DAYLIGHT SAVING TIME IN <strong>2019</strong><br />

Spring ahead <strong>March</strong> 10th, <strong>2019</strong><br />

When does Daylight Saving Time <strong>2019</strong> begin and when does DST end? The Old Farmer’s Almanac<br />

(around since the beginning of time or, at least, Benjamin Franklin’s day) answers your frequent<br />

questions …<br />

WHAT IS DAYLIGHT SAVING TIME? Daylight Saving Time (DST) is the practice of moving the clocks<br />

forward one hour from Standard Time for the summer months and changing them back again in<br />

the fall. The general idea is that this allows us all to make better use of natural daylight. However,<br />

DST has many detractors. Note that the term is “Daylight Saving Time” and not “Daylight Savings<br />

Time” with an “s” at the end of “Saving.” (The word “saving” is singular because it acts as part<br />

of an adjective rather than a verb.)<br />

WHEN IS DAYLIGHT SAVING TIME IN <strong>2019</strong>? To remember which way to set their clocks, folks often use the expression, “Spring forward, fall<br />

back.” DST begins on Sunday, <strong>March</strong> 10, <strong>2019</strong> at 2 AM. Remember to “spring forward” in the spring and set your clocks forward one hour<br />

(i.e., losing one hour). DST ends on Sunday, November 3, <strong>2019</strong> at 2 AM. At this time, we “fall back” in the fall by setting clocks back one hour<br />

(i.e., gaining one hour). The exceptions to DST are Arizona, Hawaii, Puerto Rico, the Virgin Islands and American Samoa.<br />

DAYLIGHT SAVING TIME TODAY: The current daylight saving period was established with the Energy Policy Act of 2005, which went into<br />

effect in 2007. As a result, most Americans now spring forward (turn clocks ahead and lose an hour) on the second Sunday in <strong>March</strong> (at 2<br />

AM.) and fall back (turn clocks back and gain an hour) on the first Sunday in November (at 2 AM.). However, farmers’ organizations lobby<br />

Congress against the practice, preferring early daylight to dry their fields and a Standard Time sunset for ending their work at a reasonable<br />

hour. Some farmers point out that the Daylight Saving Time is deceptively misnamed. “It is a gimmick that changes the relationship between<br />

‘Sun’ time and ‘clock’ time but saves neither time nor daylight,” says Katherine Dutro, spokesperson for the Indiana Farm Bureau. One Canadian<br />

researcher likened an increase in traffic accidents to the onset of Daylight Saving Time. Other experts insist that the extra hour of<br />

Trash/Recycle Contractor Change<br />

<strong>Green</strong> <strong>Trails</strong> MUD provides trash/recycle service to <strong>Green</strong> <strong>Trails</strong> <strong>Estates</strong>,<br />

GT Section III as well as the other HOAs in our district. As detailed in<br />

below, we changed trash/recycle contractors effective February 1, <strong>2019</strong>.<br />

To the residents of the <strong>Green</strong> <strong>Trails</strong> MUD:<br />

Beginning February 1, <strong>2019</strong>, Texas Pride Disposal will be your new solid<br />

waste & recycle collection provider!<br />

SERVICE & COLLECTION GUIDELINES<br />

Service hours may change with new provider.<br />

Holiday Schedule: Texas Pride Disposal observes four holidays: New<br />

Year’s Day, Independence Day, Thanksgiving Day and Christmas Day. In<br />

the event that your service day falls on a holiday, collection will roll to the<br />

next regularly scheduled collection day.<br />

Household Trash: Waste should be placed in personal trash cans<br />

between 20 and 96 gallons and under 50 pounds or sturdy bags not<br />

exceeding 50 pounds. Waste will be collected near the garage, side gate<br />

or behind a gate that serves as a dedicated waste container storage area.<br />

Yard Waste: Yard waste should be bagged or placed in cans not exceeding<br />

50 pounds. Bagged yard waste should be placed curbside next to cart.<br />

Branches should be placed curbside in bundles measuring no more than<br />

4’ x 4’ x 4’ and under 50 pounds. Limit 8 bundles per service day.<br />

Heavy Trash & Bulk Waste: Texas Pride Disposal will collect two heavy<br />

trash/bulk items per service day. Items include furniture, appliances,<br />

carpeting (tied and bundled), fencing (nails removed, tied and bundled<br />

under 4’ in length) and other items not disposed of regularly. Items<br />

should be curbside.<br />

Items Excluded from Regular Collection: The following items cannot<br />

be collected: dirt, rocks, brick, concrete, liquid paints, fuels, oils, tires,<br />

