PURPOSE OF HUNTER’S PARK<br />

COMMUNITY ASSOCIATION<br />

Hunter’s Park Community Association handles the<br />

financial and legal affairs of the subdivision. Each lot<br />

owner is required to pay an annual maintenance fee<br />

which is used to pay street lights; pay taxes on and<br />

maintain the common areas, such as the swimming<br />

pools, tennis courts, etc.; pay for security; and pay legal<br />

expenses incurred to enforce the deed restrictions.<br />

The Board meets every month at 6:30 p.m. in<br />

the meeting room at the community building. Residents<br />

are welcome to attend. Anyone wishing to<br />

place an item on the agenda should call the HPCA<br />

office in advance.<br />

The Annual Meeting of Members is held on the<br />

4th Thursday of January.<br />

Members hold three year staggered terms and are<br />

elected. The election process is as follows:<br />

1) Mail in ballots will be mailed out with the Annual<br />

Maintenance fee statements.<br />

2) Voting in person will begin on the 1st Monday<br />

after the Annual Meeting ending on the following<br />

Saturday at 7pm.<br />

Closed Weekends and Major Holidays<br />

HPCA employs three workers to provide coverage for<br />

the office. Every effort is made to have one of the three<br />

employees in the office at all times. Occasionally business<br />

of the association may require us to be out of the office<br />

for a short period of time. If we are out of the office<br />

when you call or if you call after hours, please leave a<br />

message on the answering machine and your calls will<br />

be returned as soon as possible during office hours.<br />

DEED RESTRICTIONS<br />

Deed restrictions are strictly enforced by Hunter’s Park<br />

Community Association. Copies of the restrictions<br />

are available at the association’s office or by mail<br />

(call 281 463-1216). Complaint forms are included<br />

in every <strong>Bear</strong> <strong>Creek</strong> Newsletter for your convenience.<br />

