PARKING<br />
Over the last several months the Board has received several complaints<br />
about vehicles parking on the streets within <strong>Lone</strong> <strong>Oak</strong>. For the overall<br />
safety of our residents, as well as ensuring emergency vehicles are<br />
able to quickly maneuver through our streets, the Board has asked<br />
the deputies patrolling <strong>Lone</strong> <strong>Oak</strong> to address any/all vehicle violations;<br />
including speeding and parking. Section 7 of the Texas Drivers Handbook<br />
covers parking and states:<br />
DO NOT PARK VEHICLES:<br />
• In front of a public or private driveway.<br />
• Within 15 feet of a fire hydrant.<br />
• Within 20 feet of a crosswalk at an intersection.<br />
• Within 30 feet upon the approach to any flashing signal, stop sign, yield<br />
sign or other traffic control signal located at the side of a roadway.<br />
• Do not park more than 18 inches from the curb or in a way that obstructs<br />
the flow of traffic.<br />

DEED RESTRICTIONS<br />
• Please make sure to address yard care such as mowing, edging, removal<br />
of weeds and trimming of overgrown shrubs and bushes.<br />
• Architectural Review - prior to starting any project, please review the<br />
Declarations of Covenants, Conditions and Restrictions for <strong>Lone</strong> <strong>Oak</strong>.<br />
Please remember that all improvements to the exterior of your home<br />
or other structures in your yard must be approved by the Architectural<br />
Review Committee (ARC) prior to commencement. The ARC forms are<br />
available from PCMI.<br />

TRASH PICK-UP DAYS<br />
Wednesdays and Saturdays are the <strong>Lone</strong><br />
<strong>Oak</strong> scheduled trash pick-up days. Please do<br />
not set your garbage out early. We continue<br />
to see many residents put trash out 2-3 days<br />
before trash day. Please keep your garbage out<br />
of sight until the night before or the day of the<br />
scheduled pick up. Also, please be courteous<br />
and do not block the sidewalks with your bags<br />
and or trash bins and remove them in a timely<br />
manner after pick up.<br />
HIT THE BRAKES…<br />
Speeding in <strong>Lone</strong> <strong>Oak</strong> has been a hot topic of discussion lately. There have<br />
been numerous reports of speeding and of running stop signs. We have<br />
notified the Sheriff of these reports and have asked that tickets be issued<br />
to offenders. Several surrounding schools and residents have purchased<br />
kid alert safety signs to be placed in front of their homes and or buildings<br />
to remind people to slow down. If you would like to purchase a safety<br />

residents to become involved in the<br />
<strong>Lone</strong> <strong>Oak</strong> Crime Watch Program. More<br />
Block Captains are needed! Each Block<br />
Captain is responsible for contacting<br />
the residents who are assigned to them when there is information to<br />
pass along regarding incidents in <strong>Lone</strong> <strong>Oak</strong> or surrounding areas. Most<br />
Block Captains set up their distribution list via email, so it is important<br />
for residents to know who their Block Captain is. The time required is<br />
minimal - attend a few periodic meetings, distribute information, be<br />
aware of happenings in your neighborhood and host a National Night Out<br />
Party once a year! If you would like to volunteer or would just like more<br />
information, please contact your Board.<br />
REPORT A STREETLIGHT OUTAGE<br />
CenterPoint Energy maintains streetlights throughout our electric<br />
service territory in and around Houston. Click on the link below to report<br />
a streetlight outage. You will be asked to provide:<br />
• a pole number for the non-functioning lights you want to report<br />
• contact information (in case more information is needed to locate a<br />
streetlight)<br />
• an email address (if you want feedback regarding your repair request)<br />

