Happy National Brown-Bag-It Day! That’s right,
May 25th is the day to celebrate the good old art
of bringing your lunch from home. While checking
out new places to eat by your office can be fun and
sometimes grabbing a sandwich from the local deli
feels like the easiest thing to do, packing your own
lunch is a much healthier and less expensive choice.
Even those healthy-seeming salads from the local cafe
can hide some not-so-nutritious ingredients.
Packing your own lunch for work may be more time
consuming (although how long do you spend waiting
in line at the sandwich shop?), but with some simple
planning and a weekend trip to the grocery store, it
can become an easy part of your routine. To help you
on your way to a healthier lunchtime habit, we’ve
created five easy lunch options for every day of the
work week. With each bite, you’ll feed your body, calm
your mind and rejuvenate for your afternoon!
Brown Bag #1: Kale salad with radish greens and zesty
lemon dressing
After you’ve made it through your hectic Monday
morning, treat yourself to this filling salad. Kale is
an antioxidant-packed superfood that will help you
detox from any weekend revelry, leaving your immune
system recharged for the week ahead, while vitamin
C-dense radish leaves rev up your immune system. This
zesty lemon shallot dressing adds some inflammatory
action for a revitalizing and nutritious lunch.

Brown Bag #2: Avocado on toast with seaweed chips
Spread some hummus on whole wheat or glutenfree
toast, then add a few slices of nutrient-packed
avocado. Sprinkle with sea salt, pepper and a dash of
cayenne for a spicy metabolism boost. This goes great
with fiber- and protein-rich seaweed chips.
Brown Bag #3: Fruit salad with a side of mixed nuts
For a middle-of-the-week energy boost, try this lunch
of fruits and nuts. Choose immunity-boosting citrus,
fiber-filled apples, potassium-packed bananas or
antioxidant-dense berries. The natural sugars of the
fruits will give you a steady energy boost. Go nuts
with your nuts! Walnuts are filled with omega-3’s and
antioxidants; almonds pack vitamin E, folic acid and
tons of other vitamins and minerals; pistachios are
high in fiber; cashews have bone-building magnesium;
pecans can help ward off heart disease; Brazil nuts
are bursting with selenium - and they’ll all give you
enough protein to power through the afternoon.
Brown Bag #4: Tomato-hummus sandwich paired with
apple slices and almond butter
This veggie sandwich swaps out the meat for a thick
slice of heart-healthy tomato. Add a few slices of
red or white onion and place between two slices of
whole wheat or gluten-free bread, evenly spread
with hummus. Add hunger-satisfying apple slices and
protein-rich almond butter for a sweet side.

CYPRESS RANCH ENDS YEAR IN
ONE-ACT PLAY REGIONAL COMPETITION
The Cypress Ranch High School production of Peter and the Starcatcher
finished a successful competition season in the UIL Region III One-Act
Play competition on April 8 th at San Jacinto College-Central.
The George Bush and Carnegie Vanguard high school one-act plays
were the two selected to represent Region III in the state competition.
“What an incredible journey for the entire company of Peter and the
Starcatcher!” said Cheryl Bradford, Cypress Ranch theatre director.
“Although we didn’t advance to state, we will always remember that
‘time is our treasure.’ The time we spent together on this journey was
truly magical! I will never forget this time we shared and will keep these
moments tucked safely in my heart.”

