One baby, two paranoid visits to the pediatrician, and zero restful nights<br />

later, and I’m back!<br />

On June 22 at 3:59 a.m., I became a mom and, as cliché as it sounds,<br />

am forever changed. It’s as emotional, exhausting, and exhilarating<br />

as everyone warned me, but even more incredible than I imagined.<br />

Despite the diaper<br />

blowouts, middle-of-the-night wake-up<br />

calls, and inconsolable crying fits where I<br />

sometimes end up crying too, my heart’s<br />

never been happier. I’ve also never been<br />

as grateful to have a hands-on, helpful<br />

husband; gracious grandparents; and<br />

competent coworkers who stepped up amid<br />

my absence. Yep, childrearing really does<br />

take a village…and a lot of coffee.<br />

Speaking of gratefulness, ‘tis the season<br />

Firas Nassif, DMD<br />

Granite Bay resident Firas Nassif, DMD—<br />

who’s practiced dentistry since 2001 in<br />

Roseville—insists he isn’t into numbers,<br />

but he set this year’s fundraising record<br />

for the Greater Sacramento Chapter of<br />

the Leukemia & Lymphoma Society’s<br />

(LLS) Man & Woman of the Year<br />

campaign—earning him the title of <strong>2019</strong><br />

Man of the Year. Over the course of the<br />

10-week philanthropic competition, he<br />

and his teammates raised $200,000—<br />

money that will help LLS with their<br />

mission to cure leukemia, lymphoma,<br />

Hodgkin’s disease, and myeloma; and<br />

improve the quality of life for patients<br />

and their families. “Eighty cents of every<br />

dollar donated goes to the actual cause,”<br />

Dr. Nassif says.<br />

A leukemia survivor himself, Dr. Nassif<br />

says maintaining a positive attitude<br />

daily and not getting mired in negativity<br />

Give Where You Live<br />

In the spirit of the impending holiday season, we compiled a list<br />

of 10 easy ways to give back. From volunteering for a cause you<br />

care about, to random acts of kindness, there’s a need you can<br />

certainly feed. Ready, set, serve!<br />

Beautify your backyard by heading to<br />

a local park or nearby trail and filling a<br />

plastic bag with litter.<br />

Visit a senior center and play games,<br />

read books, or simply converse with<br />

lonely residents.<br />

Play with puppies. Animal<br />

shelters are always in need<br />

of assistance—from dog<br />

walking and kennel<br />

cleanup to caring<br />

for kitties.<br />

Assist area food banks in myriad<br />

ways—whether it’s sorting, packaging,<br />

and distributing food; or donating<br />

hygiene kits, canned goods, and other<br />

items to the organization.<br />

Be a good neighbor by baking and<br />

delivering cookies to someone’s<br />

doorstep, rolling in their recycling, or<br />

sharing excess produce from your<br />

garden.<br />

Be book smart. Libraries are a prime<br />

place to lend a helping hand. Tasks<br />

like tutoring kids and shelving books<br />

are typically in demand.<br />

Help the homeless. Drop off a bagged<br />

lunch, leftovers, warm blankets, or a<br />

pair of socks to someone in need.<br />

Pay it backwards. Next time you’re<br />

in line for your morning cup of coffee,<br />

pay for the patron’s order behind you.<br />

Feeding a Global Need<br />

Jim Quinney has traveled to<br />

Haiti four times and can tell<br />

you firsthand where the food<br />

packaged by local volunteers<br />

goes. How does he know these details? He<br />

works for Rise Against Hunger as their<br />

community engagement manager—a<br />

stark contrast from his former career<br />

in the insurance industry—and loves it.<br />

He began as a volunteer about five years<br />

ago and recently celebrated his one-year<br />

anniversary as a member of the team.<br />

“Rise Against Hunger, an international<br />

relief organization, aims to show the world<br />

that it is, in fact, possible to end hunger<br />

by the year 2030” (<strong>2019</strong> Fact Sheet). They<br />

hope to accomplish this goal by enlisting<br />

myriad volunteers who essentially find a<br />

room; set up assembly lines; and spend<br />

time measuring, weighing, and packaging<br />

rice, soy-based products, dehydrated<br />

vegetables, and other protein sources for<br />

easy transport and cooking to countries<br />

in need. The packages are then saved in<br />

a warehouse; when 285,000 meals are<br />

ready, a shipping container leaves for its<br />

destination across the ocean.<br />

The nonprofit has served in 74<br />

different countries and currently works<br />

in 34 countries, in addition to locations<br />

experiencing sudden and ongoing<br />

crises, such as the Bahamas after being<br />

impacted by Hurricane Dorian. The<br />

packages—which are boxed to include<br />

36 bags—can feed one child 216 meals<br />

wich will sustain a child for a full school<br />

year. According to Quinney, this may be<br />

the only food the child has access to in<br />

countries such as Haiti.<br />

“I love sharing my experiences [and<br />

stories of success with the community,<br />

churches, and civic clubs] and transforming<br />

people [while changing their] perception<br />

and how they view ending hunger,” says<br />

Quinney, who shares that “8,000 or more<br />

children die every day from malnutrition.”<br />

This program can help decrease, if not end,<br />

that fact.<br />

In addition to the packaged meals, Rise<br />

Against Hunger also helps communities<br />

build small gardens to assist with<br />

improving access to healthy food. An<br />

example of success in Cambodia—where<br />

mushroom farms have been established—<br />

allows farmers to sell the produce and<br />

Another success in Vietnam includes<br />

opportunities for women to start<br />

businesses with “micro grants,”<br />

which gives them money to launch<br />

their chance for independence. “We<br />

empower communities by increasing<br />

self-sufficiency through the promotion<br />

of agriculture development, business<br />

skills training, and market access” (<strong>2019</strong><br />

Fact Sheet).<br />

Quinney shares his passion about this work. “It’s big, but it’s not unsolvable…if we<br />

collectively get there by not tolerating that level of suffering, saying no to hunger, and<br />

deciding for ourselves that we’re going to do something.” Rise Against Hunger strives<br />

to meet a three-year goal set in 2018 of increasing the number of meals sent, as well as<br />