MEMORIAL DAY<br />
MONDAY, MAY 29, <strong>2017</strong><br />
Memorial Day is observed on the last Monday of <strong>May</strong>. It was formerly<br />
known as Decoration Day and commemorates all men and women who<br />
have died in military service for the United States. Many people visit<br />
cemeteries and memorials on Memorial Day and it is traditionally seen<br />
as the start of the summer season.<br />
What Do People Do?<br />
It is traditional to fly the flag of the United States at half staff from dawn<br />
until noon. Many people visit cemeteries and memorials, particularly to<br />
honor those who have died in military service. Many volunteers place<br />
an American flag on each grave in national cemeteries. Memorial Day is<br />
combined with Jefferson Davis’ Birthday in Mississippi.<br />
Free Estimates<br />
Memorial Day has become less of an occasion of remembrance. Many<br />
people choose to hold picnics, sports events and family gatherings on<br />
this weekend. This day is traditionally seen as the start of the summer<br />
season for cultural events. For the fashion conscious, it is seen as<br />
acceptable to wear white clothing, particularly shoes from Memorial Day<br />
until Labor Day. However, fewer and fewer people follow this rule and<br />
many wear white clothing throughout the year.<br />
Public Life<br />
Memorial Day is a federal holiday. All non-essential Government offices<br />
are closed, as are schools, businesses and other organizations. Most<br />
public transit systems do not run on their regular schedule. Many people<br />
see Memorial Day weekend as an opportunity to go on a short vacation<br />
or visit family or friends. This can cause some congestion on highways<br />
and at airports.<br />
Background<br />
Memorial Day started as an event to honor Union soldiers who had died<br />
during the American Civil War. It was inspired by the way people in the<br />
Southern states honored their dead. After World War I, it was extended<br />
to include all men and women who died in any war or military action.<br />
Memorial Day was originally known as Decoration Day. The current name<br />
for this day did not come into use until after World War II. Decoration Day<br />
and then Memorial Day used to be held on <strong>May</strong> 30 th , regardless of the day<br />
of the week, on which it fell. In 1968, the Uniform Holidays Bill was passed<br />
as part of a move to use federal holidays to create three-day weekends.<br />
This meant that that, from 1971, Memorial Day holiday has been officially<br />
observed on the last Monday in <strong>May</strong>. However, it took a longer period for<br />
all American states to recognize the new date.<br />

CFISD representatives for Region 4 Principal of the Year, Yvette Garcia of Holbrook Elementary School and Susan Higgins of Smith Middle School, were<br />
recognized during a Region 4 Principal Recognition Ceremony at Hotel ZaZa on April 5 th . Garcia and Higgins were both selected by their CFISD principal<br />
peers earlier in the spring to serve as district representatives for the honor. Garcia has 32 years of experience in education, including eight years as<br />
a CFISD principal at Francone (2009-2012) and Holbrook (2012-present) elementary schools. Higgins has 39 of experience in education, including 16<br />
years as a CFISD principal at Arnold (2001-2009) and Smith (2009-present) middle schools.<br />

CFISD’S FAIR CREEK - <strong>2017</strong> CITY OF HOUSTON<br />
HIGH SCHOOL HOCKEY CHAMPIONS<br />
The 2016-<strong>2017</strong> Interscholastic Hockey League(ISHL) season concluded<br />
on Friday, March 10 th with Cy-Fair’s Fair Creek HS team prevailing with a<br />
hard fought, dramatic 2-1 win over Cinco Ranch on the Frozen Surface at<br />
the Willowbrook Aerodrome.<br />
The Fair Creek HS Team whose players reside mainly in the Cypress area<br />
won the regular season league championship with a record of 17-4-1.<br />
Next up for the team was the 1 st round of the playoffs where Fair Creek<br />
defeated Klein 5-2 to advance to the round robin tournament. In the<br />
round robin, Fair Creek beat Memorial West 7-1, lost a nail biter to Cinco<br />
Ranch 1-2 and came back to beat Cy-Woods 6-3. The top 2 teams in the<br />
round robin would advance to the ISHL Championship Game. Those two<br />
were Fair Creek and Cinco Ranch, which would be a rematch of the Fair<br />
Creek’s only round robin loss. The matchup for the ISHL’s Justice Varsity<br />
High School Championship Cup was set in a one game winner take all.<br />
In the FINALS, Fair Creek came out strong with constant pressure in<br />
Cinco Ranch’s defensive end of the ice. Fair Creek’s only 2 goals of the<br />
game were scored by Sam Robinson 8 seconds apart in the 2 nd period.<br />
Fair Creek and Kingwood Senior Robinson’s 1 st goal was a one timer off<br />
a hustling Cy-Fair Junior Tyler McLeroy’s pinpoint pass. Robinson’s game<br />
winner came only 8 seconds later as he tallied his second goal from a<br />
lazer pass from Cy-Creek Senior Jaxon Sharp, which beat Cinco Ranch’s<br />
goalie Randy Miller. Miller was stout all night long stopping 35 shots and<br />
only allowing 2 to cross the goal line to keep Cinco in the game. Fair Creek<br />
ended up out shooting Cinco Ranch 37-13!<br />
This is Fair Creek’s 3 rd City Championship in the past 10 years….Jaxon<br />
Sharp’s 2 nd City Championship in his 4 year Varsity career, Tyler McLeroy’s<br />
2 nd High School Championship (one with his JV team in 2015 and with<br />
this year’s Varsity Championship) and Caleb was the 3 rd Newport<br />
brother (joining Nathan and Noah) from Langham Creek to win a City<br />

