Welcome to the <strong>Symmons</strong> & <strong>Allen</strong> <strong>Vintners</strong> Wine Portfolio<br />
It feels like we’ve been working on this new <strong>wine</strong> <strong>portfolio</strong> for a long<br />
time! I’m proud to be able to launch it to you and hope you enjoy what<br />
you see...<br />
We’ve updated tasting notes across our full, exclusive range of 160 <strong>wine</strong>s<br />
thanks to the support of Sam Caporn MW, and her wealth of knowledge.<br />
Over three sittings she tasted the <strong>wine</strong>s and evaluated a new short,<br />
medium and long tasting note (what a job!). We’re using the medium<br />
tasting note within the <strong>portfolio</strong> and on our website, but if your business<br />
has need of the other formats, we have full details on file to assist.<br />
We now have a key so you can distinguish between screw cap and cork<br />
<strong>wine</strong>s - I know many of you prefer screw cap for your <strong>wine</strong>s by the glass,<br />
and some customers feel having cork <strong>wine</strong>s within their <strong>wine</strong> list keeps<br />
the theatre alive in the restaurant.<br />

and we have provided full vegetarian and vegan information throughout<br />
should you wish to include these details within your <strong>wine</strong> menu or drinks<br />
list.<br />
This has been a turbulent political year, with the campaign around Brexit<br />
resulting in a leave vote for the UK. This may seem like old news, but the<br />
impact of that decision has immediate and long-term implications for our<br />
industry.<br />
Rest assured, we are negotiating harder than ever this year to get around<br />
the currency constraints.<br />
So, is the <strong>wine</strong> glass half empty or half full?<br />
One thing we can be sure of is that our currency has dropped<br />
significantly against the Euro and the Dollar, and this will have an effect<br />
on pricing across the whole drinks industry. Hopefully we’ll see the<br />
currency improve - I’m sure everyone has their own opinions around that.<br />
We do buy significant volumes of <strong>wine</strong> from Europe and trading areas<br />
based on the dollar include Chile and Argentina, as well as the USA of<br />
course.<br />

a full orchid range with White Orchid Sauvignon Blanc and Red Orchid<br />
Merlot, if you’d like to give them a go.<br />
Our English <strong>wine</strong> offering has been extended with the addition of Lyme<br />
Bay Winery from Devon. It’s very different in style to our current range<br />
from Chapel Down; both fantastic qualities though, if you haven’t had a<br />
chance to try any English <strong>wine</strong> yet, please do - it’s delicious!<br />
We have paid close attention to the smaller, lesser known grapes from<br />
around the world when selecting the additions to this <strong>portfolio</strong>. You can<br />
all sell Sauvignon Blanc, Pinot Grigio and Merlot, but what about those<br />
other truly wonderful grapes? Did you know there are over 10,000 grape<br />
varieties recorded worldwide?<br />
Customers are travelling more than ever, and know more about <strong>wine</strong> than<br />
ever before, so why not add a different grape to your <strong>wine</strong> list this time<br />
around and encourage people to try new things. We can offer some great<br />
examples at a tasting and breathe new life into your list.<br />

Nieto Senetiner has grown to become one of the leading stars of Mendoza. The vineyards and <strong>wine</strong>ry were developed in<br />
1969 and continue to be extended and updated. Nieto have vineyards in virtually all of the best sub-districts of Mendoza<br />
from which they produce typical and classic <strong>wine</strong>s, characterised by the uniquely appealing balance of power and<br />
finesse that defines the best <strong>wine</strong>s of Mendoza. The top <strong>wine</strong>s come from very old vineyards in the famed sub-district<br />
of Agrelo and are fully deserving of their iconic status.<br />

The <strong>wine</strong> is vibrant with an alluring blend of fruit along with clove, pepper and cinnamon spice, finished off with well-structured integrated<br />
tannins.<br />
Terrazas Malbec, Mendoza<br />
Black cherries, prunes and raisins are combined with vanilla, caramel and toasted notes to define a very complex nose.<br />
Hints of violets stand out, typical of Malbec. Extremely fruity.<br />

