Isobel Mackay salutes homes from the glory
days of domestic architecture
When we think of the acme of British houses it’s the likes of Pemberley
that spring to mind – or rather, Chatsworth and Lyme Park, which
have both been used as locations for Mr Darcy’s stately home. On a
more modest scale, it would be chocolate box thatched cottages, with the rosesround-the-door
and hollyhocks-in-the-front garden boxes firmly ticked.
But while we are justifiably proud of our legacy of Palladian mansions and
impossibly quaint (and perilously low-ceilinged) village homes, probably the
housing era that best expresses what it means to be British, is Victorian.
The sixty-three years of Queen Vic’s reign spanned not only the pomp of the
Empire but also the radical social changes of industrialisation and the railways.
So a ‘Victorian house’ can mean everything from a solid semi-detached
stuccoed villa to a two-up-two-down Salford slum, or the myriad streets of
terraced houses that multiple generations have lovingly renovated (fireplaces
out, fireplaces in, fireplaces out…).
The era also saw the erection of some of the ugliest gaffs ever to blight our
greensward: vile pomposities of Gothic Revival arrogance, which expressed the
nation’s attitude at the time: we rule, 4 eva, tru, also random rehashes of earlier
styles, such as Mock Tudor.
I know just how ugly those houses are, because I spent my childhood in one.
And though it crouched at the end of a drive of sinister pine trees, all awkward
angles and ill-judged proportions, like a brick and mortar pterodactyl – it was
the most joyous dwelling in which to grow up.
The era that venerated the idea of family, as much as it did colonising foreign
lands and inventing things, certainly knew how to build houses for them to live
in. So if that’s your housing priority, here are some fine examples of familyfriendly
Victorian dwellings currently on the Surrey market.

1. Lewins
Where? Lewins is set on the outskirts of
the sought-after village of Crockham Hill
just under three miles south of Westerham
(Google Maps TN8 6RB).
What? For sale is the major share of this

Where? South Lodge is leafily set on
Knipp Hill in one of the most peaceful
areas of Cobham close to Littleheath
Common (Google Maps KT11 2PE).
What? A lovely and substantial period
house, South Lodge began life as a more
modest Georgian farmhouse but during
Victorian times was radically enlarged with
the three-storey addition that now forms
the grand front section of the building.
On the ground floor is an impressive hall,

family room, and triple aspect kitchen/

balustraded terrace.
On the first floor are three of the house’s
five bedrooms including the double aspect

in a pretty woeful state, as I’m so taken up
with daily To Dos for my ongoing house
renovation, but with overseas posting deadlines
racing towards us (I lived in Australia for several
wonderful years) it’s time to concentrate my mind.

These days it seems you can hardly open a newspaper
without reading about the exciting regeneration of St
Leonards, the seaside town which was until relatively
recently the sad neighbour of Eastbourne and Brighton.
It’s always credited to the influx of creative ‘DFL’s, or
Down From London (and increasingly, ‘OFB’ s, Over From
Brighton…), but this urban reflowering is really the result of
that energy combined with the town’s own raffish charm and
rich stock of property.
Sarah and Stuart Taylor are a classic example of the former
– attracted by the latter. For many years, Sarah worked in the
capital, between travelling around the world on fashion shoots
and the filming of music videos for MTV, while Stuart built
up an impressive list of international clients for his interior
architecture business, 44th Hill.
Initially it was the lure of the countryside which drew them
away from the Big Smoke.

“When we first left London, we moved from Victoria Park
in Hackney to a country house near Rye,” says Stuart. “It was
the full London to country bit, with big grounds and sheep in
the fields… but though it was beautiful, it was just too quiet
for us. Sarah had salons in Rye and St Leonards, so we just
decided to consolidate everything here.”
Taking on successive renovation projects of both domestic
and business premises wasn’t daunting for Stuart, who had
been in the interior architecture business for 22 years.
“I trained first at Stourbridge College and then Nottingham
University and when I graduated, moved to London, because
that’s where everything was happening. I had a big office there
with lots of staff, but I came to realise that postcodes don’t
matter any more.
“Technology means that you can work almost anywhere
these days and lots of my jobs are based abroad anyway, so I
can design from here, working from a studio in our garden. I
employ freelance visualisers, designers and project managers
and I’ve built up a team that I can trust, so why would I need
an office in London when I can be by the sea?”

of properties which attract couples with young families to
decamp to the seaside town. But while it looks like a classic
late 19th century home from the outside, once through the
front door, the feel is rather different.
The main reception room runs from the front bay window
to the rear bi-folding doors and is an eclectic mix of objets
trouvés. In the part that is used as a sitting room, a large cow
skin rug covers the centre of the bare floorboards and there is a
velvet sofa and a vintage leather chesterfield and armchairs. A
stuffed stag’s head oversees everything from its mount on the
wall and more Victorian taxidermy is displayed in glass cases.
The original arched marble fireplace has a traditional gilt
mirror above it, but to the side of it is a painting of Mickey
Mouse in US army fatigues with a bandaged ear.
“That’s a copy of an old picture that apparently appeared
in Vogue,” says Stuart, “and was reworked in the 1960s with
different buttons and epaulettes to get around the copyright
laws. I just liked the way it subverts the usual image of him.”
In the dining room, a larger-than-life-size statue of an Italian
traffic policeman holding out an ice cream stands guard over
the diners. “He used to be in my local pub, the St Leonards,”
says Stuart casually, as if every pub has an Italian policeman on
duty. “I just had to have him, so when they changed him for a
snowman I asked to buy him and the landlord agreed. He

