Please report any lights that are out, blinking or on during the day. 

Part of your annual Homeowners fee pays for your streetlights, 

whether they work or not. If a light is out in your area, please call

report it. Each light pole should have a 6-digit number on it. When 

reporting the light, you will need to provide the pole number and 

closest intersection or address. We want all our lights to work… a 

well lit area is a safe area!

CONSTABLE PATROL 

As a reminder, the Association has a patrol contract through Harris 

County Precinct 5 Constable. We share 40 hours of patrol per 

week at random time with Aberdeen Green HOA. Please add the 

following dispatch number to your cell phones or post in a visible 

place at home in case you need support in a non life-threatening 

situation. Their non-emergency dispatch number is 281-463-6666. 

The Constable Patrol also offers a free vacation watch service.

LOITERING AND VANDALISM 

Please help us to keep our recreation areas safe and clean by 

reporting any and all loitering after dark directly to the Constable

BOARD OF DIRECTORS MEETINGS 

The Board of Directors meet on a monthly basis and residents 

are welcome to attend. The Board generally meets at the 

West Houston Church of Christ on West Road, however 

reschedule dates and locations sometimes occur due to

PET POLICY AND ETIQUETTE 

We understand your pets are very important to you and want to be a pet friendly 

community. However, we have received many complaints that there are pet 

owners not following the rules of the community when it comes to pet etiquette. 

Please, be aware and make a conscious effort to the adhere to the following 

guidelines: • Only two pets per household - refer to governing documents 

regarding height and weight limits. • Pick up pet waste and discard properly. • 

Do not allow pets to roam around the community unrestrained - it’s the law! This 

includes cats too! • Do not allow dogs to bark continuously disturbing neighbors.

Happy National Brown-Bag-It Day! That’s right, 

May 25th is the day to celebrate the good old art 

of bringing your lunch from home. While checking 

out new places to eat by your office can be fun and 

sometimes grabbing a sandwich from the local deli 

feels like the easiest thing to do, packing your own 

lunch is a much healthier and less expensive choice. 

Even those healthy-seeming salads from the local cafe 

can hide some not-so-nutritious ingredients. 

Packing your own lunch for work may be more time 

consuming (although how long do you spend waiting 

in line at the sandwich shop?), but with some simple 

planning and a weekend trip to the grocery store, it 

can become an easy part of your routine. To help you 

on your way to a healthier lunchtime habit, we’ve 

created five easy lunch options for every day of the 

work week. With each bite, you’ll feed your body, calm 

your mind and rejuvenate for your afternoon! 

Brown Bag #1: Kale salad with radish greens and zesty 

lemon dressing 

After you’ve made it through your hectic Monday 

morning, treat yourself to this filling salad. Kale is 

an antioxidant-packed superfood that will help you 

detox from any weekend revelry, leaving your immune 

system recharged for the week ahead, while vitamin 

C-dense radish leaves rev up your immune system. This 

zesty lemon shallot dressing adds some inflammatory 

action for a revitalizing and nutritious lunch.

Brown Bag #2: Avocado on toast with seaweed chips 

Spread some hummus on whole wheat or glutenfree 

toast, then add a few slices of nutrient-packed 

avocado. Sprinkle with sea salt, pepper and a dash of

with fiber- and protein-rich seaweed chips. 

Brown Bag #3: Fruit salad with a side of mixed nuts 

For a middle-of-the-week energy boost, try this lunch 

of fruits and nuts. Choose immunity-boosting citrus, 

fiber-filled apples, potassium-packed bananas or 

antioxidant-dense berries. The natural sugars of the 

fruits will give you a steady energy boost. Go nuts 

with your nuts! Walnuts are filled with omega-3’s and 

antioxidants; almonds pack vitamin E, folic acid and 

tons of other vitamins and minerals; pistachios are 

high in fiber; cashews have bone-building magnesium; 

pecans can help ward off heart disease; Brazil nuts 

are bursting with selenium - and they’ll all give you 

enough protein to power through the afternoon. 

Brown Bag #4: Tomato-hummus sandwich paired with 

apple slices and almond butter 

This veggie sandwich swaps out the meat for a thick 

slice of heart-healthy tomato. Add a few slices of 

red or white onion and place between two slices of 

whole wheat or gluten-free bread, evenly spread 

with hummus. Add hunger-satisfying apple slices and 

protein-rich almond butter for a sweet side.

