Summertime Heat Awareness & Safety<br />
One of the most significant health risks to be aware of this summer is the heat, which you may not think<br />
about unless you live in the warm deserts of the Southwest. However, heat can be a major risk in any part of<br />
the country - especially in areas where there is excessive humidity. Heat related illnesses can affect people<br />
of all ages and these illnesses tend to progress quickly, so it is essential that you know what to look for.<br />
Below is a closer look at what you need to know to beat the heat this summer.<br />
Recognize the signs of heat illness: Did you know that by the time you are thirsty, you are already<br />
dehydrated? Quenching your thirst is also a poor indicator of proper hydration. Therefore, you will want<br />
to know some of the other signs of dehydration that may also indicate heat stroke or exhaustion. Look for<br />
heavy sweating, confusion, dizziness, hangover-like headaches, muscle weakness or cramps and nausea. If<br />
these signs are present, find a cool area, drink some water and call 911 for assistance.<br />
Know the hazards of heat: Even in 80 degree weather, heat can be problematic. When you are out in the<br />
sun for long periods, your body will use water much faster, so you need to drink extra and take breaks out of<br />
direct sunlight. Physical activity also raises your body temperature, so you should consider this when you go<br />
out for a jog during the summertime.<br />
Identify high-risk situations: Every year brings a flurry of news stories of children and pets suffering<br />
fatal heat illness and these incidents are usually attributed to being left in the car. In just 10 minutes, the<br />
temperature inside of the car can jump from the temperature outside at 80 degrees to 99 degrees. Children<br />
or pets left in these conditions can quickly overheat and lose consciousness. Adults should exercise caution<br />
for their own sake as well, as there have been many instances of adults falling asleep in the car and suffering<br />
fatal heat stroke. Other risky situations in the heat include periods of outdoor work or physical activity, hot<br />
days at high elevation areas and consumption of alcohol in the summer heat.<br />

Stay prepared: To fight back against the heat, stick to indoor activities during the hottest parts of the day.<br />
You will also want to carry water wherever you go and wear lightweight clothing made from breathable<br />
fabrics like linen or cotton. What you eat can also affect how your body handles the heat - meats and other<br />
high protein foods cause your body to use more water in digestion.<br />

Happy 4 th of <strong>July</strong>!! The Board wishes everyone a safe and wonderful<br />
Independence Day.<br />
Hurricane Preparation<br />
Hurricane season started on June 1 st . Be prepared while hoping we<br />
don’t have any severe hurricane hit our area. Set up a plan - know how<br />
much water is needed per person to keep on hand, get can food, refill<br />
needed medications, where to go if evacuation is needed etc… There<br />
are a lot of resources on-line or from the county that can help you plan.<br />
Welcome New Homeowners<br />
If you have recently moved in and are relatively new to our community,<br />
welcome! Please go to the TownSquare website (https://app.townsq.<br />
io/associa/signup) or download the free app on your phone and register<br />
your information so you can receive information and notices via<br />
emails. You may also download the deed restrictions so you can be<br />
aware of these codes of practices for our subdivision. The Board would<br />
also like to invite you to come to our monthly meeting so we may meet<br />
you (and you meet some of us-your neighbors). The meeting is 7 PM, 2 nd<br />
Wednesday every month held at the MUD building next to the water<br />
tower just north of West Little York on Kenswick Drive and Falmouth<br />
Ave (the address is 15300 Falmouth Avenue). The <strong>July</strong> meeting will<br />
be on 7/11/18. If you have any questions regarding assessment dues<br />
and deed violation letter, please contact our management company<br />

