Many of our <strong>Falcon</strong> <strong>Ranch</strong> Homeowners have requested<br />

we move our <strong>Falcon</strong> <strong>Ranch</strong> HOA Meetings<br />

to a different night, other than the fourth Wednesday<br />

of the month. By popular demand, we moved<br />

our HOA Board Meetings, to the fourth Tuesday of<br />

the month, starting in June <strong>2018</strong>. The starting time<br />

of our HOA Meetings will still be at 6:30 PM. The<br />

HOA Board Members and the Management from<br />

Spectrum Association Management respect the<br />

RECYCLE YARD WASTE<br />

Residents of <strong>Falcon</strong> <strong>Ranch</strong> could benefit the community, as well as<br />

their own lawns and pocketbooks, with one simple change in lawn<br />

maintenance.<br />

If you or your lawn service currently bag grass clippings, simply leaving<br />

the clippings to work down into the lawn will make a huge difference<br />

in the amount of waste our community puts into the landfill each year.<br />

It will also help conserve water, because the clippings will work to<br />

maintain moisture in the soil. Both of these benefits will save money<br />

in the long-run. Moreover, it is estimated that lawns that are naturally<br />

fertilized with grass clippings require 25% less fertilizer - resulting in<br />

even more savings to you!<br />

It isn’t necessary to use a mulching mower; just mow one inch when<br />

grass reaches four inches tall. The clippings won’t be noticed and will<br />

break down within a week.<br />

REPORTING SUSPICIOUS ACTIVITY<br />

You may have noticed the constables patrolling our neighborhoods,<br />

working to keep our community safer for everyone. The appearance of<br />

constables has raised a question of what to do if you witness suspicious<br />

activity. If you see something happening that is an emergency, please<br />

call 911. If you see suspicious activities that are not emergencies, call<br />

the Fort Bend County Sheriff’s Office at 281-341-4665.<br />

PET PEEVES<br />

Do your duty as a pet owner! When you take your dog for a walk around<br />

the community or to the park, please be courteous to the surrounding<br />

neighbors and pick up behind your pet and keep unwanted dog waste<br />

from becoming a threat and a nuisance to the safety and enjoyment<br />

for all members of the community.<br />

GARDENING TIPS FOR OCTOBER<br />

• Dig and store caladiums before the foliage dies. Allow the bulbs to dry<br />

in the shade, shake off the dried soil and dust with sulphur to control<br />

fungus. Store by hanging in open mesh bags or old panty hose.<br />

• Flowers planted for spring can begin when the temperatures are going<br />

to stay cooler. Shrubs and trees can be planted now. Woody plants<br />

concentrate on root growth through the winter and the more headstart<br />

they can get before summer, the better.<br />

• <strong>October</strong> 15 th is about the time for dividing and planting daylilies.<br />

• Watch out for brown patch in St. Augustine grass. These circular brown<br />

patches are caused by a fungus that is activated by moist cool weather.<br />

Control with Daconil.<br />

• If you need to do any pruning, do it early in the month. The re-growth<br />

stimulated by pruning needs to harden off before that odd-ball frost of<br />

Halloween. Prune fruit trees when leaves begin to fall. Remove all dead,<br />

weak and over-crowded growth. Tip back main branches to control<br />

size and shape. Spray w/dormant oil when temperature is between<br />

30-60 degrees.<br />

• Cut back tops of perennials after they have bloomed. Divide roots and<br />

transplant anytime from now until March, the earlier the better.<br />

• Get the ant baits down. This will greatly reduce your spring populations.<br />

