My first foray into the<br />

wonderful world of<br />

hot springs happened<br />

in 2009 at the Blue<br />

Lagoon in Iceland. At<br />

that time, the island<br />

nation was still relatively unknown. In fact,<br />

the day my flatmates and I drove to the majestic, paradisiacal pool, we were greeted with an<br />

empty parking lot and soaked all day with nary another soul in sight. Being submerged in the<br />

warm, mineral-laden waters with a lunar-like landscape surrounding us was seriously surreal.<br />

The only thing missing? A significant other by my side. Luckily, my hot spring date came a<br />

decade later when my husband and I took a dip together in one of Japan’s myriad onsens. And<br />

yes, it was as steamy as it sounds!<br />

Simply Bubbles<br />

Amador County recently welcomed its first ever<br />

champagne and sparkling wine bar, Simply<br />

Bubbles, to 35A Main Street in Sutter Creek.<br />

Nestled in a scenic setting, they offer patio<br />

seating, bubbles (by the flight, glass, or bottle),<br />

beers on draft, a monthly signature cocktail, and<br />

more.<br />

El Dorado Winery Association is planning<br />

to bring a wine center to 304 Main Street in<br />

Placerville, which will house tasting rooms<br />

over the weekend and act as a private event<br />

venue for various wineries. Opening date is<br />

slated for spring.<br />

Keep an eye out for Reset: Café by Day in<br />

Folsom, which is taking over the previously<br />

occupied space of The Cellar Wine Bar in<br />

Historic Folsom. During the day, the cafe will<br />

serve coffee, and at 4 p.m., they’ll hit “reset” and<br />

turn into a bar with wine and beer.<br />

Fran Christensen<br />

“It thrills me when students say ‘I didn’t<br />

know I liked an ingredient,’” says Fran<br />

Christensen. “It’s usually a vegetable.”<br />

Christensen knows a thing or two<br />

about what kids like. Since 2007, she’s<br />

been teaching local students in grades<br />

1-4 how to slice, dice, measure, and mix<br />

while making nutritious meals. She’s also<br />

the author of Cooking with Mrs. C—a kidfriendly<br />

cookbook that focuses on recipes<br />

families can make together in under an<br />

hour, with information on kitchen safety,<br />

skills, and instructions for parents or older<br />

children to easily implement the recipe.<br />

In addition to teaching, Christensen is<br />

active in her community’s Christian-based<br />

Heritage Hope group and volunteers with<br />

El Dorado County Sheriff’s STAR program.<br />

Christensen began teaching an afterschool<br />

enrichment program following her<br />

career as a food broker. She realized the<br />

importance for children and adults to learn<br />

the “basics” in cooking with an emphasis<br />

on adapting recipes for dietary restrictions<br />

and using foods already on hand.<br />

Despite being a successful author,<br />

Christensen continues to teach children<br />

how to be kitchen savvy. “The one rule I<br />

have in my classes is that I never want to<br />

hear ‘eww, I don’t like that!’” she says. “I<br />

tell them the food [will] taste completely<br />

different the way they’re going to prepare<br />

it, and all I ask is that they try it.”<br />

Gardens helped feed the<br />

country during World War II.<br />

Then, fruits and vegetables<br />

tucked into found spaces in<br />

yards and rooftops supplied<br />

more than a third of the<br />

nation’s produce. Today, with<br />

nearly 20% of California families unable to afford<br />

or obtain adequate food, according to Department<br />

of Agriculture data, the nonprofit Soil Born Farms<br />

in Rancho Cordova is reprising the idea of these<br />

edible landscapes as a means of addressing local<br />

hunger, reducing food waste, and improving<br />

health. “Our purpose,” says Shannon Hardwicke,<br />

youth education manager, “is to connect food,<br />

health, and the environment. We want to give<br />

people the desire to grow their own food in their<br />

own space.” As with Victory Gardens, that space<br />

doesn’t need to be large. Fruit trees can replace<br />

shade trees, Hardwicke suggests, and vegetables<br />

can be grown in containers on a patio.<br />

Soil Born cultivates crops and educates and nourishes consumers at a 55-acre<br />

historic ranch inside the American River Parkway. Sacramento County Regional Parks<br />

owns the farm land, and Soil Born Farms Urban Agriculture and Education Project<br />

steward it. The parcel includes acreage for organic farming; bee, butterfly, and nativeplant<br />

gardens; riparian habitat; and facilities for instruction and interpretation. Monday<br />

through Saturday, staff welcomes visitors to explore the gardens or learn how to prepare<br />

fresh food, cultivate herbs for health, and understand the natural environment. Some of<br />

