“Sitôt franchi le seuil <strong>de</strong> la maison Deutz, un Amour sculpté vous<br />
susurre à l'oreille qu'ici rien n'a jamais changé <strong>de</strong>puis Napoléon III.<br />
Tout y est parfait, <strong>de</strong> la mosaïque bleue <strong>de</strong>s sols du hall aux tentures<br />
sanguine du salon Empire. On dit que les lieux inspirent ceux qui y<br />
travaillent. Fabrice Rosset, arrivé en 1996 à la tête <strong>de</strong> l'honorable<br />
maison d'Aÿ, en est persuadé : «II y a chez Deutz un esprit <strong>de</strong>s lieux,<br />
qui gui<strong>de</strong> notre démarche faite <strong>de</strong> discrétion dans l'action et <strong>de</strong><br />
délicatesse dans les vins.» Référence <strong>de</strong> connaisseurs. Deutz produit<br />
<strong>de</strong>s vins à dominante pinot noir d'un classicisme sans lour<strong>de</strong>ur et d'une<br />
précision jamais prise en défaut. Son Brut Classic figure parmi les<br />
meilleurs champagnes non millésimés. Quant à la très crayeuse cuvée<br />
Amour <strong>de</strong> Deutz - déclinée également en rosé -, elle inscrit le<br />
chardonnay au sommet <strong>de</strong> son art...”<br />

cupid whispers in your ear that nothing has changed here since<br />
Napoleon III. Everything is perfect, from the blue mosaic floor in the<br />
entrance hall to the blood-red wall coverings in the Empire lounge.<br />

Rosset, head of the house in Aÿ since 1996, is convinced: "At Deutz the<br />

on discrétion and élégance.“ An iconic brand among connoisseurs,<br />
Deutz produces wines dominated by Pinot Noir that are classical<br />

among the best nonvintage champagnes. As for the very chalky Amour<br />
<strong>de</strong> Deutz — also available as a rosé—it is a fine expression of<br />

pressées. Un lent mûrissement dans le<br />
secret <strong>de</strong> caves plongeant <strong>de</strong> 20 et 60 m<br />
sous terre : Deutz fait partie <strong>de</strong> ces maisons<br />
qui donnent naissance à <strong>de</strong>s champagnes<br />
haute couture faits pour le catwalk <strong>de</strong>s<br />
papilles. Cet Amour 2007, apéritif <strong>de</strong> roi<br />
pour fête <strong>de</strong>s Pères, est aussi un vin <strong>de</strong><br />
gastronomie, soyeux, délicat, sous-tendu<br />

This wine is rich and surprisingly full-bodied. It comes<br />
from a great Champagne vintage, giving it both<br />
intensity and an acidity built for longterm aging. This<br />
half-bottle version is filling out, showing almond<br />

95 With its beautiful rose color and <strong>de</strong>licate flavors, this<br />
continues the elegant tradition of Amour <strong>de</strong> Deutz. It's<br />
one of the Champagne house's three prestige cuvées<br />
and the most refined. This crisp wine, with its soft<br />
acidity, ripe strawberry fruits and tang of citrus is ready<br />
to drink, although it will age in bottle for many years.<br />

wine. It ri<strong>de</strong>s a fine line between crisp red fruit and<br />

A high proportion of Pinot Noir gives this Deutz prestige<br />
cuvée richness as well as a strong green fruit character.<br />

William Deutz 2006<br />
The second of two prestige cuvées from Deutz, this<br />
shows its high proportion of Pinot Noir with its fullbodied<br />
nature. Already mature, it has broa<strong>de</strong>ned into a<br />
richly complex, toasty, spicy wine. With full-throttle<br />
acidity that gives it a taut edge, it's impressive and<br />
ready to drink.<br />
Amour <strong>de</strong> Deutz 2006<br />
Still very crisp and fruity with only a hint of maturity,<br />
this is a bright, apple- and citrus- driven wine. Light and<br />
stylish, it gets its generous minerality from the<br />
Chardonnay in the blend. While it's great now, it will be<br />
even better from 2018.<br />
Deutz Brut Millésimé 2010<br />
This wine, though still young, reveals much about the<br />
Deutz style as well as the vintage. It strikes a balance<br />
between softness and crispness that fits the ethos of<br />
the house. At the same time, it's an attractive mediumterm<br />
bottling, in line with what many producers<br />
achieved in 2010. It should be kept until 2019.<br />

This wine is still young, reveling in its bright fruit and<br />
mineral texture. Drawn from Côte <strong>de</strong>s Blancs vineyards,<br />
it's tight, tense and loa<strong>de</strong>d with citrus fruit. With its<br />
finely crisp aftertaste, it's <strong>de</strong>licious now for its fruit but<br />
will also be great from 2020, once its toasty character<br />
<strong>de</strong>velops more fully.<br />