pesticides, fertilizer and batteries. Please contact us to discuss solutions<br />

for proper disposal of these items.<br />

Recycle Service: A new 18-gallon bin will be provided to each household<br />

before February 1 st . Existing recycle carts that are clearly labeled RECYCLE<br />

may be used. Recycle will be collected curbside.<br />

Follow the collection guidelines below to properly recycle. Collection<br />

every Wednesday. Have your recyclables curbside by 7 AM<br />

Collection Guidelines: Place all recyclables in the container provided<br />

by Texas Pride Disposal, old recycle bins or containers clearly labeled<br />

RECYCLE. • DO NOT BAG RECYCLABLES. Place recyclables loose in your<br />

recycle container. • Please rinse cans, jars, jugs and bottles before placing<br />

in your recycle container. • Additional containers can be purchased by<br />

contacting Texas Pride Disposal.<br />

The <strong>Estates</strong> of <strong>Green</strong> <strong>Trails</strong> invites neighboring communities to come<br />

enjoy the park at Shillington and Fry Road. A wonderful addition to our<br />

community encouraging family picnics, playgroups, a place to meet and<br />

bring laughter, smiles and good fun! Jenna and Josiah Hellekson, who<br />

recently relocated to Nottingham Country expressed, “with four little<br />

ones under the age of six, having outdoor space to get their energy out<br />

each day is crucial. We were thrilled to discover the new park nearby that<br />

we can enjoy for years to come.” Park hours are from dawn ‘til dusk. Ages<br />

(GT ESTATES) DEBRIS<br />

IN SEWER DRAINS<br />

Please refrain from depositing any debris (lawn clippings, leaves, pet<br />

waste, motor oil, etc.) into the streets or storm drains. Disposing of<br />

debris in the street or other portions of the storm water drainage system<br />

can create problems. Flooding takes place when the system becomes<br />

blocked with debris. This can create a flooding potential that could<br />

result in property damage. The water quality is impacted if you’ve used<br />

chemicals on your lawn or garden. In addition, pet waste left on yards<br />

can contribute to contaminated run off. Grass clippings and leaves left<br />

in the storm water system contribute to system wear and can destroy<br />

the underground system. Please make sure you dispose of your lawn<br />

clippings, leaves and other debris in a proper manner.<br />

(GT ESTATES) Security<br />

Neighborhood security is provided by the Harris County Constables<br />

Precinct 5 Office, 24 hours per day, 7 days per week. We also have an<br />

additional contract with them (Contract 50 - in conjunction with the<br />

other sections of <strong>Green</strong> <strong>Trails</strong> and Windsor Park Lakes).<br />

opportunity.<br />

(GT ESTATES) Vacation Watch<br />

Updated 10/14: Residents of Constable Precinct 5 contract subdivisions,<br />

which include <strong>Estates</strong> of <strong>Green</strong> <strong>Trails</strong>, can have their homes checked by<br />

a drive-by patrol officer while they are away on vacation. Please contact<br />

the Constable’s office at 281-463-6666 or complete a Vacation Watch<br />

Form, which can be found online at www.harriscountytx.gov/pct5 or<br />

www.constablepct5.com - You will need to complete the form and submit<br />

it to the Constable’s office one week before you leave! If your home is<br />

monitored by a private security alarm system, please be sure to tell them<br />

you are in <strong>Green</strong> <strong>Trails</strong> Contract 50 with the Harris County Constable in<br />

Precinct 5. You must also have an Alarm Permit with the Harris County<br />

Sheriff’s office. The application can be found on the following website:<br />

(GT ESTATES) Trash Service<br />

<strong>Estates</strong> of <strong>Green</strong> <strong>Trails</strong> has bi-weekly trash pick-up on Wednesdays<br />

