Chef de cuisine<br />
Empezamos hablando un poco<br />
de Zozoi?<br />
Por supuesto que sí... Zozoi es un<br />
restaurante acogedor situado en el<br />
corazón del casco antiguo de Marbella.<br />
Dónde podemos disfrutar de una<br />
cocina con influencias belgas (más<br />
allá de las patatas fritas y el chocolate)<br />
y asiáticas siempre aplicando las<br />
técnicas francesas.<br />
Personalmente, qué plato te<br />
gusta más de la carta?<br />
Sin duda alguna el que vuelve vacío a<br />
la cocina. Jeje<br />
Al ser muy goloso, desde la carne<br />
(gallega) al pescado salvaje pasando<br />
por las verduras ecológicas, no sabría<br />
donde elegir; Siempre respetando las<br />
temporadas y comprando todos los<br />
días productos frescos del mercado.<br />
Por supuesto los platos especiales<br />
que permiten expresar mi creatividad<br />
según los productos seleccionados<br />
del día, como por ejemplo, bacalao<br />
negro salvaje pochado en mantequilla<br />
a baja temperatura con trufa negra<br />
fresca o algún plato típico Belga<br />
también incluido en el menú como los<br />
mejillones de “Bouchot” en diferentes<br />
versiones. En definitiva disponemos<br />
de un menú variado para satisfacer a<br />
todos los paladares.<br />
Empecé a cocinar con 15<br />
años,seguidamente ingresé en la<br />
escuela de hostelería de “Namur”<br />
pasando por varios restaurantes<br />
de la capital belga donde adquirí<br />
los conceptos básicos de la cocina.<br />
Después viaje por muchos lugares<br />
diferentes hasta llegar en 2013 a<br />
Madrid e incorporarme como profesor<br />
de cocina francesa en la prestigiosa<br />
escuela del “Cordón Blue”, terminando<br />
dos años después en Marbella en<br />
Zozoi donde encontré mi pequeño<br />
rincón de paz y felicidad el cual<br />
buscaba tras 22 años de carrera.<br />
En Zozoi, qué tenéis previsto<br />
para la temporada de invierno?<br />
Primero quitarme el bañador, jeje, pero<br />
sobre todo después de una temporada<br />
de verano increíble entramos en la<br />
de invierno con ganas y expectativas,<br />
eso si, con más tiempo y calma para<br />
realizar diferentes caldos, salsas y<br />
seguir innovando, diciendo esto pienso<br />
en los productos de caza, las setas la<br />
trufa y el foie gras.<br />
Por supuesto lo puedo realizar todo<br />
gracias a mi equipo y a que lo que<br />
queremos es transmitir amor pasión y<br />
buena cena.<br />
Yes of course, Zozoi is a cozy<br />
restaurant located in the heart of<br />
the old town of Marbella. Where you<br />
can enjoy Belgian influenced cuisine<br />
(Beyond chips and chocolates) and<br />
asian whilst always applying French<br />
techniques.<br />
Personally, which dish do you<br />
like the most on the menu?<br />
Without a doubt, the one that returns to<br />
the kitchen empty. Hehe<br />
Being honest I love all of them and<br />
I wouldn’t know where to start, from<br />
the meat (Galician) to the wild fish<br />
and the ecological vegetables, but<br />
always respecting the seasons and<br />
buying fresh produce from the market<br />
every day. Of course the special<br />
dishes that allow me to express my<br />
creativity according to the selected<br />
produce of the day, for example, wild<br />
black cod poached in butter at low<br />
temperature with fresh black truffle<br />
or a typical Belgian dish like mussels<br />
from “Bouchot” prepared in different<br />
variations. In short we have a varied<br />
menu to satisfy all tastes.<br />
What has been your career<br />
path?<br />
I started cooking at the age of 15,<br />
soon after I entered the hotel school<br />
of “Namur” then working in several<br />
restaurants in the Belgian capital<br />
where I acquired the basics of cooking.<br />
Then I traveled through many different<br />
places until arriving in Madrid in 2013<br />
and joining the prestigious school<br />
of “Cordón Blue” as a professor of<br />
French cuisine, ending two years later<br />
in Marbella in Zozoi where I found my<br />
little corner of peace and happiness<br />
which i sought after 22 years of career.<br />
At Zozoi, what do you plan for<br />
the winter season?<br />
First take off my swim suit, hehe, but<br />
especially after an incredible summer<br />
season we enter the winter season<br />
with high hopes and expectations,<br />
also with more time and calmness to<br />
carry out and innovate different soups<br />
and sauces, saying this I think of the<br />
hunting season, mushrooms, black<br />
truffle and foie gras. Of course I can<br />
accomplish all of this thanks to my<br />
team and what we want is to transmit<br />
is love and passion for good food.<br />

