Welcome to the Symmons & Allen Vintners Wine Portfolio
It feels like we’ve been working on this new wine portfolio for a long
time! I’m proud to be able to launch it to you and hope you enjoy what
you see...
We’ve updated tasting notes across our full, exclusive range of 160 wines
thanks to the support of Sam Caporn MW, and her wealth of knowledge.
Over three sittings she tasted the wines and evaluated a new short,
medium and long tasting note (what a job!). We’re using the medium
tasting note within the portfolio and on our website, but if your business
has need of the other formats, we have full details on file to assist.
We now have a key so you can distinguish between screw cap and cork
wines - I know many of you prefer screw cap for your wines by the glass,
and some customers feel having cork wines within their wine list keeps
the theatre alive in the restaurant.

and we have provided full vegetarian and vegan information throughout
should you wish to include these details within your wine menu or drinks
list.
This has been a turbulent political year, with the campaign around Brexit
resulting in a leave vote for the UK. This may seem like old news, but the
impact of that decision has immediate and long-term implications for our
industry.
Rest assured, we are negotiating harder than ever this year to get around
the currency constraints.
So, is the wine glass half empty or half full?
One thing we can be sure of is that our currency has dropped
significantly against the Euro and the Dollar, and this will have an effect
on pricing across the whole drinks industry. Hopefully we’ll see the
currency improve - I’m sure everyone has their own opinions around that.
We do buy significant volumes of wine from Europe and trading areas
based on the dollar include Chile and Argentina, as well as the USA of
course.

If you’ve had success with our Pink Orchid White Zinfandel, we now have
a full orchid range with White Orchid Sauvignon Blanc and Red Orchid
Merlot, if you’d like to give them a go.
Our English wine offering has been extended with the addition of Lyme
Bay Winery from Devon. It’s very different in style to our current range
from Chapel Down; both fantastic qualities though, if you haven’t had a
chance to try any English wine yet, please do - it’s delicious!
We have paid close attention to the smaller, lesser known grapes from
around the world when selecting the additions to this portfolio. You can
all sell Sauvignon Blanc, Pinot Grigio and Merlot, but what about those
other truly wonderful grapes? Did you know there are over 10,000 grape
varieties recorded worldwide?
Customers are travelling more than ever, and know more about wine than
ever before, so why not add a different grape to your wine list this time
around and encourage people to try new things. We can offer some great
examples at a tasting and breathe new life into your list.

Nieto Senetiner has grown to become one of the leading stars of Mendoza. The vineyards and winery were developed in
1969 and continue to be extended and updated. Nieto have vineyards in virtually all of the best sub-districts of Mendoza
from which they produce typical and classic wines, characterised by the uniquely appealing balance of power and
finesse that defines the best wines of Mendoza. The top wines come from very old vineyards in the famed sub-district
of Agrelo and are fully deserving of their iconic status.
Nieto Senetiner Malbec V Vg
The wine is vibrant with an alluring blend of fruit along with clove, pepper and cinnamon spice, finished off with well-structured integrated
tannins.
Terrazas Malbec, Mendoza
Black cherries, prunes and raisins are combined with vanilla, caramel and toasted notes to define a very complex nose.
Hints of violets stand out, typical of Malbec. Extremely fruity.

Magpie Estate ‘Wishbone’ Shiraz Grenache
Warm plum and raspberry fruit on the nose with hints of dusty earth, spice and violets. Medium to full bodied with juicy plum and raspberry

Emiliana is one of the world’s most important producers of organic and biodynamic wines and the largest in South
America. They have a total of 997 hectares under vine in the valleys of Casablanca, Maipo, Colchagua, and Cachapoal
of which 923ha are certified organic and the remaining 77 in conversion. Adobe’s spectacular biodynamic vineyard and
winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world.
These innovative wines are made with great care and attention and the results are inspiring.