- and get details so you can take needed actions.<br />
Misc.<br />
Summer is in full fledge. Water your yards sensibly, check for sprinkler<br />
leakages, check and make sure you are not watering the driveway<br />
and sidewalk instead of the grass. Water is one of the most precious<br />
resources. Don’t waste it. Please follow the lawn watering schedule<br />
sent by the M.U.D.<br />
We can also help to maintain free flowing drainage pipes of the sewer<br />
system by not putting cooking oil and grease down the sink or drain,<br />
but instead wipe and collect waste oil in glass jars and dispose in<br />
garbage for small quantities, for large quantity like those used in deep<br />
fryers, you can take them to Harris County Household Hazardous Waste<br />
Collection Facility (6900 Hahl Road on West Little York just north of<br />
290, they are open every Wednesday 9 AM to 3 PM; don’t put food<br />
scrapes into the sink, put out them in the garbage.<br />
Monthly meeting<br />
Our monthly meeting has moved to 2 nd Wednesday of every month<br />
and we are meeting at the M.U.D. 102 water plant building next to the<br />
water tower. Meeting starts at 7 PM.<br />

(BCS3) <strong>2018</strong> ANNUAL MEETING RESULTS<br />
Following are the results BCS3 Annual Meeting that was held on May<br />
20 th . We had a quorum total of 17 property owners between the attendees<br />
and the proxy statements that were submitted.<br />
ACTION ITEMS<br />
• Director Election<br />
One position was up for election this year.<br />
• Barbara Boyd (Vaughnville Drive) was elected to fill this open position<br />
We would like to thank Josh Murray (outgoing Board member) for his<br />
six years of effort as a member of the Board of Directors.<br />
Following the election, there was a discussion about the HOA budget<br />
and associated surplus, illegally parked vehicles and near-term action<br />
for correction, mosquito spraying plans, significant delinquency issues<br />
needing additional legal action and ongoing DRV actions related to<br />
farm animals in the neighborhood.<br />
There was also a very good discussion concerning the options being<br />
presented to BCS3 by the CRPOA group as to the potential opportunity<br />
for our residents to be part of the Pool / Rec center located at West<br />
Little York and Addicks Satsuma Road.<br />
BOARD OF DIRECTOR ASSIGNMENTS<br />
Following is the lineup for the Board of Directors for the <strong>2018</strong>-2019<br />
HOA calendar year. Note that with only three Directors, some members<br />
will fill dual positions<br />
President - Mark Przywara (Term expires in May 2019)<br />
Vice President / Treasurer - Barbara Boyd (Term expires in May 2021)<br />
Vice President / Secretary - James Mohr (Term expires in May 2020)<br />
The Board would like to thank everyone who either attended the<br />
meeting or took the time to get their proxy statement submitted so that<br />
their position would contribute to the quorum and/or vote. Without<br />
this input, there would have been no meeting as per the HOA Bylaws.<br />
BRADFORD COLONY SECTION 3<br />
(BCS3) VOLUNTARY WATER CONSERVATION<br />
Water conservation is still a major issue for our area. Each resident has<br />
received an insert in their Harris County MUD 102 water bill asking that<br />
they observe the voluntary water conservation program that has been<br />
proposed for this area.<br />
There are two simple rules with respect to this program:<br />
1. Even numbered residences should water outdoors on Wednesdays<br />
and Sundays while odd numbered residences should water outdoors<br />
on Tuesdays and Saturdays. No water should be used outdoors by<br />
any resident on Mondays.<br />
2. Water should not be used outdoors between the hours of 6 AM and<br />
10 AM and between the hours of 6 PM and 10 PM.<br />
Let’s all work together to conserve our water resources while maintaining<br />
our yards within the guidelines outlined by the Harris County<br />
MUD district.<br />
(BCS3) <strong>2018</strong> ASSESSMENT UPDATE<br />
Note that as of June 1 st , 54 of the 59 property owners in BCS3 have either<br />
paid their <strong>2018</strong> assessment or are in an active payment plan. Those<br />
property owners that are still delinquent have had their files turned<br />
over to the HOA lawyers for the next steps in the collection process.<br />
This is an excellent situation for the HOA to be in financially at this time.<br />
The Board would like to thank everyone for handling this payment<br />
in a timely fashion. This is our only source of income for HOA related<br />
bills and expenses such as electricity for the light poles, landscaping,<br />
insurance, management fees and other issues.<br />

