W
e may not be the biggest wine company
in Ireland but we like to think that we overdeliver.
We have a long list of great wines made
by people who care. In fact, our producers include
some of the world’s very best winemakers from Jean-
Louis Chave and Aubert de Villaine, to Samuel Billaud, Marcel Lapierre,
the Bérèche brothers, and more.
At La Rousse Wines, our goal is to give you excellent service and a
greater choice of wines to help you run your business. This year, we
have added some new producers – Benjamin Leroux, Ochota Barrels
– as well as new wines by our old favourites: Jamsheed’s Sagrantino,
Clos du Gravillas’ L’Innatendu, Eric Texier’s Mâcon, and of course our
new allocations from Méo-Camuzet, Marcel Lapierre, Telmo Rodríguez
and Raphaël & Vincent Bérèche. We have also manged to source some
new, well-made wines with plenty of varietal character (Caramuxo,
Castillo d’Elaro) to help boost the beginning of your list.
We understand that when you need wine you need it now and we are
the only company to offer next day delivery 6 days a week. We know
that the realities of running a restaurant or independent shop can be
challenging so we offer split cases to help spread the cost. Most our
team have wine experience from Michelin
star restaurants so if you are looking for
ideas on how to create a great wine list, we
are here to help.
Like you and your team, we believe that it
doesn’t take an army to run a successful
wine business, it just takes commitment
and passion.
Adelaide Hills
Ochota Barrels
After travelling some of the world’s best wine and
surf regions in a VW campervan, Taras and Amber
Ochota decided to make McLaren Vale Grenache and
Barossa Valley Shiraz back home in South Australia.
After a misspent youth playing a rickenbakker bass
in various punk bands, Taras developed his craft at
wineries such as Two Hands and MSV in the Barossa.
Prior to this, he was at Nepenthe in the Adelaide Hills.
California has also been a big influence. Taras has made wines with
producers such as Hartley-Ostini, the famous Hitching Post label, made
famous by the ‘Sideways’ film. Most of the wines are named after favourite
bands or songs. Taras says, “You can often see the styles of music people
like in the wines they make. I like edgy music, raw, sharp music, and my
wines tend to be all elbows and knees sticking out”.
Victoria
Jamsheed
Jamsheed was a Persian king who was said to be able to see his kingdom
in a cup of wine. His fondness for fresh grapes led him to store them in
jars where they would inevitably spontaneously ferment and be set aside
as ‘poison’. One of King Jamsheed’s harem,
despairing of frequent migraines, choose to commit
suicide by drinking from a poisoned jar. She woke
to find herself miraculously cured, informed her king
who was most pleased and set about making many
jars of ‘poison. Thus wine was discovered.
Gary Mills, the tall man behind Jamsheed, began his
wine career in the vineyards of Margaret River. The
Jamsheed label began in 2003 with a focus on single
vineyard Syrahs and aromatic whites from unique sites
in Victoria.
Yarra Valley
Luke Lambert
Luke Lambert believes that the personality of a wine is dictated by its place.
He therefore makes his wines from single vineyards on sites with poor, rocky
soils in elevated pockets of the Yarra Valley. Luke started out with 1,000 kg
of fruit, a small basket press, a tank and a 30-year-old barrel. A few vintages
later, not much has changed. The fruit is handpicked and wild fermented with
no temperature control, new oak, pumping, filtration,
or fining, and sulphur is used sparingly. Instead, he
favours hand plunging, long macerations (with plenty
of whole bunch for the Syrah), basket-pressing,
gravity, and old oak. Luke is a perfectionist and it
really shows in his wines where purity and tension
dominate. Although he is a Nebbiolo obsessive, his
Syrah is reminiscent of the Northern Rhone and his
Chardonnay is positively febrile.
ARGENTINA

Mendoza | Valle de Uco
Antonio Mas
With 40 vintages under his belt, Antonio Mas is one of Argentina’s most
experienced winemakers. From 1994 to 2011, he led the winemaking and
vineyard management at Finca La Anita, the first successful Argentinian
winery based on a Bordeaux château style. With the aim of developing
his own family project, he bought vineyards
in Tupungato, in the heart of the Uco Valley,
considered the best terroir for growing Malbec
in Mendoza. Today, Antonio Mas works with
his sons Manuel and Santiago with the aim of
making elegant, fruit-driven wines reflecting the
characteristics of their unique terroir. The Núcleo
is a serious, sophisticated Malbec that reflects
the high altitude the grapes are grown at.