and Saturdays by Best Trash (Phone 281-313-2378). Should you be<br />

overlooked by Best Trash on a pickup day, please call Best Trash directly<br />

and register any complaints with Sterling ASI (Phone 281-491-0266). They<br />

will follow up with Best Trash about the problem. Holidays, which fall<br />

on our pickup days mean that trash will be picked up the next normally<br />

scheduled service day. The following is a list of holidays observed by<br />

Best Trash: New Year’s Day, Memorial Day, Independence Day, Labor Day,<br />

Thanksgiving Day and Christmas Day. Please have your trash ready for<br />

pickup by 7 AM on pickup days. Landscaping debris, such as large bags of<br />

grass clippings, tree branches/limbs, etc. will be picked up either day, but<br />

it must be carried to the end of your driveway and left there for pickup;<br />

you can bring these heavy items out the night before, but please not<br />

several days in advance of pickup. Your neighbors appreciate it! Heavy<br />

household items such as hot water heaters, washers, etc. are considered<br />

“heavy trash” and are picked up on Wednesdays and Saturdays.<br />

All other trash will be picked up “at the back door” (outside the gate<br />

beside the garage, etc.) by Best Trash. Please be sure trash is visible and/<br />

or accessible to them, and please keep all pets safely away from that area<br />

of your yard. We pay for “back door” pickup, so that is where the men<br />

look for your trash.<br />

(GT ESTATES) Recycling<br />

Recycling plays an important role in how we help to protect the environment.<br />

The recycling day for the neighborhood is on Wednesday. If a holiday (see<br />

above) falls on Wednesday, recycling will be serviced the following week.<br />

Have your recycling bin at the curb no later 7:00 AM. You can recycle the<br />

following items; newsprint, magazines, phone books, corrugated boxes<br />

(broken down), non-corrugated cardboard (i.e. cereal boxes, soda boxes,<br />

etc.), HDPE Plastics 1 & 2 (look for the little triangle symbol usually on the<br />

bottom of the container with the number inside of it), aluminum and tin<br />

cans, paper, plastics 1 through 7, all glass and all metals. Items excluded<br />

include plastic bags, Styrofoam, pizza boxes and food soiled items.<br />

(GT ESTATES) Recreation Center<br />

<strong>Estates</strong> of <strong>Green</strong> <strong>Trails</strong> own the Recreation Center at Shillington Drive and Fry<br />

Road. It consists of an Olympic-size swimming pool, totally refinished in the<br />

spring of 2015 and two tennis courts, recently refinished in 2015. Use of these<br />

facilities is allowed to all <strong>Estates</strong> of <strong>Green</strong> <strong>Trails</strong> residents in good standing who<br />

have paid their annual maintenance fee. <strong>Green</strong> <strong>Trails</strong> Section III residents in<br />

good standing with their homeowners association can also use these facilities.<br />

Only residents who have been issued Pool/Tennis Court Access Cards from<br />

Sterling ASI are admitted into the pool and allowed to use the tennis courts.<br />

(GT ESTATES) Tennis Courts<br />

Any <strong>Estates</strong> of <strong>Green</strong> <strong>Trails</strong> or <strong>Green</strong> <strong>Trails</strong> Section III resident with a Pool/<br />

Tennis Court Access Card can use the tennis courts. Tennis Court Hours:<br />

7:30 AM until 10:00 PM. Rollerblades, skateboards or any other wheeled<br />

vehicles are not allowed on the courts any time.<br />

(GT ESTATES) Hike & Bike Trail<br />

The 10.75 mile, asphalt trail is available from dawn to dusk for walkers<br />

and bicyclists, foot-and non-motorized-wheel-traffic. The trail runs from<br />

Highland Knolls at Fry Road through George Bush Park to Highway 6 then<br />

connects to Terry Hershey Park. (When all of this is completed, you will<br />

be able to walk/bike to Terry Hershey Park (east of Hwy. 6) along this trail.<br />

Also look for the new trail connecting the trail behind the subdivision<br />

along the drainage canal to the new trail along Baker Road.<br />

GREEN TRAILS SECTION III NEWS<br />

(Section III includes 206 homes in the 2 neighborhoods north and south of<br />

<strong>Green</strong>wind Chase - Sec III on the north side & GT Village on the south side.)<br />

equipment or anything else that changes the appearance of your property.<br />

Pattison Elementary<br />

Kindergarten Round Up<br />

Pattison Elementary Kindergarten Round UP night is Thursday, <strong>March</strong><br />

21 st at 6 PM. This one-time spring event is for all incoming kindergarten<br />

students to meet the teachers and see the classrooms while parents<br />

hear about Pattison’s curriculum for next year. Students must be 5<br />

years old by September 1, <strong>2019</strong> to enter kindergarten. We will provide<br />

