INGREDIENTS<br />

One 2- to 3-pound farm-raised chicken<br />

Kosher salt and freshly ground black pepper<br />

2 teaspoons minced thyme (optional)<br />

Unsalted butter<br />

Dijon mustard<br />

PREPARATION<br />

Preheat the oven<br />

to 450°F. Rinse<br />

the chicken, then<br />

dry it very well<br />

with paper towels,<br />

inside and out. The less it<br />

steams, the drier the heat, the<br />

better.<br />

Salt and pepper the cavity, then<br />

truss the bird.<br />

Trussing is not difficult, and if<br />

you roast chicken often, it's a<br />

good technique to feel comfortable<br />

with.<br />

When you truss a bird, the<br />

wings and legs stay close<br />

to the body; the ends of the<br />

drumsticks cover the top of the<br />

breast and keep it from drying<br />

out.<br />

Trussing helps the chicken to<br />

cook evenly, and it also makes<br />

for a more beautiful roasted<br />

bird.<br />

Now, salt the chicken—I like<br />

to rain the salt over the bird so<br />

that it has a nice uniform coating<br />

that will result in a crisp,<br />

salty, flavorful skin (about 1<br />

tablespoon).<br />

When it's cooked, you should<br />

still be able to make out the salt<br />

baked onto the crisp skin. Season<br />

to taste with pepper.<br />

Place the chicken in a sauté<br />

pan or roasting pan and, when<br />

the oven is up to temperature,<br />

put the chicken in the oven. I<br />

leave it alone—I don't baste<br />

it, I don't add butter; you can if<br />

you wish, but I feel this creates<br />

steam, which I don't want.<br />

Roast it until it's done, 50 to<br />

60 minutes. Remove it from<br />

the oven and add the thyme,<br />

if using, to the pan. Baste the<br />

chicken with the juices and<br />

thyme and let it rest for 15 minutes<br />

on a cutting board.<br />

Remove the twine. Separate<br />

the middle wing joint and eat<br />

that immediately. Remove the<br />

legs and thighs.<br />

I like to take off the backbone<br />

and eat one of the oysters, the<br />

two succulent morsels of meat<br />

embedded here, and give the<br />

other to the person I'm cooking<br />

with. But I take the chicken butt<br />

for myself. I could never understand<br />

why my brothers always<br />

fought over that triangular tip—<br />

until one day I got the crispy,<br />

juicy fat myself.<br />

These are the cook's rewards.<br />

Cut the breast down the middle<br />

and serve it on the bone, with<br />

one wing joint still attached to<br />

each.<br />

The preparation is not meant<br />

to be superelegant. Slather the<br />

meat with fresh butter. Serve<br />

with mustard on the side and, if<br />

you wish, a simple green salad.<br />

You'll start using a knife and<br />

fork, but finish with your fingers,<br />

because it's so good.<br />

Networking Is<br />

A Life Skill<br />

I<br />

hear it over and over<br />

again: “I can’t network.<br />

I’m an introvert.” “I<br />

don’t know what to<br />

say.” “I don’t want to<br />

brag.” A lot of people don’t<br />

like networking, but the bulk<br />

of them seem to be introverts.<br />

I’m an introvert, too, and I’m<br />

also an entrepreneur, having<br />

to teach myself along the<br />

way how to reach out and<br />

build that body of interested<br />

people who support and buy<br />

what I do. To make it even<br />

harder, I retired in California,<br />

moved back to Minneapolis,<br />

waited a few years, and<br />

then found I wanted to start<br />

a business in a city where<br />

I had no business contacts<br />

and only one friend (a nun).<br />

Business coaches stymied<br />

me from the start, because<br />

they would start by saying:<br />

“First, send a warm letter<br />

to all of your friends, telling<br />

them what you’re doing and<br />

asking for their support.”<br />

Oh. A fellow coach wailed<br />

that she only had 100 friends<br />

on her Christmas card list,<br />

and I was awed by her popularity.<br />

This was an exercise<br />

at which I never excelled,<br />

because my Christmas card<br />

list was five.<br />

Introverts, whom I often call<br />

the “Quietly Brilliant,” are<br />

very likely to have one or<br />

two very deep friendships<br />

and a moderate number of<br />

pleasant acquaintances.<br />

This is dangerous for many<br />

reasons, among them the<br />

fact that those one or two<br />

deep relationships, whether<br />