Emiliana is one of the world’s most important producers of organic and biodynamic <strong>wine</strong>s and the largest in South<br />
America. They have a total of 997 hectares under vine in the valleys of Casablanca, Maipo, Colchagua, and Cachapoal<br />
of which 923ha are certified organic and the remaining 77 in conversion. Adobe’s spectacular biodynamic vineyard and<br />
<strong>wine</strong>ry at Los Robles is a model that attracts visiting viticulturalists and <strong>wine</strong>makers from all over the world.<br />
These innovative <strong>wine</strong>s are made with great care and attention and the results are inspiring.<br />

With a bright, deep ruby colour, this <strong>wine</strong> has red-fruit and plum aromas with touches of toast, vanilla and spice. On the palate there is more<br />
fruit with a nice tension between the plum and a slight leafy flavour. This merlot has great body with good balance and silkiness.<br />

The Tinamou Story<br />
The Tinamou is a characteristic bird of<br />
Chile, considered to be one of the most<br />
ancient creatures alive.<br />
Rarely seen but often heard, the<br />
Tinamou is a shy and secretive bird<br />
active during the day, retiring to<br />
roost at night.<br />
This <strong>wine</strong> is a homage to this<br />
mysterious living dinosaur, who is part<br />
of our everyday lives, although we’ve never seen him.<br />
The Tinamou range for the classic with a twist. 2<br />
blends, 1 white + 1 red, slightly rebellious, and 2<br />
single varietals with a strong personality. The<br />
perfect complement to the current Peregrino &<br />
Volandas lines.<br />
The Irene Morales Story<br />
Irene Morales was a simple seamstress<br />
who became a brave symbol in the<br />
history of Chile and represents all<br />
women who fought and helped in the<br />
battles of Pisagua, Dolores and Tacna.<br />
She was also the first woman to be<br />
recognised sergeant and to wear a<br />
uniform.<br />
Irene Morales, the range for the connoisseur. A premium<br />
line with two full powered red blends and a gourmet<br />
white, which even “red only” drinkers will enjoy.<br />

Lyme Bay are an award-winning creative <strong>wine</strong>ry based in Devon, supported by a growing and diverse team of <strong>wine</strong><br />
lovers, growers and makers. Treading the normal path is not for them, they prefer to trust their inventive instincts and<br />
sense of mischief. As they have evolved their philosophy has remained the same, to push the boundaries and only aim<br />
for the best possible quality.<br />
West England<br />
Lyme Bay Shoreline<br />
Dry and refreshing with complex layers. This beautiful <strong>wine</strong> has subtle notes of lemon, nettle, rose petal and grapefruit.<br />
Lyme Bay Bacchus<br />
A superb alternative to Sauvignon Blanc; restrained, elegant and grassy, crisp citrus and elderflower with a long finish.<br />
Lyme Bay Bacchus Fumé<br />
A complex <strong>wine</strong>, fermented with wild yeast and transferred to French oak barriques for six months. The result gives hints of grapefruit, spicy<br />
oak and lemon, with an exceptionally long finish.<br />

East England<br />
England<br />
The South-East coast of England is synonymous with the white cliffs of Dover. It is this iconic chalk soil (the same as<br />
that of Champagne, just 90 miles to the south), coupled with England’s cool climate that enables the production of<br />
truly world-class sparkling <strong>wine</strong>s, as well as aromatic white <strong>wine</strong>s and elegant light red <strong>wine</strong>s from grapes such as<br />
Pinot Noir, Chardonnay, Pinot Blanc and Bacchus.<br />
Chapel Down Chardonnay<br />
Made in an unoaked style to show the purity of the fruit, the nose is tight and focussed but has apple, pear and citrus aromas along with a<br />
classic flintiness. The palate is textural, with good weight and concentration, clean juicy fruit, steely acidity and a long mineral finish.<br />
Chapel Down Flint Dry<br />
Crisp aromas of green apple, freshly cut grass, citrus and white peach supported by a creamy mouthfeel. On the palate there are flavours of<br />
elderflower and nectarine with a smooth texture and fresh finish.<br />
Chapel Down Bacchus<br />
Tropical fruit characters on the palate. Excellent weight from ripe fruit and crisp acidity.<br />
Chapel Down Bacchus Reserve<br />
Made using only the ripest fruit from the best vineyards giving a <strong>wine</strong> of great intensity and richness. The growing season of 2014 started<br />
early due to the warm Spring which gave the fruit for this <strong>wine</strong> extra time on the vine to ripen; the warm, sunny summer and autumn gave a<br />
yield of excellent concentration and balance.<br />
Chapel Down English Rosé<br />
Ripe Pinot Noir grapes are the magic ingredient in this vibrant, red cherry-scented Rosé. With a blend of macerated red fruit nuances, like a<br />
summer pudding, this is a joyous <strong>wine</strong> that delivers a lick of fruitiness on the finish.<br />
Chapel Down Union Red<br />
A blend of Rondo and Pinot Noir; Rondo is an unusual early ripening red variety which thrives in England’s cooler climate. Its union with the<br />
classic Pinot Noir grape produces attractive cherry and strawberry flavours in a light refreshing red.<br />