• Clover left over from last year may be growing. It’s best to hit it with<br />

the post-emerge herbicides in <strong>October</strong> and November. At least two<br />

applications are usually needed, even if done this early.<br />

• For color throughout the winter, begin planting pansies.<br />

OCTOBER EVENTS<br />

NOTTINGHAM COUNTRY GARDEN CLUB<br />

On Thursday, <strong>October</strong> 4, <strong>2018</strong>, Nottingham<br />

Country Garden Club (NCGC) will feature Linda<br />

Gay with a presentation on “Bulbs Naturalized<br />

for the Gulf Coast.” Linda is a horticulturist and<br />

gardener by trade. She worked at the Mercer<br />

Botanic Garden for 26 years and the last 11 years<br />

served as Director of the Garden. Additionally,<br />

Linda has worked with McGovern Centennial<br />

Gardens, The Arbor Gate Nursery in Tomball and<br />

teaches horticulture classes at HCC.<br />

Meet and greet time begins at 9:30 AM and the<br />

program will start at 10 AM, followed by the<br />

NCGC meeting. Please join us at the Municipal<br />

our fundraising events. We typically meet each<br />

month as an entire club at The Golf Club at Cinco<br />

<strong>Ranch</strong> at 7 PM to partake in themed events such<br />

as a Chili Cook Off, Halloween Party, Craft Fairs,<br />

Silent Auction, Line Dancing, Self--Defense Class,<br />

Favorite Things Exchange and Luau.<br />

We also offer about 22 sub-clubs that each<br />

meet once a month on a small scale in residents<br />

homes, businesses, restaurants and walking<br />

trails. A few special interest clubs are Book,<br />

Business Network, Bunco, Coffee, Craft, Dining,<br />

Lunch, Ladies Night Out, Movie, Garden, Game<br />

TO CELEBRATE 47 YEARS WITH<br />

BAYOU CITY ART FESTIVAL DOWNTOWN<br />

The Art Colony Association, Inc. (ACA) will celebrate<br />

47 years of fine art and giving back to<br />

local non-profits as it spotlights 300 artists at<br />

Bayou City Art Festival in Downtown Houston,<br />

Saturday and Sunday, <strong>October</strong> 13-14, <strong>2018</strong>, 10<br />