• Farmstand. Every Saturday, from early April through mid-December, and a handful of<br />

Saturdays during winter, the farm sells garden produce and related wares, as well as<br />

products from other local growers, and offers visitors a fun outing with fresh pastries<br />

and fair-trade coffee, music, classes, and activities for both youngsters and adults. A<br />

winter Pop-Up Farmstand, featuring fruit trees and herbal medicines, is planned for<br />

<strong>February</strong> 8.<br />

• CSA (Community Supported Agriculture). Patrons can partner with Soil Born to<br />

receive boxes of organic vegetables weekly or biweekly for most of the year. Each box<br />

contains 8-10 fresh items.<br />

• Field Trips. Almost daily during the school year, Soil Born hosts classroom visits for<br />

about 1,500 students a year, Hardwicke says. The content and theme of each field trip<br />

varies by age and can be coordinated with the students’ curriculum.<br />

• School Gardens. Soil Born has helped 50 schools set up gardens at their sites and<br />

works weekly with 10 of them in locales with limited access to nutritious foods.<br />

Because no pesticides are used, kids can, and do, simply rinse and eat the vegetables<br />

from the ground. “It’s a dynamic, hands-on learning experience,” Hardwicke says. A<br />

survey of teachers last year indicated that gardening improved students’ skills—not<br />

only in course subjects such as math, art, writing, and social studies but in group<br />

work, leadership, and cultural awareness. Plus, Hardwicke adds, they learn to want<br />