A dare ulteriore lustro alle varie maison <strong>de</strong> champagne<br />
negli ultimi anni hanno certamente contribuito le vecchie<br />
annate. Spesso e volentieri bottiglie di dégorgement<br />
recente, sono state proposte ovviamente in quantità<br />
estremamente limitata e prezzo non trascurabile, ma<br />
hanno rappresentato <strong>de</strong>gli autentici pezzi d’opera che<br />
hanno <strong>de</strong>finitivamente fatto capire perché lo champagne<br />
sia amico <strong>de</strong>l tempo.<br />
Tra gli ultimi produttori ad accodarsi a questa ‘felice iniziativa’ dobbiamo annoverare Deutz, che,<br />
invero in sordina, lo scorso anno ha lanciato la sua linea Vinothèque.<br />
Fabrice Rosset, messo alla guida di Deutz dalla famiglia<br />
Rouzaud, ha compiuto un mezzo miracolo, rilanciando la<br />
maison in qualità e quantità. Ma ha anche intrdotto nuove<br />
cuvée e, infine, creato la ‘Vinothèque’, intesa sia come<br />
zona <strong>de</strong>lle cantine, sia come linea di vecchie annate.<br />
Quando Fabrice Rosset, a seguito <strong>de</strong>ll’acquisizione di Deutz da parte <strong>de</strong>lla famiglia Rouzaud<br />
(Louis Roe<strong>de</strong>rer) ha avuto la guida <strong>de</strong>lla maison di Aÿ, è rimasto sorpreso che non ci fosse la<br />
vinothèque, così, come priorità, ha iniziato subito a costruire la riserva <strong>de</strong>i millesimati, partendo<br />
dall’annata 1993. Da quel momento, ogni anno sono state messe via nelle vinothèque tra le<br />
8.000 e le 10.000 bottiglie di millesimati e cuvée <strong>de</strong> prestige! Cosa che continua puntualmente<br />
con ogni nuovo millesimato di Deutz. Contestualmente, M. Rosset ha anche scoperto diverse<br />
bottiglie e magnum di vecchie annate in varie parti <strong>de</strong>lla cantina, alcune già <strong>de</strong>gorgiate, altre<br />
ancora sui lieviti; allora, pian piano ha iniziato a raggruppare questi champagne, verificarne lo<br />
stato, catalogarli, alcuni <strong>de</strong>gorgiarli via via in modo da apprezzarne lo stadio di maturazione e<br />
individuarne così la ‘finestra’ ottimale di espressività. Arriviamo così al 2016, quando<br />
un’apposita zona <strong>de</strong>lla cantina, dopo essere stata appositamente allestita, è diventata la<br />
vinothèque di Deutz, forte di oltre 250.000 bottiglie.<br />

Eccola, appena ultimata, la vinothèque nelle cantine di<br />
Deutz, che oggi conta più di 250.000 bottiglie (e<br />
magnum…).<br />
Sempre lo scorso anno, il catalogo Deutz si è arricchito di<br />
alcune di queste preziose bottiglie e magnum, proposte<br />
singolarmente in cassetta di legno e caratterizzate da un<br />
habillage sviluppato per l’occasione, molto semplice, ma<br />
certamente efficace.<br />
Ecco la linea Vinothèque di Deutz, disponibile su richiesta tramite i vari importatori nazionali a<br />
prezzi veramente competitivi per ‘tesori’ <strong>de</strong>l genere. Inizierei raccontando un pezzo forte di<br />
questa prestigiosa linea, sia perché porta alla ribalta un’annata semplicemente eccezionale (la<br />
1988), sia perché è nel formato ‘migliore’, il magnum. Altro punto di sicuro interesse è che non<br />
si tratta <strong>de</strong>lla Cuvée William Deutz (all’epoca l’Amour non esisteva…), bensì <strong>de</strong>l classico<br />
Millésime. Fu prodotto con uve da Mareuil, Ambonnay, Bouzy, Louvois, Verzenay e,<br />
naturalmente, Aÿ per il Pinot Noir, Avize, Le-Mesnil, Chouilly e Villers-Marmery (Montagne) per<br />
lo Chardonnay e Pierry per il Meunier. Questo Brut Vintage 1988 (come si chiamava all’epoca) è<br />
stato tirato nella tarda primavera <strong>de</strong>l 1989 ed è rimasto a maturare in sui lieviti, questa versione<br />
‘Vinothèque’, fino a maggio <strong>de</strong>l 2004, quando è stato <strong>de</strong>gorgiato e dosato a 7 g/l.<br />
Casetta di legno molto semplice e habillage addirittura<br />
essenziale per i Vinothèque Deutz proposti sul mercato. In<br />
quantità limitata, ovviamente, ma prezzo molto interessante.<br />
60% Pinot Noir, 30% Chardonnay, 10% Meunier<br />
(magnum) – Va bene il formato, va bene la grandissima annata, ma questo champagne<br />
è una vera sorpresa. Forse anche perché, solitamente, il Millésime è lo champagne<br />
meno incisivo <strong>de</strong>lla gamma Deutz, almeno da giovane. Invece… Invece ecco un naso<br />
freschissimo, cristallino nei profumi, piacevolmente e intensamente tostato, giocato<br />
su nette note di torrefazione, un frutto che spazia dalla pesca al melone e arriva fino al<br />
tropicale, una sottile florealità e, a ricordarci l’età, un tocco di fascinosa maturità<br />
rappresentato da spunti di frutta secca e miele. Il tutto integro e integrato, per non<br />
dire armonico. Ma è la bocca la vera sorpresa: ricca e scattante, tesa, vibrante, ancora<br />
più fresca di quanto ci si possa aspettare, succosa, cristallina, finissima nella bollicina,<br />
ricca nei ritorni fruttati, di profondo sviluppo minerale e finale sapido di notevole<br />
persistenza. Una vera sorpresa. O forse no?<br />