A long scrubbed pine table is surrounded by assorted
wooden chairs with sheepskin coverings and a stuffed buffalo’s
head seems to emerge from the wall as if he has just smelled
something good to eat and wishes to join in.
In the corner of the room, where the doors fold back to give
access to the garden stands a 1950s cocktail bar, shaped like a
giant drum, complete with regimental braiding. Above it, an
old milk churn has been turned into a light with a red light
bulb which protrudes from it rather like a Dalek’s plunger.
On the opposite side of the room a 1960s rattan swing chair
suspended from a stand adds to the vintage feel. With so many
conversation pieces, there seems little possibility that guests
here would be stuck for something to discuss.
The walls of the generously proportioned kitchen are
painted gunmetal grey and at the far end is a fireplace of
enormous proportions – presumably it once accommodated a
range that would have served such a big house, but now hosts
a woodburning stove.
A freestanding set of hotel catering shelves accommodate
dishes and plates and again, was sourced from Sunbury
Antiques Market. Off-white painted wooden cupboards form
a long row along one wall and the counter top above them
is exceptionally deep, giving the impression of being a very
practical workspace, but Stuart is not satisfied.
“It doesn’t really work as we want it to, so we’re thinking of
extending the kitchen out into the outdoor space at the end of
the dining room. We could knock down the wall in between
and have folding doors all the way across, so that we could
completely open the house out to the garden.”
We go out to the studio in the garden, where the walls are
painted in what I now recognize as Stuart’s signature dark
colours – and in his own working environment he’s gone for
the darkest shade of charcoal that is really almost black.
Blueprints and technical drawings in smart wooden frames
are perfectly set off by the ink-coloured walls behind. The

immediate impression is of a serious, yet personal space. A
giant chrome arc lamp stands in one corner and in front
of the window, Stuart has placed a vintage wooden desk
and chair, with a 1940s style telephone and desk lamp that
calls to mind a scene from a Raymond Chandler novel.
There are old cabinets and plan chests – and
interestingly, no computer. I expected to see a giant
monitor, but Stuart prefers to work on his laptop.
“Ideally, I like designs to be properly thought out and
drawn,” he says, “that’s why I love those old plans that I’ve
framed. Someone took real care and attention over them.
Computers are useful, but they should be used as a tool,
they’re not an end in themselves.”
On one surface is a set of wooden numbers and letters
spelling out 44th Hill, the intriguing name for his
company. “There are 43 named hills in San Francisco,”
says Stuart, “we just fancied being the 44th.
“I love working here, being able to look up and see the
sea, and I often think it’s strange to think that designs

that are destined for London, Ibiza or even further away,
originate here, in this wooden studio in our garden.
“I specialise in commercial projects - and I think all my
clients have actually become my friends - because houses are
just too personal.”
Back in the main house we pause in the family study. Again,
it has a kind of industrial glamour, with another arc lamp and
a black upright piano. There is a metal desk that looks as if
it once did service in a factory or workshop, and a collection
of 1940s bevelled mirrors on the wall. Above the desk, an
illuminated sign spells out WOLF.
Up the stairs and on the half-landing a large photograph in
a battered gilt frame has been propped up to meet the visitor
as they ascend. It’s a late Victorian studio portrait of a young
child in a dark velvet dress and lace collar and is a particularly
arresting image because of the girl’s very direct stare and the
strong impression it gives that whoever she was, (she’s no
relation) she was extraordinarily self-possessed.
At the top of the stairs is a painted wooden sign saying
‘Lucky’ and I’m beginning to wonder whether all the words
that can be found throughout the house are significant. We
turn into the first guest room, and find many more, (some
unprintable) because the lids of old wooden school desks
complete with all that childish and adolescent graffiti have
been used as art and mounted on the wall.
In the main bedroom, the scheme is pared back, with
wooden boards on the floor and a kilim rug at the foot of the
bed. A chest made from card index drawers found in a shop
in Hastings Old Town stands next to the bed, and on the
wall opposite is the word Bang! – a limited edition print of a
renowned black, white and red artwork by pop-artist, William
Blanchard.
The second guest room has a handsome iron bedstead, but
it is also used as a dressing room, and has a pair of vintage
walnut wardrobes and an Art Deco dressing table with a
strong Japanese influence. Its huge curved triptych mirror
seems shaped like the sort of clouds you see in some Japanese
paintings.
On the landing on the top floor of the house stands a
vintage metal ‘firefighter’ pedal car in pillar-box red. Here the
couple’s children can enjoy a whole storey to themselves, with
a smart bathroom and two very individualistic bedrooms.
In their daughter’s room, Stuart has just finished putting
together a new bed, while his daughter coated an alcove wall
in blackboard paint, so she can use it for doodling and as an
aide-memoire for schoolwork and events to remember.
There is a desk at the other end of the room, and above it
a group of cranberry glass vases have been turned upside

down and used as light shades, suspended with varying lengths
of gold braided cable – not often found in the UK now, but
sourced by Stuart when he designed a scheme for the launch
of the Esentai Mall in Kazakhstan.
The design used hundreds of dimmable filament light
bulbs suspended above the catwalk for a fashion show, so they
looked like glowing jewels, but here, the ruby glass looks more
like a bunch of overhanging red berries.
Stuart and Sarah’s son’s room has an elevated bed, built by a
Chichester-based friend, Tony Davey, who Stuart has worked
with on several projects, and has a feel of the wild frontier.
There is an old Afrikaans map on the wall, a vintage trunk and
a brightly painted Penalty Shootout sign from a fairground.
Having examined the house from bottom to top, we set off
for Sarah’s hair and beauty salon Truffle, situated right on St
Leonards seafront, just along from the very traditional Royal
Victoria Hotel.
Just as their house looked from the outside as though a
conservative Victorian family could still live there, the exterior
of Truffle looks conventional enough, with its broad Regency
shop front overlooking the promenade and beach beyond -
but stepping through the door, the space has been transformed
into something that combines both a nod to an elegant past
and a flair for industrial and reclaimed chic.
“This was an old boat repair shop,” explains Stuart, as we sit
on an ochre-coloured vintage sofa and chair, while Sarah tends
to clients. “So it had the space we wanted, and in fact there’s
a basement too, which was originally the ground floor of the
building, but at some point the seafront road was raised, and
so this first storey became the new ground level. We haven’t
developed it yet, but we plan to use the basement for a yoga
studio and possibly a juice bar, so that the place becomes more
of a lifestyle destination.”
The nautical origins of the building have been preserved in
the scrubbed and stained wooden floor and the long wall of
tongue and groove timbers that stretches behind the counter.
On the panelling above our heads as we sit and chat is an
old reverse glass painted pub sign saying ‘ORDERS TAKEN
HERE’ in verdigris green and gold.
“I bought that at Sunbury Antiques Market at Kempton
Park,” says Stuart, “along with the reclaimed enamel lights.
Kempton’s a favourite hunting ground of mine. I find loads
of things that I use for the bars and restaurant interiors that I
design for clients.

