Desperate Dad 

The magic number... 

The last month or so has been somewhat of a daze. 

I haven’t ever gotten around to watching ‘The Walking Dead’ yet, but I’m holding 

daily auditions for a starring role in a fresh season. 

The zombie apocalypse has returned with a vengeance and this sequel packs one 

heck of a punch. 

But let’s rewind a few weeks first, back to the start of this terrifyingly beautiful new 

adventure - matchsticks at the ready? 

After cooking for 38 weeks our surprise pink package was 

finally ready to make her grand entrance, dutifully booked in 

for a planned C-section first thing on a Monday morning. 

The previous weekend had seen mummy in hospital for her 

pre-op steroid injections thanks to an infuriating and rather 

annoying bout of gestational diabetes. 

Fully prepped and ready for launch however, we were 

checked into the labour ward, bushy-eyed and bleary-tailed, 

first on the list in theatre and raring to go. 

The care was second to none as we were introduced to 

midwife, doctor and anaesthetist and talked expertly through 

the whole shebang. I even got a cup of tea to calm my 

nerves. 

As zero hour approached we were ushered into theatre for 

the main feature, professionals as far as the eye could see, a 

slick operation it certainly was.

Easter 2019

With screens suitably positioned and spinal block 

administered, it wasn’t long before I was cradling 

my third born. 

The miraculous and much anticipated Ruby Ana 

was here at last – the wait was over and she was 

just as perfect as her brothers of course. 

After a few hours in recovery, and another cheeky 

cup of tea, we were transferred down to the 

postnatal ward just in time for the night shifters to 

clock on, another dream team to soon become in 

awe of. 

But not before a visit from the original dynamic 

duo – who’d been champing at the bit to get their 

hands on their baby sister for months. 

In a similarly heart-shattering moment to when 

my eldest met his younger brother for the very 

first time, the world seemed to stand still for a few 

seconds as the proud ruffians cradled their new 

precious cargo with bewildered expressions. 

There are some moments that will last a lifetime 

and that was most definitely another. 

With the brothers in arms off back to the 

grandparents’ it was time to go officially 

postnatal. 

It had been just short of eight years since we’d 

been on this ward and my how times have 

changed. 

I was allowed to bed down 

next to my girlies for the night 

so it was off to the car to grab 

the camp bed and set up a 

makeshift ward den – Bear 

Grylls would have been proud. 

A night on the wards is certainly 

no picnic, however top notch 

the care, so I was certainly glad 

of my little rectangle of foam, 

which looked like sheer luxury 

next to the NHS issue hospital 

visitor chair in the corner. 

The next couple of days saw us monitored 

marvellously – hearing screening, paediatrician 

check and breastfeeding advice all duly 

despatched. 

All of a sudden it was discharge time, after a 

thorough debrief from the midwife in charge, a 

trusty checklist worked through to ensure we 

had all the info required. 

Our NHS care had been all but exemplary, no 

complaints to the heroes in blue who put the 

interests of their precious little patients before 

everything else, 100% of the time. A thank you 

just never seems enough. 

Ruby was coming home and 

the zombies would soon be on 

the prowl – our own nightshift 

duties about to kick in big time. 

Our family of four, well eight if 

you count the cat, two dogs 

and the guinea pig, had now 

become five (nine), and as 

Rubes lay slumbering in her 

hand-me-down carrycot, reality 

finally hit home. 

However desperate this dad 

may get from time to time, he 

lucked out beyond belief for sure. 

Yes the nights are long, the sick is smelly and 

the nappies are nefarious. 

But a family to treasure is a gift beyond measure 

and if two is better than one, three is without 

question the most magical number of them all.

Family Fun 

Parenting trends for 2019... 