Expertise, précision et rigueur étaient au ren<strong>de</strong>z-vous ce lundi 27 mars au restaurant Deer Hunter du<br />
Constance Belle Mare Plage pour le concours Constance Sommellerie. Pour départager les trois<br />
sommeliers <strong>de</strong>s hôtels du groupe en lice pour le titre <strong>de</strong> meilleur sommelier, quatre épreuves étaient au<br />
programme. Notamment l'i<strong>de</strong>ntification <strong>de</strong>s étiquettes pour connaître l'origine <strong>de</strong>s vins, dégustation <strong>de</strong><br />

pour poursuivre sa passion pour le vin, le concours Constance<br />
Sommellerie est l'opportunité <strong>de</strong> montrer ses compétences,<br />
mais aussi d'apprendre et <strong>de</strong> grandir. « J'ai seulement un an et<br />
<strong>de</strong>mi d'ancienneté contrairement à Nelisa et Jaisen, qui ont<br />
trois et huit ans d'expériences. La barre est très haute, mais<br />
c'est une bonne expérience que j'aimerais bien renouveler »,<br />
confie le jeune sommelier. Jaisen Pandoo partage le même avis<br />
que Dany. « Le but est <strong>de</strong> se faire plaisir et <strong>de</strong> voir jusqu'où on<br />
peut aller. »<br />
Outre le concours Constance Sommellerie, d'autres compétitions vont rythmer cette semaine<br />
gastronomique au Constance Belle Mare Plage. En effet, celles-ci reprendront <strong>de</strong> plus belle mercredi<br />
après la soirée d'inauguration du Festival Culinaire Bernard Loiseau prévue <strong>de</strong>main, mardi 28 mars. Les<br />
concours Constance Arts <strong>de</strong> la table et Cocktails, entre autres, sont à l'agenda mercredi. Le jeudi 30 mars<br />
est le point d'ogre <strong>de</strong> la compétition avec la présentation <strong>de</strong>s créations culinaires. Pour les amateurs <strong>de</strong><br />
pâtisserie, le concours Constance Pâtisserie Pierre Hermé & Valrhona <strong>de</strong>vraient les ravir vendredi.<br />

Deutz is still setting a cracking pace. The main press<br />
house in Aÿ was razed in 2010 and two new layers of<br />
cellars dug un<strong>de</strong>rneath. A completely new press house<br />
was erected just in time for vintage 2011, with new<br />
four-and-eight-tonne presses, a new bottling line and<br />
increased cellar capacity from 8 million to 11,5 million<br />
bottles, and Deutz is now bottling its annual<br />
production target of 2,5 million bottles and it has<br />
secured the grape supply to sustain it.<br />
Owned by Louis Roe<strong>de</strong>rer, the house lays claims to just<br />
42 of the total 200 hectares from which it sources fruit,<br />
all in grand and premier cru villages in the Marne,<br />
Chardonnay and pinot noir are the focus for Deutz,<br />
with meunier comprising just 5% of its fruit. Most of<br />
the supply increase in recent years has come from<br />
purchased fruit. « We are looking for vineyards to buy,<br />
but the availability of good vineyards is not high »<br />
explains presi<strong>de</strong>nt Fabrice Rosset, the powerhouse<br />
behing Deutz for almost 20 years. To reward quality<br />
growers are paid based not only on the standard of<br />
their terroir, but the quality of grapes <strong>de</strong>livered.<br />
Growers are hearing of Deutz’s reputation and calling<br />
the company to offer their grapes. « This is the highest<br />
compliment we could be paid ! » exclaims Rosset.<br />
Can the house continue to maintain quality while<br />
following such a steep trajectory of growth ? « It is<br />
crucial that we maintain the same quality of supplies »<br />
chef <strong>de</strong> cave Michel Davesne emphasizes. The<br />
intention is to maintain the same suppliers, continuing<br />
to source from within 35 kilometres of Aÿ and using<br />
only the first pressings. He is confi<strong>de</strong>nt the investments<br />
in the new winery and cellars will only aid the pursuit<br />
of quality.<br />
Assuming the house can maintain reliable supply<br />
channels, Deutz will be well equipped to continue to<br />
achieve its target. Recently mo<strong>de</strong>rnised<br />
disgorgement and warehousing facilities are already<br />
in operation, and 8 million bottles wait in<br />
anticipation in three kilometres of cellars extending<br />
into the hill, up to 65 metres <strong>de</strong>ep beneath the<br />
vineyard behind Aÿ.<br />
With sustainable agriculture a priority, Deutz is<br />
trialling organics and even biodynamics in the plot<br />
immediately above the winery. Chemical pestici<strong>de</strong>s<br />
have been abandoned, and grasses cultivated in the<br />
mid-rows of some plots to avoid the use of herbicids<br />
and reduce yields to slightly below the average.<br />
Even in its young vins clairs, the clean, crisp, fresh,<br />
pristine focus of the house is abundantly clear.<br />
Deutz preserves the purity of its fruit through<br />
fermentation plot by plot in 350 stainless steel tanks<br />
(no barrels), temperature controlled to 16-17°C.<br />
Malolactic fermentation is encouraged<br />
systematically. Non-vintage rested in the cellar for a<br />
further six months post-disgorgement. Dosages of<br />
around 9g/L are well balanced to the graceful style<br />
of the house.<br />
« The key to Deutz is elegance . » expounds Rosset,<br />
« The Deutz style is ma<strong>de</strong> on refinement and<br />
harmony – this is the quintessence of champagne. »<br />
Then he checks himself and grins warmly « I am<br />
exagerating ! »<br />
But he’s right. In its classic, eloquently labelled<br />
bottles, Deutz has upheld its air of consistently<br />
refreshing pure lemon sunshine.<br />

