ECDC FALL FAMILY FESTIVAL<br />

The annual ECDC Fall Family Festival is set for <strong>October</strong> 14 th at St. Peter’s<br />

United Methodist Church and is held rain or shine. The event features<br />

various family-friendly themed events as well as on-site vendors. Some<br />

of these events will include pony rides, a petting zoo, balloon artists, face<br />

painting, inflatables, games, food and so much more. Cash and credit<br />

cards will be accepted for all attractions. Tickets for the attractions are<br />

for purchase the day of the festival. There will also be a themed basket<br />

auction, with tickets available for $1. The winner will be drawn and<br />

called after the festival. Proceeds for the Fall Festival will go to the ECDC<br />

preschool. The St. Peter’s Pumpkin Patch will open starting <strong>October</strong> 8 th<br />

and run through the end of <strong>October</strong>. Come out with the family for a day<br />

filled with fall fun, while raising money for the children of ECDC!<br />

BAYOU CITY ART FESTIVAL DOWNTOWN ANNOUNCES<br />

REQUESTS FOR VOLUNTEERS OCTOBER 14-15, <strong>2017</strong><br />

The Art Colony Association, Inc. (ACA) is in need of volunteers for Bayou<br />

City Art Festival Downtown on Saturday and Sunday, <strong>October</strong> 14-15,<br />

<strong>2017</strong>. Volunteers have the option of choosing various roles and shifts for<br />

either or both days. Shifts for Friday afternoon and evening will also be<br />

available for artist check-in and festival load-in.<br />

The festival offers volunteers the opportunity to make new friends and<br />

meet artists from around the country. After every shift, volunteers will be<br />

entered in a raffle and have the chance to win prizes, including gift cards<br />

to local restaurants, movie and museum tickets. All volunteers will receive<br />

a t-shirt and be able to enjoy the festival at no cost before and after their<br />

shift. The minimum age to sign up is 13 and group volunteering is also<br />

available. Anyone interested in becoming a volunteer can sign up here.<br />

Bayou City Art Festival will be held under the iconic Houston<br />

Downtown skyline, 10 AM - 6 PM. The festival will spotlight more than<br />

300 artists from 19 different disciplines and benefit local non-profits.<br />

Online tickets are on sale now until the day of the event at www.<br />

artcolonyassociation.org. Tickets online are $12 for adults and $5 for<br />

children 6-12; children five and under are free. Tickets at the gate are<br />

$15 for adults. Also available online are two-day passes for $20 and<br />

family passes (two adults, two children tickets) for $30. Discounted<br />

tickets for Veterans and Seniors will be available at the gate.<br />

BOO WITH THE BLUE:<br />

A HALLOWEEN TRUNK OR TREAT FESTIVAL<br />

On Saturday, <strong>October</strong> 28, <strong>2017</strong>, at the Rosenberg Annex Building (4520<br />

Reading Road) from 5-7 PM, the Fort Bend County Sheriff’s Office Juvenile<br />

Outreach Unit in collaboration with Fort Bend County Juvenile Probation<br />

Department will host “Boo with the Blue:” a Halloween Trunk or Treat<br />

Festival. The event will showcase law enforcement’s commitment to<br />

decrease crime by increasing community involvement. Individuals are<br />

encouraged to attend this family-friendly event while learning about<br />

resources in the community.<br />

In our efforts to make this day a success, we are seeking your support<br />

by donating candy or donating funds for us to purchase the candy for<br />

you. Should you decide to fulfill our request, your commitment to the<br />

community will be recognized and greatly appreciated by those in<br />

KATY CHRISTIAN WOMEN’S CONNECTION (KCWC)<br />

ANNUAL FALL FESTIVAL FUNDRAISING LUNCHEON<br />

Katy Christian Women’s Connection (KCWC) will be hosting our annual Fall<br />

Festival Fundraising Luncheon on Wednesday, <strong>October</strong> 18, <strong>2017</strong> at The<br />

Club at Falcon Point, 24503 Falcon Point Dr, Katy. This luncheon helps raise<br />

funds for our local and National Stonecroft ministry outreaches. We will<br />

host 11 local vendors, auction off baskets and have a bake sale in additional<br />

to a great lunch. Nancy Briggs from Houston, Texas will provide us with<br />

an inspirational message. The luncheon starts at 11 AM for shopping and<br />

fellowship and ends at 2 PM. The luncheon is $18 per person. KCWC is part<br />

of Stonecroft, a ministry for women which provides Bible Studies, Prayer<br />

Connections and fellowship luncheons around the US.<br />

Hurricane Harvey and Houstonians<br />

On August 26th, as I ushered my students out of class with a cheerful “See you next week,” many remarked that school would<br />

be closed due to flooding so they would not see me next week. I chuckled while advising them to stop wishing for the return<br />

of summer vacation and not to forget their assignments due Monday. After 4 days of rain, flooding, and the constant reports of<br />

more destruction on the news, I was feeling foolish at my lack of respect for the weather, guilty that my house was dry when<br />

friends and family only miles down the road had lost everything, and generally disheartened at Houston’s situation. The more<br />

