I’ve been observing this for years. People who pop anti depressant<br />

pills are the ones usually living in the past and in the future. It is<br />

difficult – yes – but if we could only throw off the past and the<br />

future with all their pain and fears, like a smelly, wet blanket, our<br />

lives could only get healthier, calmer and happier. If you think about<br />

it, the past and the future do not exist. If you tell a cat dinner will be<br />

served at 7pm, it doesn’t give a hoot. It only follows its instincts –<br />

that such and such happens because it feels hungry and can smell<br />

cat food coming out of the kitchen. Does a baby stop drinking milk<br />

because she thinks she will become a chubby woman without a<br />

boyfriend? No. She stops drinking because she is full. Instinct tells<br />

her to stop. Do squirrels store nuts because they think about the<br />

cold winter in January and that food will be scarce? No – January<br />

does not exist for the squirrel. He just hoards because he follows his<br />

instinct.<br />

Living in the present, in the NOW, and following our instincts –<br />

should be on the agenda for all of us, and perhaps all that anger and<br />

fear will dissolve.<br />

It’s unusual that someone so young is interested in Chinese<br />

Opera these days. But popular actor and entertainer Nick<br />

Shen, who represented Singapore in Germany and bagged<br />

the honouree award of JCI Ten Outstanding Young Persons of<br />

the World in 2014, has a deep affinity for this Chinese art form<br />

and hopes to keep it alive in Singapore.<br />

Nick began his career as a drama and movie actor, singer and<br />

host. He won the Singapore Star Search competition after<br />

completing his acting course with MediaCorp. After being<br />

in showbiz for close to 20 years, he is now a drama trainer<br />

at Singapore Media Academy, where he has been since<br />

2014. Being well-versed in English, Mandarin, Teochew and<br />

other Chinese dialects broadens his range for entertainment<br />

opportunities.<br />

But no matter how wide he casts his net in the world of<br />

showbiz, he will always have a heart for Chinese opera. He<br />

believes the stories portrayed have deep meaning, moral values<br />

and life experiences.<br />

In 2011, Nick started his own company – Tok Tok Chiang as a<br />

platform to promote Chinese opera, and has since been invited<br />

to partner with People’s Association to bring awareness of the<br />

art form to the public. Nick mastered the art of Sichuan Mask<br />

Changing in 2013 and eventually brought the traditional art<br />

of Chinese Opera to greater heights by performing Teochew<br />

Opera and Sichuan Mask Changing internationally.<br />

To make Chinese opera attractive to young Singaporeans Nick<br />

created a hybrid genre of traditional Chinese opera dance with<br />

western magic techniques. He has worked with Esplanade –<br />

Theatres on the Bay to co-produce their mid-autumn festival<br />

programme, and has done so for four consecutive years.<br />

He conducts these performances in bilingual format, with<br />

supporting English subtitles onscreen while the troupes,<br />

including himself, are performing on stage with the original<br />

script and music in the respective dialects.<br />

With much perseverance, Nick realised his childhood dreams<br />

in 2017 when he took over Lao Sai Tao Yuan Teochew Opera<br />

Troupe, a local troupe with 154 years of history, as the youngest<br />

troupe leader in Singapore. Nick also represented the troupe<br />

in their performances in Toyama, Japan, as part of a Cultural<br />

Exchange programme.<br />

Nick continues to reach out to the younger generation and<br />

propels the appreciation of Chinese opera by engaging with<br />

them through film, drama, documentary, conducting workshops<br />