Pool:<br />
The community pool is now open. Pool tags can be purchased providing that<br />
HOA dues are current.<br />
Home Run Businesses:<br />
Charlestown Colony will not tolerate any home run business that can be seen by<br />
other residents or the public. Should this continue all appropriate action, including<br />
legal, will take place.<br />
Cars:<br />
We love our children, joggers, walkers and bike riders. Please slow down while<br />
driving through our neighborhood and make complete stops as required by law<br />
at posted stop signs. There have been several reports of running stop signs, which<br />
poses an increased risk of accidents.<br />
Parked Cars on Streets and Parked Cars Close Stop Signs:<br />
When cars are parked on the street close to stop signs, it becomes very difficult<br />
for drivers to maneuver around on-coming traffic. Please park cars safely on the<br />
streets to avoid accidents. Also, summer is in full force, our neighborhood children<br />
are enjoying bicycle riding, skate boarding and scootering, please be cognizant of<br />
parked cars on the streets. It makes it difficult for our kids to maneuver around<br />
these vehicles safely. We love our children and do not want to see them injured.<br />
Flags:<br />
Our flagpole installation was completed just in time for the Memorial Day holiday!<br />
The flags are beautiful and enhance. This is a permanent flag solution for<br />
Charlestown Colony.<br />
Charlestown Colony Park:<br />
Our community park is enjoyed by many of the residents and their family members!<br />
It has bounced back since the days of Hurricane Harvey! Let’s keep it looking<br />
amazing! There have been reports of trash and debris in the park. Please remember<br />
to pick up after ourselves.<br />
Although Hurricane Harvey reeked wide spread havoc in our community and the<br />
release of the Addick’s Reservoir caused 80% of our subdivision to flood, winning<br />
yard of the month is a testament of our community’s resiliency despite all the<br />
tragedy we experienced.<br />
As we continue to beautify our homes, we should not forget to celebrate the<br />
milestones of our progress. There are many events happening now and later this<br />
summer, let’s give ourselves a break every now and again. Remember, we are<br />
Charlestown Colony Strong and we will come back stronger, better and more<br />
beautiful than before Hurricane Harvey!<br />

Debris Removal & Deed Restriction Violations:<br />
It is the homeowner’s responsibility to remove trash and debris from the front of their<br />
home. If more time is needed for repairs, the HOA Board and management company will<br />
review these on a case-by-case basis. Please reach out to the management company.<br />
Home Renovation Projects:<br />
Most of us have completed the street view repairs needed on our homes. For those<br />
who are still working on these repairs, please be cognizant of our deed restrictions<br />
and the Architectural Review form required to complete exterior projects such as<br />
replacing fences, exterior painting and pretty much any other exterior project attached<br />
to the home that can be viewed from the street. The Architectural form can<br />
be obtained from Principle Management Group Houston (PMG). We have all endured<br />
a lot due to the flood and have probably filled out enough forms over the last few<br />
months to last a lifetime. However, this form is just another step in the renovation<br />
process and keeping the project on track. Our deed restrictions have these forms<br />
in place to maintain the appearance of Charlestown Colony. If exterior projects are<br />
completed without consent, the homeowner could be subject to make changes<br />
such as re-painting the house all over again which is costly and time consuming.<br />
Most of the Architectural Review forms can be processed within 10 business days,<br />
but it could take up to 30 days. If it is urgent, please indicate that on the form and<br />
include a phone number. PMG may be able to offer a verbal, “yes” to get the project<br />
started while the form is being processed.<br />
Our Furry Family Members:<br />
There has been a noticeable number of lost and found pets posted on the Nextdoor<br />
App. As we continue to rebuild, please secure the furry family members by fixing<br />
broken fencing or other measures of security for our loving pets.<br />

annual dues are considered delinquent and subject to late fees and penalties. Our<br />
management company has new policies and procedures in place to collect on past<br />
due HOA assessments. If these have not been paid yet, please make every effort to<br />
pay or make a payment arrangement. The Board worked diligently to maintain our<br />
HOA dues at $300 for <strong>2018</strong> although the neighborhood incurred additional expenses<br />
caused by the flooding. There are several payment options available.<br />

