ANNUAL GENERAL MEETING<br />
As we are required to hold a members meeting each year it cannot be postponed indefinitely so at the May Board meeting the decision was taken<br />
to hold the meeting on <strong>August</strong> 18 th in place of our regularly scheduled Board meeting. This meeting is your opportunity to meet your current Board<br />
members and to cast your vote for candidates to fill four positions on the Board. Two of these are currently held by Chris Cox and Bill Petry, both<br />
of whom are prepared to serve further terms if reelected. The other two for which at this point there are no candidates are the positions to fill the<br />
vacancies that will be left when our President, Ed Shipley, leaves the Board after our <strong>August</strong> meeting and the position that became available when<br />
Larry Barrow resigned from the Board. All owners of record will be receiving by mail the official notification in accordance with our Bylaws. This<br />
notification will also include a proxy/absentee ballot form for the use of anyone who is unable to attend the meeting in person. You may use this form<br />
to vote for a candidate or to assign your vote to another person who you choose to vote on your behalf or you can forego your vote and submit your<br />
proxy for quorum purposes only. In order to conduct the meeting we must have a quorum of our members so it is very important that if you cannot<br />
attend in person that you complete and submit your completed proxy/absentee ballot form in accordance with the instructions that will be included<br />
in the package. A blank proxy form can also be printed from the link on the homepage of our website and forms are also available at the pool checkin<br />
table. This meeting will be held in the clubhouse at 1602 Hoyt Lane on Tuesday, <strong>August</strong> 18 th . It will begin promptly at 7 PM following a 30-minute<br />
registration period.<br />
July YARD-OF-THE-MONTH<br />
The Yard of the Month Award for July <strong>2020</strong> is presented to Burton and Diane Balch of 22310 Bucktrout Lane.<br />
Burton and Diane have lived in the <strong>Settlement</strong> for 30 years and have been married for 43. They have two married sons and two 16 months old<br />
grandchildren who were born 10 days apart. Both of their sons attended <strong>Williamsburg</strong> <strong>Settlement</strong> Elementary now named Diane Winborn Elementary.<br />
Diane is an educator, employed as the registrar at Memorial High School in Spring Branch ISD. Burton is a Senior Principal Consultant for Aspen<br />
Technology where he has worked for 39 years. The Balches say they both plan to retire next year. Burton and Diane are active members at St. Peter’s<br />
Methodist Church. When time permits, they compete as ballroom dancers and were named outstanding amateur couple at two national competitions.<br />
They said that since neither of them are gardeners they opted for hardy, low maintenance plants that provide seasonal color. These they augment<br />
throughout the year with seasonal plants. Currently, caladiums and begonias offer a splash of red, azaleas and agapanthus bloom in the Spring giving<br />
way to crepe myrtles and plumerias in the summer. In the fall and early winter their ShiShi camellias begin to bloom and flower. Japanese boxwoods<br />
frame the other plants that accent their well-groomed yard.<br />
Congratulations Burton and Diane Balch on receiving the July <strong>2020</strong> Yard of the Month. The beauty you add to our neighborhood is greatly appreciated.<br />

PET ID TAGS<br />
Folks - as soon as the vet gives your young pets their Rabies shot<br />
remember to get their ID tags. The Rabies tag lists the name, phone<br />
number and address of the vet. So! All you need to do is put the Rabies<br />
tag onto the pet’s collar and leave it there all the time. That way, if the<br />
pet gets loose, anyone finding him or her can look at the tag to see the<br />
vet’s phone number and call to report the lost animal. Better yet, add<br />
another tag to your pet’s collar that lists the dog or cat’s name and your<br />
own phone number or address. You can get these from any pet store.<br />
When a pet has these but goes astray, anyone finding it can call you and<br />
you can go get him or her right away. Your pet will be very glad to see<br />
you! A happy pet is a loving pet.<br />