A new king has ascen<strong>de</strong>d in the great kingdom of Deutz rosé, a brand new release, replacing William Deutz Rosé with an<br />
intentionally more elegant style and inadvertently offering a profound insight into the motivation of this house and its<br />
presi<strong>de</strong>nt. A few weeks before I visited in late 2014, Fabrice Rosset ma<strong>de</strong> the tough and costly <strong>de</strong>cision never to release the<br />
entire 14,768 bottle production of amour <strong>de</strong> Deutz rosé 2005. He poured me an exclusive tasting of that never-to-be-released<br />
cuvée (94 points). Goodness, many reputable houses would release (and have) lesser prestige cuvées. I have long<br />
respected Deutz, and at that moment it won an all-new respect.<br />
It takes all the wizardry and resources of Deutz to create a new rosé of such thrilling, towering magnificence. It is at once<br />
ethereal in its elegance, precise in its <strong>de</strong>finition and fairy light on its feet, yet there is grand presence and <strong>de</strong>pth of fruit power<br />
driving it long and full breathtakingly graceful elegance elevates it to another spiritual plane. Exquisite purity of red cherries,<br />
wild strawberries, rose hip, pink pepper and pomegranate <strong>de</strong>fine an impeccably crafted shape of exuberant yet immaculate<br />
refinement, and mesmerizing persistence. A triumph, and an instant addition to Champagne's top rosé tier - and who else<br />
can claim that with a new cuvée ?<br />

There is both a <strong>de</strong>pth and a breadth to 2002, encapsulated in an incredible display of the freshness of Deutz, amplified by the intensity if<br />
pinot noir, elevated and energized by ultra-fine, chalk-rich minerality and set resolutely in a mature mould. This is a wine of contrasts and<br />
contradictions, but, profoundly, it maintains seamless persistence and breathtaking lightness. Youthful endurance is <strong>de</strong>clared in vibrant<br />
lemon zest and young summer-fruit freshness, while the grand maturity of a dozen years in the cellar is articulated quietly in a <strong>de</strong>pth of<br />
brioche, gingernut biscuits, vanilla nougat, toast and honey. Prominent, silky chalk structure is the highlight of a mesmerizing finish. It's<br />

Only in the great 2008 vintage can supermo<strong>de</strong>l curves, ballerina daintiness, gymnastic muscle and Olympian energy all<br />
coexist in one <strong>de</strong>sperately precise body. Fairy-footed grace of rose petal and lemon blossom fragrance find a breathtaking<br />
tension with exceptional fruit <strong>de</strong>pth, epic persistence and breathtakingly chalk-fine, frothing salt minerality. Another thrilling<br />
performance from the most enduring vintage since 1996.<br />
Deutz Blanc <strong>de</strong> Blancs 2008<br />

The sublime 2008 season plays precisely to Deutz's brief of precision and minrality. Embed<strong>de</strong>d <strong>de</strong>eply in the two most confi<strong>de</strong>nt<br />
chardonnay grand crus, this is a cuvée that encapsulates the ultra-elegance and coiled-up power and intensity that <strong>de</strong>fine this vintage. Its<br />
chalk minerality is breathtaking, surging and frothing with the seaspray of its terroirs. Freshness shines as pure and stark as high-noon<br />
daylight in lemon, crunchy pear and yellow mirabelle plum, with all the accumulated knowledge of seven years of age proclaimed in fresh<br />
almonds, brioche and nougat. It's at once energetic and tense, yet intricately balanced and gentle, concluding in a crescendo of<br />

I was completely besotted when Deutz's ultra-sensual 2008 Rosé walked onto the scene, and I never expected to fall for the<br />
2009 in quite the same way but, gosh it's silky, long-legged and downright gorgeous. This is grace in a salmon-crimson silk<br />
ballgown; a ravishing celebration of pinot noir in all its red cherry and strawberry succulence, trailing a smooth acid train and<br />
friendly chalk mineral texture. There's a seamlessness to this vintage that beckons you to dance all night, albeit without the<br />
fast moves and stiletto tension of 2008;<br />

