
damaliger Mitarbeiter von Weber-Management<br />
war halt an seiner Seite. Ich ahnte, dass<br />
das zu Hause, sagen wir mal, ein paar Diskussionen<br />
geben könnte, und denen versuchte ich<br />
aus dem Weg zu gehen.<br />
H-7: UND SIE DACHTEN WIRKLICH, DAMIT<br />
KOMMEN SIE DURCH?<br />
FT: Ich scheiterte schon bei der Abreise zu<br />
Hause. Normalerweise reise ich ja immer mit<br />
leichtem Gepäck, diesmal war es natürlich<br />
viel mehr – was meiner Frau ebenso natürlich<br />
sofort auffiel. Und da kam dann halt die Frage,<br />
wann kommst du denn wieder. Und ich habe<br />
was von Juni, Juli erzählt – im Januar.<br />
H-7: UND IHRE FRAU HAT SIE DANN NICHT<br />

FT: Zugegeben, sie war ein wenig verstimmt –<br />

FT: Rennen sind nun mal unser Leben. Und<br />
wenn ich dann von Oktober bis März keine<br />
Rennen hab’, dann geht mir da was ab. Ich freue<br />
mich auf jeden Sonntag, an dem es ein Rennen<br />
gibt. Vielleicht bin ich halt ein Wettkampftyp,<br />
mir gefallen einfach diese Auseinandersetzung<br />
und der Kampf Mann gegen Mann.<br />

FT: Neulich habe ich eine Biographie über<br />
Enzo Ferrari gelesen. Und eine über Colin<br />
Chapman. Halt, ich lese auch gerne Management-Literatur.<br />
H-7: ANSONSTEN SCHWÄRMEN SIE NOCH<br />
VON JAPAN?<br />
FT: Ein wunderschönes Land. Unglaublich<br />
facettenreich, ein Land, das landschaftlich so<br />
unterschiedlich ist wie bei uns ganz Europa.<br />
Es gibt Regionen, die erinnern mich an Norddeutschland.<br />
Und es gibt Regionen, die mich<br />
an Süditalien erinnern. Ein überaus interessantes<br />
Land, das Jahr damals hat mir wirklich<br />
gefallen. Wie gesagt die Landschaft, und dann<br />
das Essen. Eine Sensation. Für mich ist die<br />
japanische Küche weltweit die beste. Man<br />
hat da alles, jegliche Fischgerichte, die man<br />
sich vorstellen kann, aber auch super Fleisch.<br />
Nein, ich fahre jedes Jahr unheimlich gerne<br />
nach Japan und ich freu’ mich jedes Jahr darauf,<br />
japanisch essen zu gehen.<br />
H-7: IMMERHIN KOMMEN SIE VOM FACH,<br />

FT: Was heißt hier ab und an? Ich habe vom<br />
neunten bis zum 19. Lebensjahr sämtliche<br />
Ferien in unserem Restaurant gearbeitet.<br />
H-7: HATTE DER GAST DA WAS ZUM LACHEN?<br />
FT: Ich war sehr beliebt bei den Gästen. Ja,<br />
lachen Sie ruhig, ich könnte Ihnen heute noch<br />
Gäste vorstellen, die von mir schwärmen.<br />

FT: Quatsch. Die Gastronomie ist Dienstleistung.<br />

FT: Da muss man sich entsprechend anpassen.<br />
Für uns war das Wichtigste, dass der Gast<br />
zufrieden ist und wieder kommt. Und ich<br />
wüsste nicht, was mich veranlassen würde,<br />
zu einem Gast unfreundlich zu sein.<br />
H-7: MACHEN WIR ES KURZ:<br />
HABEN SIE TRINKGELD BE-<br />
KOMMEN?<br />
FT: Immer und sehr gutes. Allerdings:<br />
wenn mir ein Gast nicht<br />
gepasst hat, dann habe ich das<br />
Trinkgeld nicht genommen...<br />
H-7: ...LANGSAM STIMMT UNSER<br />
WELTBILD WIEDER...<br />
FT: ...ich bin halt so ein Typ, mich<br />
kann man nicht kaufen. Wobei<br />
es für das Trinkgeld dann immer<br />
noch eine familieninterne<br />
Lösung gab. Das hat dann wohlwollend<br />
mein Bruder eingesteckt.<br />

thinks it‘s fine that sebastian Vettel<br />
has left his team. anD obViously,<br />
he‘s a workaholic – toro rosso team<br />
boss franz tost coulD neVer be DescribeD<br />
as mainstream.<br />
H-7: mr. tost, why is it that you Don‘t<br />
like interViews?<br />
FT: I always say to my PR department, you‘re<br />
doing a good job if I have to give two interviews<br />
a year. And you‘re doing a brilliant job<br />
if I have to give one interview in a year. And<br />
you‘ll get a bonus if I don‘t have to give any<br />
interviews at all.<br />
H-7: unDerstooD. although the<br />
question still remains.<br />
FT: Listen: Interviews are part of my job,<br />
they‘re something I have to do. But at Red Bull,<br />
we have a particular philosophy. Which is that<br />
the spotlight is on the drivers. They are what it‘s<br />
all about, and they should also be the focus of<br />
attention when it comes to interview inquiries.<br />
H-7: but reD bull also sets great store<br />
by the concept of the team. anD the<br />
team boss is part of the team too.<br />
FT: That‘s why we‘re sitting here now. I accept<br />
that talking is part of the job, as long as other<br />
people accept that I don‘t enjoy talking.<br />
H-7: your wikipeDia entry takes up just<br />
60 worDs, or 366 keystrokes – with<br />
spaces. isn‘t that carrying reticence<br />
a bit too far?<br />
FT: A Wikipedia entry? About me? That‘s<br />
news to me. I‘ve never bothered to take a look.<br />
I don‘t have any time at all for things like that,<br />
especially when it concerns me.<br />

FT: ...no, to be perfectly honest, I‘ve never<br />
bothered about anything like that. Really, it<br />
doesn‘t interest me at all.<br />
H-7: but just the fact that you were<br />
austrian formula forD champion<br />
in 1983 DeserVes a bit more respect<br />
than 366 keystrokes, Doesn‘t it?<br />
FT: Austrian Formula Ford Champion? OK,<br />
we had a great time then, but the Austrian Formula<br />
Ford title is worth about as much as the<br />
title of best downhill ski racer in the Sahara.<br />
No, please, forget it. If I think back to us drivers<br />
then, we were all blind, there wasn‘t one<br />
person there who could have even got close to<br />
finding the right pedal. Although, mind you,<br />
wait, I did drive one race together with Gerhard<br />
(Berger), next to me or a row in front of me, at any<br />
rate we were close together. Only in the starting<br />
line-up, though, then Gerhard made a dreadful<br />
false start. As I said, it was all great fun.<br />
H-7: mr. tost, woulD the interView<br />
take on a bit more momentum if we<br />
were to talk about the heroes of<br />
your youth? about jochen rinDt?<br />
FT: Jochen Rindt really was my hero. At that<br />
time, only Jochen Rindt existed for me. I had<br />
a massive poster of him in my room, and I had<br />
made up a big collage of pictures of him myself<br />
too, and every year there I gave at least one<br />
presentation on Jochen Rindt in German class.<br />
H-7: but jackie stewart was much<br />
more successful.<br />
FT: For me, Rindt was the embodiment of the<br />
„right“ racing driver. The sensational control<br />
he had of the vehicle, his relaxed attitude outside<br />
the vehicle, this image of the wild dog that<br />
risks a great deal. For me, he was the fastest, Jackie<br />
Stewart was always more calculating, more<br />
cautious. I never liked that very much. Jochen<br />
Rindt embodied an unconditional dedication<br />
to speed. You always knew he would go to the<br />
limit, and sometimes he‘d even go beyond it.<br />
H-7: we unDerstooD that. nonetheless,<br />
what woulD you, as the team boss, Do<br />
toDay if, During a really rainy satur-<br />
Day training session, with no cars on<br />
the track, buemi were to come out of<br />
the paDDock, DriVing against the racing<br />
Direction, towarDs the granDstanD,<br />
anD then, with a skilful burst<br />
of speeD, turn through 180 Degrees,<br />
acknowleDge the stanDing oVation<br />
of the spectators in the stanD with a<br />
gracious waVe of the hanD, anD then<br />
Disappear straight back into the Dri-<br />
Vers‘ paDDock?<br />
FT: Ah, Jochen Rindt in Spa-Francorchamps,<br />
in 1968. Sensational, wasn‘t it?<br />
H-7: that wasn‘t the question. the<br />
question was DirecteD to you as team<br />
boss, not as a fan.<br />
FT: It wouldn‘t be a problem as long as Buemi<br />
didn‘t hit anything with the car and came<br />
back in one piece. I would congratulate him,<br />
because Formula 1 is also entertainment and<br />
because he made good use of the time when<br />
nothing was happening, and would probably<br />
also have been on television, so he would also<br />
have got a lot of program time for the sponsors.<br />
No problem.<br />
H-7: against the Direction of the race?<br />

