INSPIRING QUOTES FROM
MARTIN LUTHER KING, JR.
Martin Luther King, Jr., American Leader, January 15, 1929 - April 4, 1968
Martin Luther King Jr.’s words have continued to resonate with audiences,
decades later. As the country prepares to observe Martin Luther King Day
on Monday, Jan. 16 th , here are some inspiring MLK quotes to remind us of
life’s daily challenges and accomplishments:
“Darkness cannot drive out darkness: only light can do that.
Hate cannot drive out hate: only love can do that.”
“Love is the only force capable of transforming an enemy to a friend.”
“I have decided to stick to love... Hate is too great a burden to bear.”
“Forgiveness is not an occasional act, it is a constant attitude.”
“An individual has not started living until he can rise above
the narrow confines of his individualistic concerns
to the broader concerns of all humanity.”
“If I cannot do great things, I can do small things in a great way.”
“If you can’t fly then run, if you can’t run then walk, if you can’t walk then
crawl, but whatever you do you have to keep moving forward.”
“Those who are not looking for happiness are the most likely to find it,
because those who are searching forget that the surest way to be happy is
to seek happiness for others.”
COMMON VITAMIN DEFICIENCIES
As we embark on the journey each day to eat and live better, take note of
the common vitamin nutrient deficiencies that are easily treated:
1. Calcium: Calcium is important for maintaining strong bones and
controlling muscle and nerve function. Signs of severely low calcium
include fatigue, muscle cramps, abnormal heart rhythms and a poor
appetite. Make sure you’re getting enough with at least three servings of
milk or yogurt a day. Other good sources of calcium are cheese, calciumfortified
orange juice and dark, leafy greens.
2. Vitamin D: This vitamin is also critical for bone health. Symptoms
of a vitamin D deficiency can be vague - fatigue and muscle aches or
weakness. If it goes on long term, a vitamin D deficiency can lead to
softening of the bones. To get enough vitamin D, have three servings
of fortified milk or yogurt daily eating fatty fish, such as salmon or tuna,
twice a week; and spend some time outside in the sunshine every day.
3. Potassium: Potassium helps the kidneys, heart and other organs
work properly. You could become low in potassium in the short term
because of diarrhea or vomiting, excessive sweating or antibiotics or
because of chronic conditions such as eating disorders and kidney
disease, according to the U.S. National Library of Medicine. Symptoms of
a deficiency include weight loss, muscle weakness, constipation and in
severe cases, an abnormal heart rhythm. For natural potassium sources,
consume bananas, whole grains, milk, vegetables, beans and peas.
4. Iron: Iron helps your body make red blood cells. When iron levels get
too low, your body can’t effectively carry oxygen. The resulting anemia
can cause fatigue. You might also notice pale skin and dull, thin, sparse
hair. To boost iron levels, eat iron-fortified cereal, beef, oysters, beans
(especially white beans, chickpeas and kidney beans), lentils and spinach.
5. Vitamin B12: Vitamin B12 aids the production of DNA and helps make
neurotransmitters in the brain. With an increasing number of vegans
and people who’ve had weight loss surgery, vitamin B12 deficiency is
becoming more common. Symptoms of severe B12 deficiency include
numbness in the legs, hands or feet; problems with walking and balance;
anemia; fatigue; weakness; a swollen, inflamed tongue; memory loss;
paranoia; and hallucinations. You can get vitamin B12 from animal
sources: eat more fish, chicken, milk and yogurt. If you’re vegan, opt for
vegan foods fortified with B12, such as non-dairy milk, meat substitutes
and breakfast cereals.
6. Folate: Folate or folic acid, is a particularly important vitamin for
women of childbearing age, which is why prenatal vitamins contain such
a hefty dose. A folate deficiency can cause a decrease in the total number
of cells and large red blood cells as well as neural tube defects in an
unborn child. Symptoms of a folate deficiency include fatigue, gray hair,
mouth ulcers, poor growth and a swollen tongue. To get folate from food,
go for fortified cereals, beans, lentils, leafy greens and oranges.