A very impressive vintage, with a pinot noir lead reflected in a full straw hue and magnificent <strong>de</strong>pth of enticing yellow mirabelle plums<br />
and rich figs. Its maturity is <strong>de</strong>clared in a panoply of burnt butter, toast, honey, brioche, butterscotch and mixed spice, drawn out<br />
effortlessly by lively acidity, a creamy bead and fine chalk mineral structure.<br />

One of the first and most memorable 2007s that I ever tasted, from the day of its release this has been a wine of <strong>de</strong>licacy juxtaposed with<br />
power. Two years on, its focus and tension are unwavering, sustained by excellent, fine chalk mineral <strong>de</strong>finition. Notes of struck-flint<br />
reduction waft over a precise palate of white pepper, crisp pear, crunchy gol<strong>de</strong>n <strong>de</strong>licious apple and subtle; simmering mixed spice.<br />

Deutz Brut Classic<br />
Brut Classic is the barometer of Deutz, representing 80% of the volume of the house, and the house gives it first priority. But<br />
if any cracks <strong>de</strong>velop in the wake of increasing production, they will surely appear here, and certainly in a season as shaky<br />
as 2010. To the contrary, quite remarkably, this is as good as I have seen this refreshing apéritif. It presents an angaging<br />
contrast between the racy tension of lemon and grapefruit, the presence and volume of red apple, pear and white peach, and<br />
the elegant complexity of bottle age nuances of nougat, anise, brioche and mixed spice. the vivacity and subtlety that <strong>de</strong>fine<br />
the signature of Deutz are upheld within a style of cream bread, well-integrated dosage and expressive, long-lingering chalk<br />
mineral texture.<br />

The pure, fresh style of Deutz is perfectly suited to elegant and restrained rosé, and the house is unusual in producing the style at three<br />
different levels. Fabrice Rosset admits the challenge is to maintain a consistent style every year. "In vintages like 2001 and 2011, the<br />
climatic conditions ma<strong>de</strong> it a real challenge to uphold the consistency of our non-vintage wines." It leaves its stamp here in a dry, dusty<br />
mouthfeel and notes of temarillo. nonetheless, some subtle red cherry, pomegranate and pink pepper do manage to poke through amidst<br />
a creamy bead, good acid line, well-integrated dosage and lingering persistence. The 2010 base vintage is much more representative of a<br />
house accomplished in crafting pristine rosé right from its entry cuvée. It's fine and elegant, with pristine red cherryand rose petal lift,<br />
excellent integration of finely structured acidity, subtle dosage and refined, soft chalk mineral structure.<br />

Deutz Brut Millésimé 2006<br />
Current for at least four years now, this vintage is every bit as engaging as it was on day one. Refined and effortless, it<br />
sustains an excellent core of primary citrus zest, slowly evolving into soft peach, toast and honey, drawn out through a long,<br />
even finish.<br />
William Deutz 1999<br />
One of the rare cuvées to appear in all three editions of The Champagne Gui<strong>de</strong> to date, and here it is for one final showing. It peaked two<br />
years ago, and is now coming towards the end of its prime, complex, full and long with an impressive core of peach fruit and citrus zest<br />
becoming toasty, honeyed, spicy and buttery. Still great, but eclipsed in every way by the 2002.<br />
Amour <strong>de</strong> Deutz 2005<br />
I admire Fabrice Rosset for many reasons, not least his brutal honesty : "2005 is not my cup of tea, a vintage characterised<br />
by a vegetal character." This cuvée is a triumph of this difficult season and it's been evolving into itself confi<strong>de</strong>ntly since its<br />
release. True to the style of the house, there is a zesty vibrancy; an energetic freshness and an effortless grace here that's<br />
rarely expressed by this vintage. Crunchy pear, apple and grapefruit are evolving into nougat, vanilla custard, toast and<br />
spice. It conclu<strong>de</strong>s in a dry, brittle, almond skin-like phenolic texture, characteristic of 2005, yet diminishing with time postdisgorgement,<br />
thanks to a creamy body, expressive chalk mineral texture, substance, complexity and succulence that go<br />
some way towards softening and elongating the finish.<br />

ce champagne ouvre Ici voie au charme, aux moments<br />
intimes et forts. Quant au vin lui-même, il est délicat,<br />
sensuel, doux, fédérateur, subtil, gracieux, accessible,<br />
sans contraintes, idéal pour un dîner où l'on envisage<br />
<strong>de</strong> déclarer quelque chose <strong>de</strong> fort, où l’on veuf partager<br />
une, voire <strong>de</strong>s émotions. Les formes voluptueuses <strong>de</strong> la<br />
bouteille, set couleur, la robe d'or clair aux reflets bronze<br />
du champagne, puis la douceur <strong>de</strong> la bulle, l'expression<br />
crémeuse <strong>de</strong> la mousse, les goûts et saveurs - coing,<br />
abricot, mirabelle, fruits confits, miel <strong>de</strong> lavan<strong>de</strong> –<br />

Je dirai que cette cuvée <strong>de</strong>s préliminaires convient au<br />
début du repas - quoi <strong>de</strong> plus logique - avec un apéritif<br />

