Christmas came early for me this year. My husband and I—after years of<br />

searching, saving, and getting outbid—bought our first home. Unlike lots<br />

of people I know, we didn’t receive financial help from our parents or wellto-do<br />

relatives. Nope, this<br />

purchase was all us and<br />

made possible after many<br />

moons of hard work and living below our<br />

means. Sure, it’s the smallest house on the<br />

block, and, yes, our bank accounts look pretty<br />

bleak now, but it’s ours—and I couldn’t be more<br />

excited to let the madness of moving be over<br />

with and the fun of making it cozy commence.<br />

And what better way to make a house a<br />

home than with a fresh-cut Christmas tree?<br />

Something about finding “the one,” hauling<br />

it home, and the smell of pine permeating<br />

the air truly signals that the holidays are<br />

here. Lucky for us, we’re surrounded by tree<br />

farms that are full of more than just pinefilled<br />

forests; hot cocoa, visits with Santa,<br />

and complimentary candy canes are just a sampling of the activities that await. Turn to The<br />

Joe Gagliardi, CEO of the Folsom Chamber of<br />

Commerce, was honored for his 25 years of service to the<br />

Greater Folsom Partnership and the community at a funfilled<br />

celebration hosted at Julian's Pâtisserie and Café.<br />

AARP Experience Corps, which is managed by<br />

United Way California Capital Region, is looking<br />

for volunteers living in Roseville who are 50 or older<br />

to teach children how to improve their reading.<br />

The experience is rewarding and gives community<br />

members the opportunity to be role models for young<br />

Placer Community Foundation granted $5,000 to<br />

the Downtown Lincoln Association—a group of<br />

merchants, citizens, and officials who wish to preserve<br />

the area’s history, beauty, appearance, and more.<br />

Local author Connie McLennan was awarded a silver<br />

honor from the California Reading Association for<br />

her story The Forest in the Trees—a nonfiction picture<br />

book that inspires a love of nature within all its readers.<br />

Folsom Auto Center changed ownership<br />

and is now Folsom Automotive Service. The<br />

new store is a “digital shop,” where technicians<br />

take photos to inspect vehicles—ensuring<br />

customers receive quality repairs. Additionally,<br />

warranties have increased to three years.<br />

Big Brothers Big Sisters of El Dorado<br />

County partnered with El Dorado County<br />

Office of Education (EDCOE) to start a<br />

Beyond School Walls program where “bigs”<br />

(adults) and “littles” (children) meet for lunch to<br />

build constructive and valuable relationships.<br />

The Placerville & Sacramento Valley Railroad, a<br />

nonprofit dedicated to preserving California’s railroad<br />

history, recently acquired a new locomotive. This<br />

was made possible due to generous donations from<br />

individuals, local businesses, and the Folsom, El<br />

Dorado & Sacramento Railroad Association.<br />

As part of an Eagle Scout project, Ryan Sumida<br />

is installing a granite path, building a bench, and<br />

painting the planter boxes for Golden Hills School’s<br />

gardening enrichment elective. The project will<br />

help the children to develop an appreciation for the<br />

outdoors. Stay tuned to see the finished product!<br />

Members of the Rotary Club of Historic Folsom<br />

participated in a Rise Against Hunger event where<br />

they packaged nearly 30,000 meals, in cooperation with<br />

Folsom Lake Rotary, the Interact Club of Folsom<br />

High School, Rotary Club of Folsom, and numerous<br />