As we continue to work on renovating our homes, please be cognizant of trash collection<br />

Trash Pick-up is Monday and Thursday by WCA unless it falls on one of the holidays<br />

Why are outdoor cats considered a problem?<br />
Nuisance behaviors, such as urinating and<br />
defecating in someone’s yard or garden, digging<br />
in someone’s yard or garden, jumping on<br />
someone’s car and upsetting an owned cat,<br />
are the greatest concerns that the general<br />
public has about outdoor cats.<br />
Overpopulation is a serious concern as well.<br />
Although 85 percent of the estimated 75 to 80<br />
million pet cats in the U.S. are already spayed<br />
or neutered, many have kittens before they are<br />
spayed or neutered. Those kittens, especially if<br />
they are allowed outdoors, add to the number<br />
of outdoor cats and the problems associated<br />
with them.<br />

If my cats have been spayed or<br />
neutered, why shouldn’t I let them out?<br />
Nothing good can come from letting cats roam<br />
outside. When outside, cats face dangers such<br />
as injury or death from being hit by a car, being<br />
carried off by a bird of prey, being harmed by<br />
another animal or person and diseases and<br />
parasites.<br />
Fortunately, more owners are realizing that<br />
indoor cats are safer and can lead happy<br />
lives indoors. But millions of pet cats are still<br />
allowed outside, usually without the visible<br />
collars and identification that would help reunite<br />
them with their owners should the cats<br />
be picked up by a neighbor or animal control.<br />
How can cat overpopulation be solved?<br />
Spaying or neutering community cats using<br />
Trap-Neuter-Return (TNR) will reduce their<br />
numbers. Spaying or neutering pet cats before<br />
they reproduce will reduce their numbers and<br />
help stop pet overpopulation.<br />
Trap-Neuter-Return: If you are feeding or have<br />
feral cats on your property, trap, transport,<br />
recover and release the feral cats in your area.<br />

(YTC) HOAS AREN’T FOR EVERYONE,<br />
BUT THERE ARE MANY POSITIVES<br />
HOAs face critics from people who aren’t crazy<br />
about having an organization dictate what<br />
they can and can’t do with their property. And<br />
they’re wary of living under bylaws that come<br />
with fines for violations.<br />
I hope this will help put a different prospective<br />
on the HOA and its volunteers. Because there<br />
are many positive things for the HOA. We as<br />
volunteers love our neighborhood and we<br />
are dedicated to improving every aspect of<br />
our community. In order to do keep our family<br />
in a safe environment and our most valuable<br />
investment (our home) increasing in value.<br />
We are looking to you, our neighbors, to do<br />
their part to help us with our positive active<br />
on taking pride in our community.<br />
Let’s not give the Management Company a<br />
reason to send out violation letters, this will<br />
accomplish so much if you just do your part,<br />
it will make everyone envy of our beautiful<br />
neighbor and keep our yearly dues from going<br />
up every year. On a positive note I ask everyone<br />
to do their part. The following list is why<br />
most residents get letters:<br />
Lawn Maintenance:<br />
Maintain your lawn to promote a healthy and<br />
nice looking appearance: keep it fertilized &<br />
watered, cut & edged lawn and around curb.<br />
Please apply weed treatment at first sight of<br />
weed growth. Maintain your flowerbeds, tree<br />
wells, between joints on the driveway and<br />
sidewalk/walkways to keep it free of weeds.<br />
Also, groom your shrubs and trees and re-sod<br />
the lawn if needed.<br />
Remove mildew on the brick.<br />
Trees: Prune the lower limbs of your trees to<br />
a minimum of 13 feet of clearance over the<br />
ground and street.<br />
Recreational vehicles, Trailers, etc.: Must be<br />
stored out of public view. All trailers shall be<br />
parked only in an enclosed garage or off-site storage<br />
as they are not allowed in the community.<br />
Take down Holiday Decorations in a timely<br />
manner.<br />
Replace any rotten trim.<br />