Si estás leyendo esto y eres de los que<br />
en este verano ha disfrutado mucho, no<br />
te ha faltado una fiesta en el beach club<br />
de turno, no te ha faltado tu copa en la<br />
mano y no le has puesto limites a tus<br />
comidas y cenas, no sería mala idea que<br />
empezaras a darle a tu cuerpo y mente un<br />
poco del “estilo de vida saludable”. Por eso,<br />

consejos básicos pero fundamentales,<br />

1. Entrena con pesas<br />

desafío para tu organismo.<br />
3. Cara Verde<br />
¿CARA VERDE? ¿Qué significa eso?<br />
Es muy sencillo, la próxima vez que<br />
abras el frigo para comer algo, piensa<br />
en cara verde. Cara verde es todo<br />
aquello que sea verde o todo lo que<br />
haya tenido una cara antes. Si si, una<br />
cara, piensa en carnes, pescados,<br />
huevos,… han tenido una cara antes,<br />
la de la vaca, el pez o la gallina que<br />
nos ha aportado el alimento. Con el<br />
verde, en realidad cualquier otro color<br />
me vale, pero siempre que sea verdura<br />
o fruta. Repito, tienes hambre, vas al<br />
frigo pensando que vas a comer,…<br />

5. Estrés, no gracias.<br />
Consejos para empezar con tu<br />
entrenamiento y tu alimentación,<br />
listos. Si te ha tocado volver a tu<br />
rutina habitual de trabajo, y crees<br />
que puedes incluir de forma “sencilla”<br />
los pasos anteriores, pero el ritmo<br />
acelerado diario te deja K.O., vamos<br />
a buscar estrategias para que el<br />
estrés no arruine la consecución de<br />
tu objetivo de “tener salud y verte<br />
bien en el espejo”. Actividades como<br />
el Yoga, la meditación o leer un libro<br />
han demostrado ser eficientes para<br />
disminuir los niveles de estrés agudos.<br />
Elige la que más paz, tranquilidad<br />
y conexión contigo mismo te dé, y<br />
limítate a disfrutar de ese tiempo para<br />
ti.<br />
“Voy a hacer algo de cardio primero<br />
para coger algo de fondo y luego<br />
me apuntaré al gym” es algo que<br />
quizás hayas escuchado o pensado<br />
alguna vez. Y mucho más cuando<br />
todos los que vivimos cerca de<br />
Marbella tenemos un paseo marítimo<br />
estupendo para andar, correr, ir en<br />
bici, etc… Me temo que esto ni es<br />
eficiente, ni adecuado ni perfecto,<br />
y aquí sólo aceptamos lo mejor<br />
para ti. La ciencia ha evidenciado la<br />
necesidad del trabajo de fuerza para<br />
mantener un nivel de masa muscular<br />
adecuado, por lo que es imprescindible<br />
que incluyamos el trabajo con pesas<br />
en nuestra rutina. Y sí, es el consejo<br />
número 1. Así de importante, siendo<br />
considerada una enfermedad, llamada<br />
sarcopenia, definiéndose como la<br />
pérdida de masa muscular debida a la<br />
falta de ejercicio físico y al avance de<br />
la edad.<br />
2. Dietas detox caca<br />
POR FAVOR, por favor, no malgastes<br />
tu dinero en la “dieta detox” a base<br />
de zumos que esten de moda<br />
ahora, porque aunque te digan que<br />
van a “limpiarte profundamente” en<br />
una semana, no existe evidencia<br />
científica que confirme las promesas<br />
que te venden. Lo que realmente<br />
estás deseando lo vas a encontrar<br />
volviendo a comer comida real y de<br />
calidad. Si realmente quieres hacerte<br />
una “limpieza” infórmate y hazte una<br />
detoxificación hepática a base de<br />
cardo mariano o prueba con un enema<br />
a base de café orgánico. Si no quieres<br />
llegar a ese extremo, con que leas el<br />
siguiente consejo vas a ir bien para<br />
empezar ;)<br />
4. Cardio ok<br />
¿Pensabas que íbamos a demonizar<br />
el cardio al decirte sólo que<br />
hagas pesas? En absoluto! Todo<br />
es perfectamente compatible en<br />
un programa de ejercicios bien<br />
planificado. El trabajo cardiovascular<br />
con intervalos de alta intensidad (HIIT<br />
sigla en inglés) se ha mostrado como<br />
una estrategia eficiente en tiempo para<br />
mejorar cardiovascularmente y ayudar<br />
a la pérdida de grasa. No obstante, ni<br />
es la opción adecuada para todos, por<br />
la intensidad requerida para trabajar,<br />
ni es la mejor opción. Aprovechemos<br />
ese maravilloso paseo marítimo que<br />
tenemos para hacer otros tipo de<br />
trabajo cardiovascular menos intensos<br />
pero más extensos en tiempo, como<br />
puede ser una carrera de 30min o un<br />
largo paseo.<br />