MINUTES OF THE MEETING OF THE BOARD OF DIRECTORS OF<br />
WILLIAMSBURG SETTLEMENT MAINTENANCE ASSOCIATION, INC.<br />
June 16, <strong>2020</strong><br />
A meeting of the Board of Directors of the <strong>Williamsburg</strong> <strong>Settlement</strong><br />
Maintenance Association, Inc. was held on Tuesday, June 16, <strong>2020</strong> at 5:30<br />
PM at the <strong>Williamsburg</strong> <strong>Settlement</strong> clubhouse, 1602 Hoyt, Katy, Texas<br />
77449.<br />
ATTENDANCE<br />
Board Members present were Dave Ellis, Jim Calvert, Ed Shipley, CO Holt,<br />
Bill Petry and Chris Cox.<br />
Also, in attendance was Cindy Bojé representing Crest Management.<br />
With a quorum being established, the meeting was called to order at 5:30<br />
PM.<br />
SECRETARY REPORT - APPROVAL OF MINUTES<br />
The minutes of the May 19, <strong>2020</strong> Board Meeting and the May 26, <strong>2020</strong><br />
Workshop Meeting were presented and a motion was made, seconded<br />
and unanimously carried to accept the minutes without change.<br />
HOMEOWNER CONCERNS<br />
Four homeowners were present to observe the meeting. There were<br />
comments regarding the renting of rooms in a home, security and deed<br />
restriction violations.<br />
SHERIFF PATROL REPORT<br />
CO Holt, our security liaison, presented the May security report. A copy<br />
of the monthly sheriff report was included in the meeting packets. CO<br />
informed those present that as the HOA sponsored security patrols<br />
terminated on May 31 st future security reports will be from the HCSO<br />
contract deputies and will be provided to the HOA by MUD 61 for<br />
publication to the residents.<br />
WELCOMING COMMITTEE REPORT<br />
As the welcoming of new residents was put on hold during the COVID-19<br />
pandemic there was no report to review this month.<br />
FINANCIAL REVIEW<br />
Dave Ellis presented a report of the May 31, <strong>2020</strong> financials. As of this<br />
date, the money in the bank totaled $913,128.23. This figure includes<br />
checking, money market accounts and CD’s, which are the funds required<br />
to cover both operating expenses and the necessary reserve to fund<br />
maintenance and replacement of the Association’s capital assets. The<br />
delinquency total as of May 31, <strong>2020</strong> was $21,600.26.<br />
OLD BUSINESS<br />
Decisions taken by email vote since the last meeting<br />
a) Approval of June 9, <strong>2020</strong> Pool Opening and use of HOA Waiver.<br />
b) Approval of replacement of Clubhouse Big Room HVAC System in the<br />
amount of $10,140.<br />
A motion was made, seconded and unanimously carried to ratify the<br />
above items voted on by the Board outside of a Board meeting.<br />
Report on Pool Opening - Dave Ellis reported that the opening of the<br />
pool has proceeded smoothly with attendance figures similar to those<br />
of previous years. On average, the pool is seeing daily maximum<br />
attendances of 20-45 residents. A-Beautiful Pools provides weekly<br />
reports of pool attendance each hour as well as a list of all residents who<br />
have signed the waiver. Chris Cox stated that A-Beautiful Pools appears to<br />
be doing a good job managing the pool and the lifeguards’ performance<br />
so far has been exemplary.<br />
KGI Wireless Variance Videoconference Hearing for 5G Antenna Pole on<br />
Colonial Parkway - The Board discussed the email message they received<br />
regarding the variance hearing being held at 9:30 AM on June 23, <strong>2020</strong>. It<br />
was stated that residents who oppose the installation may register their<br />
desire to present comments at the videoconference hearing by sending<br />
an email to Kathryn.Kase@cjo.hctx.net before 5 PM on June 22 nd .<br />
NEW BUSINESS<br />
Proposed Approach to Handling the Welcoming of New Residents - Dave<br />
Ellis introduced new volunteer, Kristin Gillogly. Kristin stated she would<br />
gladly volunteer and will recruit additional committee members to assist.<br />
Resident Deni McKay has already volunteered to join the welcoming<br />
committee. Dave Ellis will be the Board liaison and Jim Calvert who has<br />
been involved in supporting this activity in the past will be available<br />
to share his knowledge with the committee. The Committee will begin<br />
making contact with residents when it is considered safe to do so with<br />
July 1, <strong>2020</strong> as a target date.<br />
Scheduling of Annual Meeting - The Board discussed the need to hold<br />
the annual meeting. After a brief discussion, the annual meeting was<br />
scheduled for <strong>August</strong> 18, <strong>2020</strong> provided there is no major deterioration<br />
in the Coronavirus situation.<br />
Resignation of the officer position of President, by Ed Shipley - Ed Shipley<br />
resigned as the Board President to allow for a smooth transition of<br />
current Vice President CO Holt to the position of President in advance<br />
of the annual meeting. Ed will remain on the in the role of Vice President<br />
until the annual meeting at which he will resign from the Board.<br />
Clubhouse Acoustics - CO Holt stated he had researched some companies<br />
in the area and will begin to solicit proposals for the Board to review.<br />
ADJOURNMENT TO EXECUTIVE SESSION<br />
With no further business to come before the Board, the meeting was<br />
adjourned into executive session at 6:45 PM.<br />
Delinquencies - Four accounts remain on the trash suspension list.<br />
Deed Restriction Enforcement - Jim Calvert reviewed the Enforcement<br />
Action Report with the Board. There was no new action to be taken this<br />
month.<br />
Attorney Action Report - Jim Calvert reviewed the Attorney Action Report<br />
with the Board. There was no new action to be taken this month.<br />
ADJOURNMENT<br />
There were no homeowners present to hear a summary of the executive<br />
session. The next meeting will be held on July 21, <strong>2020</strong>.<br />
With no further business to come before the Board, the meeting was<br />
adjourned at 7:16 PM.<br />

