About <strong>Assam</strong> <strong>Tea</strong> <strong>Co</strong>mpany<br />

Our family has been farming tea for four generations<br />

growing some of the finest black teas in the world.<br />

Our two tea gardens, Satrupa <strong>Tea</strong> Esate and Rani<br />

<strong>Tea</strong> Estate, are spread over a combined area of<br />

around 2,000 acres of land, a large chunk of which<br />

are preserved as pristine forests and wetlands. Our<br />

teas are grown without the use of any chemical<br />

fertilizers or pesticides in order to conform to USDA<br />

and COR Organic Standards, as well as to European<br />

Union's MRL standard.<br />

<strong>Tea</strong>s should be consumed fresh after harvest, preferably within the first year of<br />

harvest. Throughout the year, we import, stock and shipout to our clients the<br />

freshest harvests of well-made teas from our tea gardens in <strong>Assam</strong>. We have<br />

also partnered with tea growers and organic herb farmers from <strong>Assam</strong> to South<br />

Africa, and local farmers here in Canada and the United States to bring you a<br />

selection of teas and herbs that are fresh and free of harmful chemicals.<br />

In our certified organic facility in the Pacific Northwest we manufacture some<br />

of the finest tea blends in micro-batches strictly using natural flavors from<br />

botanical extracts, and certified organic flowers, herbs and spices.<br />

<strong>Assam</strong> is the historic name of a region in the eastern edges of the Himalayas, forming a bridge<br />

between Bengal and Upper Burma. The<br />

region, measuring approx. 100,000 square<br />

miles, is fed by majestic rivers, deep gorges<br />

fertile valleys, high mountains and thickly<br />

wooded rolling hills. The region of <strong>Assam</strong> has<br />

recorded history going back to 350 AD.<br />

Even today, <strong>Assam</strong> is home to over a<br />

hundred indigenous societies, most with their<br />

own distinct languages, cultures and<br />

spirituality. The region today is divided into<br />

India, Burma, Bangladesh and Bhutan, with<br />

the bulk of the portion being part of India,<br />

and collectively called "North East India".<br />

There are about 2,000 large tea plantations, and over 200,000 small tea<br />

gardens growing tea in the <strong>Assam</strong> region. It is the largest tea producing<br />

region in the world. Geographically speaking, there are six tea growing<br />

regions in <strong>Assam</strong> - Cachar, Central <strong>Assam</strong>, Dooars, Lower <strong>Assam</strong>, North<br />

Bank E Upper <strong>Assam</strong>. The teas from each of these geographic regions<br />

are quite distinct from each other.<br />

Satrupa <strong>Tea</strong> Estate was first farmed in late 1970s by our<br />

parents. The garden is located in Upper <strong>Assam</strong>, at the edge<br />

of the last remaining tracks of tropical rainforest in Eastern<br />

Himalayas. This region is called the "Doom Dooma <strong>Tea</strong> Belt"<br />

because of its rich red loom soil that's perfect for tea farming.<br />

The <strong>Assam</strong>ese tea plant (Camellia assamica) is native this region.<br />

The best black teas in the world also happen to come from this region!<br />

Organic <strong>Assam</strong>s<br />

For being the largest tea growing region in the world, <strong>Assam</strong><br />

has only a handful of tea gardens that are certified organic<br />

per USDA NOP or Canadian COR programs. All our <strong>Assam</strong> teas<br />

are from tea gardens where they are farmed without<br />

chemicals, but only the teas listed here are from the certified<br />

organic tea plantations in the <strong>Assam</strong> region.<br />

Organic <strong>Assam</strong> Breakfast: If you enjoy<br />

breakfast blends, this would be an<br />

ideal choice for you.<br />

Organic Cream of <strong>Assam</strong>: Offers noticeable<br />

briskness in the cup with biscuity, vegetal<br />

flavor and malty aroma.<br />

Organic Honey n' Cream: The cup is extremely<br />

rich and smooth with noticeable briskness<br />

that shines through the milk.<br />

Organic Kama Black: A medium quality Orthodox<br />

production, this tea is easy to enjoy for<br />

Single Origin, Single Estate<br />

and Single Malt <strong>Tea</strong>s<br />

As tea drinker we can enjoy teas<br />

grown in different regions of the<br />

world. <strong>Tea</strong>s from one specific region<br />

that's sold under the region's name<br />

is a Single Origin tea. For eg: <strong>Assam</strong><br />

tea (has to come from <strong>Assam</strong> region).<br />

<strong>Tea</strong>s are grown in plantations that<br />

are also called <strong>Tea</strong> Estates. A tea that<br />

is sold under a tea estate's name is<br />

called a Single Estate tea. For eg:<br />

Satrupa tea (has to come from<br />

Satrupa <strong>Tea</strong> Estate).<br />

<strong>Tea</strong>leaves are harvested every six<br />

days from a plant, and made into<br />

made-tea that we drink. Each harvest<br />

in a tea garden taste different<br />

because of changing factors like<br />

quantity of rainfall within last six days<br />

drainage capacity of the soil and any<br />

ongoing stressors on the plants, like<br />

pest attack.<br />

Organic Pekoe Dust: This tea offers an extremely<br />

strong body that is best enjoyed with a dash<br />

of milk or cream.<br />

<strong>Tea</strong>s that are sold "by the harvest"<br />

usually denoted by a production<br />

number (# sign) next to the name, are<br />

called Single Malt <strong>Tea</strong>s. Eg: Cream of<br />

<strong>Assam</strong> #227 (teas specifically created<br />

in the #227 manufacture).<br />

The most prized tea harvest in the year comes from the 2nd<br />

Flush or Summer Harvest in each tea growing regions of<br />

<strong>Assam</strong>. The teas offer incredible oomph in the cup with strong<br />