“We also used reclaimed timbers and an old haberdashers’
set of drawers for the counter. The window set into the
wall is just a decorative feature. I used to have an office in
Norman Road just round the corner from here and couldn’t
believe it when I found that old window abandoned on
the pavement one day. I mounted it on the wall here and
surrounded it with those tiles which are similar to some tiles
I used for the redesign of the Old Customs House restaurant
in Hastings. They serve things like Guinness and oysters
there, so the black and white theme seemed to work well.”
Clients at Truffle sit in original barbers’ chairs, all sourced
and bought on eBay. Brushes and combs are stored in
wooden wine crates and towels in reclaimed pharmacists’
drawers. The ceiling and panelled shutters around one
window are painted in dark greeny/charcoal grey. “That
paint’s nothing fancy,” says Stuart. “It’s the Valspar range
from B&Q. The colours are really good and the coverage is
dense. I use it a lot in all kinds of projects.”
As we leave, I spot an old Hastings and St Leonards
tourism poster from 1970s. How is Hastings and St
Leonards changing do you think? I ask Stuart.
“Well obviously, there’s been lots of regeneration,” he says,
“but there’s a real pride in the area. I worked on the design
of the Jerwood café when the Gallery was being built and I
did it pretty much for free. There was a sense that we could
really change things in the town.
“In St Leonards there are loads of new businesses, shops
and cafés – not least the amazing little crepe stall that is
parked on the seafront opposite Truffle. When I redesigned
the interior of the Old Customs House restaurant, we used
timbers salvaged from Hastings pier to clad the whole
ceiling, so it feels as if we’re working with the history of the
place, but there’s a real buzz about it too.”

in London, the brothers recognised a gap for a clothing brand
stylish enough to travel between coast and city. They also
liked the idea of designing clothes to share and wear all year
round. They say “Inspiration comes from high fashion in the
cities, but ‘beach bum’ practicality is just as important.”
Is there a typical working day? “There really isn’t one!” The
boys are lucky enough to be based in Salcombe, Devon, so if
the surf is good, the sun is shining and deadlines are met, it’s
highly unlikely they will be in the office!
What’s the secret of their success? “It sounds simple, but
we are our own target audience. By living our brand we
understand what needs to be done to continually improve it,
giving us a clear direction for the future.”
What makes all the hard work worth it? “We never tire
of seeing people wearing Jam in the locations for which the
clothes were designed. From a guy in a beach bar wearing one
of our shirts to a teenager sleeping in a sweatshirt on the train
to London – we sometimes find ourselves saying hello, as if
we’re friends!”

The rose is very much a part of
English heritage and it is tragic that so
many of the roses purchased today have
very little fragrance. Unfortunately many
commercially grown flowers have had
their scent gene genetically removed to
increase their durability and longevity
and although still beautiful, the rose
has sadly lost a part of its essence.
At The Edge of the Florist we’re
focusing on bringing the quintessential
fragrance of traditional English roses
back to our client’s homes. Grown
in England and Kenya, the stunning
varieties in our studio have their scent
gene firmly intact and are available
throughout the seasons of the year.
Although an obvious and simple
philosophy, we believe that fragrance
is an integral part of any flower
arrangement. Like most women
I prefer a few scented roses over
static, sterile mass-produced, forcefed
flowers. In addition to beautifully
scented roses throughout the seasons
we’ll also have exquisitely perfumed
foliage including lavender and
rosemary and from March to July the
most delicate English sweet peas.
As part of our service in our new
studios, The Edge Of The Florist will
be creating fragranced arrangement in
our clients’ favourite vase or bowl, or
alternatively, they can select the ideal
jardinière from our own collection.
We will hand tie bouquets of scented
flowers and foliage on request and
personally deliver throughout Surrey
and Sussex for a nominal charge.
I’ve always believed that Formal
flowers have their place but after living
for a number of years in the heart of
the Surrey countryside, my preferred
style is to arrange flowers in a natural
way... flowers and foliage, (without the
interference of wires) that move, stand,
curve and sway naturally…as they appear
in nature and as we lovingly remember
them in our gardens and hedgerows.
Our signature candles, handmade
in Surrey and available in our Studio
and online, entirely reflect our love
of nature’s abundant fragrances.

Being a landlord can be a stressful business, especially
when the building you are renting out is a stunning,
characterful and historic Georgian townhouse. It’s a
matchmaking scenario rather like that endured by a protective
parent or friend, for whom no suitor makes the grade...
So, the relief that the owner of this Hastings house and
ground floor shop must have felt, when Christine Shepherd
walked through the door, cannot be overestimated.
Although one can imagine Christine sweeping through
the door, and there being a thunderbolt moment between
landlord and tenant, their actual meeting was more prosaic.
Both worked in the world of interior decoration; Christine
with a stall in Spitalfields Market, as founder of The Kula
interiors company, and Lucian as a partner in the art and
antiques business Myerscough & Mairs. Either way, their
professional union was sure to produce something beautiful -
though beautiful by no means sums up this home on the high
street in Hastings Old Town. Magical is closer to the mark.

The ‘hallway’, as you come in directly from the street,
is the shop known as The Kula. The striking name comes
from a system of gift exchange between tribes in the
Trobriand Islands off Papua New Guinea, documented by
Polish anthropologist Bronislaw Malinowski in 1922.
And if that seems like an unusual source of name
for an interiors business, it gives a hint of the flavour
of the house, which has a striking sense of cultural
depth coming from Christine’s wide-ranging travels
and interests - she has a BA in Anthropology and
has also studied Arabic and organic gardening...
In the shop, classic 1940s and 50s chairs mingle with
Spanish ‘Fase’ lamps on top of a gnarled, 200-yearold
board floor, with wood-knots and worn boards
creating an uneven surface where furniture refuses to
sit still. Christine sometimes has to reassure customers
that her chairs do not have different-length legs.
We pass through the shop, where the furniture has a
mind of its own, and into the heart of the building - a
towering yet narrow stairwell, which goes up five floors
from the basement. A roof light at the top accentuates
one’s sense of looking through a keyhole in a very, very
thick door, while the winding balustrade leads your gaze
upwards. It’s impossible to ignore the urge to explore.
Christine leads the way up to the kitchen on the first
floor, where we stop for a cup of tea. A large sash