volunteers from Intel and the surrounding community.<br />

and empower other school<br />

communicators. “It was an outof-body<br />

experience,” says Gentry.<br />

community engagement, crisis<br />

Military personnel are allegiant to their<br />

country. Student athletes are allegiant to<br />

their school teams. So it’s fitting that military<br />

veterans and youth athletes are at the heart<br />

of Allegiant Giving, an organization that was<br />

created with the goal of changing lives.<br />

Mark and Stacey Haney drew on their<br />

life experiences to form the nonprofit in<br />

2010. The Haneys are parents of a son who<br />

was active-duty infantry in the U.S. Marine Corps; Mark also has a history<br />

of playing youth sports and was later a coach. The couple has dedicated<br />

themselves to serving today’s heroes and tomorrow’s leaders—veterans<br />

who have served in a branch of the United States Armed Forces and youth<br />

athletes who are gaining leadership<br />

skills while participating in their<br />

sport of choice.<br />

Always proud Americans, Mark<br />

and Stacey became fierce advocates<br />

for veterans upon son Marcus’<br />

enlistment in the U.S. Marine Corps<br />

in 2009. Alarmingly, Marcus was<br />

wounded in combat three years later.<br />

During his time spent in recovery at<br />

a Naval hospital, the Haneys became<br />

acutely aware of the need to help<br />

combat-wounded amputees regain<br />

their lost freedom. With the support<br />

of its partners, Allegiant Giving launched the Action Trackchair program, just one of the<br />

ways it gives back to today’s heroes.<br />

“The Action Trackchairs create new possibilities for veterans who have sustained<br />

amputations as a result of their service,” says Stacey, who oversees community relations<br />

for Allegiant Giving. “Veterans are able to use the [all-terrain wheelchair with tracks] to hunt,<br />

fish, and enjoy the outdoors. They have literally taken disabled veterans off of their porch<br />

and put them back into the [activities] they enjoyed prior to their injuries.”<br />

Allegiant Giving is committed to supporting tomorrow’s leaders as they emerge through<br />

youth sports and activities involving teamwork. A unique and significant donation was made to<br />

Del Oro High School in the form of a new baseball field, appropriately named Allegiant Field.<br />

Contributions also include academic scholarships. “A leadership program that we<br />

began in 2015 has presented scholarships of $500 to two seniors each year, one male and<br />

one female, at each of six local high schools,” explains Stacey. “The recipients are students<br />

who demonstrate outstanding leadership traits.”<br />

The organization is currently focused on veterans education, employment, and<br />

entrepreneurship. Recently, a space was leased at McClellan Park to develop the Allegiant<br />

Innovation Center to offer entrepreneurship-training programs for veterans and military<br />

spouses. The participants learn important aspects of entrepreneurship with the help of<br />

Sacramento-based CEOs and experts who serve as both trainers and mentors.<br />

This year has been one of growth and change. “We are very excited about what lies<br />

ahead for 2020,” Stacey says. “One significant project on the horizon is merging RRUFF<br />

Healing Heroes into Allegiant Giving—a program that gives scholarships to local disabled<br />

veterans to fund the cost of service dog training. It allows the veteran to take their dog<br />

or puppy through the entire training process from the beginning to [become a] Certified<br />

Service Dog Team.”<br />

Allegiant Giving’s programs and activities are mostly volunteer-based, and the<br />