The association’s office verifies complaints and writes<br />

letters to violators. HPCA will initiate legal action<br />

when warranted, to enforce the deed restrictions.<br />

ARCHITECTURAL CONTROL<br />

You must submit any plans for improvements or<br />

modifications of your home to the Hunter’s Park<br />

Community Association Office. Your plans will be<br />

checked to insure that they comply with the deed<br />

restrictions. This includes re-roofing, playforts (8<br />

ft. height limit), temporary storage buildings, etc.<br />

any additional help or assistance.<br />

SECURITY<br />

Hunter’s Park Community Association provides<br />

additional security currently through a contract<br />

with Commissioners Court for four Harris County<br />

Constables. HPCA also hires off-duty deputies on<br />

an as-needed basis for additional coverage.<br />

to report any suspicious person, activity or for vacation<br />

watch. There is a voluntary $2.00 security<br />

contribution on the M.U.D. #6 water bill that goes to<br />

each homeowner. The voluntary contributions can<br />

only be used to pay for security. This contribution<br />

enables HPCA to provide more coverage without<br />

raising maintenance fees.<br />

WASTE CORPORATION OF TEXAS (WCA)<br />

WCA collects our trash on Tuesdays and Fridays.<br />

Poly-carts, heavy trash and extra bags or items will<br />

be picked up on both days. Recycling picked up<br />

on Tuesdays only. The homeowner’s maintenance<br />

fee does not pay for garbage pick-up. You must<br />

call WCA to start service. Poly-carts and recycling<br />

bins are provided free of charge to homeowners or<br />

residents. When regular pick-up falls on a holiday,<br />

New Year’s Day, Memorial Day, July 4 th , Labor Day,<br />

Thanksgiving Day and Christmas Day, the pick-up<br />

will be made on the next regular scheduled pick up<br />

day. If your recycling day falls on a holiday it will be<br />

picked up the next week on your normal scheduled<br />

recycle day. WCA will collect for recycling, papers,<br />

plastics, aluminum and tin cans that are placed in<br />

the recycling bin. If items exceed container capacity,<br />

please place them adjacent to the bin. If you find<br />

items left in the bin, that are not recyclable, please<br />

dispose of the items in your polycart.<br />

Trees, shrubs, brush trimmings and fencing must<br />

be bundled in lengths no greater than 4 feet, with<br />

no branch diameter exceeding 3 inches. Items that<br />

will be picked up, such as: appliances, furniture,<br />

carpet (up to 1 room, rolled up four feet wide and<br />

less than fifty pounds), cardboard boxes (flattened).<br />

Refrigerators and freezers or any other items<br />

containing Freon must be drained of Freon and<br />

have an accompanying bill to validate such service<br />

was performed.<br />

Items excluded from normal collection are dirt, rocks,<br />

bricks, concrete, tires, batteries, motor oil, cooking<br />

oil, waste generated by a private contractor or any<br />

materials or items deemed hazardous materials. Do<br />

not dispose of these items in a container that is not<br />

visible to WCA personnel.<br />

The Water Board is a tax assessing board that levies<br />

water and sewer taxes and hires a Tax Assessor<br />

Collector to collect them. Severn Trent Services was<br />

hired by the Water Board to manage the utility district<br />

and they can assist you if you have any problems.<br />

The Board meets every 3rd Tuesday of the month at<br />

6:00 p.m. at the Community Building. Members hold<br />

staggered 4 year terms and are elected the 1st Saturday<br />

in April at the <strong>Bear</strong> <strong>Creek</strong> Community Building.<br />

Animals that are not properly restrained pose a threat to all our residents.<br />