The Tinamou Story
The Tinamou is a characteristic bird of
Chile, considered to be one of the most
ancient creatures alive.
Rarely seen but often heard, the
Tinamou is a shy and secretive bird
active during the day, retiring to
roost at night.
This wine is a homage to this
mysterious living dinosaur, who is part
of our everyday lives, although we’ve never seen him.
The Tinamou range for the classic with a twist. 2
blends, 1 white + 1 red, slightly rebellious, and 2
single varietals with a strong personality. The
perfect complement to the current Peregrino &
Volandas lines.
The Irene Morales Story
Irene Morales was a simple seamstress
who became a brave symbol in the
history of Chile and represents all
women who fought and helped in the
battles of Pisagua, Dolores and Tacna.
She was also the first woman to be
recognised sergeant and to wear a
uniform.

Lyme Bay are an award-winning creative winery based in Devon, supported by a growing and diverse team of wine
lovers, growers and makers. Treading the normal path is not for them, they prefer to trust their inventive instincts and
sense of mischief. As they have evolved their philosophy has remained the same, to push the boundaries and only aim
for the best possible quality.

Lyme Bay Shoreline
Dry and refreshing with complex layers. This beautiful wine has subtle notes of lemon, nettle, rose petal and grapefruit.
Lyme Bay Bacchus
A superb alternative to Sauvignon Blanc; restrained, elegant and grassy, crisp citrus and elderflower with a long finish.
Lyme Bay Bacchus Fumé
A complex wine, fermented with wild yeast and transferred to French oak barriques for six months. The result gives hints of grapefruit, spicy
oak and lemon, with an exceptionally long finish.

England
The South-East coast of England is synonymous with the white cliffs of Dover. It is this iconic chalk soil (the same as
that of Champagne, just 90 miles to the south), coupled with England’s cool climate that enables the production of
truly world-class sparkling wines, as well as aromatic white wines and elegant light red wines from grapes such as
Pinot Noir, Chardonnay, Pinot Blanc and Bacchus.
Chapel Down Chardonnay
Made in an unoaked style to show the purity of the fruit, the nose is tight and focussed but has apple, pear and citrus aromas along with a
classic flintiness. The palate is textural, with good weight and concentration, clean juicy fruit, steely acidity and a long mineral finish.
Chapel Down Flint Dry
Crisp aromas of green apple, freshly cut grass, citrus and white peach supported by a creamy mouthfeel. On the palate there are flavours of
elderflower and nectarine with a smooth texture and fresh finish.
Chapel Down Bacchus
Tropical fruit characters on the palate. Excellent weight from ripe fruit and crisp acidity.
Chapel Down Bacchus Reserve
Made using only the ripest fruit from the best vineyards giving a wine of great intensity and richness. The growing season of 2014 started
early due to the warm Spring which gave the fruit for this wine extra time on the vine to ripen; the warm, sunny summer and autumn gave a
yield of excellent concentration and balance.
Chapel Down English Rosé
Ripe Pinot Noir grapes are the magic ingredient in this vibrant, red cherry-scented Rosé. With a blend of macerated red fruit nuances, like a
summer pudding, this is a joyous wine that delivers a lick of fruitiness on the finish.
Chapel Down Union Red
A blend of Rondo and Pinot Noir; Rondo is an unusual early ripening red variety which thrives in England’s cooler climate. Its union with the
classic Pinot Noir grape produces attractive cherry and strawberry flavours in a light refreshing red.

Brilliant and intense with bluish hues. Clear, fruity and vinous bouquet with red fruit aromas. Supple and round on the palate with a fruity

Ginestet Classique, Médoc V Vg
Classy Bordeaux with well knit fruit and lifted aromas of mint. The palate is smooth and rounded with good body and typical Cabernet flavours
of green pepper, eucalypt and damsons in mid palate, finished off with the structured backbone you expect of Claret.

The nose and palate is full of chocolate, plum and a sprinkling of spice and pepper.

A classic wine with aromas and flavours of blackcurrant leaf, pencil lead and pepper.
Château Mayne-Vieil, Fronsac
Powerful, concentrated and already well-knit but still youthful. Packed with intense black mulberry flavoured fruit and firm but smooth
tannins, the ripe fruit makes this very drinkable now and it will continue to develop more complexity.
Clos 56, Domaine Bouyer, Pomerol V Vg
This is 100% old vine Merlot from a tiny parcel (0.56 hec) of exceptional terroir in heart of the Pomerol vineyard. It is inky black with
intense, super ripe sweet fruit. Concentrated, rich and very classy with expensive spicy oak, the wine has lots of potential.
Château Lalande, Saint-Julien V Vg
A wine that possesses all the richness and power that you should expect from a classed Saint-Julien estate but at half the price.
Textbook pencil lead, tea chest nose with a well structured palate of intense cassis fruit and fine grained tannins.
Château Tayac, Margaux
Fresh and plummy, warm and soft with a good core of fruit, very polished and lots of potential with well-integrated oak on the finish.