assisting in breaking the cycle of poverty, and they’re well on their way.<br />

Spotlight onSparrow<br />

El Dorado Hills’-based rock band Sparrow consists of high<br />

school students Brandon Bagley on rhythm guitar and<br />

vocals, Sam Kallan on lead guitar, Chad Vogan on bass,<br />

Owen Schumacher on piano, and Gavin Verandez on drums. Playing<br />

together now for a little over a year, the group has rocked local<br />

venues such as El Dorado Saloon & Grill, The Boardwalk, Holy Diver,<br />

and The Silver Orange. Influenced by classics such as Guns N’ Roses,<br />

Green Day, 311, Weezer, and Nirvana, Sparrow is wary of pigeonholing<br />

themselves into just one genre. “We want people to hear something<br />

passionate...something they’ve never heard before that reminds them<br />

of the artists and bands they love and remember.”<br />

SOUND?<br />

SPARROW: Each of us come from different<br />

backgrounds: everything from punk and pop, to<br />

metal, reggae, and [more]. We kind of mix [all these<br />

sounds] together to come up with something new.<br />

What makes us stand out is the fact that we really<br />

don’t pick a genre or style—we play whatever we’re<br />

passionate about. When we write our songs together,<br />

we start with a riff, a melody, or even a concept; from<br />

there, they start to expand and take shape on their<br />

own.<br />

HLN: AS HIGH SCHOOL STUDENTS, HOW<br />

DO YOU FIND THE TIME TO CREATE MUSIC<br />

AND REHEARSE TOGETHER?<br />

SPARROW: When asked this, we often joke,<br />

“It just depends how much you care about your<br />

grades.” In all honesty, it’s definitely a busy lifestyle,<br />

but somehow we’ve managed to find a balance that<br />

works for us.<br />

HLN: WHAT DO YOU ENJOY MOST ABOUT<br />

YOUR COMMUNITY?<br />

SPARROW: What we really love about living in El<br />

Dorado Hills is that the community is super [close].<br />

All we need is a place to play, and the people [come<br />

• 5 cups vegetable oil<br />

• 4 cups Brussels sprouts, cut<br />

into quarters<br />

• 1 tbsp. butter<br />

• 4 tbsp. bacon, rendered and<br />

chopped<br />

• Salt and pepper, to taste<br />

• 1 tsp. balsamic reduction<br />

(can be store-bought)<br />

• 1 tbsp. goat cheese, crumbled<br />

Heat vegetable oil in a deep<br />

pot to 350 degrees. Blanch<br />

Brussels sprouts in boiling<br />

water for 4 minutes. Strain<br />

and shock in ice water. Once<br />

cooled, strain till dry and<br />

drop into the fryer. Cook 2-4<br />

minutes, until the Brussels<br />

sprouts start to turn dark<br />

golden brown.<br />

Heat a sauté pan on medium<br />

heat and add butter. Once the<br />

butter has melted, add in the<br />

Brussels sprouts, bacon, salt,<br />

and pepper. Toss ingredients<br />

together and plate with goat<br />

cheese and balsamic reduction.<br />

PRO TIP: To make your own<br />

balsamic reduction, bring 1<br />

cup of high-quality balsamic<br />

vinegar to a boil on mediumhigh<br />

heat. Reduce flame and<br />

let simmer for 5-7 minutes.<br />

Stir occasionally. Remove from<br />

heat, cool, and serve or store in<br />

the fridge.<br />

“SHOP-YOUR-YARD”<br />

THANKSGIVING DÉCOR<br />

When we moved into our home a few<br />

years ago, I was surprised to find so<br />

many different plants on our little patch<br />

of property—several varieties of roses,<br />

a flaming pink crepe myrtle, bright<br />

yellow daffodils, and others I can’t name.<br />

I’ve added my own plants to the mix,<br />

too—citrus trees, some sweet peas, and<br />

different annuals in the front window box.<br />

I soon started taking cuttings of some<br />

of the plants and sticking them in a big<br />

white pitcher on our table. This year, I’m<br />

taking that concept of “shopping our<br />

yard” and designing a simple but elegant<br />

tablescape for Thanksgiving using some<br />

of the plants in my yard (and a neighbor’s<br />

yard—she has a mandarin tree!).<br />

To ground my Thanksgiving table<br />

décor, I found some sparkly gold<br />

wrapping paper and used it as a table<br />

runner. On top of that is a river of<br />

redwood and mandarin branches—the<br />

more the better. Pinecones bring an<br />

element of fall without going overboard.<br />

In the center is my white pitcher.<br />