7. Magnesium: Magnesium helps support bone health and assists in
energy production. Magnesium deficiency can cause loss of appetite,
nausea and vomiting, fatigue and weakness. In more severe cases, it can
lead to numbness, muscle cramps, seizures, abnormal heart rhythms,
personality changes or low potassium or calcium levels. To help your
levels return to normal, eat more magnesium-rich foods, such as almonds,
cashews, peanuts, spinach, black beans and edamame.
BRIDGELAND RUNNERS
FINISH SUCCESSFUL
SEASON AT STATE MEET
The Bridgeland High School girls’
cross country team placed eighth
overall in Class 6A with a team score
of 370 at the UIL Cross Country State
Championships, held Nov. 9 th at Old
Settlers Park in Round Rock.
Sophomore Cassidy Graham led the
female Bears with a time of 18:27.79 to
finish 28 th overall. Sophomore Allison
Millan placed 64 th overall with a time of
18:57.88, while sophomore Madeleine
Wilson finished 78 th overall with a time
of 19:05.60. Junior Athena Reyna finished
85 th overall with a time of 19:11.73 and
sophomore Elisa Grillo finished 100 th
overall with a time of 19:29.03. Senior
Haley Williams and freshman Brooke
Hensley rounded out the Bear’s state
meet with times of 19:36.41 and 19:42.89,
respectively.
“The girls had a fantastic season,” said
Tom Kennedy, Bridgeland girls’ cross
county head coach. “They swept the
district titles with two perfect scores,
advanced to the state meet and placed
eighth overall in Texas. We also have
our first collegiate signee with Haley
Williams singing to compete for St.
Edwards University. I’m very proud of
their hard work over the summer and
throughout the season as it enabled
them to accomplish these feats. We’re
looking forward to what 2020 will bring
with their performances in track and
cross country.”
In the 6A boys’ division, Bridgeland junior Randy
Smith was the only male from CFISD to compete at
the state meet, finishing 37 th overall with a time of
15:32.21, a new personal record.
“To be in the top 40 at the Texas 6A state meet
as a junior is an outstanding achievement,” said
Kevin Waters, Bridgeland boys’ cross country head
coach. “We talk a lot about following our process,
commitment, hard/smart work and smiling all year
Elisa Grillo
long on our team - and all 58 members of the team
were smiling from ear to ear when they found out that
Randy placed 37 th and ran a personal record. Randy ran
a smart and savvy race on a course that he had never
run before, which is a testament to his preparation and
commitment to the process and a metric ton of heart
and determination. Randy is our version of ‘Lewis and
Clark’ by being the first male Bridgeland Bear to go to
state. He has made it possible for the entire team to
get there and to compete for a team title in the future.”
RECIPE FOR HEALTHY CHILDREN
TEACH .... Your Children to Deal with Peer Pressure
Parents usually value children who try to please and are obedient.
Parents may not realize that learning to disagree with someone and to
make independent decisions starts at an early age. Decision making is
an important skill to teach your children. If children have been taught
never to disagree with anyone, parents may need to help them practice
saying “no” to their friends. Being able to say “no” in every day activities
and express their opinion helps children say “no” to alcohol and drug use.
MAKE.... Family Rules: Develop family rules about the use of alcohol,
tobacco or other drugs. Make it clear to children in the family that
they may not drink alcohol, smoke cigarettes or use any other drugs.
When children break any family rules, provide reasonable, appropriate
consequences. Be careful about using severe punishments for small
incidents of misbehavior. Punishment becomes ineffective when it is
over used.
PROVIDE .... Healthy Creative Activities: Participate in hobbies, school
events and family activities with your children. Sharing fun strengthens
bonds between children and parents. Plan your times together carefully.