any beach club parties, you always<br />
had a drink in your hand and you didn´t<br />
stop eating everything day and night,<br />
maybe, just maybe, it would be a good<br />
idea to give your body and mind a little<br />
of the “healthy lifestyle”. That´s why<br />
we are going to give you the best and<br />
more eficient tips on being healthier<br />
and looking better on the mirror.<br />
2. Detox diet, shit<br />
PLEASE, please, don’t waste your<br />
money on the trendy juice based<br />
“detox diet”, because even though<br />
they promise you it’s going to “clean”<br />
your body in a week, there is not any<br />
scientific evidence on those claims<br />
they are selling you. You can find<br />
what you are looking for in real food.<br />
If you are really looking for a “cleanse”<br />
then go for a real liver detoxification<br />
program with cardo mariano or try to<br />
do an organic coffee enema. If you<br />
don’t want to get to that extreme, then<br />
next tip is going to be enough.<br />
4. Cardio OK<br />
Did you think you were not going to do<br />
any cardio by saying lift some weights?<br />
No way! Everything is possible on a<br />
well-planned training program. High<br />
intensity interval training (HIIT) is<br />
known to be useful as a time-efficient<br />
strategy to help losing fat. On the other<br />
side, maybe is not the best option<br />
for everybody due to its intensity.<br />
So people from Marbella, let’s take<br />
advantage of the wonderful Paseo we<br />
have to include other kinds of cardio<br />
less intense as a nice 30min run or a<br />
long walk.<br />
1. Lift weights<br />
“I´m just going to do some cardio<br />
before and then i´ll start at the gym”<br />
is something you have maybe heard<br />
or said before. Even more to all of us<br />
who lives close to Marbella and have<br />
a perfect “paseo maritime” to walk,<br />
run or bike. I´m sorry but this is not<br />
efficient, neither appropriate neither<br />
perfect, and we just want perfection<br />
for you. Science proofs the needs of<br />
strength training to maintain a proper<br />
muscle mass, so lifting weights is a<br />
must in our training program. Yes,<br />
it´s number 1 tip. It´s that important,<br />
already being considered as a disease,<br />
called Sarcopenia, described as the<br />
degenerative loss of skeletal muscle<br />
mass related to aging. A good starting<br />
point would be to include at least 3<br />
days of strength training, doing full<br />
body exercises that challenge yourself.<br />
3. Green face<br />
GREEN FACE? What is that? Really<br />
simple, next time you open the fridge,<br />
think of green face. Green face is every<br />
green food or anything that had a<br />
face before. Yes, a face, if you think of<br />
meat, fish or eggs,… they had a face<br />
as a cow, fishes or hen,... before they<br />
were on your plate. Actually green can<br />
be any other color if it’s coming from<br />
veggies or fruits. I insist, if you are<br />
hungry, fridge, GREEN FACE<br />
5. Stress, no thanks<br />
Training and nutrition tips, check! If<br />
you had to come back to your working<br />
routine, and you think you can maybe<br />
include easily all these tips, but the<br />
“going fast all day long” is going to<br />
leave you out of energy, let´s find out<br />
some strategies to achieve your “get<br />
healthy and look good in the mirror”<br />
goal. Activities like Yoga, meditation<br />
or just reading a book have shown to<br />
reduce acute stress levels. Choose the<br />
one that brings you more peace, relax<br />
and the one that connects more with<br />
yourself, and enjoy<br />