FT: Why? No-one was on the track (laughing)!<br />

FT: Yes. Converted to today‘s currency, the<br />
guys from those days are now the Vettels,<br />
the Alonsos, the Hamiltons. Obviously some<br />
things have changed in the mean time. But<br />
not the basic principle. You have to see it like<br />
this, the drivers of today that I listed are what<br />
you might call the „fourth kart generation“.<br />
That‘s to say, they are quite differently trained<br />
in handling the media and marketing, they‘re<br />
not as wild and out of control as before. But<br />
they are the Jochen Rindts of today when it<br />
comes to their unconditional commitment to<br />
absolute speed. Sebastian Vettel, for example,<br />
his absolute control of the vehicle, his cool,<br />
calculated attitude to driving – no, there are<br />
many parallels there. And when I look at someone<br />
like Lewis Hamilton, his aggression,<br />
the collisions he gets tangled up in, I really<br />
like something like that.<br />
H-7: Do you feel that collisions are<br />
sometimes a seal of gooD quality, as<br />
long as they‘re the right ones?<br />
FT: But of course. A driver needs to underpin<br />
and mark his position. If someone looks in the<br />
rear-view mirror and sees a car shooting towards<br />
him, then he realizes very clearly that<br />
it will if necessary drive right through him if<br />
he doesn‘t get out of the way. And you have<br />
to work hard to acquire this reputation. No,<br />
I have absolutely no problem with collisions<br />
that create status. On the contrary, they‘re part<br />
of the sport, especially with young drivers. I<br />
call it the crash period, it‘s part of the training.<br />
When Vettel drove for us, he didn‘t get past the<br />
first lap in the first three or four races, because<br />
he crashed into someone each time.<br />
H-7: in 2008, you really stuck your<br />
neck out, for someone like you, when<br />
you preDicteD that Vettel woulD haVe<br />
worlD champion status in 2010...<br />
FT: I can still remember very clearly how<br />
Sebastian came to us in the team, because the<br />
word was then that he was lacking five tenths<br />
of a second. What‘s that all about? If he‘d been<br />
fast, BMW wouldn‘t have let him go. In fact,<br />
he had been more or less written off there.<br />
For me, it was inconceivable, after all, I knew<br />
Sebastian already from the Junior series. I was<br />
there for his first Formula 1 test drives – I was<br />
at BMW then. No, fortunately, Red Bull recognized<br />
that Sebastian has all the qualities and<br />
skills to be successful in Formula 1.<br />
H-7: anD what are they?<br />
FT: Talent, passion, iron discipline and<br />
innovation.<br />
H-7: innoVation?<br />
FT: That he watches everything precisely, that<br />
he just loves detail and that he then gets hold<br />
of more information and starts working on something<br />
in addition so that he can outsmart<br />
others or be better than them. And Sebastian<br />
has brought that all with him, all of it.<br />
H-7: DiD he suffer a lot when he left<br />
toro rosso in 2008?<br />
FT: Not at all, Sebastian had to leave Toro Rosso.<br />
If Sebastian had said then that he was staying<br />
with Toro Rosso, I would have answered, you<br />
mustn‘t do that, you have to go now. We can<br />
no longer offer you the environment that will<br />
help you get on. We can‘t offer you a car with<br />
which you‘ll win races in the future. Because<br />
we simply don‘t have the infrastructure yet.<br />
H-7: you haVe to see this against the<br />
backDrop of the minarDi purchase.<br />
FT: Exactly. After all, in November 2005 I<br />
came to a Minardi team with 85 employees.<br />
Dietrich Mateschitz had sold the team because<br />
both the FIA and also Bernie (Ecclestone)<br />
had promised him that he would be allowed<br />
to drive with four identical cars from 2008.<br />
And suddenly, the rules changed and we were<br />
there and had to expand the entire infrastructure.<br />
Someone like Vettel would have gone<br />
stale here, we would have wrecked his career.<br />
No, instead of that, it all turned out brilliantly.<br />
I‘m happy and proud that Toro Rosso produced<br />
such a driver and, in addition, that the<br />
Red Bull philosophy led to success.<br />
H-7: mr. tost, you‘re regarDeD as a<br />
perfectionist anD a workaholic – can<br />
you be satisfieD to work like a maDman<br />
just to be totally DepenDent eVery<br />
two weeks on the achieVements of<br />
two guys in their early twenties?<br />
FT: It‘s a very fair question. But whether these<br />
guys in their early twenties get everything<br />
right also depends on whether we as a team<br />
get everything right. Because if we give these<br />
two young guys a pile of rubbish to drive, they<br />
can‘t work miracles. If we haven‘t prepared<br />
the young drivers properly, they can‘t achieve<br />
anything great. Looking after young drivers<br />
involves such a lot. The physical training, the<br />
mental training, the right food, getting them<br />
to the track, it sounds ridiculous now, but if<br />
you give them tips for the overseas races, if<br />
you tell them when they have to set off on the<br />
trip, what they have to do, then it makes them<br />
better racing drivers on the track. How are they<br />
supposed to know all this? The better you prepare<br />
the drivers for everything, the more likely<br />
you are to experience a success on Sunday afternoon<br />
between 2 o‘clock and half past three.<br />
H-7: what Does success mean to a man<br />
like franz tost?<br />
FT: Actually, it‘s a question of expectations. At<br />
the moment, I‘m happy if my drivers get between<br />
8th and 12th place. At the present time,<br />
that‘s all. And if my drivers manage that and<br />
complete the race well, then it‘s a success, and<br />
it also justifies this enormous commitment.<br />
And then I go home after the race, sit in the<br />
plane and think about what we could do better,<br />
and on Monday, we then carry on again<br />
at full throttle.<br />
H-7: so much for the theory. in practice,<br />
what happens is that someone<br />
wants to congratulate you, for example,<br />
on sixth place. which you like<br />
to acknowleDge with a harsh „what‘s<br />
the cause for congratulation, fiVe<br />
others were better toDay“.<br />
FT: It‘s true what you say. But you have to be allowed<br />
to dream. And you also must be allowed<br />
to have a vision. And sometime I‘m assuming<br />
that we will have four, five or six Red Bull<br />
drivers who no longer need to be trained and<br />
that we will also have developed the infrastructure<br />
and performance capabilities at<br />
Toro Rosso so far that we will be up with the<br />
front runners. Obviously, I‘d like to achieve<br />
that sometime too. But everything has to go<br />
step by step.<br />
H-7: why Does the worD workaholic not<br />
haVe negatiVe associations for you?<br />
FT: Enjoying the fact that you like to work hard<br />
and put in long hours? I can‘t see anything<br />
negative about that at all. Actually, I don‘t<br />
work at all, I just indulge my hobby.<br />
H-7: anD then you Do haVe time off<br />
sometimes, you allow yourself almost<br />
too much. on the first of january each<br />
year, for example, you go skiing all Day.<br />
Don‘t you haVe a guilty conscience?<br />
FT: No, I don‘t have a guilty conscious, at least<br />
partly because there‘s not a single person on<br />
the slopes really early on the first of January<br />
– that`s real skiing. This year, mind you, I<br />
had a bit of a discussion because they didn‘t<br />
want to turn the lift on at half past eight. They<br />
were late.<br />
H-7: there‘s a story going arounD that<br />
you once saiD gooDbye to your wife<br />
with the worDs: see you in miD-july – anD<br />
that was at the beginning of march,<br />
when you set off for melbourne.<br />
FT: That‘s only half true. I said that to my wife<br />
when I set off for a year to Japan to accompany<br />
Ralf Schumacher to the Formula Nippon. After<br />
all, it was part of the training program then<br />
that Ralf was to stay there for the whole year<br />
and that I, as an employee of Weber Management,<br />
would be by his side. I had the feeling<br />
that there might be, how shall we say, a few discussions<br />
at home, and I was trying to avoid them.<br />
H-7: anD you really thought that that<br />
woulD Do it?<br />
FT: I failed right at the start, when I was leaving<br />
home. I always travel light, but this time I<br />
had to take far more luggage, of course – and,<br />
of course, my wife noticed it straight away.<br />
And then she asked when I was coming back.<br />
And I said something about June or July – and<br />
this was in January.<br />
H-7: anD DiDn‘t your wife ask you just<br />
to pack the rest of your bags anD lea-<br />
Ve completely?<br />
FT: Admittedly, she wasn‘t completely happy<br />
– but I was allowed to come back home again.<br />
H-7: you once saiD: not being able to DriVe<br />
in the winter is a stupiD waste of time.<br />
FT: Racing is our life. And if I have no races<br />
from October to March, I do miss it somewhat.<br />
I look forward to every Sunday that there‘s a<br />
race. Perhaps I‘m just a competitive type, I<br />
just love the confrontation, this battle between<br />
one man and another.<br />
H-7: giVe us three passions, please,<br />