malty and dense liquoring brews. They are greatly sought after<br />

by German and American tea merchants because of their longer shelf life and their<br />

quintessential "<strong>Assam</strong> character".<br />

The Two Species of <strong>Tea</strong><br />

Cream of <strong>Assam</strong> (2nd flush): Strong body<br />

The <strong>Assam</strong> region has its own species<br />

of tea plant, Camellia assamica<br />

which is distinctly different from the<br />

Chinese tea plant, Camellia sinensis.<br />

The <strong>Assam</strong>ese tea plant has a thick<br />

sweetish malty flavor profile, which<br />

have been enjoyed in the western<br />

world, since the 1830s when it was<br />

first introduced to the British Empire.<br />

We refer to the <strong>Assam</strong>ese tea plant<br />

as <strong>Assam</strong>ica.<br />

Are your teas organic?<br />

Our organic teas have the word<br />

"organic" as part of their name. For<br />

example "Organic Breakfast Char is<br />

a certified-organic tea, whereas<br />

"<strong>Assam</strong> Chai" is not a<br />

certified-organic tea.<br />

We operate a certified-organic<br />

manufacturing and processing facility<br />

and therefore take organic labeling<br />

and organic chain-of-custody very<br />

seriously.<br />

Our teas that are not organic are<br />

farmed without chemicals and all of<br />

them are EU MRL-compliant. Each of<br />

these teas has been independently<br />

tested to confirm that there are no<br />

harmful pesticide, herbicide or fertilizer<br />

residues in these teas.<br />

Are there animal by-products in your<br />

natural flavors?<br />

No there are no animal by-products<br />

including any meats, seafood, poultry<br />

eggs or dairy products in any of our<br />

natural flavors, We do use Bee Pollen<br />

in a few of our blended teas.<br />

However all blends are clearly marked<br />

if we do add bee pollens to them.<br />

Nepals Darjeelings<br />

In both Nepal and Darjeeling, teas are grown either with pure<br />

Chinese tea plants (Camellia sinensis) or hybrid of <strong>Assam</strong>ese<br />

-Chinese tea plants. The teas offer musky and grape notes<br />

plus are soft textured and extremely easy to enjoy. Darjeeling<br />

teas are some of the most expensive in the world. Our Nepalese<br />

teas come from small coops operated by farmers in remote regions of Eastern Nepal.<br />

What is made-tea?<br />

Made-tea is tealeaves that have<br />

being baked and are ready for<br />

drinking. Made-tea is first sorted into<br />

Chai is a blend of tea or herb with a range of spices. The most<br />

commonly used spices in chai are Cardamom, Cinnamon, Ginger<br />

Black Pepper, Cloves and Star Anise. Home made lattes never tasted<br />

Origins of Chai<br />

<strong>Co</strong>ntrary to common assumptions<br />

Chais with actual tealeaves in them<br />

has not been drunk in Indian<br />

Subcontinent for millennia. It was<br />

introduced to the Indian societies in<br />

There are regional variations of Chais<br />

within India, and then there are<br />

western variations of Chai as well<br />

Dao of Chai<br />

Chai is the process of making the tea<br />

and not the tea itself. Chai can be<br />

made with or without spices.<br />

Instead of steeping the tealeaves in<br />

hot water, bring one serving of<br />

tealeaves (or chai blend) to boil with<br />

half cup of water. After it boils for a<br />

few minutes, add equal part of milk to<br />

the concoction, and leave it at<br />

medium heat. Turn off the stove right<br />

before the milk froths and is about to<br />

spill. Pour the brew through a strainer<br />

into the serving cup. Add sweetener.<br />

It tastes delicious if you serve it over<br />

ice as well.<br />

The oil of bergamot is extracted by cold pressing the peels of<br />

the bergamot orange fruit. Even though the plant is native to<br />

Southeast Asia, it found its fame and fortune in Italy. Earl Grey<br />

is the most consumed blended tea in the world today!<br />

0.25-grams per fluid ounce of water<br />

for real teas, and 0.40-grams per fluid<br />

ounce of water for herbal teas. If your<br />

brew is too strong use less quantity of<br />

tea leaves and vice versa for weak<br />

teas.<br />

5 Temperature of water: use between<br />

200°F/93°C to 212°F/100°C for black<br />

and oolong teas, and<br />

180°F/92°C for green and white teas.<br />

6 Steeping Time: Steep your teas for<br />

3-5 minutes and your herbs for 5-8<br />

minutes. If the brew is too strong or<br />

too weak, don't adjust the steeping<br />

time; instead adjust the quantity per<br />

serving.<br />