organization welcomes new volunteers and partners as well as donations.<br />

Since his<br />

childhood in<br />

the Philippines,<br />

Leo Songco has been<br />

passionate about the<br />

arts. It wasn’t until retiring<br />

in 2017, however, that he<br />

fully began devoting his<br />

time to it. Now the selftaught<br />

painter creates<br />

colorful florals, seascapes,<br />

and other landscapes<br />

on both traditional<br />

canvas and resurfaced<br />

surfboards with most of<br />

his inspiration stemming<br />

from international travel<br />

and frequent trips to<br />

the Pacific Northwest.<br />

“I love using bold,<br />

primary colors in my<br />

artwork, which I hope<br />

attracts, intrigues, [or<br />

even] invokes a personal<br />

memory or smile from<br />

my viewers,” he says. A<br />

because the challenge is to translate them<br />

into an impressionistic style. I mostly use<br />

acrylic since it’s water-based and less messy<br />

than oil media. My “studio” is essentially the<br />

kitchen, which gets the best light, and my art<br />

supplies are confined to a cart; the portability<br />

of it allows me to clear the kitchen when it’s<br />

time to eat.<br />

Bring Her Flowers Just Because<br />

HLN: WHO HAS BEEN YOUR BIGGEST<br />

INFLUENCE?<br />

LS: When I was young, Marvel comic artists,<br />

as well as impressionist painters like Monet,<br />

Renoir, and Cézanne. I’m also a fan of Erin<br />

Hanson, a contemporary landscape painter<br />

and Steve Barton, a surfboard artist.<br />

PAINT SURFBOARDS?<br />

LS: [Maybe it’s] because I’m an island boy<br />

by birth and at heart, as I was born and<br />

raised in the Philippines. My parents used<br />

to live in Hawaii and during one of my visits,<br />

I met Steve Barton, who was so gracious<br />

and showed me how to prep surfboards<br />

for painting. Surfboards are expensive, so I<br />

only use old/trashed ones, then repair them<br />

and prep the surface. The two surfboards<br />

featured on my website were gifted by a close<br />

friend who found them in Santa Cruz.<br />

WOULD HAVE DONE DIFFERENTLY IN<br />

YOUR CAREER?<br />

LS: I always knew that being an artist would<br />

come later on in life. I grew up as a military<br />

brat and it was always my intent to enlist in<br />

the U.S. Air Force, where I served for almost<br />

23 years. I then worked for the Department of<br />

Veterans Affairs (VA) for another 16 years, until<br />

my retirement. I’m happy and fortunate that I<br />

was able to live my life the way I planned it.<br />

HLN: DO YOU HAVE ANY WORDS OF<br />

WISDOM TO ASPIRING ARTISTS?<br />

LS: Practice, practice, practice; and be bold in<br />

your creativity.<br />

HLN: WHAT ARE YOUR FUTURE<br />

GOALS?<br />

LS: I’m a recreational artist. Since my<br />

previous careers were fraught with suspense<br />

and deadlines, I just want to enjoy my<br />

retirement with family and with art not too<br />

far away.<br />

Winter Wellness: Resolve<br />

to Take Care of You<br />

With the New Year comes resolutions<br />

and this year you’re going to stick to<br />

them. If you’re committed to starting<br />

2020 on the right foot, here are some<br />

tips on how to reach your wellness goals.<br />

1 Make your resolutions now. There’s no need to wait until<br />

January 1 to start building healthy habits. In fact, it’ll help<br />

you get on track faster come the new year.<br />

2 Make your resolutions attainable. Progress is made in baby<br />

steps, not giant leaps. If your ultimate goal is to lose 40<br />

pounds, start small by resolving to lose 10 pounds by April 1.<br />

3 Sprinkle in a fun resolution or two. Make a point of<br />

scheduling some girls’ nights or coffee dates with friends.<br />

Plan a family vacation to go somewhere you’ve never been but<br />

always dreamed of visiting.<br />

4 Focus on what you can do, not what you can’t. Instead of<br />

telling yourself you can’t have potato chips and soda, try to<br />

think about all the fruits and vegetables you can eat in abundance.<br />

5 Make appointments in advance. Take an hour or two to make<br />

phone calls to set up all your preventive health appointments<br />

for the year. These may include an annual physical, well women’s<br />

exam, mammogram, colonoscopy, eye exam, and teeth cleaning.<br />

If you plan on making big changes to your diet, make an<br />

appointment with a registered dietician at Marshall Medical<br />