ROSEHILL CHRISTIAN SCHOOL<br />
We give all of the glory to God for our victories at the TAPPS State Academic,<br />
Debate & Speech Championships which were held April 3 rd -5 th at the Waco<br />
Convention Center. As a team, RCS placed third overall out of all TAPPS 3A<br />
schools. This was our first year returning to 3A and the competition was<br />
very stiff. Though RCS came in 3 rd , we narrowly missed winning the entire<br />
championship by a mere 12 points, crushing our point total from last<br />
year by over 40 points. More than that, RCS was the STATE CHAMPION in<br />
Speech. We placed in more events than ever before, events that RCS has<br />
never even placed in before. RCS claimed seven individual state titles in<br />
various events. Senior Rachel Buckhoff, who earned three gold medals and<br />
one bronze, was also awarded the prestigious “Virginia WIrth Distinguished<br />
Speaker Award” given to the top speech competitor in the entire state.<br />

PEANUTS CHARACTERS DELIGHT AUDIENCES IN CCS SPRING MUSICAL<br />
The CCS Fine Arts Department presented four magical performances of the classic “You’re a Good Man, Charlie Brown.” Audiences were delighted watching<br />
the lovable Peanuts characters come to life through the talented fine arts students - both on stage and backstage. Some crowd favorites were “My Blanket<br />
and Me,” Linus’ ode to his beloved blanket, “Beethoven Day,” Schroeder’s rocking tribute to the great Ludwig van Beethoven and “The Baseball Song,” which<br />
tells the endearing story of Charlie Brown’s epic strike out. Of course audiences were also charmed by Lucy’s failed attempt to gain Schroeder’s interest in<br />
the song “Schroeder,” Sally’s philosophical musings in “My New Philosophy” and Snoopy’s eleventh hour Fosse turned gospel number, “Suppertime.” This<br />
production was entered in the Tommy Tune Awards and while the cast and crew are anxious for nominations to come out, they are all confident in the fact<br />
that no matter what happens, they put on a fabulous and successful show that brought glory and honor to our Heavenly Father. Please view the photos of<br />

CCS SWIMMERS COMPETE WELL WITH JONES SETTING STATE RECORD<br />
Forty schools were represented at the Division III Swimming Championships and in combined scores for the boys and girls, Cypress Christian finished<br />
ninth. This was a tremendous finish for the small team of eight swimmers. The highlight of the meet was freshman Elliott Jones’ wall-to-wall victory in the<br />
100-yard backstroke that set a new TAPPS state record with a time of 53.12. Elliott also finished fourth in the 200 individual medley with an outstanding<br />
time of 1:58.68. During the state meet, Elliott was presented with the boys Regional Swimmer of the Meet Award for the TAPPS East Texas Region.<br />

