LIVE
IN
THE
NOW
I’ve been observing this for years. People who pop anti depressant
pills are the ones usually living in the past and in the future. It is
difficult – yes – but if we could only throw off the past and the
future with all their pain and fears, like a smelly, wet blanket, our
lives could only get healthier, calmer and happier. If you think about
it, the past and the future do not exist. If you tell a cat dinner will be
served at 7pm, it doesn’t give a hoot. It only follows its instincts –
that such and such happens because it feels hungry and can smell
cat food coming out of the kitchen. Does a baby stop drinking milk
because she thinks she will become a chubby woman without a
boyfriend? No. She stops drinking because she is full. Instinct tells
her to stop. Do squirrels store nuts because they think about the
cold winter in January and that food will be scarce? No – January
does not exist for the squirrel. He just hoards because he follows his
instinct.
Living in the present, in the NOW, and following our instincts –
should be on the agenda for all of us, and perhaps all that anger and
fear will dissolve.
Neo Tourbillon with Three Bridges Skeleton
Making light of gravity, mass and
opacity, the Neo Tourbillon with
Three Bridges Skeleton proudly
asserts the relevance of the Girard-
Perregaux approach to design,
watchmaking and style.
The Neo Tourbillon with Three
Bridges Skeleton is crisscrossed
with slender black finely rounded
bridges. Their curves and cut-outs
define the structure of the visual
effect and support an incredibly
slim mechanical structure. The
ethereal suspended masses appear
truly improbable given the extreme
transparency of this complex
calibre. Stretched like cables over
a precipice, the bridges of the
skeleton calibre are a nod to the
architecture of their monumental
counterparts around the world. The
Millau Viaduct in terms of its sheer
scope; the Mohammed VI bridge
in Rabat for the openworked and
sensual shape of its pylons; and the
Oversteek Bruk for the fine sense of
balance it exudes.
The former is wound by a microrotor,
which is placed concentrically
with the barrel – a unique position
for this organ. The high inertia of
this hefty white gold micro-rotor
ensures a minimum 60-hour power
reserve. The Neo Tourbillon with
WRISTWATCH
Perfectly encapsulated the philosophy of Kari
Voutilainen, the Voutilainen 217QRS wristwatch has
strong mechanism and is housed in a stylish and
elegant case.
Inspired from Vingt-8, the in-house movement is
designed, built, fabricated, finished and assembled in
its entirety in Voutilainen workshops. The design and
philosophy of the movement combines respect for
longevity and precision with classical watchmaking
tradition. A rare and unique balance-spring sytem has
been used; the exterior of the spring uses a typical
Phillips overcoil, while the internal curve uses the little
known Grossmann curve.
The Voutilainen 217QRS wristwatch is also the first
that offers longevity and stability in day-to-day use,
making the movement very special. The balance-wheel
A
Passion
for
Chinese
Opera
Media personality Nick Shen aims to
keep this traditional heritage alive
BY Carol Kraal
Credit: The Makeover Inc
It’s unusual that someone so young is interested in Chinese
Opera these days. But popular actor and entertainer Nick
Shen, who represented Singapore in Germany and bagged
the honouree award of JCI Ten Outstanding Young Persons of
the World in 2014, has a deep affinity for this Chinese art form
and hopes to keep it alive in Singapore.
Nick began his career as a drama and movie actor, singer and
host. He won the Singapore Star Search competition after
completing his acting course with MediaCorp. After being
in showbiz for close to 20 years, he is now a drama trainer
at Singapore Media Academy, where he has been since
2014. Being well-versed in English, Mandarin, Teochew and
other Chinese dialects broadens his range for entertainment
opportunities.
But no matter how wide he casts his net in the world of
showbiz, he will always have a heart for Chinese opera. He
believes the stories portrayed have deep meaning, moral values
and life experiences.
In 2011, Nick started his own company – Tok Tok Chiang as a
platform to promote Chinese opera, and has since been invited
to partner with People’s Association to bring awareness of the
art form to the public. Nick mastered the art of Sichuan Mask
Changing in 2013 and eventually brought the traditional art
of Chinese Opera to greater heights by performing Teochew
Opera and Sichuan Mask Changing internationally.
To make Chinese opera attractive to young Singaporeans Nick
created a hybrid genre of traditional Chinese opera dance with
western magic techniques. He has worked with Esplanade –
Theatres on the Bay to co-produce their mid-autumn festival
programme, and has done so for four consecutive years.