professional or personal,<br />

can disappear in a wink of<br />

an eye, for such reasons as:<br />

You lose your job<br />

Your company moves and<br />

you don’t<br />

Your supportive boss - who<br />

really liked you - leaves<br />

Divorce - and your best<br />

friend disappears<br />

Marriage (of a friend who<br />

disappears into a different<br />

social circle)<br />

Your BFF is transferred or<br />

moves<br />

Death of a close friend or<br />

loved one<br />

You move! As I did.<br />

And you are stricken, dealing<br />

with loss, and suddenly<br />

finding that you need to<br />

find some way to search for<br />

and find a replacement for<br />

that Very Important Person.<br />

Where do you go? How do<br />

you do it?<br />

If you don’t have a plan and<br />

haven’t been practicing how<br />

to connect with others, the<br />

poorest time to start networking<br />

is when you are<br />

dealing with loss. So start<br />

practicing now.<br />

Here’s my starting point for<br />

introverts who are “socially<br />

cautious”:<br />

Step 1: Find friendly people<br />

with whom to connect.<br />

â¨We introverts tend to<br />

look for reasons why it would<br />

be uncomfortable or even<br />

dangerous to approach other<br />

people. (Years of being told<br />

we’re too quiet, we should<br />

get out more, we should<br />

speak up, etc., have made<br />

us wary of other people and<br />

their potential disapproval<br />

and left us with the idea that<br />

we are somehow odd and<br />

unique. In fact, we’re over<br />

50% of the population.)<br />

Instead, try this simple<br />

exercise for a week or so:<br />

Suspend your sense of<br />

uniqueness and look for<br />

similarities between yourself<br />

and others. If they’re similar<br />

to you, how can they be so<br />

unapproachable?<br />

For example, I am not a<br />

sports fan. Repeat, just N O<br />

T A S P O R T S fan. But because<br />

I was a ballet dancer,<br />

I can relate to how passionate<br />

someone can become<br />

about physical performance<br />

and competition. As I was<br />

growing up, I read every<br />

history book about ballet,<br />

and followed the careers<br />

of prominent dancers, so I<br />

can relate to how concerned<br />

someone can become about<br />

athletes, teams, their history<br />

and their current challenges.<br />

Therefore, I have a basis for<br />

conversation with someone I<br />

might have dismissed as too<br />

different. I can empathize<br />

with the thought of what an<br />

injury does to peak performance<br />

(of oneself or of an<br />

idol), how draining and hu-<br />

miliating defeat in an athletic<br />

arena can feel, and so on.<br />

We don’t see a lot of friendly<br />

people out there because<br />

we haven’t believed it. We<br />

tend to think we are unique.<br />

But they are out there, just<br />

as anxious as we are, and<br />

wanting to share their enthusiasms<br />

but don’t, perhaps<br />

believing no one will understand.<br />

Connecting personally with<br />

others is an important first<br />

step to setting up business<br />

connections that last.<br />

Step 2: Reach out and empathize.<br />

Make a simple comment,<br />

not too personal but<br />

delivered with a smile, that<br />

shows you have some idea<br />

of what the other person is<br />

going through. For the clerk<br />

in a store: “It must be tiring<br />

lifting and scanning all those<br />

items every day.” For the<br />

deliveryman, “What a lovely<br />

day for an outdoor job,” or<br />

“This weather must really<br />

make your job harder.” Short<br />

contacts, no further interaction<br />

required (although you’ll<br />

be surprised at how often it<br />

triggers conversation).<br />

Practice in these low-risk<br />

situations and it will become<br />

easier in situations where<br />

you really need to meet new<br />

people.<br />

Step 3: Spread your thanks<br />

around as if they were fertilizer<br />

(because they are). Ditto<br />

for compliments.<br />

Park the perfectionism you<br />

probably have as an introvert:<br />

keep it for serious<br />

stuff, such as your income<br />

tax return, operating heavy<br />

equipment, or doing brain<br />

surgery. It doesn’t belong<br />

in human relationships. Be<br />

forgiving and empathize with<br />

little mistakes if they are not<br />