Within the branches, I have simple<br />

white candles and glass votives to bring<br />

some ambiance. For each place setting, I<br />

kept it simple: a gold charger with white<br />

plates and a mandarin with a pretty<br />

green paper leaf and the guest’s name<br />

(attached with a pushpin)—finished off<br />

with cut crystal plastic cups and cutlery.<br />

I also designed a “thankful” printable<br />

(downloadable at heyletsmakestuff.com)<br />

with the mandarin orange theme, which<br />

is a great way to have your guests reflect<br />

on the things that really matter.<br />

This Thanksgiving table is so easy to<br />

create that I can focus on what really<br />

makes Thanksgiving special: the food…I<br />

mean, family. OK, it’s a tie!<br />

Japanese Sweet Potato and<br />

Miso Purée<br />

• 2 lb. Japanese sweet potatoes<br />

• 1 1/2 cups heavy cream,<br />

warmed<br />

• 1 1/2 tsp. salt<br />

• 1 lb. butter, unsalted, diced into<br />

1 cm pieces and kept chilled<br />

• 2 tbsp. shiro (white) miso<br />

Peel sweet potatoes and cut into<br />

1-inch pieces. Boil or steam until<br />

fully cooked, where a fork easily<br />

pierces through them. Drain, but<br />

don’t cool.<br />

Place into a food processor. Add<br />

cream and salt. Process for about<br />

15 seconds until potatoes are<br />

completely smooth. Add the<br />

butter and continue to process<br />

for another 15 seconds. Add the<br />

miso and mix for another few<br />

seconds until it’s incorporated.<br />

Serve immediately.<br />

PRO TIP: Japanese sweet potatoes<br />

are white on the inside rather<br />

than the orange or yellow centers<br />

of regular sweet potatoes and are<br />

available at Asian markets.<br />

• 2 oz. Fuyu persimmons,<br />

vinaigrette (recipe below)<br />

• 1/2 oz. candied walnuts<br />

• 1 tbsp. pomegranate seeds<br />

• 2 tbsp. ricotta cheese<br />

Pomegranate Vinaigrette<br />

• 3/4 cup pomegranate seeds<br />

or purée<br />

• 2 cups grapeseed oil<br />

• 1/4 cup honey<br />

• 1 tbsp. lemon juice<br />

• 1 tbsp. red wine vinegar<br />

• 1 tsp. Dijon mustard<br />

• Pinch of sea salt<br />

Put all ingredients except<br />

oil in a Vitamix (or other<br />

high-powered blender) and<br />

blend on low speed, gradually<br />

increasing to high while<br />

slowly adding oil. Continue<br />

blending on high for 30-<br />

60 seconds or until your<br />

dressing is smooth and all the<br />

pomegranate seeds have been<br />

blended.<br />

Candied Walnuts<br />

• 4 oz. unsalted butter<br />

• 4 oz. honey<br />

• 1 lb. walnuts<br />

Melt butter and stir in honey<br />

over medium-low heat. Add<br />

walnuts, then reduce heat to<br />

low. Simmer for 3-5 minutes<br />

and let cool before assembling<br />

salad and adding to it.<br />

PRO TIP: This is the season<br />

for persimmons. Pick the<br />

Fuyu variety that can be<br />

eaten raw. Look for smooth,<br />

blemish-free skin with a bit<br />

of give. The green cap should<br />

still be attached and fresh in<br />

appearance.<br />

Apple Berry Crisp<br />

• 10 cups Granny Smith apples (about 12 medium)<br />

• 2 cups blackberries or blueberries<br />

• 1 1/2 cups sugar<br />

• 1 tsp. ground cinnamon<br />

• 1/2 cup lemon juice<br />

• 1/2 cup bourbon<br />

• 3 tbsp. cornstarch<br />

Crisp Topping<br />

• 3/4 cup brown sugar<br />

• 3/4 cup sugar<br />

• 1 1/2 cups all-purpose flour<br />

• 1/2 tsp. kosher salt<br />

• 1 tsp. fresh nutmeg<br />

• 1 1/2 tbsp. ground cinnamon<br />

• 3/4 cup chopped pecans or walnuts<br />

• 1 cup oatmeal<br />

• 1 cup cold, unsalted butter, diced (keep cold)<br />

Preheat oven to 350 degrees. Butter a 9x13x2-inch<br />

baking dish. Peel, core, and cut the apples into 1-inch<br />

chunks. Toss apples and berries in lemon juice and<br />

bourbon; combine sugar, cinnamon, and cornstarch<br />

and mix in with the fruit. Pour into baking dish.<br />

To make the topping, combine sugars, flour, salt,<br />

nutmeg, cinnamon, nuts, oatmeal, and cold butter in<br />

the bowl of an electric mixer fitted with the paddle<br />

attachment. Mix on low speed until the mixture is<br />

crumbly and the butter is the size of peas. Scatter<br />

evenly over the apple berry mixture. Do not over mix.<br />