Mendoza
Bodega Filus
Situated in Mendoza, Bodega Filus was created in 1997 by Ambrosio Di Leo
and Gustavo Capone, two wine lovers pursuing their dream of producing
typical Argentinian wines of excellent quality. The property is made up of 6
sites spread over 150 hectares in different parts of
Mendoza. The vines are located at between 1000m
and 1500m of altitude at the foot of the Cordillera
de Los Andes where they benefit from the cooling
influence of the mountains at night and are irrigated
by snow melt. Ambrosio and Gustavo use French
oak to age their wines. It wasn’t easy to find but
this wine really stands out for its varietal character
and value for money.
Wagram | Krems
Josef Ehmoser
Weingut Josef Ehmoser is run by third generation winemaker Josef
Ehmoser and his wife Martina in the village of Grossweikersdorf, between
Krems and Vienna. Josef believes in minimal intervention in the vineyard
and achieves phenolic ripeness through a deep
understanding of the vine and its environment. This
philosophy is also applied in the wine cellar where
Josef aims to support the potential of the vines and
highlight their innate character without forcing them
on a prescribed path. The result of these efforts is
a classic Wagram Grüner Veltliner of great purity
and a Zweigelt with good texture and freshness.
Kamptal
Weingut Weixelbaum
Over the years, Strass in the Kamptal has developed a reputation for
being a pioneering winemaking region. It is also home to Austria’s oldest
winemaking establishments, which include the
Weixelbaum winery. Weingut Weixelbaum is
managed by Gabi and Heinz Weixelbaum, the
third generation of the family of the same name,
with Heinz’s mother helping out in the vineyard.
Plentiful clay, loess and bedrock soils help create a
distinctive Grüner Veltliner. Heinz, who is in charge
of the winemaking has two simple aims: “To make
wines we love to drink ourselves and to see others
enjoy them.”
Mosel | Ayler Kupp
Peter Lauer
Weingut Peter Lauer of Ayl is currently one of the top estates in the
Saar. A relatively recent addition to the notoriously
discriminating VDP Mosel-Saar-Ruwer or Grosser
Ring, the winery is now run by Florian Lauer (the son
of the second Peter Lauer). Unlike other well-known
producers that favour styles with plenty of residual
sugar, Florian is focused on making dry to slightly
off-dry Riesling with great tension and precision
or, as he likes to describe them, “Rieslings for
advanced learners”.
Rheinessen | Bechtheim
Matthias Runkel
Matthias Runkel has a surprising number of vintages under his belt for
someone in his late twenties. The son of a winemaker, he added to his
knowledge by studying oenology and has now taken over the winemaking
at the family winery. Matthias spends most of
his time in the vineyard. The result of this careful
viticultural work is wine with character and good
varietal typicity. (Not always easy to find as, even
in Germany, the “international” varietals are making
their presence felt). His pure, mineral, style of
Grauer Burgunder is a joy to drink while his leafy,
savoury Spätburgunder makes a good alternative to
Burgundy on any list.
Alsace | La vallée noble
Léon Boesch
The Boesch family have been making wine for
generations – eleven to be precise - and have been
amassing quality vineyards since 1640. The result
is 13 hectares of remarkable terroir managed by
Gérard Boesch and his son Mathieu. Both father and
son have been practising organic viticulture since
2000 and only use indigenous yeasts. The wines
are aged on the lees until the summer following the
harvest to give plenty of texture to the wines.
Burgundy | Bouzeron
Domaine de Villaine
Aubert de Villaine, heir to Domaine de la Romanée-Conti, and co-director
since the 1960s, is the man behind this project. In the 1970s, Aubert and
his American wife, Pamela, took over a run-down estate in Bouzeron, one
of the last forgotten enclaves of Burgundy, situated between Chassagne-
Montrachet, Santenay, Rully, and Mercurey.
Bouzeron boasts the best Aligoté in Burgundy:
the Aligoté Doré. Unlike the lesser clone, Aligoté
Vert, Aligoté Doré gives smaller yields to produce
more refined wines with expressive aromatics and
greater equilibrium. Nowadays, Pierre de Benoist,
Aubert’s nephew, runs the domaine, upholding the
sense of tradition, excellence, and standards for
which it has become so well-known.