H-7: well, it nearly workeD. unfortunately<br />
go-karting is a form of motor<br />
racing, as far as we know.<br />
FT: (Long pause.) Well, then I read specialist<br />
literature.<br />
H-7: no surprise...<br />
FT: I recently read a biography of Enzo Ferrari.<br />
And one about Colin Chapman. Hang on, I like<br />
reading management literature too.<br />
H-7: apart from that, are you still<br />
crazy about japan?<br />
FT: A stunning country. Incredibly diverse.<br />
There are as many different landscapes in one<br />
country as we have here in the whole of Europe.<br />
There are regions that remind me of North<br />
Germany. And there are regions that remind<br />
me of Southern Italy. A fascinating country, I<br />
really loved the year I spent there back then.<br />
As I said, the landscape, and then the food. A<br />
sensation. In my view, Japanese cuisine is the<br />
best in the world. You have everything, every<br />
sort of fish dish, that you could possibly imagine,<br />
and wonderful meat too. No, I really love<br />
going to Japan every year, and I look forward<br />
every year to being able to eat Japanese food.<br />
H-7: well, you were born in the business,<br />
you‘re from a catering family.<br />
working with them now anD again.<br />
FT: What do you mean, ‚now and again‘. I<br />
spent every holiday working in our restaurant<br />
from when I was nine until I was 19.<br />
H-7: DiD the guests enjoy it?<br />
FT: I was very popular with the guests. Yes,<br />
you can laugh, I could still introduce you to<br />
guests today who just love me.<br />
H-7: really harD to imagine. there are<br />
only a few people in the paDDock that<br />
express their opinion as bluntly as<br />
someone like franz tost. we imagine<br />
that coulD be a bit of a problem in<br />
the catering traDe.<br />
FT: Rubbish. Catering is a service industry.<br />
H-7: precisely.<br />
FT: You just have to adapt. For us, the most<br />
important thing was for the guests to feel satisfied<br />
and to come back. And I can‘t think of<br />
anything that would cause me to be unfriendly<br />
to a guest.<br />
H-7: let‘s cut to the chase: DiD you<br />
get tips?<br />
FT: I always got very good tips. Mind you, if<br />
I didn‘t like a guest, I didn‘t accept the tip...<br />
H-7: ...our View of the worlD is<br />

Although there was always a solution within<br />
the family when it came to the tip. My brother<br />

Sigi Angerer, Chefpilot der Flying Bulls und<br />
erklärter Flugzeugnarr, zieht die Augenbrauen<br />
bei der Frage nach der prägendsten Eigenschaft<br />
der Skymaster hoch und schmunzelt:<br />
„Verdammt laut. Nein, saulaut.“ Wohlgemerkt:<br />
Für Sigi kommt das Anwerfen eines<br />
18-Zylinder-Sternmotors einer DC-6B einer<br />
Symphonie gleich.<br />
Diese Eigenart der Cessna ist auf ihre recht<br />
eigenwillige Konstruktion zurückzuführen,<br />
das so genannte Zentralschubsystem. Der<br />
Rumpf des Schulterdeckers wurde als Gondel<br />
konstruiert. An seinem Bug befindet sich ein<br />
Motor mit einem Zug-, an seinem Heck ein<br />
Triebwerk mit einem Druckpropeller. Dieser<br />
Bauweise verdankt die Cessna auch ihren liebevollen<br />
Spitznamen „Push Pull“. Die hintereinander<br />
liegende Anordnung der beiden<br />
Continental-Motoren mit je 210 PS Leistung<br />
hat gegenüber der klassischen Anordnung an<br />
den Tragflächen den Vorteil, dass bei Ausfall<br />
eines Triebwerks kein Drehmoment um<br />

unverändert gut kontrollierbar. Der Nachteil?<br />
Die vom vorderen Propeller beschleunigte Luft<br />
trifft mit hoher Geschwindigkeit auf den hinteren<br />
– und erzeugt so annähernd Überschalllärmspitzen.<br />
Vielleicht ein Grund, warum sich<br />
kaum ein anderer Hersteller an diese eigentlich<br />
intelligente Bauweise wagte.<br />
Der Sechssitzer wurde von 1963 bis 1982 in<br />
mehreren zivilen und militärischen Varianten<br />
gefertigt, in Summe 2.993 Stück. Die militärische<br />
Version für die US Air Force wurde als<br />
O-2 bezeichnet. „O“ stand dabei für Observer,<br />
denn die 337 wurde u. a. im Vietnamkrieg als<br />
Aufklärungsflugzeug eingesetzt. Die gläserne<br />
Tür machen sich heute noch immer Safari-<br />
Anbieter zunutze. Überhaupt ist die Skymaster<br />
das Sinnbild eines Buschfliegers, wie<br />
Hans Pallaske, ihr Pilot bei den Flying Bulls,<br />
betont: „Die Maschine ist leicht und lässt sich<br />
dank ihrer Leistung auf kleinstem Raum starten<br />
und landen.“<br />
Das Exemplar der Flying Bulls stammt aus<br />
dem Jahr 1969 und wurde bei Auslieferung<br />
vom Werk in Wichita/USA nach Chile/Südamerika<br />
verkauft. Die Maschine mit dem heutigen<br />
Kennzeichen N991DM verbrachte nach<br />
mehreren Stationen bei Hobbypiloten fast 15<br />
Jahre in einer Garage, bevor sie 2007 ins Leben

zurückgeholt wurde. Die Restaurierung dauerte<br />
fast vier Jahre, was man dem Flugzeug auch bis<br />
ins Detail anmerkt. Dreiblattpropeller und ein<br />
Stall-Kit, der noch langsamere Fluggeschwindigkeiten<br />
erlaubt, sind nur zwei von zahlreichen<br />
Modifikationen. „Sie ist heute in einem<br />
viel besseren Zustand als bei ihrer Auslieferung<br />
1969. Die Instrumentierung ist pures Hightech,<br />
die Innenausstattung wirklich komfortabel“,<br />
sagt Pallaske. Und mit einem Lächeln fügt er<br />
in Anspielung auf die kleine lärmende Schwäche<br />
der Push Pull hinzu: „Die neue Innenraumisolierung<br />
ist allererste Klasse.“<br />