the Medusa mask and collection of insects at Greenwich

Gardens. The masks, from various sources, are part of Christine’s
collection. Christine bought the 1950s Pier Luigi Colli chair,
with a handwoven cover, from antique dealer Philip Varma
window with slatted blind above and backlit herbs below,
dominates the room. It feels as though the kitchen
decor has been shaped over many decades, and yet
Christine has only lived in the house for 18 months.
“We spent a month, decorating the house from top
to bottom,” she says. This included refurbishing the
kitchen: the stainless steel units are 1950s originals which
Christine had polished, to give a more contemporary
feel, and the kitchen surfaces are reclaimed science
lab worktops, cut to fit and sanded to remove copious
graffiti: “Some of it was pretty bad,” she laughs.
Above the units and range cooker - besides impressively
organised shelves of spices and ingredients - are
numerous artworks, photos and objets d’art which hint
at Christine’s life of travel and adventure as well as her
earlier life in Greenwich and southeast London.

mine described as kitsch - are all from Greenwich market,”
says Christine. “You’ll notice a recurring theme of masks,” she
adds. “I don’t know why, I just have a thing about them.”
Having grown up and worked in London for many
years, in 2000 Christine had what some might call a
Damascene moment: “I was a management consultant
working 24/7, had no hobbies or life outside work and
basically became what I did. Then I woke up one morning
and thought who am I? I wanted my life back.”
Unlike many people, who dream of chucking it
all in and starting a new life abroad but never work
up the courage, that’s exactly what she did.
“I sold everything I owned and moved to Greece for six
months. I then visited a friend in Marbella, but there was
too much concrete... So I followed her advice and headed
to Tarifa on the Costa de la Luz, Spain’s Atlantic coast.”

As soon as she saw the vast and virtually empty beaches
of Andalucia, she knew this was going to be her home.
Having worked hard for many years and then selling
everything she owned, Christine was able to do “not
very much”, as she puts it. In fact, she studied Spanish
and Arabic and organic gardening, as well as starting
to write with the encouragement of a friend. It was this
friend who not only encouraged her to follow her creative
side through writing but also to try interior design.
“James’s family owned various hotels,
including the Hurricane Hotel in Tarifa,
where I stayed for a couple of months.”
In 2007 James first asked Christine to redo the restaurant
and lounge in another hotel, the Punta Sur, and the family
were so pleased with her work that they then asked her
to transform the hotel’s stable block into luxury suites.
“Once we agreed basic plans they headed off to Val d’Isere
and left me to it,” laughs Christine. To her genuine surprise,
the project was a huge success: “I shocked the pants off
myself!” she says, with a Londoner’s lack of pretence.
After doing a host of other projects for the
family, and after more than 10 years in Spain,
Christine decided it was time to return home.
“There were three reasons really,” she says. “I needed to
work again, I missed trees and I missed speaking my own
language. My colloquialisms were lost on the Spanish!”
It was a month-long visit with another of her friends, this
time in Hastings, that led Christine to the Sussex coastal town.

building means that there are two rooms on each floor, larger
rooms to the front, overlooking the old High Street, and
smaller rooms to the back, looking out over rear gardens
and roofs. Across from the kitchen is what Christine calls
the lounge, furnished with a luscious, curvy, Italian suite.
Along one wall is a series of black and white Sassy Luke
prints, representing literary titles and characters, such
as Kafka’s Metamorphosis and The Dog Woman from
Sexing the Cherry by Jeanette Winterson. The artworks
are slightly sinister and work well with the gun-metal grey
paintwork, blackened floorboards and the 1920s copy
of an antique death mask peering up through the glass
of an occasional table. Light floods the room via a huge,
curved sash window, helping to keep the demons at bay.
Light also shines down from the skylight at the top of the
stairs, illuminating the narrow stairwell, which continues
on up to the office and bathroom on the next floor. The
stairs themselves are bare, dark boards, finished simply
with a neutral, jute runner, cut to fit. It’s a no-fuss look,
which fits perfectly with this solid Georgian interior.
Just as each room in the house serves as its own gallery
space, so do the walls of the stairwell... culminating
with a huge, blue painting at the top of the stairs.
“I call it The Blue Man,” says Christine. “I brought
him back from Greece... and it most certainly counted as
excess baggage,” she says, before pointing out the blurred
image of a skull at the foot of the painting. It’s as if it
were commissioned for the space, it fits so perfectly.
“I never take ‘stuff’ with me when I move, but I always
take my artworks,” says Christine. I’m not sentimental
about ‘things’ but I love art.” She admits that everything
in her home, at least as far as furniture is concerned, is
for sale... except for the chest of drawers in her bedroom
and the two cane-backed armchairs in her office.
This is truly a magnificent space with a huge glass desk.
It’s a piece that ‘shouldn’t’ work in a period home, but

