EGG-TASTIC EASTER Little Hatchling Adventures, for Little Arboretum Explorers With much to see, spot and discover, there’s lots to entertain little ones at the National Memorial Arboretum. An inspiring place to visit throughout the year, the 150-acre site, 350 memorials and two play areas found in the grounds provide an amazing place for a family adventure, with stories of bravery and heroism to be discovered around every corner. Little Hatchlings Animal Encounters will return to the Arboretum this Easter from Friday 30 March – Monday 2 April. The free experience, featuring rabbits, guinea pigs and other small critters, gives the Arboretum’s young, and young at heart, visitors the opportunity to meet, interact with, and feed a host of creatures. Throughout the Easter families will also be able to collect a free copy of the Arboretum’s Easter trail, which will take families on an exciting adventure around the site. Little hands will also enjoy participating in the Arboretum’s animal themed messy make and take – ‘Pocket Pets’. Throughout the Easter holidays, until Sunday 15 April, families will also be able to participate in RAF themed activities, including contributing to an airplane sculpture, as the Arboretum, along with the nation, celebrates 100 years since the formation of The Royal Air Force. They’ll be some extra special guests at Freeport Talke this April. Go along to Freeport Talke for a fun filled Easter Break and you’ll get the chance to meet a T-Rex, encounter reptiles and take part in the dino workshops. There’ll also be a chance to explore as you go on the Dinosaur Hunt around the centre, and the prize is a fabulous £50 gift voucher to spend there. They hope to see you there! Eland Lodge Equestrian Centre invites families to two events this Easter. Clues have been hidden around the beautiful Eland Lodge parkland near Ashbourne for their Easter Egg Hunt event on 2 April. Go along between 10.30am and 3pm to try and find all the clues and claim your Easter egg prize. This is a fun day out for all the family and everyone is welcome whether on foot, with your dog or riding your pony! £7 per egg hunter. For something a little different, you can go and watch competitors in Dressage, Showjumping and Cross Country at the Eland Lodge Horse Trials on 14 and 15 April. A great day out for all the family, with shopping, hot food stalls, and free entry and parking for spectators! Carrot Cake Cupcakes Chocolate Easter Eggs have been a traditional treat since the 19th Century, but that doesn’t mean that we have to over-indulge. Why not try these gluten-free Carrot Cake Cupcakes? They’ll tempt everyone – including the Easter Bunny. INGREDIENTS Carrot Cakes 125g blanched almond flour 16g coconut flour ½ teaspoon baking soda 1/8 teaspoon salt 1 ½ teaspoons ground cinnamon 105g honey 2 teaspoons vanilla essence ½ teaspoon ground ginger ¼ teaspoon ground nutmeg 2 large eggs 75g refined coconut oil 50g grated carrots Frosting 55g cream cheese 4 teaspoons maple syrup 1 ½ vanilla essence (thin out with milk if needed) If you want to go dairy free, there are dairy free cream cheese and milk alternatives available. Garnish with Popcorn for a little extra flourish. INSTRUCTIONS 1 Pre-heat the oven to 350°F (175°C). Line a muffin tin with 8 muffin liners. 2 Mix together the dry ingredients (almond flour through to nutmeg). Set this aside. 3 In a separate bowl, mix together the eggs, oil, honey, and vanilla. 4 Add the dry mix to the wet mix just until combined. Gently fold in the grated carrots. 5 Divide the batter evenly among the liners and bake for 17-20 minutes. 6 Let the cakes cool for 5 minutes in the pan and then remove to a wire rack to cool completely. Frosting 1 Mix everything together until combined. If the mix seems too thick add milk sparingly until it suits your taste. 2 Note: Add the frosting just before serving, as it will need refrigerating otherwise! 12 Primary Times EASTER 2018 | www.primarytimes.co.uk/staffordshire