Ever since the 1920’s, the history of the Pasqua company has been<br />
ent<strong>wine</strong>d with that of the family. It was then that Nicola, the oldest<br />
of the Pasqua brothers, moved to Verona from Trani in Puglia, where<br />
the rest of the family lived. His intention was to pursue the activity<br />
in which the family was involved, opening up a shop for the sale of<br />
<strong>wine</strong>s in bulk and by the glass.<br />
Nicola’s success with importing Puglian <strong>wine</strong>s soon allowed his<br />
younger brothers, Riccardo, Natale and Umberto to also move to<br />
Verona.<br />
Nearly 100 years later, the third generation of the Pasqua family<br />
assures the continuity of the family company, with the new<br />
headquarters and <strong>wine</strong>ry built in 2007, from<br />

In Europe (referred to as ‘Old World’), <strong>wine</strong>s tend to be labelled after the town or region where they are made, as opposed to the grape<br />
variety. For example, Sancerre is the name of a village in France and the grape used in these <strong>wine</strong>s is Sauvignon Blanc. This is also<br />
true with Rioja and the grape Tempranillo, and Chablis and the grape Chardonnay. New world <strong>wine</strong>s (America, Australia,<br />
New Zealand, South Africa, Chile, Argentina etc) will normally state the grape on the <strong>wine</strong> label - we call these varietal <strong>wine</strong>s.<br />
Each grape variety has its own individual flavour and character, which determines the style of <strong>wine</strong> made. But remember, where the<br />
grapes are grown, and the <strong>wine</strong>making techniques used, will also decide the final taste of the <strong>wine</strong>.<br />
Here are the ones most relevant to your <strong>wine</strong> list.<br />
White <strong>wine</strong><br />
When tasting white <strong>wine</strong>s, we talk about ‘acidity’. This is a sensation rather than a taste and feels like biting into a crunchy green<br />
apple. A <strong>wine</strong> may have ‘acidity’ but that does not mean it’s ‘acidic’ – you should describe the <strong>wine</strong> to your customers as being ‘fresh’.<br />
Chardonnay (SHAR – DON – NAY) has the ability to grow in a wide range of climates and therefore can reflect<br />
various styles of <strong>wine</strong> and various fruit flavours. It tends to be dry and can be aged in oak.<br />
Chablis (SHA – BLEE) is the name of a region in France and the <strong>wine</strong>s produced are of the Chardonnay grape.<br />
They will usually be light with pure fruit flavours and a steely mineral undertone.<br />
Chenin Blanc (SHEN – IN BLONK) typically produces <strong>wine</strong>s that have tropical, honeyed and green apple characters.<br />
It is the grape variety found in Vouvray and is also the most widely planted grape variety in South Africa.<br />
Gewürztraminer (GER – VERZ – TRA – MEE – NA) has a distinctive style that’s aromatic, slightly spicy and off dry.<br />
Lychee and Turkish delight are common flavours associated with it.<br />
Picpoul de Pinet (PIK – POOL DE PEE – NAY) Picpoul is the name of the grape and it is grown in Pinet, southern France.<br />
Picpoul translates to ‘lip stinger’ and refers to the high acidity in the grapes. The <strong>wine</strong>s are dry and<br />
incredibly refreshing with an underlying minerality.<br />
Pinot Grigio (PEE – NO GREE – JEE - OH) is best known for being grown in Italy though it can be produced in other countries.<br />
Generally it produces light, dry, crisp white <strong>wine</strong>s. Pinot Grigio and Pinot Gris are the same grape, but each will have a different style.<br />
Riesling (REECE – LING) can produce <strong>wine</strong>s from dry to intensely sweet that can be aged in the bottle for years.<br />
The <strong>wine</strong>s are famous for having floral and lime fruit flavours and a touch of petroleum character.<br />
Sancerre (SON – SAIR) is the name of a village in France and the grape variety used here is Sauvignon Blanc.<br />
Sancerre <strong>wine</strong>s are generally crisp and dry with a steely, flinty undertone.<br />
Sauvignon Blanc (SO – VIN – YON BLONK) is an aromatic grape that has herbaceous characteristics<br />
(grass, nettles, green pepper). The <strong>wine</strong>s are generally dry and high in acidity with green fruit flavours.<br />
Viognier (VEE – ON – YAY) is known for producing flavoursome whites which are soft and full bodied<br />
with stone fruit flavours such as apricot and peach.<br />