healthier foods.<br />

Wayne Percival<br />

Creating realistic pieces<br />

depicting landscapes, barns,<br />

old buildings, and other<br />

nostalgic themes, retired Rocklin<br />

resident Wayne Percival works in a<br />

variety of mediums, including pen<br />

and ink, pencil, scratchboard, acrylics,<br />

and oils. “My favorite artist is Andrew<br />

Wyeth. I love his subject matter and<br />

technique,” shares Percival. “Some<br />

of my paintings are similar to his, and<br />

I’m flattered when anyone makes a<br />

comparison.” After his military career,<br />

one of Percival’s aircraft paintings was<br />

published by the Naval Institute Press.<br />

Additionally, a commissioned piece he<br />

did for the United States Marine Corps<br />

was later accepted into their museum<br />

in Quantico, Virginia. You can view the<br />

HLN: WHAT WERE YOUR EARLIEST<br />

EXPERIENCES WITH ART?<br />

WP: I’ve always loved to draw. As a child,<br />

I liked drawing cars and airplanes and<br />

tried to copy pictures in magazines. I<br />

started experimenting with pen and ink<br />

and watercolors in high school. My junior<br />

year, I worked for several weeks on a large<br />

pencil sketch of an old truck parked next<br />

to a barn. My art teacher entered it into a<br />

scholastic art contest, and I was a finalist.<br />

My senior year, I discovered scratchboard<br />

and produced several images using that<br />

technique. Later, I figured out how to add<br />

color to the images.<br />

HLN: HOW HAS YOUR ART<br />

PROGRESSED OVER THE YEARS?<br />

WP: After a deployment overseas in the<br />

Navy, I returned to civilian life and was<br />

accepted into ArtCenter College of Design<br />

in Pasadena, where I studied illustration.<br />

After graduating, I turned down a job<br />

offer at Hallmark, because it required<br />

moving to Kansas City. Unable to find<br />

employment as an illustrator, I found<br />

work in the transportation industry in Los<br />

Angeles. During the next three decades, I<br />

married and raised a family.<br />

HLN: NOW THAT YOU LIVE IN<br />

ROCKLIN, WHAT DO YOU ENJOY<br />

MOST ABOUT THE AREA?<br />

WP: After retiring, my wife and I moved<br />

to Placer County to be closer to family<br />

and are enjoying the region’s mountains,<br />

rivers, birds, and animals.<br />

WP: I enjoy sharing my work and<br />

hearing feedback; I hope it leaves a<br />

WP: I’ve made several trips to Grand<br />

Canyon National Park to visit my son<br />

who’s a park ranger there. Together,<br />

we’ve explored the back country, and I’ve<br />

WP: I joined the Society of Children’s<br />

Folsom City Zoo Sanctuary<br />

The Folsom City Zoo Sanctuary, which opened in 1963, functions more<br />

as a sanctuary than a zoo. While visitors are allowed like a traditional<br />

was added in 2002 to describe the zoo’s goal of sheltering animals that<br />

Your Guide to a Healthy Heart<br />

When healthy, the heart is an efficient, hard-working pump<br />

that beats 100,000 times a day, delivering oxygen and<br />

nutrients throughout the body, says Amparo Villablanca,<br />

preventive cardiologist and director and founder of the UC<br />

Davis Health Women’s Cardiovascular Medicine Program.<br />

However, heart disease is the leading cause of death for<br />

both men and women in the U.S., accounting for about one<br />

million deaths per year, Richard Florio, MD, Physician in Chief at Kaiser Permanente Roseville<br />

Medical Center tells us. “The lifestyle choices you make can go a long way in preventing heart<br />

disease,” he says.<br />

Since <strong>February</strong> is American Heart Month, we talked to local cardiologists and heart<br />

experts about risk factors, how to prevent heart disease, and what to ask your doctor to make<br />

sure you keep your ticker in tip-top shape.<br />

RISKY BUSINESS<br />

Nancy Luo, MD, FACC, advanced heart failure and transplant cardiologist for Dignity Health<br />

Heart and Vascular Institute and Mercy Medical Group, says non-modifiable risk factors<br />

include your age, sex, and family history of premature heart disease. Modifiable risk factors<br />

are high cholesterol, diet, weight, exercise, hypertension, diabetes, and smoking.<br />

Reetu Sharma, MD, cardiologist at Sutter Health Roseville and Go Red for Women<br />

Ambassador, says stress, depression, and lack of sleep are also risk factors. “You can change<br />

[your risk factors] with healthy dietary habits and regular exercise, but can’t change your age<br />