Burgundy | Cote d’Or
Méo-Camuzet
Méo-Camuzet is undoubtedly one of the
finest estates in Burgundy. Surprisingly, for
many years the family’s vineyard holdings
were leased out. It was only in the 1980’s
that Jean-Nicholas Méo, with the guidance
of Henri Jayer, started the domaine on the
path it is on now. Since then, Méo-Camuzet
has marked itself out as a top producer
with a distinctive style, encapsulating
intensity and elegance.
Mark Haisma
Mark Haisma does not make predictable wine. He does
not aim for consistency, or familiarity, or safety when
he makes wine. He is obsessive about vine quality,
vicious about interventionist winemaking and, by
his own admission, a pain to be with during vintage.
A wine science degree was of no use to him with its
emphasis on irrigation formulae, fertiliser application
schedules and mass market production techniques
so instead he trained under the legendary Dr. Bailey
Carrodus at Yarra Yering in Australia’s Yarra Valley, a
man famous for tipping down the drain entire vintages did not meet his
exacting standards.
Mark makes wine with the intention of transporting the drinker to another
place. These wines are true expressions of Burgundy terroir: very fine, linear
and elegant with excellent balance and length.
Benjamin Leroux
Benjamin Leroux, the gifted general manager of Domaine Comte Armand
launched his own label in 2007. While there are over twenty terroirs produced,
this is certainly a micro négociant operation with only two to five barrels made
of most of the cuvées. Leroux works with vineyards
he manages, vineyards he owns and also buys fruit
(never juice or wine) from growers that can meet his
exacting standards. Half of the vineyards that Leroux
works with are currently organic or biodynamic and
100% of the sites are ploughed with no herbicides
or pesticides. This exceptionally talented vigneron
is a master at delivering purity of fruit alongside a
seamless texture in his wines which have only the
subtlest influence of oak. Incredibly, he still finds
the time to manage Comte Armand.
Burgundy | CÔTE d’Or
Camille Giroud
Established in 1865, Maison Camille Giroud has
carved out a reputation for being one of the best small
négociants in Burgundy. Historically, the company
produced wine with heavy extraction and very long
barrel ageing. Most of the crop was kept back until
it was ready to drink, even if that was 30 or 40 years
later. There were plenty of misses but also some
extraordinarily fine wines.
The business is now managed by winemaker and
technical director Carel Voorhuis. The quality of winemaking is now
consistent and very much in the practice of very gentle oak treatment and
little racking continues. Camille Giroud has tiny vineyard holdings in Beaune.
It relies on contracts from as far afield as Marsannay and Maranges, with
particular strengths in Corton and the Gevrey-Chambertin vineyards.
Beaujolais | Morgon
Marcel Lapierre
One of the most sought after producers in Beaujolais today, the wines of
Lapierre are legendary. Together with Foillard, Breton and Thevenet they
were instrumental in breathing a new lease of life to the wines of the region.
Lapierre led the return to using the ‘old methods’ starting with old vines,
never using synthetic herbicides or pesticides, harvesting late, rigorously
sorting to remove all but the healthiest grapes, adding
minimal doses of sulphur dioxide or none at all, and
disdaining chaptalisation. Following the sudden death
of Marcel Lapierre, the domaine was taken over by
his children: Mathieu (formerly a 2 star Michelin chef)
and his sister Camille. These wines are what good
Beaujolais is all about: they are full of life, have great
character and are incredibly easy to drink. Mathieu
Bordeaux | Lussac St-ÉMILION
CHÂTEAU LYONNAT
Wine has been produced at Château Lyonnat for
centuries. The vineyard (79 acres, planted 90%
to Merlot and 10% to Cabernet Sauvignon) is
blessed with a southern exposure and a soil rich
in limestone. Other factors that contribute to the
quality of the wines include several parcels of very
old vines, and yield reduction techniques such as
severe pruning and green harvesting. Fermentation
generally lasts 10 days. A long maceration of
typically three weeks follows. The wine is then racked into new oak barrels
for malolactic fermentation and aged for 18 months. The resulting wine is
cherry red with an intense nose of marinated plums, black cherries and
complex, tertiary aromas.