Place the baking dish on a sheet pan and bake for 1<br />

hour until the top is brown and the apples are bubbly.<br />

Serve warm and top with ice cream or whipped cream.<br />

PRO TIP: Gluten-free preference: Replace all-purpose<br />

flour with Bob’s Red Mill 1-to-1 gluten-free baking<br />

flour. Vegan preference: Replace butter with margarine.<br />

Teetotalers: Omit the bourbon.<br />

Allergies 101<br />

Does your dog keep you awake at night with<br />

constant scratching, licking, and chewing at<br />

their skin? Just like humans, dogs can develop<br />

allergies when their immune systems acquire<br />

sensitivities to environmental allergens, such<br />

as plant pollens, mold spores, dust mites,<br />

cat dander, food ingredients, fleabites, and<br />

certain shampoos or perfumes. Allergens can<br />

be problematic when inhaled, ingested, or when<br />

they come into contact with your dog’s skin.<br />

How are allergies treated in dogs?<br />

Traditional first-line therapies often include<br />

medications, such as antibiotics and<br />

cortisone, which are necessary to treat an<br />

active inflammatory skin process but don’t<br />

offer prolonged relief and oftentimes have<br />

undesirable side effects—especially if used<br />

long-term.<br />

Improved therapies are now available for<br />

longer, safer, and more effective management,<br />

including Apoquel (oral tablet) and Cytopoint<br />

(injectable solution). These newer treatment<br />

options work to break the itching cycle by<br />

blocking receptors in the body that react to<br />

proteins called cytokines, or by binding up<br />

specific cytokines that trigger itching with<br />

a class of substances called monoclonal<br />

antibodies. Both medications are generally well<br />

tolerated, have minimal side effects, and almost<br />

no interactions with other medications.<br />

Bone Appétit: The<br />

Great Grain Debate<br />

There has been significant discussion in the pet<br />

world over the question of grain-free pet food and<br />

its potential to influence a heart condition called<br />

dilated cardiomyopathy (DCM). Historically, this<br />

condition was found predominantly in specific, largebreed<br />

dogs. From 2014-2017, there were seven reported<br />

cases of this malady.<br />

The issue is a contentious one, pitting several groups<br />

against each other. Most holistic veterinarians have<br />

dismissed the concern, while many traditional Western<br />

veterinarians have trumpeted it.<br />

In June, the FDA took the unusual step of publicizing<br />

some, but not all, of the brands of dog food that were<br />

mentioned in a small number of case reports. The<br />

bizarre announcement was troubling—given that in<br />

the same statement they were clear they hadn’t found<br />

actual causation between DCM and any specific brand<br />

or ingredients; they also recommended that people<br />

don’t switch pet foods.<br />

Pet food is a $91 billion global marketplace, which is<br />

now dominated by Mars Petcare and Nestlé Purina Petcare,<br />

whom account for 70% of domestic pet food sales. Needless<br />

to say, influencing purchasing decisions is a big dollar<br />

game. Mars has emerged as the top corporate owner of<br />

veterinary practices, including ownership of Banfield,<br />

BluePearl, Pet Partners, and—most recently—VCA, which<br />

they purchased for $9.1 billion in September 2017.<br />

The FDA’s move has increased percolating concerns<br />

among independent canine nutritionists who wonder<br />

whether pet food goliaths are using their overwhelming<br />

market positions to influence fear among dog owners.<br />

A conclusion to the investigation is expected to be<br />

released next month. Whether the results show a<br />

correlation between pet food diets, simply the effects<br />

of over-breeding, or some other reason, your local pet<br />

food businesses stand prepared to inform you with the<br />

most current information possible. In the meantime,<br />

you’ll find healthy, grain-in and grain-free options for<br />

your pet at various local pet stores.<br />

The main center point that caught our eyes—just past the lobby—was<br />

The Chandelier Lounge, which is split into three different levels, providing<br />