AM - 6 PM at 901 Bagby Street. Cost $12 online<br />

The sophisticated gallery will transform the<br />

streets of Downtown into artistic avenues<br />

bursting with colors and culture. As one of the<br />

top outdoor fine art festivals in the U.S., the<br />

weekend festival will provide guests with the<br />

opportunity to see and purchase unique, custom<br />

art under the iconic Houston skyline. Bayou<br />

City Art Festival Downtown will benefit local<br />

non-profits and feature live music in front of City<br />

Hall and throughout the festival along with entertainment,<br />

much more for patrons to enjoy. In the Children’s<br />

Creative Zone, the festival’s non-profit partners<br />

will host art activities for all ages and include a<br />

cool interactive place to hang out.<br />

Celebrating 47 years since the founding of the<br />

Westheimer Art Festival, now known as Bayou<br />

City Art Festival, ACA has provided a venue for<br />

over 20,000 artists to showcase their work to<br />

thousands of art lovers from all over the world.<br />

Every year, a new jury selects participating<br />

artists, some new and some returning. This<br />

helps create a fresh and different festival year<br />

Texas Renaissance Festival - Weekends thru November<br />

Festival is an interactive theme park that<br />

embraces different eras, including the 16 th century<br />

and beyond. The 55-acre theater is filled with live entertainment,<br />

food and shops. The enchanted 55-acre<br />

village comes to life as all of Europe comes to pay<br />

homage to the King and Queen with Eight Themed<br />

Weekends. Hundreds of costumed performers are<br />

showcased in over 200 daily performances. Visitors<br />

meander along shaded cobblestone walkways visiting<br />

almost 400 shoppes overflowing with unique arts<br />

and crafts of offering delicious foods and beverages.<br />

All ages will be amused by the games of skill and<br />

human-powered rides.<br />

TX 77049. Part food festival, part music festival,<br />

CTC’s “Fall Fest” is an excellent opportunity to bring<br />

a taste of Chicago to Houston area residents. This<br />

one-day, Chicago, cultural festival features several<br />

food vendors, who offer Chicago culinary classics.<br />

Additionally, the event features DJs who will spin a<br />

variety of music types including: House music, which<br />

is an internationally known style of music born in<br />

Chicago which gave birth to techno and EDM. Also,<br />

the event hosts a dance lounge where attendees<br />

can learn Stepping which is a nationally known<br />

dance style born in Chicago and similar to this area’s<br />

77002. The artistic duo, Havel Ruck Projects,<br />

made up of local artists, Dan Havel and Dean<br />

Ruck, transformed a previously abandoned<br />

house into an interactive temporary public<br />

sculpture. Sourced from Cherry House Moving<br />

Company, the 1940s-era house was originally<br />

located in Santa Fe, Texas. After moving the<br />

home to Sam Houston Park in April, Havel<br />

and Ruck stripped the structure’s interior and<br />

exterior using drill saws and other tools. They<br />

cut circular holes into the walls and filled them<br />

with PVC pipe to create a “Swiss cheese” or<br />

“lace” appearance and collaged the interior<br />

walls with vintage images sourced from family,<br />

friends and local resale shops representing<br />

the city’s people, places and past.<br />

Spiderman, who is missing. Participants will work in teams to solve the<br />

AWARENESS MONTH<br />

The National Breast Cancer Awareness Month (NBCAM) program is<br />

dedicated to increasing awareness about the importance of the early<br />

detection of breast cancer through a nationwide campaign. NBCAM<br />

started as a weeklong campaign in 1985 with 2 founding members.<br />

Today the American Cancer Society is one of many national public<br />

service organizations, professional associations and government agencies<br />

that form the NBCAM Board of Sponsors. During <strong>October</strong>, which is<br />

National Breast Cancer Awareness Month, the member organizations<br />

of the Board of Sponsors join forces to spread the message that early<br />

detection of breast cancer followed by prompt treatment saves lives.<br />

The American Cancer Society recommends early detections. Women<br />

age 40 and older should have a screening mammogram every year<br />

and should continue to do so for as long as they are in good health.<br />

The third Friday in <strong>October</strong> each year is National Mammography Day,<br />