and social media marketing.<br />

Are there personalities in Chinese opera that<br />

you admire?<br />

The warrior roles in Chinese opera first captured my attention<br />

with their elaborate and stunning costumes. My admiration<br />

grew as they are heroic figures with a good sense of justice,<br />

courage, perserverance and resilience.<br />

You must be credited with starting your<br />

own company to promote Chinese opera in<br />

Singapore. What is the best way to attract<br />

the young and keep this art alive?<br />

It is now a digital age and the best way to connect to the youth<br />

is to be very active on social media and keep oneself updated<br />

with the ever changing popular platforms. Information now<br />

transmits at such a fast pace and can be readily accessible<br />

anywhere in the world. Making films based on Chinese opera<br />

– TV series, documentary or short films are good ways to keep<br />

this art alive.<br />

How has life as an actor with Mediacorp<br />

shaped your views of Chinese opera?<br />

It’s actually the other way around. It’s my passion for Chinese<br />

opera that sparked my interest in acting. In the course of my<br />

acting career, it has crafted my acting skills which, in turn, finetuned<br />

my Chinese opera performance on stage.<br />

Chinese opera is an ancient art form that<br />

goes back many centuries. What do you like<br />

most about it?<br />

Chinese opera is theatrical art in which music, song, dance,<br />

speech and acrobatics are woven together to create a unique<br />

form of drama. To me this is a beautiful art, and I grew up<br />

watching Chinese opera with my grandparents who also taught<br />

me to appreciate and learn about the moral values portrayed in<br />

each of the stories.<br />

You have even come up with a hybrid form<br />

of Chinese opera that combines traditional<br />

Chinese elements with western forms and<br />

English subtitles. Is this popular with the<br />

audience?<br />

These innovative performances have indeed been very wellreceived<br />

as the audience now includes many foreigners and the<br />

English subtitles have enabled them to understand the Chinese<br />

opera plays a lot better. Also, incorporating magic elements<br />

into Chinese opera arouses more interest in the younger<br />

generation.<br />

Do you think Chinese opera can be made into<br />

a movie? If yes, which traditional storyline<br />

would be best?<br />

Definitely possible! The story Lady White Snake is a very<br />

successful example. I personally like this significant story<br />

in Teochew opera titled 柴 房 会 , which is a horror-comedy. I<br />

believe that bringing this story to the big screen would be<br />

interesting with all the CGI effects making it more enthralling to<br />

watch.<br />

How do you relax after a hard day at work?<br />

By indulging in foot reflexology and traditional chinese tui-na.<br />

Don’t underestimate the health benefits that these bring.<br />

What advice would you give a youngster<br />

who wants to be in the world of showbiz and<br />

entertainment like you?<br />

A Potential Cure for Diabetes:<br />

Metabolic Surgery<br />

Today, 1 in 9 Singaporeans has diabetes. Can this breakthrough help us win the war<br />

against this “silent killer”? By Alan Li<br />

Treating Diabetes<br />

It has been a known fact by now that to treat diabetes, one<br />

needs to control his blood sugar levels in the body. Most<br />

people do it by medications, dietary changes and exercise. But,<br />

did you know that there’s a surgical method to treat diabetes?<br />

According to Dr Melvin Look, the Director and Consultant<br />

Surgeon at PanAsia Surgery in Mount Elizabeth Hospital and<br />

Parkway East Hospital during an interview with <strong>Exquisite</strong>, he<br />

