Welcome to our <strong>February</strong> <strong>2017</strong> Issue.<br />

This month of <strong>February</strong> we have chances to invest in yourself.<br />

We have both job and development opportunities throughout<br />

the magazine for you to consider. It’s not too late to start those<br />

resolutions with Fitness, Leisure and Dance opportunities still<br />

welcoming you to their doors. If you are looking to shed some weight<br />

look at Slimming World on page 11, they have sessions to suit many<br />

venues and times.<br />

It is not just personal resolutions that we make at this time of the year, traditionally people work on their<br />

homes and gardens in spring. Take a look at the handy men, and home improvement adverts to see<br />

who you need to help with your plans, and wander round the garden centre for ideas.<br />

Gents, the 14th <strong>February</strong> brings with it romance and a chance to spoil the lady in your life. You could<br />

earnmanybrowniepointsbyconsideringavoucherforaspecialtreatmentorpopintoourfloristsfor<br />

a bouquet to put a smile on your loved one’s face. Grab a daytime coffee together if an evening meal<br />

If you have an allergy or intolerance to one<br />

type of food, you may well be allergic to<br />

other types in the same food group.<br />

Diagnosis<br />

Wondering whether that dicky tummy or<br />

rash could be down to something you’ve<br />

eaten? Read on…<br />

What’s the difference between food allergy<br />

and food intolerance?<br />

A food allergy affects the immune system.<br />

Symptoms usually appear within a few<br />

minutes of eating the offending food, and<br />

can include a skin rash, upset stomach<br />

(eg vomiting), stomach pains and<br />

wheezing. The most severe allergic<br />

reaction is anaphylaxis, which can affect<br />

breathing and send the body into shock.<br />

Without treatment, anaphylaxis can be lifethreatening,<br />

which is why it’s so important<br />

for people with a known allergy to carry an<br />

EpiPen if they’ve been prescribed one,<br />

and to teach colleagues, friends and<br />

family members how to use it.<br />

Food intolerances are more common than<br />

food allergies. Symptoms include irritable<br />

bowel syndrome, bloating, stomach<br />

upsets, eczema, migraines and even<br />

arthritis. The immune system isn’t affected<br />

and symptoms might not appear for a<br />

couple of hours, which can make it harder<br />

to work out what type of food is causing<br />

the problem.<br />

While you can be allergic or intolerant to<br />

any type of food, there are eight common<br />

culprits:<br />

Peanuts<br />

Tree nuts<br />

Eggs<br />

Milk<br />

You’ll need to see your GP if you suspect<br />

you have an allergy or intolerance, so that<br />

they can rule out any other causes for<br />

your symptoms. They’ll then likely refer<br />

you to a specialist for tests. Food allergies<br />

can often be diagnosed with blood or skin<br />

reaction tests. Intolerances are more<br />

difficult to diagnose. You may be asked to<br />

follow an ‘elimination and challenge’ diet, if<br />

necessary, to try to determine what foods<br />

you’re intolerant to. You’ll be asked to cut<br />

out certain types of food for a period of<br />

time, then reintroduce them gradually.<br />

Treatment<br />

If you’re allergic or intolerant to a type of<br />

food, you’ll need to avoid it completely. Of<br />

course, that’s easier said than done.<br />

Ingredients such as milk powder and egg<br />

white are often used in products you<br />

wouldn’t expect to find them in. And<br />

restaurants aren’t always as vigilant as<br />

they should be about cross-contamination.<br />

So you might be prescribed steroids,<br />

antihistamines, or an epinephrine<br />

autoinjector (EpiPen) if you have an<br />

allergy. You may also be referred to a<br />

dietician, to make sure you’re still getting<br />

all the nutrition your body needs.<br />

Make this as a treat for your Valentine. Pop it in<br />

Preparation time: 15 minutes<br />

Cooking Time: 20 minutes + chilling<br />

A cooking thermometer is ideal but if you<br />

don’t have one use the method below.<br />

Ingredients<br />

100g butter<br />

550g light muscovado sugar /or<br />

Demerara for a lighter flavour.<br />

200g golden syrup<br />

350ml double cream<br />

1 tsp vanilla extract<br />

¼-½ tsp sea salt flakes<br />

Method<br />

Line a tin about 23 x 23cm / 9inches x 9<br />

inches with greaseproof paper. Melt the<br />

butter, sugar, syrup and cream in a<br />

medium-sized, high-sided heavy-based<br />

pan. Keep stirring until the sugar has<br />

dissolved.<br />

Bring to a simmer (without stirring) over<br />

a medium-low heat and cook, stirring<br />

only occasionally until it reaches 116C,<br />

stirring more regularly after it reaches<br />

100C and turning down the heat if it<br />

begins to catch.<br />

Take off the heat and beat in the vanilla<br />

and salt with a wooden spoon, then<br />

continue beating until the fudge has<br />

thickened and lost its shine. Add any<br />

ingredients such as raisins, chopped<br />

nuts, or chocolate chips at this point.<br />

Pour into the tin and leave to set.<br />

Once it’s firmed up a little, after about an<br />

hour, slice into squares and leave to cool<br />

completely. Best kept refrigerated.<br />

If you don’t have a cooking<br />

thermometer.<br />

Have a bowl of iced water and a metal<br />

spoon ready next to the cooker. As the<br />

mixture begins to simmer beat it more<br />

regularly then periodically take ¼ -½ tsp<br />

of the fudge mixture and plunge the<br />

coated spoon into the bowl of iced water.<br />

Then (still under the water) use your<br />

fingers to roll the mixture into a little ball.<br />

When it forms a soft, pliable ball it’s<br />

ready to take off the heat and continue<br />

with the recipe.<br />

Community Christmas Meal<br />

Christmas day 2016 again saw the culmination of a lot of hard work and incredible generosity of time, patience and<br />

money from <strong>Gillingham</strong> and the surrounding community. A large band of helpers served Christmas dinner to guests<br />

including children at <strong>Gillingham</strong> Methodist Church Hall.<br />

Can you solve them?<br />

Jo Harvey, with the help a team of volunteers, cajoled, coerced and co-ordinated shops, business, services and<br />

people of <strong>Gillingham</strong> to donate food, money and time to make Christmas Day a very special event for those who<br />

may not have enjoyed it.<br />

Guests tucked into a wonderful 3 course meal with soup, turkey with all the trimmings. To finish off there was<br />

Chocolate Cake, Carrot Cake, Pistachio Cake, Christmas pudding, Shortbread, and plenty of juice or tea and coffee<br />

to wash it all down. They joined in with carols and Father Christmas helped to hand out presents to all.<br />

agencies and you could save yourself a lot of time<br />

Target companies - Look at the organisations<br />

which might make a good employer and<br />

concentrate on them. This may mean you only<br />

look at the big employers in your area or it might<br />

mean that you look into one sector but nationwide.<br />

Think positive - We all get a few knock backs<br />

when looking for work. Don't take it personally if<br />

you are rejected or don't even get a response. It’s<br />

probably not because of anything you have done<br />

wrong.<br />

Find hidden vacancies - Many jobs are landed<br />

before they are advertised but you need to act<br />

quickly. Look into internal recruitment and get<br />