2016-2017 PRINCIPALS OF THE YEAR RECOGNIZED 

CFISD representatives for Region 4 Principal of the Year, Yvette Garcia of Holbrook Elementary School and Susan Higgins of Smith Middle School, were 

recognized during a Region 4 Principal Recognition Ceremony at Hotel ZaZa on April 5 th . Garcia and Higgins were both selected by their CFISD principal 

peers earlier in the spring to serve as district representatives for the honor. Garcia has 32 years of experience in education, including eight years as 

a CFISD principal at Francone (2009-2012) and Holbrook (2012-present) elementary schools. Higgins has 39 of experience in education, including 16 

years as a CFISD principal at Arnold (2001-2009) and Smith (2009-present) middle schools.

CFISD’S FAIR CREEK - 2017 CITY OF HOUSTON 

HIGH SCHOOL HOCKEY CHAMPIONS 

The 2016-2017 Interscholastic Hockey League(ISHL) season concluded 

on Friday, March 10 th with Cy-Fair’s Fair Creek HS team prevailing with a 

hard fought, dramatic 2-1 win over Cinco Ranch on the Frozen Surface at 

the Willowbrook Aerodrome. 

The Fair Creek HS Team whose players reside mainly in the Cypress area 

won the regular season league championship with a record of 17-4-1. 

Next up for the team was the 1 st round of the playoffs where Fair Creek 

defeated Klein 5-2 to advance to the round robin tournament. In the 

round robin, Fair Creek beat Memorial West 7-1, lost a nail biter to Cinco 

Ranch 1-2 and came back to beat Cy-Woods 6-3. The top 2 teams in the 

round robin would advance to the ISHL Championship Game. Those two 

were Fair Creek and Cinco Ranch, which would be a rematch of the Fair 

Creek’s only round robin loss. The matchup for the ISHL’s Justice Varsity 

High School Championship Cup was set in a one game winner take all. 

In the FINALS, Fair Creek came out strong with constant pressure in 

Cinco Ranch’s defensive end of the ice. Fair Creek’s only 2 goals of the 

game were scored by Sam Robinson 8 seconds apart in the 2 nd period. 

Fair Creek and Kingwood Senior Robinson’s 1 st goal was a one timer off 

a hustling Cy-Fair Junior Tyler McLeroy’s pinpoint pass. Robinson’s game 

winner came only 8 seconds later as he tallied his second goal from a 

lazer pass from Cy-Creek Senior Jaxon Sharp, which beat Cinco Ranch’s 

goalie Randy Miller. Miller was stout all night long stopping 35 shots and 

only allowing 2 to cross the goal line to keep Cinco in the game. Fair Creek 

ended up out shooting Cinco Ranch 37-13! 

This is Fair Creek’s 3 rd City Championship in the past 10 years….Jaxon 

Sharp’s 2 nd City Championship in his 4 year Varsity career, Tyler McLeroy’s 

2 nd High School Championship (one with his JV team in 2015 and with 

this year’s Varsity Championship) and Caleb was the 3 rd Newport 

brother (joining Nathan and Noah) from Langham Creek to win a City 

Championship with the Fair Creek team. 

The Fair Creek and 9 other High School teams in the Houston area will now 

play in the Spring /Summer recreational High School league with games 

on Sunday nights at the Willowbrook Aerodrome. The 2017-18 high 

school regular season will run from October ’17 - March ’18. For more

Bear Creek United Methodist Church School (BCUMCS) has been a 

leading preschool in this community for more than 30 years. We offer

The Genesis Academy is registering for the 2017-2018 school year.

ST. CUTHBERT EPISCOPAL SCHOOL 

2017-2018 REGISTRATION 

St. Cuthbert Episcopal School’s 2017-2018 registration is underway and 

will continue each day during school hours until all of our classes are filled. 

We offer 2, 3 or 5 day classes, including a Bridge/Kindergarten class. St. 

Cuthbert School enrolls students ages 18 months through 5 years. School 

hours are Monday-Thursday, 9 AM to 2 PM and Friday, 9 AM to 12 noon. 

Our Bridge/Kindergarten program is designed for children who are not quite 

ready for kindergarten. This class allows children to succeed at learning 

with greater ease and confidence, by helping them bridge academic and 

developmental gaps. The St. Cuthbert School program provides a loving, 

Christian environment offering the children weekly chapel, as well as music 

and movement, library and computer classes. Our curriculum includes 

Handwriting without Tears, Reading A-Z, Math and Science. The program

TEXAS CHRISTIAN SCHOOL IS UNDER CONSTRUCTION 

Texas Christian School has been educating infants-12 th grade for over 25 

years. Due to the school’s increase in enrollment, a new building is being 

built to house more students as well as have additional gym space, workout

project as they continue to educate and inspire the leaders of tomorrow.