and family history,” she says.<br />

“The National Institutes of Health<br />

recommends at least two and a half hours<br />

of moderate activity each week (or 30<br />

minutes, five days a week),” Dr. Villablanca<br />

says. “For additional benefits, your goal<br />

should be 60 minutes of moderate<br />

to vigorous activity on most days of<br />

the week. Managing stress is also very<br />

important for heart health. I recommend<br />

finding something that relaxes you—like<br />

meditation, yoga, or reading—and doing it<br />

at least once every day.”<br />

AGE IS NOT JUST A NUMBER<br />

“Age is indeed a risk factor for heart disease;<br />

however, cardiologists are seeing [more]<br />

younger patients today than ever before.<br />

My youngest heart attack patient was 21,” Dr.<br />

Villablanca says. “Also, heart attack deaths<br />

are increasing in women under the age of<br />

50. Every age is the right age to prioritize<br />

heart health.”<br />

With that said, according to Dr. Florio,<br />

me lose weight? Which diet is best to<br />

control diabetes? Are my blood pressure,<br />

cholesterol, and sugar levels at target range?<br />

And if I have diabetes, am I being treated<br />

with diabetic medications that will help<br />

prevent future cardiovascular disease and/<br />

or help me lose weight?”<br />

George Fehrenbacher, MD, an<br />

interventional cardiologist with Sutter<br />

Roseville Medical Center, says if you think<br />

you might be at risk for heart issues, ask<br />

your doctor how to modify your risk<br />

factors. “If you’re having symptoms such as<br />

chest discomforts and shortness of breath,<br />

obtaining a physical examination, EKG, and<br />

bloodwork to look at the risk factors can be<br />

helpful,” he adds.<br />

about four out of five people who die of<br />

coronary heart disease are 65 years of age<br />

or older. “An 80-year-old with no other risk<br />

factors is still at a higher risk than a 40-yearold<br />

smoker with high blood pressure,”<br />

says Stanley Henjum, MD, cardiologist at<br />

Marshall Cardiology.<br />

Men are at increased risk of having heart<br />

disease starting at age 45, and women’s risk<br />

increases at 55 years old. “As we age, our<br />

heart and blood vessels undergo changes,<br />

such as the hardening of arteries, the buildup<br />

of fatty deposits in the arteries over<br />

many years, and the heart not being able to<br />

pump as fast while stressed or exercising,”<br />

says Brian Plante, ND, at Revolutions<br />

Naturopathic.<br />

HEALTHY HABITS<br />

Dr. Sharma says it’s important to make<br />

healthy choices on a daily basis, lowering<br />

your risk for heart disease. “Avoid smoking<br />

and drinking heavily. Take time for yourself<br />

for activities that bring you happiness and<br />

a sense of freedom; work on better sleep<br />

hygiene; and avoid getting sick, as the flu,<br />

pneumonia, and other infections can take a<br />

toll on the heart,” she says.<br />

Dr. Luo shares her motto to “sit less,<br />

move more,” as well as the benefits of the<br />

Mediterranean diet, which can reduce<br />

the risk of cardiovascular disease. “The<br />

Mediterranean diet features a wide variety<br />

of plant-based food including vegetables,<br />

fruits, whole grains, nuts, legumes, beans,<br />

herbs, spices, and olive oil. Foods eaten in<br />

moderation include fish, seafood, poultry,<br />

eggs, and dairy. Desserts and red meat are<br />

saved for special occasions.”<br />

Any sort of movement will benefit you,<br />

Dr. Henjum shares. “Just taking several short<br />

walks is sufficient; [in fact], studies show that<br />

vigorous exercisers aren’t at any less risk<br />

than walkers and no one form of exercise is<br />

better than another. Consistency of effort is<br />

what counts.”<br />

WHAT’S UP DOC<br />

Since more than 40% of Americans die<br />

from heart disease, it’s important to ask<br />

your doctor to evaluate your risk. Dr.<br />

Henjum says to ask about blood pressure<br />

and cholesterol and whether your physical<br />

fitness level is sufficient.<br />

Dr. Luo suggests asking questions<br />

such as, “What is an appropriate diet and<br />

exercise regimen for me? Which foods<br />

help my blood pressure? Which diet helps<br />

PREVENTION IS THE BEST MEDICINE<br />

Dr. Sharma says she’s always surprised with<br />

the lack of awareness of cardiovascular<br />

disease, even though it’s the leading killer<br />

in developed countries. “There is awareness<br />

of breast cancer, HIV, colon cancer, MS,<br />

Alzheimer’s, and so many other diseases,<br />

but somehow heart disease is the one that’s<br />

left out of this awareness campaign, and<br />

it continues to kill more people than all<br />

of the others combined.” And prevention<br />

does save lives. “Early detection is your<br />

best chance at a good outcome and a long<br />