Katy ISD Names<br />

New Superintendent<br />

Of Schools<br />

At the Katy ISD Work Study meeting held<br />

January 14 th , Board of Trustees voted<br />

7-0 to name Ken Gregorski as the new<br />

superintendent of schools. Gregorski<br />

is a veteran educator with 26 years of<br />

experience in public education. Having<br />

served as a teacher, associate principal,<br />

principal, assistant superintendent and<br />

deputy superintendent in school districts of different sizes and varying<br />

needs, he has demonstrated the ability to lead with determination,<br />

vision and a deep understanding of a community’s priorities. He is also<br />

the father of two secondary students currently enrolled in Katy ISD<br />

schools. “It is my mission to provide leadership and direction for Katy<br />

ISD to ensure our educational system is based upon the needs of our<br />

students, standards of excellence and equity and on community goals,”<br />

said new Superintendent of Schools Ken Gregorski. During his tenure as<br />

deputy superintendent, Gregorski played an integral role in laying the<br />

groundwork for the current model of student learning in Katy ISD through<br />

his supervision of the School Leadership and Support Department,<br />

Human Resources and the Athletics Department. As superintendent of<br />

schools, it is expected that Gregorski will maintain Katy ISD’s current<br />

direction, sustain its continuity of leadership and guide the District<br />

toward fulfilling the goals of its five-year strategic plan.<br />

Katy Virtual School<br />

Objective: The Katy ISD Virtual School’s primary objective is to expand<br />

the learning opportunities for our students by offering choice and<br />

flexibility for challenging online courses developed by Katy ISD.<br />

Vision: Online learning is an essential part of today’s learning culture<br />

that can provide our students with the opportunity to acquire required<br />

credit from anywhere and at any time. Online learning offers the unique<br />

experience of self-directed learning that will instill advanced learning<br />

skills as well as the Katy ISD Instructional Cornerstones in our students<br />

and better prepare them for life and college. In today’s world, this model<br />

of learning is increasingly in high demand and is a cost effective way<br />

to deliver instruction. It is a worthwhile investment in the future of our<br />

students and eventually can be self-sustained financially. Registration<br />

began February 1, <strong>2019</strong> for Summer <strong>2019</strong>, Fall <strong>2019</strong> & Spring 2020.<br />

Katy ISD Names<br />

New Junior High<br />

After Joe M. Adams<br />

Katy Independent School District Board of<br />

Trustees approved to name the District’s<br />

newest junior high school after Joe M.<br />

Adams. The new school is currently<br />

being built in the southwest quadrant<br />

of the District in the Cross Creek Ranch<br />

subdivision. Adams served on the Katy<br />

ISD Board of Trustees for 27 years in every<br />

Board position and continues to be actively<br />

involved in various school and community functions. Adams served as<br />

director on the Gulf Coast Area Association of School Boards and was also<br />

part of the Board of Directors for the Texas Association of School Boards<br />

(TASB). During his time on that Board, he earned the distinguished honor<br />

of being a graduate of Leadership TASB and was named a Master Trustee.<br />

Adams was a Keep Encouraging Youth toward Success (KEYS) mentor<br />

and volunteer at Taylor High School where he was named Mentor of the<br />

Year in 2013. He actively participated as a Promise to Read and Junior<br />

Achievement volunteer. Adams was also a member of various PTA/PTO<br />

organizations and a Taylor High School Band Booster over the years. He<br />

also participated in various bond and attendance boundary modification<br />

committees and was a founding director of the Katy ISD Education<br />

Foundation. Adams’ dedication to these initiatives showcased and<br />

reflected his character, vision and values. His commitment to Katy went<br />

beyond his involvement in the District as he has served as a member,<br />

deacon and adult Sunday school director at Kingsland Baptist Church, a<br />

Katy Christian Ministries volunteer and a member of the Katy A&M Club,<br />

Houston A&M Club, 12 th Man Association and IMPACT. Adams was also a<br />

former soccer coach for local leagues. During his 27-year tenure at the<br />

Katy ISD Board of Trustees, Adams experienced the district’s exponential<br />

growth and was instrumental in ensuring that Katy ISD’s reputation for<br />

educational excellence continued. He brought a wealth of knowledge to<br />

his position and along with his genuine passion for public schools, made<br />

decisions based on what was in the best interest of the District’s students<br />