MAY Gardening Tips
Warm weather means our gardens and landscapes are growing fast.
Here are some tasks to keep your landscape beautiful and productive:
Flowers: Time to plant summer blooming perennials and annuals
including plumbago, zinnias, angelonia, purslane, lobularia,
sunflowers, yellow bells, pride of Barbados, duranta and bat-faced
cuphea.
Vegetables: May is a great time to plant, from seed or nursery plants,
okra, sweet potatoes, cucumbers, winter squash, pumpkins, basil,
peppers, lima beans, eggplant, garlic chives and Malabar greens. If you
don’t want to dedicate an area of your yard, consider planting here and
there in your flowerbeds. Edible landscaping is a popular new trend!
Lawns: Water 1/2 to 1” of irrigation per week. A rain gauge or straight
sided container (such as a tuna fish can) will help you know how long
to run your irrigation system to apply 1/2”.
Weeding: Hand pull or hoe weeds while they are still young or better
yet, maintain a 3” layer of mulch in all vegetable and flowerbeds to
deter weeds from getting a start.
Pruning: Remove spent blooms on spring and summer annuals to
promote new blooms.
Fertilizing: Fertilize flowerbeds and vegetable gardens w/slow release
organic fertilizer.
Water: Deep soakings between rain events is better than frequent light
sprinkling.
Birds: Spring migration continues until mid-May. Clean bird feeders!
Replace water in bird baths to avoid creating mosquito breeding spots.

Albion Hurricanes FC (AHFC), established in 1989, is leading the way in
South Texas youth soccer by inspiring and developing young men and
women through world class coaching and innovative techniques, as well as
instilling the proper framework, self-esteem, confidence and sportsmanship
within our athletes. AHFC has multiple campuses in and around Houston.
The club invites all interested players from the ages of 7 to 18, to the Player
Evaluations and Tryouts to become part of our success. We ask that all

REGISTRATION NOW OPEN FOR 13 TH ANNUAL IMPACT A HERO 5K
An event that brings the community and combat veterans and their families together. Registration is
now open for the 13 th Annual Impact a Hero 5K, one of Impact a Hero’s major fundraising events of
the year. This year, the race will be held May 20, 2017 at the Constellation Field and will feature the
traditional 5K Run/Walk/Wheel and Kids 1K beginning at 7 AM.
The 5K registration is $25 for untimed and $35 for timed. The 5K wheel is $25. The Kids 1K is $15.
Prices increase on May 13 th and again on race day. Cash prizes will be awarded for the Men’s Open,
Men’s Master, Women’s Open and Women’s Master categories. Top fundraisers will also be awarded
prizes. Every registration will include an Impact a Hero 5K shirt, free fundraising page and entry

The Cy-Fair Educational Foundation (CFEF) will hold its 29 th Annual B. F. Adam Golf Classic at BlackHorse
Golf Club on May 11, 2017. For the past 7 years, Cypress Fairbanks Medical Center Hospital, a Cy-Fair
Educational Foundation Partner, has generously underwritten this tournament. Linebarger Goggan
Blair & Sampson and IBI Group have been Platinum Sponsors for more than 10 years. One of the
largest non-celebrity tournaments in the Houston area, the B.F. Adam Golf Classic is a prime example
of our trustees and community business partners working together to raise scholarship funds for
students of Cypress Fairbanks ISD. This tournament has successfully raised over 2.7 million dollars.
CFEF was established in 1970 as a non-profit to raise money to fund a scholarship for high school
graduates in the area. Over the past 46 years, the Foundation has grown tremendously through the
efforts of the Board of Trustees and the generosity of the Cy-Fair Community. The Foundation has
awarded more than $7 million in scholarships to 1,400 graduating seniors. CFEF is a 501(c)3 nonprofit
organization, all contributions are tax deductible, as allowed by the law.

ACTS of Wisdom grew out of founder Pastor Brad Otto’s experiences in
Ethiopia and the Book of Acts where an Ethiopian Eunuch asks the Apostle
Philip about Jesus. Philip is stunned that he doesn’t know, to which the
eunuch replies, “No one has ever taught me.” Part of the cycle of poverty
is not having access to quality education or having inadequate supplies
for education. 145 million children in the world do not have access to
education, yet children still dream of becoming doctors, lawyers and
teachers. At ACTS of Wisdom we believe every child, everywhere, should
have access to education and to teachers willing to take time to teach
them. Our hope is that through bettering the education opportunities of
children, we might be able to help end the cycle of poverty and begin to
have peace in our world.
BEAR CREEK-COPPERFIELD ROTARY CLUB
BENEFIT GOLF TOURNAMENT
The Bear Creek-Copperfield Rotary Club will hold its annual Benefit Golf
Tournament at Sterling Country Club on May 15, 2017. Shotgun start
at 12 PM. The funds raised will allow us to provide service projects and
support for multiple organizations such as Boys and Girls Country, Grace
Care, Special Pals and Education Enhancements for Campbell, Watkins and
Cardiff Middle schools. Openings for individual players, four person teams