STREET LIGHT OUTAGES<br />
To report a burned out streetlight, any resident may call CenterPoint<br />
directly at 713-207-2222. However, for those with Internet access, you may<br />
also make this report on-line. For those interested, you can go to http://<br />
cnp.centerpointenergy.com/outage. Then enter your contact details so that<br />
they can get back to you if more information is required. On the following<br />
page enter the details of the light(s) with the problem. Just as you would<br />
if reporting the outage via the telephone, you will need to provide the<br />
street address where the light is located and the 6-digit number that is<br />
prominently displayed on the front of the pole. Under normal circumstances<br />
the crew will be out to fix the problem within 7 working days.<br />
Anyone noticing a streetlight that is out or has some other malfunction is<br />
encouraged to report the problem to CenterPoint via either of these two<br />
methods without delay. Our Association is charged for every streetlight<br />
each month, irrespective of whether or not the light is functioning. So<br />
please help us get value for your hard earned money!<br />
WILLIAMSBURG SETTLEMENT<br />
CLUBHOUSE AND POOL RENTAL<br />
The Clubhouse is available for rental for non-profit activities to all<br />
residents in good standing with the Association<br />
• The fees are as follows:<br />
BIG ROOM RENTAL FEE:<br />
Up to 49 people - $50<br />
50-100 people - $75<br />
Plus a refundable security deposit:<br />
No alcohol served - $100<br />
Alcohol served or the attendance of 20 or more under the age of<br />
21 - $200*<br />
SMALL ROOM RENTAL FEE:<br />
Up to 20 people - $30 (Small Room is 17’ X 15’ and rental does not<br />
include kitchen)<br />
Plus a refundable security deposit of $50<br />
• *Note that when alcohol is served, two security guards must also be on<br />
duty. The requirement for two is mandated by the Sheriff’s Department.<br />
• The charge for the security guards, which is paid directly to the<br />
officers, is the responsibility of the resident requesting the rental. Also,<br />
if there are more than 20 young people between the ages of 13 and<br />
21 unaccompanied by their family members the Association requires<br />
one responsible adult for every 10 of these young persons to act as<br />
chaperones.<br />
• All deposits refundable upon passing the exit inspection.<br />
POOL RENTAL<br />
The pool is available for private parties during the swim season (only),<br />
subject to the posted pool rules and the following restrictions.<br />
During Pool Hours:<br />
• Only 1 group at a time.<br />
• Parties must be scheduled at least 2 weeks ahead of time using the<br />
Clubhouse Booking Form.<br />
• Parties held during open hours are restricted to 20 or fewer persons<br />
(adults and children) who will be entering the water and do not have<br />
their own pool tags and a total of not more than 60 persons in total<br />
within the pool area.<br />
• Parties that include a total of between 20 and 40 swimmers (i.e. including<br />
those who have their own pool tags) are required to hire one additional<br />
lifeguard.<br />
• Parties that include a total of more than 40 swimmers (i.e. including<br />
those who have their own pool tags) are required to hire two additional<br />
lifeguards.<br />