Cette maison au nom allemand , fondée 1838 et propriétaire <strong>de</strong><br />
42ha <strong>de</strong> vignes, appartient à Louis Roe<strong>de</strong>rer <strong>de</strong>puis 1993. Sous la<br />
direction efficace <strong>de</strong> Fabrice Rosset <strong>de</strong>puis 1996; Deutz est<br />
restée fidèle à son style <strong>de</strong> vins <strong>de</strong>nses, pleins et gourmands,<br />
tout en l’affirant avec <strong>de</strong>s élevages en cuve uniquement et <strong>de</strong>s<br />
vins <strong>de</strong> réserve volontairement jeunes et frais . Avec talent, le<br />
chef <strong>de</strong> cave <strong>de</strong> la maison, Michel Davesne réussit à faire<br />
cohabiter la vinosité <strong>de</strong>s pinots-noirs avec la finesse <strong>de</strong>s<br />
chardonnays issus notamment <strong>de</strong> la Côte <strong>de</strong>s blancs. Sa cuvée<br />
<strong>de</strong> prestige William Deutz est parmi les plus réussies <strong>de</strong> sa<br />
catégorie. A noter : la sortie en <strong>de</strong>mie bouteilles <strong>de</strong>s cuvées<br />

De petite maison inventive à forte implantation sur le marché intérieur, Deutz est <strong>de</strong>venue une gran<strong>de</strong><br />
maison originale et toujours fortement appréciée par les consommateurs français «Quand j'ai<br />
commencé, on était a 60 % <strong>de</strong> nos ventes sur le marché français et 40% à l'export, et on est toujours à<br />
60/40», s'amuse le boss, Fabrice Rosset. Seule différence, avant le rachat <strong>de</strong> la maison par Roe<strong>de</strong>rer en<br />
1993, Deutz produisait 700 000 bouteilles «On est a 2,2 millions aujourd'hui. Et encore, parmi les 700<br />
000, tout ne s'appelait pas Deutz, environ 30% <strong>de</strong>s volumes partaient sous <strong>de</strong>s marques d'acheteurs… ».<br />
Des sous marques pour la gran<strong>de</strong> distribution ou autres. Historiquement installée a Aÿ, Deutz a construit<br />
sur la commune <strong>de</strong> Mareuil un nouveau lieu <strong>de</strong> stockage <strong>de</strong> 3 000 mètres carrés pour les bouteilles<br />
après dégorgement « On prépare la maison à encore plus <strong>de</strong> développement... » Et Deutz continue <strong>de</strong><br />
faire entendre sa petite musique originale : « On est la seule marque à avoir trois cuvées <strong>de</strong> prestige et à<br />
les proposer aussi en <strong>de</strong>mi bouteilles. » C'est en effet le cas pour Amour <strong>de</strong> Deutz et la célèbre William<br />
en blanc et rosé. Un petit coup <strong>de</strong> marketing à venir, peut être, avec, comme cela se murmure alentour,<br />
la création d'une cuvée parcellaire : un village, un lieu dit comme en Bourgogne.<br />

L’éclectisme chez Deutz. A Aÿ, on dit <strong>de</strong> ce Brut qu’il<br />
est « le plus éclectique <strong>de</strong> la gamme », autrement dit qu’il<br />
choisit ses tendances « dans <strong>de</strong>s catégories diverses ». Pas<br />
mal vu quand on sait que cette association <strong>de</strong> trois cépages<br />
est originaire <strong>de</strong> 20 à 30 crus <strong>de</strong> la Vallée <strong>de</strong> la Marne. Quant<br />
aux vins <strong>de</strong> réserve, on sait qu’ils sont <strong>de</strong> qualité puisque la<br />

<strong>de</strong> Grands et Premiers Crus. C’est en 1994 que la cuvée<br />
actuelle a pris le nom <strong>de</strong> « Classic » et, à l’époque, elle<br />

Deutz élue « Maison <strong>de</strong> l’année »<br />
Les Trophées Champenois<br />
La <strong>de</strong>uxième édition <strong>de</strong>s Trophées champenois, organisée par le magazine Bulles & Millésimes,<br />
s'est déroulée vendredi soir à l'hôtel <strong>de</strong> ville d'Épernay. «Ce prix récompense l'ensemble <strong>de</strong>s<br />
acteurs <strong>de</strong> la filière du champagne, <strong>de</strong> ce qu'ils font pour faire briller l'appellation toute l'année»,<br />
a rappelé Jean-Baptiste Duteurtre, le maître <strong>de</strong> cérémonie. S'il y avait 32 nominés, seuls 8<br />
trophées ont été décernés. Les femmes ont été particulièrement mises en lumière cette année.<br />
Sophie Cossy <strong>de</strong> Reims a été sacrée «Vigneron <strong>de</strong> l'année». Élisabeth Sarcelet a reçu le prix <strong>de</strong><br />
«Chef <strong>de</strong> cave» pour la réalisation du magnum Collection œnothèque 1998 <strong>de</strong> Castelnau. Les<br />
Fa'bulleuses ont décroché le «Packaging <strong>de</strong> l'année» avec leur coffret <strong>de</strong> 7 bouteilles qui peut se<br />
transformer en seau à champagne et en tabouret. Le centre vinicole Nicolas Feuillatte, géré par<br />
<strong>de</strong>ux femmes, a été nommé «Coopérative <strong>de</strong> l'année» pour les 40 ans <strong>de</strong> sa marque. Et le club<br />
Trésors <strong>de</strong> champagne a reçu le trophée «Démarche œnotouristique» pour sa boutique rémoise<br />
ouverte il y a un an et <strong>de</strong>mi. Le champagne Deutz a été désigné «Maison <strong>de</strong> l'année» pour avoir<br />
quadruplé ses ventes <strong>de</strong> 1996 à 2015. La maison Bollinger a été sacrée «Communiquant <strong>de</strong><br />
l'année» pour ses <strong>de</strong>ux œnothèques. Dominique Moncomble, directeur <strong>de</strong>s services techniques au<br />
Comité Champagne, a été récompensé pour sa «démarche écoresponsable».<br />