While you may know your pet is friendly, an animal running<br />

at someone who is walking by is very scary for that person. Many<br />

children are afraid of animals and become frightened, which could<br />

result in the child getting hurt trying to avoid the animal.<br />

Harris County Animal Control advises, “All dogs and cats must be<br />

kept under restraint while in the unincorporated areas of Harris<br />

County, Texas. The custodian of a dog or cat is not authorized<br />

to have, harbor or keep any unlicensed dog or cat nor to allow<br />

any dog or cat to become a stray.”<br />

Restraint is defined as “the control of a dog or cat<br />

under the following circumstances:<br />

1. When it is controlled by a line or leash not more than six (6) feet in<br />

length, if the line or leash is held by a human being, who is capable<br />

of controlling or governing the dog or cat in question<br />

2. When it is within a fully enclosed vehicle<br />

3. When it is on the premise of the custodian and the animal does<br />

not have access to sidewalk or street.”<br />

While it may be nice to have your animal out in the yard while you<br />

work or play, it is against the law, unless the animal is properly<br />

restrained.<br />

Let’s all help keep our community a safe and comfortable place for<br />

all our residents by being responsible pet owners. This will not only<br />

protect anyone who may be walking or bicycling in the area, but<br />

also the pet owner who could be held legally responsible or possibly<br />

sued for failing to properly restrain their pet.<br />

Please remember that cats fall under the same laws as dogs and<br />

must be licensed and kept restrained when not on the premises of<br />

the owner. We’ve been told that spreading moth balls in flower beds<br />

might keep cats away.<br />

BARKING DOGS<br />

If you have a problem with a neighbor’s dog constantly barking,<br />

you should first contact the pet owner and make them aware of the<br />

problem. In the event that doesn’t work, you should then contact<br />

the Constables at 281-463-6666 to file a complaint.<br />

HARRIS COUNTY ALARM DETAIL<br />

If your home has an alarm system, you need to obtain a permit to<br />

avoid the issuance of a citation and excessive false alarm fees. You<br />

can get a copy of the permit application and review the regulations<br />

regarding permit requirements at the Harris County Sheriff’s Office<br />

website. The form can be printed for mailing with the applicable<br />

ECI PROJECT TYKE<br />

ECI Project TYKE is a year round<br />

Early Childhood Intervention<br />

program (ECI) in the Katy Independent<br />

School District<br />

that specializes in working<br />

with children who need extra<br />

help. The program provides<br />

developmental services to children<br />

who may need assistance<br />

in attaining developmental<br />

milestones or who may have<br />

a disability. Services are provided<br />

to children from birth to<br />

three where they live, learn or<br />

play. ECI Project TYKE develops<br />

a supportive partnership with<br />

families by providing educational<br />

and emotional supports,<br />

which enriches the daily routines<br />

and relationships that<br />

will enable their child to reach<br />

his or her maximum potential.<br />

Anyone (parent, family, friend,<br />

caregiver, professional) can refer<br />

a child to ECI Project TYKE. If<br />

you know a child under the age<br />

of 3 who needs assistance in at<br />

<strong>2017</strong> BOND RECOMMENDATION<br />

PRESENTED TO THE KATY ISD BOARD<br />

During the monthly Katy ISD Board of Trustees Work Study meeting in<br />

July, the <strong>2017</strong> Community Bond Advisory Committee (CBAC) Chairman<br />

presented the Committee’s $609.2 MM recommended bond package<br />

which addresses rapid growth and the near-term needs of the district.<br />

Since early April, Committee members have attended numerous meetings<br />

as well as received and assessed extensive and detailed information<br />

in order to develop a bond package. Members agreed on a final bond<br />

package which includes funds for six new schools, renovations and expansions<br />

at existing facilities, enhanced student technology, safety and<br />

security upgrades among other items. The Committee’s bond package<br />

also ensures a zero tax rate increase.<br />

Student enrollment has grown by approximately 2,800 students per year<br />

in Katy ISD. The district currently has an enrollment of more than 76,000<br />

students. According to the district’s demographer, Population and Survey<br />

Analysts (PASA), by 2023 nearly 90,000 students will attend Katy ISD<br />

schools and over 98,000 students will call the district their home by 2026.<br />

St. Cuthbert Episcopal School’s <strong>2017</strong>-2018 registration is underway<br />

BRIDGELAND COMMUNITY FUN RUN FOR HEROES<br />

Saturday, October 28 th<br />

The Bridgeland Community Fun Run for Heroes will be held Saturday,<br />

October 28 th at Bridgeland’s Festival Park. The race begins at 7 AM and<br />

includes a 5k route through the scenic Bridgeland community. There will<br />

also be a 1k children’s walk beginning at 7:30 AM, along with booth vendors<br />

and entertainment. The children’s walk is open to strollers and children<br />

are encouraged to come dressed as their favorite super hero. Prizes will<br />

be awarded for the best children’s costumes. Each participant may have<br />

sponsors who pledge a contribution for every mile they run on behalf of<br />

our service men and women. Special prizes will be awarded to those who<br />

meet predetermined fund levels. There will also be 1 st , 2 nd and 3 rd place<br />