and happy rest of your life. But if you don’t<br />

see your MD, have appropriate risk factor<br />

evaluation, periodical screening tests, and<br />

begin prescriptions early when something<br />

is amiss, you won’t defeat this greatest threat<br />

to your longevity.”<br />

Dr. Henjum says to pay attention to<br />

the ease or difficulty of normal everyday<br />

tasks, such as bringing in the groceries. “If<br />

it suddenly becomes difficult, speak with<br />

your doctor immediately. We get old in a<br />

decade, not overnight,” he says.<br />

Men and women should put their heart<br />

health first. “Women, in particular, tend to<br />

think of heart disease as a ‘man’s disease,’”<br />

Dr. Villablanca says. “This simply isn’t the<br />

case, as more women die of heart disease<br />

than all forms of cancer combined, and<br />

more women die of heart disease than<br />

men. The more we talk about heart health,<br />

the easier prevention becomes. We should<br />

all be having this conversation in our circles<br />

of friends and family, during National Heart<br />

Month in <strong>February</strong> and year-round.”<br />

Thankfully, the<br />

tech part of<br />

home design<br />

and electronics<br />

has come a long<br />

way from the box TV and floor<br />

speakers of yesteryear. Flat<br />

screens and panel TVs have<br />

become standard choices, but<br />

today's savvy hardware makers<br />

are taking a lot more into account<br />

than just the thinness of a TV and<br />

the fact that it can be mounted on<br />

a wall. The consumer electronics<br />

industry has already come to<br />

accept the idea that designers<br />

play a role in whether or not<br />

electronics are "allowed" into the<br />

home. Here are some top tips<br />

for getting your media solution<br />

designer approved.<br />

THE MIRROR TV<br />

1<br />

As TV technology has advanced, so<br />

has the size of TVs themselves. Fortunately,<br />

electronics manufacturers have stepped<br />

up to offer some great ways to conceal<br />

your TV. Our current favorite—and a big<br />

hit with “techier” clients—is the mirror TV.<br />

These are essentially two-way mirrors that<br />

attach to the front of your TV screen, and<br />

use electricity to change the surface from<br />

clear to opaque. This is an especially great<br />

option when mounting your TV above the<br />

fireplace. A few things to be aware of: You’ll<br />

need a stronger-than-usual wall mount to<br />

accommodate the weight of the mirror, and<br />

you’ll want to use a TV with a black frame as<br />

opposed to a silver frame, which will show<br />

through. Finally, make sure the TV you use<br />

has side- or down-mounted speakers.<br />

POP-UP CABINETS<br />

Running a very close second for<br />

concealed screens is the pop-up cabinet.<br />

Designers tend to love this option, as it<br />

preserves the mantle for more creative<br />

display ideas and allows you to choose a<br />

piece of furniture that complements the<br />

styles and tones you’re working with—<br />

ensuring the TV adds to the design of the<br />

space rather than detracts from it. You can<br />

purchase whole pop-up cabinets, work with<br />

your contractor to build a custom piece, or<br />

design a built-in wall unit that matches the<br />

rest of your built-ins. These work by using a<br />

small lift kit built into the cabinet—which is<br />

constructed with custom drawer, door, and<br />

shelf configurations—allowing the TV to<br />

rise from the unit at the touch of a button.<br />

ARTFUL TECHNOLOGY<br />

and furniture are slowly starting to blur.<br />

Our homes have begun to support and<br />

integrate into our daily needs and evolving<br />

lifestyles. Today’s residential spaces are<br />

technologically driven and “smart” with tech<br />

playing a supporting, background role. High<br />

customization and invisible technology<br />

that "lives" with us instead of distracts from<br />

us and our human interactions are becoming<br />

more and more popular. One of my favorite<br />

examples of this is Samsung’s The Frame—a<br />

television that blends seamlessly into the home<br />

and looks like a piece of framed art when<br />

turned off, having sensors that switch off the<br />

display when you leave the room.<br />

HIDDEN CORDS<br />

No matter how far technology has<br />

come—it still comes with too many cords. If<br />

you have the advantage of addressing cable<br />

management during construction, run the<br />

cords behind the walls whenever possible. But<br />

because we all add components as technology<br />

advances, we find the baseboard system is a<br />

great solution, as it allows you to run cable<br />

in the wall where you can and bring it out of<br />

anyone’s eyeline near the floor, since it runs to<br />

outlets or to your A/V closet.<br />

BUILT-IN A/V CLOSET<br />

To keep the sleek, seamless look<br />