1. Teatro Marbella, un nuevo concepto, ¿cómo se os ocurrió?<br />
1. Teatro Marbella, a new concept. How did you come up with<br />
the idea?<br />
Teatro Marbella was born above all from the desire to bring to the public of Marbella a<br />
leisure option different to all that they have been able to find in Marbella up until now.<br />
After studying and researching the local marketplace, we arrived at the conclusion that<br />
this concept could have great market success and surprise everyone.<br />
2. How difficult was it at the outset?<br />
It is always difficult in the beginning, although to be fair it is fun too, the creative process<br />
is the most enjoyable part of the project.<br />
The risks are high, and I have to tell you that we were not expecting results so soon,<br />
fortunately and after a lot of hard work on behalf of the team, we have surpassed all our<br />
own expectations.<br />
3. Which was the best moment?<br />
I can not name a single best moment, but in general the best moment for all of us was<br />
when we began to see the happy faces of our clients when they came out of the place<br />
full of smiles.<br />
4. Which artists have been to TM?<br />
We have had artists like Erick Morillo, Black Coffee, Tyga, Ja Rule, Martin Solveig, Pete<br />
Tong, Booba, Hot Since 82, Claptone, Rafael Amargo...<br />
5. If you had to name one factor which was key to the success<br />
of this project. What would it be?<br />
Teatro Marbella nace sobretodo de las ganas de brindar al público de Marbella una<br />
oferta ocio diferente a todo lo que se podía encontrar en Marbella hasta el momento.<br />
Después de varios viajes y de estudiar el mercado local se llegó a la conclusión de que<br />
este concepto podría triunfar en este mercado sorprendiendo a todo tipo de público.<br />
2. ¿Qué tal fueron los comienzos?<br />
Los comienzos siempre son difíciles, aunque tengo que decir que también son bonitos,<br />
todo el proceso creativo es la parte que mas se disfruta de un proyecto.<br />
La apuesta era muy arriesgada y tengo que decir que no esperábamos resultados a tan<br />
corto plazo, afortunadamente y después de un duro trabajo por parte del equipo hemos<br />
superado nuestras propias expectativas.<br />
3. ¿Cuál ha sido el mejor momento?<br />
No puedo nombrar un solo momento, pero en general el mejor momento para todos es<br />
cuando comenzamos a ver la cara de satisfacción de nuestros clientes cuando salen<br />
del lugar con una sonrisa.<br />
4. ¿Qué artistas han pasado por TM?<br />
Hemos tenido a Artistas como Erick Morillo, Black Coffee, Tyga, Ja Rule, Martin Solveig,<br />
Pete Tong, Booba, Hot Since 82, Claptone, Rafael Amargo...<br />
5. Si tuvieras que nombrar un factor clave para el éxito de este<br />