He conducts these performances in bilingual format, with
supporting English subtitles onscreen while the troupes,
including himself, are performing on stage with the original
script and music in the respective dialects.
With much perseverance, Nick realised his childhood dreams
in 2017 when he took over Lao Sai Tao Yuan Teochew Opera
Troupe, a local troupe with 154 years of history, as the youngest
troupe leader in Singapore. Nick also represented the troupe
in their performances in Toyama, Japan, as part of a Cultural
Exchange programme.
Nick continues to reach out to the younger generation and
propels the appreciation of Chinese opera by engaging with
them through film, drama, documentary, conducting workshops
and social media marketing.
A CHAT WITH
actor and media personality Nick Shen
about his love for Chinese opera
Are there personalities in Chinese opera that
you admire?
The warrior roles in Chinese opera first captured my attention
with their elaborate and stunning costumes. My admiration
grew as they are heroic figures with a good sense of justice,
courage, perserverance and resilience.
You must be credited with starting your
own company to promote Chinese opera in
Singapore. What is the best way to attract
the young and keep this art alive?
It is now a digital age and the best way to connect to the youth
is to be very active on social media and keep oneself updated
with the ever changing popular platforms. Information now
transmits at such a fast pace and can be readily accessible
anywhere in the world. Making films based on Chinese opera
– TV series, documentary or short films are good ways to keep
this art alive.
How has life as an actor with Mediacorp
shaped your views of Chinese opera?
It’s actually the other way around. It’s my passion for Chinese
opera that sparked my interest in acting. In the course of my
acting career, it has crafted my acting skills which, in turn, finetuned
my Chinese opera performance on stage.
Chinese opera is an ancient art form that
goes back many centuries. What do you like
most about it?
Chinese opera is theatrical art in which music, song, dance,
speech and acrobatics are woven together to create a unique
form of drama. To me this is a beautiful art, and I grew up
watching Chinese opera with my grandparents who also taught
me to appreciate and learn about the moral values portrayed in
each of the stories.
You have even come up with a hybrid form
of Chinese opera that combines traditional
Chinese elements with western forms and
English subtitles. Is this popular with the
audience?
These innovative performances have indeed been very wellreceived
as the audience now includes many foreigners and the
English subtitles have enabled them to understand the Chinese
opera plays a lot better. Also, incorporating magic elements
into Chinese opera arouses more interest in the younger
generation.
Do you think Chinese opera can be made into
a movie? If yes, which traditional storyline
would be best?
Definitely possible! The story Lady White Snake is a very
successful example. I personally like this significant story
in Teochew opera titled 柴 房 会 , which is a horror-comedy. I
believe that bringing this story to the big screen would be
interesting with all the CGI effects making it more enthralling to
watch.
How do you relax after a hard day at work?
By indulging in foot reflexology and traditional chinese tui-na.
Don’t underestimate the health benefits that these bring.
What advice would you give a youngster
who wants to be in the world of showbiz and
entertainment like you?
A Potential Cure for Diabetes:
Metabolic Surgery
Today, 1 in 9 Singaporeans has diabetes. Can this breakthrough help us win the war
against this “silent killer”? By Alan Li
Treating Diabetes
It has been a known fact by now that to treat diabetes, one
needs to control his blood sugar levels in the body. Most
people do it by medications, dietary changes and exercise. But,
did you know that there’s a surgical method to treat diabetes?
According to Dr Melvin Look, the Director and Consultant
Surgeon at PanAsia Surgery in Mount Elizabeth Hospital and
Parkway East Hospital during an interview with Exquisite, he
shares his insights on this breakthrough in diabetes treatment.
“The first step to the treatment of diabetes is a calorie
restriction diet to achieve a healthy weight,” explains Dr Look.
“Oral medication and insulin injections are often required to
bring down the blood sugar levels. Good control of this is the
key to avoiding the end-organ complications of diabetes.”
However, he reveals that metabolic surgery may now be an
excellent alternative for diabetic patients who want to consider
surgery for a long-term cure. “Randomised control trials have
shown that post-surgical patients showed better improvements
in quality of life and overall health compared with those who
only received medication alone,” notes Dr Look.