The nose is pretty and delicate, just hints of hedgerow flowers. Careful use of oak adds texture and vinosity to this very drinkable white.
Côtes du Rhône Commandeur, St Michel X
A charming, juicy wine with lovely fruit purity, bursting with red cherry, raspberry and cranberry.
Cuvée Papale Châteaunef-du-Pape
This is an archetypal and rustic Châteauneuf-du-Pape, spiced black fruit aromas and a velvety warm palate.
Victor Bérard Châteauneuf-du-Pape V
A sustained garnet red colour, with a bouquet of small red fruit and spice. The palate is generous, round and very full.
Victor Bérard Gigondas V
A wine which is expressive, potent and complex. The bouquet is of dark fruit relayed by spice, liquorice, a few hints of scrub and then pleasant
woody notes at the end. The palate is well-balanced with very present but mellow tannins, with the Syrah dominating.
Victor Bérard Crozes-Hermitage V
A dark red colour, with an intense bouquet of red fruit accompanied by a few notes of leather and spice. After a keen, mouth-watering attack,
the wine is suave on the palate with a lingering impression of balance.

Through its very calling, the Rhône valley has always been a privileged right of
way between the Mediterranean and northern Europe or the Atlantic.
In the middle ages, Châteauneuf was renamed Châteauneuf du Pape
the day the Popes of Rome chose the region as a holiday retreat.
Rhône vineyards are to be found between Vienne, Valence and Avignon
and take their personality from an amazing variety of soils, climates and
grape varieties.
These three elements lie behind the very specific character of Côtes du
Rhone wines, but it is doubtless the commitment of people that forged the
appellation and created genuine personality.

Consistently clear, bright ruby red in colour. Red berry aromas mingle with spices. Supple and structured with silky tannins, well-balanced, a
lively finish underlying a lingering, fruity aroma.
Domaine Champs du Chêne, Juliénas V Vg
This very drinkable red has an appealing sappy character with hints of fresh cherry & pepper on the nose, juicy fruit and a comforting
earthiness on the finish.
Victor Bérard Brouilly V
A sustained ruby red with a bouquet of fine intensity. Red fruits blend with notes of sweet spice. A contrast of vinosity and freshness with
lingering mineral notes.
‘Arenite' is the terroir of pinky, crumbly sandstone of the La Madone vineyards, rated as one of the best vineyards in
Fleurie. At up to 450m altitude and with soils still untouched by phylloxera, Goblet trained vines on the east and south
east facing vineyards lie below the Chapel of the Madonna at the top of the hill. Gamay Noir vines range from 40 to 90
years of age.

Ever since the 1920’s, the history of the Pasqua company has been
entwined with that of the family. It was then that Nicola, the oldest
of the Pasqua brothers, moved to Verona from Trani in Puglia, where
the rest of the family lived. His intention was to pursue the activity
in which the family was involved, opening up a shop for the sale of
wines in bulk and by the glass.
Nicola’s success with importing Puglian wines soon allowed his
younger brothers, Riccardo, Natale and Umberto to also move to
Verona.
Nearly 100 years later, the third generation of the Pasqua family
assures the continuity of the family company, with the new
headquarters and winery built in 2007, from

