We make our bread using old Danish recipes from Northern Europe. The dough is made with a
minimum amount of yeast and slow proofs for many hours which gives the bread a unique flavor, a
nice soft crumb with irregular air pockets and a wonderful crust. All our bread is baked with natural
USDA certified organic ingredients.

All of our products are certified organic by CCOF - organic ingredients cannot be exposed to
chemicals or pesticides - gentle on the body and the earth. Currently, organic, kosher pareve, soy
free, dairy free, peanut free, treenut free chocolate chips do not exist, when they do, we will get
them. We only use organic whole grain brown rice flour. We are certified kosher pareve by Kehilla
Kosher. All of our menu items are free of dairy, casein, peanuts, gums, gluten, wheat, soy, treenuts,
transfats, and preservatives.