shares his insights on this breakthrough in diabetes treatment.<br />

“The first step to the treatment of diabetes is a calorie<br />

restriction diet to achieve a healthy weight,” explains Dr Look.<br />

“Oral medication and insulin injections are often required to<br />

bring down the blood sugar levels. Good control of this is the<br />

key to avoiding the end-organ complications of diabetes.”<br />

However, he reveals that metabolic surgery may now be an<br />

excellent alternative for diabetic patients who want to consider<br />

surgery for a long-term cure. “Randomised control trials have<br />

shown that post-surgical patients showed better improvements<br />

in quality of life and overall health compared with those who<br />

only received medication alone,” notes Dr Look.<br />

“One of the commonest metabolic surgery operation we do is<br />

the Laparoscopic Sleeve Gastrectomy. It is a keyhole surgical<br />

procedure that coverts the stomach into a long narrow tube<br />

about the shape and size of a banana. This limits the amount<br />

of food the patient can eat and enhances the effect of intestinal<br />

hormones to bring down blood sugar.”<br />

Metabolic Surgery VS Medications<br />

Who should undergo the surgery?<br />

According to Dr Look, metabolic surgery is highly effective in<br />

helping obese diabetics lose their excess weight. “The majority<br />

of patients will achieve an excess weight loss of about 70<br />

to 80% after 18 to 24 months. In addition, these operations<br />

also have a complex adaptive effect on our gastrointestinal<br />

hormones which play an important role controlling blood<br />

glucose levels,” he explains.<br />

He suggests that patients who require more than one<br />

medication for diabetes, or who are poorly controlled despite<br />

multiple medications, should consider surgery. “The best<br />

results are when patients come for surgery early, when they are<br />

young, rather than when they are older and have developed<br />

complications due to diabetes,” says Dr Look.<br />

Ever since the Ministry for Health declared a “War on<br />

Diabetes” in April 2016, this illness that hits without<br />

noticeable signs has been receiving considerable<br />

attention in Singapore. It was under the limelight once<br />

again in August last year when Prime Minister Lee Hsien Loong<br />

reiterated the idea during his National Day message, and called<br />

upon Singaporeans to fight this debilitating disease.<br />

This garnered much awareness across the country, and people<br />

have become more accepting, or even curious about this<br />

condition, according to Ms Heng Pei Yan, a diabetic patient who<br />

has lived with this illness for the past two decades since her<br />

diagnosis at the age of 10.<br />

Ms Heng used to be in denial, especially during her teenage<br />

years. “Back in high school and even university, I often skipped<br />

my lunchtime injections. I refused to deal with it, or to be<br />

inconvenienced by it. Sometimes I would just plain forget,” she<br />

confesses.<br />

However, an event organised by the International Diabetes<br />

Federation changed her perception towards her condition. It<br />

was an eye-opener for her and she decided to take greater<br />

ownership of her health. She even started a Facebook group<br />

called SGDoc (which stands for Singapore Diabetes Online<br />

Community) to help any diabetic patient in need of support and<br />

encouragement.<br />

As a result, this surgery has an additional beneficial effect on<br />

the control of diabetes beyond weight loss alone. “Almost<br />

all patients will experience an improvement in their blood<br />

glucose control. About 70% will require less medication or no<br />

medication at all,” says Dr Look.<br />

So, will weight regain and recurrence of diabetes happen after<br />

the surgery? “Yes, but this is rare and usually in non-compliant<br />

patients who are not motivated in maintaining their dietary<br />

recommendations,” says Dr Look.<br />

“It takes about 2 hours to perform this keyhole surgery, and the<br />

patient stays in the hospital for about 3 to 5 days. Majority of<br />

the patients are back to work and their normal routine 2 weeks<br />

after the surgery,” he continues.<br />

Risks and Side Effects of the Surgery<br />

Dr Look explains, “Laparoscopic Sleeve Gastrectomy is a very<br />

safe operation and serious complications, such as bleeding<br />

and leakage of the staple line, are rare. The main long-term<br />

side effects are heartburn and reflux, especially if the patient is<br />

already prone to this even before the surgery.”<br />

The estimated total cost is between $25,000 and $40,000,<br />

depending on hospital preferred and whether there are<br />

associated medical problems which require concomitant<br />

management. Many medical insurance policies do cover for<br />

these surgeries if the indication is medical and not cosmetic for<br />

elective weight loss alone.<br />

“However, one lingering misconception is that people with<br />

diabetes cannot eat anything sweet. That’s not true. We can eat<br />

everything. We just need to mind the quantity and adjust our<br />

insulin accordingly,” she explains.<br />

Life is beautiful because we can eat. All those delicious<br />

foods and desserts and snacks and alcoholic drinks.<br />

Sometimes we overdo it somewhat and pay the price<br />