a captivating visual experience. The stunning beaded curtains of lights were<br />

alluring, too—making us feel as if we’d stepped into a scene of Lifestyles of<br />

the Rich and Famous. Surrounding the lounge were the magnificent sounds<br />

and flashing lights of the slot machines with all the classic casino table<br />

games. (“I have to admit that my favorite slot machine is Wheel of Fortune,<br />

and—while Lady Luck didn’t smile on me during this trip—there’s something<br />

exhilarating about playing a few rounds with Pat and Vanna!” said one of<br />

the girls.) Tucked away in the far corner was a Starbucks, which, of course,<br />

became the staple for our morning coffee; be prepared to wait in line<br />

though—it’s a pretty popular place!<br />

For this trip, we decided to splurge and<br />

chose the Terrace One Bedroom Fountain<br />

View in the Boulevard Tower, and boy was it<br />

worth it! Stepping off the elevator onto our<br />

floor, we were greeted with a seductive wall<br />

hanging of a woman wearing a black lace<br />

mask with bunny ears that instantly put us all<br />

in a feel-good mood. The dim lighting in the<br />

hallway set a tone of relaxation as we walked<br />

to our room. Entering the one-bedroom<br />

suite, I immediately felt a rush of excitement;<br />

this room was to die for: alluring artwork, a<br />

cozy couch, spacious dressing area, and a<br />

room with a king-sized bed adorned with<br />

sumptuous linens. The bathroom looked<br />

like it was straight out of Architectural<br />

Digest—complete with a private toilet room,<br />

vanity sinks, a huge shower, and a step-up<br />

Jacuzzi with a view of the strip. The pièce de<br />

résistance, however, was the huge balcony<br />

with sliding doors that overlooked the<br />

fountains of the Bellagio, Paris Las Vegas, and<br />

Day one meant poolside drinks, of course!<br />

The Cosmopolitan offers three different<br />

pools to choose from: The Boulevard, The<br />

Chelsea, and Marquee Dayclub. If you want<br />

the ultimate club experience, then the<br />

Marquee is your scene—complete with an<br />

extension of a nightclub in the evening. Both<br />

The Boulevard and Chelsea offer cabana and<br />

daybed reservations, which can be made<br />

ahead of time on The Cosmopolitan’s website.<br />

We opted for The Boulevard, considering it<br />

was conveniently located in the same tower<br />

as our room. Poolside dining included a<br />

variety of fresh and fried deliciousness and<br />

drinks aplenty, including frozen margaritas.<br />

Pro tip: Arrive early to get the best lounge<br />

chairs, as the pool fills up quickly. Poolside<br />

cabanas and daybeds are also available, but<br />

need to be reserved in advance and have food<br />

and drink minimums.<br />

Las Vegas offers a plethora of activities,<br />

opted for the latter: the world’s tallest<br />

Ferris wheel with 360-degree views of the<br />

Las Vegas Valley and The Strip. We chose<br />

the Happy Half Hour ticket (available from<br />

noon-1 a.m.), which meant an open bar in<br />

the sky. Pro tip: Going at night provides<br />

the best views of the city and gives you<br />

Having stayed out into the wee hours<br />

of the morning, it was time to indulge<br />

in some pampering. I strongly suggest<br />

booking a penthouse suite for you and<br />

Knowing there would be a fair amount of<br />

trip, I put together survival bags for all the<br />

girls and recommend you do the same.<br />

this beautiful desert-like oasis. Our host<br />

Kimesha provided us the ultimate royal<br />

treatment with the perfect amount of<br />

attention and privacy. With room for up<br />

to 10 guests for four hours, the penthouse<br />

suite provided our group with an indulgent<br />

retreat to hang out, relax, and<br />

gab. Kimesha greeted<br />

us with Champagne<br />

and refreshments, and<br />

when we were done oohing<br />

and aahing over the suite’s<br />

private living and treatment areas,<br />

were able to avail of two whirlpool tubs,<br />

a eucalyptus steam room, showers, and a<br />

vanity area. Several of the girls opted for<br />

individually hosted treatments, including<br />

massages, facials, and mani/pedis. We spent<br />

a good portion of our day in the private<br />

retreat unwinding and relaxing. On our<br />

next trip, we’ll definitely be booking a<br />

treatment at the hammam (a ritual space<br />

that contains a heated motherstone slab,<br />

two whirlpools, steam rooms, and stone<br />

loungers that can be used privately or<br />

with up to three people).<br />

All that relaxing makes a girl really<br />

hungry! Luckily, Vegas is a culinary<br />

mecca, and the dining options at<br />

The Cosmopolitan are abundant and<br />

impressive. From all-day breakfast spot<br />