According to Cosmopolitan magazine there will be five big fashion trends for spring 

2019: Neon; bucket hats; tie dye (say what?); colour-blocking and lastly, cycling 

shorts (I remember rocking my inner Neneh Cherry wearing a pair of Lycra shorts 

with a shirt over the top and Hi Tops on my feet, circa 1988). Thank goodness social 

media wasn’t around then, at least there’s no evidence of my sartorial disasters. 

But just like fashion has its trends, so does 

parenting. Who knew? (Psychologists, teachers, 

Pinterest, parenting magazines - it turns out 

they knew). 

I’ve done my research (while wearing my 

tie-dyed tee, knotted at the waist) and here 

are the top five parenting trends for 2019... 

1. Accepting we will never sleep 

(the same way) again 

I’ve seen a flurry of articles in the national press 

recently (The Guardian, The Metro), claiming sleep 

deprivation is much, much worse than parents let on 

to each other. 

Research published in the journal Sleep has revealed 

that while it is universally accepted the first few 

months with a newborn wreak havoc with sleep 

patterns, the reality is, most parents don’t get enough 

sleep for the first six years of their child’s life. The 

study showed that while children generally stop crying 

during the night as they age, they may wake up, 

be sick or have nightmares. In addition, the stress 

and worries that go with parenthood can also affect 

parents’ sleep. 

Add more children to the mix and I’m guessing you’re 

looking at never sleeping properly until the last of your 

progeny have moved out, got their own place, a dog, 

a steady job and a dependable, loving partner (if they 

want one). 

The good news is, now we are all aware of this 

research we can unite in our brain-addled state of 

sleep deprivation, knowing it is much more common 

NOT to get a full eight hours every night.

2. Taking a girls’ trip is good for you 

Science agrees, taking a weekend trip with your girlfriends 

and leaving the children at home (with someone to look after 

them, not home alone with YouTube and a couple of Pot 

Noodles) is good for you. 

Here’s the science bit - a 2016 study published in the 

journal Behaviour explained spending time with friends 

boosts the production of oxytocin, which is often called 

the “love” or “cuddle” hormone. 

In our increasingly digital world, where mums often interact 

via messages or social media, further research shows that 

a lack of social connections in the real world has the same 

health risk as smoking up to 15 cigarettes a day. So, it 

seems that hanging out with friends can actually help 

you to live longer and boosts mental wellness. 

The chances of escaping family commitments for a 

weekend often prove a logistical nightmare but organising 

a night out, an afternoon enjoying a cream tea or a few 

hours at a local spa seem doable, don’t they? 

And if anyone asks - SCIENCE says it good for you, so 

ditch the guilt and plan an escape with your mum mates, 

whether that’s for a couple of hours or a few days. 

4. Toy-sharing subscriptions 

Tired of spending a fortune on toys only for them 

to be discarded under beds and at the back of 

cupboards within a week a two? A toy sharing 

subscription could be the answer. Relatively new 

in the UK - a company called Toy Box Club can 

deliver a box of carefully curated, gender-neutral 

and age-appropriate toys and books straight to 

your door, every month for as long as you choose. 

The company blurb says it is a “one-of-a-kind toy 

subscription service for pre-school children” and it 

sounds like the perfect antidote to toy fatigue - but 

it’s not cheap at £35 a month. 

Here in Lincoln, we are fortunate to have Lincoln

for youngsters to play with. In

3. Scavenger birthday parties 

Scavenger Hunt-style parties are all the rage, 

thanks, in part to the social media platform 

- Pinterest. 

The social media giant has just released its 

annual ‘Top 100 trends’ report, to reveal the 

most popular searches that have increased in 

the past year across 10 key categories, 

including parenting - and Scavenger Hunt 

parties are on the list. 

Easy to organise and masses of fun, a scavenger 

hunt starts with a list of things to find (or do) 

within a time limit. It can be played in teams, or 

even as a solo game against the clock. 

All you need to host a Scavenger Hunt party 

is a printed or written list of things to find - so 

an example might be a bottle top, a yellow 

flower, a flat rock and so on, something to carry 

the treasure home in, a time-keeper, a few 

adult helpers if younger children are doing the 

searching. 