with an upset stomach that seems to be bulging and<br />

commanding our attention to STOP! What can we do to beat<br />

indigestion and overindulgence especially during the festive<br />

season when gorging seems to do on for days in a row.<br />

At festivities, company dinners and dances we over eat, over<br />

drink, talk and eat, laugh and drink, and shout cheers with cake<br />

and champagne in our mouths.<br />

We dance with full stomachs, dressed in belly-strangling haute<br />

couture. We are stressed out with all the depressing things<br />

going on in the financial markets and eat to fight even more.<br />

All this stress, binging, alcohol, gulping in air, wearing tight<br />

clothes and dancing with full stomachs, do no favours to<br />

your system. You feel bloated and nauseated. Apart from the<br />

hangover from the over drinking, you are suffering from a bad<br />

case of indigestion.<br />

What is indigestion?<br />

Too much stomach acid causes stomach pains, bloating, excess<br />

wind, belching or heartburn. Indigestion is the general term<br />

used to describe these symptoms.<br />

To protect itself from the stomach acid, which is as corrosive<br />

as car battery fluid, the stomach produces a mucous that lines<br />

its inside. If the amount of acid is too much for the mucous to<br />

contain, the stomach lining gets inflamed. This results in the<br />

pain and discomfort felt as indigestion.<br />

Heartburn or reflux oesophagitis, is a form of indigestion.<br />

Excess acid gets forced back from the stomach into the food<br />

gullet (oesophagus) which, unlike the stomach, doesn’t have<br />

a mucous lining. You feel burning in your chest and you have<br />

an acid taste at the back of your throat. The pain can be so bad<br />

you might think you?e having a heart attack.<br />

What causes acid?<br />

Rich, fatty and spicy food such as chocolates, pickles, curries,<br />

sauces, stuffing, mince pies, and Christmas puddings and<br />

cake, all contribute to acid build up in the stomach. Add to this<br />

alcohol, smoking and stress.<br />

12 ways of preventing indigestion<br />

Indigestion and its symptoms can often be prevented or at least<br />

minimised by following a few, standard guidelines.<br />

1. Never smoke before or while eating. Smoking often causes<br />

you to swallow small amounts of air, which form air pockets<br />

in the digestive tract with the added pressure of food.<br />

Smoking also slows the body’s ability to digest food.<br />

2. Eliminate certain gas forming foods such as beans,<br />

cabbage, cucumbers and onions.<br />

3. Eat at a table in an upright, sitting position.<br />

4. Go for a small walk after eating, which will help stimulate<br />

the digestive system.<br />

5. Don’t chew with your mouth open and don? talk so much<br />

during meals, which cause you to swallow air.<br />

6. Never exercise or dance following a large meal.<br />

7. Avoid wearing tight or restrictive clothing.<br />

8. Chew food thoroughly and slowly, allowing for a leisurely<br />

meal.<br />

9. Try not to consume alcohol with food. Drink plenty of water<br />

instead.<br />

10. Avoid caffeine.<br />

11. Add antacids to your Christmas shopping. Antacids<br />

neutralise excess stomach acid and help relieve indigestion.<br />

12. Eat at least a few hours before going to bed to ensure a<br />

silent night.<br />

Remedy for relief<br />

Ginger<br />

Many find that consuming ginger with a meal helps to reduce<br />

suffering and stomach upset. Fresh ginger can be ground and<br />

added to foods or taken in tea or capsule form. Herbalists<br />

recommend consuming 500mg of ginger with a full glass of<br />

water after each meal.<br />

Enzymes<br />

Enzymes which help to speed the digestive process often<br />

eliminate heartburn altogether. Papaya enzymes are sold in<br />

chewable capsule form, and are taken immediately following a<br />

meal with a full glass of water. Enjoy the fruit itself for dessert.<br />

Fibre<br />

Consuming more fibre nutrient foods is another natural way to<br />

alleviate future suffering. Bulk foods help to absorb excess acid<br />

and gas, and allow your body to rid itself of toxins more quickly.<br />

For those who respond poorly to high fibre vegetables, fibre<br />

pills and beverages are an alternative.<br />

Green tea<br />

Green tea has been used for centuries in Japan as an after<br />

dinner drink. Green tea aids the body in the digestion process,<br />

and helps soothe the stomach’s sensitive tissue.<br />

Herbal infusions<br />

Herbal teas containing even trace amounts of peppermint,<br />

chamomile, ginger, rosemary, licorice root or catnip help the<br />

stomach lining repair itself. Often, one cup of herbal infusion<br />

following a meal is enough to keep heartburn and indigestion<br />

at bay.<br />

With a clock tower and two life-sized<br />

London toy soldiers flanking the back<br />

seats of a vintage Mini Cooper at the<br />

entrance, the hotel is hard to miss. The<br />

industrial decor incorporates elements<br />

of the United Kingdom – unfinished grey<br />

walls, rustic wood, Union Jack emblem<br />

Born in Baghdad, Iraq, Zaha Hadid’s outstanding contribution to the architectural and<br />

design profession continues till today through her studio. She is the first female architect<br />

to be awarded the Pritzker Prize which she received in 2004, and was awarded the 2016<br />