“One of the commonest metabolic surgery operation we do is
the Laparoscopic Sleeve Gastrectomy. It is a keyhole surgical
procedure that coverts the stomach into a long narrow tube
about the shape and size of a banana. This limits the amount
of food the patient can eat and enhances the effect of intestinal
hormones to bring down blood sugar.”
Dr Melvin Look
Metabolic Surgery VS Medications
Who should undergo the surgery?
According to Dr Look, metabolic surgery is highly effective in
helping obese diabetics lose their excess weight. “The majority
of patients will achieve an excess weight loss of about 70
to 80% after 18 to 24 months. In addition, these operations
also have a complex adaptive effect on our gastrointestinal
hormones which play an important role controlling blood
glucose levels,” he explains.
He suggests that patients who require more than one
medication for diabetes, or who are poorly controlled despite
multiple medications, should consider surgery. “The best
results are when patients come for surgery early, when they are
young, rather than when they are older and have developed
complications due to diabetes,” says Dr Look.
Ever since the Ministry for Health declared a “War on
Diabetes” in April 2016, this illness that hits without
noticeable signs has been receiving considerable
attention in Singapore. It was under the limelight once
again in August last year when Prime Minister Lee Hsien Loong
reiterated the idea during his National Day message, and called
upon Singaporeans to fight this debilitating disease.
This garnered much awareness across the country, and people
have become more accepting, or even curious about this
condition, according to Ms Heng Pei Yan, a diabetic patient who
has lived with this illness for the past two decades since her
diagnosis at the age of 10.
Ms Heng used to be in denial, especially during her teenage
years. “Back in high school and even university, I often skipped
my lunchtime injections. I refused to deal with it, or to be
inconvenienced by it. Sometimes I would just plain forget,” she
confesses.
However, an event organised by the International Diabetes
Federation changed her perception towards her condition. It
was an eye-opener for her and she decided to take greater
ownership of her health. She even started a Facebook group
called SGDoc (which stands for Singapore Diabetes Online
Community) to help any diabetic patient in need of support and
encouragement.
As a result, this surgery has an additional beneficial effect on
the control of diabetes beyond weight loss alone. “Almost
all patients will experience an improvement in their blood
glucose control. About 70% will require less medication or no
medication at all,” says Dr Look.
So, will weight regain and recurrence of diabetes happen after
the surgery? “Yes, but this is rare and usually in non-compliant
patients who are not motivated in maintaining their dietary
recommendations,” says Dr Look.
“It takes about 2 hours to perform this keyhole surgery, and the
patient stays in the hospital for about 3 to 5 days. Majority of
the patients are back to work and their normal routine 2 weeks
after the surgery,” he continues.
Risks and Side Effects of the Surgery
Dr Look explains, “Laparoscopic Sleeve Gastrectomy is a very
safe operation and serious complications, such as bleeding
and leakage of the staple line, are rare. The main long-term
side effects are heartburn and reflux, especially if the patient is
already prone to this even before the surgery.”
The estimated total cost is between $25,000 and $40,000,
depending on hospital preferred and whether there are
associated medical problems which require concomitant
management. Many medical insurance policies do cover for
these surgeries if the indication is medical and not cosmetic for
elective weight loss alone.
“However, one lingering misconception is that people with
diabetes cannot eat anything sweet. That’s not true. We can eat
everything. We just need to mind the quantity and adjust our
insulin accordingly,” she explains.
Life is beautiful because we can eat. All those delicious
foods and desserts and snacks and alcoholic drinks.
Sometimes we overdo it somewhat and pay the price
with an upset stomach that seems to be bulging and
commanding our attention to STOP! What can we do to beat
indigestion and overindulgence especially during the festive
season when gorging seems to do on for days in a row.
At festivities, company dinners and dances we over eat, over
drink, talk and eat, laugh and drink, and shout cheers with cake
and champagne in our mouths.
We dance with full stomachs, dressed in belly-strangling haute
couture. We are stressed out with all the depressing things
going on in the financial markets and eat to fight even more.
All this stress, binging, alcohol, gulping in air, wearing tight
clothes and dancing with full stomachs, do no favours to
your system. You feel bloated and nauseated. Apart from the
hangover from the over drinking, you are suffering from a bad
case of indigestion.
What is indigestion?
Too much stomach acid causes stomach pains, bloating, excess
wind, belching or heartburn. Indigestion is the general term
used to describe these symptoms.