Eggslut and comfort food favorite District:<br />

Donuts. Sliders. Brew., Block 16 Urban<br />

Food Hall, to Spanish tapas at Jaleo, and<br />

Zuma, a high-end Japanese restaurant<br />

with an izakaya-inspired menu, there’s<br />

something for everyone. We checked in<br />

with Rose, our trusty mischief-maker for<br />

advice, and decided on Wicked Spoon:<br />

a multicultural, high-end buffet. The<br />

array of dishes from around the world<br />

was a feast for the senses, complete with<br />

amazing visual displays, invigorating<br />

smells, sizzling sounds, and satisfying<br />

tastes. Pro tip: Make reservations in<br />

advance for groups of eight or more and<br />

opt for the Bottomless Beverages package.<br />

No trip to Vegas is complete without a<br />

show, and we opted for Voss Events’ Drag<br />

Brunch at Señor Frogs (dragbrunch.<br />

com), featuring Vegas' finest female<br />

impersonators. Admittedly, this show isn’t<br />

for prudes, nor are you going for the food<br />

really, but it’s pure entertainment. These<br />

fabulous divas know how to put on a show<br />

and work the room. It lives up to all the<br />

hype and is a guaranteed good time. I even<br />

got on stage with a bunch of other ladies<br />

in a dance contest to show what we nonprofessionals<br />

had going for us. Be prepared<br />

to be picked on (if you’re lucky) and to be<br />

impressed by the divas’ talents. Pro tip: Opt<br />

for the VIP package for premium, reserved<br />

seating, a full open bar, and to meet the<br />

performers after the show. Oh, and bring<br />

lots of singles (the performers dance<br />

throughout the room, and you can’t help<br />

but want to reward them!).<br />

With easy flight access from<br />

Sacramento, Las Vegas is the perfect<br />

choice for a girls’ getaway. And, thank<br />

goodness what happens in Vegas stays in<br />

Vegas. Pro tip: Make your girl tribe do a<br />

pinkie swear to reiterate, just in case!<br />

Ineed new friends—or at least friends with a<br />

broader palate who have the ability to drop<br />

whatever they’re doing and join me for lunch<br />

at previously unknown (to me), untested<br />

restaurants. And they should have a robust knowledge<br />

of Indian food too, because it’s frustrating trying to get<br />

someone to join me for a steamy bowl of aloo gobi or<br />

korma. Piqued your interest?<br />

One of those formerly foreign destinations on<br />

my radar was Curry Bowl in Folsom. As I entered, I<br />

was shown the buffet table—which looked fresh and<br />

ample—but opted to order from their menu instead. I<br />

followed my instinct as I selected chillibajji (basically<br />

a battered and fried chili pepper). As to the type of<br />

pepper, research tells me it’s a mirchi—two to three<br />

inches long and somewhat similar to a Japanese shiso.<br />

rice crepe—its insides lightly covered in chili paste and<br />

stuffed with potato curry—lapped over both sides of the<br />

serving plate. Tearing pieces of the delicate, fiery dosa<br />

off and plunging them into one of the accompanying,<br />

cooling chutneys left me longing for more.<br />

At this point, I deviated and went all in on chicken<br />

tikka masala and garlic naan. Sometimes sticking with<br />

the “norm” has its dividends. This is the combination all<br />

entry-level Indian food newbies should start with. The<br />

tikka masala “gravy” was a succulent, mouthwatering<br />

amalgamation of garlic, ginger, turmeric, and garam<br />

masala in a creamy tomato-based sauce. Paired with<br />

the fragrant garlic naan, it’s unimaginable that anyone<br />

could pass up an opportunity to enjoy one of the<br />

world’s most popular Indian dishes.<br />

As I considered the wisdom of finishing with a<br />

homemade dessert (I couldn’t possibly though; I didn’t<br />

even have room for a mint), I once again pondered the<br />

folly of my reluctant friends. Spice is the variety of life…<br />

don’t miss out.<br />

Handel’s Homemade Ice Cream // You know the saying, “Life is short, eat dessert first”? Well, my<br />

10-year-old daughter and I did just that, and it was a great parenting decision. Who needs dinner when you can go to Handel’s?<br />

Here’s the “scoop” on Folsom’s latest sweet spot: Their ice cream—available in over 50 flavors (including fat free and no-sugaradded<br />

options) is made fresh daily in-house. Whether you pick a hand-packed quart or pint, pop (like a cake pop, but with ice<br />

cream), sundae, milkshake, cone, cup, or “hurricane,” expect friendly staff, cheery décor, and rows of ice cream freezers. My<br />

daughter went with an Oreo Dough Milkshake and said it was really good, but I had to make sure. And she was right:<br />

creamy, cold, and perfect. Lucky for me, they have something called the 4-Scoop Sampler, which I’m assuming is for<br />