you’ve worked so hard to achieve, we really<br />

recommend a built-in media closet to store all<br />

those black boxes that used to clutter up the<br />

room. This is where you’ll store home theater<br />

processors, amplifiers, and source equipment<br />

like DVD players, Internet devices, and audio<br />

and video distribution equipment. These can<br />

be built into the wall in the location most<br />

convenient to the equipment—and the reach<br />

of your remotes. A flush, cabinet-style door<br />

for easy access with sufficient ventilation will<br />

address both your inner A/V and design geeks.<br />

Note: If at all possible, bring your contractor and a<br />

media installation specialist together as early in the<br />

process as possible. If you’re considering these options<br />

during initial construction or a major remodel, even<br />

better, as it’ll ensure access to the spaces and places<br />

you’ll need to maximize your options.<br />

Whether you prefer communing with<br />

nature in your birthday suit or escaping<br />

on weekend retreats, hot springs<br />

aficionados are in luck: Northern<br />

California is covered in them. While<br />

some have luxury resorts surrounding<br />

their waters, others are deeper into<br />

forests without any amenities (or even<br />

signage, for that matter). Here’s a<br />

roundup of our favorites within three<br />

Wilbur Hot Springs<br />

Wilbur Hot Springs falls somewhere<br />

between “hidden in the woods”<br />

and “lux resort.” The self-described<br />

sanctuary in Williams often hosts<br />

yoga retreats and wellness workshops<br />

around the mineral-rich springs,<br />

which range from 98 degrees up to<br />

109. There are covered and exposed<br />

springs, and guests can come for the<br />

Hunt is the furthest away hot springs on this<br />

list, but its location makes it an excellent<br />

add-on to a Mount Shasta or Lassen National<br />

Park trip. It’s also the most natural spring,<br />

with no amenities and very little human<br />

interference. After about a 10-minute hike,<br />

you’ll reach the small pools, a few of which<br />

have been built up with rocks. You’ll need to<br />

pack in and pack out everything you need<br />

for your visit, and be sure to download<br />

driving directions, as the dirt roads to the<br />

springs can be hard to find.<br />

There’s one fact you can count on in<br />

this current environment of over-thetop,<br />

gastro-fad dining: We love Italian<br />

food. In spite of the low-carb/keto diet<br />

phenomenon, Americans still eat Italian cuisine as<br />

often as once a week—likely more if you include<br />

pizza. Even with competition from large-chain<br />

establishments, family-owned trattorias have<br />

enjoyed long-term success in our area. With that in<br />

mind, I welcome—with fork in hand—the arrival of<br />

Florentine Trattoria in Roseville.<br />

Having dined here on a previous occasion, I was<br />

anxious to have their foccacia bread and cheese<br />

butter (the recipe is a wellguarded<br />

secret). The soft,<br />

warm, aromatic bread and<br />

secret cheese butter, with<br />

a glass of chianti, might be<br />

enough on most nights—<br />

but not this one. I followed<br />

with the prawns sorrento<br />

appetizer: six jumbo shrimp<br />

served in a light cream sauce<br />

composed of lemon, butter,<br />

and wine. “The sauce makes<br />

an excellent bread dip,” the<br />

menu states. Yes, it does,<br />

but don’t forget about those<br />

beautiful shrimp.<br />

For entrées, I sampled<br />

the gnocchi alla genovese<br />

and veal saltimbocca.<br />

“Everything is made inhouse,”<br />

said my server,<br />

and after my first forkful<br />

that became apparent. The<br />

gnocchi had the texture and<br />

flavor of an Italian nonna’s<br />

family recipe and was<br />

nestled in a fragrant, flavorpacked<br />

basil pesto sauce.<br />

is a dish of thinly sliced veal—either rolled and wrapped or laid<br />

flat—with prosciutto and provolone in a marsala sauce. The “bundle”<br />

is then coated with flour and lightly fried in olive oil. It’s my go-to<br />

Italian comfort food and Floretine Trattoria’s version was one of the<br />

best I’ve had. As the namesake alludes to, the tender slices of veal and<br />

provolone coated in the silky marsala sauce absolutely jumped into<br />

my mouth…repeatedly.<br />

and decided on the hazelnut<br />

tartufo: a perfect pick for a single<br />

serving. The sphere of hazelnut<br />

gelato with an espresso gelato<br />

center was coated in hazelnuts, not<br />

overly sweet, and the ideal ending<br />

to my mouthwatering meal.<br />

Brissa & Co. // I don’t even know where to begin. The décor? The<br />

authentic food? The friendly employees? When you walk into Brissa & Co. you<br />

immediately feel happy. The bright colors envelop the air and warm your heart.<br />