• The charge for the additional guard(s) will be $26 per hour with a<br />
minimum of 2 hours.<br />
• If at any time the number of swimmers in the water or the number of<br />
persons within the pool area (including regular pool users who are not<br />
members of the party) exceeds the limits that can be safely managed by<br />
the lifeguards on duty then the guards have the authority to ask some<br />
swimmers to leave the water or in extreme cases to close the pool.<br />
• Two responsible adults must be in the pool area at all times acting as<br />
chaperons to ensure the good behavior of all members of the party.<br />
• Party to be over and the area cleaned up by pool closing at 8 PM.<br />
After Hours:<br />
• Parties must be scheduled at least 2 weeks ahead of time.<br />
• Rental Fees: 1-49 people - $50; 50 plus - $75.<br />
• Private pool parties may only be scheduled on days on which the pool<br />
is open. The parties may start at 8 PM and must end, the area cleaned up<br />
and the facility vacated by the scheduled end of the party, either 10 or 11<br />
PM, as selected on the booking form. The lifeguards will clear the pool 15<br />
minutes prior to end time.<br />
• One responsible adult for every 10 persons under the age of 21 must<br />
be in the pool area at all times acting as chaperones to ensure the good<br />
behavior of all members of the party.<br />
• Lifeguards will be booked by the Association from the pool management<br />
company. There will be a minimum of 2 lifeguards plus an additional<br />
guard for every 25 persons in excess of 50 who will be entering the pool.<br />
The per-lifeguard hourly fee is $26.<br />
• The cost for the lifeguards will be added to the rental fee and will be<br />
payable by the renter to the Association at the time the booking is<br />
confirmed.<br />
• A $150 refundable deposit is required.<br />
For clubhouse and pool availability, refer to the Clubhouse Bookings<br />
page of the Association website www.wsmaonline.org and then to make<br />
a reservation, please complete the pool entries on the on-line Clubhouse<br />
Booking Form.<br />

VETERINARY PUBLIC HEALTH LEASH LAW<br />
Animals that are not properly restrained pose a threat to all our residents.<br />
While you may know your pet is friendly, an animal running at someone<br />
who is walking by is very scary for that person. Many children are afraid of<br />
animals and become frightened, which could result in the child getting<br />
hurt trying to avoid the animal.<br />
Veterinary Public Health (formerly called Harris County Animal Control)<br />

cat is not authorized to have, harbor or keep any unlicensed dog or cat or<br />

Restraint is defined as the control of a dog or cat under the following<br />
circumstances:<br />
1. When it is controlled by a line or leash not more then six (6) feet in<br />
length, if the line or leash is held by a human being who is capable of<br />
controlling or governing the dog or cat in question.<br />
2. When it is within a fully enclosed vehicle.<br />
3. When it is on the premise of the custodian and the animal does not<br />
have access to sidewalk to street.<br />
While it may be nice to have your animal out in the yard while you work<br />
or play, it is against the law, unless the animal is properly restrained.<br />

our residents by being responsible pet owners. This will not only protect<br />

RESIDENTS TO JOIN <strong>2020</strong> WALK TO END ALZHEIMER’S®<br />
Participants will Raise Critically Needed Awareness and Funds for<br />
Alzheimer’s Care, Support and Research. The Alzheimer’s Association®<br />
is invitingKaty, Fulshear, Cypress, Richmond and other West Houston<br />
area residents to join the fight to end Alzheimer’s by participating in the<br />
Alzheimer’s Association Walk to End Alzheimer’s. The Walk will take place<br />
on Saturday, September 26, <strong>2020</strong>,at La Centerra Shopping Center in Katy,<br />
Texas. On walk day, participants will honor those affected by Alzheimer’s<br />
disease with Promise Flowers during the poignant Promise Garden<br />
Ceremony - a moving display of hope to represent the personal reasons<br />
participants join together to fight Alzheimer’s. This year’s challenge is<br />
whether we will be able to come together of 1,300 walkers or not. So<br />
we have two plans - Plan A is to have the big event. Plan B is to have<br />
a virtual event that may be held in various neighborhoods, businesses,<br />
schools and other smaller communities where people can come together<br />
and Walk to End Alzheimer’s. In addition to the 3-mile walk, participants<br />
will enjoy a fun-filled experience that includes valuable information,<br />
celebrations, entertainment, corporate sponsors and so much more.<br />