Sigi Angerer, chief pilot of the Flying Bulls and<br />
self-confessed plane geek, raises his eyebrows<br />
when asked about the most striking feature of<br />
the Skymaster and grins: “Amazingly loud.<br />
No, bloody loud”. Mind you: To Sigi, starting<br />
up the 18-cylinder radial engine of a DC-6B<br />
sounds like a symphony.<br />
This characteristic of the Cessna is due to its<br />
rather unusual design, which is based on the<br />
centerline thrust system, as it is called. The<br />
fuselage of the high-wing airplane was designed<br />
as a pod. An engine with a pull action<br />
is mounted on its nose, and an engine with<br />
a push propeller is mounted on its rear. This<br />
design is also what gave the Cessna its affectionate<br />
nickname of the “push-pull” airplane.<br />
The layout of the two Continental engines, one<br />
behind the other, each with a capacity of 210<br />
HP, has the advantage, compared with the<br />
classic layout on the bearing surfaces, that the<br />
failure of one engine does not cause any torque<br />
around the main axis, and the aircraft can still<br />
be easily controlled. The disadvantage? The<br />
air that is speeded up by the front propeller<br />
hits the rear one at high speed – and generates<br />
almost supersonic noise levels. Which may be<br />
one of the reasons why almost no other manufacturer<br />
dared to try out this actually very intelligent<br />
design.<br />
The six-seater was produced between 1963<br />
and 1982 in a number of civilian and military<br />
versions, with the total production number<br />
reaching 2,993. The military version for the<br />
US Air Force was named the O-2. “O” stood<br />
for Observer, as one of the uses of the 337 was<br />
on reconnaissance flights in the Vietnam war.<br />
Today, safari organizers still make use of the<br />
glazed door. The Skymaster is the ultimate<br />
example of the bush aircraft, as Hans Pallaske,<br />
its pilot for the Flying Bulls, emphasizes. “The<br />
plane is light and, thanks to its performance, it<br />
can be started and landed in the tiniest space.”<br />
The model owned by the Flying Bulls dates<br />
from 1969 and was sold after production by
the plant in Wichita, USA to Chile in South<br />
America. The aircraft with the current registration<br />
number N991DM was owned by a number<br />
of amateur pilots, and then spent almost 15<br />
years in a garage before being brought back to<br />
life in 2007. It took almost four years to restore<br />
it, and you can see this in every detail of the<br />
plane today. The three-bladed propeller and<br />
a stall kit that allows even slower flight speed<br />
are just two of the countless modifications. “It<br />
is in much better condition today than it was<br />
when it was produced in 1969. The instrumentation<br />
is pure high-tech, and the interior is<br />
really comfortable”, says Pallaske. And, referring<br />
to the small noisy weakness of the pushpull<br />
design, he adds with a smile: “The new<br />
interior insulation is absolutely first-class!”<br />
Ich habe mehr als hundert Mal den Atlantik<br />
überquert, ohne Zwischenfälle, deshalb habe<br />
ich nie darüber berichtet. Dieser Tag im<br />
November begann etwas anders. Tatort: KPVC/<br />
Provincetown, Massachusetts/USA – unkontrollierter<br />
Flugplatz – das heißt, es ist keiner<br />
da! Kein Tower, keine Feuerwehr – nur ein<br />
Tankwart. Die Landebahn, umgeben von Wald,<br />
ist gerade mal lang genug für unsere dreistrahlige<br />
Falcon. In Startrichtung, leicht versetzt<br />
nach rechts, ist eine Schneise im Wald – da<br />
könnte ich vielleicht ….<br />
Bei der Startstrecke wird immer ein eventueller<br />
Triebwerksausfall mit einberechnet,<br />
da ist dann KPVC ein wenig kurz, deshalb<br />
die Waldschneise!<br />
Unser Passagier hatte Verspätung, in der Dämmerung<br />
konnte ich die Schneise im Wald<br />
gerade noch sehen. Auf meine Frage am Funk<br />
um Startup bekam ich „no flightplan“ zur Antwort.<br />
Ich hatte zwar meine Kopie davon, aber<br />
da der Flugplatz keine Mannschaft hatte, hieß<br />
das aussteigen, ins Büro des Tankwarts gehen<br />
und den Flugplan am Telefon durchgehen.<br />
So ein Atlantikflugplan ist elendslang –<br />
Destination Innsbruck. Mittlerweile dunkel,<br />
zurück an Board, die Waldschneise nicht<br />
mehr zu sehen.<br />
Aber es kam etwas Ostwind auf, der konnte<br />
mir im Notfall etwas über die Bäume helfen.<br />
Also Start in die Dunkelheit, 5 Klicks mit dem<br />
Mikrofon schalten die Pistenbeleuchtung ein.<br />
Alles läuft gut, haushoch über die Bäume<br />
hinweg. Kaum ist die Startcheckliste fertig,<br />
höre ich einen Schrei von hinten: „Es brennt!“<br />
Ich informiere über Funk, dass wir die Höhe<br />
und Richtung halten wollen, übergebe das<br />
Flugzeug dem Autopilot – der Copilot wacht<br />
darüber. Ich bewege mich ungewöhnlich<br />
schnell aus meinem Sitz. Die Konstruktion des<br />
Klapptisches in der Kabine ist etwas schwachsinnig.<br />
Zwischen Tisch und Turbinenwand<br />
ist ein kleiner Schlitz und da fällt manchmal<br />
Papier oder sonstiges Zeug hinein. Diesmal<br />
war es eine brennende Zigarette, das Papier<br />
war schon drinnen. Jedenfalls war ein kleines<br />
Flugzeug eine große Rauchwolke. Ich dachte<br />
Feuerlöscher ist nicht gut, da müssen wir<br />
dann wieder landen. Da schnappte ich eine<br />
Literflasche Mineralwasser, nach der dritten<br />
Flasche war das Feuer aus. Ich kletterte zurück<br />
in meinen Pilotensitz und der anschließende<br />
Atlantikflug war schon wieder ereignislos.<br />

Kein ganz gewöhnlicher Arbeitstag!<br />
I‘ve crossed the Atlantic more than a<br />
hundred times without incident, and so I‘ve<br />
never said anything much about it. That<br />
day in November started a little differently.<br />
The place: KPVC/Provincetown, Massachusetts/USA<br />
– an unmonitored air field – that‘s<br />
to say, there‘s no-one there! No tower, no<br />
fire service – just a gas station attendant.<br />
The landing strip, surround by the forest, is<br />
just long enough for our three-engine Falcon.<br />
In the starting direction, slightly offset<br />
to the right, an aisle in the forest – maybe<br />
I could just ....<br />
When you take off, you always have to allow<br />
for a possible engine failure, and then KPVC<br />
is a little short – hence the aisle in the forest!<br />
Our passenger was late, and I could just<br />
make out the aisle in the forest in the dusk.<br />
In response to my question over the radio<br />
about take-off – “no flight plan”. I had my<br />
copy of it. But because the air field didn‘t<br />
have a team, I had to get out, go into the<br />
gas station attendant‘s office and phone the<br />
flight plan through.<br />
An Atlantic flight plan is miserably long –<br />
with Innsbruck as the destination. In the<br />
mean time, it was dark, so I reboarded – and<br />
couldn‘t see the aisle in the forest any more.<br />
But there was an east wind, that can help<br />
me a bit across the trees in an emergency.<br />
So we start up in the dark, 5 clicks with the<br />
microphone switch on the runway lights.<br />
Everything goes OK, we‘re off as high as the<br />
houses over the trees. I‘m barely through<br />
the start-up checklist, when I hear a scream<br />
from behind: “We‘re on fire”! I radio<br />
through that we want to stick to our height<br />
and direction, hand over the plane to the<br />
autopilot – the co-pilot keeps an eye on it. I<br />
move at incredible speed out of my seat. The<br />
design of the folding table in the cabin is<br />
pretty stupid. There is a tiny slit between the<br />
table and the turbine wall, and sometimes<br />
paper or other stuff falls inside. This time, it<br />
was a burning cigarette, and the paper was<br />
there already. In any case, a little airplane<br />
had turned into a great cloud of smoke. I<br />
thought, well, a fire extinguisher isn‘t a good<br />
idea, we‘ll have to land again. So I picked<br />
up a liter bottle of mineral water, and after<br />
three bottles, the fire had gone out. I climbed<br />
back into the pilot‘s seat and completed the<br />
rest of the Atlantic crossing uneventfully.<br />