Royal Gold Medal, given in recognition of a lifetime’s work.<br />

Zaha Hadid Design(http://zaha-hadid-design.com), established in 2006, includes fashion<br />

accessories, jewellery, limited edition furniture pieces, and interiors. To respond to the<br />

Jarrod Lim lands a coveted working<br />

apprenticeship with Patricia<br />

Urquiola at her studio in Milan<br />

Patricia Urquiola is one of the most coveted architects<br />

and designers today. she is known for her contemporary<br />

experimental yet simple designs with playful colour and<br />

ethnic charm that communicate with us. The Milanbased<br />

Spanish designer, together with WOHA, created awardwinning<br />

OASIA Downtown in Singapore.<br />

A Chat with<br />

furniture designer Jarrod Lim about working<br />

with Patricia Urquiola in Milan<br />

She is also very selective and elusive. It takes Singaporebased<br />

Australian designer Jarrod Lim several tries. After shyly<br />

approaching Urquiola at an event in Melbourne while he was<br />

a university student and asking to work with her; after sending<br />

numerous emails that came to nought; after travelling to Milan<br />

and showing up at the designer’s studio with portfolio in hand<br />

– dream becomes reality. Urquiola finally says ‘ok’ and Jarrod<br />

earns a 15-month working stint at her studio in Milan.<br />

“Her studio in Milan was very small at the time with just 10<br />

of us and it was all very hands on. It was like being back at<br />

university, sanding things, making models and that sort of<br />

stuff. She was great to work for and took me to all the big<br />

manufacturers she worked with like B&B Italia and Moroso.”<br />

After Milan with Patricia Urquiola, and invaluable insight into<br />

International Design and its exceptionally high standards,<br />

Jarrod returns to Singapore and opens his dream studio in Joo<br />

Chiat.<br />

Jarrod Lim Designs and owner Jarrod Lim begin to create<br />

furniture and products with beautiful International and Asian<br />

aesthetic simplicity that go on to win several awards.<br />

Why did you choose Patricia Urquiola and<br />

Milan after your design studies in Australia?<br />

Patricia’s studio was one of my top choices to work at. It was<br />

2003 and Patricia’s star was really on the rise at the time. I had<br />

been following her work for a while while I was studying, and<br />

really loved what she was doing. I just connected with her<br />

design style.<br />

How did you get the famous Spanish designer<br />

to let you be her apprentice at her studio in<br />

Milan?<br />

She came to Melbourne to give a talk while I was still studying<br />

there, so after the talk I timidly approached her and asked if I<br />

could come and work for her. She said to contact her studio<br />

when she was back in Milan so I emailed a few times without<br />

any real replies. Then I just turned up in Milan and asked again<br />

in person. Nothing was confirmed before I arrived so I hoped<br />

just by being there that she would let me in – and she finally<br />

said yes.<br />

What did you learn and what did you do to<br />

polish your design skills?<br />

What I really learned was an international perspective on<br />

design; how top level designers think and work with the best<br />

companies and how they view trends, materials. I learned<br />

about the entire life of a designer.<br />

You showed her your portfolio – what do you<br />

think caught her eye?<br />

I think what caught her eye was that I was making my own<br />

small items in ceramic at the time and that I was quite<br />

experimental.<br />

You stayed for 2 years in Milan. How has the<br />

city itself influenced you creatively?<br />

Milan is a very hardworking city. It’s really a meeting point for<br />

designers and manufacturers more so than an ‘inspirational’<br />

location. A place where design-business occurs. So I think the<br />

influence I gained from Milan was more about how designers<br />

and studios operate. But it did open my eyes to the possibilities<br />

of what a designer can achieve and gave me a broader<br />

perspective on the design industry.<br />

What food did you enjoy most in Milan?<br />

Pizza for sure. We had some really nice pizzerias near our<br />

studio. Plus the pizza was quite cheap so for a young designer<br />

on a very tight budget it was excellent value.<br />

An eyeopener was being exposed to the<br />

business aspects of a designer’s work, and<br />