Chablis
Samuel Billaud
We are proud to number Samuel Billaud, one of the very best winemakers
in Chablis, among our producers. After finding family politics at the famous
Billaud-Simon tough going, Samuel set up his own shop taking 18 years’
of winemaking experience with him. Samuel farms fruit
from his own family parcels. As a member of one of the
longest established families in the region, he is also
able to source top quality fruit from other growers.
All vineyards are managed directly. The wines are
fermented with native yeasts and have exceptional
purity and balance. This year, we were fortunate
enough to be offered a very small allocation of
Samuel’s Premier Cru Montée de Tonnerre as well as
Chablis
Nathalie et Gilles Fèvre
Gilles Fèvre met Nathalie when they were both
winemaking students in Dijon. For 12 years, Nathalie
was Chef de Cave at La Chablisienne, the region’s
famous cooperative winery, which, rather coincidentally,
was co-founded by Gilles’ grandfather. Since 1923,
the fruit of the Fèvres’ labour has been sold to La
Chablisienne, including grapes from the family’s prized
parcels in the Grand Cru Les Preuses. This all changed
with the 2004 vintage when Nathalie left the co-op to
launch Domaine Fèvre with her husband. Nathalie now
focuses her winemaking talents solely on the family’s grapes and, together
With only nine and a half hectares under their belt, Bérèche & Fils have
managed to create a reputation for itself around the world, thanks to
top vineyards (three Premier Crus and one Grand
intervention in the vineyard. Once the preserve of a
few sommeliers in the know (Noma, The Ledbury,
acknowledged as some of the most exciting grower
Raphaël & Vincent Bérèche, together with their father, are responsible for
creating the exceptional wines at Maison Bérèche. Although justifiably
proud of the fruits of their labour, the brothers
wanted to produce a series of wines that would
showcase the classic terroirs of Champagne.
In 2014, the Raphaël & Vincent Bérèche label
was born. Each wine is made using fruit from a
precise lieu-dit. The wines are divided into the
Côte, Vallée, and Montagne collections, using
fruit from both Premier and Grand Cru sites. We
Champagne | dizy
Gaston Chiquet
Gaston Chiquet has made a name for itself as one
of the best grower Champagnes. In a region with
thousands of small producers, it is a credit to
owners Antoine and Nicolas Chiquet.
Based in the evocatively named Dizy, the family
first planted vines in 1746 but did not produce
Champagne until 1935, when brothers Ferdinand
and Gaston Chiquet took the bold step of setting
up their own label, rather than just selling grapes
to the larger houses.
Due to the large percentage of Pinot Meunier in the blend, the Brut nonvintage
between them. These vineyards are farmed and
handpicked by small-scale growers. The region
has mostly volcanic soils, which produce wines
with both ripeness and minerality not often seen in
Jura | ARBOIS
Lucien Aviet
The Aviet family were some of the first winemakers in the Jura to bottle their
own wines. The family farm 6 hectares of vines in the commune of Montigny-
Les-Arsures (one of the 13 communes in the Arbois AOP) and practise lutte
raisonnée (sustainable viticulture). In the winery, everything is done with
precision and thought. Their white wine, Cuvée des Docteurs, is made from
Melon à queue rouge, an ancient strain of Chardonnay
grown by only three top producers in Arbois. The fruit
comes from old massal selection vines planted in 1929.
The wines are aged in old foudres for three years and
regularly topped up. Les Rosières is the finest of Aviet’s
three cuvées of Trousseau. The fruit comes from Southfacing,
40 year-old massal selection vines, planted in
gravel soil. It has clarity of fruit and a mineral stamp,
with good structure and spicy notes on the finish.
Loire | Chinon
Nicolas Grosbois
The Grosbois family has produced wine in the Loire Valley since 1820. Today,
Nicolas Grosbois produces four cuvées of Chinon, vinified by geographic
parcel. In the past, Nicolas has made wine in Chile, Oregon, Australia and
New Zealand but nowadays he prefers to focus all of his energies on 9
hectares of vines, mostly Cabernet Franc (known locally as Breton), the
oldest of which is around 60 years old. All of his wines
showcase Cabernet Franc at its very purest. In 2016,
Nicolas’ vineyards fell victim to the terrible freeze that hit
the region. Most of his crop was destroyed. Determined
to produce wine in this most difficult of vintages, he
went to Gaillac, in South West France, to hunt down four
grape varieties to produce “Cousine de ma Mère”. For
Nicolas, this wine is like a cousin of the wine he usually
produces from domaine fruit. The terroir may be different
but the spirit is the same.