WARUM UM ALLES IN DER WELT WIRD IMMER NUR WEIN ZUR SPITZENKÜCHE GEREICHT? ES GIBT DOCH SO VIEL MEHR<br />
UND ANDERES, DAS WIRKLICH GUT ZUM ESSEN PASST.<br />
Essen und trinken hält Leib und Seele<br />
zusammen – sagt der Volksmund. Von<br />
Wein ist da, soweit ich weiß, nicht zwingend<br />
die Rede. Warum ich das erwähne?<br />
Weil ich bei diesem Thema mit dem<br />
von mir nun wirklich hoch geschätzten<br />
Service Chef Ondrej Kovar im freundschaftlichen<br />
Dauerclinch liege. Nämlich<br />
mit der Fragestellung: Braucht Spitzenküche<br />
wirklich immer Wein als Begleitung?<br />
Zugegeben, die in diesem Heft angekündigten<br />
„Wein-Veranstaltungen“ mit<br />
Weinen aus Slowenien und Kroatien sowie<br />
aus dem Burgund und dem Bordeaux<br />
sind absolute Highlights. Und trotzdem<br />
bleibe ich bei meiner Frage: Könnte ein<br />
modern-offener Sommelier nicht auch<br />

ganz andere Getränke zu den Speisen anbieten,<br />
vielleicht auch ganz ohne Alkohol,<br />
der sowieso ab dem vierten, fünften<br />
Glas einer frischen Aufnahmefähigkeit<br />
beim Essen nur zu oft im Wege steht?<br />
Nein, ich will keinem Wein-Genießer die<br />
Freude verderben. Aber wer sagt denn,<br />
dass beispielsweise zu einem speziell<br />
abgeschmeckten Lammgericht ein orientalisch<br />
angehauchter Joghurt-Drink mit<br />
frischer Minze nicht viel gelungener<br />
passen könnte als der ewig schwere Rotwein?<br />
Oder dass zu einer fangfrischen<br />
Steinbutttranche ein alkoholfreier Cocktail<br />
auf Zitrusfrüchtebasis nicht fetziger<br />
sein könnte als die so sattsam bekannten<br />
Weißweine?<br />
Worauf ich hinaus will: Die Summe der<br />
Genüsse sind in der kreativen Küche<br />
unendlich. Warum unterwerfe ich mich<br />
in dieser Unendlichkeit dem engen Korsett<br />
der Weinbegleitung? Warum denke<br />
ich nicht, offen und völlig unvoreingenommen,<br />
über alles nach, was flüssig<br />
ist – mit oder ohne Alkohol, aus Früchten<br />
oder aus Milchprodukten, reinsortig<br />
oder gemixt, kalt, lauwarm oder heiß,<br />
anregend oder beruhigend? Auch hier<br />
sind die Möglichkeiten unendlich. Doch<br />
vielleicht ist es ja genau diese beeindruckende<br />
Unendlichkeit, die unsere<br />
Sommeliers davon abhält, hier endlich<br />
einen ersten Anfang zu wagen.<br />
WHY ON EARTH IS IT ONLY EVER<br />
WINE THAT‘S SERVED WITH THE<br />
MOST SUPERB CUISINE? THERE ARE<br />
SO MANY MORE, DIFFERENT DRINKS<br />
THAT GO REALLY WELL WITH FOOD.<br />
People say that food and drink keep<br />
body and soul together. Wine doesn‘t<br />
necessarily get a look in here, as far as I<br />
know. Why do I mention this? Because,<br />
when it comes to this question, I‘m in<br />
a constant friendly dispute with Service<br />
Manager Ondrej Kovar, whom<br />
I actually respect greatly. The question<br />
is: Does superb cuisine really<br />
always need to be accompanied by<br />
wine? Admittedly, the “Wine Events”<br />
announced in this magazine, featuring
wines from Slovenia and Croatia, not<br />
to mention Burgundy and Bordeaux,<br />
are absolute highlights. And yet I stand<br />
by my question: Couldn‘t a modern,<br />
open sommelier offer completely different<br />
drinks with the food, maybe even<br />
without alcohol, which all too often<br />
stands in the way of any kind of fresh<br />
receptivity to food from the fourth or<br />
fifth glass onward anyway?<br />
I don‘t want to spoil the fun for any<br />
wine connoisseur. But who can say, for<br />
example, that an Oriental-type yoghurt<br />
drink with fresh mint doesn‘t set off a<br />
beautifully seasoned lamb dish much<br />
better than the eternally heavy red<br />
wine? Or that a non-alcoholic citrus<br />
fruit-based cocktail might not be just<br />
a bit more cool with a freshly caught<br />
slice of turbot than the oh-so-familiar<br />
white wines?<br />
The point I‘m trying to make is that the<br />
total enjoyment that can be achieved in<br />
creative cuisine is infinite. Why should<br />
I subject myself, in this infinity, to the<br />
constraints of wine with every dish?<br />
Why shouldn‘t I think, openly and<br />
without prejudice, about everything in<br />
liquid form – with or without alcohol,<br />
made from fruits or dairy products,<br />
pure or mixed, cold, luke-warm or hot,<br />
stimulating or soothing? Here too, the<br />
possibilities are infinite. But perhaps<br />
it is precisely this impressive infinity<br />
that holds our sommeliers back from<br />
finally daring to step into this unknown<br />
territory.<br />