somehow it does, with the added bonus of making the
items upon it appear to float. It also allows precious natural
light to permeate the room and highlight many beautiful
objects: the aforementioned cane-backed armchairs, a
suede swivel office chair and a Fase lamp. There are many
beautiful objects in here, and yet no sense of clutter.
Across the landing is the bathroom. Cream-painted
floorboards give a lighter, less sombre ambiance as
does the cool green-blue paintwork, while tongue
and groove panelling culminates in a narrow shelf at
chest height, that’s perfect for Christine’s collection
of insects in resin. “They may not be everyone’s
cup of tea, but I love them and have collected them
for years. Children seem to love them too.” They’re
certainly a step up from the usual spider in the bath.
A few more steps for us, and we are on the top floor,
which is occupied by Christine’s room at the front and a
cosy spare room at the back. Slightly lower ceilings up here
in the top of the building give the rooms a more intimate
feel, while Christine’s bedroom - decorated in gold and
cream - has a touch of the Hollywood starlet about it.
There is the luscious, cream chest of drawers she’d
mentioned, hand-made in Spain in the 1970s, and
overhead a classic and original Chaty Vallauris star burst
mirror: “Originals are hard to find these days, although
the style is very popular,” says Christine. Over the bed is
a serene picture by Donna Fleming Hall and long, golden
stripy curtains break on the floor into luxurious folds.
Behind the curtain is a very chic and original
alternative to voile, in a curtain of ultra-long
fringing which Christine found at Wayward,
the vintage haberdashery in St Leonards.
Across the landing, the spare room is slightly smaller, and
serves as the perfect retreat for guests, with neat bookshelves
next to the bed and an array of curious prints and paintings
on the walls, from one entitled ‘Before Hiroshima’ to
another of the Lofoten Islands, off the coast of Norway.
Beaded tassel lamps, over and beside the bed, add
a sense of luxury, as do purple velvet cushions. As a
guest, you would certainly feel that your host had
made every effort to make you feel at home.
Everything about this home is thoughtful and
considered, rather like its occupant. It’s almost impossible
to imagine that Christine has only lived in the house
for 18 months, it feels so unique and homely.
“This may sound big-headed,” says Christine,
“but I find interior design and decoration easy - and
I don’t get stressed, or overthink it, I just do it.”

Jo Fairley rejoices in the therapeutic benefits of bath time
Ever since Roman times, we’ve been enjoying the
healing powers of hot water. And mercifully, thanks
to the joys of modern plumbing, it’s no longer
necessary to live near a thermal spring to enjoy its soothing,
calming, restorative benefits. As small pleasures go, there’s
not much to beat lying back in scented waters.
Hot water really should be available on the NHS, I always
think: in my book, there’s little better for beating stress,
soothing heartache or generally banishing a bad mood than
turning on the taps, slooshing something fabulous beneath
running water, lying back and relaxing.
There are those of you out there who prefer a shower to
a bath, no doubt. Showers are the busy person’s get-clean
alternative, for sure – so I’ve listed a couple
of fab shower products. But in general, to get
the benefits of a proper ‘soak’ – especially if
you’re infusing the water with minerals – you
really should give it 15 minutes or more.
Some of the following definitely qualify as beauty steals,
while you might want to think of others as a ‘wellbeing
investment’. Here’s what you’ll find on top of my (somewhat
crowded) bathroom cabinet.
Aromatherapy Associates Relax Deep Bath & Shower Oil,
£45 for 55ml. This is so incredibly effective and makes such
a nice gift that I keep a little stash of them in my present
cupboard. With its oils of chamomile, vetiver
and sandalwood, this is knock-out drops in
a bottle. Yes, it’s probably more
than you’ve ever spent on a
bath product in your life – but
a single capful scents the
whole house, never mind
the bathroom.
There’s another fantastic
oil in the range called
Inner Strength Bath &
Shower Oil, also £45 for
55ml, featuring geranium,
clary sage, cardamom and
touches of rosemary: this
“Hot water really
should be available
on the NHS...”
was created by Aromatherapy Associates founder
Geraldine Howard when she was diagnosed with
cancer, literally to deliver ‘inner strength’ – and
I like to give it to anyone facing life challenges,
or who just needs general fortitude.
The bath oils by Beatitude are also good
aromatherapy blends (though you have to
be a little more lavish, quantity-wise), with
evocative names like Joy, Peace and Patience.
Prettily-packaged, these, and £40 for
100ml; my personal favourite is Joy, with
its upliftingly citrus fusion of bergamot,
orange, petitgrain, mandarin and grapefruit
– a great morning reviver.
The oil’s actually richer
than many, nourishing
skin while you bathe – so
less need for body lotion
or butter afterwards.
For great value aromatherapy
products, I don’t think you can do
better than the SenSpa range (at
Waitrose or online); I especially like
Relaxing Bath & Body Oil, £7.95 for 100ml,
with lavender, bergamot and rose geranium.
Olverum, £24.05 for 150ml, is a clears-your-passages bath
oil infused with breathe-easy oils of rosemary, lavender,
lemon, thyme, verbena, eucalyptus and pine – brilliant for
this cold-y, flu-ey time of year. As India Knight puts it, ‘it’s
pine city – you couldn’t wish for anything pinier.’
Olverum’s actually been around since 1929 – but while
I’ve always loved the effect, it’s never been something I’d
display on my bathroom shelf. Now it’s been given the most
glamorous and graphic makeover: a stunning bottle and
fab typography, generally turning an everyday product into
something worthy of a film star’s boudoir.
Along the same perfect-for-winter-bathtime lines is
Moa Fortifying Green Bath Potion, £27.50 for 100ml: a
little bottle of concentrated herbal magic, with muscleeasing
fir needle and sweet birch, alongside refreshing

Have you noticed, meanwhile,
that there’s a revival of good old
bath salts? That’s because they
really, seriously work to soothe
muscles and sagging spirits. My
husband keeps a giant sweetie
jar of Himalayan pink sea salt by
our bath, but the real ‘buzz’
is around magnesium salts.
Our mothers’ generation
was big on Epsom salts –
but actually, magnesium
salts are the same thing
(banishing the ‘granny’
image with a little clever
rebranding).
I like to create what my
‘mature’ model friend Dayle
Haddon always describes as
a ‘magic bath’, with a dollop
of this, a drop of that – and
a really generous amount of
magnesium salts. I recommend
Better You Magnesium Flakes, £9.95 for a kilo (victoriahealth.
com), which I add to almost every bath I take; they’re entirely
unscented, so you can use them with any fragrant bath treat
without scent-clash. For something scented, try Aveda Stress
Fix Soaking Salts, £31 for 454g, a blend of lavandin, French
lavender and clary sage.
I’d also like to suggest that you revisit two beauty classic
bathtime products you may well have grown up with. Good
old Fenjal Classic Luxury Crème Bath Oil, £8.99 for 100ml, is
as glorious as ever, with its creamy, powdery, not-quite-likeanything-else
signature scent – and very skin-nurturing.
OK, this is an age test: do things still happen after a
Badedas bath? Well, I’ve never emerged from the gentle
forest-y scented foam and looked out of the bathroom
window to see a handsome man on a steed, but I nevertheless
still absolutely adore this aromatic foaming gelée, enriched
with horse chestnut and with the distinctive aroma I so well
remember from growing up. (Badedas Original Foaming Gelée
is priced £9.95 for a whacking 750ml.)
My final tip is to adjust the temperature of your bath to get
the most out of your soak. Buy yourself a bath thermometer;
they’re really to test babies’ bathwater, but can also be used
for ‘bath therapy’ purposes. The best temperature for a
relaxing last-thing-at-night bath is F99° (C37°); a warmer
(but not hot) bathing temperature helps promote healthy
sleep. The best temperature for a reviving bath is slightly
cooler at F97° (C36°); taking a bath in the morning can zap
tiredness, if it’s not too hot, and makes for a refreshing (but
not chilly) start.