Champagne Deutz<br />
Fondée en 1838, la maison Deutz cultive la<br />
constance, l’élégance et un certain classicisme<br />
champenois. Des valeurs incarnées par son<br />
prési<strong>de</strong>nt Fabrice Rosset, à la barre <strong>de</strong>puis<br />
1996, qui semble faire corps avec cette<br />
maison ayant construit sa réputation sur la<br />
finesse singulière <strong>de</strong> ses champagnes.<br />
Du champagne dans les veines<br />
« Le champagne coule dans mes veines »,<br />
s’amuse Fabrice Rosset. Pour ce natif<br />
d’Epernay qui a fait toute sa carrière au sein<br />
<strong>de</strong>s maisons, Roe<strong>de</strong>rer puis Deutz, cela<br />
semble une évi<strong>de</strong>nce. Mais comme tout vrai<br />
passionné, c’est aussi un amateur éclectique<br />
qui a tiré <strong>de</strong> son expérience du mon<strong>de</strong> le goût<br />
<strong>de</strong> la diversité, ce dont témoigne sa cave.<br />
Peu importe le flacon, pourvu<br />
qu’il y ait « l’authenticité, la<br />
typicité et le respect <strong>de</strong>s<br />
terroirs d’origine », <strong>de</strong>s<br />
valeurs cardinales qui sont<br />
aussi celles qu’il a promues<br />
au sein <strong>de</strong> la maison Deutz.<br />
Le réveil <strong>de</strong> la belle<br />
En 1996, quand il prend la<br />
direction <strong>de</strong> cette vénérable<br />
maison, il hérite d’une<br />
marque prestigieuse mais<br />
assoupie. « C’était une Belle<br />
au bois dormant », qu’il a<br />
fallu réveiller en douceur –<br />
« avec beaucoup <strong>de</strong> respect<br />
pour tout ce qui a précédé et<br />
en prenant en compte son<br />
ADN » insiste Fabrice Rosset.<br />
Malgré vingt ans d’une<br />
présence très fécon<strong>de</strong>, il a la<br />
mo<strong>de</strong>stie <strong>de</strong> celui qui n’est<br />
que <strong>de</strong> passage « sur scène ».<br />
« La maison existe <strong>de</strong>puis<br />
1838. Je suis un intermittent<br />
du spectacle qui aura posé sa<br />
pierre à l’édifice. ». Ou plutôt<br />
<strong>de</strong> soli<strong>de</strong>s fondations, car<br />
Deutz jouit aujourd’hui d’une<br />
belle image, entre classicisme<br />
et élégance, avec une gamme<br />
très cohérente qui puise<br />
principalement dans les<br />
grands terroirs situés dans un<br />
rayon <strong>de</strong> 30km autour d’Aÿ.<br />
Séduction et élégance<br />
Le style Deutz, c’est avant<br />
tout la quête « <strong>de</strong> séduction<br />
et d’élégance », mais en<br />
aucun cas <strong>de</strong> « frivolité », car<br />
« le champagne est un vin à<br />
part entière et exigeant. ».<br />
Le credo <strong>de</strong> la maison, c’est<br />
le soin à porter aux<br />
approvisionnements, « 75%<br />
dans les grands et premiers<br />
crus et le recours exclusif<br />
aux vins <strong>de</strong> cuvée », et aussi<br />
l’absence <strong>de</strong> bois dans la<br />
vinification ou l’élevage, le<br />
choix <strong>de</strong>s fermentations<br />
malolactiques systématiques<br />
et un long vieillissement sur<br />
lattes. Tous les vins <strong>de</strong> la<br />
gamme, soit neuf cuvées,<br />
sont construit autour <strong>de</strong><br />
cette élégance qui s’incarne<br />
dans la finesse <strong>de</strong>s textures,<br />
la pureté <strong>de</strong> fruit et la<br />
vinosité toujours aérienne<br />
<strong>de</strong>s vins. Le brut <strong>de</strong> la<br />
maison (Classic) en est une<br />
belle illustration, mais « on<br />
insiste pour conserver cette<br />
harmonie, y compris dans les<br />
cuvées plus puissantes ». La<br />
cuvée William Deutz, avec sa<br />
puissance contenue, sa<br />
complexité, sa profon<strong>de</strong>ur et<br />
son dynamisme lui donne<br />