To protect itself from the stomach acid, which is as corrosive
as car battery fluid, the stomach produces a mucous that lines
its inside. If the amount of acid is too much for the mucous to
contain, the stomach lining gets inflamed. This results in the
pain and discomfort felt as indigestion.
Heartburn or reflux oesophagitis, is a form of indigestion.
Excess acid gets forced back from the stomach into the food
gullet (oesophagus) which, unlike the stomach, doesn’t have
a mucous lining. You feel burning in your chest and you have
an acid taste at the back of your throat. The pain can be so bad
you might think you?e having a heart attack.
What causes acid?
Rich, fatty and spicy food such as chocolates, pickles, curries,
sauces, stuffing, mince pies, and Christmas puddings and
cake, all contribute to acid build up in the stomach. Add to this
alcohol, smoking and stress.
12 ways of preventing indigestion
Indigestion and its symptoms can often be prevented or at least
minimised by following a few, standard guidelines.
1. Never smoke before or while eating. Smoking often causes
you to swallow small amounts of air, which form air pockets
in the digestive tract with the added pressure of food.
Smoking also slows the body’s ability to digest food.
2. Eliminate certain gas forming foods such as beans,
cabbage, cucumbers and onions.
3. Eat at a table in an upright, sitting position.
4. Go for a small walk after eating, which will help stimulate
the digestive system.
STOMACH
BLUES
Beat overindulgence and an uncomfortable stomach. By Carol Kraal
5. Don’t chew with your mouth open and don? talk so much
during meals, which cause you to swallow air.
6. Never exercise or dance following a large meal.
7. Avoid wearing tight or restrictive clothing.
8. Chew food thoroughly and slowly, allowing for a leisurely
meal.
9. Try not to consume alcohol with food. Drink plenty of water
instead.
10. Avoid caffeine.
11. Add antacids to your Christmas shopping. Antacids
neutralise excess stomach acid and help relieve indigestion.
12. Eat at least a few hours before going to bed to ensure a
silent night.
Remedy for relief
Ginger
Many find that consuming ginger with a meal helps to reduce
suffering and stomach upset. Fresh ginger can be ground and
added to foods or taken in tea or capsule form. Herbalists
recommend consuming 500mg of ginger with a full glass of
water after each meal.
Enzymes
Enzymes which help to speed the digestive process often
eliminate heartburn altogether. Papaya enzymes are sold in
chewable capsule form, and are taken immediately following a
meal with a full glass of water. Enjoy the fruit itself for dessert.
Fibre
Consuming more fibre nutrient foods is another natural way to
alleviate future suffering. Bulk foods help to absorb excess acid
and gas, and allow your body to rid itself of toxins more quickly.
For those who respond poorly to high fibre vegetables, fibre
pills and beverages are an alternative.
Green tea
Green tea has been used for centuries in Japan as an after
dinner drink. Green tea aids the body in the digestion process,
and helps soothe the stomach’s sensitive tissue.
Herbal infusions
Herbal teas containing even trace amounts of peppermint,
chamomile, ginger, rosemary, licorice root or catnip help the
stomach lining repair itself. Often, one cup of herbal infusion
following a meal is enough to keep heartburn and indigestion
at bay.
Learning from
the Best
Furniture and product designer
Jarrod Lim lands a coveted working
apprenticeship with Patricia
Urquiola at her studio in Milan
Patricia Urquiola is one of the most coveted architects
and designers today. she is known for her contemporary
experimental yet simple designs with playful colour and
ethnic charm that communicate with us. The Milanbased
Spanish designer, together with WOHA, created awardwinning
OASIA Downtown in Singapore.
A Chat with
furniture designer Jarrod Lim about working
with Patricia Urquiola in Milan
She is also very selective and elusive. It takes Singaporebased
Australian designer Jarrod Lim several tries. After shyly
approaching Urquiola at an event in Melbourne while he was
a university student and asking to work with her; after sending
numerous emails that came to nought; after travelling to Milan
and showing up at the designer’s studio with portfolio in hand
– dream becomes reality. Urquiola finally says ‘ok’ and Jarrod
earns a 15-month working stint at her studio in Milan.
“Her studio in Milan was very small at the time with just 10
of us and it was all very hands on. It was like being back at
university, sanding things, making models and that sort of
stuff. She was great to work for and took me to all the big
manufacturers she worked with like B&B Italia and Moroso.”