too serious.<br />

Thank the person who stops<br />

to hold the door open for<br />

you, pauses to let you enter<br />

a line of traffic, the clerk who<br />

discovers you didn’t take<br />

your small change or points<br />

out an even greater bargain<br />

than what you have selected,<br />

the person who asks<br />

about your recent health<br />

issue - all of these people<br />

deserve thanks for their<br />

consideration.<br />

Try thanking a co-worker<br />

who completes a routine job<br />

for which he or she is paid.<br />

You may believe it’s simply<br />

their duty, but anyone can<br />

become fatigued doing their<br />

duty day after day and being<br />

taken for granted.<br />

Interestingly enough, being<br />

thankful openly makes it<br />

easier to point out those little<br />

mistakes others have made.<br />

You are beginning to develop<br />

“social capital.”<br />

These are the preliminary<br />

steps to becoming a socially<br />

confident networker; there<br />

are many more. But if you<br />

can’t recognize how important<br />

this process is, and how<br />

easy it is, once you know the<br />

right steps, you will never<br />

start.<br />

With networking, you can<br />

develop social capital, a<br />

bank account of good will<br />

on which you can draw, but<br />

into which you must make<br />

deposits. Social capital can<br />

bring you:<br />

Help and moral support<br />

when you need it.<br />

Increased inter- & intradepartmental<br />

collaboration<br />

at work.<br />

New business.<br />

A promotion or new job.<br />

Opportunities - more than<br />

you ever dreamed of in more<br />

areas than you now recognize.<br />

... not to mention the increased<br />

warmth and ease<br />

you will feel in numerous<br />

social settings.<br />

Networking is something<br />

we do - or don’t do - all day<br />

long. When you discover<br />

that not networking takes<br />

at least as much energy as<br />

actually doing it (not knowing<br />

where to go for help or<br />

resources, dealing with anxiety<br />

over replacing a loss,<br />

and more) you are on the<br />

path to an expanded future.<br />

Because networking is a<br />

journey, not an action.<br />

Evenly put cheese on the<br />

peppers and bake for 30-40<br />

mins until peppers softened<br />

and cheese is melted. Add<br />

french fried onions on peppers<br />

CRUNCHY FRENCH FRIED<br />

CHICKEN TENDERS<br />

- Gluten-free french fried<br />

onions<br />

- Gluten-free all-purpose<br />

flour<br />

- 1 lb. chicken tenders<br />

- 1 large egg, beaten<br />

Preheat oven to 400 degrees<br />

Fahrenheit. Combine french<br />

fried onions with flour in<br />

plastic bag and crush. Put<br />

chicken tenders into egg<br />

then coat them in the onion/<br />

flours mix, and bake for 15<br />

mins. Serve immediately.<br />

Mac and Cheese<br />

- Gluten-free shells pasta<br />

(about two cups)<br />

- Skim milk<br />

- Salt<br />

- Shredded cheese<br />

Rinse/drain pasta and add<br />

to a saucepan with milk &<br />

salt. Put on medium heat<br />

& stir constantly until milk<br />

starts to simmer. Turn heat<br />

to low. Keep stirring until<br />

noodles tender (adding milk<br />

if noodles have absorbed all<br />

liquid but not tender; be sure<br />

a bit of milk left in saucepan<br />

to make cheese sauce). Add<br />

cheese & stir until smooth<br />

(adding splash of milk to help<br />

make smooth). Cover pan for<br />

5 mins before serving. Add<br />

french fried onions right as<br />

you serve.<br />

ARTICHOKE AND<br />

SPINACH STUFFED<br />

MUSHROOMS<br />

- Portobello mushroom caps<br />

without stems<br />

- Gluten-free Artichoke<br />

Spinach Dip<br />

- Thyme<br />

- Grated Parmesan cheese<br />

Preheat oven to 450 degrees.<br />

Remove gills in<br />

mushroom caps and put gills<br />

up on parchment-lined baking<br />

sheet; add salt & pepper<br />

and bake for 20 mins. Take<br />

mushrooms out of oven & fill<br />

with the dip. Crumble french<br />

fried onions over each mushroom.<br />

Add thyme & cheese.<br />

Put back into oven extra 3-5<br />

mins.<br />

VEGAN GREEN BEAN<br />

CASSEROLE<br />

- Green beans<br />

- Salt & pepper<br />

- Olive oil<br />

- Minced shallot<br />

- Minced garlic<br />

- Chopped mushrooms<br />

- All-purpose flour<br />

- Vegetable broth<br />

