If you have received letter(s) from our management company<br />

regarding any deed violations, please do not ignore them. If<br />

you do not understand why your home is being cited for violations,<br />

please contact our management company representative<br />

and get details so you can take corrective actions. Not taking<br />

proper corrective actions will result in fines and if continued,<br />

will lead to legal actions. We do not want to use legal actions<br />

on neighbors but unfortunately, that may be the only thing that<br />

gets people’s attention. So please, instead of complaining, do<br />

something to help each other to make this place a pleasant<br />

neighborhood to live in.<br />

<strong>June</strong> 18 th is Father’s Day, a day we give honor to all fathers.<br />

<strong>June</strong> is the National Cataract Awareness month, Men’s Health<br />

month, National Safety month. <strong>June</strong> also celebrates the Summer<br />

Solstice on <strong>June</strong> 21 st .<br />

manager. All residents are welcome to come to our monthly<br />

meeting-which is 2 nd Tuesday every month (<strong>June</strong> 13, <strong>2017</strong> and<br />

July 11, <strong>2017</strong>) at Kroger’s upstairs meeting area on Hwy6.<br />

BRADFORD COLONY SECTION 3<br />

(BCS3) BCS3 <strong>2017</strong> ANNUAL MEETING RESULTS<br />

Due to newsletter submission deadlines, we are not able to discuss<br />

the results of the Annual Meeting that was held on May 21 st . One<br />

Board position was up for election - these results will be posted in<br />

the July newsletter.<br />

Other issues pertaining to the various governing documents of the<br />

HOA were also discussed. Look for more information as to potential<br />

changes in these documents in future newsletters and flyers.<br />

The Board would like to thank all the residents who either attended<br />

the Annual Meeting or who submitted proxy forms to allow themselves<br />

to be counted for the meeting. Even in a neighborhood as<br />

small as ours (59 homes), the Annual meeting is an important and<br />

mandatory part of the HOA process.<br />

Failure to have an Annual Meeting with a quorum of attendees would<br />

result in the HOA not being able to take care of the issues that are<br />

important for our neighborhood to be able to “take care of business.”<br />

(BCS3) <strong>2017</strong> ASSESSMENT UPDATE<br />

Note that as of April, 53 of the 59 property owners in BCS3 have<br />

either paid their <strong>2017</strong> assessment or are in an active payment plan.<br />

Note that collection activities up to and including legal action have<br />

been implemented for the delinquent property owners.<br />

This 90% payment rate is in line with past years’ payment patterns<br />

but still puts the HOA is a very good position financially at this time.<br />

The Board would like to thank everyone for handling this payment<br />

in a timely fashion. This is our only source of income for HOA related<br />

bills and expenses such as electricity for the light pools, landscaping,<br />

insurance, management fees and other issues.<br />

CHARLESTOWN COLONY<br />

(CHC) YARD OF THE MONTH<br />

Our neighbors of 5606 Towerglen Loop happily greet May with a<br />

multicolor of flowers waving gaily from their freshly mulched beds.<br />

Playing “ring-around-the-rosy” around the pines are burgundy<br />

chrysanthemums; neon orange impatiens, vincas morphing from<br />

red to rose to blush to white and little scarlet/green/cream mini<br />

elephant ears of caladiums. This house is the winner of May’s yardof-the-month<br />

prize ...a gift certificate to Home Depot for more yard<br />

work items (or whatever they please). Their home looks bright and<br />

clean and happy in the spring sunshine.<br />

It’s hard to believe that our Charlestown Colony was started in the<br />

1980’s and it has been nearly 30 years since we were brand new.<br />

Our families are starting to remodel and update their homes and<br />

yards and fences. Our neighborhood is looking fresher. It is lovely,<br />

also, that we have tall, established trees and shady sidewalks to<br />

stroll. Thomas Fuller wrote: “He that plants a tree loves others besides<br />

himself.” The same could be said about neighbors that tend<br />

greenery to beautify ALL of our landscapes. It lightens our moods<br />

to live with sunshine and flowers.<br />

(CHC) “HURRICANE SEASON”<br />

Hurricane season starts <strong>June</strong> 1 st . Do you know how to be prepared<br />