trophies awarded to the top three finishers of the timed race. For more<br />

4 TH ANNUAL SHOTS FOR HOLLY FLU<br />

SEASON KICKOFF PARTY<br />

The Shots for Holly crew is gearing up for<br />

the 4 th annual Flu Season Kickoff Party, set<br />

for Sept. 9 th at The Shack, 12710 Telge Road<br />

in Cypress from 11 AM to 2 PM. There will be<br />

information about the flu, prevention and<br />

inoculations, as well as our infamous bus for<br />

picture-taking, raffle items and games. One of<br />

our clinic partners will be there to administer<br />

the flu shots and the band Soul Shine will be<br />

providing a backdrop of great music.<br />

Proceeds from the raffle items will fund<br />

ongoing educational programs. Each year,<br />

approximately 50,000 people die of flu-related<br />

complications, according to the Center<br />

for Disease Control. Deaths among young<br />

people 29-45 are on the rise. Shots for Holly<br />

Christ Clinic of Katy will host its 6 th annual<br />

“Breakfast for a Blessing” on Friday, <strong>September</strong><br />

personnel. In 2016, Christ Clinic provided<br />

more than 10,000 patient visits to uninsured<br />

members of the community. Christ Clinic also<br />

offers classes that promote healthy lifestyles<br />

and provides education about managing<br />

EXCITING FALL AT THE PEARL FINCHER<br />

MUSEUM OF FINE ARTS<br />

Fall Exhibits Open <strong>September</strong> 30 th<br />

This fall, the Pearl Fincher Museum of Fine Arts is thrilled to present<br />

an exhibition titled Anat Ronen: Urban Legend. After coming to the<br />

U.S. from Israel in 2007, Anat Ronen embarked on a new career in<br />

art and has become one of the most exciting and highly regarded<br />

street artists of our day-though she has no formal training in art.<br />

Typically she works on large-scale projects that can reach over<br />

30 feet tall, with more than 500 pieces in public spaces including<br />

highways, bridges, buildings, churches and schools.<br />

Also this fall, the museum will present Contemporary Quilt Art from<br />

the International Quilt Festival Collection. For more than three decades,<br />

Karey Bresenhan, founder of the Houston International Quilt<br />

Festival and Nancy O’Bryant Puentes have been purchasing studio art<br />

quilts for their corporate collection. For the first time ever, part of this<br />

collection has been assembled into a nationally-touring exhibition of<br />

25 quilts and the Pearl is delighted to be one of the stops on that tour.<br />

Fall exhibits will open Saturday, <strong>September</strong> 30 th . The Pearl Fincher<br />

Museum of Fine Arts is open from 10 AM-5 PM Tuesday through<br />

Saturday. Admission is free, but a suggested donation of $5 per<br />

REQUESTS FOR VOLUNTEERS OCTOBER 14-15, <strong>2017</strong><br />

The Art Colony Association, Inc. (ACA) is in need of volunteers for Bayou<br />

City Art Festival Downtown on Saturday and Sunday, October<br />

14-15, <strong>2017</strong>. Volunteers have the option of choosing various roles<br />

and shifts for either or both days. Shifts for Friday afternoon and<br />

evening will also be available for artist check-in and festival load-in.<br />

The festival offers volunteers the opportunity to make new friends<br />

and meet artists from around the country. After every shift, volunteers<br />

will be entered in a raffle and have the chance to win prizes,<br />

including gift cards to local restaurants, movie and museum tickets.<br />

All volunteers will receive a t-shirt and be able to enjoy the festival<br />

at no cost before and after their shift. The minimum age to sign up<br />

thousands of Houstonians and visitors to the bayou city,<br />

Houston Restaurant Weeks provides a month-long passport<br />

to the city’s top restaurants and award-winning chefs. Houston<br />

Restaurants Weeks is run by volunteers and 100 percent<br />

of the proceeds raised from area restaurants go directly<br />

to the Food Bank. For more than four weeks, diners get to<br />

taste prix-fixe menus specially priced at $20 for lunch and<br />

$35 and $45 for dinner. In addition to the ever-expanding<br />

contribution made to the Houston Food Bank, the event<br />

has grown to include not only the trendiest eateries in<br />

Uptown Galleria, bustling downtown and vibrant Midtown,<br />

but also popular eateries in outlying communities such as<br />

The Woodlands, Sugar Land and Galveston, Texas, among<br />

others. A complete listing of participating restaurants and<br />

their respective Houston Restaurant Weeks menus will be<br />

Time now to make plans for<br />

fall landscaping projects.<br />

While trees generally need stakes<br />

to keep them upright for the first<br />

season after planting, they should<br />

be removed after one to two years<br />

so that the tree continues to grow<br />

and thrive. The ties used to fasten<br />

the stakes to trees can cause<br />

indentations in the tree if left on.<br />

Such indentations can significantly<br />

weaken a tree and constrict bark<br />

growth. The tree can also get<br />

strangled if stakes are left on too<br />

long, which can upset the flow of<br />

water and nutrients in the tree. This<br />

can also cause weak spots. Trees<br />

are usually tied to a wooden stake<br />

attached with string to a metal<br />

clamp around the tree.<br />

Things You’ll Need<br />

to remove tree stakes:<br />

• Measuring tape<br />

• Gardening shovel<br />

WHEN AND HOW TO<br />

REMOVE TREE STAKES<br />

Walk around the staked tree. Look<br />

for indications the tree is over a year old or more, such as indentations in the<br />

wood from the stakes. Measure the tree’s width and height, using a measuring<br />