WHEN TRAGEDY STRIKES<br />

at Shield-Bearer Counseling<br />
Centers,<br />
I am frequently asked by parents<br />
or teachers how to help<br />
children when they or their<br />
community experiences a<br />
tragedy.<br />
Every child reacts differently<br />
to loss. Younger children handle<br />
the news differently than older children. A child’s personality and<br />
values influence their reaction. Parents and teachers may notice children<br />
displaying a greater amount of energy following a tragedy. Energy<br />
released by their body’s natural response when safety is threatened<br />
will find its way into more irritability, fidgeting and inability to focus<br />
on tasks at hand.<br />
But there are some things individuals who are raising or working with<br />
children can do.<br />
Model calmness.<br />
Children will look to parents and other adults to cue their interpretation<br />
and reaction to the tragedy. When children see the adults around them<br />
remaining calm, they will be more easily reassured of their own safety.<br />
Help them talk.<br />
Parents frequently have difficulty discussing such horrible tragedies<br />
with their children. As with other times of loss, they do not know exactly<br />
what to say. Being available to listen to what children want to say<br />
will likely be more helpful than putting together a lecture. Encourage<br />
children to express how they feel when they are ready to discuss it.<br />
Honestly answer questions.<br />
When children do not know the answers, they will ask questions. Parents<br />
who patiently attempt to answer tough questions will see their<br />
children move through the pain of the tragic event. If you don’t know<br />
the answers, tell them so. Reassuring them of their present safety will<br />
help them learn to overcome fears that they might be struggling with.<br />
Limit access to tragedy news.<br />
Monitoring your children’s access to news reports of the tragedy will help<br />
reduce the possibility of nightmares. When a child watches news programs<br />
about a tragedy, parents should be present to discuss the contents of reports.<br />
Keep them busy.<br />
One of the most important things that a parent can do to help their<br />
children work through a tragedy is to maintain the routine and structure<br />
of their children’s lives. Keep appointments. Carry on with chores and<br />
responsibilities. Meet obligations.<br />
Help them help.<br />
Every person touched by a tragedy is motivated to help in some way. The<br />
negative emotions of fear, sorrow and anger can be channeled into acts of<br />
kindness. Having a child gather items for tragedy victims, write a thankyou<br />
note to the first responders or draw a picture for someone intimately<br />
involved will help them feel they are making a difference. These actions<br />
can help them regain a sense of control over their situation.<br />
Remember that each child is an individual. What helps one child might<br />
not help another. If there are significant changes in behavior, mood or<br />
sleeping patterns, it is important to make a visit to a physician or professional<br />
counselor to assess what professional help might be available.<br />
Above all else, let them know they are loved.<br />