for a hurricane? There are countless websites that will help you<br />

be prepared. Read up on how much food and water should be on<br />

hand based on the number of people in your household. Remember<br />

canned goods require a manual can opener. Remember to fill<br />

bathtubs with water. While you may not want to drink water from<br />

a bathtub, this water can be used to flush toilets. Generators can<br />

never be found once a hurricane is in the Gulf. If you can afford a<br />

generator and have a place to store one, think ahead and get one early.<br />

Make sure to fill gas cans to run the generator. Camping equipment really<br />

comes in handy when the power is out. That camp stove will help<br />

cook the contents of your freezer so it doesn’t all go to waste! Camping<br />

lanterns shed a lot more light than flashlights. Some homes along the<br />

bayou have flooded in the past. Are you prepared? Remember that<br />

flood insurance has a 30 day waiting period. Once you have the proper<br />

amount of food/water per person and ever think to do laundry before<br />

a hurricane? This is not a common thought but is very good advice.<br />

When Hurricane Ike knocked out power for over 9 days to our area, clean<br />

clothes were a nice thing to have.<br />

(CHC) DEED RESTRICTIONS<br />

Did you ever get a letter regarding a deed restriction violation and think<br />

that your neighbor turned you in? Chances are your neighbor knows<br />

nothing about the deed restriction violation letter you received. While<br />

neighbors can contact PMG with a deed restriction complaint, most<br />

deed restriction violation letters are generated from the management<br />

company’s inspections of the neighborhood.<br />

Everyone talks about the “Deed Restrictions” but do you really know<br />

what they are? Deed Restrictions are a declaration of covenants, conditions<br />

and restrictions for the neighborhood. Deed restrictions are set<br />

up either when the neighborhood is platted out or shortly thereafter.<br />

Charlestown Colony has two sets of deed restrictions, one for the town<br />

home area (section one) and another for the single family homes (section<br />

two). These restrictions cover use of the homes as single family dwellings,<br />

to changes you can make to your home, the types of improvements,<br />

types of material storage of automobiles, boats, trailers, etc, animal<br />

husbandry, walls, fences and hedges, visual obstructions at intersections<br />

of public streets, maintenance of grounds, roofing materials, height of<br />

an antenna and more. The deed restrictions also govern membership<br />

and voting rights in the community; penalties, leans and enforcement.<br />

Deed restrictions are a very important document for homeowners to<br />

be familiar with. How do you get your copy? Contact our neighborhood<br />

management company, Principal Management Group of Houston, AAMC-<br />

Trashcan violations are some of the most common violation letters.<br />

These fall under Section 15 of the deed restrictions; Visual Screening<br />

on Lots. This paragraph basically says anything stored on the property<br />

must be out of sight from a ground level view of neighboring lots. Trash<br />

cans must be behind a fence. If you have a clothesline in your back yard,<br />

it can’t be visible from the street level.<br />

Another problem neighbors encounter is parking. This is especially<br />

difficult as our children grow and get vehicles. The cars don’t all fit in<br />

the driveway. Section 9 of the deed restrictions states, “No boat trailer,<br />

boats, travel trailers, inoperative automobiles, campers or vehicles of<br />

any kind shall be stored in the driveway, public street right-of-way or<br />

in any location forward of the front building line. As used herein, the<br />

term “stored” is defined as exceeding twelve (12) hours out of any seventy-two<br />