owning your own studio. What did you learn<br />

about the business part of things?<br />

I learned about the relationships that the designers have with<br />

top-level manufacturers and companies. I realised that the<br />

relationship between designer and manufacturer, and the<br />

sharing of ideas and viewpoints, are extremely important in<br />

every project.<br />

Patricia was part of the design team for<br />

OASIA Downtown hotel in Singapore. Which<br />

elements of the project’s design immediately<br />

takes you back to Patricia’s studio and your<br />

time with her?<br />

The use of screens and patterns, especially on the carpets and<br />

walls, is so typical of Patricia. The patterns were all custom<br />

designed and made especially for the hotel. Those immediately<br />

took me back to Milan; working on patterns for products and<br />

exhibitions.<br />

What furniture collection of yours shows<br />

both flair in Asian and International Design<br />

aesthetics?<br />

The Koi chairs best show that. The collection was designed<br />

when I first came to Singapore so I was inspired by the<br />

Singapore surroundings especially the gates and window<br />

grills which were something new to me. But I had only just left<br />

Patricia’s studio so I was definitely still working in that European<br />

direction.<br />

What piece of advice from Patricia Urquiola<br />

stays with you till today?<br />

Not to overcrowd a design with too many focal points. Each<br />

design has one main story that it is trying to explain. Whether<br />

it’s a new material or a new manufacturing method. If you have<br />

too many stories or focal points the design is confusing and the<br />

main idea is lost.<br />

next week and we’ll see what you can<br />

do’. It was as simple as that! I ended up<br />

working for her for fifteen months or so.<br />

Her studio was only very small at the<br />

time with just ten of us and it was all very<br />

hands on. It was sort of like being back<br />

models and that sort of stuff. She was<br />

great to work for and took me to all the<br />

Some call it scary Gotham City and the Ghostbuster’s<br />

HQ. Others call it an art deco beauty. So much debate<br />

and attention was good enough for the building created<br />

by late developer CS Hwang, founder of Chyau Fwu<br />

Group (which incorporated the Parkview Group), to give the<br />

real estate in the vicinity an added boost of investment energy<br />

and attractiveness. The building of brown granite, bronze,<br />

lacquer, and glass, was designed by US architect James Adams<br />

together with Singapore’s DP Architects, and was completed in<br />

2002.<br />

The design rationale and artistic influences included: reference<br />

to the 1920s art deco (short for arts décoratifs) period and<br />

the powerhouses who built their own skyscrapers in New<br />

York; solid materials such as marble instead of steel to create<br />

a long-lasting statement; ceiling murals depicting animals<br />

that represent regality; murals flanking the doorways telling<br />

the story of Cleopatra and the Egyptian King, Tutankhamun –<br />

both of whom greatly influenced art deco in the 1920s. Other<br />

classic features of art deco style are its geometric shapes, bold<br />

colours, precise lines and ornamentation in the form of striking<br />

sculptures.<br />

Development – on the 3 most important elements in<br />

the revamp of ATLAS that enhanced its art deco style in a<br />

more modern manner:<br />

After 14 years, Parkview Square went through a second phase<br />

of design envisioned by CS Hwang’s granddaughter, Vicky<br />

Hwang, managing director of Chyau Fwu Development. She<br />

wanted to preserve her grandfather’s legacy but do away with<br />

certain gimicky effects – to update the space while respecting<br />

the building’s original architecture and design created by Jim<br />

Adams.<br />

Working with design firm Hassell, Vicky wanted the new interior<br />

design to be a gentle rebranding towards a fresh direction.<br />

This included a grand lobby and bar reminiscent of the great<br />

European lobby bars and cafes of the art deco period of 1920s<br />

to 1940s. With a Masters of Arts in East Asian Studies from<br />

Stanford University up her sleeve, she knows what she’s talking<br />

about.<br />

The old wine bar and the area around it transformed and<br />

became ATLAS http://www.atlasbar.sg, a lobby bar with a<br />

show-stopper gin tower 8 metres in height. The old quirky<br />