- Unsweetened plain almond<br />

milk<br />

Preheat oven to 400 degrees.<br />

Boil large pot of water<br />

and salt well. Add green<br />

beans & cook for 5 mins.<br />

Drain and put in ice water to<br />

stop cooking. Drain ice water<br />

and set aside. In oven-safe<br />

skillet on medium heat, add<br />

olive oil, shallots, and garlic.<br />

Add salt & pepper & stir.<br />

Cook 2-3 mins. Add mushrooms<br />

& add a bit more salt<br />

& pepper. Cook for 3-4 mins.<br />

Sprinkle in flour and whisk<br />

to coat ingredients. Cook for<br />

1 minute, then slowly add<br />

vegetable stock. Keep whisking.<br />

Add almond milk & keep<br />

whisking. Bring to a simmer<br />

then reduce heat to low to<br />

thicken. Cook for 5-7 mins<br />

until thick & bubbly. Remove<br />

from heat and add some of<br />

the gluten-free french fried<br />

onions and all of the cooked<br />

green beans. Toss to coat<br />

well, and top with remaining<br />

french fried onions. Bake in<br />

400 degree oven for 10-15<br />

mins. Serve immediately.<br />

The two-day Southern<br />

Drakensberg event is fast<br />

growing in stature and with<br />

a second stage climb up to<br />

the finish line at the top of<br />

the iconic Sani Pass, this<br />

year’s Sani Dragon was one<br />

race the pair were not going<br />

to miss.<br />

“We’ve both never been up<br />

Sani Pass, let alone by bike,<br />

so that was definitely the<br />

draw card for us to come<br />

and do the Sani Dragon this<br />

year,” explains Anderson.<br />

“We can’t wait to take part<br />

in this year’s Sani Dragon,”<br />

echoes Bester. “We’re both<br />

in reasonably good shape<br />

and so hopefully we can<br />

have a good two days in the<br />

saddle.”<br />

Despite having never competed<br />

as a team previously<br />

and Anderson being thirteen<br />

years Bester’s junior, the upper<br />

South Coast duo believe<br />

they have the makings of a<br />

good partnership.<br />

““We’ve never raced together<br />

before but both being<br />

from Toti, we are regular<br />

training partners and are<br />

looking forward to racing<br />

the Sani Dragon as team<br />

mates,” says Anderson.<br />

“Perhaps having turned 40<br />

in January, Hendrik is the<br />

experience in the team and<br />

I, at 27 years-old, am more<br />

the ‘exuberance of youth’,”<br />

he laughs.<br />

“I am a reasonably good<br />

climber and Brennan is obviously<br />

still quite young and<br />

fit; hopefully I can hurt the<br />

youngster on the climbs a<br />

little bit!” chuckles Bester.<br />

While unsure of the strength<br />

of the rest of the field, the<br />

pair remains quietly confident<br />

that they can challenge<br />

for a podium place next<br />

weekend.<br />

“We’ll definitely look to give it<br />

our all while we’re out there,”<br />

says Anderson.<br />

“We’ve been training as<br />

much as possible throughout<br />

the winter, and even before<br />

then, and recently we’ve<br />

been trying to prepare the<br />

lungs as best we can for<br />

the Dragon’s climb up Sani<br />

Pass.<br />

“Even though we’ll be riding<br />

through such a beautiful part<br />

of the world, we’ll look to go<br />

as hard as we can on both<br />

days and then we can appreciate<br />

the view once we’ve<br />

crossed the finish line at the<br />

top of Sani Pass and are<br />

heading back down again.”<br />

Bester, who finished second<br />

at the Sappi Scottburgh<br />

MTB Race in mid-August,<br />

believes the pair take some<br />

good confidence with them<br />

into the Sani Dragon encounter.<br />

“Scottburgh was definitely<br />

my best result of the year but<br />

I’ve also picked up a few age<br />

group podiums throughout<br />

the year as well.<br />

“I managed to get an eighth<br />

at the Tour de Krantz recently<br />

too – an event where<br />

Brennan and I actually<br />

ended up riding a lot of the<br />

race together.<br />

“We train together too<br />

and so know each other’s<br />

strengths quite well, so I<br />

think we’re both quite confident<br />

and feeling good about<br />

the Sani Dragon,” explains<br />

Bester.<br />

“We’ve trained hard throughout<br />

the winter and made<br />

some big gains so it would<br />

be nice to improve on our<br />

top ten finish from last year,<br />

but if we could just improve<br />

on our time – ideally by<br />

