From your Head Professional...<br />

By the time you are reading this we will be nearly halfway through <strong>2016</strong>. Time flies when you’re<br />

having fun! Looking back on the past several months, we have had a busy winter and spring with lots of fun<br />

golf events taking place. We now look forward to the summer months where we will focus on another<br />

successful Junior Golf Program. Last summer we had over 150 kids attend our camps and this year we<br />

expect even more.<br />

Recently, we have seen a higher number of participants in all of our golf tournaments. Signups for<br />

instructional events have soared as well, with our Beginner Ladies Clinic being a huge hit each month. We<br />

are thrilled to see some of our ladies go from never touching a golf club to hitting long drives down the<br />

fairways and really enjoying the game.<br />

In my opinion, there are few things better than playing good golf.<br />

I also know all too well what it’s like to struggle and play poorly! If you are<br />

struggling with your golf game, please do not hesitate to ask our<br />

Professional Staff for help. It would be our pleasure to assist you in<br />

playing better and enjoy the game more.<br />

There are so many ways to enjoy golf here at <strong>Bella</strong> <strong>Collina</strong>. I<br />

encourage you to take advantage of your membership, come to the Club,<br />

and play golf as often as you can.<br />

Brian’s Golf Tips<br />

Players failing to strike their irons solidly is probably the most common issue I hear about on the<br />

lesson tee. Players either hit the ground behind the ball, resulting in a “heavy” shot, or they avoid the turf<br />

completely, resulting in a low “topped” or “thin” shot. In either case, the results are not pretty. Even though<br />

the two types of shots are complete opposites, the underlying cause of both are the same.<br />

What’s the problem?<br />

Simply put, the bottom of their swing arc is too far back. A simple drill you can do to move the bottom<br />

of your swing arc forward and start compressing your irons is by lining up about 5 or 6 tees in the<br />

ground, so that the line formed runs perpendicular to your target. Then practice making swings (slow at first)<br />

where you try to create a divot on the target side of the tees. It’s much more difficult than it looks! Try focusing<br />

on keeping your weight centered in your backswing, and feel like the club head stays behind your hands<br />

at all times during the swing. The goal of the drill is to start creating divots on the target side of the ball.<br />

Leonel calls himself a modern young chef, with old school technique and hand-crafted<br />

specialties. His love for Italian and Mexican cuisine can be seen in his menus and exquisite<br />

platings. Every dish has a depth of flavor unlike anything you will ever taste.<br />

Leonel was Executive Chef of Farrentellis Dana Point for 7 years. He also honed his<br />

technique at places like St. Regis and Canaletto’s Italian. His most recent venture was<br />

Ti Amo in Laguna Beach.<br />

Dr. Pepper Braised Short Ribs<br />

Ingredients:<br />

1 Cup Celery<br />

1 Liter Beef Broth<br />

1. Cut Short Ribs into chunks and season with Smoked Paprika, Salt, and<br />

2. Add Flour and Pan Roast until Golden Brown<br />

3. Add Onions, Celery, Garlic, and Thyme and sauté for 5 minutes<br />

4. Add Beef Broth and Dr. Pepper and Braise for 1.5 hours at 350F<br />

Pairs well with Mashed Potatoes, Soft Polenta, or White Rice<br />

1. Blend Cantucci Cookies in food processor and then sauté with<br />

butter over medium heat.<br />

2. Transfer mix into a cake mold, cover bottom, and bake for 10<br />

minutes at 350 degrees.<br />

3. In a separate bowl, mix Cream Cheese, Almond Extract, and<br />

Sugar, while adding in 2 Egg Yolks at a time.<br />

4. Add Lemon Zest and Sour Cream and continue mixing for<br />

another 3 minutes. Do not over mix.<br />

5. Transfer mixture into prefixed cake mold and bake for 45<br />

minutes on bain marie. Chill and serve.