and employees. His contributions impacted thousands of students and<br />

their families. In addition to his steadfast devotion to the students of<br />

Katy ISD, his professional career consisted of 30 years in the oil and gas<br />

industry working for several serviced/drilling companies in New Orleans,<br />

Dallas, London and Cairo, Egypt. He is also a small-business owner in<br />

Katy, TX.<br />

Adams holds a B.B.A in Marketing from Texas A&M University. He and his<br />

wife, Donna, have two children and seven grandchildren.<br />

Relay for Life of Katy/West Houston<br />

The Relay for Life of Katy/West Houston will be held on April 27 th from 5<br />

PM to 12 Midnight at Katy City Park, 5720 Franz Road. Come join in the<br />

fun and festivities while raising funds and awareness to fight cancer.<br />

Our theme this year is “May the Cure Be With You.” We will be honoring<br />

survivors and remembering those that have lost their battle to cancer.<br />

KATY AREA SAFETY FEST ORGANIZERS EXPECTING<br />

10,000 GUESTS FOR 4 TH ANNUAL EVENT<br />

The 4 th Annual Katy Area Safety Fest hosted by Harris County ESD 48 will<br />

be held on Saturday, April 13 th at Typhoon Texas off Katy-Ft. Bend Road.<br />

The family-friendly festival will begin at 10 AM and will end at 3 PM. The<br />

event is open to the public and admission is free. The Katy Area Safety<br />

Fest (KASF) will feature personnel, equipment and interactive activities<br />

from more than 20 emergency response agencies serving the Greater<br />

Katy community. The goal of KASF is to connect community members<br />

to the men and women who serve in these agencies as well as provide<br />

education and resources to encourage safety preparedness. Guests will<br />

see and participate in a variety of fun, educational, high-energy activities<br />

such as the Passport Challenge scavenger hunt, vehicle and equipment<br />

tours, live demonstrations of vehicle extrications and much more.<br />

Harris County ESD 47 and Westlake Volunteer Fire Department are cosponsoring<br />

the KASF Kids Zone, which will feature bounce houses, a corn<br />

field maze, obstacle course and ambulance load & go demonstration.<br />

Westlake Volunteer Fire Department is also leading this year’s Firehouse<br />

Challenge Cup, an open competition that encourages firefighter fitness<br />

and demonstrates the profession’s rigors to the public. Wearing full<br />

turnout gear and Scott 5.5 Air-Pak breathing apparatus, teams of 2<br />

will race head-to-head while simulating the physical demands of reallife<br />

firefighting. The Firehouse Challenge Cup is open to any members<br />

of a firehouse, including firefighters, EMTs and paramedics and admin<br />

personnel. There is no fee to enter and the 3 teams with the fastest times<br />

will win Firehouse Challenge Cup plaques.<br />

While most of the activities inside the festival will be free, rides in the fire<br />

truck tower buckets will cost a small fee. Food vendors will also be set up<br />