Oh, and don’t forget a prize for the first team 

home. 

I predict this trend will be the most popular of 

the five.

5. Flip phones 

Number five, flip phones for children. 

Want your child to be able to stay in 

touch but not a massive fan of the 

idea of them having free access to the 

Pandora’s Box that is the internet? 

Make sure their first phone is a flip 

phone, like the Nokia 2720 Fold (just 

£69.99 on Amazon, versus the Apple 

iPhone 7, £409). 

Flip phones - like Smartphones but 

with none of the ‘smart’ bits. 

One for the road... 

I know I said there were five definitive trends 

for 2019 but here’s another I stumbled across: 

Audiobooks. Searches for Audiobooks on 

Pinterest went up by 126 per cent last yearsuggesting 

parents are either doing one of 

two things. Trying to avoid their kids having 

too much screen time by encouraging them to 

listen to audiobooks via apps like Audible. 

Or leaving apps like Audible 

to read their children a 

goodnight story...

Fashion-conscious youngsters can give 

mums and dads some real challenges when 

it comes to what they really want to wear

from Lincoln Fashion Week (LFW).

Christians Against Poverty (CAP) 

Let’s start with a riddle: what is it that 

everyone has a little of, many have a 

lot and for some it is unmanageable? 

It is debt! 

An overdraft, car loan or a mortgage are 

probably the most common forms of 

debt but for the vast majority of people 

they are manageable. But it may be when 

circumstances change and the repayments 

become unmanageable that the letters, 

phone calls, and even visits start coming. 

Debt can happen to anyone for a variety of 

reasons - it may be job loss, relationship 

breakdown, a death in the family or a whole 

range of other factors. Unmanageable debt 

on top of any of these is devastating. It is a 

trap from which it feels like there is no 

escape. It feels like an impossible situation. 

It leads to feelings of isolation, hopelessness, 

depression and many people in this situation 

then start to contemplate suicide. 

CAP always offers hope. 

Christians Against Poverty (CAP) works with 

people to help them get free of debt. The 

service is completely free to clients. Incredibly, 

many of CAP’s clients say that it has taken 

them months to pluck up the courage to call 

and start dealing with their debt. If you need

help, do not delay, call CAP on their freephone 

number 0800 328 0006. 

There is no judgment. When you call, you will 

be asked a few questions and then if there is a 

debt centre in your local area you will be 

referred to a local Debt Coach who will contact 

you to arrange a home visit. The Debt Coach 

will note all your financial information which is 

sent to CAP’s Head Office in Bradford. The 

team in Bradford will then do two things: 

First, they will work out a budget which will show 

you how much your income and expenditure is 

and prepare advice for you about the potential 

routes out of debt. The Debt Coach will then 

return with the advice and discuss the potential 

solutions with you. Second, they will then either 

negotiate with all of your creditors to agree a 

realistic repayment plan or support you with any 

alternative solutions to help you get free of debt. 

Your Debt Coach will also give you some 

Freepost pre-paid envelopes so that you can 

send any further letters or statements straight 

up to CAP Head Office. 

The letters, phone calls and visits from your 

creditors will begin to ease and eventually 

stop. When you work with CAP, either by a 

debt management plan or by an insolvency 

option you will be debt free very soon, at the 

most five years.

Lincoln Minster School wins top 

platinum award for Lincolnshire 

Lincoln Minster School has been awarded a 

prestigious platinum award by the Woodland 

Trust for getting involved in green activities 

including tree planting, visiting a local 

woodland, reducing carbon emissions and 

being a woodland ambassador. 

The Green Tree Schools initiative, offers the 

opportunity to bring the great outdoors, wildlife and 

green issues into the classroom. 