After Milan with Patricia Urquiola, and invaluable insight into
International Design and its exceptionally high standards,
Jarrod returns to Singapore and opens his dream studio in Joo
Chiat.
Jarrod Lim Designs and owner Jarrod Lim begin to create
furniture and products with beautiful International and Asian
aesthetic simplicity that go on to win several awards.
Why did you choose Patricia Urquiola and
Milan after your design studies in Australia?
Patricia’s studio was one of my top choices to work at. It was
2003 and Patricia’s star was really on the rise at the time. I had
been following her work for a while while I was studying, and
really loved what she was doing. I just connected with her
design style.
How did you get the famous Spanish designer
to let you be her apprentice at her studio in
Milan?
She came to Melbourne to give a talk while I was still studying
there, so after the talk I timidly approached her and asked if I
could come and work for her. She said to contact her studio
when she was back in Milan so I emailed a few times without
any real replies. Then I just turned up in Milan and asked again
in person. Nothing was confirmed before I arrived so I hoped
just by being there that she would let me in – and she finally
said yes.
What did you learn and what did you do to
polish your design skills?
What I really learned was an international perspective on
design; how top level designers think and work with the best
companies and how they view trends, materials. I learned
about the entire life of a designer.
You showed her your portfolio – what do you
think caught her eye?
I think what caught her eye was that I was making my own
small items in ceramic at the time and that I was quite
experimental.
You stayed for 2 years in Milan. How has the
city itself influenced you creatively?
Milan is a very hardworking city. It’s really a meeting point for
designers and manufacturers more so than an ‘inspirational’
location. A place where design-business occurs. So I think the
influence I gained from Milan was more about how designers
and studios operate. But it did open my eyes to the possibilities
of what a designer can achieve and gave me a broader
perspective on the design industry.
What food did you enjoy most in Milan?
Pizza for sure. We had some really nice pizzerias near our
studio. Plus the pizza was quite cheap so for a young designer
on a very tight budget it was excellent value.
An eyeopener was being exposed to the
business aspects of a designer’s work, and
owning your own studio. What did you learn
about the business part of things?
I learned about the relationships that the designers have with
top-level manufacturers and companies. I realised that the
relationship between designer and manufacturer, and the
sharing of ideas and viewpoints, are extremely important in
every project.
Patricia was part of the design team for
OASIA Downtown hotel in Singapore. Which
elements of the project’s design immediately
takes you back to Patricia’s studio and your
time with her?
The use of screens and patterns, especially on the carpets and
walls, is so typical of Patricia. The patterns were all custom
designed and made especially for the hotel. Those immediately
took me back to Milan; working on patterns for products and
exhibitions.
What furniture collection of yours shows
both flair in Asian and International Design
aesthetics?
The Koi chairs best show that. The collection was designed
when I first came to Singapore so I was inspired by the
Singapore surroundings especially the gates and window
grills which were something new to me. But I had only just left
Patricia’s studio so I was definitely still working in that European
direction.
What piece of advice from Patricia Urquiola
stays with you till today?
Not to overcrowd a design with too many focal points. Each
design has one main story that it is trying to explain. Whether
it’s a new material or a new manufacturing method. If you have
too many stories or focal points the design is confusing and the
main idea is lost.
“I had spoken to Spanish designer,
Patricia Urquiola at a trade event in
Melbourne where she was guest of
honour and told her how much I would
love to work for her but of course she
gets that type of offer every day. Once I
won the scholarship however I emailed
her until she agreed to look at my work
when I got to Milan. I went along and
surprisingly she looked at my portfolio
then said; ‘Okay come down to the studio
next week and we’ll see what you can
do’. It was as simple as that! I ended up
working for her for fifteen months or so.
Her studio was only very small at the
time with just ten of us and it was all very
hands on. It was sort of like being back
at university, sanding things, making
models and that sort of stuff. She was
Some call it scary Gotham City and the Ghostbuster’s
HQ. Others call it an art deco beauty. So much debate
and attention was good enough for the building created
by late developer CS Hwang, founder of Chyau Fwu
Group (which incorporated the Parkview Group), to give the
real estate in the vicinity an added boost of investment energy
and attractiveness. The building of brown granite, bronze,
lacquer, and glass, was designed by US architect James Adams
together with Singapore’s DP Architects, and was completed in
2002.