at KASF selling delicious treats and eats to festival guests. Members of<br />

School of Rock - Katy will provide live musical entertainment throughout<br />

the afternoon from the main stage.<br />

Sleep In Heavenly Peace<br />

Every night in the Houston area, children sleep on couches, bean bag<br />

chairs or the floor because they don’t have a bed, especially since<br />

Hurricane Harvey. A local chapter of Sleep In Heavenly Peace (SHP) has<br />

been started for Central-Western Houston, including Katy and Fulshear.<br />

SHP is a nationwide 501(c)3 charity that builds and delivers beds to<br />

needy children using donated materials and volunteer labor. Sponsoring<br />

organizations (companies, churches, fire departments, etc.) donate<br />

materials and provide 20-40+ volunteers to produce 20-40+ beds in<br />

half-day “Builds” and SHP delivers to needy families. The half day bed<br />

Builds are an excellent Teambuilding or Service Project for organizations<br />

wanting to make their community better. For organizations unable to<br />

provide 20-40+ volunteers, labor can be supplemented from Scouting<br />

troops or high school students. Material costs for 20-40+ beds amount to<br />

$3,500-$7,000. SHP receives requests for beds at SHPbed.org in English<br />

or Spanish. Organizations interested in sponsoring a half-day bed Build<br />

can contact 832-795-2759. SHP was founded by Luke Mickleson in Twin<br />

Falls ID in 2012 and has since grown to 130+ chapters nationwide. SHP<br />

has been reported on by Lester Holt on NBC Nightly News and by Mike<br />

Rowe on “Returning the Favor” on the Facebook Watch Network. In 2018,<br />

Luke Mickleson was named one of ten Heroes of the Year by CNN.<br />

National Charity League, Inc., Star<br />

Chapter’s Recognizes Senior Class<br />

For Achievement In <strong>2019</strong><br />

National Charity League, Inc., Star Chapter (NCL, Inc.), announced that<br />

they will honor the Senior Class of <strong>2019</strong> at the Star Chapter’s annual<br />

Senior Recognition Ceremony. This formal event will take place at the<br />

Sugar Land Marriott Town Square. The evening includes recognition<br />

of each of these 24 graduating seniors for their accomplishments and<br />

contributions to the community, as well as dinner and dancing with<br />

family and friends in attendance.<br />

Over the past six years, these young ladies, alongside their mothers, have<br />

contributed over 8,008 volunteer hours at 29 local charities throughout<br />

the community. The Class of <strong>2019</strong> volunteered at The Westview School,<br />