Grape Varieties & Styles
In Europe (referred to as ‘Old World’), wines tend to be labelled after the town or region where they are made, as opposed to the grape
variety. For example, Sancerre is the name of a village in France and the grape used in these wines is Sauvignon Blanc. This is also
true with Rioja and the grape Tempranillo, and Chablis and the grape Chardonnay. New world wines (America, Australia,
New Zealand, South Africa, Chile, Argentina etc) will normally state the grape on the wine label - we call these varietal wines.
Each grape variety has its own individual flavour and character, which determines the style of wine made. But remember, where the
grapes are grown, and the winemaking techniques used, will also decide the final taste of the wine.
Here are the ones most relevant to your wine list.
White wine
When tasting white wines, we talk about ‘acidity’. This is a sensation rather than a taste and feels like biting into a crunchy green
apple. A wine may have ‘acidity’ but that does not mean it’s ‘acidic’ – you should describe the wine to your customers as being ‘fresh’.
Chardonnay (SHAR – DON – NAY) has the ability to grow in a wide range of climates and therefore can reflect
various styles of wine and various fruit flavours. It tends to be dry and can be aged in oak.
Chablis (SHA – BLEE) is the name of a region in France and the wines produced are of the Chardonnay grape.
They will usually be light with pure fruit flavours and a steely mineral undertone.
Chenin Blanc (SHEN – IN BLONK) typically produces wines that have tropical, honeyed and green apple characters.
It is the grape variety found in Vouvray and is also the most widely planted grape variety in South Africa.
Gewürztraminer (GER – VERZ – TRA – MEE – NA) has a distinctive style that’s aromatic, slightly spicy and off dry.
Lychee and Turkish delight are common flavours associated with it.
Picpoul de Pinet (PIK – POOL DE PEE – NAY) Picpoul is the name of the grape and it is grown in Pinet, southern France.
Picpoul translates to ‘lip stinger’ and refers to the high acidity in the grapes. The wines are dry and
incredibly refreshing with an underlying minerality.
Pinot Grigio (PEE – NO GREE – JEE - OH) is best known for being grown in Italy though it can be produced in other countries.
Generally it produces light, dry, crisp white wines. Pinot Grigio and Pinot Gris are the same grape, but each will have a different style.
Riesling (REECE – LING) can produce wines from dry to intensely sweet that can be aged in the bottle for years.
The wines are famous for having floral and lime fruit flavours and a touch of petroleum character.
Sancerre (SON – SAIR) is the name of a village in France and the grape variety used here is Sauvignon Blanc.
Sancerre wines are generally crisp and dry with a steely, flinty undertone.
Sauvignon Blanc (SO – VIN – YON BLONK) is an aromatic grape that has herbaceous characteristics
(grass, nettles, green pepper). The wines are generally dry and high in acidity with green fruit flavours.
Viognier (VEE – ON – YAY) is known for producing flavoursome whites which are soft and full bodied
with stone fruit flavours such as apricot and peach.

Rosé wine
Rosé wines are made from red grape varieties (with the exception of Pinot Grigio Blush). The longer contact the juice has had
with the grape skins, the darker the rosé will be. The shade of a pink rosé has nothing to do with the sweetness of the wine.
Cinsault (SAN – SO) is often used in southern France to produce drier, more refreshing rosé.
Grenache (GREH – NASH), also known as Garnacha is a red grape variety and is used to produce dry, fruitier styles of rosé.
Pinot Grigio Rosé (PEE – NO GREE – JEE - OH) is a darker skinned grape and allowing some contact with the juice
can import a slight pink hue.
Zinfandel (ZIN – FAN – DELL) is a red grape variety which is used to produce the sweet style of rosé called White Zinfandel.
Red wine
The most important thing when tasting red wines is ‘tannin’. Tannins are found in the skins and stems of grapes and is what gives
red wine a drying, bitter sensation and also their structure. Tannins are softened by protein which is why red wine
drinks well with red meat and cheese.
Beaujolais (BOW – JHO – LAY) is a region in France where the wines are light in style with bright red fruit flavours and can be drunk
chilled. The grape variety used in these wines is Gamay.
Red Burgundy (BER – GERN – DEE) wines are from the region Burgundy in France. They are light to medium bodied and have finesse
and elegance. The grape variety used is Pinot Noir, and the final wine will have red fruit flavours with earthy notes.
Cabernet Sauvignon (KA – BER – NAY SO – VIN – YON) is a grape variety grown around the world and one of the main staples in
Bordeaux reds. It has distinctive blackcurrant flavours and depending on where it’s grown, a minty eucalyptus edge too.
It can develop incredibly well when aged in oak.
Carmenère (KAR – MEN - AIR) is a grape that was mistaken for Merlot for many years. It is grown in Chile and renowned for
producing soft, fruity and easy drinking wines.
Chianti (KEY – AN – TEE) is a wine producing region in Italy where the wines are made from Sangiovese (SAN - JO - VAY - ZEE).
Typically the wines will be medium to full bodied with black fruit flavours and can be aged for years.
Côtes du Rhône (COAT – DOO – RONE) is an appellation in the Rhône Valley, France. Many grape varieties are permitted
to be used in the blend, however the three main grape varieties used are Grenache, Syrah and Mourvèdre.