The Arnold Palmer: How to Make<br />

One and How It Got Its Name<br />

DID ARNOLD PALMER, THE GOLFER, INVENT ARNOLD<br />

PALMER, THE DRINK? I think we can safely say no. Lemon and<br />

tea have been enjoyed together for centuries. Surely Arnie, in the<br />

1950s, was not the first person who ever combined cold, unsweet<br />

tea with cold, sweet lemonade. But what we can say with certainty<br />

is that Palmer the golfer popularized and made famous the tea-andlemonade<br />

drink that now bears his name.<br />

It was in the mid-1950s that Palmer, he once told ESPN,<br />

began mixing tea and lemonade at home. Within a few years,<br />

Palmer took the drink public by requesting it in restaurants and golf<br />

course clubhouses. There was no name for the drink when Palmer<br />

first started doing this, so he would describe what he wanted to a<br />

waiter or bartender.<br />

A commonly told tale is that it happened during the 1960 U.S. Open at Cherry Hills Country Club in<br />

Colorado, when other patrons overhead Palmer telling a bartender how to make him his favorite drink.<br />

However, Palmer describes what he believes is how the drink got its name in a 2012 ESPN 30 for 30 Shorts<br />

documentary, Arnold Palmer describes the story in which he believes gave the refreshing iced tea-lemonade its<br />

famous name:<br />

"One evening after a long day of designing a course in<br />

Palm Springs (Calif.) during the 1960s, Arnold Palmer<br />

stepped up to a bar and asked the bartender for a<br />

mixture of lemonade and iced tea. A woman sitting<br />

next to him overheard what he ordered and told the<br />

bartender, “I’ll have that Palmer drink.” The men<br />

overheard and thought “What is she talking about?”<br />

She repeated, “I want what he is having.”<br />

Palmer told ESPN that "from that day on, it spread like wildfire."<br />

The AriZona Beverage Company started distributing the<br />

“Arnold Palmer” drink in 2002 and since then, expanded the line<br />

Arnold Palmer won his first PGA Tour tournament<br />

in 1955. In 1958, he won The Masters, and it was<br />

there that he became a superstar and the rabid<br />

legion of fans known as “Arnie’s Army” was born.<br />

He played the British Open for the first time in<br />

1960, taking his stardom global.

with different flavors including DRIVE, a performance energy drink. His AriZona line also consists of powder<br />

sticks and water enhancers. Other beverage companies also sell lemonade-and-tea drinks, typically mixed<br />

50-50, but without the Palmer name. Sweet Leaf, Snapple, Country Time and Lipton are among those brands.<br />

While many restaurants and bars offer the Arnold Palmer or variations, some coffee and fast food chain<br />

restaurants have gotten into the act, too. Starbucks, for example, has tea-and-lemonade mixes on offer, and in<br />

2014 Dunkin Donuts was offering and “Arnold Palmer Coolatta” frozen drink. The Arnie drink becomes more well<br />

-know all the time.<br />

Also ...<br />

The Arnold Palmer drink is often called a "Half and Half" when the mix is 50-50. It is also the primary name<br />

in Baltimore and other parts of the Southern United States<br />

If you want a really sweet Arnold Palmer, you can mix equal parts of lemonade and sweet tea. And if you do<br />

that, you can call this version a "Winnie Palmer" (named after Arnold's first wife).<br />

Palmer has said that for years he was too embarrassed to order the drink by name - "I'll have an Arnold<br />

Palmer" - and so kept describing what he wanted to wait staff. But eventually The King gave in and started<br />

ordering his eponymous drink by name.<br />

The "Arnold Palmer" name is starting to be applied to food items, too, that use a tea-and-lemon flavor<br />

palate. Do a search of the Web for "Arnold Palmer recipe" and you'll find cakes, cupcakes, ice creams, sorbets<br />

and others.<br />

Interesting Fun Facts About Golf<br />

1. Golf balls were originally made of wood. Later, they were made from boiled feathers stuffed into stitched<br />

leather known as "featheries". The modern, and cheaper, golf ball filled with gutta-percha was not developed<br />

till 1848.<br />

2. There are 336 dimples on a regulation golf ball.<br />

3. Balls travel significantly further on hot days. A golfer swinging a club at around 100 mph will carry the<br />

driver up to eight yards longer for each increase in air temperature of 25°F.<br />