Neighborhood Kidz Club, Citizens for Animal Protection (CAP), Interfaith<br />

Ministries (Meals on Wheels), The Ballard House, Fulshear/Simonton<br />

Library, Katy Christian Ministries, Fort Bend Women’s Center, Oakmont<br />

Nursing Home, The Krause Center, The Monty Ballard YMCA and Willow<br />

River Farms, to name a few.<br />

In addition to serving their community through volunteering, these<br />

young ladies were also honing leadership skills and developing cultural<br />

awareness by planning and attending educational meetings, chapterwide<br />

events, socials, class retreats and cultural events that included the<br />

ballet, opera and theatre.<br />

About National Charity League, Inc., Star Chapter<br />

National Charity League, Inc., Star Chapter currently has 321 Members<br />

and provides hands-on volunteer service for thirty philanthropic<br />

organizations in the community. Members are women and their<br />

daughters, grades 7-12. Through this community service, NCL, Inc.<br />

develops socially responsible community leaders and strengthens the<br />

mother-daughter relationship. The traditional Six Year Core Program<br />

also includes leadership development and cultural experiences.<br />

Mother-daughter teams nationwide are responsible, dedicated, skilled<br />

volunteers actively engaged in local community work in 27 states across<br />

the country. To date, there are more than 258 Chapters, 87 of which are<br />

Prophetic Bible Study<br />

from the Torah<br />

Prophetic Bible Study from the Torah starting with Leviticus chapter 23,<br />

“the feasts of the Lord,” using authentic Hebrew Scrolls and the New<br />

Testament. The lessons are in English, Chinese and partially finished<br />

in the Russian language. Lessons are web based until a group study<br />

Epiphany Bingo<br />

Epiphany conducts their bingo games every Friday night except<br />

holidays. THERE IS NO SMOKING ALLOWED DURING ALL BINGO<br />

GAMES. They have security, lighted parking, big screen color monitor,<br />

computerized bingo equipment, snack bar and large cash prizes. Profits<br />

benefit charitable outreach programs. Epiphany Catholic Church, Church<br />

Community Center, 1530 Norwalk Dr. (between Fry and Mason Roads,<br />

south of I-10 behind Nottingham Subdivision) off Highland Knolls. Early<br />

bird games begin at 7:30 PM and regular games at 8 PM. For more info,<br />

Church Bingo<br />

At St. Bartholomew the Apostle Catholic Church in downtown Katy,<br />

“BINGO” is being played in our Parish Hall every Friday evening except<br />

Holidays. Doors open at 7 PM, games start at 7:15 PM with four Early Bird<br />

games. Regular games start at 7:30 PM. All profits will benefit community<br />

outreach and Religious Education programs. The Church is located in<br />

THAI BASIL<br />

CHICKEN BOWLS<br />

A 30-minute meal with less than<br />

400 calories per serving? YES AND<br />

YES!!! It’s so quick to whip up, budget-friendly,<br />

and SO GOOD!<br />

INGREDIENTS:<br />

1 cup jasmine rice<br />

1/2 cup chicken stock<br />

3 tablespoons reduced<br />

sodium soy sauce<br />

1 tablespoon fish sauce<br />

1 1/2 tablespoons light brown sugar<br />

1 1/2 tablespoons unseasoned<br />

rice vinegar<br />

2 tablespoons vegetable oil<br />

3 cloves garlic, minced<br />

2 shallots, thinly sliced<br />

1 red Thai chili pepper, thinly sliced<br />

1 1/4 pounds ground chicken breast<br />

1 1/2 cups packed fresh basil leaves<br />

DIRECTIONS:<br />

Cook rice according to package<br />

instructions; set aside.<br />

In a small bowl, whisk together<br />

chicken stock, soy sauce, fish sauce,<br />

brown sugar and vinegar; set aside.<br />

Heat vegetable oil in a large skillet<br />

over medium heat. Add garlic, shallots<br />

and chili pepper. Cook, stirring<br />

frequently, until fragrant, about 1-2<br />

minutes.<br />

Add ground chicken and cook until<br />

browned, about 3-5 minutes, making<br />

sure to crumble the chicken as it<br />

cooks; drain excess fat.<br />

Stir in stock mixture and cook,<br />

stirring constantly, until the sauce<br />

has thickened, about 2-3 minutes.<br />

Stir in basil until just wilted, about<br />

30 seconds.<br />

Divide rice into bowls.<br />

Top with chicken mixture.*<br />

Serve immediately.<br />

Notes:<br />

*Refrigerate for up to 3-4 days. The<br />

bowls can be reheated in the microwave<br />

in 30-second intervals until<br />

HEALTHIER SLOPPY JOES<br />

You could make this on National Sloppy Joe Day <strong>March</strong> 18 th !<br />

INGREDIENTS:<br />

1 pound lean ground beef<br />

1/4 cup chopped onion<br />

1/4 cup chopped green bell pepper<br />

2 carrots, finely chopped<br />

2 cloves garlic, minced<br />

1 teaspoon prepared yellow mustard<br />

3/4 cup ketchup<br />

1 tablespoon brown sugar<br />

salt and ground black pepper to taste<br />

DIRECTIONS:<br />

Heat skillet over medium-high heat; cook and stir beef, onion, green bell pepper,<br />

carrots and garlic until beef is browned, about 10 minutes. Drain off liquids.<br />

Stir in mustard, ketchup and brown sugar and mix thoroughly. Reduce heat<br />

to low and simmer until sauce has thickened, about 30 minutes. Season with<br />

1 (8 ounce) package cream cheese, softened<br />

1 (15 ounce) can chili without beans<br />

1 (10 ounce) can diced tomatoes with green chile peppers, drained<br />

DIRECTIONS:<br />

In a medium, microwave safe bowl, mix cream cheese, chili without<br />

beans and diced tomatoes with green chile peppers.<br />

Microwave cream cheese mixture on high 1 minute. Remove from<br />

microwave, stir and repeat until the mixture is hot and thoroughly<br />

VEGETABLES<br />

• Plant vegetables such as tomatoes, sweet corn and snap beans<br />

and pepper, as well as cucumbers, lima or butter beans, canta<br />

loupe, okra (if the soil has warmed sufficiently - 70 degrees F.<br />

or higher), southern peas, pumpkin, squash, peanuts and<br />

watermelon.<br />

LAWN<br />

• Re-sod or replant as needed with turfgrasses adapted to this<br />

part of Texas and suited to the planting location (shade or sun).<br />

• When resodding semi-shaded areas with St. Augustine,<br />

use ONLY the variety Floratam for best pest resistance.<br />

TREES AND SHRUBS<br />

• Plant container-grown trees and shrubs as soon as possible.<br />

In shady areas, where grass is difficult to grow, consider planting<br />

a dependable groundcover such as English ivy, Asian jasmine,<br />

vinca or one of the prostrate junipers.<br />

• Prune spring flowering and evergreen shrubs during early <strong>March</strong>.<br />

However, be sure to prune spring flowering shrubs after they<br />

have bloomed.<br />

• Fertilize with a pre-plant application of a slow-release fertilizer<br />

analysis such as 19 - 5 - 9 at the rate of 3 pounds per 100 square<br />

feet of garden planting area. Early <strong>March</strong> is the ideal time to<br />

fertilize landscape plants because you give them food just<br />

before the spring growing season starts.<br />