The Pre-Preparatory school won the awards for 

participating in green activities, both in and out 

of the classroom. Pupils made bug hotels and a 

hedgehog house in their designated Outdoor Learning 

area, visited local Chambers Wood, worked on a Wild 

Trails Project identifying animals and grouping them 

together, and joined in various other Woodland Trust 

activities. 

Becky Skelton, Outdoor Learning Lead at the 

school, said: “We have thoroughly enjoyed all of the 

activities. The children have been really motivated 

and enthusiastic, especially knowing the end goal 

was to achieve the platinum award. They particularly 

enjoyed being able to photograph our school grounds

Newton Academy 

Newton Academy - the science club for girls 

A new academy aimed at encouraging young girls to pursue careers 

in science and technology has been launched in Lincoln. 

The Newton Academy – the Science Club for 

girls – was set up by the University of Lincoln in 

2014 to take girls on a 3-year scientific voyage 

of discovery. Since then over eighty Year 6 girls 

from across Lincolnshire have enrolled and have 

attended our Saturday Club events. 

The Saturday Club is a series of Saturday morning 

science and technology-themed workshops 

consisting of hands-on activities and 

projects, designed to work alongside the 

National Curriculum, that will inspire 

and enthuse the next generation of 

female scientists and engineers. 

The Programme has included the 

Robotics Big Launch; Spud Science; 

The Chemistry Christmas Cracker; The 

Engineering EGGstravaganza!; Pharmacy 

Phacts; and a visit to the Big Bang Fair at the 

NEC, Birmingham. 

The Academy has been created as part of the 

University of Lincoln’s Athena SWAN project, 

acknowledging the Institution’s commitment to 

improving the representation of women in science, 

engineering, technology and mathematics (STEM). 

To improve the representation of female 

academics in some STEM areas (particularly in 

physics, mathematics, engineering and computer 

science) we have to attract more girls to these 

subjects at School level (e.g. currently only 20% of 

Physics A-level students are female). We believe 

that early engagement is the key to increasing the 

popularity of STEM subjects among our girls. The 

Academy, therefore, aims to inspire 10–14 year 

olds in STEM subjects – subjects that research 

shows they are less likely to pursue – opening 

their eyes to the possibilities of what they 

can achieve, and encouraging them 

to consider post-16 study in STEM 

subjects... and ultimately, of course, to 

pursue science and technology careers. 

But most of all, the Newton Academy 

is all about showing young girls that 

science can be fun! There are currently 

120 girls taking part. 

Girls enrol in the Academy at the end of Year 6 

and stay until the end of Year 9. During their three 

years, ‘Newton Girls’ will take part in projects 

that develop their confidence, their enthusiasm 

for STEM, and essential problem-solving and 

critical thinking skills. They will develop leadership 

skills and the confidence to challenge any 

preconceptions that may prevent them from 

pursuing and being successful in any STEM field.

exciting Destination Space education 

programme. The programme aims to 

inspire schoolchildren and families with 

the science and engineering of future 

space missions; including UK spaceports, 

space launchers, the ExoMars mission 

and innovative uses for satellite data.

Woolsthorpe Manor to deliver a new 

UK space education programme... 

The UK Association for Science and Discovery 

Centres, and the UK Space Agency, joined 

forces to select science centres and museums 

across the UK to bring the latest space 

science to families and schoolchildren across 

the nation. We are delighted to be selected. 

This inspiring programme will also cover 

celebrations this summer of the 50th 

anniversary of the first Moon landing 

and look at how the Moon might feature in 

future space exploration. 

Woolsthorpe Manor will deliver these specially 

created space activities to children and adults 

from this summer until March 2021.

us to teach visitors all about current space 

science in an exciting and engaging way, and 

show how the work of Isaac Newton all those 

centuries ago, is still clearly relevant today.”

WOOLSTHORPE MANOR 

The world changed at Woolsthorpe Manor, the 

family home and birthplace of Sir Isaac Newton. 