first proclaimed by President Clinton in 1993. On this day or throughout<br />

the month, women are encouraged to make a mammography<br />

appointment.<br />

3 STEPS TO EARLY DETECTION<br />

One in eight women are diagnosed with breast cancer in her lifetime.<br />

However, with early detection and treatment, you can greatly<br />

improve your chance of survival.<br />

Early detection means finding the cancer before it spreads to other<br />

parts of the body. Although breast cancer cannot be completely<br />

prevented, early detection provides the greatest possibility of<br />

successful treatment. By following these three steps, you will help<br />

increase your chance of detecting cancer early.<br />

Changes to look for include:<br />

• A lump or thickening in or near the breast or in the underarm area<br />

• A change in the size or shape of the breast<br />

• Dimpling or puckering in the skin of the breast<br />

• A nipple turned inward into the breast<br />

• Discharge (fluid) from the nipple<br />

• Scaly, red or swollen skin on the breast, nipple or areola (the dark<br />

area of skin at the center of the breast)<br />

You should see your health care provider about any of these<br />

symptoms. Often these symptoms are not due to cancer, but if<br />

you notice any changes in your body, tell your health care provider<br />

immediately so that the problems can be diagnosed and treated.<br />

2. WELL-WOMAN EXAM<br />

It is recommended that women visit their family physician or gynecologist<br />

each year for an annual Well-Woman Exam. In addition<br />

to a routine pelvic exam and pap smear, the doctor may perform<br />

a brief breast exam to check for abnormalities. The Well-Woman<br />

Exam is a great opportunity for you to discuss with your health care<br />

provider any questions or concerns you have regarding your breast<br />

health. For example, your doctor may help you to determine the<br />

most appropriate frequency for your early detection steps.<br />

3. MAMMOGRAM<br />

In its early stages, breast cancer doesn’t usually cause symptoms.<br />

NBCF recommends that women ages 40 and older get a mammogram<br />

every year. A mammogram is an X-ray of the breast. It is a safe<br />

way to detect cancerous tumors and other abnormal breast conditions<br />

and women who have screening mammograms have a lower<br />

chance of dying from breast cancer than women who do not have<br />

screening mammograms. Mammograms can detect cancer or other<br />

problems before a lump becomes large enough to be detectable<br />

to the touch. They provide an effective way to find breast cancer<br />

in its early stages when treatment is usually the most successful.<br />

Mammograms are considered safe, quick and relatively painless.<br />

1. BREAST SELF-AWARENESS<br />

Breast self-awareness can help you become familiar with how your<br />

breasts normally look and feel. Knowing this will help you identify<br />

any changes in your breasts that should be reported to your health<br />

care professional promptly. If you find a lump, schedule an appointment<br />

with your doctor, but don’t panic - 8 out of 10 lumps are not<br />

cancerous.<br />

HISTORY OF HALLOWEEN<br />

Halloween is the season for little ghosts and goblins to take to the<br />

streets, asking for candy and scaring one another silly. Spooky stories<br />

are told around fires, scary movies appear in theaters and pumpkins<br />

are expertly (and not-so-expertly) carved into jack-o’-lanterns. Amid<br />

the silly and scary antics, Halloween is much more than just costumes<br />

and candy, in fact, the holiday has a rich and interesting history.<br />

Samhain<br />

Halloween, also known as All Hallows’ Eve, can be traced back about 2,000<br />

years to a pre-Christian Celtic festival held around Nov. 1 st called Samhain<br />

(pronounced “sah-win”), which means “summer’s end” in Gaelic, according<br />

to the Indo-European Etymological Dictionaries. Because ancient records are<br />

sparse and fragmentary, the exact nature of Samhain is not fully understood,<br />

but it was an annual communal meeting at the end of the harvest year, a time<br />

to gather resources for the winter months and bring animals back from the<br />

pastures. Samhain is also thought to have been a time of communing with<br />

the dead, according to folklorist John Santino. Halloween provides a safe<br />

way to play with the concept of death, Santino said. People dress up as the<br />

living dead and fake gravestones adorn front lawns - activities that wouldn’t<br />

be tolerated at other times of the year, he said.<br />

But according to Nicholas Rogers, a history professor at York University in<br />

Toronto, there is no hard evidence that Samhain was specifically devoted to<br />

the dead or to ancestor worship. According to the ancient sagas, Samhain was<br />

the time when tribal peoples paid tribute to their conquerors. Samhain was<br />

less about death or evil than about the changing of seasons and preparing<br />

for the dormancy (and rebirth) of nature as summer turned to winter, he said.<br />

Though a direct connection between Halloween and Samhain has never been<br />

proven, many scholars believe that because All Saints’ Day (or All Hallows’<br />

Mass, celebrated on Nov. 1 st ) and Samhain, are so close together on the calendar<br />

that they influenced each other and later combined into the celebration<br />

now called Halloween.<br />

Costumes and trick-or-treating<br />

The tradition of dressing in costumes and trick-or-treating may go back to<br />

the practice of “mumming” and “guising,” in which people would disguise<br />

themselves and go door-to-door, asking for food, Santino said. Early costumes<br />

were usually disguises, often woven out of straw, he said and sometimes<br />

people wore costumes to perform in plays or skits. The practice may also be<br />

related to the medieval custom of “souling” in Britain and Ireland, when<br />

poor people would knock on doors on Hallowmas (Nov. 1 st ), asking for food<br />

in exchange for prayers for the dead.<br />

Trick-or-treating didn’t start in the United States until World War II, but<br />

American kids were known to go out on Thanksgiving and ask for food - a<br />

practice known as Thanksgiving begging, Santino said.<br />

Tricks and games<br />

These days, the “trick” part of the phrase “trick or treat” is mostly an empty<br />

threat, but pranks have long been a part of the holiday. By the late 1800s,<br />

the tradition of playing tricks on Halloween was well established. In the<br />

United States and Canada, the pranks included tipping over outhouses,<br />

opening farmers’ gates and egging houses. But by the 1920s and ‘30s, the<br />

celebrations more closely resembled an unruly block party and the acts of<br />

vandalism got more serious. Some people believe that because pranking<br />

was starting to get dangerous and out of hand, parents and town leaders<br />

began to encourage dressing up and trick-or-treating as a safe alternative<br />

to doing pranks, Santino said.<br />

However, Halloween was as much a time for festivities and games as it was<br />

for playing tricks or asking for treats. Apples are associated with Halloween,<br />

both as a treat and in the game of bobbing for apples, a game that since the<br />

colonial era in America was used for fortune-telling. Legend has it that the<br />

first person to pluck an apple from the water-filled bucket without using his<br />