tape. If the tree is over 6 feet tall and or thinner than 1 inch, it should not need<br />

stakes.<br />

Untie the tree from its clamp and dig out the wooden stake from its place in the<br />

ground with a shovel. Remove the metal clamp from the tree. The tree can now<br />

sway in the wind, which will help the trunk become stronger and wider.<br />

• Clean up flowerbeds of fallen foliage,<br />

yellowed leaves and dead wood. Light green<br />

leaves may signify lack of iron (chlorosis).<br />

Correct with iron cheleates.<br />

• Cut off old dead foliage on irises. Scratch<br />

in a little bone meal around the roots.<br />

• Prune roses to reshape and groom plants<br />

for fall growth. Follow up with a dose of<br />

fertilizer the first week of <strong>September</strong>.<br />

• Plants come out of summer rest and go<br />

crazy. Insect populations explode as we get<br />

into cooler temperatures. Diseases that have<br />

been dormant wake up.<br />

- Citrus, croton, avocado and mango<br />

are susceptible to spider mites and thrips.<br />

Discourage them with a strong jet of water<br />

from a hose directed to the undersides of<br />

the leaves.<br />

- Hibiscus, citrus, palms, gardenia and<br />

ixora are susceptible to scale and mealybug.<br />

• Winter vegetable gardens and perennials<br />

get planted.<br />

• Wait until November to plant petunias and<br />

pansies.<br />

• Fire ants baits should be put out in<br />

<strong>September</strong>- October to lessen the number<br />

of eggs that make it to Spring.<br />

• St. Augustine grass gets its fall fertilizer<br />

during <strong>September</strong>. Continue to mow at<br />

maximum height. You want to leave a lot<br />

of leaf surface to produce carbohydrate<br />

reserves for the winter.<br />

• Keep an eye out for sod webworms. First sign<br />

of them is grass that appears to stop growing.<br />

You need to get them early for biological<br />

controls to work. When the caterpillars are only<br />

1/4 inch, Bacillus thuringiensis applications<br />

can slow them. Bt is a bacteria that works on<br />

the caterpillars’ digestive systems and makes<br />

them stop feeding. Do the application late in<br />

the day. The larvae feed at night and you want<br />

them to get nice fresh Bt.<br />

• When the heat and drought end, the<br />

weather could bring brown patch disease in<br />

the St. Augustine grass. Watch for yellowish<br />

spots if the nights drop into the 60’s and<br />

days stay in the 80’s.<br />

• Get any pruning of hedges and such done<br />

now. You want the flush of new growth to<br />

be hardened-off before the end of October.<br />

Tree pruning should be put off until winter,<br />

when the trees are dormant.<br />

•Pre-emerge herbicide applications<br />

targeting annual bluegrass and the earliergerminating<br />

winter broadleaf weeds needed<br />

to be put out starting in mid-August.<br />

ST. ELIZABETH ANN SETON SCHOLA CANTORUM<br />

Do you want your children to become lifelong servants of the Church?<br />

Singing in a children’s choir is a great way to help that. The St. Elizabeth<br />

Ann Seton Schola Cantorum is currently accepting children<br />

Grades 4-12 for its after-school choir program. The choir is responsible<br />

for enriching the Mass on 10:30 on Sundays and rehearses every<br />

Wednesday from 3:45-5 PM. Unique in the area, the choir focuses on<br />

singing music from the rich Catholic tradition, including chant and<br />

polyphony, as well as the finest modern church music. Time is devoted<br />

to building the children’s skills of music reading, vocal technique,<br />

BLESSING OF THE PETS<br />

Cornerstone UMC will be holding its “Blessing<br />

of the Pets” on Sunday, October 1 st at<br />

SHALOM CYPRESS<br />

Shalom Cypress was established in 2011<br />

by local families seeking a Jewish presence<br />

in Northwest Houston. We are the closest<br />

synagogue within 25 miles of the nearest<br />

synagogue. Many thought that they were the<br />

only Jews in the Cypress area, but it turns out<br />

that they were wrong! Shalom Cypress has<br />

grown to more than 30 affiliated families.<br />

School is back and the High Holidays are right<br />

NEW LAWS IN TEXAS EFFECTIVE IN <strong>2017</strong><br />

The Texas legislature met from January through May and passed<br />

several new laws as well as changed laws that will go into effect in<br />

<strong>2017</strong>. They range from texting while driving, drones, to swords, to<br />