floating fairy that used to hang from the ceiling made way for a<br />

green, man-sized 1800s Imperial Shaker Machine, operated by<br />

turning a handcrank which in turn shakes the four silver plated<br />

‘in copper’ cocktail shakers.<br />

Parkview Square’s exterior may still get mixed opinions but its<br />

new interiors never fail to take your breath away when you step<br />

inside – especially if you need a nice, cool drink.<br />

1. To create a sense of arrival – The entrance point<br />

was simplified by introducing a ‘statement’ desk with a<br />

dramatic gold stainless steel screen that frames the<br />

entry and creates a welcoming sense of warmth.<br />

2. The venue’s signature three-storey wine cabinet was<br />

transformed into a dramatic new home for ATLAS’<br />

1000 bottle strong gin collection. An elegant new<br />

platform and a spiral staircase were added for the<br />

bartenders to access the spirits, which further enhance<br />

the modern art deco touch of the space.<br />

3. The new lighting throughout the space including a<br />

new suspended lighting track was probably one of the<br />

most important elements to the revamp. The new<br />

ceiling lights really bring out the beautiful existing art<br />

deco frescos and the exquisite metal detailing<br />

originally designed by Jim Adams and my grandfather,<br />

Mr CS Hwang. The new suspended light track adds a<br />

sense of intimacy within the vast space and<br />

emphasises a modern touch, as it adapts dynamically<br />

to the time of the day and energy of the venue. The<br />

warmer lighting installed within the gin tower also<br />

allows the bottles to truly glow, highlighting each<br />

individual bottle, and absolutely brings the gin tower<br />

and gins to life.<br />

A Truffle Tale<br />

From using it beautifully shaved pieces over decadent pasta to<br />

fast food such as shaker seasonings in fries, how did this elusive<br />

fungus make its way into foodies’ hearts? By Nicolette Teo<br />

The black truffle found in the roots of oak, hazel and<br />

chestnut trees, in parts of Spain, France and Italy has a<br />

way of making even the most unlikely dish considered<br />

fancy. Its outer appearance might deter those who<br />

do not recognise it. It’s tubular, bumpy, brown and black,<br />

resembling dried blackberries. When sliced into, you can see its<br />

white veins are entwined within its interior which initially white,<br />

ages to brown.<br />

Its pungent aroma, described as intense and as earthy as the<br />

ground they were growing from, not only awakens the taste<br />

buds but also the smell receptors in the brain leading to an<br />

experience that some may find overwhelming, while others<br />

relish with delight.<br />

So how did this subterranean mushroom find its way into<br />

the culinary delights of the world and why is it considered to<br />

be “the diamond of the kitchen” by French epicurean Brillat-<br />

Savarin? I remember hearing the word truffle and wondering<br />

why people were referring to the balls of chocolate when it<br />

came to different recipes. However, while getting to know more<br />

about it and discovering its heady aroma, I remember receiving<br />

truffle food products such as truffle sauce and oils from<br />

relative’s trips, and trying to preserve it for as long as possible.<br />

Then it came. The tuber itself. Wrapped in the paper towel,<br />

packed in a zip lock bag, we were given a small piece of this<br />

precious fungus. Its smell was invigorating and I felt so excited<br />

to use it in the dishes I would be cooking. However, it was a<br />

delicate process of using the right shaver to impart thinly sliced<br />

pieces and juggling my want to save it for a dish so amazing to<br />

blow one’s mind and, its time limit before its aroma dissipates<br />

into nothingness.<br />

It’s exclusivity and price comes from the fact that it is difficult<br />

to farm. Growing in specific regions and climates, it makes the<br />

truffle an elusive item. It requires the co-operation of both the<br />

fungus and the tree growing above it to cultivate it. Also, due<br />

to climate change, the drier weather has inhibited the growth of<br />

the truffle fungi. Its flavour, however, makes it desirable culinary<br />

item. It can’t be simplified into a single word description, it just<br />

wouldn’t do the truffle justice. However, we can try with these,<br />