Center’s Diabetes and Nutrition Education Department by calling<br />

6 Set (and keep) your sleep goal. No matter what your<br />

resolution, getting enough sleep will help you achieve it. Try<br />

to go to bed 30 minutes earlier once January 1 comes around.<br />

The dishes in the sink or that last load of laundry can wait until<br />

tomorrow.<br />

7 Plan some cheat days. Drastically changing your diet is hard.<br />

If it wasn’t, we’d all be our ideal weight and clothing size.<br />

Seeing light at the end of the tunnel for a piece of cheesecake on<br />

Sundays or a mid-week bowl of ice cream will help you stick to<br />

your plan the rest of the week.<br />

As we age, we come to accept<br />

certain medical conditions and<br />

symptoms as normal parts of<br />

aging. Depression, however,<br />

shouldn’t be one of them. If<br />

you’re age 65 or older and<br />

you’ve started feeling symptoms<br />

of depression including<br />

persistent sadness, excessive worry, changes in weight<br />

and/or appetite, difficulty sleeping or concentrating, or<br />

withdrawal from social activities, you may want to make<br />

an appointment with a psychiatrist to address the root<br />

cause and work on a solution.<br />

Maisha Correia, MD, of Marshall Psychiatry provides<br />

some helpful insight into this issue. “Depression can start<br />

at a young age or can start at age 85. It can happen at<br />

any time,” she says. “In a setting where there are a lot of<br />

stressors, seniors have often found themselves in a more<br />

desperate situation where depression can manifest.”<br />

“When we see older patients with depression, it’s usually<br />

brought on as a secondary condition to a chronic medical<br />

condition,” she says. For example, when you are already<br />

experiencing severe congestive heart failure and COPD<br />

and your ability to interact with the world in the same way<br />

you used to be able to changes, that’s where symptoms<br />

of depression start to appear. Some conditions that can<br />

trigger or worsen depression include:<br />

• Cancer<br />

• Parkinson’s disease<br />

• Stroke<br />

• Heart disease<br />

• Lupus<br />

• Diabetes<br />

• Dementia including<br />

Alzheimer’s<br />

• Multiple Sclerosis<br />

• Mobility issues<br />

Another common scenario is the loss of a spouse. In<br />

each of these situations, regular appointments with a<br />

psychiatrist can help build coping mechanisms to help<br />

improve a patient’s state of mind.<br />

Dr. Correia and most other psychiatrists are hesitant to<br />

treat depression in this population with medication, due to<br />

the fact that patients are likely to already be taking a host<br />

of other medications and the risk of interaction is high.<br />

“When we do try a medication, we start with a very small<br />

dose and gradually increase slowly to carefully monitor<br />

any drug interaction signs,” says Dr. Correia<br />

“Instead,” says Dr. Correia, “I’m more likely to recommend<br />

patients stay engaged with their community and stay<br />

active physically and mentally, using their social skills.”<br />

Not only are these activities likely to decrease the<br />

symptoms of depression, but will also slow the onset of<br />

dementia and other neurological conditions we see as<br />

people age.<br />

setting with many ways to get outdoors and get those<br />

endorphins pumping. Try activities such as:<br />

• Biking<br />

• Hiking<br />

• Walking<br />

• Card games<br />

• Volunteering<br />

• Camping<br />

• Fishing<br />

• Swimming<br />

Depression affects older people differently than younger<br />

people. It’s important for the elderly to see a psychiatrist<br />

that specializes in depression in seniors.<br />

WHAT IS VAPING?<br />

Vaping is the act of inhaling a<br />

vaporized liquid from an electronic<br />

device.<br />

It’s a fact; vaping has become a popular alternative to cigarette smoking,<br />

especially with younger people. Its appeal is broad: vaping doesn’t carry the tar<br />

and other cancer-causing chemicals that cigarettes contain, the vapor can be<br />

odorless and it comes in flavors that appeal to adolescents.<br />

But as vaping has become more and more popular, we’re seeing stories in the news<br />

that lead us to believe it’s perhaps not as safe as we originally thought.<br />

This summer, the CDC was alerted to several cases of a mysterious, severe lung<br />

illness tied to e-cigarette use and vaping. As of October, there have been a reported<br />