Garnacha (GAR – NATCH – AH) also known as Grenache, produces incredibly juicy, berried flavoured wines with a gentle lick of spice.
Malbec (MAL – BEK) is commonly associated with Argentina and France (though it is grown in other countries).
The wines are inky in colour, rich with black fruit and hints of spice. It ages well in oak and can
develop tobacco and toasty flavours.
Merlot (MER – LOW) is often associated with Chile. It is also a key grape found in Bordeaux reds where it is blended
with Cabernet Sauvignon. When on its own the wines are soft, fruity
and medium bodied with plum fruit flavours.
Montepulciano (MON – TAY – POOL – CHEE – A – NO) is an Italian varietal that produces light, easy drinking wines.
It shares its name with an Italian region but the wines there are made with a different grape variety.
Nero d’Avola (NEH – RO DA – VOE – LA) is grown in Sicily and southern Italy and produces full bodied, fruity reds with
subtle spicy and smoky flavours.
Pinot Noir (PEE – NO NWAR) is an incredibly difficult grape to grow. It produces wines which are light to medium in body,
with bright red fruit flavours and subtle vegetal and earthy notes. It is the grape variety used to make Burgundy wines.
Red Rioja (REE – OCK – AH) is a region in Spain where the wines are made from Tempranillo and take to oak ageing very well.
The wines are classified by how long they are aged in cask - Joven, Crianza, Reserva, Gran Reserva - and they are
generally soft and structured.
Shiraz (SHEER – RAZ) is also called Syrah. The wines produced are full bodied with black and red fruit flavours and a peppery spice.
St Émilion (SANT AY - ME - LEE - ON) wines are from the Bordeaux region in France and are named after a place as opposed to grape
varieties. The main grape in these wines is Merlot and it can be blended with Cabernet Franc and Cabernet Sauvignon.
The wines are oaked with a velvety texture and can be aged for years.
Syrah (SEER – RAH) is also called Shiraz. The wines produced are full bodied with black and red fruit flavours and a peppery spice.
Tempranillo (TEM – PRA – NEE – YO) otherwise known as Tinto Fino is the most important Spanish grape variety.
It produces Rioja and Ribera del Duero wines, the best of which are aged for years in oak.
Valpolicella (VAL – POH – LEE – CHE – LA) is a wine growing region in Verona, Italy. The wines typically have cherry flavours
and are best drunk when young and fruity. The main grape variety in these wines is Corvina (KOR – VEE – NA).

Sparkling wine
There are six different recognised methods of producing sparkling wines. For Champagne and Cava, Méthode Traditionnelle is used
which is where the fermentation and fizz occurs naturally in the bottle; they have to be produced this way by law. For Prosecco the
fizz is produced in a tank and is then bottled under pressure - known as the Tank Method (Cuvée Close / Charmat Method).
Cava (KAR – VUH) is Spain’s sparkling wine. Most Cava is dry and white but also rosé is produced.
The 3 most common grape varieties used to make it are Macabeo, Parellada and Xarel·Lo.
Champagne (SHAM – PANE) is a sparkling wine produced in the Champagne region in the north of France.
The three main grape varieties that are permitted in the production of these wines are; Chardonnay, Pinot Noir
and Pinot Meunier (PEE - NO - MUH - NEE - AY). Champagnes from a particular year or ‘vintage’ must be aged for at least
3 years before release. The wines commonly have bready aromas and are creamy on the palate.
Prosecco (PRO – SEK – OH) is a dry sparkling wine made in Italy from the Glera grape. It is popular all around the world
and it is delicate, fresh and has fruit flavours predominantly of apple and pear.