Association has continued to offer support through various avenues than<br />

It’s summertime and that means it’s time to get out the camping gear, fishing<br />
poles and sun screen! There’s no better way to relax than to sit outside of the<br />
tent you just set up and breathe in.<br />
SAM HOUSTON NATIONAL PARK: NEW WAVERLY, TX<br />
This gorgeous national park offers tent pads, picnic tables, parking spurs<br />
for trailers, lantern posts, grills, potable water, and toilets. Hiking is very<br />
popular in the spring when the climate is milder. Water activities get<br />
going in the summer on Double Lake with canoes and paddleboats that<br />
can be rented from the park. Deer is the most popular game animal in the<br />
Sam Houston National Forest, with squirrels second. Quail and dove are<br />
found around newly regenerated timberland. For the water sportsman,<br />
fishing and duck hunting can be enjoyed on area lakes and streams.<br />
BRAZOS BEND: NEEDVILLE, TX<br />
This park has got plenty of options for activities during your stay. Lots<br />
of trails, some of which are even wheelchair friendly, wind through the<br />
woods and bring you to the water’s edge of the lake. Just make sure you’ve<br />
brushed up on your alligator safety because they’re not uncommon in<br />
certain areas of the park. Aside from walking or biking the trails, there’s<br />
also the option of horseback riding on one of the multiuse trails.<br />
LAKE CONROE KOA: MONTGOMERY, TX<br />
Here’s a KOA that’s got your back this weekend if you’re trying to relax<br />
to the max. Bring your RV here, up to 80’ and enjoy the cable tv, wifi,<br />
hookups and pools to lounge in all day. If you haven’t got an RV, don’t<br />
feel left out! You can stay in one of the 35 cabins that have bathrooms and<br />
a full kitchen. Tent campers are welcome as well. Visitors can explore the<br />
area and find the nearby golf course, restaurants and the lake has plenty<br />
of recreational activities.<br />
GALVESTON ISLAND STATE PARK: GALVESTON, TX<br />
This park is a freaking island, so as far as camping goes you really can’t<br />
go wrong with this option. There is hiking, biking, fishing, bird watching<br />
and lots more. One of the many things that make this island campground<br />
unique is the paddle trails they boast. Though, if you decide to go on these,<br />
you’ll need to bring your own canoe or kayak because they don’t rent them<br />
out. Outside the campground, there is an educational theme park called<br />
Moody Gardens. Bring the kids along and there’ll be plenty of nature for<br />
people of various interests to enjoy and participate in during the stay.<br />
STEPHEN F. AUSTIN STATE PARK: SAN FELIPE, TX<br />
This lovely State Park has six miles of hiking trails that are open to bikers<br />
as well. Campsites have full hookups and some sites even hold up to 60<br />

This park has 4,000 acres of marsh and a boardwalk going through so you<br />
can enjoy without getting your feet wet. Campers, cabin-dwellers and<br />
RV-goers all have a place here at Sea Rim State Park. Feel free to fish from<br />
the boardwalk or explore with your rented or own canoe or kayak. Sea<br />

of their campgrounds has over 4,000 acres of forest and a creek that you<br />
can go ahead and explore the trails winding around through it on your<br />
horse, bike or on foot. The other area available for camping is restricted to<br />
primitive camping only because it is located on a preserve. Lastly, the land<br />
institute is a great educational place for kids and adults alike. Check out<br />
their website if any of these interest you and start planning a trip!<br />
LAKE SOMERVILLE: SOMERVILLE, TX<br />
The campground and park are also full of opportunities for fun in the sun.<br />
Water activities like swimming, skiing, fishing, and the likes are all great<br />
ideas on Lake Somerville. There are picnic areas for campers or day hikers<br />
to sit, enjoy the view, and munch on their sandwiches. Birdwatching,<br />

