Cooking is no longer something done behind closed doors, but takes place<br />

in front of customers, almost like a show. The BBQ down flow <strong>unit</strong> has been<br />

specially designed for these front cooking applications.<br />

Highly efficient even with heavy duty cooking equipment like char broilers,<br />

BBQ can replace the usual exhaust hoods installed at ceiling level improving<br />

the aesthetics of the show kitchen.<br />

BBQ includes all the best technologies developed by <strong>Halton</strong>.<br />

• Double high efficiency ‘CAPTURE JET 2’ technology to sweep the<br />

thermal loads and pollutants towards the filters.<br />

• Two stages of Stainless Steel Model KSA ‘Multi cyclone’ high efficiency<br />

grease filters (UL and NSF classified).<br />

• Double skin construction with fire rated thermal insulation material to<br />

reduce the radiation and improve thermal comfort.<br />

• <strong>Halton</strong> Capture Bar system to reduce the customer and staff exposure<br />

to impurities and to improve capture efficiency.<br />

• Full stainless steel and welded construction (AISI 304).<br />

• Can be used with any type of cooking equipment even heavy duty ones<br />

as charbroiler.

FUNCTION<br />

The efficiency of the BBQ is based on three<br />

unique technologies :<br />

1. <strong>Halton</strong> Capture Jet technology<br />

2. Highly efficient grease filtration using<br />

KSA multi cyclone filters<br />

3. <strong>Halton</strong> Capture Bar system.<br />

HALTON CAPTURE JET TECHNOLOGY<br />

A gentle flow of air is introduced at high speed<br />

into the central part of the extraction <strong>unit</strong> and is<br />

blown in the direction of the grease filters in the<br />

form of Capture Jets. These sweep the thermal<br />

loads and the pollutants towards the extractor.<br />

The Capture Jets maintain extraction efficiency<br />

irrespective of environmental turbulence and<br />

prevent the increase of pollutants and excess<br />

heat in the area concerned. They cool the<br />

equipment reducing radiated heat.<br />

HIGH EFFICIENCY GREASE FILTERS<br />

Polluted air goes first through a first row of KSA<br />

grease filters located round the edges of the<br />

extractor.<br />

After this first filtration stage, the air is extracted<br />

through the lower part of the <strong>unit</strong> where it has<br />

to go through larger KSA grease filters. Grease<br />

is collected underneath the extraction <strong>unit</strong>.<br />

The unique design of KSA filter enables<br />

the grease to be separated from the air by<br />

centrifugation. The extraction efficiency rate<br />

is 95 % of grease particles of 10 microns and<br />

over.<br />

CAPTURE BAR SYSTEM<br />

The Capture Bar system operates by means<br />

of an air curtain and a fresh air supply <strong>unit</strong><br />

integrated in the apparatus. A jet of air<br />

blowing through the upper surface of the<br />

special engineered supply <strong>unit</strong> forms a curtain<br />

of air that prevents smoke and smell from<br />

penetrating the occupied area by directing<br />

them towards the extractor.


FUNCTION OF KSA GREASE FILTERS<br />

<strong>Halton</strong> has designed a unique mechanical<br />

grease filter. <strong>Halton</strong>’s model KSA has a solid<br />

back and air enters the individual chambers<br />

and begins to rotate. With this true centrifugal<br />

separation, the KSA achieves 95% removal of<br />

grease particles sized 10 microns and above.<br />

Due to the individual chambers, the KSA filter<br />

has a very large free area ratio when compared<br />

to traditional grease filters. This, in turn, allows<br />

for a smaller pressure loss across the filter,<br />

which reduces the energy requirements of the<br />

exhaust fan and lowers the noise generated by<br />

the exhaust, while still reducing even further<br />

operational costs of the <strong>Halton</strong> system.<br />

BBQ has 2 stages of KSA filters for better<br />

filtration efficiency. The first one is on the left,<br />

right and rear side of the hood close to the<br />

cooking equipment, and the second one is<br />

at a lower position close to the exhaust duct<br />

connection.<br />

A special grease trap has been designed to<br />

easily collect the grease.<br />

FUNCTION OF HALTON CAPTURE JET<br />

SYSTEM<br />

The high efficiency of <strong>Halton</strong>’s kitchen canopy<br />

range is based on the unique Capture Jet TM<br />

system. The Capture Jet TM works by delivering<br />

a small quantity of air at a high velocity across<br />

the inside face of the canopy directed towards<br />

the grease filters at the back of the hood. This<br />

creates a negative pressure along the front<br />

edge of the canopy and assists in capture and<br />

containment of heat and effluent in critical area<br />

where people are working.<br />

1. The Capture Jets TM maintain efficient<br />

exhaust despite turbulence and prevent<br />

excess heat and impurities from spreading<br />

to the occupied zone.<br />

2. Cool the hood <strong>unit</strong> and reduce radiated<br />

heat.<br />

3. Reduce energy costs due to lower air flow<br />

rates than traditional systems with better<br />

efficiency.<br />

4. Improve hygiene.<br />

Same technology has been used to improve<br />

the capture efficiency of the new BBQ <strong>unit</strong><br />

with a double Capture Jet construction for<br />

each equipment installed right and left from<br />

the center part. An integrated Capture Jet fan<br />

is supplying the Capture Jet air needed. No<br />

supply duct connection is needed.<br />

FUNCTION OF HALTON CAPTURE BAR<br />

SYSTEM<br />

This system has been originally developed by<br />

<strong>Halton</strong> to be integrated in bar counters in order<br />

to protect bar tenders and customers from<br />

passive tabacco smoke effects.<br />

The same system has been used for BBQ<br />

to protect customers standing in front of the<br />

cooking equipment from smoke and other<br />

pollutants.<br />

An integrated low noise supply fan is integrated<br />

in the system to supply the necessary capture<br />

bar air. No supply duct connection is needed.<br />