Wir sollten uns erinnern. An die epochale Gruppe „Dschingis Khan“ mit<br />
ihrem ebenso epochalen Titel: „Moskau“. Ewig gültige Zeilen gab es da,<br />
die man bis heute nicht aus den Ohren bekommt.<br />
„Moskau, Moskau, Liebe schmeckt wie Kaviar,<br />
Mädchen sind zum Küssen da,<br />
ho, ho, ho, ho, hey!“<br />
Auch nicht schlecht: „Moskau, Moskau,<br />
wirf die Gläser an die Wand,<br />
Russland ist ein schönes Land,<br />
ho, ho, ho, ho, hey!“<br />
An so etwas muss Anatoly Komm irgendwie gedacht haben, als er sein<br />
Restaurant „Varvary“ taufte, was so viel wie „Barbaren“ heißt. Welch subtile<br />
Ironie – Anatoly Komm will wirklich etwas bewegen. Mit seiner molekularen<br />
Konzept-Küche kocht er Moskau und Russland auf die Landkarte<br />
der kulinarischen Avantgarde. Er, der studierte Physiker, der auch mal<br />
Modedesigner war und tief interessiert an klassischer Musik und Ballett<br />
ist, will seinen Landsleuten zeigen, was geht. Mit Austern, mariniertem<br />
grünen Apfel, heißer Sepia-Consommé und stickstoffgeeistem, rosarotem<br />
Champagner-Espuma. Oder mit einem Salat aus Wassermelonen, Algen,<br />
Erdbeeren und Venusmuscheln, alles angegossen mit einer Vinaigrette<br />
aus Orangen, Zitrone und Soja. Damit sein hauptstädtisches Klientel nicht<br />
zu sehr fremdelt, hat Anatoly Komm natürlich auch den nationalen Klassiker<br />
Borschtsch im Programm. Aber halt auf seine Art: Der Hauptteller<br />
präsentiert sich mit geschmortem Kalbfleisch, auf dem eine karamellisierte<br />
Gänsestopfleber liegt. Daneben wird eine große Kugel aus geeister<br />
Crème Fraîche mit Kräutern gereicht. Auf einem zweiten Teller liegen<br />
Tranchen im „Futo-Maki“-Stil, gefüllt mit Wurzelgemüse, klein geschnittenen<br />
Eiern, Makrele und Rote-Beete-Gelée, alles nicht in Maki-Algen<br />
eingewickelt, sondern in einem „Papier“ aus Roter Beete. Als Dip wird<br />
eine Rote-Beete-Mayo geboten, und über die Eiskugel wird ein heißer<br />
Rote-Beete-Sud gegossen. Ikarus Executive Chef Roland Trettl war auf<br />
jeden Fall beeindruckt: „Sehr kreativ, sehr witzig und sehr, sehr lecker.“<br />
Moskau<br />
Russland<br />
We should remember. We should remember the epoch-making band<br />
“Dschingis Khan” with its equally epoch-making hit “Moscow”, full of<br />
immortal lines that you just can‘t get out of your head.<br />
“Moscow, Moscow, Love tastes like caviar,<br />
Girls are for kissing,<br />
ho, ho, ho, ho, hey!”<br />
These aren‘t bad either: “Moscow, Moscow,<br />
Throw the glasses at the wall,<br />
Russia is a beautiful land,<br />
ho, ho, ho, ho, hey!”<br />
Anatoly Komm must have been thinking of something like this when he<br />
christened his restaurant “Varvary”, which translates roughly as “Barbarians”.<br />
What a subtle irony – Anatoly Komm really wants to set things<br />
in motion. With his molecular cuisine, he has put Moscow and Russia<br />
on the map of avant-garde cuisine. After studying physics, he was a<br />
fashion designer for a while too, and is interested in classical music<br />
and ballet – and now he wants to show his fellow Russians what it‘s all<br />
about. With oysters, marinated green apples, hot sepia consommé and<br />
pink Champagne espuma frozen with liquid nitrogen. Or with a salad of<br />
water melons, algae, strawberries and clams, dressed with a vinaigrette<br />
of oranges, lemon and soy .<br />
Anatoly Komm also offers the national classic, borscht, on the menu, of<br />
course, so that he doesn‘t scare away his metropolitan clientele. But he<br />
makes it his own: The main dish features braised veal on which caramelized<br />
foie gras is placed. Alongside this, he serves a large scoop of iced<br />
crème fraîche with herbs. On a second plate, he serves “futo-maki” style<br />
rolls, filled with root vegetables, finely chopped eggs, mackerel and<br />
beetroot gelée, all wrapped, not in maki algae, but in a “paper” made<br />
from beetroot. The dip is a beetroot mayonnaise, and a hot beetroot<br />
broth is poured over the scoop of iced crème frâiche. Ikarus Executive<br />
Chef Roland Trettl was impressed in any case: “Very creative, very witty<br />
and very, very tasty.”<br />
Borschtsch / Borscht
Warum einfach, wenn es auch kompliziert geht? Und warum nur kompliziert, wenn es<br />
auch superkompliziert geht, und das dann auch noch so, dass es am Ende wieder einfach<br />
aussieht? Diese beiden Fragen zielen ins Renaut‘sche Koch-Universum. Oder auch in<br />
Richtung seiner Polenta-Ravioli.<br />
Ravioli sind diese sattsam bekannten Teigtaschen, die zwar in der Regel toll schmecken,<br />
aber nicht unbedingt zum dreifach gesprungenen Rittberger des internationalen Hightech-Cooking<br />
gehören. Pasta-Teig ausrollen, Füllung rauf, zuklappen, kochen. Und jetzt<br />
zu den Renaut-Ravioli, die der Mann in einem quasi masochistischen Anflug aus einer<br />
höchst diffizil zu behandelnden Polenta-Masse anfertigt. Alles unglaublich präzise<br />
auf zwei Millimeter Dicke ausgerollt. Dann das Pilzragout darauf, mit einer weiteren<br />
Polenta-Lage alles abdecken und erst dann so ausstechen, dass es von außen die Anmutung<br />
einer Ravioli hat. Der anschließend angegossene Geflügel-Wacholder-Jus ändert<br />
rein gar nichts an der vermeintlichen Simplizität. Ikarus Executive Chef Roland Trettl:<br />
„Man muss schon selber Profi sein, um den versteckten Aufwand erkennen zu können,<br />
den Emmanuel bei seinen Gerichten treibt.“<br />
Der Franzose hat es drauf. Naturverbunden wie er nun mal ist, liebt er die Berge, das Pilzesammeln<br />
und das Fischen in der nahen Umgebung Megèves. Er selber sieht sich „klassisch<br />
französisch“, doch allein schon als Leiter einer Kochschule mit weltweiten Unterrichts-Auftritten<br />
sorgt er für internationale Akzente in seiner Küche. Seine persönliche<br />
Handschrift erkennt man an seinem Hang zur – glücklicherweise ausschließlich kulinarischen<br />
– Bitterkeit. Die zum Kalbsbries gereichte Holunder-Sauce tunt er mit ein paar<br />
Spritzern Angostura und Hechtklößchen mit Flusskrebsen und Krustentier-Schaumsuppe<br />
mit in Campari marinierten Navetten. Diese Bitterkeit begeistert Roland Trettl:<br />
„Es sind exakt diese Ideen, die Emmanuels Gerichte Richtung Spitze abschießen lassen.“<br />
Why make things simple if you can make them complicated? And why make them just<br />
complicated if you can make them super-complicated, and you just do it anyway so<br />
that ultimately, it looks simple? These questions get to the heart of the Renaut cooking<br />
universe. Or to the heart of his polenta ravioli anyway.<br />
As most people know, ravioli are pasta pockets which generally taste great but are not<br />
necessarily what one might call the “triple salco” of international high-tech cooking. Roll<br />
out the pasta dough, put the filling on top, fold up, cook. And then there‘s Renaut ravioli.<br />
Which the man prepares with almost a touch of masochism from a very tricky to handle<br />
polenta mixture. All rolled out to a thickness of two millimeters with incredible precision.<br />
The mushroom ragout is placed on top, everything is covered with another layer of<br />
polenta, and only then cut out in such a way that it looks like ravioli from the outside.<br />
The poultry and juniper jus then poured over it does not change the alleged simplicity<br />
in any way. Ikarus Executive Chef Roland Trettl: “You have to be a professional yourself<br />
to be able to recognize the hidden effort that Emmanuel puts into his dishes.”<br />
The Frenchman has really got what it takes. Being as close to nature as he is, he loves<br />
the mountains, collecting mushrooms and fishing in the area around Megève. He himself<br />
thinks of himself as “classic French”, but there are plenty of international accents in his<br />
kitchen, if only because of his experience as director of a cookery school offering training<br />
sessions all over the world. His personal signature can be seen in his love of bitterness<br />
– only from a culinary viewpoint, luckily. He tunes the elder sauce that he serves<br />
with sweetbreads by adding a few splashes of angostura and pike dumplings with crayfish<br />
and seafood foam soup with Navet turnips marinated in Campari. Roland Trettl is<br />
enthusiastic about this bitterness: “These are precisely the ideas that take Emmanuel‘s<br />
dishes right to the very top.”<br />

Wenn er was macht, dann macht es der Belgier Peter Goossens<br />
richtig. Wenn er eine eigene Website installiert, dann mit<br />
monatlich zehntausend Klicks. Wenn er ein Kochbuch schreibt,<br />
dann zusammen mit seinem Weltstar-Kollegen Sergio Herman.<br />
Und wenn er entspannt, dann total, nämlich in der morgendlichen<br />
Dämmerung auf dem Hochsitz – Peter ist ein leidenschaftlicher<br />
Jäger.<br />
Peter Goossens ist in Belgien ein Star. Man findet ihn auf den<br />
unterschiedlichsten TV-Sendeplätzen und mittlerweile sogar<br />
auf seinem eigenen Sender: „njam!“-TV – so heißt der Koch-<br />
Kanal, den der umtriebige Belgier gerade mit Geschäftsfreunden<br />
aufbaut.<br />
Drei Michelin-Sterne, 19,5 GM-Punkte – Peter Goossens Restaurant<br />
„Hof Van Cleve“ im flämischen Kruishoutem ist absolute<br />
Weltspitze. Ein Blick auf seine „Langustinen mit Gänsestopfleber,<br />
Rote Beete und Ochsenschwanz“ kann diese Spitzenstellung<br />
verdeutlichen. Allein schon die Gänsestopfleber-Creme, die dem<br />
ganzen Gericht eine großartige Textur schenkt. Und darauf die<br />
gebratenen Langustinen. Dazu der Ochsenschwanz und die rote<br />
Beete mit ihrer perfekten Säure – das ist die ganz hohe Kunst des<br />
Kombinierens. Das begeistert, wie auch seine „Nordseekrabben“<br />
mit Gurken, Erbsen und Curry oder sein „Squid“ mit Pfeffer, Pickles<br />
und Fenchel.<br />
Die beherrschende Grundkonstante in seinem Koch-Kosmos<br />
beschreibt Ikarus Executive Chef Roland Trettl so: „Ein Blick<br />
auf Peters Teller lässt einen immer wieder zum selben Ergebnis<br />
kommen: Einerlei, wie viel dort an Arrangements auch zu erkennen<br />
sein mag, es gibt nicht ein einziges Detail, kein Kräuterchen<br />
und kein Blättchen, das nicht Sinn machen würde und das nicht<br />
extrem durchdacht wäre.“ Trettl weiter: „Sicherlich, man kann<br />
großen, gewaltigen Geschmack auch mit wenigen, sehr reduzierten<br />
Produkten erreichen. Auch das ist hohe Kunst. Aber wenn<br />
jemand statt mit drei Bällen mit 13 jongliert, und noch immer fällt<br />
keiner dabei runter, dann beeindruckt mich das halt mehr als der<br />
Belgien<br />