Rosé <strong>wine</strong><br />
Rosé <strong>wine</strong>s are made from red grape varieties (with the exception of Pinot Grigio Blush). The longer contact the juice has had<br />
with the grape skins, the darker the rosé will be. The shade of a pink rosé has nothing to do with the sweetness of the <strong>wine</strong>.<br />
Cinsault (SAN – SO) is often used in southern France to produce drier, more refreshing rosé.<br />
Grenache (GREH – NASH), also known as Garnacha is a red grape variety and is used to produce dry, fruitier styles of rosé.<br />
Pinot Grigio Rosé (PEE – NO GREE – JEE - OH) is a darker skinned grape and allowing some contact with the juice<br />
can import a slight pink hue.<br />
Zinfandel (ZIN – FAN – DELL) is a red grape variety which is used to produce the sweet style of rosé called White Zinfandel.<br />
Red <strong>wine</strong><br />
The most important thing when tasting red <strong>wine</strong>s is ‘tannin’. Tannins are found in the skins and stems of grapes and is what gives<br />
red <strong>wine</strong> a drying, bitter sensation and also their structure. Tannins are softened by protein which is why red <strong>wine</strong><br />
drinks well with red meat and cheese.<br />
Beaujolais (BOW – JHO – LAY) is a region in France where the <strong>wine</strong>s are light in style with bright red fruit flavours and can be drunk<br />
chilled. The grape variety used in these <strong>wine</strong>s is Gamay.<br />
Red Burgundy (BER – GERN – DEE) <strong>wine</strong>s are from the region Burgundy in France. They are light to medium bodied and have finesse<br />
and elegance. The grape variety used is Pinot Noir, and the final <strong>wine</strong> will have red fruit flavours with earthy notes.<br />
Cabernet Sauvignon (KA – BER – NAY SO – VIN – YON) is a grape variety grown around the world and one of the main staples in<br />
Bordeaux reds. It has distinctive blackcurrant flavours and depending on where it’s grown, a minty eucalyptus edge too.<br />
It can develop incredibly well when aged in oak.<br />
Carmenère (KAR – MEN - AIR) is a grape that was mistaken for Merlot for many years. It is grown in Chile and renowned for<br />
producing soft, fruity and easy drinking <strong>wine</strong>s.<br />
Chianti (KEY – AN – TEE) is a <strong>wine</strong> producing region in Italy where the <strong>wine</strong>s are made from Sangiovese (SAN - JO - VAY - ZEE).<br />
Typically the <strong>wine</strong>s will be medium to full bodied with black fruit flavours and can be aged for years.<br />
Côtes du Rhône (COAT – DOO – RONE) is an appellation in the Rhône Valley, France. Many grape varieties are permitted<br />
to be used in the blend, however the three main grape varieties used are Grenache, Syrah and Mourvèdre.<br />