SHELDON LAKE STATE PARK: HOUSTON, TX<br />
Sheldon Lake State Park is open to fishing and wildlife observation. You’re<br />
welcome to take your boat out for a ride or fish off the banks, so long as<br />
you’re wary of the alligators inhabiting the park. The learning center has<br />
tons of activities for the kids that you can sign up for and enjoy. Some<br />
of these activities are more hands-on, like catch and release fishing<br />
and some are visual demonstrations like green building technologies<br />
or smart wildscape demonstrations for gardening and using beautiful<br />
native plants.<br />
BASTROP STATE PARK: BASTROP, TX<br />
A forest with a history and personality, the Lost Pines located on Bastrop<br />
State Park used to be a luscious and well-groomed forest before being<br />
damaged by floods and fires. Now, the forest’s recovery is just as beautiful<br />
a sight. The story itself is a perfect reason to visit, but Bastrop also has<br />
swimming, biking, hiking and geocaching as an incentive. If you’re<br />
looking to exploring the surrounding area, Bastrop also has museums<br />
and restaurants to check out on your vacation!<br />
BUESCHER STATE PARK: SMITHVILLE, TX<br />
Experienced bicyclists looking for a challenge will enjoy the bike trails<br />
here at Buescher State Park. This park connects with Bastrop State Park via<br />
a paved road with great views of the area. Unfortunately, there is currently<br />
no swimming in this park, but if you adventure the short commute to the<br />
nearby Bastrop you’ll find a nice swimming pool for visitors like yourself.<br />
Lastly, if you’re hankering to float along in a tandem kayak or a canoe, you<br />
can do so through rental at Buescher State Park.<br />
LOCKHART STATE PARK: SMITHVILLE, TX<br />
This park has a pool, grounds for camping, trails to hike and a nine-hole<br />
golf course among many other things that allow you to get active! If you<br />
want to go fishing but don’t want to lug around your equipment, you’re<br />
in luck! The park has fishing equipment available for guests to use during<br />
their stay. If you’re looking to have a gathering of people for a family or<br />
church event, there is a Group Recreation Hall that also has a kitchen<br />
capable of holding up to 75 people at once.<br />
LAKE LIVINGSTON: LIVINGSTON, TX<br />
If you’re looking for a beautiful place to host a family reunion, try looking<br />
here! Campsites have full hookups and there are rentable screen shelters<br />
as well. As long as you’re wary of the alligators that dwell in the area,<br />
visitors can enjoy camping, hiking, birding, swimming, and biking. On<br />
your way in and out you can stop at the souvenir shop that sells treats<br />
and equipment!<br />
LAKE LIVINGSTON KOA: ONALASKA, KOA<br />
Here’s a popular KOA that you’ll probably need to make a reservation for<br />
ahead of time to ensure you get yourself a spot for the night. There is<br />
a beautiful pool with lounge chairs for you to relax and sink into while<br />
soaking in the sun. Your kids will enjoy the playground. If you love<br />
enjoying the great outdoors and its many inhabitants, there is a local bald<br />
eagle named Eddie who supposedly flies around the area frequently.<br />
There is also fishing, a pavilion to admire the scenery in, and is known for<br />
the sunset views.<br />
VILLAGE CREEK STATE PARK: LUMBERTON, TX<br />
Campers interested in sleeping in tents, RVs or cabins are welcome here.<br />
You’ll be able to go swimming, fishing, biking, hiking and more with your<br />
friends and family. If you prefer to learn about your surroundings and its<br />
history rather than being emerged in the real deal, there are programs<br />
and museums aplenty for you to observe and glean information from<br />
during your stay.<br />
PALMETTO STATE PARK: GONZALES, TX<br />
This little oasis has a multitude of thirsty plants that cannot live in other<br />
areas due to the lack of water. The park is named for the dwarf palmettos<br />
that grow beneath the trees. As a visitor, you can also enjoy the copious<br />
amounts of flowing and stagnant water by swimming, tubing, fishing<br />
and canoeing. Those interested in keeping dry will enjoy bird watching,<br />
hiking, geocaching or staring at the dwarf palmettos.<br />
VICTORIA COLETO CREEK LAKE KOA: VICTORIA, TX<br />