When Belgian Peter Goossens does something, he does it properly.<br />
When he sets up his own web page, it goes on to attract ten thousand<br />
visitors a month. When he writes a cookery book, he does it<br />
with fellow international celebrity chef Sergio Herman. And when<br />
he relaxes, then he does it totally, in the early morning dawn in a<br />
raised hide – because Peter is a passionate hunter.<br />
Peter Goossens is a star in Belgium. He appears on all sorts of different<br />
TV programs, and now even has his own channel: “njam!”-<br />
TV – which is the name of the cooking channel that the busy<br />
Belgian is currently building up with business friends.<br />
Three Michelin stars, 19.5 GM points – Peter Goossen‘s restaurant<br />
“Hof Van Cleve” in the Flemish town of Kruishoutem is absolutely<br />
world class. A glimpse of his “Langoustines with foie gras,<br />
beetroot and oxtail” shows just why he‘s at the top. The foie gras<br />
cream alone, which gives the whole dish a wonderful texture.<br />
Then on top of that, there are the fried langoustines. Served with<br />
the oxtail, the beetroots with their perfect acidity – this is the real<br />
art of creating perfect combinations. And his “North Sea shrimps”<br />
are just as captivating, with cucumbers, peas and curry, or his<br />
“Squid” with pepper, pickles and fennel.<br />
This is how Ikarus Executive Chef Roland Trettl describes the<br />
basic constant that dominates his cooking cosmos: “If you look<br />
at Peter‘s plates, you always reach the same conclusion: Firstly,<br />
however many different combinations there are, there‘s not a single<br />
detail, not a herb or a leaf that hasn‘t been thought out carefully,<br />
that doesn‘t make perfect sense.” Trettl continues: “Sure,<br />
you can achieve a huge, powerful flavor with just a few, very<br />
reduced products. That is a very high art too. But if someone is<br />
juggling with 13 balls instead of three and still manages not to<br />
drop one of them, then it simply impresses me more than the<br />
artist with the three balls. Provided, of course, nothing does get<br />
dropped – as is the case with Peter Goossens.”

Ohne Druck geht bei ihm gar nichts. Normalerweise.<br />
Die Gerichte für das „Ikarus“-Menü<br />
im August müssen „erfunden“ werden? Für<br />
den großen Festspielmonat, die einzige Zeit<br />
also ohne Gastkoch im „Ikarus“? Für Executive<br />
Chef Roland Trettl ist das in der Regel<br />
eine Aufgabe der allerletzten Juli-Tage. Damit<br />
sich überbordende Kreativität einstellt, gibt<br />
es für den Südtiroler nur eine wirklich taugliche<br />
Grundposition: Mit dem Rücken zur<br />
Wand. Wie gesagt, normalerweise. Doch<br />
dieses Jahr wurde Roland Trettl 40, und so<br />
schleicht sich wohl ein Atömchen Gelassenheit<br />
und Altersweisheit in sein Schaffen. Ein<br />
Besuch in einem angesagten Spa-Bereich, eine<br />
Mischung aus wohltuenden Anwendungen<br />
und dezent-esoterischen Raumklängen – und<br />
schon sprudelten beim Chef die kulinarischen<br />
Rezept-Ideen für den Festspielmonat – und<br />
das bereits im Mai.<br />
Das Ergebnis sind nüchtern-knappe Überschriften<br />
– und ihre wild explodierende<br />
Feuerwerks-Umsetzung im Kleingedruckten.<br />
Zum Beispiel die eher reduzierte Überschrift<br />
„Thunfisch – Rote Beete“. Klingt nach zwei<br />
Produkten, die der Interpretation bedürfen.<br />
Die folgt prompt in einem Dreisprung.<br />
Erstens: Tuna-Rolle mit Rote-Beete-Mousse,<br />
Radieschen und Rettichschoten. Zweitens:<br />
Toro gegrillt mit Rote-Beete-Sud, Chioggia,<br />
Rettichblüten. Drittens: Shot von der Roten<br />
Beete mit Granite von eingelegtem Ingwer.<br />
Oder das Amuse Bouche „Mozzarella-<br />
Tomate“: Erstens eine Torte aus Basilikum-<br />
Salzburg<br />
Pinienkerne-Biskuit, Tomaten-Mozzarella-<br />
Masse, grünem Tomatenchutney und weißem<br />
Tomatenmousse im perfekten Schwarzwälder-Kirsch-Torten-Look.<br />
Und dazu, zweitens,<br />
ein Tässchen mit einem „Cappuccino“ von<br />
der Tomate, Vintage-Sojasauce und Mozzarellaschaum.<br />
Mit anderen Worten: Ideen ohne Ende. Dazu<br />
dann noch die geschlossene „Ikarus“-Mannschaftsleistung<br />
rund um Küchenchef Martin<br />
Klein sowie der beiden „Sous“ Jörg Bruch und<br />
Tommy Dananic lässt nur noch eine Frage aufkommen:<br />
Braucht Salzburg im August wirklich<br />
noch die Festspiele?<br />
For him, nothing happens without pressure.<br />
Normally. So, the dishes for the Ikarus menu<br />
in August need to be “invented”? For the<br />
important Festival period, i.e. the only month<br />
without a guest chef in the Ikarus? As far as<br />
Executive Chef Roland Trettl is concerned,<br />
this is usually a job that gets done in the<br />
very last days of July. There‘s only one really<br />
viable basic position for the man from South<br />
Tyrol that will ensure that his creativity starts<br />
to bubble over: with his back to the wall. Or<br />
it would be, normally. But this year, Roland<br />
Trettl turned 40, and a little touch of serenity<br />
and the wisdom of age seems to be creeping<br />
into his work. A visit to a popular spa region,<br />
a mixture of soothing treatments and subtly<br />
esoteric background music – and the ideas<br />
for culinary delights for the Festival month<br />
were soon fizzing around in the chef‘s mind –<br />
and it was only May.<br />

The result? Dry, sparse headings – exploding<br />
wildly in a burst of fireworks when it comes<br />
to the small print. For example, there is the<br />
rather austere heading “Tuna – Beetroot”.<br />
Sounds like two products in need of interpretation.<br />
Which then follows in a wonderful<br />
triple jump. Firstly: Tuna roll with beetroot<br />
mousse and white and red radishes. Secondly:<br />
Toro, grilled with beetroot broth, chioggia<br />
beets, white radish blossoms. Thirdly: A<br />
beetroot shot with granita of marinated<br />
ginger. Or the “Mozzarella and Tomato”<br />
amuse bouche. Firstly, a gateau of a basil and<br />
pinenut bisquit, a tomato and mozzarella<br />
mixture, green tomato chutney and white<br />
tomato mousse in a perfect Black Forest<br />
gateau look. And with it, secondly, a little cup<br />
with a “cappuccino” of tomato, vintage soy<br />
sauce and mozzarella foam.<br />
In other words: an infinity of ideas. And<br />
when you add the tightly knit Ikarus team<br />
led by head chef Martin Klein and the two<br />
sous chefs, Jörg Bruch and Tommy Dananic,<br />
this means that there is just one question left<br />
to answer: Does Salzburg really still need a<br />
Festival in August?<br />