(72) hour period.”<br />

A large number of cars parked on both sides of a street is a safety issue.<br />

Emergency vehicles (firetrucks and ambulances) need enough room to<br />

get by. School busses can also have difficulty when there are too many<br />

parked cars directly across from one-another. Yard vehicles with trailers<br />

have side-swiped cars parked on the street. The homeowner has little<br />

or no recourse because the offending vehicle is long gone before the<br />

homeowner is aware of the damage. Alternate side of the street parking<br />

is helpful. This is when cars parked on both sides of the street are offset<br />

from one another. Work together to keep the streets passable at all<br />

times by all vehicles.<br />

(CHC) WATER!<br />

Scientist and space explorers get very excited when they find water<br />

on other planets as water is necessary for life. Water conservation<br />

is everyone’s responsibility. Our area is still under voluntary water<br />

restrictions. This means homes with even number addresses (on<br />

the north and east side of the streets) should only water outdoors<br />

on Wednesday and Sunday. Homes with odd number addresses<br />

(south and west side of the streets) should only water outdoors on<br />

Tuesday and Saturday.<br />

Ever hear water running in your home when you know there shouldn’t<br />

be water running? A big culprit is toilets. Everything can be ‘running’<br />

just fine but one flush and the flapper chain can settle between the<br />

flapper and its ‘seat’ causing the toilet to run continuously. Did you<br />

have a water bill that was unusually high? Check around for leaks.<br />

Could it be your sprinkler system? Shut the main house water valve<br />

off and then look at the meter by the street. If the small red triangle<br />

is turning, there is still water flowing. Don’t know where the main<br />

water shut-off for your house is located? Find it now before you need<br />

to find it in a panic. For most Neighborhood Classics built homes the<br />

main house shut off is in the front closet.<br />

Help protect the pipes in your house and the district by understanding<br />

what can be flushed down the drain (this includes toilets). While<br />

many commercial wipes say they are flushable, they are not. Many<br />

of these get clogged in pipes. Those that get past the pipes often get<br />

snagged in the district pumps. Dental floss should not go down the<br />

toilet. Dental floss will coil around the gears of the pumps (same thing<br />

as not putting celery down your disposal) resulting in damage to the<br />

pump. These are expensive pumps. Check out the funny video on the<br />

Another reason the water bill might be higher is an increase in the<br />

WHCRWA fee. Keep up with what is going on with WHCRWA and the<br />

pipeline construction at their web site: www.whcrwa.com.<br />

(CHC) NOTES FROM THE BOARD<br />

Have you visited the park lately? Just driving by, the structures look<br />

refreshed and vibrant. The new mulch and plastic boarder are very<br />

nice. These are definitely softer to walk on. The last park update is a<br />

new, more comfortable bench to replace the old wooden one without<br />

a back. Take some time to relax. Visit the park. If you are enjoying the<br />

improvements, let a Board member know. The only compensation a<br />

volunteer gets is a word of thanks from someone who benefits from<br />

the effort put forth. Thank our volunteer Board members for the time<br />

they give to all of us.<br />

Do you have a project idea you think would improve the look of our<br />

neighborhood? Contact a Board member. They meet once a month<br />

or so to review the neighborhood and talk about what is needed.<br />

(CHC) VACATION PLANS<br />

As summer gets into full swing and vacation plans are made, be sure<br />

to let a trusted neighbor know when you will be away. Remember<br />

to stop the mail (can be done online at https://holdmail.usps.com/<br />

holdmail/ or at the post office, 3 day minimum). Either stop newspaper<br />

delivery (https://myaccount.houstonchronicle.com/Login.aspx<br />

and log into your account) or arrange for someone to keep them<br />

from collecting in front of your house. There no longer is a credit for<br />

undelivered newspapers. Our experience is that the newspaper never<br />

stopped coming, even though we requested a stop so we just have<br />

someone pick up the newspaper. There is a great video online at<br />

Youre-on-Vacation with some simple tips on securing your home. One<br />

simple suggestion you might not think of is to lock your garage doors<br />

from the inside, then unplug the garage door opener. This prevents<br />

someone from using a decoder and entering your garage and home.<br />

Planning a “stay-cation?” Don’t forget all the great things to do and see<br />

right here in the Houston/Galveston area. There are outdoor activities<br />

(pools, water parks, baseball games, the Zoo, Miller Outdoor Theater<br />