The menu makes you wish you could stay all day and eat…or drink. Maybe start<br />

with a breakfast burrito, machaca con huevo (shredded beef grilled with two<br />

eggs, pico, and your choice of fresh-made tortillas), or a horchata frappe (they<br />

have a full coffee bar brimming with Mexican-inspired beverages). The decision<br />

will be even tougher come lunch or dinnertime! From pozole, taco salads, and<br />

quesadillas, to street tacos, burritos, bowls, tamales, and margaritas, the options<br />

are endless. After much deliberation (and holding up the line), I went with the<br />

steak fajita bowl—filled with flavorful carne asada, red rice, pinto beans,<br />

veggies, sour cream, guacamole, and queso fresco. Talk about muy bueno. My husband loved his pollo asado burrito<br />

that was chock-full of grilled chicken, cheese, red rice, and pinto beans. Now let’s talk bakery! The conchas—cooked inside<br />

a pink, concha-shaped oven that you have to see to believe—are as colorful as the restaurant. A streusel-like shell gives way<br />

to a sweet, doughy roll that’s seriously scrumptious. The extensive selection of sweets also includes flan, cookies, cocadas,<br />

In a large mixing bowl, combine the<br />

Parmesan and Asiago cheeses with<br />

the garlic. Stir in the scallions. Add the<br />

oregano (rubbing it between your fingers<br />

over the bowl to release the flavor), red<br />

pepper flakes, 1 cup of the olive oil, and<br />

black pepper. Stir. If mixture seems dry,<br />

add more olive oil by the 1/4 cup. Cover and<br />

let stand at room temperature for at least<br />

5 hours before serving. Enjoy with crusty<br />

bread and crackers or spoon over pasta<br />

the next day. Note: Will keep refrigerated<br />

for 2 weeks.<br />

• 8 oz. cream cheese<br />

• 1 cup cooked chicken breast,<br />

shredded or cubed<br />

• 1/2 cup buffalo wing sauce<br />

• 1/2 cup ranch dressing<br />

• 2 cups Monterey Jack,<br />

shredded<br />

Preheat oven to 250. Spread cream cheese in shallow baking<br />

dish. Layer with chicken, wing sauce, and ranch dressing.<br />

Sprinkle with cheese. Bake uncovered for 20 minutes, or until<br />

cheese is melted. Serve with chips.<br />

Preheat oven to low-medium broiler setting.<br />

Roast chiles (on a grill, over a gas burner, or in an oven<br />

on broil) until the skin is blackened and blistered on all<br />

sides. Place in a heatproof bowl and cover tightly with<br />

plastic wrap for at least 10 minutes (to allow the steam<br />

from the still-hot chiles to loosen their skin). Slide the<br />

skins off with a dishtowel, remove the stem and seeds,<br />

and cut into ¼” wide strips.<br />

Cook onions in a sauté pan with a dash of oil over high<br />

heat until slightly softened but still somewhat crisp,<br />

about 2 minutes.<br />

Cook chorizo in a pan over medium heat, stirring<br />

frequently, until cooked through. Strain off and discard fat.<br />

Layer chiles, onions, and chorizo in a 12”-wide, shallow<br />

earthenware pot or cast-iron skillet, forming a thin<br />

base. Cover with shredded cheese and place in the<br />

broiler for approximately 5 minutes or until the cheese<br />

is hot, bubbly, and golden brown on top. Serve with<br />

warm tortillas, tortilla chips, or crudités.<br />

*Can be made vegetarian with the exclusion of chorizo<br />

or by using soyrizo.<br />

tested my DNA in 2016<br />

with ancestry.com. Firstly,<br />

it confirmed much of where I suspected<br />

my family is from—Ireland, England,<br />

Scotland, Italy, and Germany—and<br />

showed other connections of people I<br />

know or remember as being “family.”<br />

Most interesting, though, was my<br />

cousin alerting me to a high-level hit in<br />

the system that read: “close relative, first<br />

cousin.” Intriguing, to say the least. My<br />

parents had a total of four siblings, and I<br />