woodsy, earthy, funky, nutty and rich. It adds another level to<br />

the dish, with its smell permeating your nostrils as the food<br />

reaches your table. Then the taste comes in and the flavour hits<br />

you, enhancing the rest that follows. To shine, it compliments<br />

fats in cream, cheese and oils and carbs such as pasta rice and<br />

potatoes.<br />

Recently, we’ve seen it used in many dishes in Singapore, both<br />

high and low end. Some following the more conventional way<br />

of using it, such as over beef carpaccio or infused into fondue<br />

in truffle centred restaurant Casa Tartufo or creating a medley<br />

of mushrooms all of which complement each other beautifully<br />

on Skinny Pizza’s Wild Truffled Mushroom Pizza. While others<br />

have tried to use truffle to challenge the flavours of local<br />

delights such as the Truffle Chicken<br />

and in traditional Chinese dishes<br />

such as Truffle Xiao Long Bao from<br />

Din Tai Fung. It’s interesting to<br />

note that the truffle used in local<br />

dishes aren’t there to overshadow<br />

the strong flavours that already<br />

exist. It is like a bonus to the dish,<br />

elevating its flavour. People here<br />

aren’t afraid to try something new<br />

with truffle, ignoring the rule that<br />

truffle should be used simply.<br />

With strong distinct flavours such as the garlic from chicken<br />

rice. As much as we search for tried and true favourites of<br />

signature dishes in Singapore, it is interesting to see innovative<br />

ways of experimenting which usually doesn’t include testing<br />

out flavours that might interfere too much with the taste we<br />

recognise.<br />

Call it hype, call it a trend, but for it to infiltrate even our most<br />

local and traditional dishes with such iconic flavours, shows<br />

to how these rare mushroom compliments nicely to our local<br />

landscape.<br />

Truffle recipe<br />

Seared Scallops in Garlic Brown Butter with Truffle<br />

Salsa<br />

This is a basic dish that involves truffles and scallops. It is<br />

simple enough to be added to different types of dishes to<br />

give it an extra kick, whether it be a pasta dish or something<br />

unexpected like laksa!<br />

Ingredients:<br />

Truffle salsa (sauce) or Freshly shaven truffle<br />

4 Scallops – pat dry to remove water<br />

3 tablespoons of butter<br />

1 tablespoon of Olive Oil<br />

1 Garlic – smashed<br />

Salt<br />

In July, Dolce Vita in Mandarin Oriental has a showcase of Black<br />

Truffles harvested in Manjimup, Australia during the summer.<br />

The five course set menu curated by Chef de Cuisine, Marco<br />

Manocchio, shines a light on the well-loved ingredient. The<br />

menu include starters such as Cappesante, a refreshing dish<br />

of seared scallops with pickled celeriac and black truffle, Uovo<br />

consisting of slow-poached organic egg, with potatoes, fontina<br />

and truffle and Risotto using only premium Italian riserva<br />

acquerello rice, served with Jerusalem artichokes, hazelnut,<br />

green apple and hints of black truffle. It is then followed by a<br />

choice between Piccione, roasted pigeon breast or Merluzzo,<br />

seared cod fish fillet paired perfectly with the prized ingredient.<br />

Ending off beautifully with the Crema Bruciata, a truffle infused<br />

vanilla crème brulee with espresso ice cream.<br />

Bring scallops to room temperature for even cooking and salt<br />

them.<br />

Heat butter in the pan and brown<br />

Browning process is when the water in the butter is evaporated<br />

and the milk solids are browned to give a nutty taste and aroma<br />

To brown butter, gently melt butter in pan and after a while, it<br />

will begin to bubble. That is the water evaporating.<br />

Soon it will start foaming and the yellow butter will start turning<br />

brown. Always be stirring to make sure that none of the milk<br />

solids get stuck to the bottom and burn.<br />

After it reaches a nice brown, transfer to a bowl.<br />

Take 3 tablespoons of the brown butter and place back into a<br />

hot pan.<br />

Add smashed garlic into pan and cook it to release some of its<br />

flavour.<br />

Sear and cook scallops in the pan about 35 seconds on each<br />

side, spooning the garlic brown butter over it while cooking.<br />

Take them off the pan and plate, finishing it off with a sprinkle of<br />

pepper and spoon some truffle sauce on top of each truffle. If<br />

fresh truffle is available, shave a few pieces over the truffles.<br />