Werden bei der ersten Verkostung die in unseren Breiten eher<br />
unbekannten Weinwelten Sloweniens und Kroatiens präsentiert,<br />
so zeigt der zweite Event mit der Burgund-Domaine „Pierre-Yves<br />
Colin-Morey“ und dem Bordeaux-Highlight „Château Figeac“ zwei<br />
absolut arrivierte Mega-Stars der internationalen Weinszene.<br />
So unterschiedlich diese beiden Veranstaltungen auch anmuten,<br />
so sehr geht es doch um den gemeinsamen Nenner, betont Service<br />
Chef Ondrej Kovar, der beide Abende organisiert und leitet: „Die<br />
Regionen stellen nur auf den ersten Blick eine extreme Bandbreite<br />
dar. Doch wer genauer hinschaut, erkennt sowohl in der Weinwelt<br />
Sloweniens und Kroatiens wie im Burgund und im Bordeaux<br />
extrem historische Weingebiete, wo sich Winzer, zumindest an der<br />
Spitze, Weinen von großer Dichte und Tiefe verpflichtet fühlen.“<br />
Der „Frankreich“-Abend ist in seiner Konzeption hochspannend.<br />
Auf der einen Seite der Winzersohn Pierre-Yves Colin, der erst<br />
seit 2006 seine eigenen Weine ausbaut und sich seitdem bedingungsloser<br />
Spitzenqualität verpflichtet hat. Auf der anderen Seite<br />
der Bordeaux-Klassiker „Château Figeac“, der zu den traditionsreichsten<br />
Weingütern des Saint-Émilion zählt.<br />
Deutlich homogener zeigt sich eine Phalanx ausgesuchter Winzer<br />
aus Slowenien und Kroatien – und sei es auch nur in dem Anliegen,<br />
Slowenien und Kroatien wieder in den Reigen großer europäischer<br />
Weingebiete zu verankern. Die dabei produzierten Qualitäten<br />
werden Weinliebhaber ebenso überraschen wie begeistern.<br />
Dass es dabei vieles zu entdecken gibt – darunter uns so fremd<br />
klingende Rebsorten wie Malvazija, Musˇkat bijeli, Savignonasse,<br />
oder der lokale Rotweinstar Teran – gehört zu den großen Attraktionen<br />
des Events. Service Chef Ondrej Kovar: „Beide Tastings<br />
haben ihren ganz eigenen Reiz. An dem einen Abend können wir<br />
zeigen, dass große Namen durch großartige Qualitäten gestützt<br />
werden. An dem anderen Abend stehen großartige Qualitäten im<br />
Vordergrund, die mit Sicherheit bald zu neuen großen Namen<br />
führen werden.“<br />

are fairly unknown in our part of the world, and the second event,<br />

and Croatia, on the one hand, and Burgundy and Bordeaux, on the<br />
other, are extremely historic wine regions where the top vintners at<br />
least are committed to producing wines of great density and depth.”<br />
The conception of the “French” evening is very exciting. On the<br />
one side, we have vintner‘s son Pierre-Yves Colin, who has only<br />
been producing his own wines since 2006 and has been committed<br />
since then to unconditional top quality. And on the other, there<br />
is the Bordeaux classic, “Château Figeac”, one of the estates with<br />
the greatest traditions in St. Émilion.<br />
The phalanx of carefully chosen vintners from Slovenia and<br />
Croatia seem to have far more similarities – even if it is only their<br />
eagerness to secure a place for Slovenia and Croatia once more<br />
in the ranks of the great European wine growing areas. The qualities<br />
produced here will surprise and captivate all wine lovers.<br />
The fact that there is so much to discover here – including grape<br />
varieties that sound strange to us, such as Malvazija, Musˇkat<br />
bijeli, Savignonasse, or the local red wine star, Teran – is one of<br />

Was dies bedeutet? Dass in den Sommermonaten bei Schönwetter 7 Tage die<br />

Runway große Passagiermaschinen, Raritäten der Flying Bulls und durch Zufall<br />

Lounge von Roland Trettl und seinem Ikarus Team unter freiem Himmel<br />
verwöhnen lassen. Auf den Tellern landen dann Fleischspezialitäten aus aller<br />

frei kombinieren lassen. Überhaupt kann das Menü nach Belieben zusammengestellt<br />
werden. Die Speisekarte dient dabei zugleich als Bestellschein – einfach<br />
ankreuzen, und wenig später darf nach eigenen Vorstellungen geschlemmt werden.<br />
Wer Trettls Liebe zum Detail und die Qualität seiner Küche kennt, weiß,<br />
was die Gäste erwartet: Leckereien vom Grill auf höchstem Niveau. Aber auch<br />

from midday onward, weather permitting, the quality of life of airplane fans<br />
and barbecue lovers will be taken to the very highest level. Because while the<br />
busy runway is filled with giant passenger aircraft, rare Flying Bulls planes and<br />
sometimes, by chance, even a Eurofighter, the guests in the <strong>Hangar</strong>-7 Outdoor<br />
Lounge can be thoroughly spoilt in the open air by Roland Trettl and his Ikarus<br />
team. Specialty meats from all over the world, such as American Black Angus<br />
beef, will be landing on their plates and these can be combined with any of the<br />
sauces and side dishes. In fact, the whole meal can be put together just as diners<br />
want. The menu is the order slip at the same time – simply mark your choice<br />
with a cross, and a while later you‘ll be able to feast on exactly what you want.<br />
Those who are familiar with Trettl‘s love of detail and the quality of his cuisine<br />
will know what the guests can expect: delicious grilled food, prepared to the<br />
highest standards. But vegetarians can enjoy this experience too, with a richly<br />
varied selection of salads and cocktails. And anyone who has not yet developed<br />
a passion for airplanes will discover one when they see the exclusive selection<br />

Eröffnung der 18. HangART-7<br />
„Ein Tanz“<br />
„Prag lässt nicht los... Dieses Mütterchen hat Krallen.“ schrieb Franz KaFKa einMal eineM<br />
FreunD. Der FunKe Der Faszination Der heiMatstaDt Des schriFtstellers unD Des ganzen lan-<br />
Des sprang aM 8. Juli 2011 auch auF Die besucher Der hangart-7 über, Die in ihrer 18. auFlage<br />
Den nachwuchsKünstlern aus tschechien gewiDMet war.
Die Werkschau der 18. HangART zeigt die beeindruckende Bandbreite der jungen Künstler Tschechiens: Tomáš Němec, Daniel Pitín (Co-Kurator), Jakub Špaňhel,<br />
Veronika Holcová, Robert Šalanda, Alžběta Josefy, Josef Bolf, Michal Pěchouček, Zbyněk Sedlecký waren bei Eröffnung mit dabei.<br />
Für gewöhnlich leben Vernissagen mehr vom Sehen und Gesehen<br />
werden als von der Kunst selbst. Gut, die Eröffnung der HangART-7<br />
im Juli hatte auch das zu bieten. Allerdings diente das Meet and<br />
Greet lediglich als Vorspiel und nicht als eigentlicher Zweck des<br />
Kommens. Dafür verantwortlich waren zum einen natürlich die<br />
Kunstwerke, die in ihrer Bandbreite einen ganz neuen Blick auf<br />
Tschechien ermöglichten. Mindestens genauso wichtig aber war die<br />
Hinführung der Gäste auf die Kunst selbst. Filmische Kurzporträts<br />
der acht anwesenden Künstler vermittelten im Anschluss die<br />
Inspirationsquellen und Gedanken der Kreativen und sorgten dafür,<br />
dass die Werke auch Nicht-Kunstkennern nähergebracht wurden.<br />
Die Band um Diana Jirkuff schließlich schlug einen Bogen von Easy-<br />
Listenting-Jazz über Soul bis Pop und stellte sicher, dass statt klassisch-steifer<br />
Kunstgaleriestimmung eine gelöste Lounge-Atmosphäre<br />
aufkam. Faszinierend eben.<br />

leaPt across, on 8 July 2011, to the visitors to hangart-7, the<br />
18th Part oF which was dedicated to young artists From the<br />
czech rePublic.<br />
Normally, exhibition premières are more about seeing and being<br />
seen than they are about the art itself. Well yes, the opening of<br />
HangART-7 in July offered that aspect too. But the “meet and greet”<br />
was just a prelude, not the actual purpose of being there. The reason<br />
for this was firstly, of course, the works of art, which, through<br />
their sheer breadth, threw a completely new light on the Czech<br />
Republic. But the attitude of the guests to the art itself was at least<br />
as important. Brief portraits on film of the eight artists present then<br />
illustrated the sources of inspiration and thoughts coursing through<br />
those creative minds and ensured that the works could be approached<br />
even by those who were not art experts. Finally, the band led<br />
by Diana Jirkuff cast an arc from easy listening jazz through soul to<br />
pop, creating a relaxed lounge mood in place of a classically stiff<br />
gallery atmosphere. Simply fascinating.<br />