10 WAYS TO PREVENT HEAT STROKE IN STUDENT-ATHLETES<br />

During one four year period, eighteen student-athletes died from heat stroke.<br />
It is imperative that, as parents, we recognize the signs of heat-related illness<br />
and take steps to prevent any more tragedies. Here are ten ways to prevent heat<br />
stroke among football players, guidelines that are applicable to every sport and<br />
recreational activity. • Acclimatize to heat gradually. Practices for the first 14 days<br />
should be shorter and less intense, as should practices on abnormally hot or humid<br />
days. In addition athletes should be encouraged to initiate their own conditioning<br />
program several months prior to the beginning of the season. During the hottest<br />
weather practice sessions should be scheduled in cooler parts of the day. • Account<br />
for heat and humidity. Both the temperature and relative humidity should be taken<br />
into account in determining the length of practice sessions. It has been suggested<br />
that if the sum of the temperature and relative humidity are greater than or equal to<br />
160, special precautions must be taken. If the sum is greater than 180, practice and<br />
or games should be cancelled. • Provide for frequent breaks. Adjust the activity<br />
level and provide frequent rest periods during hot weather (at least 15 minutes per<br />
hour of practice). Athletes should rest in shaded areas; helmets should be removed,<br />
and jerseys should be loosened or removed. • Rehydrate. Cold water or sports<br />
drinks should be available in unlimited quantities to players. Scheduled water<br />
breaks should be strictly enforced. • No salt tablets. Salt should be replaced through<br />
salting of food, not salt tablets. • Weigh athletes before and after practice. Athletes<br />
should be weighed before and after each practice to monitor water loss. Weight<br />
loss greater than 3% indicates a substantial risk and 5% a significant danger to the<br />
student athlete. • No heavy or wet clothing. During practice athletes should wear<br />
cooling clothing such as shorts and fish net jerseys. Sweat saturated t-shirts should<br />
be changed often because they retain heat. Helmets should only be used sparingly in<br />
hot weather. • Parent monitoring. Parents should monitor all practices and games,<br />
with the responsibility shared on a rotating basis among all parents of student<br />
athletes. If a parent observes an unsafe situation developing, he or she should<br />
immediately bring it to the attention of the coach. • Identify athletes at greater<br />
risk. Some athletes are more susceptible to heat illness than others. Identify and<br />
observe closely those at greatest risk of heat illness, including those who are poorly<br />
conditioned, overweight, have an acute illness, or have cystic fibrosis, diabetes, or<br />
mental retardation. Student athletes with a previous history of heat illness should<br />

COPPER CREEK MEADOWS COMMUNITY<br />
GIRL SCOUTS OF SAN JACINTO COUNCIL<br />
Leaders and their daughters had a terrific weekend together at<br />
our annual Leader-Daughter event in April. There was wonderful<br />
weather for all the outdoor activities! When those attending got<br />
tired of kayaking or playing in the river, conditions were just right<br />
for basking in the sun on the riverbank! There were crafts and<br />
campfires, singing, s’mores, zip lines and many other activities,<br />
good food and a chance to kick back and relax together at camp.<br />
The hit of this year’s talent show was a hilarious “synchronized<br />
swim” routine. Our Dutch oven cook-off produced a number of<br />
tasty results. This year’s delicious winner was called “Bye, Bye, Miss<br />
American Pie.” Each year, campers take judging this contest VERY<br />
seriously and make sure to sample each entry. Many thanks to Julie<br />
<strong>May</strong>er and her volunteers for another great event!<br />
Troop 113005 has been working on learning the Girl Scout Law.<br />
They made a cute craft to help them memorize the Law! Troop<br />
113009 learned about space and how some characteristic traits<br />
can be used for good or evil. The earned their “Scouts Rule the<br />
Galaxy”patch. They also demonstrated their skill with light sabers!<br />
Troop 113035 is working on remodeling the butterfly garden at<br />
Lowery Elementary.<br />
Our final Community event for the year will be a Bridging ceremony<br />
in <strong>May</strong>. At this time, troops moving on to the next level of Girl<br />
Scouting are recognized and celebrated.<br />
Summer, of course, is the time for Girl Scout Camp. San Jacinto<br />
Council offers resident, day and twilight camps for Girl Scouts of all<br />
ages. Some of the money earned by Girl Scout Cookie Sales helps<br />
to support our camps and programs. At camp, girls learn to make<br />
new friends, learn new outdoor skills and improve the skills they<br />
acquired LAST year! Camp is where you learn all those silly camp<br />
songs and traditions and learn more about all the things that Girl<br />
Scouts do. Camp is also the place that you DO them!<br />
Girl Scouting is open to all girls ages 5 (must be in kindergarten)<br />
through 18, who are willing to accept the Girl Scout Promise and<br />
Law. Girls may join at any level and no previous Scouting experience<br />
is required. Older girls, whose schedules do not allow for troop<br />
activities may join as individually registered Girl Scouts. Don’t<br />
forget that many of our most exciting opportunities are available<br />
to older girls.<br />
Copper Creek Meadows Community serves girls in the residence<br />
areas for the elementary schools listed below, as well as the<br />
corresponding middle and high schools. Home schooled and<br />
private school students are always welcome.<br />