ROSEHILL CHRISTIAN SCHOOL 

We give all of the glory to God for our victories at the TAPPS State Academic, 

Debate & Speech Championships which were held April 3 rd -5 th at the Waco 

Convention Center. As a team, RCS placed third overall out of all TAPPS 3A 

schools. This was our first year returning to 3A and the competition was 

very stiff. Though RCS came in 3 rd , we narrowly missed winning the entire 

championship by a mere 12 points, crushing our point total from last 

year by over 40 points. More than that, RCS was the STATE CHAMPION in 

Speech. We placed in more events than ever before, events that RCS has 

never even placed in before. RCS claimed seven individual state titles in 

various events. Senior Rachel Buckhoff, who earned three gold medals and 

one bronze, was also awarded the prestigious “Virginia WIrth Distinguished 

Speaker Award” given to the top speech competitor in the entire state.

PEANUTS CHARACTERS DELIGHT AUDIENCES IN CCS SPRING MUSICAL 

The CCS Fine Arts Department presented four magical performances of the classic “You’re a Good Man, Charlie Brown.” Audiences were delighted watching 

the lovable Peanuts characters come to life through the talented fine arts students - both on stage and backstage. Some crowd favorites were “My Blanket 

and Me,” Linus’ ode to his beloved blanket, “Beethoven Day,” Schroeder’s rocking tribute to the great Ludwig van Beethoven and “The Baseball Song,” which 

tells the endearing story of Charlie Brown’s epic strike out. Of course audiences were also charmed by Lucy’s failed attempt to gain Schroeder’s interest in 

the song “Schroeder,” Sally’s philosophical musings in “My New Philosophy” and Snoopy’s eleventh hour Fosse turned gospel number, “Suppertime.” This 

production was entered in the Tommy Tune Awards and while the cast and crew are anxious for nominations to come out, they are all confident in the fact 

that no matter what happens, they put on a fabulous and successful show that brought glory and honor to our Heavenly Father. Please view the photos of

CCS SWIMMERS COMPETE WELL WITH JONES SETTING STATE RECORD 

Forty schools were represented at the Division III Swimming Championships and in combined scores for the boys and girls, Cypress Christian finished 

ninth. This was a tremendous finish for the small team of eight swimmers. The highlight of the meet was freshman Elliott Jones’ wall-to-wall victory in the 

100-yard backstroke that set a new TAPPS state record with a time of 53.12. Elliott also finished fourth in the 200 individual medley with an outstanding 

time of 1:58.68. During the state meet, Elliott was presented with the boys Regional Swimmer of the Meet Award for the TAPPS East Texas Region.

10 WAYS TO PREVENT HEAT STROKE IN STUDENT-ATHLETES 

By DAVID JANDA, M.D. 

During one four year period, eighteen student-athletes died from heat stroke. 

It is imperative that, as parents, we recognize the signs of heat-related illness 

and take steps to prevent any more tragedies. Here are ten ways to prevent heat 

stroke among football players, guidelines that are applicable to every sport and 

recreational activity. • Acclimatize to heat gradually. Practices for the first 14 days 

should be shorter and less intense, as should practices on abnormally hot or humid 

days. In addition athletes should be encouraged to initiate their own conditioning 

program several months prior to the beginning of the season. During the hottest 

weather practice sessions should be scheduled in cooler parts of the day. • Account 

for heat and humidity. Both the temperature and relative humidity should be taken 

into account in determining the length of practice sessions. It has been suggested 

that if the sum of the temperature and relative humidity are greater than or equal to 

160, special precautions must be taken. If the sum is greater than 180, practice and 

or games should be cancelled. • Provide for frequent breaks. Adjust the activity 

level and provide frequent rest periods during hot weather (at least 15 minutes per 

hour of practice). Athletes should rest in shaded areas; helmets should be removed, 

and jerseys should be loosened or removed. • Rehydrate. Cold water or sports 

drinks should be available in unlimited quantities to players. Scheduled water 

breaks should be strictly enforced. • No salt tablets. Salt should be replaced through 

salting of food, not salt tablets. • Weigh athletes before and after practice. Athletes 

should be weighed before and after each practice to monitor water loss. Weight 

loss greater than 3% indicates a substantial risk and 5% a significant danger to the 