If all of your fun activities focus on movies, theme parks or sports events,
you and your children will give your attention to the activity rather than to
each other. Simple activities like taking walks together, reading together
or sitting around the kitchen provide time to focus your attention on the
children. Children who are left alone or who are lonely and bored will seek
friends, acceptance and stimulation with others who may influence them
to participate in harmful activities.
TEAM UP .... With Other Parents
Join other parents to keep track of where your children are, who they are
with and what they are doing. When parents form a “safety network” with
other parents, it’s much harder for kids to become involved in undesirable
activities. Tell your neighbors and the parents of your children’s’ friends to let
you know if they see your children doing something they shouldn’t be doing.
TALK ... With Your Children About Alcohol and Other Drugs
Let your children know that not everyone drinks, smokes or uses drugs.
MOST people do not use mind altering chemicals. It’s OK not to use alcohol
or drugs. Point out that anyone under age 21 is still growing physically
and that alcohol and other drugs will harm the developing body.
LEARN .... To Really Listen to Your Children
Turn off the TV. Stop what you’re doing. Give your children your full
attention. Don’t interrupt, give advice or preach while your children are
talking. Ask questions to help clarify their thinking.
HELP .... Your Children Feel Good About Themselves
Your children will feel good about themselves when you praise efforts
rather than accomplishments. Correct behavior by criticizing the
behavior rather than the child. Remember, if you tell children they are
“bad, ugly, mean, naughty, dumb,” etc., they will think of themselves that
way and act the way you have described them.
LEAD .... Your Children to Develop Strong Values
Develop family standards about the kinds of behavior that are expected
of family members. Decide what you family stands for and refer to “our
community” and what “we believe” and how “we handle problems.”
BE ....A Good Example For Your Children
Your behavior, habits and attitudes about alcohol and other drugs make a strong
impression on your children. In homes where children do not know whether
their parents approve or disapprove of the use of alcohol or other drugs, children
are likely to assume that their parents accept the use of those substances.
KNOW .... What to Do If You Suspect a Problem: If the use of alcohol or other
drugs creates any kind of problems for your family, call one of the councils on
alcohol and drug abuse listed. Most provide free counseling.
NATIONAL BLOOD DONOR MONTH
The American Red Cross urges people to share their good health and
resolve to give blood regularly, beginning in January with National
Blood Donor Month. Below are key messages that can be relayed to
donors while scheduling appointments.
• Extreme winter weather in some parts of the country and seasonal
illnesses often make it difficult for the American Red Cross to maintain a
sufficient blood supply at this time of year. Healthy individuals are urged
to give now.
• The Red Cross must collect more than 13,000 blood donations every day
for patients in need.
• Do you know someone who has never donated before? Please encourage
them to make an appointment with you. Without more donors, patients
will not have the blood they need.
• Type O negative is the universal blood type and what emergency
personnel reach for in trauma
situations when there isn’t time to determine a patient’s blood type.
• Type O positive is the most transfused blood type and can be transfused
to Rh-positive patients
of any blood type.
• Types A negative and B negative can be transfused to Rh-positive or
negative patients.
• Save time by using RapidPass® to complete your pre-donation reading
and health history online before you come to your appointment. Get
started at RedCrossBlood.org/RapidPass or by
using the Blood Donor App.
• For detailed donor eligibility questions, please call 1-800-RED CROSS (1-
800-733-2767) or visit RedCrossBlood.org.
CARBON MONOXIDE (DANGER)
CARBON MONOXIDE (CO) gas in a sufficient amount can kill. Carbon
monoxide can be formed whenever fuels such as charcoal, gasoline,
kerosene, natural gas, oil, propane or wood are burned without a
sufficient supply of air for complete combustion.
Carbon monoxide: • Is colorless • Is odorless and tasteless
Carbon monoxide can be produced when:
• Appliances are not properly installed, maintained or used.
• Vent pipes become plugged with debris.
• Vent pipes have gaps, leaks, spaces or are rusted through.
• Too many appliances are vented to one vent pipe.
Carbon monoxide poisoning can cause collapse or death.