Garnacha (GAR – NATCH – AH) also known as Grenache, produces incredibly juicy, berried flavoured <strong>wine</strong>s with a gentle lick of spice.<br />
Malbec (MAL – BEK) is commonly associated with Argentina and France (though it is grown in other countries).<br />
The <strong>wine</strong>s are inky in colour, rich with black fruit and hints of spice. It ages well in oak and can<br />
develop tobacco and toasty flavours.<br />
Merlot (MER – LOW) is often associated with Chile. It is also a key grape found in Bordeaux reds where it is blended<br />
with Cabernet Sauvignon. When on its own the <strong>wine</strong>s are soft, fruity<br />
and medium bodied with plum fruit flavours.<br />
Montepulciano (MON – TAY – POOL – CHEE – A – NO) is an Italian varietal that produces light, easy drinking <strong>wine</strong>s.<br />
It shares its name with an Italian region but the <strong>wine</strong>s there are made with a different grape variety.<br />
Nero d’Avola (NEH – RO DA – VOE – LA) is grown in Sicily and southern Italy and produces full bodied, fruity reds with<br />
subtle spicy and smoky flavours.<br />
Pinot Noir (PEE – NO NWAR) is an incredibly difficult grape to grow. It produces <strong>wine</strong>s which are light to medium in body,<br />
with bright red fruit flavours and subtle vegetal and earthy notes. It is the grape variety used to make Burgundy <strong>wine</strong>s.<br />
Red Rioja (REE – OCK – AH) is a region in Spain where the <strong>wine</strong>s are made from Tempranillo and take to oak ageing very well.<br />
The <strong>wine</strong>s are classified by how long they are aged in cask - Joven, Crianza, Reserva, Gran Reserva - and they are<br />
generally soft and structured.<br />
Shiraz (SHEER – RAZ) is also called Syrah. The <strong>wine</strong>s produced are full bodied with black and red fruit flavours and a peppery spice.<br />
St Émilion (SANT AY - ME - LEE - ON) <strong>wine</strong>s are from the Bordeaux region in France and are named after a place as opposed to grape<br />
varieties. The main grape in these <strong>wine</strong>s is Merlot and it can be blended with Cabernet Franc and Cabernet Sauvignon.<br />
The <strong>wine</strong>s are oaked with a velvety texture and can be aged for years.<br />
Syrah (SEER – RAH) is also called Shiraz. The <strong>wine</strong>s produced are full bodied with black and red fruit flavours and a peppery spice.<br />
Tempranillo (TEM – PRA – NEE – YO) otherwise known as Tinto Fino is the most important Spanish grape variety.<br />
It produces Rioja and Ribera del Duero <strong>wine</strong>s, the best of which are aged for years in oak.<br />
Valpolicella (VAL – POH – LEE – CHE – LA) is a <strong>wine</strong> growing region in Verona, Italy. The <strong>wine</strong>s typically have cherry flavours<br />
and are best drunk when young and fruity. The main grape variety in these <strong>wine</strong>s is Corvina (KOR – VEE – NA).<br />

Sparkling <strong>wine</strong><br />
There are six different recognised methods of producing sparkling <strong>wine</strong>s. For Champagne and Cava, Méthode Traditionnelle is used<br />
which is where the fermentation and fizz occurs naturally in the bottle; they have to be produced this way by law. For Prosecco the<br />
fizz is produced in a tank and is then bottled under pressure - known as the Tank Method (Cuvée Close / Charmat Method).<br />
Cava (KAR – VUH) is Spain’s sparkling <strong>wine</strong>. Most Cava is dry and white but also rosé is produced.<br />
The 3 most common grape varieties used to make it are Macabeo, Parellada and Xarel·Lo.<br />
Champagne (SHAM – PANE) is a sparkling <strong>wine</strong> produced in the Champagne region in the north of France.<br />
The three main grape varieties that are permitted in the production of these <strong>wine</strong>s are; Chardonnay, Pinot Noir<br />
and Pinot Meunier (PEE - NO - MUH - NEE - AY). Champagnes from a particular year or ‘vintage’ must be aged for at least<br />
3 years before release. The <strong>wine</strong>s commonly have bready aromas and are creamy on the palate.<br />
Prosecco (PRO – SEK – OH) is a dry sparkling <strong>wine</strong> made in Italy from the Glera grape. It is popular all around the world<br />
and it is delicate, fresh and has fruit flavours predominantly of apple and pear.<br />