Easy Corn Chowder<br />

• 6-8 strips bacon, cut<br />

into small pieces<br />

• 1 red onion,<br />

chopped<br />

• 4 russet potatoes<br />

cut into small cubes<br />

• 1 package fresh<br />

beef or chicken<br />

bone broth<br />

• 2 tsp. cornstarch<br />

(for thickening)<br />

• 2 cups heavy cream<br />

• *3-4 cups fresh<br />

corn<br />

• 3 cups shredded<br />

cheddar cheese<br />

• Chives, sea salt,<br />

and black pepper,<br />

for garnish<br />

1. Simmer the bacon pieces in a Dutch oven<br />

on low heat for 8-10 minutes. Once cooked<br />

through, remove from the pot, leaving the bacon<br />

grease.<br />

2. Simmer the chopped red onion in the bacon<br />

grease until translucent. Add the diced russet<br />

potatoes and bone broth and bring to a boil.<br />

Simmer the potatoes for about 15 minutes<br />

until tender.<br />

3. Whisk in the cornstarch and add the heavy<br />

cream, fresh corn, and shredded cheese and<br />

simmer for another 10 minutes. During the last<br />

two minutes of cooking, add half of the bacon.<br />

4. Garnish with the remaining bacon bits,<br />

more shredded cheese, chives, sea salt, and<br />

black pepper.<br />

*I recommend purchasing sweet corn from<br />

Davis Ranch Produce in Sloughhouse (typically<br />

available through <strong>November</strong>).<br />

Cioppino<br />

• 1 tbsp. extra virgin olive oil<br />

• 1 tbsp. unsalted butter<br />

• 2 medium leeks, white and light<br />

green parts only, rinsed and<br />

diced<br />

• 1 medium fennel bulb,<br />

chopped and fronds reserved<br />

for garnish<br />

• 3/4 cup shallot, diced<br />

• 3 cloves garlic, minced<br />

• Salt and pepper, to taste<br />

• 1/4 to 1/2 tsp. crushed red<br />

pepper flakes, to taste<br />

1. Heat a large pot over<br />

medium heat and add in the<br />

olive oil and the butter. When<br />

hot and melted, add the leeks,<br />

fennel bulb, shallot, and<br />

garlic. Cook for 3-5 minutes.<br />

2. Season with salt and<br />

pepper. Add in the white<br />

wine, tomato paste, bay leaf,<br />

seafood stock, and tomato<br />

purée. Bring to a boil then<br />

reduce to a simmer and cook,<br />

uncovered, for 35-40 minutes.<br />

• 1 cup dry white wine<br />

• 2 tbsp. tomato paste<br />

• 1 bay leaf<br />

• 2 cups seafood stock<br />

• 28 oz. can tomato purée or<br />

crushed tomatoes (put in a<br />

blender to purée)<br />

Vegetable Lasagna Soup<br />

• 2 tbsp. olive oil<br />

• 1 large yellow onion, diced<br />

• 8 oz. mushrooms, sliced<br />

• 1 lb. zucchini, halved and<br />

sliced into 1/4" thick slices<br />

• 28 oz. can crushed<br />

tomatoes<br />

• 28 oz. can diced tomatoes<br />

(I recommend fire roasted)<br />

• 1 tsp. Italian seasoning<br />

• 2 tbsp. sugar<br />

• 48 oz. vegetable broth<br />

• Salt and pepper, to taste<br />

• 8 oz. package lasagna<br />

noodles of your choice,<br />

broken into about 1" sized<br />

pieces<br />

• 8 oz. baby spinach leaves<br />

• 16 oz. mozzarella, cut into<br />

small cubes<br />

• 16 oz. ricotta<br />

• Parmesan and fresh basil,<br />

for garnish<br />

1. In a large pot over medium-high heat, sauté the<br />

diced onion in olive oil for about 3 minutes; stir in the<br />

mushrooms and sauté for about 5 minutes; stir in the<br />

zucchini, crushed tomatoes, diced tomatoes, Italian<br />

seasoning, and sugar.<br />

2. Add the vegetable broth and stir well. Taste for<br />

seasoning; add salt and pepper accordingly.<br />

3. Turn the heat to high, cover pot, and bring soup to<br />

a boil. Add in the broken lasagna noodles and boil for<br />

10 minutes (or until noodles are done per package<br />

instructions).<br />

4. Once noodles are done, turn off heat, and stir in the<br />

fresh spinach.<br />

5. Ladle soup into bowls, add a handful of cubed<br />

mozzarella, a generous scoop of ricotta, and a sprinkle<br />

of Parmesan and basil.<br />

New Orleans Jambalaya<br />

• 4 tbsp. olive oil, divided<br />

• 2 ribs of celery, chopped<br />

• 1 medium red onion, diced<br />

• 3 small bell peppers<br />

(combination of green, red,<br />

yellow, orange), chopped<br />