The 14u and 16u Houston Lightning softball teams are hosting a golf
tournament on June 30 th at the Cypresswood Golf Club. This is a

CAMP CORNERSTONE IS THE PLACE TO BE THIS SUMMER
Camp Cornerstone is a week-long camp sponsored by Cornerstone United
Methodist Church and is for children ages 2 through the completion of
4 th grade. Children must be 2 by June 1, 2017. Camp hours are 9:30 AM-1
PM. There are 3 sessions throughout the summer and you are invited to
participate in any or all!
Session I - Rockin’ the USA! is June 12 th -16 th
Session II - Wacky Wilderness… is July 10 th -14 th
Session III - Ooey Gooey Fun is August 7 th -11 th
The cost per camp per child is $120. You may pay $60 now and the
remaining $60 on the first day of camp. Registration forms are online or in

SUMMER CAMPS AT EPIPHANY LUTHERAN CHURCH AND SCHOOL
It’s hard to believe that summer is almost here! Every year parents seem to relish the thought
of sleeping in and slowing down. But about two weeks into our summer routine, our kids are
bored and we are trying to figure out what to do to keep our children engaged and busy!
Epiphany Lutheran Church and School has your answer! We offer a variety of day camps for
youth from preschool through middle school! Our campus offers 3 day mini camps for our
preschool and Kindergarten students that meet Tuesdays through Thursdays from 9 AM-2 PM,
weekly dance classes and martial arts classes as well. These camps are filled with lots of fun
activities that incorporate STEM learning into their day. Elementary and Middle school students
have the options of week long camps that include soccer, robotics, chess and a video game
creation camps that teaches them how to create platforms and basic coding!

PEARL FINCHER MUSEUM OF FINE ARTS ANNOUNCES SUMMER CAMPS
The Pearl Fincher Museum of Fine Arts will host summer camps and other activities to make this
a fun-filled, artful summer for the entire community.
Summer Camps
Summer camps will be offered in June and July for ages 8 to 12 and 13 to 18. Camps will center
around themes of “Contemporary Art Through the Ages.” Each camp meets Monday through
Friday from 9 AM to Noon at the Pearl Fincher Museum of Fine Arts. Cost of the week-long
camps is $140 for members of the museum or $175 for non-members. Family memberships
to the museum are available for just $55. In collaboration with AAUW and Klein ISD, a special
camp will also be held once a week for students with visual impairments, as well as a camp for

In addition to summer camps, the Pearl has a fun-filled calendar of activities throughout the
summer for all ages. Highlights include free Family Days from 11 AM to 3 PM on May 13 th , June

Festival at Discovery Green is open to the public

and pageantry of the Kentucky Derby to the Katy

The Houston Crawfish, Crab & Grill Festival held at

May 19 th -21 st - Galveston Island Beach Revue.
During the 1920s and early 1930s, Galveston was
host to the Pageant of Pulchritude (predecessor to
the Miss Universe Pageant), which was resurrected
in 2009 as a two-day, family friendly event dubbed
the Galveston Island Beach Revue. New this year,
the event is featuring a speakeasy themed Friday
Revue Prevue featuring live music with Dandy
Wellington and His Band from New York City
and the official introduction of the 2017 Bathing
Beauties at Hotel Galvez. Friday events are at
Galvez Bar & Grill at Hotel Galvez while Saturday
events are adjacent to the hotel at Beach Central