The change of season can bring mixed feelings. Helen Barton presents a few easy ways of maintaining
happiness and developing your wellbeing, despite the wind and rain
There’s so much beauty in autumn, I can’t help but feel an inkling of anticipation when the evenings start to
close in, but not everyone feels the same way. Levels of depression have been known to increase in autumn
and winter because of the late sunrise and early sunset. Many physical ailments can be exacerbated in the
cold - and although visually beautiful - the turning of our surroundings can be a reminder of things coming to an
end. Nonetheless, with every ending is a brand new beginning.
As humans, we are inextricably linked with nature’s transitory cycles. We have our own times of light and
sunshine, darkness and cold. Being aware, conscious and accepting of these external changes, can mean an
acceptance and contentment within ourselves. Here are a few simple, unpretentious and beautifully effective ways
of becoming mindful, peaceful and joyful in this colder season.
Go barefoot - It may be cold and dewy, or
even frosty, but taking a wander on grass or soil
barefoot can have a huge positive impact on
our bodies, minds and emotions. It improves
balance and overall foot health, it relieves
stress and hypertension and can improve PMS,
sleep and the immune system. ‘Earthing’
has gone from a counter-culture trend to a
scientifically researched practice. So pick a nice
morning and whip your slippers off. Experience
the cold and be aware of how it feels.
Forest walks - If you’re lucky enough to live in
the countryside, then you won’t have to travel
far to find a forest or wooded area. Being in
this environment is not only enjoyable, it can
improve overall wellbeing. Forest bathing is
the practice of absorbing the sights, sounds
and smells of your surroundings. Take a walk
and notice all you can. Your mind may drift
back to the office, but persevere. See the
landscape, the colour and texture. Hear the
rustle of leaves underfoot, smell the pine and
the soil. Feel the cold and the comfort of a
soft scarf. Stop a minute and just be there.
Be by water - Beaches aren’t just for summer
time. I’m not suggesting you go for a swim,
but a brisk walk along a bay in winter is a great
way of blasting out those mental cobwebs. If
you can’t get to a beach, then find a river, or
stream - any moving body of water will do.
In Ayurvedic medicine, the element of water
is crucial in balancing the body and creating
physical harmony, and rivers have long been
seen as sacred, being associated with rebirth and
spiritual cleansing. The average human body
is up to 75% water, so it’s unsurprising that
there’s a natural draw to and affiliation with it.
Watch your breath - By simply stopping, sitting
and watching your breath on a daily basis, a
huge transformation can take place. Find a quiet
spot, inside or outside, and sit in a comfortable
upright posture on a chair with uncrossed legs.
Place your hands loosely on your lap, with palms
facing upwards. Close your eyes and inhale
deeply. As you exhale, shift your attention to this
exhalation. With the next breath try and extend
it a little, gradually making each inhalation
and exhalation deeper. Keep your focus on
the breath and try this for five minutes. If you
feel like sitting for longer then do so. When
you open your eyes, slowly, pay close attention
to any change in sensation or emotion.
Be thankful - Work loads, family pressures and
money difficulties can often seem over whelming.
By taking a moment to stop and be thankful, a
real sense of perspective can be gained. Where are
you reading this? Are you safe and comfortable?
Do you have food in your body? If you can
truly and fully appreciate your situation, the
feeling of wintery negativity can be lifted in an
instant. When you wake up in the morning, try
thinking of five things you have to be thankful
for, and take a moment to stop and ponder.
By trying just one of these on a regular
basis, you have the ability to create a
profound and meaningful change in
your outlook, your relationships with
others, and your experience of life.

Two women who met at the school gate now have a successful business delivering home-cooked
meals to hundreds of busy families – here they share some of their go-to dinners
After discovering they were both
keen cooks, Sydney-based mums
Sophie Gilliatt and Katherine
Westwood came up with the idea of
preparing dinners to deliver to timepoor
friends, who wanted to give good
wholesome food to their families, but just
didn’t have time to make it themselves.
What started as a garden shed
project has now grown to a fleet of
delivery trucks dropping off hundreds
of home-cooked meals every day.

Duck Ragu
Serves 4. Prep time 20 mins. Cooking time 2 hours 10 mins
• 2 large duck legs (thighs
and drumsticks)
• 1 teaspoon salt
• 3 teaspoons olive oil
• 1 brown onion, coarsely
chopped
• 1 large carrot, cut into a
few pieces
• 1 celery stalk, cut into a few
pieces
• 2 garlic cloves, crushed
• 150 ml red wine
• 400 g tinned chopped
tomatoes
• 2 teaspoons tomato paste
(concentrated purée)
• 3 thyme sprigs, leaves
stripped
• 2 bay leaves
• 250 ml chicken stock
(home-made or low/no salt)
1. In the bowl of a large food processor, pulse the onion, carrot
and celery. Add this soffritto to the oil in the saucepan with
the garlic and the remaining 1/2 teaspoon of salt. Cook over
medium–low heat for about 20 minutes, stirring frequently
to lift any of the ducky bits from the bottom, till the
vegetables are soft and sweet.
2. Return the duck legs to the pan, turn up the temperature to
high, pour in the red wine and bring to the boil. Turn down
to a simmer and add the tomatoes and tomato paste, thyme,
bay leaves and chicken stock. Cover with a lid left ajar and
simmer gently for at least 11/2 hours or until the duck is
so tender it’s almost falling off the bone. Remove the duck
pieces with a slotted spoon and allow to cool on a plate while
you finish the sauce. Check the consistency of the sauce –
does it have too much liquid? Boil it off a bit. Too thick? Add
a bit more stock. Just right? Pat yourself on the back and call
in Goldilocks. As soon as the duck is cool enough, shred the
meat off the bone, being very careful to find the thin spiky
bone that runs along the leg.
3. You can discard any bits of skin or fat, or you can smoodge
them between your fingers and incorporate them into the
sauce. It’s up to you – though it does add richness to the
sauce’s texture. Similarly, you can fish out the bay leaves,
though they add a nicely rustic air to the dish. Stir the duck
meat back into the sauce and taste for seasoning.
4. Serve, stirred through a fresh, cooked ribbon pasta like
pappardelle, with freshly ground black pepper and grated
parmesan cheese.