4. Approximately 20 million golf balls are lost in water hazards in the UK each year.<br />

5. Phil Mickelson, who plays left-handed, is actually right handed. He learned to play golf by mirroring his<br />

father's golf swing, and he has used left handed golf clubs ever since.<br />

6. The chances of making two holes-in-one in a round of golf are one in 67 million.<br />

7. The youngest golfer to shoot a hole-in-one, was Coby Orr, who was five years old at the time. It happened<br />

in Littleton, Colorado, USA, in 1975. That is unless you know better. Tiger Woods was 8 years old.<br />

8. Golf was banned in Scotland from 1457 to 1502 to ensure citizens wouldn't waste time when preparing for<br />

an English invasion.<br />

9. 80% of all golfers will never achieve a handicap of less than 18.<br />

10. Golfers use an estimated $800 USD million worth of golf balls annually.<br />

“Now, what do you intend to do about it?”<br />

After a particularly bad round of golf, Robert decided not<br />

to go to the nineteenth hole [the clubhouse bar] and<br />

started to go straight home.<br />

As he was walking to the golf car park to get his Range<br />

Rover, a policeman stopped him and asked', Did you<br />

tee off on the seventeenth hole about twenty minutes<br />

ago?'<br />

'Yes', Robert answered<br />

'Did you happen to slice your ball so that it went over the<br />

trees and out of bounds and completely off the golf<br />

course?'<br />

'Yes, I did. How did you know?' Robert questioned.<br />

'Well', said the policeman gravely', Your golf ball flew<br />

out onto the main road and crashed through the windscreen of a BMW. The car driver lost control and crashed<br />

into six other cars and a fire engine. The fire engine was unable to reach the fire in time and the building burned<br />

down. Now, what do you intend to do about it?'<br />

Robert thought it over very carefully and responded', I think I'll close my stance a little bit, tighten my grip and<br />

lower my right thumb.'

ANTERO AGUILAR HAS BEEN HERE SINCE THE VERY BEGINNING.<br />

A San Juan Capistrano native, he has been at <strong>Bella</strong> <strong>Collina</strong> for nearly 30 years!!<br />

Previous to working at <strong>Bella</strong> <strong>Collina</strong>, Antero worked at Monarch Beach<br />

Golf Links. In March of 1987, Antero made the move to help construct a new<br />

project here in San Clemente which would be the first “Gary Player Signature Golf<br />

Course” on the West Coast. The project was designed by Professional Golfer,<br />

Gary Player, and Karl Litten, a world renowned golf course architect. This course<br />

would be called Pacific Golf Club and opened the summer of 1988.<br />

Through all of the transition that Pacific Golf Club since opening, to what<br />

is now <strong>Bella</strong> <strong>Collina</strong> San Clemente, Antero has been dedicated to this golf course<br />

and has never left since stepping foot on this property. Today, he is the Assistant<br />

Superintendant and leads the general supervision of golf course maintenance.<br />

Early mornings on the golf course when the sun is rising, projects with<br />

large equipment that remind him of building the course, and always knowing he has a home here are Antero’s<br />

favorite qualities about being a <strong>Bella</strong> <strong>Collina</strong> employee.<br />

Antero still resides in San Juan Capistrano to this day with his wife. He has four children, two boys and<br />

two girls, and nine grandchildren. In his spare time, he plays the accordion in a band called Del Norte. Although<br />

he works on the golf course all day here, he still enjoys landscaping and gardening on his days off.<br />

Antero is a walking blueprint of all the changes that have happened over the years. He often remembers<br />

things that everyone else has forgotten or misplaced. He is a valuable asset to our future success and we are so<br />

happy to have him as part of our <strong>Bella</strong> <strong>Collina</strong> family nearly 30 years later.<br />