I watched the news broadcast the devastation, viewed social media with awful stories of anger and hate, and began to take<br />

inventory of what it would take to get my life back to normal, I felt bitter, annoyed and grumpy. Thankfully, an eventful trip to<br />

the local pharmacy, helped me see a different view of the situation.<br />

After 4 days of rain with a sick baby, I was out of baby fever reducer. With frazzled nerves, my fevered, fussy 1-year-old hanging<br />

off my hip, and my 7-year-old complaining about the outing in general, a young man approached us and asked if I needed<br />

help. It was clear he didn’t work for the store as he was not in uniform and didn’t have on a name tag, but he could see I was<br />

having trouble locating what I needed on the bare shelves while juggling the kids, diaper bag, pacifier, etc. As he helped me<br />

find the last bottle of off-brand infant pain reliever, I silently prayed my oldest daughter, who was quietly staring down the<br />

young man with furrowed brow, would not ask any loud, inappropriate questions about his long hair, dark nail polish, or<br />

pants that did not sit anywhere near his waist. As he helped me look for the medicine, we made small talk and he disclosed<br />

that his family had been rescued a few hours before and he was thankful to be safely staying at a relative’s home until he<br />

could get back to his house to assess the damage. This whole encounter took less than 3 minutes. I thanked him profusely<br />

and we parted ways. As we drove home, my daughter began to ask her questions, and to my surprise, they had nothing to do<br />

with the young man’s appearance. She wanted to know how he would get the water out of his house; how he would know<br />

it was safe to go home and how he would get there; how he would get the money to buy more things if his stuff was ruined;<br />

and so on. She was very concerned for this young man and his family. I told her about all the organizations that were already<br />

providing for people like the man with things like shelter, food, clothes, and toiletries. When I looked back, my daughter was<br />

crying. She said that she was so happy that everyone wanted to help each other and that she wanted to help too by going<br />

through her clothes and toys when we got home. In that moment, all the negative feelings I was harboring disappeared. I was<br />

reminded that doing things for others and being a decent neighbor is what makes Houston amazing.<br />

I am thankful that young man helped me today. His helpful spirit, despite his desperate situation, helped remind me about<br />

what is important – people. I know Houston has a long road to recovery ahead, but I also know that Houstonians will take on<br />

the challenge with generosity, kindness, compassion and love.<br />

How to Carve<br />

A Pumpkin<br />

When it comes to pumpkin carving, the idea is to have fun. We’ve<br />

got tips on carving the best pumpkin, as well as how to pick a good<br />

pumpkin for carving!<br />

HOW TO PICK A GOOD PUMPKIN FOR CARVING<br />

Look for one that is a little misshapen. Inspect it for soft spots (especially<br />

the end opposite the stem). Reject a pumpkin that has soft spots, they<br />

will cause it to deteriorate quickly. Remember, your pumpkin doesn’t<br />

have to sit on its base, in fact, that’s often its weakest spot.<br />

Let the pumpkin guide the shape of the face: An elongated pumpkin<br />

should have an elongated face. A fat and happy pumpkin should have<br />

a fat and happy face.<br />

HOLLOW OR WHOLE?<br />

There are two reasons for hollowing: (1) If the inside is going to be<br />

exposed (through the mouth, etc.), it looks better if it is hollowed<br />

neatly. (2) If you plan to light the pumpkin from the inside, it must be<br />

hollow. You can hollow it out from a hole in the back instead of the top,<br />

so that the look of the face isn’t affected. If you’re illuminating with a<br />

candle, you need to hollow from the top to allow the heat and smoke<br />

to escape.<br />

THE TOOLS<br />

Use a water-based marker to outline the face that you want to carve.<br />

First, draw a line down the center to establish symmetry. Then sketch<br />

the nose, the approximate center of the face. Once you’re satisfied with<br />

the details, trace over the lines using a permanent marker. For carving,<br />

basic kitchen implements, such as a paring knife or a steak knife with<br />

a standard - not serrated - blade that’s not going to bend, work well.<br />

You can also use a standard jigsaw blade. Otherwise, improvise: Use a<br />

melon-ball cutter to make circles, for example.<br />

MAKE A FACE<br />

To achieve a three-dimensional appearance, carve the entire pumpkin.<br />

Exaggerate the features. (If you aren’t sure what teeth really look like or<br />