Vegetable Tagine with Olives,
Eggplant and Chickpeas
Serves 4. Prep time 20 mins.
Cooking time 1 hour
• 400 g butternut squash or sweet potato
(peeled weight), diced into 3 cm cubes
• 3 tablespoons olive oil
• 2 teaspoons salt
• 1 small aubergine, approximately 350 g, cut
into 4 cm chunks
• 1 courgette, cut into 3 cm chunks
• 1 large brown onion, chopped
• 1 red pepper, seeded and cut into thick strips
• 2 garlic cloves, crushed
• 1 x 3 cm piece ginger, grated
• 3 teaspoons ground coriander, toasted
• 1½ teaspoons ground cumin, toasted
• ½ teaspoon ground allspice
• ½ teaspoon mild paprika
• 1 heaped teaspoon caraway seeds,
toasted and ground
• 400 g tinned chopped tomatoes
• 4 long green chillies
• 2 tablespoons honey
• 400 g tinned chickpeas, drained
and rinsed
• 50 g (1 handful) kalamata
olives, pitted
1. Defrost before reheating gently – the pumpkin or sweet potato will be
delicate.
2. Preheat the oven to 180°C (350°F). Line two baking trays with
baking paper. Toss the pumpkin in 1 tablespoon of the oil and 1/4
teaspoon of the salt, and the eggplant and zucchini in 1 tablespoon
of the oil and 1/4 teaspoon of the salt and spread over the two trays.
Don’t overcrowd the vegetables, ot they’ll stew instead of roast. Roast
in the oven for around 35 minutes for the pumpkin, and 25 minutes
for the eggplant and zucchini till everything is caramelised and
cooked through.
3. Meanwhile, slowly cook the onion, red capsicum, garlic and ginger
in the remaining 1 tablespoon of oil and 1 teaspoon of salt in a
large saucepan over low heat for 10–15 minutes. When soft and
translucent, add the spices and the tomatoes. Add the whole chillies
(in one piece, stalk and all), then 400 ml (14 fl oz) of water. Simmer
for 30 minutes, then add the honey. Add the roast vegetables,
chickpeas and olives to the spiced broth. Stir together gently, adding
more water if it is too thick. Taste for seasoning.
4. Serve with couscous, chopped herbs and garlic yoghurt sauce.
5. Garlic Yoghurt Sauce: Combine 260 g (91/2 oz/1 cup) Greek-style
yoghurt with 1–2 crushed garlic cloves, a good pinch of salt and 1
tablespoon lemon juice. Beat together, taste for balance and adjust.
Easy, hey?
6. Couscous: To lift your couscous up a notch, use stock instead of
water (following the instructions on the packet). After it has cooked,
fluff it up with a fork, then stir through any combination of chopped
fresh herbs, toasted almonds and pistachios, diced preserved lemon,
pomegranate seeds, thinly sliced spring onions (scallions) and currants
or barberries. Maybe not all at once, though you could give it a whirl.

Very berry
Sue Whigham celebrates autumn’s visual feast
I
heard David Hockney on Radio 4 talking about a visit
he made to Japan to see the glory of the cherries in full
blossom. He loved them but said he was just as happy
looking down into a Yorkshire valley and seeing clouds
of hawthorn blossom. The May or hawthorn (Crataegus
monogyna) has been tremendous this year, smothered with a
froth of white flowers, which now have metamorphosed into
thousand upon thousand of red fruits. A feast for the eyes and
a generous store of food for birds.
I rather love the grey leaved Crataegus tanacetifolia, first
spotted in the grounds of Stowe. A tansy-leaved hawthorn, it’s
mighty slow growing but its combination of soft grey downy
leaves and a pale orange fruit is charming and unusual and
worth waiting for.
Euonymus is another group of plants that produce fabulous
autumn fruits, varying in range from shrubs and small trees to
climbers and creepers. Celastrus orbiculatus ‘Hermaphrodite’ is
a graceful, strong growing climber, the combination of ochre
yellow berries opening to bright scarlet seeds looks amazing in
the autumn against a backdrop of clear yellow leaves.
Euonymus europaeus ‘Red Cascade’ is a selected form of
our native spindle, which is often seen as a hedgerow plant
especially where there’s chalky soil. This is particularly
floriferous, weighed down with red fruits which break open to
reveal orange seeds in a rather startling combination.
Another showstopper is sieboldianus, a subspecies of E.
hamiltonianus, which originates from the Himalayas, with a
combination of pink, yellow and red autumn colour and rosy
pink fruits opening out to orange seeds.
Viburnum opulus or the Guelder rose needs a lot of room
but is worth growing for its maple-like leaves which colour
up well in the autumn and its white flowers in mid to late
summer. They’re a little like those of a lacecap hydrangea,
frothy and exceedingly pretty. It’s a native plant which
flourishes in damp areas and a particularly lovely form,
‘Xanthocarpum’, instead of having glistening red berries,
produces bright and translucent yellow berries. Quite a lot of
the viburnums have good autumn berries and as they’re pretty
easy to grow, they’re worth looking out for.
Another favourite group of plants for their autumn fruit
are the crab apples (Malus). There are so many varieties and so
many of them ‘do’ something wonderful throughout the year.
The better known ones such as Malus ‘Evereste’ and M.
‘John Downie’, the latter being one of the best fruiting of the
lot, are worth growing but it’s fun to look into alternatives.
M. hupehensis, which was discovered in Hupeh province by
Fruits of Crataegus tanacetifolia
Ernest ‘Chinese’ Wilson, is a lovely thing: combining fragrant
white flowers with masses of small dark red fruits in autumn.
Wilson was one of the greatest plant hunters. He started life
as an apprentice gardener’s boy in the Midlands and worked
his way up to Kew Gardens. Eventually he was employed by
James Veitch and Sons to work as a plant collector. Despite
horrendous conditions in China, including an outbreak of the
plague, malaria and political unrest, he returned with nearly a
thousand plant species along with the seeds of another three
hundred, most of which we take for granted now.
He also discovered M. toringoides in Western China at
about the same time. This has a rather different habit to M.
hupehensis having wide spreading branches and very deeply
lobed leaves. The flowers are just slightly scented and a creamy
white but the fruit is very striking as each one is pear shaped
and ‘two tone’ in shades of red and yellow.
Sorbus are another genus with a huge range of plants with
stunning autumn colour and berries. E.H. Wilson also found
Sorbus hupehensis in China and a particularly good selection is
‘Pink Pagoda’. I love this little tree. It really is so striking and
beautiful, both for its bluish green, sharply toothed leaves but
in particular for its pink tinged fruits. There’s a great example
near the top of Battleston Hill at RHS Wisley and whilst it is
tucked away with a lot of other interesting trees and shrubs, it
always seems to stand out to me because of the colour of the
berries combined with its leaves.
Actually, the more I think about it, the more I think that
it’ll have to be added to my imaginary Christmas list. Even its
branches are decorative as they have a purple hue.