1,479 lung injury cases from 49 states, with 33 deaths, due to vaping products. THC<br />

was present in most of these cases, particularly from off-market or illegal vaping<br />

products. However, the deadly culprit was found to be vitamin E acetate, which<br />

leaves a sticky residue in the lungs, similar to honey. This mimics the symptoms of<br />

pneumonia, causing serious respiratory illness and sometimes death. According to<br />

Nurse Practitioner Karen Greenhaw of Marshall Family Medicine, “The use of THC<br />

alone has far reaching negative effects on the young and developing brain, as does<br />

any substance containing nicotine.”<br />

Symptoms of vaping illnesses include abdominal discomfort, coughing, fever and<br />

shortness of breath. “These symptoms are consistent with bacterial pneumonia or<br />

viral infections and are usually manageable,” says Greenhaw. Standard treatments<br />

including antibiotics and oxygen support don’t always stop the symptoms and some<br />

teens have experienced respiratory failure and been put on ventilators. “Anyone<br />

experiencing chest pain or difficulty breathing after vaping should seek immediate<br />

medical attention,” she said.<br />

“At the end of the day,” says Karen, “it can be dangerous to deliberately put any<br />

chemical into your body for recreational purposes. If you have any questions, talk to<br />

your physician.”<br />

WHAT ARE THE<br />

DIFFERENT VAPE<br />

PRODUCTS?<br />

Popular terms for vaping devices<br />

include e-cigarettes, smokeless<br />

cigarettes, vaporizers, vape, vape<br />

pens, vapor pens, mods, tanks,<br />

cigalikes, e-hookah and hookah<br />

pens. These vary widely in size,<br />

shape, and design. Some are as<br />

small as computer flash drives<br />

or highlighters, while some are<br />

bulkier and box like.<br />

WHAT IS IN VAPE JUICE<br />

OR E-LIQUID?<br />

Vape juice most commonly<br />

contains three ingredients:<br />

propylene glycol and/or glycerin,<br />

chemicals for flavoring and<br />

nicotine.<br />

The pods for the most popular<br />

brand contain nicotine 100<br />

percent of the time. The amount of<br />

nicotine in one pod has the same<br />

amount of nicotine in an entire<br />

pack of cigarettes. Some vape<br />

pods can also contain THC, the<br />

chemical in marijuana that makes<br />

you “high.” Vaping doesn’t give<br />

off the telltale smell of smoking<br />

marijuana or cigarettes.<br />

A Generous Gift<br />

to Marshall<br />

Arlene and Richard Wilkinson loved<br />

Placerville—so much so that<br />

they made it a point to put their<br />

time and resources back into the<br />

community. They also planned<br />

to leave half of their estate to the<br />

Marshall Foundation for Community<br />

Health to augment services at<br />

Marshall Hospital.<br />

Their story began in the summer of<br />

1950, when they met while attending<br />

UC Berkeley. They married later<br />

that summer and moved to Fresno to<br />

complete their respective degrees—Arlene<br />

in education and Richard in engineering<br />

and industrial arts. They eventually<br />

made their way home to Placerville where, in addition to<br />

teaching, Richard managed a pear ranch and developed<br />

land in the area. Involved with the development of the<br />

River Park complex and the Gold Trail subdivision, they<br />

also donated 131 acres to the American River Conservancy<br />

as part of their love of nature.<br />

Richard is remembered as loving life and his family,<br />

while Arlene is described as “kind, gracious and polite,<br />

with perfect manners,” by Derrell Roberts, CPA, executor<br />

of their estate. “The amazing thing about Arlene,” says<br />

Roberts, “is she was one of those graceful ladies always<br />

immaculate in her appearance. Not out of a sense of<br />