student athlete. • No heavy or wet clothing. During practice athletes should wear 

cooling clothing such as shorts and fish net jerseys. Sweat saturated t-shirts should 

be changed often because they retain heat. Helmets should only be used sparingly in 

hot weather. • Parent monitoring. Parents should monitor all practices and games, 

with the responsibility shared on a rotating basis among all parents of student 

athletes. If a parent observes an unsafe situation developing, he or she should 

immediately bring it to the attention of the coach. • Identify athletes at greater 

risk. Some athletes are more susceptible to heat illness than others. Identify and 

observe closely those at greatest risk of heat illness, including those who are poorly 

conditioned, overweight, have an acute illness, or have cystic fibrosis, diabetes, or 

mental retardation. Student athletes with a previous history of heat illness should 

be watched closely during practices and hot weather. • Learn the warning signs. It 

is imperative that all coaches, parents, and players are on the lookout for signs 

of dehydration or heat illness, such as fatigue, lethargy, inattention, stupor, and/ 

or awkwardness. An athlete exhibiting any of these signs should be immediately 

removed from participation, cooled down and placed in a shaded environment.

Scouting News 

COPPER CREEK MEADOWS COMMUNITY 

GIRL SCOUTS OF SAN JACINTO COUNCIL 

Leaders and their daughters had a terrific weekend together at 

our annual Leader-Daughter event in April. There was wonderful 

weather for all the outdoor activities! When those attending got 

tired of kayaking or playing in the river, conditions were just right 

for basking in the sun on the riverbank! There were crafts and 

campfires, singing, s’mores, zip lines and many other activities, 

good food and a chance to kick back and relax together at camp. 

The hit of this year’s talent show was a hilarious “synchronized 

swim” routine. Our Dutch oven cook-off produced a number of 

tasty results. This year’s delicious winner was called “Bye, Bye, Miss 

American Pie.” Each year, campers take judging this contest VERY 

seriously and make sure to sample each entry. Many thanks to Julie 

Mayer and her volunteers for another great event! 

Troop 113005 has been working on learning the Girl Scout Law. 

They made a cute craft to help them memorize the Law! Troop 

113009 learned about space and how some characteristic traits 

can be used for good or evil. The earned their “Scouts Rule the 

Galaxy”patch. They also demonstrated their skill with light sabers! 

Troop 113035 is working on remodeling the butterfly garden at 

Lowery Elementary. 

Our final Community event for the year will be a Bridging ceremony 

in May. At this time, troops moving on to the next level of Girl 

Scouting are recognized and celebrated. 

Summer, of course, is the time for Girl Scout Camp. San Jacinto 

Council offers resident, day and twilight camps for Girl Scouts of all 

ages. Some of the money earned by Girl Scout Cookie Sales helps 

to support our camps and programs. At camp, girls learn to make 

new friends, learn new outdoor skills and improve the skills they 

acquired LAST year! Camp is where you learn all those silly camp 

songs and traditions and learn more about all the things that Girl 

Scouts do. Camp is also the place that you DO them! 

Girl Scouting is open to all girls ages 5 (must be in kindergarten) 

through 18, who are willing to accept the Girl Scout Promise and 

Law. Girls may join at any level and no previous Scouting experience 

is required. Older girls, whose schedules do not allow for troop 

activities may join as individually registered Girl Scouts. Don’t 

forget that many of our most exciting opportunities are available 

to older girls. 

Copper Creek Meadows Community serves girls in the residence 

areas for the elementary schools listed below, as well as the 

corresponding middle and high schools. Home schooled and 

private school students are always welcome.

BOY SCOUTS OF AMERICA - COPPERHEAD DISTRICT 

For 100 years, Scouting programs have instilled in youth the values 

found in the Scout Oath and Scout Law. Today, these values are just 

as relevant in helping youth grow to their full potential as they were 

in 1910. Scouting helps youth develop academic skills, self-confidence, 

ethics, leadership skills, outdoor skills and citizenship skills that 

influence their adult lives. 

The Boy Scouts of America provides youth with programs and activities 

that allow them to:

• Provide service to others. 

• Build self-confidence. 

• Reinforce ethical standards. 

Scouting provides youth with a sense that they are important as 

individuals while promoting activities that lead to personal responsibility 

and high self-esteem. As a result, when hard decisions have to be made, 

peer pressure can be resisted and the right choices can be made. 