Loire | Sancerre
Daniel Chotard
Daniel Chotard is a small producer whose family has been farming the
slopes of Crézancy-en-Sancerre, where flint meets clay and the famous
Kimmeridgian limestone, for well over 200 years.
Daniel farms organically and typically harvests his
grapes later than his neighbours, resulting in less of
the acidity that is so typical of the appellation. These
wines are complex, lush and long with a lengthy
mineral component imbued by the limestone soil.
Aged on lees, Daniel’s wines are much rounder than
most Sancerres and have excellent texture.
The often forgotten Saumur-Champigny appellation is one of the best value
to farm the vineyards at Domaine des Coutures
15 hectares of vines made up predominantly of
Cabernet Franc, which performs well in the clay
Northern Rhone | Hermitage
Jean-Louis Chave
The Chaves have been growing vines on Hermitage hill for over 500 years.
Gérard Chave took over from his father in 1970 and rapidly achieved
star status due to the extraordinary quality of his wines.
The only family to still own vines on this iconic
terroir (big brands have bought out the rest), the
Chaves own 15 hectares spread across 9 of the 18
different climats (vineyard sites) on the hill. Each
site has a different aspect and soil type, giving
varying nuances to the wine. This allows Jean-Louis
Éric Texier is now the leading light of Brézème, a small enclave of the northern
Rhône. While reading a book on the Grands Terroirs de France (published
in 1880) during his former life as a nuclear scientist, Éric discovered that
Syrah grown in Brézème used to be some of the best in the world. By 1961,
however, just one hectare remained. Éric decided to
try and revive the region and acquired a vineyard,
experimenting with organic and biodynamic
methods. His Syrah is characteristically warm and
spicy but whole bunch pressing gives the wine
crunchy plum skin tannins. Although known for his
reds, his whites are similarly compelling.
Although still relatively young, Domaine Matassa is already well-established
give the whites a somewhat funky character but
this is tempered by great freshness and texture.
Thanks to schist and slate soils, a mineral note
Le Soula produces wines of remarkable quality at high altitude in the
Saladini Pilastri has practised sustainable, low-impact organic farming in the
limestone hills of Spinetoli and the sunny hills of Monte Prandone and Porto
d’Ascoli, since 1994. The elegant and full-bodied
Falerio is produced using a blend of Trebbiano,
Passerina and Pecorino. The Pecorino grape, native
to the Ascoli region, thrives in the fresh environment
of the mid-mountain slopes, which experience wide
temperature variations. This early-ripening grape
produces a wine of great structure and character
with good minerality and citrus notes.
Piedmont | Langhe
Fontana Fredda
Maretti Langhe Rosso is produced by Fontana Fredda in Barolo, with the
intention of showing that the region can turn out good wines that don’t
have to cost the Earth. Made from 70% Barbera and 30% Nebbiolo and
fermented using only wild yeast, the wine is aged 8 months in small French
and large Slavonian oak. It is then blended and
given a further 4 months in large oak casks. This
is a great value example of the Piedmontese style.
The nose is fruit-driven and vibrant with aromas of
fresh red fruits, dried herbs and a hint of aniseed.
The palate is driven by a core of supple raspberry
and dark plum flavours courtesy of the Barbera
while the Nebbiolo brings fine tannins, appealing
aromatics and length.
Home to the Spalletti family, who have lived on the estate for generations,
Il Colognole is arguably the best producer in
Established in 1716, Quinta do Vallado, is one of the oldest and most
famous quintas in the Douro Valley. In 1993, under the guidance of Professor
Nuno Magalhães, a thorough replanting of the vineyards was started, with
the objective of increasing the production of high-quality grape varieties.
These new vineyards were planted with the best
varieties in single plots, breaking with the old
tradition of planting many different varieties in the
same vineyard. (Often referred to as a field blend).
