Grilled tarakihi on hummus<br />

with salad<br />

A simple, delicious recipe that makes the most of cupboard ingredients that are at hand. Swap tarakihi for your choice of fish, use your<br />

favourite hummus variety, salad ingredients and vinaigrette for interesting meal variations.<br />

Serves 4<br />

Ingredients<br />

600g tarakihi fillets<br />

Salt<br />

Cracked black pepper<br />

Chopped parsley<br />

Orange zest<br />

Oil<br />

Lemon wedges<br />

Hummus - any flavour of your choosing<br />

Salad<br />

Salad leaves of your choice<br />

Red onion, finely sliced<br />

Feta cheese, cubed<br />

Cucumber, deseeded and sliced<br />

Vinaigrette of your choice<br />

Method<br />

1. Heat oven to 170℃.<br />

2. Make enough salad mix to cater for the<br />

number of people eating. Mix the salad<br />

ingredients together and dress with the<br />

vinaigrette.<br />

3. Spoon the hummus onto a plate to<br />

form a base, and place salad on top.<br />

Lay the fish fillets on a baking tray, and<br />

sprinkle with salt, pepper, orange zest<br />

and parsley.<br />

4. Drizzle the oil over the fillets. Place in<br />

the oven and cook until just underdone,<br />

8 - 10 minutes.<br />

5. Allow cooking to finish out of the oven.<br />

When cooked, place the fish on top of<br />

the salad and serve with fresh lemon<br />

wedges.<br />