about forty minutes or so<br />

– then we’d still be really<br />

pleased.”<br />

Tackling the Sani Dragon<br />

rather than the shorter Sani<br />

Dragon Lite, Bernstein and<br />

Van der Linde are regular<br />

riding partners and return to<br />

this year’s event with fond<br />

memories from last year’s<br />

race still at the forefront of<br />

their minds.<br />

“The Sani Dragon is one<br />

you just have to pencil onto<br />

the calendar and a race we<br />

will be coming back to every<br />

single year!” says Bernstein<br />

“We just had a such a lekker<br />

time last year and couldn’t<br />

wait for entries to open so<br />

that we could book our spot<br />

at this year’s race.<br />

“I talk about the Sani Dragon<br />

to absolutely everyone back<br />

at home and its great that<br />

we’re going to have another<br />

team from Newcastle joining<br />

us for this year’s race!”<br />

While the first stage showcases<br />

the district spectacularly,<br />

the climb up Sani Pass<br />

to the first line on day two<br />

remains a stiff challenge for<br />

many.<br />

For Bernstein and Van der<br />

Linde though, the effort on<br />

the climb is rewarded with<br />

interest upon reaching the<br />

summit and crossing the finish<br />

line.<br />

“There is no doubt about it<br />

– the climb up Sani Pass is<br />

testing for sure.<br />

“Chris is a bit of a mountain<br />

goat, so I just let him go and<br />

do my best to get up there<br />

as quickly as I can.<br />

“Hopefully this year I can<br />

stick with him a bit longer<br />

than I did last year.<br />

“Either way though, when<br />

you get to the top you realise<br />

it was worth all that hard<br />

work and more as take in<br />

that absolutely incredible<br />

view from up there!<br />

“Also, having crossed the<br />

finish line at the top, you’re<br />

then able to make your way<br />

back down at your leisure<br />

and I don’t think I’ve ever<br />

The sextet will look to<br />

draw on their Franchise<br />

experience as well as their<br />

combined knowledge of<br />

the Provincial landscape<br />

to overcome three strong<br />

opponents in the final set of<br />

Pool stage fixtures in order<br />

to earn themselves a spot<br />

in the play-offs alongside<br />

the already qualified North<br />

West Seef Dragons, Zimbabwe<br />

and Northern Cape<br />

next weekend.<br />

“We’ve had a good build<br />

up,” explains KZN coach,<br />

Roger Telemachus.<br />

“Some of the guys were<br />

overseas during the winter,<br />

playing in the UK or elsewhere,<br />

or with the national<br />

academy and SA ‘A’ setups.<br />

“Those who have been<br />

around have been working<br />

hard with the Dolphins<br />

squad and so all in all the<br />

guys have already played<br />

a fair amount already so<br />

hopefully we can hit the<br />

ground running this weekend.”<br />

weekend’s KZN outfit are<br />

“This is a great chance for<br />

some of our youngsters to<br />

show what they’ve got and<br />

to put in a few big performances<br />

at the next level,”<br />

says Telemachus.<br />

“The guys have been working<br />

hard at the Academy<br />

all winter and so now it’s a<br />

chance for them to hopefully<br />

take the next step in<br />

their careers.”<br />

The former South African<br />

quick acknowledges<br />

KZN face a tall task this<br />

weekend but believes his<br />

charges, led by the squad’s<br />

Hollywoodbets Dolphins<br />

players, can replicate their<br />

knock-out phase qualification<br />

efforts of 2015 or<br />

better.<br />

“With guys like Keshav (Maharaj),<br />

Cameron (Delport)<br />

and Robbie (Frylinck) in<br />

the squad we’ve got some<br />

great,experienced heads<br />

that can guide the youngsters.<br />

“Rabian (Engelbrecht) is fit<br />

and has looked fantastic<br />

in pre-season and Sibz<br />

(Makhanya) has also captained<br />

his country at U19<br />

level, so they will be important<br />

too.<br />

“We’re up against three<br />

quality sides this weekend<br />

but we’re just focusing on<br />

trying to put it all together<br />

on our side because we<br />

believe that if we can do<br />

that then we’re a very good<br />

team as well,” says Telemachus.<br />

KZN square off against<br />

hosts Boland on Friday,<br />

Gauteng on Saturday and<br />

Eastern Province on Sunday.<br />