Nowadays, the winery has built a reputation for
Celler La Salada
Following the success of Mas Candí, Toni Carbó set
up Celler La Salada in 2012. Toni’s old vines express
Catalan wine as it was when his grandfather made
it: fresh, lively and full of character. The soils of
Maçaners, Toni’s red wine, is made from Sumoll,
Celler Mas CANDÍ
Mas Candí was founded in 2006 by four young
viticulture and oenology students who, after working
in Burgundy, wanted to make wines from their families’
vineyards. It is now one of the most exciting and avantgarde
producers in the Penedès. The focus is mainly
on indigenous Catalan varieties, many of which they
recovered themselves. The wines are produced in a
very natural way with meticulous attention to detail in the
vineyard. No chemical fertilizers, antifungal treatments or
pesticides are used. New in this year, Desig (their white wine), from old vine
Xarel-lo is made from old vine Xarel-lo. With a nose of ripe pear, pineapple
and fennel and a textured, mineral palate, Desig speaks of its terroir and its
old vines. We also have a limited amount of their new red wine, Cabòries.
Valencia
Bodegas Nodus
Adolfo De Las Heras Marín acquired the El Renegado (the renegade)
estate in Valencia in 1985. In the beginning, the estate was made up of 540
hectares of forest and vines, of which 80% were 40 years old and produced
native Bobal grapes. In keeping with the times, Adolfo also introduced other
grapes such as Merlot and Cabernet. During those early years, Don Adolfo
began marketing young wines as well as discovering
new methods of winemaking.
But it was his son, Adolfo De Las Heras Polo who, upon
taking over the winery in the late nineties, revolutionised
the quality of production, importing additional varieties
such as Syrah, Chardonnay and Cabernet Franc. Adolfo
has meticulously and expertly shaped the Bodegas
modern techniques. Certified organic, these wines are
studying oenology at Bordeaux University, Telmo Rodríguez and Pablo
Instead, the partners set out to acquire parcels of vines in forgotten enclaves
Rueda
Telmo RODRÍGUEZ
Telmo Rodríguez and Pablo Eguzkiza, the two
winemakers behind the Compañia de Vinos Telmo
Rodríguez, are genuine pioneers. Since the 1990s,
they have advocated the use of native grape varietals
to make world-class wines from both undiscovered
and well-known regions. The pair have worked hard to
reflect distinctive vineyards planted in historical sites
with soil and landscape prevailing over grape variety.
Many of the trendy young winemakers that are now
making a reputation for themselves in Spain interned under Pablo.
In an effort to blur the winemakers’ footprint, a mix of various materials and
different vessels are used for fermentation and ageing. Telmo and Pablo
have experimented with everything from concrete eggs to amphorae but
they are not interested in talking about them, believing instead that it is all
Northern & Central Spain
Proyecto Garnachas de España
Proyecto Garnachas de España pays homage to a grape variety that was
relegated to the background for some years. Thankfully, current consumer
tastes have brought it back into the limelight. This collection is the result of
a very personal project by Raul Acha from Bodegas
Matsu. For some time, Raul has been searching for
vineyards in different areas of Spain that best reflect
the essence of this variety. The result is a collection
of monovarietal wines from very old vineyards
that capture the concept of terroir as each wine
expresses all of the nuances and singularities
typical of its area.
Tarragona
Petxina Wines
These wines are a real find. The product of a joint venture between Oleguer
Brunet, a young and dynamic producer, and Celler 9+, a family-owned
winery. The winery itself quite young but with many old vines, belongs to
Moisès, owner and oenologist of the vineyard, and
his family. The wines are produced from organic
grapes grown in coastal vineyards in Tarragona, in
North-eastern Spain. The “marinada” (sea breeze)
gives these wines great freshness while the old
vines provide natural concentration. The white, Blau
Cel (Catalan for blue sky), is a blend of Xarel.lo and
Macabeu while the red, Blau Marí (blue sea), is made
from Garnacha and Cabernet Sauvignon.
Toro
BODEGAS Matsu
Toro is an area that has traditionally not interfered with its vineyards too
much. Thanks to its climatic conditions (low humidity and sandy soils), there
is no need to apply any chemical treatments to the vine to avoid diseases
as in other regions. This may have contributed to the
tradition of allowing nature to play its role and helps
explain the region’s commitment to organic wines
and biodynamic agriculture. All three of these wines
are made from Tinta de Toro which grows on vines
aged 80 to 100 years that have a very low yield per
vine. During fermentation. the temperature is kept at
24 degrees or below. This is an essential factor in
preserving the freshness that is so characteristic of
these wines.