Scouting provides a rewarding experience for boys ages 5 to 21. Scouting 

through the local Packs and Troops teach outdoor and life skills which help 

our youth Be Prepared. Your area is serviced by the BSA Sam Houston Area 

Counsel - Copperhead District which includes 23 Cub Scout Packs (boys 5 

to 10 years old), 13 Troops (boys from 11 to 18 years old) and 10 Venturing 

units (boys and girls from 14 to 21). Our Units typically meet weekly. 

Many of our units are supported by the local Elementary Schools

BOY SCOUT TROOP 61 

Young men between the ages of 11-18 are encouraged to visit Boy 

Scout Troop 61 at 7:00 PM Wednesday nights at Peace Community

will get a hands-on experience of what Scouting has to offer and have 

the opportunity to visit with the Scouts and their adult leaders to 

learn more about the things the troop has done during meetings and

ACTS of Wisdom grew out of founder Pastor Brad Otto’s experiences in 

Ethiopia and the Book of Acts where an Ethiopian Eunuch asks the Apostle 

Philip about Jesus. Philip is stunned that he doesn’t know, to which the 

eunuch replies, “No one has ever taught me.” Part of the cycle of poverty 

is not having access to quality education or having inadequate supplies 

for education. 145 million children in the world do not have access to 

education, yet children still dream of becoming doctors, lawyers and 

teachers. At ACTS of Wisdom we believe every child, everywhere, should 

have access to education and to teachers willing to take time to teach 

them. Our hope is that through bettering the education opportunities of 

children, we might be able to help end the cycle of poverty and begin to 

have peace in our world.

The Bear Creek-Copperfield Rotary Club will hold its annual Benefit Golf

HOUSTON LIGHTNING SOFTBALL - GOLF TOURNAMENT 

The 14u and 16u Houston Lightning softball teams are hosting a golf 

tournament on June 30 th at the Cypresswood Golf Club. This is a 

fundraising opportunity for both teams of young women to help pay for 

their national travels to play some of the best teams in the country so 

they can bring trophies back home to the Houston area.

SUMMER CAMPS - EPIPHANY LUTHERAN CHURCH & SCHOOL 

It’s hard to believe that summer is almost here! Every year parents seem 

to relish the thought of sleeping in and slowing down. But about two 

weeks into our summer routine, our kids are bored and we are trying to 

figure out what to do to keep our children engaged and busy! 

Epiphany Lutheran Church and School has your answer! We offer a 

variety of day camps for youth from preschool through middle school! 

Our campus offers 3 day mini camps for our preschool and Kindergarten 

students that meet Tuesdays through Thursdays from 9 AM-2 PM, 

weekly dance classes and martial arts classes as well. These camps 

are filled with lots of fun activities that incorporate STEM learning into 

their day. Elementary and Middle school students have the options of 

week long camps that include soccer, robotics, chess and a video game 

creation camps that teaches them how to create platforms and basic

PEARL FINCHER MUSEUM OF FINE ARTS - SUMMER CAMPS 

The Pearl Fincher Museum of Fine Arts will host summer camps and 

other activities to make this a fun-filled, artful summer for the entire 

community. 

Summer Camps 

Summer camps will be offered in June and July for ages 8 to 12 and 13 

to 18. Camps will center around themes of “Contemporary Art Through 

the Ages.” Each camp meets Monday through Friday from 9 AM to 

Noon at the Pearl Fincher Museum of Fine Arts. Cost of the week-long

NATURE PROGRAMS FOR PRESCHOOL-AGED CHILDREN 

SATURDAYS IN NATURE: This program is held on the second Saturday 

of each month at the Edith L. Moore Nature Sanctuary. Arrive anytime 

between 9 and 11:30 AM. The program ends at 12 noon. A guided 

nature walk will begin at 10 AM. No reservations required. Donations 

are encouraged. This is a “whole family” program; parents or other

THE TITMOUSE CLUB: The Titmouse Club is a nature program for children 

ages 2 ½ to 5 sponsored by the Houston Audubon Docent Guild. The

from mid-September until mid-May at the Edith L. Moore Nature Sanctuary, 

440 Wilchester Boulevard. Each week features a different nature theme 

and may include nature talks, stories, hands-on activities and walks in the

Mother’s Day has its roots in ancient Greek festivals honoring Rhea, the 

Mother of the Gods. The modern American holiday officially began in 

1914, when President Woodrow Wilson declared the second Sunday in

C3 Presents shall bring forth the adventure of Middlelands, the brainchild of 

the two global event companies. This “Adventure for the Ages” will come to

culture festival in Texas? 3,000 hours of entertaining activities over 1.2 million 