June 3 rd - The AIA Sandcastle Competition is
a fund-raising event for AIA Houston and ArCH
Foundation as well as one of the top five revenue
generating events for the City of Galveston. This
year over 60 teams have their eyes and shovels set
on winning the prestigious Golden Bucket Award.
Firms begin months in advance generating ideas,
developing designs and assigning duties. On the
day of the event the teams, stretched along the
beach front, meticulously sculpt their piles of sand
and work non-stop for five hours. The event is held

AFTER SCHOOL CARE CLUB FOF, a Before & After School Program, is a
ministry of Church and Preschool providing before/after school care for
ages K-6 th grade. CFISD bus service to those in the Holmsley Elementary
School attendance zone. Hours available are 6:30 AM to bus pick up time
and again from bus drop off to 6:30 PM. Upon arrival, After-School Children
recite the Lord’s Prayer and ask God’s blessings before their afternoon

Epiphany Bingo has been conducting bingo games on the west side since February 14,
1986. Epiphany conducts their bingo games every Friday night except holidays. THERE IS
NO SMOKING ALLOWED DURING ALL BINGO GAMES. They have a jackpot game of $750.
Maximum prize giveaways of $2,500, allowed by law, are given away every Bingo Night!
They have security, lighted parking, big screen color monitor, computerized bingo

VOLUNTEERS NEEDED

FOSTER CHILDREN:
PREPARATION FOR ADULT LIVING (PAL)
When foster children reach age 18, they are considered independent.
That’s difficult for kids who have been wards of the state, with necessities
arranged by caseworkers with state funds. Now they’ll have to figure out
how to organize themselves and make their money last a whole month.
Fortunately, Child protective Services offers them a program to help
prepare for independence: Preparation for Adult Living (PAL). The year-long
course culminates in an all-day workshop hosted by the National Council
for Jewish Women (NCJW). The course is held at Junior Achievement’s
BizTown, using computer kiosks sponsored by local businesses.

Onion Dip
Ingredients:
1 - 8 oz block of cream cheese
1 bag frozen chopped onions
1 cup mayonnaise
1 cup shredded parmesan cheese
Directions:
Soften cream cheese in the microwave
and mix the remaining ingredients.
Bake at 350 degrees for about
25-30 minutes or until bubbly and
brown around the edges.
Buttermilk
Salad
Ingredients:
15.5 oz can Crushed Pineapple
2 - 3 oz packages Peach Jell-O
1 cup chopped Pecans
2 cups Buttermilk
8 oz carton Cool Whip
Directions:
In a medium saucepan, heat the
undrained pineapple until it reaches a
boil. Add the Jell-O and dissolve, stirring
well. Allow the mixture to cool and then
add the buttermilk. Continue to cool and
fold in the Cool Whip. Mix thoroughly
and congeal in a 9” x 13” pan.

This super yummy pasta salad was served at my parent’s retirement
party this past weekend, and was a huge hit! My coworker, Janey
Stults, hosted the party, and cooked every bit of the food served. Let
me tell you, this lady can cook! I promise you will enjoy this salad as
much as everyone at the party! Enjoy!
PS: Although I’ve designated this as the Featured Recipe, the recipes
across from this are from the party too. Yum!
Vermicelli Salad
1 (12oz.) package Vermicelli, cooked and drained
4 Tbsp olive oil
3 Tbsp lemon juice
½ tsp Allspice
On first day, combine cooked Vermicelli, olive oil, lemon
juice and allspice. Cover and refrigerate oernight.
2 cups mayonnaise
1 bell pepper, chopped
1 cup chopped celery
½ cup chopped onion
1- 4 oz jar pimiento
1 (6-8oz) can pitted ripe olives chopped
1- 5 oz can water chestnuts, drained and sliced
Salt and pepper to taste