Newton (1642-1727) is celebrated as one of the 

greatest scientists of all time. It is here that a 

young Newton took his first steps in a lifetime 

of observation, experimentation and discovery. 

In 1665, the plague sent Isaac Newton back 

from Cambridge University here to his family 

home. For 18 months Newton worked in 

solitude, experimenting obsessively and laying 

foundations for a scientific revolution which 

changed the world. It was a period he named 

as his ‘Year of Wonders’. 

Since Newton’s death, Woolsthorpe Manor has 

been a place of scientific pilgrimage, where 

people from around the world make their own 

connections to Newton. In 1943 the National 

Trust took over the site after the purchase by 

The Royal Society. 

Our site is small but more than compensates 

for its size in its worldwide significance. At 

Woolsthorpe you’ll find the Manor, hands-on 

science centre, legendary apple tree, orchard, 

shop and café.

Banish boredom with Lincoln Performing Arts Centre 

Lincoln Performing Arts Centre has a well-established reputation for bringing big 

names and top quality family theatre entertainment to the region and this season is 

no exception. From theatrical adaptations of bestselling children’s books to classical 

ballets there is a whole host of exciting and extraordinary events which will be 

enjoyed by families of all ages. 

This Easter holiday sees the brand new 

Luminarium: Qodlumin come to Lincoln. If you 

were lucky enough to experience last year’s 

Luminarium: Miracoco then you will already know 

what a big deal this is. If you’re thinking, “Lumiwhat?” 

You’re in for a treat! A monument to the 

beauty of light and colour, Qodlumin is a feast for 

the senses. You will be transported to another 

world of cavernous domes, tunnels and pods, 

covering half the size of a football pitch and 

creating a sense of wonder and enchantment. 

Created by Architects of Air, the luminaria have 

mesmerized audiences across the globe from 

Guggenheim in Spain to the Sydney Opera 

House in Australia. Visitors are invited to wander, 

to lie down, to sit down and enjoy the ambience 

and the space. 

Luminarium: Qodlumin will be located at the 

Isaac Newton Building grass area on the 

University of Lincoln campus. It will be visible 

from the Tritton Road roundabout. The nearest 

parking is St Marks Shopping Centre. Due to 

the huge popularity of last year, the event will 

run for an extra day and be open for longer, 

to give even more people the opportunity to 

attend. Wednesday 10th to Sunday 14th April. 

Tickets can be booked in advance or on the 

door. Queues on the door are to be expected. If 

anyone in your party has additional needs then 

advanced booking is recommended (subject to 

availability) to reduce your queuing time. 

The following week, on Thursday 18th April, 

Hurly Burly Co are bringing Over the Moon, 

a first opera for little people (yes, really!). The 

performance weaves together gentle classical 

music with familiar nursery rhymes and games 

in an interactive musical adventure for babies. 

Entertain your little one with musical tickling, 

stretching, chomping and stamping in a 40 

minute experience with time to get comfy 

beforehand and play together at the end. 

If your children love a good belly-laugh then 

Aliens Love Underpants is for you. It’s a zany 

and hilarious tale based on the bestselling 

children’s book of the same name by Claire 

Freedman and Ben Cort. Being brought to life 

on stage for the very first time, this performance 

includes stunning effects, madcap action, 

original music and lots of aliens of course! 

Aliens Love Underpants comes to Lincoln 

Performing Arts Centre on Friday 31 May 1pm 

and 3.30pm. 

For the budding dancers in your family, don’t 

miss the award-winning Ballet Cymru with their 

production of Romeo and Juliet. Exquisite 

costumes and extraordinary video projections

where two young lovers are caught in an age

Feastival returns to the Coach House on Easter 

Sunday, 21 April, 10am - 4pm. This celebration

tastings and new line introductions. The Farm 

Shop team will be on hand to talk about their

Back for its fifth year, Countryside Lincs 

returns to the Lincolnshire Showground on 

Sunday 14th April with an interactive family 

day out all about food, farming and the 

countryside.

animals, learning how to make jams, willow weaving

racing and an impressive falconry display! New for

Newark Showground 

Experience a great traditional family day out this Spring 

at Nottinghamshire County Show... 