pride, but of wanting to be proper. She was always dressed<br />

properly with her makeup done and every hair in place.<br />

She was also generous, almost to a fault.”<br />

Arlene chose Marshall as the recipient of the bulk of<br />

her part of the estate. She and Richard did not have<br />

any children of their own, although they had several<br />

nieces and nephews. Arlene wanted to give back to this<br />

community and knew that the Marshall Foundation has<br />

a proven track record of handling its funding very well.<br />

She and Richard had both been hospitalized at Marshall<br />

throughout<br />

their years<br />

and always had<br />

positive experiences there.<br />

Sadly, the community lost Richard to cancer in 2009, and<br />

Arlene to dementia in 2017. Their legacy will live on through<br />

their generous gift of more than $1 million to Marshall.<br />

Granite Bay is rapidly gaining a reputation as a<br />

favorite destination for Mexican food, thanks<br />

to the addition of El Rey. In an enclave that’s<br />

already enjoying some quality South-of-the-<br />

Border fare, El Rey has thrown its sombrero into the ring<br />

and proven it’s a contender for the crown of best Mexican<br />

food. Local restaurateurs Lucy and Federico Hurtado<br />

opened the eatery in Quarry Ponds Town Center last fall,<br />

and the reviews have been stellar.<br />

To start, our server brought out chips and three<br />

homemade salsas: mild red, flaming red, and holymole-that’s-hot<br />

jalapeño green. Their refreshing ceviche<br />

appetizer—served tostada-style with shrimp, cucumbers,<br />

onions, cilantro, and tomatoes in a citrus marinade—was<br />

Shrimp Ceviche the perfect shareable with three to a serving.<br />

Next up was one of my favorites: pollo en mole. El<br />

Rey’s “secret recipe” boasts over 30<br />

house-made chorizo, arrachera (steak),<br />

chicken, nopales (cactus), veggies, queso fresco, and “Mama’s<br />

Mi Palabra Molcajete secret salsa” was another winner from their “Sizzling Plates”<br />

portion of the menu. If you’ve never tried molcajete, take a<br />

ride on the wild side. You can order it mild or hot, and it’s<br />

definitely enough to share with the accompanying tortillas,<br />

rice, and beans. More than just the meat and veg though<br />

was the tantalizing, multi-layered broth.<br />

To flan or not to flan, especially when all of the scratchmade<br />

desserts are beckoning? When in doubt, I flan, and<br />

then I have a dining compadre order the pastel del mango<br />

(mango cake) or the bunuelos (fried dough with cinnamon,<br />

sugar, and ice cream). The flan, that ubiquitous Mexican<br />

combination of custard and caramel that people seem to<br />

love or loathe (count me in the “love it” camp), featured what<br />

I surmise was a hint of orange liqueur.<br />

El Rey’s dishes are artistically plated, the atmosphere is<br />

vibrant yet charming, and the staff is helpful and friendly.<br />

Mountain Mike’s Pizza // If you’re looking for a filling, affordable lunch buffet, I found it at Mountain Mike’s<br />

Pizza in Folsom! The scrumptious smorgasbord includes everything pizza dreams are made of. For $9.95, you can fill your belly to<br />

the brim with a build-your-own salad—complete with carrots, cucumbers, croutons, and every other veggie under the sun—then<br />

grab as many pizza slices as you can stomach. Once you’ve reached your limit, seal the deal with dessert; which, on my visit<br />

meant a pizza “cookie” and “cinnamon roll” (fresh, fluffy dough covered in butter, cinnamon, and brown sugar with a dusting of<br />

slices in ranch dressing before we left the parking lot. Are you a fan of wings? Depending on your preference, pick from plain,<br />

buffalo, BBQ, honey garlic, or sweet chili. Between the buffet, “crispy, curly pepperoni,” and specialty pizzas, the options are<br />