(free! but donations accepted) as well as indoor activities with museums<br />

for all ages and interests.<br />

(CHC) SEEKING REPLACEMENT NEWSLETTER AUTHOR<br />

Our resident newsletter author has been at the job for the past ten years.<br />

(Yes, 10 years. More than many people have lived in the subdivision.)<br />

While this author has lots of experience and older copies of newsletter<br />

to draw on for content, this author feels it is time for a new voice. Do<br />

you like to write? Have a few spare hours early in the month? Are you<br />

active in the local community and have information to share? Contact<br />

the CCCIA Board using their contact information in the Important<br />

Numbers section of this publication. The volunteer position (all the<br />

neighborhood positions are volunteer) takes as long or as short as you<br />

want depending on how much you write and the topics you decide<br />

to research and present. All newsletters are sent to the Board prior to<br />

publication. Our “retired” author would be happy to show you what<br />

Please remember that deed restrictions are strongly enforced and any<br />

Many neighbors have been storing their garbage cans in view from<br />

the street. This is in violation of the deed restrictions and appropriate<br />

actions are subject to corrective action.<br />

Also, please remember to place garbage curbside after 6 PM, the night<br />

before pickup.<br />

(GC1) GARAGE SALES<br />

According to the State Comptroller’s office, garage sales are permitted<br />

only twice annually. If more than that, it will be assumed that a business<br />

is being operated out of home, which is in direct violation of the deed<br />

restrictions and necessary action will be taken.<br />

(GC1) LOST AND FOUND PETS<br />

The first thing to do if you find a lost dog that does not have a tag, is to<br />

take it to any vet’s clinic or Petsmart and have it scanned for a micro chip.<br />

This is the fastest way to get the dog back to its owner. If it does not<br />

have a micro chip, please look for signs to make sure the dog gets back<br />

to its rightful owner. A dog that is left to wander is subject to being hit<br />

by a car, abuse or starving to death. Those of you who are dog owners,<br />

please be sure to keep a collar and tag on it at all times. Even if the dog<br />

is micro chipped, it is much easier to return the dog to you if it has your<br />

(YTC) DOG WALKERS<br />

Please remember while out walking your dog(s) to pick up after them. There is<br />

nothing like walking through your own yard or one of the common areas and finding<br />

the “gift” your dog left behind. So, the next time you take Fido out for a walk, be<br />

prepared and grab a bag on the way out.<br />

(YTC) STRAY CATS<br />

If you haven’t noticed, there is an abundance of “stray cats” running free in the<br />

neighborhood. If you have an outdoor cat that is your pet, be sure it has a collar<br />

with your information, without a collar, there is no way to tell your pet from a stray.<br />

Some of our neighbors are not fond of cats and will call Veterinary Public Health<br />

(formerly called Harris County Animal Control), 281-999-3191 that will come pick up<br />

these strays and if your pet is picked up by mistake or doesn’t return home you will<br />

need to call and ask about your pet, they will not call you. If a homeowner traps a<br />

cat with a collar, please call the owner or release it.<br />

(YTC) HARRIS COUNTY LEASH LAW<br />

Animals that are not properly restrained pose a threat to all our residents. Many<br />

children and some adults are afraid of animals and become frightened when they<br />

see a dog not being properly restrained running towards them. The Law states that<br />

all dogs and cats must be kept under restraint while in the unincorporated areas<br />

of HC. Restraint is defined as “having control of the dog or cat under these circumstances:<br />

When the animal is controlled by a line or leash not more than 6 feet in<br />

length and being held by a person who is capable of controlling the animal and or<br />

riding in a fully enclosed car. While it may be nice to have your animal out in your<br />

yard while you are working or playing, it is against the law, unless your animal is<br />

properly restrained. Keep us all safe and keep your animals restrained.<br />

based on the American Red Cross Learn to Swim program<br />

The CFISD community raised approximately $135,000 for student<br />

scholarships through the Cy-Fair Educational Foundation (CFEF) 29 th<br />

annual BF Adam Golf Classic, held May 11 th at BlackHorse Golf Club.<br />

The annual event, named after longtime CFISD school Board member<br />

and elementary school namesake Bernard Fred (BF) Adam, contributes<br />

to the CFEF mission of increasing college access for CFISD<br />

St. Cuthbert Episcopal School’s <strong>2017</strong>-2018 registration is underway and<br />