Symptoms may include: • Headaches, dizziness and nausea.
Should you notice any of these symptoms, get some fresh air immediately
and seek medical help. If you suspect problems with your appliances, call
your local gas appliance dealer or gas company.
MORE MONEY, NO PROBLEMS!
STAY DISCIPLINED WITH YOUR SAVINGS
• Just do it! Pay yourself first! • Gather all important financially-related
documents and receipts to a central location. File them so you will be
able to easily find the items you need in the future. Consider a computer
based financial program so you can keep track of every dime you spend
- financial control is a special form of power! • Spending every dime and
more? Start by cutting back on a few items per week and putting away
that money. Pay yourself first. Just say no to spending more than you have.
• Ask for direct deposit at work if they offer it - you’re saving money and
you don’t even see it. A savings plan at work that pays you a “matching
contribution” is the fastest way to save. Pay yourself first! • Use credit
cards responsibly make sure you can make the monthly payment. Ideally
pay the balance off each month. You will never have a late payment (now
as much as $75) and you will never pay interest to others at the very high
rates credit cards charge. • Financial freedom will be worth everything
you put into it. Don’t want to work forever – choose to save!
TOP SAVING MISTAKES
• Not modifying your spending habits and committing to save money.
• Not taking advantage of your company’s match in a 401 (k) plan or
January 2020 | Cypress South
getting involved in a defined contribution plan. • Not appropriately/
correctly allocating your assets to meet a specific goal or time horizon
(diversification is important). • Not setting a specific dollar target or
financial goal. • Not knowing how much you have, where you are spending
your money and how much you need to save for the future (failure to
plan for retirement). • Cashing out your retirement plan - should roll over
to an IRA or your new company’s retirement plan.
STILL ON THE FENCE ABOUT HOSTING AN
EXCHANGE STUDENT?
You don’t have any kids? Are you a single parent? Same sex couple? An
empty nester? This is not a problem, we place our students in all kinds of
families!
You’re not rich? Neither am I! Your exchange student comes with their
own spending money and health insurance. All you provide is room/
board and three meals a day. Oh and TLC…but that’s free. Live in the
middle of nowhere? Small town? Not a big deal. Some kids prefer to get
away from the hustle and bustle of big cities. The exchange students also
do pretty well in small schools, as they usually get to be the center of
attention and make friends rather quickly. Our students also get chances
to travel to New York, Washington DC, Hawaii and California…so they
can get their fill of the city life and return back to the peaceful sounds of
nature. Do you consider yourself a boring person? More than likely this
is not true and you should quit being so hard on yourself. Your student
will make friends. Your student will meet other exchange students. Your
student will attend activities offered by our program. Your student will
get involved in sports and school clubs. Your purpose is not to entertain
them. But you might find that you bring a little adventure to each others
lives. Kids are too young? Great! Lots of students love young kids and
your kids will love them. It’s beneficial to introduce your kids to new
cultures at a very young age. You’re preparing them to accept people no
matter what the religion, color of their skin or language they speak. That
my friend, is good parenting. Don’t hold back! This is a gret experience for
both parties. You get the opportunity to change a child’s life. You get the
satisfaction of seeing them grow, even after they leave your home into
becoming a doctor, a lawyer, a diplomat, artist, teacher…the list goes on.
And you contributed to that success! And the best part of it all, is you gain
another family member for life. We need people like you to give these
kids a chance.
STS Foundation is a 501(c)(3) organization whose mission is to place
exchange students in our area. If you are interest in hosting, please
contact me at 832-455-7881 or at vicki.stsfoundation@yahoo.com. I’ll be
happy to answer any question you might have and get you started on
hosting your very own student!
Spaghetti Squash
You could make this on National Spaghetti Day January 4th! Everyone is
trying to be a little healthier these days, so instead of a pasta spaghetti,
try using spaghetti squash:
DIRECTIONS:
1. To start, cut your squash in half lengthwise. This is definitely the hardest
part of making spaghetti squash, but with a sharp chef’s knife and some
determination you’ll do just fine.