Significance of Independence Day <strong>2018</strong><br />
Independence Day <strong>2018</strong>, also known as Fourth of <strong>July</strong>, is a federal<br />
holiday observed yearly on <strong>July</strong> fourth. It is the anniversary of the<br />
publication of the declaration of independence of the United States<br />
of America from Great Britain in 1776.<br />
History of Independence Day<br />
The history of Independence Day <strong>2018</strong> dates back to the 18 th century<br />
and the American Revolution (1775-83). In June 1776, representatives<br />
of the 13 colonies then fighting in the revolutionary struggle<br />
weighed a resolution that would declare independence of the<br />
United States from Great Britain. On <strong>July</strong> 2 nd , the legal separation<br />
of the Thirteen <strong>Colonies</strong> from Great Britain occurred, when the<br />
Second Continental Congress voted to approve a resolution of<br />
independence that had been proposed by Richard Henry Lee of<br />
Virginia. Two days later its delegates adopted the Declaration of<br />
Independence, a historic document drafted by Thomas Jefferson,<br />
John Adams and Benjamin Franklin.<br />
Historians have long disputed whether Congress actually signed the<br />
Declaration of Independence on <strong>July</strong> 4 th and most have concluded<br />
that the Declaration was signed nearly a month after its adoption,<br />
on August 2, 1776 and not on <strong>July</strong> 4 th as it is commonly believed.<br />
The holiday remains to be celebrated on the fourth of <strong>July</strong>. Coincidentally,<br />
both John Adams and Thomas Jefferson, the only signers<br />
of the Declaration of Independence later to serve as Presidents of<br />
the United States, died on the same day: <strong>July</strong> 4, 1826, which was<br />
the 50 th anniversary of the Declaration.<br />
10 FIREWORKS SAFETY TIPS<br />
While you are enjoying your grilling, family time and fireworks, take<br />
time to remind your kids what this holiday is about. The lighting and<br />
display of fireworks came with a price to many men and women sacrificing<br />
for their kids and future generations. Use the fireworks display<br />
as a teaching tool; share with them the lyrics of the star spangled<br />
banner and, most of all, remain safe if your family tradition includes<br />
lighting fireworks. Below are 10 fireworks safety tips you should use<br />
and teach to your kids.<br />
• Fireworks packaged in brown paper are made for professional<br />
displays - avoid buying.<br />
• Always have an adult supervise fireworks activities, especially<br />
with sparklers.<br />
• Back up to a safe distance immediately after lighting fireworks.<br />
• Never point or throw fireworks at another person.<br />
• Keep a bucket of water or a garden hose handy in case of fire<br />
and to douse used fireworks before discarding in trash.<br />
• Never allow young children to play or ignite fireworks.<br />
• Never carry fireworks in a pocket or shoot them off in metal<br />
or glass containers.<br />
• Never try to re-light or pickup fireworks that have not ignited fully.<br />
• Never place a part of your body directly over a firework device<br />
when lighting.<br />
• Make sure fireworks are legal in your area before buying or using them.<br />
Traditions of Independence Day<br />
Independence Day is a day of family celebrations with picnics and<br />
barbecues, showing a great deal of emphasis on the American<br />
tradition of political freedom and patriotism. Many people display<br />
the American flag outside their homes or buildings. Additionally,<br />
Independence Day fireworks are often accompanied by patriotic<br />
songs such as the national anthem and, in capable military bases, a<br />
salute of one gun for each state in the United States, called a “salute<br />
to the union,” is fired on Independence Day at noon.<br />

CREAM CHEESE-BLUEBERRY MUFFINS<br />

NATIONAL MAC AND CHEESE DAY<br />
One of the classic comfort foods earns a place of honor on<br />
<strong>July</strong> 14 th . It is National Mac and Cheese Day!<br />
Made with macaroni noodles, cream or milk and the golden<br />
goodness of cheese, mac and cheese shines as a side dish but can<br />
stand on it’s own as a main dish as well. From the classic mac and<br />
cheese with cheddar or American cheeses to the spicy cowboy mac<br />
with bacon and jalapenos, there’s a combination for everyone. Mix<br />
up the cheeses or load up on seasonings, set the broiler for a couple<br />
of minutes at the end of the cooking time and let the cheese get a<br />
nice toasty crust.<br />
CAULIFLOWER "MAC" AND CHEESE<br />

Ingredients<br />
Kosher salt and freshly ground black pepper<br />
1 tablespoon butter, plus more for the pan<br />
1 large head cauliflower, cut into florets<br />
1 cup whole milk<br />
1/2 teaspoon dry mustard<br />
Hot sauce, as needed<br />
1 cup grated pepper jack cheese<br />
One 4-ounce log fresh goat cheese<br />
1/4 cup grated Parmesan<br />

DIRECTIONS:<br />
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups<br />
with cooking spray or line with paper muffin liners.<br />
Sift flour, baking powder, baking soda and salt together with a sifter<br />
into a bowl. Combine sugar, cream cheese, table cream, eggs and<br />
1/4 cup vegetable oil plus 1 teaspoon vegetable oil in a large bowl.<br />
Fold flour mixture into sugar mixture until batter is smooth. Stir<br />
in blueberries. Scoop batter into prepared muffin cups. Bake in<br />
preheated oven until golden brown, 10 to 15 minutes.<br />