in our community. Each year, approximately<br />

50,000 people die of flu-related complications.<br />

past three years, we have raised over $70,000,<br />

facilitated over 700 flu shots, traveled over 4,000 miles in our bus and<br />

made over 50 appearances at medical facilities and health expos to<br />

raise flu awareness. To fulfill our mission, we need the money raised<br />

to provide flu shots for people in need, cover printing costs concerning<br />

flu information, maintain and house our mascot vehicle and pay<br />

exhibitor fees to raise awareness. The 4 th Annual Holly on the Range<br />

will be held at TopGolf Houston-Katy from 6-9 PM. TopGolf Houston-<br />

<strong>2017</strong> SUMMER VOCAL PERFORMANCE CAMP<br />

JULY 10-14, <strong>2017</strong><br />

The Houston Choral Society (HCS) announces its <strong>2017</strong> Summer<br />

Vocal Performance Camp – Voyages of the Voice Finders. This one<br />

week camp is for students entering grades 3-5 and grades 6-8. The<br />

camp runs July 10-14, <strong>2017</strong>. For students entering grades 3-5, the<br />

camp runs from 9 AM to noon and for students entering grades 6-8<br />

the camp runs from 1-4 PM. Students will learn how music enriches<br />

their brain, body and mind through singing classical, folk and<br />

popular music. Finding your voice, learning how to improve breath<br />

and tone quality, musicianship, singing on sight and music games<br />

will be taught one-on-one and in ensembles. Workshops are led by<br />

professional, certified music teachers and singers from The Houston<br />

Choral Society.<br />

The HCS Summer Vocal Performance Camp provides an exceptional<br />

education to all of our students with an excellent student/teacher<br />

ratio. Camps are filling up fast so we encourage parents to sign up<br />

for camps now. Camp tuition for 15 hours of instruction is only $175.<br />

The average performing arts camp in Houston costs in excess of $14<br />

per hour. HCS offers these camps with four degreed instructors for<br />

less than $12 per hour. Each family will receive 2 free tickets for the<br />

end of class performance. Additional tickets can be purchased for<br />

only $5 per person. The camps include two complimentary tickets<br />

to the show, a camp t-shirt, music and other needed materials.<br />

The camps will be held at The Foundry United Methodist Church.<br />

FC CYPRESS SOCCER CLUB - TRYOUTS,<br />

CAMPS & REGISTRATION<br />

After a successful inaugural season, FC Cypress Soccer Club<br />

will be starting their second season and is now recruiting<br />

players. Practices are held at Ollin Sports Therapy, 16636<br />

Hahl and House Road, Cypress. The club was founded<br />

by Cy-Fair resident and former professional player, Marc<br />

Castillo. Students who join FC Cypress can enter one of<br />

three different leagues. Registrations are currently running<br />

through September 1 st .<br />

The U6 Soccer School-an 8-week program designed to introduce<br />

players to the sport. Enrollees meet Friday evenings<br />

from 6-7 PM to practice for 30 minutes and play games for<br />

30 minutes.<br />

Players in the U7-U10 competitive league - which lasts 13<br />

weeks, enter the Player Development League hosted by<br />

Klein Soccer club at Meyer Park and play against other<br />

teams. Practices take place twice per week at Ollin Athletics.<br />

Players in the U11 Select Academy - players who possess<br />

the right attitude and desire to take their soccer play to the<br />

next level. Training sessions will be twice per week at Ollin<br />

Athletics and games on weekends as part of TYSA, competing<br />

against other teams of the same age group and skill level.<br />

Students can also take part in summer camps in <strong>June</strong> and<br />

July to prepare for the upcoming fall season. All information<br />

USA FIT CYPRESS<br />

Are you a runner? Are you a fitness walker? Do you want to be? USA Fit Cypress<br />

is a friendly, no pressure group training for a variety of marathons and<br />

training with our group will help you conquer mental and physical barriers you<br />