know all of my family, including cousins.<br />

Well, at least I thought I did.<br />

Fortunately, this person left me a<br />

message. She told me she was adopted<br />

shortly after birth and didn’t know her<br />

biological father but knew his name,<br />

address, and workplace at the time she<br />

was born. The names were “redacted”;<br />

however, there are ways to see the<br />

redacted information if you really try.<br />

So, here I<br />

was reading this<br />

information on a<br />

Tuesday afternoon<br />

in my office. Her<br />

father’s address<br />

at the time of her<br />

birth was 411 Adams<br />

Street, Linden, New<br />

Jersey. It stated<br />

that he worked<br />

at The American<br />

Insurance Company<br />

in Newark. Now, this<br />

information was<br />

close to being 60<br />

years old and the<br />

truth is, it’s difficult<br />

to find someone<br />

without a date of<br />

birth or death.<br />

Enter DNA. When<br />

your DNA matches others<br />

on the site it places them<br />

into your family tree. I have<br />

scores of people in mine<br />

now, most of whom I do not<br />

know. However, this particular<br />

connection was at the highest<br />

hierarchical level. I then<br />

looked at the DNA match<br />

analysis. Our shared DNA was<br />

1916cm across 47 segments<br />

versus a first cousin, whose<br />

shared DNA with me was<br />

910cm across 38 segments.<br />

(In genetic genealogy, a<br />

centimorgan or map uni is a unit of<br />

recombinant frequency, which is used<br />

to measure genetic distance.) This,<br />

combined with her birth father’s<br />

information—which was a house I grew<br />

up in—could only mean one thing.<br />

This was my sister.<br />

Needless to say, the following week was<br />

filled with emotion and wonder. Growing<br />

up an “only child,” I always wished I had a<br />

sibling and six decades later I found out I<br />

did. I have a sister named Melissa.<br />

My wife and I decided to take a trip to<br />

meet Melissa and her wife. I was excited<br />

and nervous. We met at a small Italian<br />

restaurant for lunch and when Melissa<br />

first stepped out of the car, I welled up<br />

from the emotion of it all.<br />

While I didn’t see a resemblance<br />

between us, I wondered as did my wife:<br />

is it nature or nurture? The four of us sat<br />

down to have lunch and talked about our<br />

families, what we do for a living, where<br />

we grew up—to which I was a little taken<br />

aback. Turns out we both grew up in<br />

central New Jersey, a mere 10 miles from<br />

one another.<br />

The most interesting moment of<br />

the day, however, came in the middle<br />

of lunch. I’m looking at my sister when<br />

an overwhelming sense of emotion hit<br />

me and brought tears to my eyes. Why?<br />

Because as clear as day, I saw my father’s<br />

face in Melissa’s, and it’s almost surreal.<br />

It’s a moment I’ll never forget. While all<br />

the DNA proof was there in black and<br />

white, at that moment I truly realized this<br />

woman really was my sister.<br />

After meeting Melissa and her lovely<br />

wife, Karen (who, thankfully, pushed<br />

Melissa to search for her birth parent and<br />

test her DNA), and thereafter having them<br />

over to our home in California, the nature<br />

or nurture question was answered. My<br />

wife, Melissa’s wife, and our children will<br />

tell you, it’s definitely nature. We’re alike in<br />

many ways and that’s the true wonder of it<br />

all. Most noticeable is our sense of humor.<br />

We began needling each other almost<br />

from the start.<br />

I feel blessed to have found Melissa<br />

after all this time. A year later, and I still sit<br />

here in awe. When I was a child, I dreamed<br />

of having a brother or sister. Dreams can<br />

and do come true.<br />