or her hands would be the first to marry. Apples were also part of another<br />

form of marriage prophecy. According to legend, on Halloween (sometimes<br />

at the stroke of midnight), young women would peel an apple into one<br />

continuous strip and throw it over her shoulder. The apple skin would supposedly<br />

land in the shape of the first letter of her future husband’s name.<br />

Christian/Irish Influence<br />

Some evangelical Christians have expressed concern that Halloween is somehow<br />

satanic because of its roots in pagan ritual. However, ancient Celts did not<br />

worship anything resembling the Christian devil and had no concept of it. In fact,<br />

the Samhain festival had long since vanished by the time the Catholic Church<br />

began persecuting witches in its search for satanic cabals. And, of course, black<br />

cats do not need to have any association with witchcraft to be considered evil<br />

- simply crossing their path is considered bad luck any time of year.<br />

How to Carve<br />

A Pumpkin<br />

When it comes to pumpkin carving, the idea is to have fun. We’ve<br />

got tips on carving the best pumpkin, as well as how to pick a good<br />

pumpkin for carving!<br />

HOW TO PICK A GOOD PUMPKIN FOR CARVING<br />

Look for one that is a little misshapen. Inspect it for soft spots (especially<br />

the end opposite the stem). Reject a pumpkin that has soft spots, they<br />

will cause it to deteriorate quickly. Remember, your pumpkin doesn’t<br />

have to sit on its base, in fact, that’s often its weakest spot.<br />

Let the pumpkin guide the shape of the face: An elongated pumpkin<br />

should have an elongated face. A fat and happy pumpkin should have<br />

a fat and happy face.<br />

HOLLOW OR WHOLE?<br />

There are two reasons for hollowing: (1) If the inside is going to be<br />

exposed (through the mouth, etc.), it looks better if it is hollowed<br />

neatly. (2) If you plan to light the pumpkin from the inside, it must be<br />

hollow. You can hollow it out from a hole in the back instead of the top,<br />

so that the look of the face isn’t affected. If you’re illuminating with a<br />

candle, you need to hollow from the top to allow the heat and smoke<br />

to escape.<br />

MAKE A FACE<br />

To achieve a three-dimensional appearance, carve the entire pumpkin.<br />

Exaggerate the features. (If you aren’t sure what teeth really look like or<br />