May 19th-21st - Galveston Island Beach Revue. During the 1920s and early 

1930s, Galveston was host to the Pageant of Pulchritude (predecessor to the 

Miss Universe Pageant), which was resurrected in 2009 as a two-day, family 

friendly event dubbed the Galveston Island Beach Revue. New this year, 

the event is featuring a speakeasy themed Friday Revue Prevue featuring 

live music with Dandy Wellington and His Band from New York City and the 

official introduction of the 2017 Bathing Beauties at Hotel Galvez. Friday 

events are at Galvez Bar & Grill at Hotel Galvez while Saturday events are 

adjacent to the hotel at Beach Central and events are free to the public. 

On Sunday, Brunch at Hotel Galvez is continuing the vintage theme with

June 3rd - The AIA Sandcastle Competition is a fund-raising event for 

AIA Houston and ArCH Foundation as well as one of the top five revenue 

generating events for the City of Galveston. This year over 60 teams have 

their eyes and shovels set on winning the prestigious Golden Bucket Award. 

Firms begin months in advance generating ideas, developing designs and 

assigning duties. On the day of the event the teams, stretched along the 

beach front, meticulously sculpt their piles of sand and work non-stop for 

five hours. The event is held at East Beach in Galveston from 10 AM-5 PM

EPIPHANY BINGO 

Epiphany Bingo has been conducting bingo games on the west side 

since February 14, 1986. Epiphany conducts their bingo games every 

Friday night except holidays. THERE IS NO SMOKING ALLOWED DURING 

ALL BINGO GAMES. They have a jackpot game of $750. Maximum prize 

giveaways of $2,500, allowed by law, are given away every Bingo 

Night! They have security, lighted parking, big screen color monitor, 

computerized bingo equipment, snack bar and large cash prizes. Profits 

are used for charitable outreach programs, building expansion, and 

payment towards debt. Epiphany Catholic Church conducts its bingo 

games at the Church Community Center, 1530 Norwalk Dr. (between 

Fry and Mason Roads, south of I-10 behind Nottingham Subdivision) 

off Highland Knolls every Friday night. Early bird games begin at 7:30

At St. Bartholomew the Apostle Catholic Church in downtown Katy, 

“BINGO” is being played in our Parish Hall every Friday evening except 

Holidays. Doors open at 7:00 PM, games start at 7:15 PM with four Early

VERMICELLI SALAD 

1 (12oz.) package Vermicelli, cooked and drained 

4 Tbsp olive oil 

3 Tbsp lemon juice 

½ Tsp Allspice 

On first day, combine cooked Vermicelli, olive oil, lemon 

juice and allspice. Cover and refrigerate overnight. 

2 Cups mayonnaise 

1 bell pepper, chopped 

1 cup chopped celery 

½ cup chopped onion 

1 4ounce jar pimiento 

1 ( 6-8ox) can pitted ripe olives chopped 

1 5 oz can water chestnuts, drained and sliced 

Salt and pepper to taste 

Optional: 2 ½ cup canned ham, cooked chicken breast, 

shrimp, or cooked hambuger 

Second day, add the rest of ingredients 

and mix well refrigerate.

2lbs cooked shrimp 

1.5 lbs. cooked white fish (cod) 

Pico 

6 tomatoes 

1/2 red onion 

2 cloves garlic 

cilantro to taste 

1 minced jalapeno 

juice on one lime 

salt, pepper, garlic powder to taste 

Mix pico and shredded fish. Marinate in the juice 

of 4 to 6 limes. Better if you make ahead one day. 

Serve on tostada with jalapeno ranch dressing, 

avocado, minced jalapeno. 

NEIMAN MARCUS BROWNIES 

1 box butter pecan cake mix (Betty Crocker) 

or Choc. cake mix 

1 cup softened butter 

3 eggs 

1 (8 oz.) package cream cheese, softened 

1 tsp. vanilla extract 

1 pound box powdered sugar 

1 1/2 cups chopped pecans 

Preheat oven to 300 degrees. Grease and flour a 9 x 13 

inch cake pan. Mix cake mix, 1/2 cup butter and 1 egg. 

Press into pan. In a separate bowl, combine softened 

cream cheese, 1/2 c. butter, remaining 2 eggs, vanilla and 

powdered sugar until smooth. Pour over cake mixture. 

Sprinkle top with pecans. Bake about 55 minutes or until 

filling appears set when pan is gently shaken. Cool 

completely on wire rack. Cut into bars of desired size.