Garden Tips For <strong>August</strong><br />
• Time now to make plans for fall landscaping projects.<br />
• Clean up flowerbeds of fallen foliage, yellowed leaves and dead wood.<br />
Light green leaves may signify lack of iron (chlorosis). Correct with iron<br />
cheleates.<br />
• Cut off old dead foliage on irises. Scratch in a little bone meal around<br />
the roots.<br />
• Prune roses to reshape and groom plants for fall growth.<br />
• Wait until November to plant petunias and pansies.<br />
• Chinch bug damage is obvious now. You will have areas of thin and/<br />
or dead turf where they weren’t brought under control. There is a new<br />
generation going now. This batch causes the most damage. Use Dursban<br />
to stop the damage.<br />
• Until the weather gets back to the 80’s, St. <strong>August</strong>ine grass grows slowly.<br />
If you fill in with sod, don’t expect a fast turnaround. The sod may look<br />
like it’s not growing while it puts down roots. You will need to water the<br />
new sod often and deeply to get it started but this also creates a disease<br />
environment. Water early so the sun can dry the turf.<br />
• Now is a good time to work new beds. Till them up, add organic material,<br />
mix it in, then let them cure for a month or so. Add in any amendments<br />
like micro-nutrients. Keep the beds moist so the microorganisms have a<br />
favorable environment.<br />

Chocolate Raspberry Cloud<br />
You could make this on National Raspberries N’ Cream Day <strong>August</strong> 7th!<br />
INGREDIENTS:<br />
1 1/2 cups finely crushed chocolate wafer cookies<br />
3 tablespoons butter, melted<br />
2 cups heavy cream<br />
1/2 cup white sugar<br />
1 teaspoon vanilla extract<br />
1/2 cup raspberry syrup<br />
1 (9 ounce) package thin chocolate wafers<br />
1/4 cup fresh raspberries (optional)<br />
1 tablespoon chopped fresh mint leaves (optional)<br />
1/8 cup semisweet chocolate curls (optional)<br />
DIRECTIONS:<br />
To Make Crust: In a small bowl, mix together crushed cookies and melted butter. Press<br />
mixture into a 9 inch pie pan using your hands or the back of a spoon. Refrigerate until<br />
firm.<br />
To Make Filling: Whip 2 cups of cream until soft peaks form. Continue to whip while slowly<br />
adding sugar, followed by vanilla extract. Whip until stiff, then stir in 1/2 cup raspberry<br />
syrup.<br />
Spread a layer of whipped cream mixture 1/2 inch deep into bottom of pie crust. Cover<br />
with a layer of chocolate cookies. Cover with another 1/2 inch layer of whipped cream<br />
mixture, followed by more cookies. If desired, slightly overlap the cookies, dipping them<br />
in whipped cream mixture before placing them in pan. Continue alternating layers until<br />
cookies are gone, and finish with a layer of whipped cream mixture. Cover carefully.<br />
Refrigerate at least 12 hours before serving. Pie will keep up to 3 days.<br />
Just prior to serving, whip remaining 1/2 cup cream and cover pie with a fresh layer. If<br />
desired, garnish with fresh raspberries, mint leaves and chocolate curls.<br />

INGREDIENTS:<br />
1/4 cup shortening<br />
1 1/2 cups diced pork loin<br />
1 cup diced onion<br />
1 cup diced celery<br />
1 cup hot water<br />
1 teaspoon salt<br />
1/8 teaspoon ground black pepper<br />
1 (14.5 ounce) can bean sprouts, drained and rinsed<br />
1/3 cup cold water<br />
2 tablespoons cornstarch<br />
2 teaspoons soy sauce<br />
1 teaspoon white sugar<br />
DIRECTIONS:<br />
Heat shortening in a large, deep skillet. Sear pork until it turns white, then<br />
add onion and saute for 5 minutes. Add celery, hot water, salt and pepper.<br />
Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.<br />
In a small bowl combine the cold water, cornstarch, soy sauce and sugar.<br />
Mix together and add to skillet mixture. Cook for 5 minutes or until<br />
thickened to taste.<br />