how the gum line works, smile and look in the mirror.) If the pumpkin is<br />

frowning, carve wrinkles under the mouth. To add character, carve a lot<br />

of “crow’s feet” lines around the eyes. Consider using the stem as the<br />

nose and inserts such as radishes for the eyes or cut eyeballs from the<br />

back of the pumpkin and hold them in place with toothpicks.<br />

CARVE WITH CARE<br />

Use two hands at all times: one to control the blade and the other to<br />

control the pressure with which you cut (and thus the depth). Take care<br />

not to jab the blade into the pumpkin; you don’t want to cut all the<br />

way through the rind - except to determine its depth. The thickness of<br />

the rind will vary, not only from pumpkin to pumpkin, but also within<br />

one pumpkin. To determine your pumpkin’s average depth, cut a core<br />

sample where you want an eye or a nostril to be. Keep that piece nearby<br />

as a reminder of how deep you can safely cut.<br />

ENJOY IT WHILE IT LASTS<br />

Pumpkins, which are actually a fruit, not a vegetable, are 90 percent<br />

water, so after carving they usually last only three days to a week. A<br />

jack-o’-lantern with a surface carving will last longer than one that<br />

is cut all the way through. Putting a candle or other light inside will<br />

shorten its life span, as the heat that results can “cook” the pumpkin<br />

and reduce its longevity to a matter of hours. For a bright, shiny finish,<br />

spray Armor All on the pumpkin and rub it in. Paint will not preserve a<br />

pumpkin. However, if you decide to paint your pumpkin for decoration,<br />

use a water-based latex paint and wait at least an hour after carving so<br />

that the cuts you have made in the pumpkin have a chance to dry.<br />

1/2 tsp baking powder<br />

1/2 tsp salt<br />

1/2 cup cocoa<br />

1 cup sugar<br />

3/4 cup vegetable oil<br />

1 large egg<br />

3/4 cup milk<br />

1 tsp vanilla extract<br />

VANILLA BUTTERCREAM FROSTING<br />

1 cup unsalted butter softened<br />

1/2 tsp vanilla extract<br />

1 3/4 cup powdered sugar<br />

1 tbsp heavy whipping cream<br />

food coloring green and orange<br />

HAT DECORATIONS<br />

Oreo Thins 1 per cupcake<br />

Hershey Kisses 1 per cupcake<br />

Candy Corn cut along color lines<br />

For the Chocolate Cupcakes: Preheat oven to 350 degrees F. Line a muffin tin<br />

with cupcake liners, then set aside. In a large bowl, sift together flour, baking<br />

powder, salt, and cocoa. Set aside. Using a stand mixer (or hand mixer + large<br />

bowl), beat together vegetable oil and egg on low for 30 seconds. Add milk<br />

and vanilla extract and mix until combined, about 1 minute. Keeping speed<br />

on low, slowly add the dry ingredients to the wet ingredients, about 1/2 cup<br />

at a time. Once all dry ingredients have been added, mix just until the dry<br />

ingredients are no longer visible, about another 2-3 minutes. Be careful not<br />

to overmix. Pour batter into prepared muffin tin, filling containers about 1/2<br />

way full. Bake chocolate cupcakes in the oven for 20-25 minutes or until a<br />

tester toothpick comes out clean. Let cupcakes cool in the tin for 5 minutes,<br />

then transfer to a wire rack to cool completely.<br />

Preheat your over to 400° in line a baking sheet with parchment paper.<br />

Wash then Slice your jalapeño peppers in half lengthwise and scoop<br />

out the inside. In a large mixing bowl, use a cheese grater to shred your<br />

block of pepper jack cheese. Chop a scallion in tiny pieces. Mix in your<br />

cream cheese, scallion pieces, garlic, pepper and salt to your shredded<br />

cheese. Fill your jalapeño peppers with your cheese mixture. Now<br />

unroll your crescent rolls into rectangles (leave two triangles together<br />

and pinch the middle together). Use a pizza cutter to cut each crescent<br />

rectangle lengthwise into four even pieces. Wrap one or two pieces<br />

around each pepper, leaving a small opening for the eyes. Bake for 10-<br />

12 minutes. Right when you take your mummies out of the oven, add<br />

two candy eyes in each top opening.<br />

Cupcakes<br />

For the Vanilla Buttercream Frosting:<br />

Using a stand mixer (or hand mixer + large bowl), beat butter and vanilla<br />

extract on high until fluffy. Drop speed to medium and slowly add sugar to<br />

butter, mixing thoroughly in between. If mixture gets too dry, add the 1 tbsp<br />

heavy whipping cream. If using food coloring, separate about 1/3 to 1/2 cup<br />

frosting to a separate bowl. Add green food coloring to the larger portion of<br />

frosting and orange food coloring to the smaller portion and mix thoroughly.<br />

Putting it all together:<br />

Decorate chocolate cupcakes with the green frosting (to create the “hair”<br />

for the witch) using a decorating tip of your choice. Press an Oreo on to<br />

the top of the green frosting (to create the brim of the hat). Using another<br />

piping bag, add about 1/2 tablespoon of orange frosting on top of the<br />

Oreo. Press an unwrapped Hershey Kiss into the frosting, using even<br />

pressure so that a ring of orange frosting appears around the base of the<br />

Kiss (this creates the top of the hat). Place a piece of cut candy corn into<br />

the orange frosting (for the hat buckle). I used only yellow pieces for this.<br />