BOY SCOUTS OF AMERICA - COPPERHEAD DISTRICT<br />
For 100 years, Scouting programs have instilled in youth the values<br />
found in the Scout Oath and Scout Law. Today, these values are just<br />
as relevant in helping youth grow to their full potential as they were<br />
in 1910. Scouting helps youth develop academic skills, self-confidence,<br />

BOY SCOUT TROOP 61<br />
Young men between the ages of 11-18 are encouraged to visit Boy<br />
Scout Troop 61 at 7:00 PM Wednesday nights at Peace Community<br />

will get a hands-on experience of what Scouting has to offer and have<br />
the opportunity to visit with the Scouts and their adult leaders to<br />

teachers. At ACTS of Wisdom we believe every child, everywhere, should<br />
have access to education and to teachers willing to take time to teach<br />
them. Our hope is that through bettering the education opportunities of<br />
children, we might be able to help end the cycle of poverty and begin to<br />

Camp Cornerstone is a week-long camp sponsored by Cornerstone United<br />

It’s hard to believe that summer is almost here! Every year parents seem<br />
to relish the thought of sleeping in and slowing down. But about two<br />
weeks into our summer routine, our kids are bored and we are trying to<br />
figure out what to do to keep our children engaged and busy!<br />
Epiphany Lutheran Church and School has your answer! We offer a<br />
variety of day camps for youth from preschool through middle school!<br />
Our campus offers 3 day mini camps for our preschool and Kindergarten<br />
students that meet Tuesdays through Thursdays from 9 AM-2 PM,<br />
weekly dance classes and martial arts classes as well. These camps<br />
are filled with lots of fun activities that incorporate STEM learning into<br />
their day. Elementary and Middle school students have the options of<br />
week long camps that include soccer, robotics, chess and a video game<br />

The Pearl Fincher Museum of Fine Arts will host summer camps and<br />
other activities to make this a fun-filled, artful summer for the entire<br />

Summer Camps<br />
Summer camps will be offered in June and July for ages 8 to 12 and 13<br />
to 18. Camps will center around themes of “Contemporary Art Through<br />
the Ages.” Each camp meets Monday through Friday from 9 AM to<br />
Noon at the Pearl Fincher Museum of Fine Arts. Cost of the week-long<br />
camps is $140 for members of the museum or $175 for non-members.<br />
Family memberships to the museum are available for just $55. In<br />
collaboration with AAUW and Klein ISD, a special camp will also be held<br />
once a week for students with visual impairments, as well as a camp<br />

NATURE PROGRAMS FOR PRESCHOOL-AGED CHILDREN<br />
SATURDAYS IN NATURE: This program is held on the second Saturday<br />
of each month at the Edith L. Moore Nature Sanctuary. Arrive anytime<br />
between 9 and 11:30 AM. The program ends at 12 noon. A guided<br />
nature walk will begin at 10 AM. No reservations required. Donations<br />
are encouraged. This is a “whole family” program; parents or other<br />