New for this year are three HOYS Qualifiers, including British Ridden Heavy Horse of 

the Year and, following on from the success of the dedicated ‘Heavies Ring’ in 2018, 

our Heavy Horse ‘Village’ will have even more to entertain, including ‘working horse’ 

demonstrations on both days. These working horses will also be taking part in the 

Heritage Harvesting parade in the Main Ring on both days. 

This first show of the season showcases the best 

cattle, sheep, goats and pigs alongside superb 

equine events, including majestic ‘heavies’ and 

first-class showjumping. Classes and competitions 

run all day both days. There are still sponsorship 

opportunities for companies and organisations 

wishing to promote themselves whilst supporting 

their local agricultural show, 

In addition to the usual farmyard favourites, will 

be gun dogs, hunting hounds, giant tortoises, and 

birds of prey. Children will particularly enjoy the 

antics of the animals in the Countryside Area and 

alongside old favourites like the Sheep Show will 

be fascinating demonstrations of heritage crafts 

such as coracle making and fashioning traditional 

hats from straw. A welcome sight will be the return 

of last year’s very popular 8ft stilted animatronic 

character, Froojamaflip, and his hilarious sidekick, 

Fred the Gardener. 

Featuring as the main attraction is Dzhigitovka, an 

exciting Cossack trick-riding spectacular, straight 

from Russia, with fabulously costumed riders and 

dare-devil horses, performing to crowd-pleasing 

music and bringing a flavour of the legendary 

warriors on horseback, masters of sword, archery 

and outstanding gymnastic skills. 

Back by popular demand will be the music marquee 

which was well supported last year with a full 

programme on both days. Visitors can look forward 

to the Farriery Competition where they can watch 

experienced and apprentice-level farriers getting 

very hot under the collar as they demonstrate their 

horse-shoe making skills to compete for prizes. 

The marquee will be located near the Heavy Horse 

Village. 

Visit the recently rejuvenated Food Experience area 

to sample and buy tasty locally-made produce and 

the NFU Play Barn which always has great activities 

for little hands to try. Then step next door to 

admire the gorgeous floral art displays in the Lady 

Eastwood Centre. With ample opportunity to shop 

for crafts, gifts and clothing, many items on sale will 

not be available in the high street stores. 

The Show benefits from plenty of food outlets 

where tasty snacks, two-courses lunches, hot 

and cold drinks, including beers and wine, can be

Inflatable Colour Dash 2019... 

St Barnabas Lincolnshire Hospice’s popular 

Inflatable Colour Dash will be returning to the 

Lincolnshire Showground on Saturday 11th 

May 2019. 

Last year thousands of people were showered in 

colourful powder paint and together raised more than 

£130,000 for local hospice care! 

The Inflatable Colour Dash is the perfect opportunity for 

families and friends to come together to have a fantastic 

day out while supporting St Barnabas. The bright and 

vibrant 5k fun run will see you splattered from head to 

toe in powder paint with exciting inflatable obstacles 

along the way. 

To take part, participants must be aged five years old 

and over, and anyone aged under 16 must be joined by 

a paying adult. 

Events like this are crucial in helping to raise the funds 

we need to continue caring for and supporting over 

10,500 people across Lincolnshire who are living with a 

life-limiting or terminal illness. 

St Barnabas works tirelessly to ensure patients and 

their families make the most of every single second they 

share, regardless of how much time remains. The money 

raised from events such as the Inflatable Colour Dash 

enables this work to continue.

Scaman’s Eggs 

Eggciting Easter fun! 