them. Low expectations inevitably lead to low
achievement, as all wise teachers and parents know.
When my younger son was 10 and the elder 14 we
had tickets to see King Lear. I assumed it was likely to be
beyond the ten year old so we booked for just three.
In the event, our elder boy was unwell on the night so
we took the younger. And how glad I am that we did. He
understood the play at his own level, talked about it for a long
time afterwards and enjoyed an evening out with his parents.
We had underestimated our child as so many teachers
and parents routinely do. Education secretaries and prime
ministers have muttered about the downward drag of
low expectations in schools for decades but it’s a slippery
thing to improve. Schools are under huge pressure to
get high, readily quantifiable examination results.
In order to do that, many spoon-feed candidates
with immensely detailed revision sessions, relentless
dull coaching and pep-talks right up until they turn
over their exam papers. And the lessons in the years
prior are far too often based on formulaic, self limiting
‘lesson plans’ from which few dare deviate.
Where’s the stretch which takes every single individual
beyond the standard expectation for that age group?
Too often it’s missing. Everyone is too busy meeting all
those targets which are – frankly – often deliberately
set too low to ensure the school can hit them.
Obviously I’m generalising and some excellent schools
set unlimited expectations. I spoke to an inspiring
head recently who personally teaches a history of music
course to Year 3 upwards because he wants them all to
intelligently explore music of all sorts – way beyond
anything specified in the National Curriculum.
And as for English lessons and reading, well I could
write a book about that (and have: Encouraging Reading,
2007 and Unlocking the Reader in Every Child, 2010).
We must stop fobbing young children off with the
banal, introduce them to good material and demonstrate
continuously that reading is an exciting, very adult activity.
The usual curricular attitude to reading is tick-box based
and nothing to do with intellectual stretch – but a really good
teacher regards the specified curriculum as a mere springboard.
It’s something which informed parents should look at very
closely when they’re choosing a school, at any level, for a child.

Fables from the Farm
It’s nearly time for everyone on the farm to have a well-earned break -
including George, the bull - but first the cows have to decide who’s boss
It really won’t be long now before
the cows come in for the winter. It’s
always a bonus if we can keep them
out till December, but in the weeks
leading up to them coming into the barn
there is quite a lot of housekeeping to do.
The calves were all born in early
spring, so are now eight or nine months
old. At the end of August we split the
cows with heifer (female) calves from the
ones with male calves. As the girls can
become fertile from about six months
this is a necessary precaution as all the
boys are still ‘entire’ i.e. they
have not been castrated.
As we usually try and
produce one or two Coopers
registered pedigree bulls,
we don’t castrate the boys
at birth but leave them till
now, because by the autumn
you have a much better idea
of which are the best ones.
Apart from the obvious things like
shape and height we also weigh them
and then calculate their 200 day weight
to ensure the chosen ones are in the top
10% of the Sussex breed – if they’re not
that good then it really isn’t worth all the
extra effort necessary to nurture them
into young bulls.
A couple of weeks after the ‘second
division’ boys have been dealt with
(parted from their testicles), we will bring
all the calves back together again and
into the barn to wean them.

This is the noisiest time of the year
and we have to be very sure that the
holiday cottage – marketed as a slice of
rural tranquillity - is empty.
Some of the cows seem genuinely
pleased to see the back-end of their
offspring and disappear over the hill,
most however will bellow for 24 hours
and then give up and then there are the
dedicated full-on mums...
These girls will keep up a vigil outside
the barn and moo for two even three
days until they become hoarse so even
though they keep on
bellowing (thankfully) no
noise comes out.
Never mind I tell them,
it won’t be all that long
before there’s another
patter of tiny hooves.
Enjoy the break!
Bringing all the cows
back together in the field before they
come into the barn also gives them the
opportunity to re-establish their social
hierarchy - a crucially important part of
cow behaviour. Put twenty cows together
and they will sort themselves into a
pecking order of one to twenty.
The number one cow will be one
of the biggest and oldest and then it
works its way down with each individual
having a specific place in the hierarchy.
By letting them sort out all the boshing
and joshing – known as bunting –
before they come in results in a far more
peaceful community once inside.
Apart from the cows in one shed and
the calves in another we also need to
think about George the bull who needs
his own exclusive ‘gentleman’s’ quarters.
He went out with the cows in April
and by letting him run with them for
only three months we can be sure that
all the calves will arrive in one block
– pretty welcome stuff when you have
to get up in the middle of the night to
check if anyone’s calving.
So he has been hanging out with the
older steers (aforementioned dealt with
males) since mid-summer and will now
spend the winter in splendid isolation,
quite happy as long as he can see his girls
next door. And then all he has to do –
rather like the rest of us – is to sit back
and wait for April to come round again!