Directions<br />
• Bring a large pot of salted water to a boil. Preheat the oven<br />
to 375 degrees F. Grease a baking dish with butter.<br />
• Cook the cauliflower in the boiling water until just<br />
crisp-tender, about 10 minutes. Drain well.<br />
• In a large saucepan, heat the milk and butter over medium<br />
heat. Whisk in the dry mustard and add some hot sauce,<br />
salt and pepper. Just before the milk comes to a boil, turn<br />
off the heat and stir in the pepper jack and goat cheese.<br />
When melted and smooth, stir in the cauliflower.<br />
Spread the mixture into the prepared baking dish<br />
and sprinkle over the Parmesan.<br />
• Bake until the top is golden brown and the mixture is bubbling,<br />
about 30 minutes. Let rest for a few minutes before serving.<br />
MACARONI AND CHEESE<br />

Ingredients<br />
4 cups Dried Macaroni<br />
1 whole Egg, Beaten<br />
1/4 cup (1/2 Stick Or 4 Tablespoons) Butter<br />
1/4 cup All-purpose Flour<br />
2-1/2 cups Whole Milk<br />
2 teaspoons (heaping) Dry Mustard, More If Desired<br />
1 pound Cheese, Grated<br />
1/2 teaspoon Salt, More To Taste<br />
1/2 teaspoon Seasoned Salt, More To Taste<br />
1/2 teaspoon Ground Black Pepper<br />
Optional Spices: Cayenne Pepper, Paprika, Thyme<br />
Preparation<br />
• Cook macaroni until very firm. Macaroni should be too firm<br />
to eat right out of the pot. Drain.<br />
• In a small bowl, beat egg.<br />
• In a large pot, melt butter and sprinkle in flour. Whisk together<br />
over medium-low heat. Cook mixture for five minutes, whisking<br />
constantly. Don’t let it burn.<br />
• Pour in milk, add mustard, and whisk until smooth. Cook for<br />
five minutes until very thick. Reduce heat to low.<br />
• Take 1/4 cup of the sauce and slowly pour it into beaten egg,<br />
whisking constantly to avoid cooking eggs. Whisk together<br />
till smooth.<br />
• Pour egg mixture into sauce, whisking constantly.<br />
Stir until smooth.<br />
• Add in cheese and stir to melt.<br />
• Add salt and pepper. Taste sauce and add more salt<br />
and seasoned salt as needed! DO NOT UNDERSALT.<br />
• Pour in drained, cooked macaroni and stir to combine.<br />
• Serve immediately (very creamy) or pour into a buttered baking<br />
dish, top with extra cheese, and bake for 20 to 25 minutes or<br />
until bubbly and golden on top.<br />
PENUCHE FUDGE<br />
You could make this on National Ice Cream Day <strong>July</strong> 22nd!<br />
INGREDIENTS:<br />
1 1/2 cups white sugar<br />
1 cup brown sugar<br />
1/3 cup half-and-half cream<br />
1/3 cup milk<br />
2 tablespoons margarine<br />
1 teaspoon vanilla extract<br />
1/2 cup pecan halves<br />
DIRECTIONS:<br />
Butter a baking sheet. Butter the sides of a heavy, 2-quart saucepan. In<br />
the saucepan, stir together white sugar, brown sugar, cream, milk and<br />
margarine and bring to a boil over medium heat. Heat, without stirring,<br />
to between 234 and 240 degrees F (112 to 116 degrees C) or until a small<br />
amount of syrup dropped into cold water forms a soft ball that flattens<br />
when removed from the water and placed on a flat surface. Remove from<br />
heat and cool to lukewarm (110 degrees).<br />
Stir in vanilla and beat vigorously until mixture loses its gloss. Quickly<br />
stir in pecans and spread on prepared sheet. Score into squares while<br />