THE TITMOUSE CLUB: The Titmouse Club is a nature program for children<br />
ages 2 ½ to 5 sponsored by the Houston Audubon Docent Guild. The<br />

from mid-September until mid-<strong>May</strong> at the Edith L. Moore Nature Sanctuary,<br />

MOTHER’S DAY - A DAY FOR MOM<br />
Mother’s Day has its roots in ancient Greek festivals honoring Rhea, the<br />
Mother of the Gods. The modern American holiday officially began in<br />
1914, when President Woodrow Wilson declared the second Sunday in<br />
<strong>May</strong> a day to honor all the mothers. Here are some tips on celebrating<br />
Mother’s Day on <strong>May</strong> 14th!<br />
1. Deliver the classic Mother’s Day treat: breakfast in bed on an oldfashioned<br />
wicker tray table. Cook her favorite morning fare, mix her an<br />
eye-opening mimosa and tuck her favorite flowers into a small crystal<br />
vase. If the tray has slots on the sides, fill them with small presents (or big<br />
presents in small packages).<br />
2. Take your mother on a trip with Mother’s Day sandwiched in the<br />
middle. Make it as simple as a long weekend at the beach or as elaborate<br />
as a trip across the States.<br />
3. Surprise your mother with a visit if she lives far away.<br />
4. Deliver her present by way of a treasure hunt. Lead her on as long a<br />
trail as you think she’ll find amusing, with her present waiting at the end.<br />
5. Honor your mother’s memory if she’s no longer living. Send a donation<br />
to her favorite charity or spend the day working for her favorite cause. Do<br />
things she taught you to love.<br />
6. Thank the women who produced your favorite people - send cards,<br />
flowers or notes to the mothers of your friends, even if you’ve never met<br />
them.<br />
7. Throw a Mother’s Day party for your mother, your friends and their<br />
mothers. Consider a festive spring brunch.<br />

C3 Presents shall bring forth the adventure of Middlelands, the brainchild of<br />

following. Participation is not about being the fastest, but empowering<br />

1930s, Galveston was host to the Pageant of Pulchritude (predecessor to the<br />
Miss Universe Pageant), which was resurrected in 2009 as a two-day, family<br />
friendly event dubbed the Galveston Island Beach Revue. New this year,<br />
the event is featuring a speakeasy themed Friday Revue Prevue featuring<br />
live music with Dandy Wellington and His Band from New York City and the<br />
official introduction of the <strong>2017</strong> Bathing Beauties at Hotel Galvez. Friday<br />

June 3rd - The AIA Sandcastle Competition is a fund-raising event for<br />
AIA Houston and ArCH Foundation as well as one of the top five revenue<br />
generating events for the City of Galveston. This year over 60 teams have<br />
their eyes and shovels set on winning the prestigious Golden Bucket Award.<br />
Firms begin months in advance generating ideas, developing designs and<br />
assigning duties. On the day of the event the teams, stretched along the<br />
beach front, meticulously sculpt their piles of sand and work non-stop for<br />

Youth: Current Events - The Youth class, grades 6 through 12, connects<br />
world events with the Bible, faith and everyday life. They examine<br />
relevant faith and life issues using the latest music, movies, news and<br />

Older Children: Building Faith Brick by Brick - Those in third through<br />
fifth grades learn the same lessons as the younger children, then will recreate<br />
the Bible stories using Legos.<br />
Younger Children: Activate Faith - Children, ages three through second<br />
grade, engage in a program called Activate Faith. This is a comprehensive,<br />
Bible-based program.<br />