Albion Hurricanes FC (AHFC), established in 1989, is leading the way in<br />

South Texas youth soccer by inspiring and developing young men and<br />

women through world class coaching and innovative techniques, as<br />

well as instilling the proper framework, self-esteem, confidence and<br />

sportsmanship within our athletes. AHFC has multiple campuses in<br />

and around Houston. The club invites all interested players from the<br />

ages of 7 to 18, to the Player Evaluations and Tryouts to become part<br />

hosting a special “Patriotic Worship Event.” In celebration of our nation’s<br />

birthday on July 4 th , Steve Hoyle, the Cornerstone Music Director, has<br />

put together a festive musical extravaganza entitled, “Let Freedom Ring.”<br />

The program will include patriot songs and readings, a time of prayer<br />

for our nation, a salute to our Armed Forces and a “message in song.”<br />

On this Sunday only, Cornerstone will have just one “church-wide”<br />

service at 10 AM. An orchestra will accompany the Cornerstone chancel<br />

choir. After the service, there will be a hot dog luncheon and a time of<br />

games and fellowship.<br />

FATHER’S DAY CELEBRATION<br />

A wonderful Father’s Day “Celebration” has been planned by the Worship<br />

Ministry Team for Sunday, <strong>June</strong> 18 th . At all three worship services,<br />