how the gum line works, smile and look in the mirror.) If the pumpkin is<br />

frowning, carve wrinkles under the mouth. To add character, carve a lot<br />

of “crow’s feet” lines around the eyes. Consider using the stem as the<br />

nose and inserts such as radishes for the eyes or cut eyeballs from the<br />

back of the pumpkin and hold them in place with toothpicks.<br />

CARVE WITH CARE<br />

Use two hands at all times: one to control the blade and the other to<br />

control the pressure with which you cut (and thus the depth). Take care<br />

not to jab the blade into the pumpkin; you don’t want to cut all the<br />

way through the rind - except to determine its depth. The thickness of<br />

one pumpkin. To determine your pumpkin’s average depth, cut a<br />

core sample where you want an eye or a nostril to be. Keep that piece<br />

nearby as a reminder of how deep you can safely cut.<br />

ENJOY IT WHILE IT LASTS<br />

Pumpkins, which are actually a fruit, not a vegetable, are 90 percent<br />

water, so after carving they usually last only three days to a week. A<br />

jack-o’-lantern with a surface carving will last longer than one that<br />

is cut all the way through. Putting a candle or other light inside will<br />

shorten its life span, as the heat that results can “cook” the pumpkin<br />

and reduce its longevity to a matter of hours. For a bright, shiny finish,<br />

spray Armor All on the pumpkin and rub it in. Paint will not preserve a<br />

pumpkin. However, if you decide to paint your pumpkin for decoration,<br />

use a water-based latex paint and wait at least an hour after carving<br />

so that the cuts you have made in the pumpkin have a chance to dry.<br />

THE TOOLS<br />

Use a water-based marker to outline the face that you want to carve.<br />

First, draw a line down the center to establish symmetry. Then sketch<br />

the nose, the approximate center of the face. Once you’re satisfied with<br />

the details, trace over the lines using a permanent marker. For carving,<br />

basic kitchen implements, such as a paring knife or a steak knife with<br />

a standard - not serrated - blade that’s not going to bend, work well.<br />

You can also use a standard jigsaw blade. Otherwise, improvise: Use a<br />

CAJUN CHICKEN AND SAUSAGE GUMBO<br />

You could make this on National Gumbo Day <strong>October</strong> 12 th !<br />

INGREDIENTS<br />

1 cup vegetable oil<br />

1 cup all-purpose flour<br />

1 large onion, chopped<br />

1 large green bell pepper, chopped<br />

2 celery stalks, chopped<br />

1 pound andouille or smoked sausage, sliced 1/4 inch thick<br />

4 cloves garlic, minced<br />

salt and pepper to taste<br />

Creole seasoning to taste<br />

6 cups chicken broth<br />

1 bay leaf<br />

1 rotisserie chicken, boned and shredded<br />

DIRECTIONS<br />

Heat the oil in a Dutch oven over medium heat. When hot, whisk in flour.<br />

Continue whisking until the roux has cooked to the color of chocolate<br />

milk, 8 to 10 minutes. Be careful not to burn the roux. If you see black<br />

specks in the mixture, start over.<br />

Stir onion, bell pepper, celery and sausage into the roux; cook 5 minutes.<br />

Stir in the garlic and cook another 5 minutes. Season with salt,<br />

pepper and Creole seasoning; blend thoroughly. Pour in the chicken<br />

broth and add the bay leaf. Bring to a boil over high heat, then reduce<br />

heat to medium-low and simmer, uncovered, for 1 hour, stirring occasionally.<br />

Stir in the chicken and simmer 1 hour more. Skim off any<br />

foam that floats to the top during the last hour.<br />

KOREAN CHICKEN KABOBS<br />

An amazing combination of sweet and spicy! And the chicken comes<br />

out perfectly tender and juicy with a finger-licking sticky glaze!<br />

Ingredients:<br />

1/4 cup gochujang (Korean red pepper paste)<br />

1/4 cup reduced sodium soy sauce<br />

2 tablespoons seasoned rice wine vinegar<br />

2 tablespoons light brown sugar<br />

1 tablespoon toasted sesame oil<br />

1 tablespoon freshly grated ginger<br />

3 cloves garlic, minced<br />

2 pounds boneless, skinless chicken breasts,<br />

cut into 1-inch chunks<br />

1 1/2 tablespoons canola oil<br />

1 green onion, thinly sliced<br />

1/2 teaspoon toasted sesame seeds<br />

Directions:<br />

In a medium bowl, combine gochujang, soy sauce, rice wine vinegar,<br />

brown sugar, sesame oil, ginger and garlic. Reserve 2 tablespoons<br />

and set aside.<br />

In a gallon size Ziploc bag or large bowl, combine gochujang mixture<br />

and chicken; marinate for at least 2 hours to overnight, up to 8 hours,<br />

turning the bag occasionally. Drain the chicken from the marinade,<br />

discarding the marinade.<br />

Preheat grill to medium high heat. Thread chicken onto skewers;<br />

brush with canola oil.<br />

Add skewers to grill, and cook, turning occasionally, until the chicken<br />

is completely cooked through, reaching an internal temperature<br />

of 165 degrees F, about 10 minutes. Brush skewers with reserved<br />

gochujang mixture, cooking for an additional 1-2 minutes.<br />

Serve immediately, garnished with green onion and sesame seeds.<br />

1/2 cup pumpkin puree<br />

1/2 teaspoon ground cinnamon<br />

1 pinch ground cloves<br />

1 pinch ground nutmeg<br />

1/2 cup frozen whipped topping, thawed<br />

DIRECTIONS<br />

Preheat oven to 325 degrees F (165 degrees C). In a large bowl, combine<br />

cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at<br />

a time. Remove 1 cup of batter and spread into bottom of crust; set aside.<br />

Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and<br />

stir gently until well blended. Carefully spread over the batter in the crust.<br />

Bake in preheated oven for 35 to 40 minutes or until center is almost<br />

set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with<br />

whipped topping before serving.<br />