The design rationale and artistic influences included: reference
to the 1920s art deco (short for arts décoratifs) period and
the powerhouses who built their own skyscrapers in New
York; solid materials such as marble instead of steel to create
a long-lasting statement; ceiling murals depicting animals
that represent regality; murals flanking the doorways telling
the story of Cleopatra and the Egyptian King, Tutankhamun –
both of whom greatly influenced art deco in the 1920s. Other
classic features of art deco style are its geometric shapes, bold
colours, precise lines and ornamentation in the form of striking
sculptures.
art deco vision
People are divided in opinion when they stand at the foot of Parkview Square in Bugis
and gaze up at the towering brown building
By Carol Kraal
Vicky Hwang, managing director, Chyau Fwu
Development – on the 3 most important elements in
the revamp of ATLAS that enhanced its art deco style in a
more modern manner:
After 14 years, Parkview Square went through a second phase
of design envisioned by CS Hwang’s granddaughter, Vicky
Hwang, managing director of Chyau Fwu Development. She
wanted to preserve her grandfather’s legacy but do away with
certain gimicky effects – to update the space while respecting
the building’s original architecture and design created by Jim
Adams.
Working with design firm Hassell, Vicky wanted the new interior
design to be a gentle rebranding towards a fresh direction.
This included a grand lobby and bar reminiscent of the great
European lobby bars and cafes of the art deco period of 1920s
to 1940s. With a Masters of Arts in East Asian Studies from
Stanford University up her sleeve, she knows what she’s talking
about.
The old wine bar and the area around it transformed and
became ATLAS http://www.atlasbar.sg, a lobby bar with a
show-stopper gin tower 8 metres in height. The old quirky
floating fairy that used to hang from the ceiling made way for a
green, man-sized 1800s Imperial Shaker Machine, operated by
turning a handcrank which in turn shakes the four silver plated
‘in copper’ cocktail shakers.
Parkview Square’s exterior may still get mixed opinions but its
new interiors never fail to take your breath away when you step
inside – especially if you need a nice, cool drink.
1. To create a sense of arrival – The entrance point
was simplified by introducing a ‘statement’ desk with a
dramatic gold stainless steel screen that frames the
entry and creates a welcoming sense of warmth.
2. The venue’s signature three-storey wine cabinet was
transformed into a dramatic new home for ATLAS’
1000 bottle strong gin collection. An elegant new
platform and a spiral staircase were added for the
bartenders to access the spirits, which further enhance
the modern art deco touch of the space.
3. The new lighting throughout the space including a
new suspended lighting track was probably one of the
most important elements to the revamp. The new
ceiling lights really bring out the beautiful existing art
deco frescos and the exquisite metal detailing
originally designed by Jim Adams and my grandfather,
Mr CS Hwang. The new suspended light track adds a
sense of intimacy within the vast space and
emphasises a modern touch, as it adapts dynamically
to the time of the day and energy of the venue. The
warmer lighting installed within the gin tower also
allows the bottles to truly glow, highlighting each
individual bottle, and absolutely brings the gin tower
and gins to life.
Black truffle specials at Dolce Vita, Mandarin Oriental, Singapore in July
A Truffle Tale
From using it beautifully shaved pieces over decadent pasta to
fast food such as shaker seasonings in fries, how did this elusive
fungus make its way into foodies’ hearts? By Nicolette Teo
The black truffle found in the roots of oak, hazel and
chestnut trees, in parts of Spain, France and Italy has a
way of making even the most unlikely dish considered
fancy. Its outer appearance might deter those who
do not recognise it. It’s tubular, bumpy, brown and black,
resembling dried blackberries. When sliced into, you can see its
white veins are entwined within its interior which initially white,
ages to brown.
Its pungent aroma, described as intense and as earthy as the
ground they were growing from, not only awakens the taste
buds but also the smell receptors in the brain leading to an
experience that some may find overwhelming, while others
relish with delight.
So how did this subterranean mushroom find its way into
the culinary delights of the world and why is it considered to
be “the diamond of the kitchen” by French epicurean Brillat-
Savarin? I remember hearing the word truffle and wondering
why people were referring to the balls of chocolate when it
came to different recipes. However, while getting to know more
about it and discovering its heady aroma, I remember receiving
truffle food products such as truffle sauce and oils from
relative’s trips, and trying to preserve it for as long as possible.