protecting good Samaritans. Below are a few laws that are effective<br />

immediately or going into effective <strong>September</strong> 1 st .<br />

Texting While Driving<br />

Effective <strong>September</strong> 1 st , there will be a statewide band on texting<br />

while driving. The bill bans drivers from texting while a vehicle is moving,<br />

making it a misdemeanor offense punishable by a fine ranging<br />

from $25 to $99, with penalties up to $200 for repeat offenders. The<br />

law allows drivers to use their phones for GPS and would not allow<br />

violators to be fined under both state law and local ordinances.<br />

People Allowed to Carry Swords<br />

People can carry bowie knives, swords, daggers and spears in public<br />

under a law that goes into effect <strong>September</strong> 1 st . Current law allows<br />

people to carry knives no more than 5.5 inches long. While it will be<br />

okay to carry the larger weapons in public, it is illegal to take into<br />

bars, schools, colleges, churches, sporting events and numerous<br />

other facilities.<br />

Amnesty for Sex Assault Witnesses<br />

Students who witness and report a sexual assault while they are involved<br />

in illegal activity, such as drinking, would be given amnesty.<br />

Recording Higher Ed Sex Assaults Electronically<br />

Effective immediately, this law will allow college employees and<br />

students to submit electronic and anonymous reports of sexual<br />

assaults to their institutions.<br />

Ridesharing Returns<br />

Last year some ridesharing companies, like Uber and Lyft, were<br />

mandated to fingerprint drivers before they could pick up customers<br />

in their cities. Effective immediately, this new law, bans cities<br />

from enforcing similar measures on these types of ridesharing<br />

companies.<br />

Cheaper to Carry a Gun<br />

Effective <strong>September</strong> 1 st the fees for carrying a gun in Texas are now<br />

cheaper under Senate Bill 16. The law lowers fees for a first-time<br />

license to carry a handgun from $140 to $40 and the renewal fee is<br />

also reduced from $70 to $40.<br />

Be Careful Where You Fly your Drone<br />

Effective <strong>September</strong> 1 st the state has banned unmanned aircraft, like<br />

drones, over correctional and United States Immigration, Customs<br />

Enforcement detention facilities and large sports venues. Exceptions<br />

include unmanned aircraft authorized by a law enforcement agency<br />

or with the permission of the operator of the sports venue.<br />

David’s Law<br />

The new state law on cyber bullying makes it a Class A misdemeanor<br />

to harass or cyberbully someone under age of 18 through text<br />

messages, social media, websites or other means with the intent<br />

to cause them to commit suicide or harm to themselves.<br />

Voter ID changes<br />

If don’t have a valid photo id, voters will be able to cast their ballots<br />

if they show some other documentation with their name and<br />

home address (Bank statement or Utility bill). Voters would also<br />

need to sign an affidavit saying there is a good reason they don’t<br />

have a valid photo ID.<br />

No More Straight-Ticket Voting<br />

Straight ticket voting is out! Voters will no longer be allowed to cast<br />

their ballot for an entire slate of Republican or Democratic candidates.<br />

You will now have to vote for each candidate individually.<br />

Lottery Winners<br />

Effective <strong>September</strong> 1 st . Individuals who win prizes of at least $1<br />

million can choose to remain anonymous and prohibit the release<br />

of all personal information to the public.<br />

Civil Protections for Good Samaritans<br />

Effective <strong>September</strong> 1 st a new law protects good Samaritans<br />