Did you know that on the second Friday of each month Bear Creek<br />

EPIPHANY BINGO<br />
Epiphany Bingo has been conducting bingo games on the west side<br />
since February 14, 1986. Epiphany conducts their bingo games every<br />
Friday night except holidays. THERE IS NO SMOKING ALLOWED DURING<br />
ALL BINGO GAMES. They have a jackpot game of $750. Maximum prize<br />
giveaways of $2,500, allowed by law, are given away every Bingo<br />
Night! They have security, lighted parking, big screen color monitor,<br />
computerized bingo equipment, snack bar and large cash prizes. Profits<br />
are used for charitable outreach programs, building expansion, and<br />
payment towards debt. Epiphany Catholic Church conducts its bingo<br />
games at the Church Community Center, 1530 Norwalk Dr. (between<br />
Fry and Mason Roads, south of I-10 behind Nottingham Subdivision)<br />
off Highland Knolls every Friday night. Early bird games begin at 7:30<br />

At St. Bartholomew the Apostle Catholic Church in downtown Katy,<br />
“BINGO” is being played in our Parish Hall every Friday evening except<br />
Holidays. Doors open at 7:00 PM, games start at 7:15 PM with four Early<br />
Bird games. Regular games start at 7:30 PM. Maximum Prizes given away<br />
every evening of $2,500. Governed by the state of Texas. They have the<br />

performance. Kaminari Taiko of Houston will display the Japanese art of<br />
Taiko in our library’s parking lot. We are celebrating Asian American Heritage<br />
Month! The performers will be in traditional Japanese costume and the<br />
drumming will combine traditional instruments with modern rhythms. This<br />

the Coast Guard. It is a recreational boating safety program. Coastie teaches<br />
children and their parents how to be safe around the water. Be sure to pick<br />
up a ticket in the children’s area at the library the morning of this event.<br />

VERMICELLI SALAD<br />
1 (12oz.) package Vermicelli, cooked and drained<br />
4 Tbsp olive oil<br />
3 Tbsp lemon juice<br />
½ Tsp Allspice<br />
On first day, combine cooked Vermicelli, olive oil, lemon<br />
juice and allspice. Cover and refrigerate overnight.<br />
2 Cups mayonnaise<br />
1 bell pepper, chopped<br />
1 cup chopped celery<br />
½ cup chopped onion<br />
1 4ounce jar pimiento<br />
1 ( 6-8ox) can pitted ripe olives chopped<br />
1 5 oz can water chestnuts, drained and sliced<br />
Salt and pepper to taste<br />
Optional: 2 ½ cup canned ham, cooked chicken breast,<br />
shrimp, or cooked hambuger<br />
Second day, add the rest of ingredients<br />
and mix well refrigerate.<br />

2lbs cooked shrimp<br />
1.5 lbs. cooked white fish (cod)<br />
Pico<br />
6 tomatoes<br />
1/2 red onion<br />
2 cloves garlic<br />
cilantro to taste<br />
1 minced jalapeno<br />
juice on one lime<br />
salt, pepper, garlic powder to taste<br />
Mix pico and shredded fish. Marinate in the juice<br />
of 4 to 6 limes. Better if you make ahead one day.<br />
Serve on tostada with jalapeno ranch dressing,<br />
avocado, minced jalapeno.<br />
NEIMAN MARCUS BROWNIES<br />
1 box butter pecan cake mix (Betty Crocker)<br />
or Choc. cake mix<br />
1 cup softened butter<br />
3 eggs<br />
1 (8 oz.) package cream cheese, softened<br />
1 tsp. vanilla extract<br />
1 pound box powdered sugar<br />
1 1/2 cups chopped pecans<br />
Preheat oven to 300 degrees. Grease and flour a 9 x 13<br />
inch cake pan. Mix cake mix, 1/2 cup butter and 1 egg.<br />
Press into pan. In a separate bowl, combine softened<br />
cream cheese, 1/2 c. butter, remaining 2 eggs, vanilla and<br />
powdered sugar until smooth. Pour over cake mixture.<br />
Sprinkle top with pecans. Bake about 55 minutes or until<br />
filling appears set when pan is gently shaken. Cool<br />
completely on wire rack. Cut into bars of desired size.<br />