we will give a gift to every man in attendance. We will also be giving<br />

an additional gift to three of our special fathers: the oldest father in<br />

attendance, the father with the youngest child in nursery/worship and<br />

the father with the most children present. The theme of the service will<br />

be centered around Dr. Dave Meadows’ Father’s Day message entitled,<br />

“Building Bridges to the Future” based on Joshua 24:14-18. Make plans<br />

to join us for the special worship opportunity as we honor our fathers<br />

SCOOPAGE PET POOPAGE<br />

It may not be a fabulous way to walk, but<br />

please have courtesy to please scoop when<br />

your pet poops during your walks. Throughout<br />

the community trails, you will find areas to toss<br />

your pet’s poopage and in some areas, there<br />

are also bags. Carry your own grocery bags -<br />

you’ll be recycling at the same time! Many of<br />

your neighbors work hard with their lawncare<br />

and landscaping. Come with a scooper and a<br />

recycled grocery bag or anything else. Picking<br />

up after your pets shows your respect for every<br />

homeowner and our beautiful community. Pet<br />

feces damages lawns and many residents are<br />

working hard to maintaining their grass!<br />

HARRIS COUNTY LEASH LAW<br />

Animals that are not properly restrained pose<br />

a threat to all our residents. While you may<br />

know your pet is friendly, an animal running<br />

at someone who is walking by is very scary<br />

for that person. Many children are afraid of<br />

animals and become frightened, which could<br />

result in the child getting hurt trying to avoid<br />

the animal.<br />

Harris County Animal Control advises, “All<br />

dogs and cats must be kept under restraint<br />

while in the unincorporated areas of Harris<br />

County, Texas. The custodian of a dog or cat<br />

is not authorized to have, harbor or keep any<br />

unlicensed dog or cat, nor to allow any dog<br />

or cat to become a stray.”<br />

Restraint is defined as “the control of a dog<br />

or cat under the following circumstances:<br />

1. When it is controlled by a line or leash not<br />

more than six (6) feet in length, if the line<br />

or leash is held by a human being, who is<br />

capable of controlling or governing the dog<br />

or cat in question<br />

2. When it is within a fully enclosed vehicle<br />

3. When it is on the premise of the custodian<br />

and the animal does not have access to sidewalk<br />

or street.”<br />

While it may be nice to have your animal<br />

out in the yard while you work or play, it is<br />

against the law, unless the animal is properly<br />

restrained.<br />

Let’s all help keep our community a safe and<br />

comfortable place for all our residents by<br />

being responsible pet owners. This will not<br />

only protect anyone who may be walking or bicycling<br />

in the area, but also the pet owner who<br />

could be held legally responsible or possibly<br />

sued for failing to properly restrain their pet.<br />

5 STEPS TO A<br />

HAPPIER HEALTHIER PET<br />

1. Protect your pet from extreme weather<br />

(heat, cold, rain, etc.).<br />

2. Keep indoors or in a fenced yard and on<br />

vaccinations.<br />

4. Always make sure they’re wearing identification,<br />

PREVENT EXCESSIVE BARKING!<br />

Dogs left alone all day get lonely, bored and<br />

restless. Many find relief in barking. Some respond<br />

noisily to any and all activity. Nothing<br />

is as annoying as incessant barking-even for<br />

dog lovers. If your dog is a yapper or a yowler,<br />

please consider some of these bark-abatement<br />

ideas to keep the noise down in your<br />

area. Your neighbors will thank you!<br />

• Training. Training not only helps your dog,<br />

you’ll be surprised how much it helps you,<br />

too. You may get some insight into why your<br />

dog barks so much, or what it is trying to<br />

communicate.<br />

• Citronella collars.<br />

• Confinement. Sometimes simply bringing<br />

an outspoken dog indoors or confining it<br />

to a crate cuts down on the disturbance to<br />

neighbors.<br />

• For inside dogs, reduce stimulus. Close<br />

drapes to help muffle street noise, or leave<br />

a radio on to mask it.<br />

• Companionship. Dogs are pack animals;<br />

they need companionship-a cat, bird or<br />

another dog. Consider a mid-day visit from<br />

a pet-sitting service or drop your pooch off<br />

at a friend’s place or a day-care facility once<br />

or twice a week.<br />

My name is Benedicte Guillaume and I am French. I arrived with my<br />

family last summer and live in LOE. I would like to share with you one<br />

of my favorite summer recipes of taboulleh. It’s a tasty Moroccan<br />

taboulleh, different from the Lebanese taboulleh (with a lot of herbs<br />

and bulgur). It’s perfect for dinner with a slice of meat and a cup of<br />

fresh gazpacho.<br />

MON TABOULE GOURMAND<br />

Ingredients:<br />

1 1/4 cup of golden Couscous - no need to pre-cook it.<br />

4 Roma Tomatoes<br />

1/2 cucumber<br />

1 red bell pepper<br />

1 green bell pepper<br />

1 small red onion<br />

1 soup ladle of olive oil<br />

2 lemon juice<br />

1 tablespoon parsley<br />

Salt/pepper to taste<br />

Directions:<br />

Peel the peppers and the cucumber. Finely dice all the vegetables.<br />

Mix all the ingredients in a large salad bowl. Put in the fridge for 2<br />

hours. Before serving, you may add some mint leaves. And then, bon<br />

appetite!<br />

CLASSIC TEXAS CAVIAR<br />

“Don’t bother with soaking and cooking beans for Classic Texas<br />

Caviar - the canned variety works well. But skip the bottled dressing<br />

and take a little extra time to measure your own vinegar, oil and<br />

spices.”<br />

Ingredients:<br />

2 (15.8 ounce) cans black-eyed peas, drained<br />

1 (14.5 ounce) can petite diced tomatoes, drained<br />

2 fresh medium jalapenos, stemmed, seeded and minced<br />

1 small onion, cut into small dice<br />

1/2 yellow bell pepper, stemmed, seeded and diced small<br />

1/4 cup chopped fresh cilantro<br />

6 tablespoons red wine vinegar<br />

6 tablespoons olive oil (not extra virgin)<br />

1/2 teaspoon salt<br />

1/2 teaspoon ground black pepper<br />

1/2 teaspoon garlic powder<br />

1 teaspoon dried oregano<br />

1 1/2 teaspoons ground cumin<br />

Directions:<br />

Mix all ingredients in a medium bowl, cover and refrigerate 2 hours<br />

or up to 2 days. Before serving, adjust seasonings to taste, adding<br />

extra vinegar, salt and pepper. Transfer to a serving bowl.<br />