from civil lawsuits if they break in a vehicle if they have reason to<br />

belief the person is in imminent harm, has first notified 911, uses<br />

appropriate amount of force and remains with the individual in a<br />

safe location. This replaces current law that leaves good Samaritan<br />

open to civil suits.<br />

No More Suspensions for Young Students<br />

Effective immediately. Schools can no longer suspend students<br />

below third grade. Instead public schools need to discipline children<br />

in a way that enforces positive behavior.<br />

More Frequent Background Checks for College Referees<br />

Effective <strong>September</strong> 1 st sport officials registered with the UIL will<br />

have to undergo criminal background checks every three years<br />

instead of just one.<br />

Help for Relatives Caring for Abused Children<br />

The state will now pay $350 a month to families caring for abused<br />

or neglected children they are related to. Currently the state pays<br />

families $1,000 initially and $500 a year.<br />

Attacking Police Officers is Now Officially a Hate Crime<br />

If a person attacks a former or current law enforcement officer<br />

they could be found guilty of committing a crime. The change puts<br />

crimes against law enforcement in the same category as crimes<br />

based on a person’s race, color, disability, religion, national origin,<br />

age, gender or sexual preference.<br />

BUTTERSCOTCH BREAD PUDDING<br />

You could make this on National Butterscotch Pudding Day<br />

<strong>September</strong> 19 th !<br />

INGREDIENTS:<br />

1 loaf day-old bread, torn into small pieces<br />

4 cups milk<br />

2 cups brown sugar<br />

1/2 cup butter, melted<br />

3 eggs, beaten<br />

2 teaspoons vanilla extract<br />

1 cup butterscotch chips<br />

DIRECTIONS:<br />

Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13<br />

inch baking dish. In a large bowl, combine bread, milk, sugar,<br />

butter, eggs, vanilla and butterscotch chip, mixture should be the<br />

consistency of oatmeal. Pour into prepared pan.<br />

Bake in preheated oven 1 hour, until nearly set. (It should have a<br />

“thigh wiggle” or wiggle as much as a well endowed thigh.) Serve<br />

HEALTHY COWBOY CAVIAR<br />

This healthy cowboy caviar recipe (also known as Texas<br />

caviar) is made with all-natural ingredients! Serve it as a dip,<br />

salsa or salad Recipe yields a lot of “caviar,” about 8 cups.<br />

Ingredients<br />

2 (14-ounce) cans black-eyed peas, rinsed and drained,<br />

or 3 cups cooked black-eyed peas<br />

1 (14-ounce) can black beans, rinsed and drained,<br />

or 1 ½ cups cooked black beans<br />

1 ½ cups fresh corn kernels (about 2 ears of corn),<br />

or 1 (14-ounce) can corn, drained<br />

1 ½ cups chopped tomatoes (I used about 4 Roma<br />

tomatoes,<br />

about ¾ pound)<br />

1 medium green, red, orange and yellow bell pepper<br />

¾ cup chopped red onion (about ½ small red onion)<br />

½ cup chopped cilantro, leaves and stems<br />

1 to 2 jalapeños, ribs removed, seeded and finely<br />

chopped<br />

1 avocado (optional)<br />

Italian dressing<br />

1/3 cup olive oil<br />

3 tablespoons red wine vinegar or lime juice<br />

2 medium cloves garlic, pressed or minced1<br />

to 1 ½ teaspoons salt, to taste<br />

1 teaspoon dried oregano<br />

½ teaspoon dried basil<br />

1 teaspoon maple syrup or honey<br />

1/8 teaspoon red pepper flakes<br />

Freshly ground black pepper, to taste<br />

Instructions<br />

In a large serving bowl, combine the drained black-eyed peas, black<br />

beans, corn, chopped tomatoes, bell pepper, onion, cilantro and jalapeño.<br />

If you’ll be including avocado, wait to dice it until you’re ready<br />

to serve the dip, so it doesn’t turn brown in the meantime.<br />

In a cup, whisk together the dressing ingredients until emulsified.<br />

Drizzle the dressing over the serving bowl and toss until well mixed.<br />

Season to taste with additional salt and pepper. For best flavor,<br />

let the mixture marinate for at least 20 minutes before serving. If<br />

you’re adding avocado, mix it in just before serving.<br />