2. Remove the seeds. Drizzle the cut sides with olive oil and season with
salt and pepper. Flip the squash cut-side down on a baking sheet.
3. Pop it in a 400°F oven for 40 minutes. Depending on the size of your
squash, this could take more like an hour. If 40 minutes have passed and
you’re not sure if the squash is ready, pull it out of the oven and drag the
tines of a fork on the cut side. If spaghetti-like strands easily release from
the skin, it’s ready. If not, continue baking and check on it every 5 to 10
minutes. Over-roasting can lead to soggier “spaghetti,” so it’s best to keep
a close eye on the squash.
4. Shred it! When it’s ready, let cool slightly before creating “spaghetti”
with your fork.
Top with spaghetti sauce or for an even healthier and lower calorie
option, go with a marinara sauce.
Single serving Healthy Homemade
Strawberry Ice Cream
Gardening Tips
• Birds: Provide food and fresh water. More birds die from lack of water
than from lack of food.
• Cacti: Semi-dormant now. Reduce watering.
• Camellias: Plants may be moved. Pick up and discard fallen blooms.
• Cultivation: Changes in design may now be made, new beds dug and
old ones rebuilt. Correct defects in drainage. Incorporate gypsum into
heavy soils: repeat in three weeks. Dig granite dust, rock phosphate
and quantities of organic matter into soil. Allow time for settling before
planting.
• Fertilize: Daylilies, spuria, Louisiana and bearded irises with complete
fertilizer. Give strawberries 1 teaspoon ammonium sulfate, keeping six
inches away from plant. Fertilize pansies with manure tea or blood meal.
Water in.
• Fruits: Plant fruit trees. Mulch figs with grass or straw to prevent freeze
damage to crown.
• House Plants: Water, when surface soil is crumbly dry. Wash dust off
leaves to open pores. Mist often. Inspect for diseases and insects. Reduce
water for poinsettias.
• Lawns: Remove thatch aerate, and feed with low nitrogen mixture.
• Pests: For petal blight prevention, spray azaleas and camellias as flowers
open. Spray for scale with dormant oil solution if temperature will
be above 35˚ and below 85˚ for next 48 hours. Always read and heed
manufacturer’s directions before spraying.
• Propagation: Ivy cuttings root easily this month and next. Root cuttings
of shrubs in mixture of loam and coarse sand; keep damp and semishaded
until rooted.
• Prune: Fruit trees in advance of new growth. Prune to groom and shape.
Do not remove too much. Remove dead wood from trees and shrubs
before spring buds swell, but do not prune spring bloomers. Prune crape
myrtles. Prune nandina and others of similar growth habit by cutting
unwanted canes out at base of plant.
• Roses: Annual pruning about the middle of February, just before the
spring buds break. To prevent later appearance of disease in the old
beds, keep garden clean of debris and weeds. Complete preparation of
new beds for roses.
• Transplanting: January is one of the best months to transplant woody
plants, both evergreen and deciduous, especially trees. Energy will be
expended on roots instead of foliage. Learn ultimate size and cultural
needs of tree or plant before buying. Consider dwarf varieties to avoid
crowding later. Group plants of similar cultural needs. Do not work wet
soil. Assure good drainage. Keep plants moist.
• Vegetables: Prepare beds, preferably raised for drainage, with about
50% humus, including rotted manure.
• Winter Protection: Expect freeze any time; plan for protection of tender
plants. Water. Remove coverings, particularly plastic, when temperature
rises. Protect low plants with dry leaves, pine needles or soil mulch, but
remove when weather warms.
You could make this on National Strawberry Ice Cream Day January 15th!
Ingredients
1 banana, frozen
1 cup (5-6 whole) strawberries, fresh or frozen
1/4 cup milk of choice
DIrections
Place all 3 ingredients in a food processor and pulse for about 1-2 minutes.
Scoop into bowl. ENJOY!!