• 1 jalapeño, cored, seeded,<br />

and diced<br />

• 4 cloves of garlic, pressed<br />

or minced<br />

• 2 boneless/skinless<br />

chicken breasts, cut into<br />

bite-sized pieces<br />

• Salt and pepper, to taste<br />

Cajun Spice Blend<br />

• 1 tsp. paprika<br />

• 1 + 1/2 tsp. sea salt<br />

• 1 tsp. black pepper<br />

• 1 tsp. dried oregano<br />

• 1/4 tsp. dried thyme<br />

• 1/2 tsp. garlic powder<br />

• 14 oz. package Eckrich<br />

Smoked Sausage, sliced<br />

• 3 cups chicken broth<br />

• 28-ounce can crushed<br />

tomatoes<br />

• 2 cups long-grain rice<br />

• *Cajun spice blend (see<br />

below)<br />

• 2 bay leaves<br />

• 1 lb. raw shrimp, deveined<br />

and tail removed<br />

• 1 1/4 cup okra<br />

• Green onions and fresh<br />

parsley leaves, for garnish<br />

• 1/2 tsp. onion powder<br />

• 1 tsp. cayenne pepper (or<br />

less if you don’t like spicy<br />

foods!)<br />

Mix all ingredients together<br />

1. In a large, heavy pan with a lid, add 2 tablespoons<br />

of olive oil. Add in the celery, bell peppers, onions,<br />

jalapeño, and garlic. Sauté the veggies over mediumhigh<br />

heat until tender, about 4 minutes.<br />

2. Sprinkle the chicken pieces with salt and pepper. Add<br />

another 2 tablespoons of olive oil to the pan with the<br />

veggies. Fold in the chicken and sausage. Continue to<br />

sauté everything until the chicken is almost cooked and<br />

no longer pink.<br />

3. Add in the chicken broth, crushed tomatoes, rice,<br />

and Cajun spice blend. Mix with a wooden spoon to<br />

combine all ingredients and add bay leaves. Cover and<br />

lower the heat to medium-low. Allow the jambalaya to<br />

simmer until the rice is fully cooked and tender, about 25<br />

minutes. While simmering, stir the ingredients every 4-5<br />

minutes to prevent the rice from sticking to the bottom<br />

of the pan and burning.<br />

4. Fold in the shrimp and okra. Cover and allow the<br />

shrimp to cook until done. Once done, remove the bay<br />

leaves. Do a taste test; add additional salt and pepper or<br />

cayenne pepper, as needed. Garnish with green onions<br />

and fresh parsley leaves.<br />

30-Minute Ground Beef<br />

Stroganoff<br />

• 4 cups uncooked egg<br />

noodles<br />

• 1 lb. lean ground beef (I<br />

use 90% lean)<br />

• 8 oz. mushrooms, sliced<br />

• 1 large onion, halved and<br />

sliced<br />

• 3 cloves garlic, minced<br />

• 1 tbsp. butter<br />

• 2 tbsp. all-purpose flour<br />

• 1, 14 1/2 oz. can beef stock<br />

or broth (about 1 3/4 cup)<br />

• 2 tbsp. tomato paste<br />

• 1 cup sour cream<br />

(reduced fat is fine)<br />

• 1/2 tsp. salt, plus more to<br />

taste<br />

• 1/2 tsp. ground pepper,<br />

plus more to taste<br />

1. Cook noodles according to package directions in a<br />

large pot of boiling water.<br />

2. Meanwhile, in a large saucepan, cook the beef,<br />

mushrooms, and onions over medium heat until meat<br />

is no longer pink. Add the garlic and cook for 1 minute<br />

more. Drain and remove from pan; keep warm.<br />

3. Melt the butter in the same pan. Whisk in the flour<br />

until smooth then slowly add the beef broth, whisking<br />

until no lumps remain. Stir in the tomato paste.<br />

4. Bring the liquid to a boil and cook, stirring, until<br />

thickened, about 2 minutes.<br />

5. Return the beef mixture to the pan. Add the sour<br />

cream, salt, and pepper and cook and stir until heated<br />

through.<br />

6. Drain the noodles. Serve beef mixture over noodles.<br />

droppings are j-shaped;<br />

spiral-shaped. The larger the<br />

diameter, the older the bird.<br />

An adult turkey has<br />

5,000-6,000 feathers—count<br />

them!<br />

Enough with gobble,<br />

gobble; turkeys also cluck<br />

and purr.<br />

Young turkeys—called<br />

poults—scarf down insects<br />

like candy. Poults develop<br />

more of a taste for plants<br />

after they’re four weeks old.<br />

5 Move over, American bald<br />

eagle. Ben Franklin called<br />

the wild turkey a “bird of<br />

courage” and thought it<br />

would make a better<br />

national symbol.<br />
