<strong>Cypress</strong> Road, is available to rent to homeowners in the <strong>Cypress</strong> <strong>Point</strong>/<br />
Lake Estates Community. Details for rental include:<br />
• Rental fee of $100 (Full day) or $60 (Half day)<br />
• A $200 cash deposit is required<br />
• Available 9 AM to 12 Midnight (Full day) or<br />

You don’t have any kids? Are you a single parent? Same sex couple? An<br />
empty nester? This is not a problem, we place our students in all kinds of<br />
families!<br />
You’re not rich? Neither am I! Your exchange student comes with their<br />
own spending money and health insurance. All you provide is room/<br />
board and three meals a day. Oh and TLC…but that’s free. Live in the<br />
middle of nowhere? Small town? Not a big deal. Some kids prefer to get<br />
away from the hustle and bustle of big cities. The exchange students also<br />
do pretty well in small schools, as they usually get to be the center of<br />
attention and make friends rather quickly. Our students also get chances<br />
to travel to New York, Washington DC, Hawaii and California…so they<br />
can get their fill of the city life and return back to the peaceful sounds of<br />
nature. Do you consider yourself a boring person? More than likely this<br />
is not true and you should quit being so hard on yourself. Your student<br />
will make friends. Your student will meet other exchange students. Your<br />
student will attend activities offered by our program. Your student will<br />
get involved in sports and school clubs. Your purpose is not to entertain<br />
them. But you might find that you bring a little adventure to each others<br />
lives. Kids are too young? Great! Lots of students love young kids and<br />
your kids will love them. It’s beneficial to introduce your kids to new<br />
cultures at a very young age. You’re preparing them to accept people no<br />
matter what the religion, color of their skin or language they speak. That<br />
my friend, is good parenting. Don’t hold back! This is a gret experience for<br />
both parties. You get the opportunity to change a child’s life. You get the<br />
satisfaction of seeing them grow, even after they leave your home into<br />
becoming a doctor, a lawyer, a diplomat, artist, teacher…the list goes on.<br />
And you contributed to that success! And the best part of it all, is you gain<br />
another family member for life. We need people like you to give these<br />
kids a chance.<br />

Guest speaker, Josh Bleill will share his story of survival after a bomb<br />
exploded under the vehicle he was riding in while serving in Iraq. The<br />
events of September 11, 2001 inspired Josh to follow in his father’s<br />
footsteps joining the Marines. In 2006, he deployed to Fallujah, Iraq.<br />
Through two years of recovery, Josh discovered life begins when we<br />
embrace our bad days and keep going forward, one step at a time.<br />
Sponsorships and tickets are available for Salute to Our Heroes. Tickets<br />

Spaghetti Squash<br />
You could make this on National Spaghetti Day <strong>January</strong> 4th! Everyone is<br />
trying to be a little healthier these days, so instead of a pasta spaghetti,<br />
try using spaghetti squash:<br />
DIRECTIONS:<br />
1. To start, cut your squash in half lengthwise. This is definitely the hardest<br />
part of making spaghetti squash, but with a sharp chef’s knife and some<br />
determination you’ll do just fine.<br />
2. Remove the seeds. Drizzle the cut sides with olive oil and season with<br />
salt and pepper. Flip the squash cut-side down on a baking sheet.<br />
3. Pop it in a 400°F oven for 40 minutes. Depending on the size of your<br />
squash, this could take more like an hour. If 40 minutes have passed and<br />
you’re not sure if the squash is ready, pull it out of the oven and drag the<br />
tines of a fork on the cut side. If spaghetti-like strands easily release from<br />
the skin, it’s ready. If not, continue baking and check on it every 5 to 10<br />
minutes. Over-roasting can lead to soggier “spaghetti,” so it’s best to keep<br />
a close eye on the squash.<br />
4. Shred it! When it’s ready, let cool slightly before creating “spaghetti”<br />
with your fork.<br />
Top with spaghetti sauce or for an even healthier and lower calorie<br />
option, go with a marinara sauce.<br />

Gardening Tips<br />
• Birds: Provide food and fresh water. More birds die from lack of water<br />
than from lack of food.<br />
• Cacti: Semi-dormant now. Reduce watering.<br />
• Camellias: Plants may be moved. Pick up and discard fallen blooms.<br />
• Cultivation: Changes in design may now be made, new beds dug and<br />
old ones rebuilt. Correct defects in drainage. Incorporate gypsum into<br />
heavy soils: repeat in three weeks. Dig granite dust, rock phosphate<br />
and quantities of organic matter into soil. Allow time for settling before<br />
planting.<br />
• Fertilize: Daylilies, spuria, Louisiana and bearded irises with complete<br />
fertilizer. Give strawberries 1 teaspoon ammonium sulfate, keeping six<br />
inches away from plant. Fertilize pansies with manure tea or blood meal.<br />
Water in.<br />
• Fruits: Plant fruit trees. Mulch figs with grass or straw to prevent freeze<br />
damage to crown.<br />
• House Plants: Water, when surface soil is crumbly dry. Wash dust off<br />
leaves to open pores. Mist often. Inspect for diseases and insects. Reduce<br />
water for poinsettias.<br />
• Lawns: Remove thatch aerate, and feed with low nitrogen mixture.<br />
• Pests: For petal blight prevention, spray azaleas and camellias as flowers<br />
open. Spray for scale with dormant oil solution if temperature will<br />
be above 35˚ and below 85˚ for next 48 hours. Always read and heed<br />
manufacturer’s directions before spraying.<br />
• Propagation: Ivy cuttings root easily this month and next. Root cuttings<br />
of shrubs in mixture of loam and coarse sand; keep damp and semishaded<br />
until rooted.<br />
• Prune: Fruit trees in advance of new growth. Prune to groom and shape.<br />
Do not remove too much. Remove dead wood from trees and shrubs<br />
before spring buds swell, but do not prune spring bloomers. Prune crape<br />
myrtles. Prune nandina and others of similar growth habit by cutting<br />
unwanted canes out at base of plant.<br />
• Roses: Annual pruning about the middle of February, just before the<br />
spring buds break. To prevent later appearance of disease in the old<br />
beds, keep garden clean of debris and weeds. Complete preparation of<br />
new beds for roses.<br />
• Transplanting: <strong>January</strong> is one of the best months to transplant woody<br />
plants, both evergreen and deciduous, especially trees. Energy will be<br />
expended on roots instead of foliage. Learn ultimate size and cultural<br />
needs of tree or plant before buying. Consider dwarf varieties to avoid<br />
crowding later. Group plants of similar cultural needs. Do not work wet<br />
soil. Assure good drainage. Keep plants moist.<br />
• Vegetables: Prepare beds, preferably raised for drainage, with about<br />
50% humus, including rotted manure.<br />
• Winter Protection: Expect freeze any time; plan for protection of tender<br />
plants. Water. Remove coverings, particularly plastic, when temperature<br />
rises. Protect low plants with dry leaves, pine needles or soil mulch, but<br />
remove when weather warms.<br />

1 cup (5-6 whole) strawberries, fresh or frozen<br />
1/4 cup milk of choice<br />
DIrections<br />
Place all 3 ingredients in a food processor and pulse for about 1-2 minutes.<br />
Scoop into bowl. ENJOY!!<br />