Pomegranate Chicken Skewers<br />

• 14, 6-inch bamboo skewers,<br />

soaked<br />

• 2 1/2 cups pomegranate juice<br />

• 1/4 cup brown sugar<br />

• 2 tbsp. apple cider vinegar<br />

• 1 clove garlic, thinly sliced<br />

• 1-inch nub fresh ginger, finely<br />

chopped<br />

1. Make syrup. Measure and<br />

combine first 5 ingredients<br />

(thru ginger) in mixing bowl,<br />

stir, then pour half into a small<br />

pot on medium-high heat.<br />

Stir occasionally, till reduced<br />

by 1/3 (about 10 minutes) or<br />

mixture becomes syrupy. Add<br />

orange marmalade.<br />

2. Make marinade. Add<br />

vegetable oil, lime juice,<br />

rosemary, and salt to<br />

remaining mixture.<br />

3. Prepare chicken thighs by<br />

opening and flattening the<br />

meat on a cutting board. Cut<br />

into long 1-inch strips. Put<br />

• 2 tbsp. orange marmalade<br />

(strain before serving)<br />

• 1 tsp. vegetable oil<br />

• 2 tbsp. lime juice<br />

• 1/2 tsp. fresh rosemary, minced<br />

• 1/4 tsp. salt<br />

• 1 ½ lbs. boneless skinless<br />

chicken thigh meat<br />

meat on skewers, covering<br />

pointed end and leaving<br />

1-inch free for a handle. Lay<br />

skewers flat in a baking dish<br />

and pour marinade over. Let<br />

for coating bread<br />

• 1/2 cup olive oil<br />

• 1 stick butter<br />

• 4 large yellow<br />

onions, sliced<br />

• 2 sweet onions,<br />

sliced<br />

• 1 red onion, sliced<br />

• 1 shallot, sliced<br />

• ¼ cup salt<br />

• 1 tbsp. pepper<br />

• 1 cup sherry<br />

• 1 cup beef stock<br />

• Herbs of choice<br />

(thyme, rosemary,<br />

or basil)<br />

Crostini: Cut baguette on the bias into<br />

½-inch pieces and liberally coat with olive<br />

oil and salt. Place on a baking sheet and<br />

bake at 350 for 30 minutes or until golden<br />

brown.<br />

French Onion: Heat a heavy-bottom<br />

Dutch oven or pot with 1/2 cup olive oil<br />

on medium-high heat. Add stick of butter<br />

and all sliced onions then slowly cook<br />

over medium-high heat until onions start<br />

to reduce and color (about 15-20 minutes).<br />

Add salt and pepper then turn heat to low<br />

and cover for 30 minutes. Add the sherry<br />

and cook another 30 minutes on low<br />

with lid on; add beef stock and continue<br />

reducing for 30 more minutes uncovered.<br />

Onions should have a deep brown color<br />

and be heavily reduced. Let cool then<br />

place a large spoonful on a crostini. Top<br />

with herbs of choice.<br />

Fire-Roasted Red Bell Pepper Dip<br />

• 12 oz. fire-roasted red bell<br />

peppers, drained<br />

• 4 tbsp. olive oil<br />

• 4 cloves garlic, chopped<br />

• 2 tbsp. balsamic vinegar<br />

• 3 tbsp. brown sugar<br />

• 2 oz. parmesan cheese,<br />

shredded<br />

• ¾ cup olive oil<br />

• 4 oz. goat cheese<br />

1. In a food processor, purée red bell peppers to a course<br />

consistency.<br />

2. Heat olive oil on medium-high heat and add chopped garlic.<br />

Sauté for 2 minutes. Add bell pepper mixture and sauté for 8-10<br />

minutes. Add vinegar and brown sugar and continue to sauté<br />

for another 8 minutes or until liquid is reduced by half. Add<br />

parmesan cheese. Continue to cook for 5 more minutes. Once<br />

the cheese is melted in, pour dip into serving bowl.<br />

3. In a small fry pan, pour in ¾ cup olive oil. Once hot, add thick<br />

slices of goat cheese. Splash oil on top of cheese to warm and<br />

melt it. Once cheese is “cooked,” about 1 minute, scoop the<br />

goat cheese and place on top of the dip in the middle of the<br />

bowl. Serve warm with pita chips or grilled pita bread.<br />