Who could be more focused on kid fun this summer<br />
than this museum? Children’s Museum is open seven<br />
days a week for a great summer with weekly themes,<br />
action-packed activities, performances, character appearances<br />
and extraordinary events. Admission is $12<br />
for adults and children (age 1+), $11 seniors. Kids under<br />
1 are free. Don’t forget - you can get discounted access<br />
to the Children’s Museum and four other top Houston<br />
attractions for nearly half off with Houston CityPass.<br />
DETECTIVE DAYS AT BAYOU BEND COLLECTION<br />
AND GARDENS<br />
Kids 6 and up can explore mysteries at Bayou Bend Collection<br />
and Gardens. Kids will learn about horticulture,<br />
art, design and American history as they solve seasonal<br />
riddles. Each detective receives a clipboard and magnifying<br />
glass. Hunts in the garden: Tuesday - Saturday,<br />
10 AM-4 PM, Sundays 1-4 PM. Hunts in the house: 1-4<br />
PM, Friday, Saturday, Sunday. Kids 18 and under free.<br />

CELEBRATE THE QUIRKY<br />
The Beer Can House and Art Car Museum are some fun<br />
cultural institutions with a twist! Beer Can House is $5 for<br />
adults and free for kids 12 and under. It’s open Saturday<br />
and Sunday, noon-5 PM. Art Car Museum has 3-4 art cars<br />
that rotate quarterly along with new art in the gallery.<br />

park in Humble. From learning about dragonflies, flags<br />

LATIN BEATS AT DOWNTOWN AQUARIUM<br />
Enjoy free salsa dance lessons every Friday night<br />
through August 17 th , 7-11 PM. Lessons are taught by professional<br />
salsa dancers. A live band will perform the last<br />
Friday each month. Located at 410 Bagby at Memorial.<br />
NORTH HOUSTON SKATE PARK IN SPRING<br />
It’s the largest Skate Park in North America at 78,000 sq.<br />
ft. Admission is free! The skate park is open 8 AM-10 PM<br />
all summer Monday, Wednesday, Thursday, Friday<br />
and Saturday and 10 AM-9 PM Sunday.<br />

BAT CHATS<br />

NOAH’S ARK POOL AT FIRST UNITED METHODIST<br />
CHURCH’S QUILLIAN CENTER IN WESTCHASE<br />
The pool celebrates 22 years this summer. Noah’s Ark<br />
Pool is an amazing destination! The area also includes<br />
a full-size swimming pool with two slides and two diving<br />
boards. Open through August 25 th , Monday-Saturday,<br />
10 AM-4 PM. $7.50 each (under age 1 free). Twilight<br />
Tuesday swim night is $5 admission from 6:30-9 PM.<br />
Noah’s Ark pool only August 28 th -September 1 st (10<br />

Tuesday. The M/V Sam Houston has been operating as<br />
a public vessel since 1958. Reservations are first-come,<br />
first-served and must be at least 24 hours in advance.<br />

GALVESTON<br />
Take a day trip to Galveston and enjoy walking along<br />
the Seawall, building sandcastles, playing in the water<br />
or shopping on the Strand. Parking is $8/day or $1/hour<br />
along the Seawall if you can find it! Or head to Stewart<br />
Beach ($10-$12 per vehicle), which is known as Galveston’s<br />
family beach. Plenty to do with the pavilion, beach<br />
volleyball courts, concessions and the beach! Lifeguards<br />
are on site at Stewart Beach. Located at 201 Seawall<br />
Blvd. Take a free ride on the Galveston-Port Bolivar ferry,<br />
with up to 5 ferries operating in the summer.<br />
OTHER<br />
LONE STAR FLIGHT MUSEUM<br />
Enjoy over 130,000 square feet of aviation history and<br />
activities. With more than 40 vintage planes on premises<br />
and cool activities like virtual flights, it’s fun for the<br />
whole family.<br />
HPD MOUNTED PATROL BARN<br />
Visit the Houston Police Department stables and feed<br />
the horses. Visit Monday-Friday, Noon-2 PM for unscheduled<br />
visits. Bring apples, carrots and peppermints<br />
for the horses (limit 2 each). There are close to 40 horses<br />
and a couple donkeys! Saturdays and Sundays, visits<br />
must be scheduled ahead of time by calling<br />