HOW TO PREPARE YOUR EGGS FOR DECORATING 

My children love getting the crafts out of the cupboard and decorating eggs. After a fun-filled 

afternoon of painting and sticking, our golden-brown Scaman’s Eggs are transformed into bright 

and colourful centre pieces and table decorations for our Easter get-togethers with friends 

and family. On grey and rainy days of the school holidays, it’s the perfect way to keep children 

entertained and creative. 

However, decorating eggs can get messy if you don’t prepare your eggs. Just one small knock 

and you’ll have egg raw egg whites and fragments of shell to mop up! To avoid unwanted cracks 

and spillages, there are two ways to prepare your eggs for decorating... 

1. Boil your eggs. Simply hard-boil 

your eggs for at least seven minutes 

to make sure your whites and yolks 

are firm. Leave them to cool before 

decorating. 

2. ‘Blow out’. This can be a little tricky, 

but it’s simple to do. Carefully use a pin to 

poke the top and bottom of the egg shell, 

making the hole at the base wide enough 

to fit a cocktail stick. Use a cocktail stick to 

poke the yolk a couple of times, we want it 

to easily pass through the hole. Place the 

egg over a bowl and carefully blow through 

the top until the egg whites and yolk start to 

push through the base. If you don’t want to 

get too close to the raw eggs, you can also 

use a Baby Aspirator (brand new, of course), 

which will pump air into the shell. Give the 

shells a good wash with warm soapy water 

and leave them to dry. 

Then, get cracking with your 

decorations! (Not literally, of course…)

SALMON FISHCAKES 

This recipe is a great way to get the kids cooking 

with you for your Good Friday fish supper. From 

mashing the potatoes to forming the cakes and 

then dipping them into the egg and breadcrumb 

coatings - making fishcakes is a messy job, and 

the kids love to do it! 

One of the greatest things about this recipe is 

that you can source all the ingredients from 

Lincolnshire. Flaky salmon from the Port of 

Grimsby, Lincolnshire potatoes, locally grown 

onions and parsley, and freshly baked bread and 

flour from the county’s mills – it’s educational, fun, and tasty. 

TO MAKE FOUR FISHCAKES, 

YOU WILL NEED: 

First, peel and chop your potatoes into large chunks, then 

place them into a pan of salted water. Bring to the boil and 

leave them to cook through for around 10 to 15 minutes. 

Drain the potatoes and leave them to steam-dry. 

In the meantime, grill your salmon fillets until they are 

cooked through, usually around six to eight minutes 

depending on the thickness of the fish. Your fillets should 

easily flake once they are ready. 

Finely chop an onion into small pieces before roughly 

chopping your parsley. Crack one of your eggs into a 

bowl and give it a good mix. 

Mash the potatoes in a large bowl until they’re light and 

fluffy, then add the salmon flakes, onion, and parsley. 

Mix well with a wooden spoon. Stir in the egg as this will 

help the fishcake mixture to stick together, and season 

with salt and pepper. 

Form four large fishcakes and pop them in the fridge for 

around 20 to 30 minutes; this will help them to keep their 

shape. 

Prepare your coatings. Place some flour onto a plate, 

mix the white and yolk of your second egg into another 

bowl, and place your breadcrumbs onto a second plate. 

Take the first fishcake, roll it in the flour, dip it into the 

egg, and then coat in breadcrumbs. Repeat with the 

remaining fishcakes, and then carefully place them on 

to a heated, oiled griddle pan ready for frying. 

Fry for around three to five minutes on each side, 

until the coating is golden brown and crispy, and the 

fishcakes are hot throughout. 

• Two salmon fillets, 

descaled and deboned 

• Lincolnshire potatoes 

• Two eggs 

• One onion 

• Two slices of bread 

blitzed into breadcrumbs 

• Flour 

• A good handful of parsley 

Serve with your favourite 

vegetables or a side salad.

A carpet of native bluebells is a great indicator of ancient 

woodland, which is one of our most precious habitats, covering