The 2006 Amour <strong>de</strong> Deutz is fabulous, and also shows what the house<br />
can do in a strong vintage. A rich, powerful Blanc <strong>de</strong> Blancs, the 2006<br />
boasts notable texture and breadth. Even with all of its intensity, the<br />
2006 preserves consi<strong>de</strong>rable freshness. Brioche, spice and yellow<br />
stone fruit nuances meld into the resonant, creamy finish. Rea<strong>de</strong>rs will<br />
have to give the 2006 at least a year or two in bottle, possibly more, as<br />
it is tightly wound and energetic to the core. Still, there is a lot to like<br />
in the wine's crisp, citrus-inflected notes and vibrant personality. The<br />
blend is 53% Le Mesnil-sur-Oger, 39% Avize and 8% Villers Marmery.<br />

The 2006 Amour <strong>de</strong> Deutz Rosé replaces the William Deutz Rosé in the<br />
house's range. Powerful and broad from the outset, the pale-colored<br />
2006 boasts serious intensity, with a compelling interplay of fruit and<br />
structure. Cranberry, rose petal and mint are some of the notes that<br />
gradually emerge from this sinewy structured Champagne. Expressive<br />
chalky notes support the brisk, intensely saline finish. The 2006 is going<br />
to be a gorgeous Champagne to follow for the better part of the next<br />
<strong>de</strong>ca<strong>de</strong> or longer. The blend is 55% Pinot Noir (from Aÿ, Verzenay and<br />
Bouzy) and 45% Chardonnay (from Avize, Chouilly and Villers-<br />
Marmery.)<br />
Cuvée William Deutz 2002<br />
Another open-knit, radiant wine, the 2002 Cuvée William Deutz is<br />
quite expressive today. Honey, almonds, dried pears, chamomile,<br />
mint and crushed flowers blossom effortlessly. There is plenty of<br />
vintage 2002 generosity, especially on the finish, where the wine<br />
offers notable richness, creaminess and unctuosity. Already a bit<br />
forward, with plenty of vintage's exoticism, the 2002 is probably best<br />
enjoyed over the next handful of years. The 2002 is 62% Pinot Noir<br />
(from Aÿ, Mareuil-sur Aÿ, Bouzy, Louvois and Ambonnay), 27%<br />
Chardonnay (mostly from Avize and Le Mesnil-sur-Oger) and 11%<br />
Pinot Meunier (from Peirry and Chatillon-sur-Marne).<br />

Rosé 2009<br />

Deutz's 2009 Rosé is one of the highlights in this tasting. Silky and<br />
textured on the palate, the 2009 shows lovely focus, with plenty of bright<br />
red berry and stone fruit character. Mint and spice nuances are woven<br />
throughout, adding to the wine's overall complexity. The radiance of the<br />
vintage comes through nicely in this racy, super-expressive Rosé. Here,<br />
too, the wine's balance is impeccable. A Rosé of assemblage, the 2009 is<br />
80% Pinot Noir (including 8% still Pinot) and 20% Chardonnay, from Aÿ,<br />
Mareuil-sur-Aÿ, Bouzy and Verzenay.<br />
Brut Millesime 2008<br />

The 2008 Brut Millesime offers consi<strong>de</strong>rable richness from the<br />
predominance of Pinot in the blend along with the freshness of the<br />
vintage. Dried flowers, red stone fruit, cinnamon, chamomile, pear and<br />
slate are all highly expressive in the glass. The 2008 is generous and<br />
expansive on the palate, with consi<strong>de</strong>rable power and plenty of energy in<br />
reserve. The blend is 63% Pinot Noir, 33% Chardonnay and 4% Pinot<br />
Meunier.<br />

Brut Blanc <strong>de</strong> blancs 2008<br />
The 2008 Blanc <strong>de</strong> Blancs is attractive, but also a bit unusual in that it is<br />
quite open-knit consi<strong>de</strong>ring the vintage and fruit sources predominantly in<br />
Avize and Mesnil. Scents of brioche, spice, vanilla and white orchard fruit<br />
all blossom in the glass. The 2008 is rich on the palate, yet also conveys an<br />
impression of translucent weightlessness. The blend is 51% Avize and 41%<br />
Mesnil, with touches of fruit from Villers Marmery, Cramant and Vertus.<br />
Amour <strong>de</strong> Deutz 2005<br />

White truffle, herbs, orange blossom and spices are some of the notes that<br />
take shape in the 2005 Amour <strong>de</strong> Deutz. There is good nuance in the glass,<br />
but the 2005 is also a bit forward, with slight hints of greenness and<br />
oxidation, which along with its mid-weight structure, suggest it is best<br />
enjoyed sooner rather than later. I also miss some of the energy that is<br />
present in the very best years. The 2005 is 100% Chardonnay, 60% Avize,<br />
35% Le Mesnil-sur-Oger and 5% Villers-Marmery.<br />

dornröschenschlaf geküsst. Nach einer krise in <strong>de</strong>n<br />
1990er jahren zählt die kellerei in Ay heute wie<strong>de</strong>r zu <strong>de</strong>n<br />
ersten adressen <strong>de</strong>r Champagne. Ungewöhnlich ist die<br />
tatsache, dass Deutz mit drei Pretige-Cuvées am Markt<br />
agiert, <strong>de</strong>m Deutz-Trio.<br />