Then it came. The tuber itself. Wrapped in the paper towel,
packed in a zip lock bag, we were given a small piece of this
precious fungus. Its smell was invigorating and I felt so excited
to use it in the dishes I would be cooking. However, it was a
delicate process of using the right shaver to impart thinly sliced
pieces and juggling my want to save it for a dish so amazing to
blow one’s mind and, its time limit before its aroma dissipates
into nothingness.
It’s exclusivity and price comes from the fact that it is difficult
to farm. Growing in specific regions and climates, it makes the
truffle an elusive item. It requires the co-operation of both the
fungus and the tree growing above it to cultivate it. Also, due
to climate change, the drier weather has inhibited the growth of
the truffle fungi. Its flavour, however, makes it desirable culinary
item. It can’t be simplified into a single word description, it just
wouldn’t do the truffle justice. However, we can try with these,
woodsy, earthy, funky, nutty and rich. It adds another level to
the dish, with its smell permeating your nostrils as the food
reaches your table. Then the taste comes in and the flavour hits
you, enhancing the rest that follows. To shine, it compliments
fats in cream, cheese and oils and carbs such as pasta rice and
potatoes.
Recently, we’ve seen it used in many dishes in Singapore, both
high and low end. Some following the more conventional way
of using it, such as over beef carpaccio or infused into fondue
in truffle centred restaurant Casa Tartufo or creating a medley
of mushrooms all of which complement each other beautifully
on Skinny Pizza’s Wild Truffled Mushroom Pizza. While others
have tried to use truffle to challenge the flavours of local
delights such as the Truffle Chicken
Rice Set from the unassuming food
court stall in Cineleisure Orchard
aptly named, Eat Chicken Rice
and in traditional Chinese dishes
such as Truffle Xiao Long Bao from
Din Tai Fung. It’s interesting to
note that the truffle used in local
dishes aren’t there to overshadow
the strong flavours that already
exist. It is like a bonus to the dish,
elevating its flavour. People here
aren’t afraid to try something new
with truffle, ignoring the rule that
truffle should be used simply.
“It’s
exclusivity
and price
comes from
the fact that it
is difficult to
farm.”
With strong distinct flavours such as the garlic from chicken
rice. As much as we search for tried and true favourites of
signature dishes in Singapore, it is interesting to see innovative
ways of experimenting which usually doesn’t include testing
out flavours that might interfere too much with the taste we
recognise.
Call it hype, call it a trend, but for it to infiltrate even our most
local and traditional dishes with such iconic flavours, shows
to how these rare mushroom compliments nicely to our local
landscape.
In July, Dolce Vita in Mandarin Oriental has a showcase of Black
Truffles harvested in Manjimup, Australia during the summer.
The five course set menu curated by Chef de Cuisine, Marco
Manocchio, shines a light on the well-loved ingredient. The
menu include starters such as Cappesante, a refreshing dish
of seared scallops with pickled celeriac and black truffle, Uovo
consisting of slow-poached organic egg, with potatoes, fontina
and truffle and Risotto using only premium Italian riserva
acquerello rice, served with Jerusalem artichokes, hazelnut,
green apple and hints of black truffle. It is then followed by a
choice between Piccione, roasted pigeon breast or Merluzzo,
seared cod fish fillet paired perfectly with the prized ingredient.
Bring scallops to room temperature for even cooking and salt
them.
Heat butter in the pan and brown
Browning process is when the water in the butter is evaporated
and the milk solids are browned to give a nutty taste and aroma
To brown butter, gently melt butter in pan and after a while, it
will begin to bubble. That is the water evaporating.
Soon it will start foaming and the yellow butter will start turning
brown. Always be stirring to make sure that none of the milk
solids get stuck to the bottom and burn.
After it reaches a nice brown, transfer to a bowl.
Take 3 tablespoons of the brown butter and place back into a
hot pan.
Add smashed garlic into pan and cook it to release some of its
flavour.
Sear and cook scallops in the pan about 35 seconds on each
side, spooning the garlic brown butter over it while cooking.
Take them off the pan and plate, finishing it off with a sprinkle of
pepper and spoon some truffle sauce on top of each truffle. If
fresh truffle is available, shave a few pieces over the truffles.
