Serving Suggestions<br />

SHORTBREAD SNOWFLAKES<br />

Ingredients<br />

1000g Macphie Shortbread Mix 360g Softened Butter<br />

5th Avenue White Icing<br />

Method<br />

Place Shortbread Mix and softened butter into a mixer and mix on slow speed until a stiff dough is<br />

formed. Pin out dough to approximately 10mm thick and cut shapes using a snowflake cutter.<br />

Bake at 150°C (300°F) for 40-45 minutes until pale golden (baking time will depend on thickness of<br />

shortbread, adjust accordingly). Once cool, heat 5th Avenue White Icing and decorate according<br />

to picture.<br />

RED BERRY CUPCAKES<br />

Ingredients<br />

1000g Red Velvet Cake Mix 210g Water<br />

340g Egg Redcurrants or Cranberries<br />

280g Vegetable Oil Cream Cheese or Vanilla Rainbow ® Frosting<br />

Method<br />

Place cake mix into mixer, add egg, water and oil and mix for 1 minute on 1st speed.<br />

Scrape down and mix for 4 minutes on 2nd speed, followed by 1 minute on 1st speed.<br />

Deposit 30g of batter into cupcake cases and bake at 185°C (370°F) for 25 minutes.<br />

Once cool, finish with Cream Cheese or Vanilla Rainbow ® Frosting and berries according to picture.<br />

CHRISTMAS TREE CUPCAKES<br />

Ingredients<br />

1000g Genoese Cake Mix 400g Water<br />

290g Vegetable Oil Mint Rainbow ® Frosting<br />

Method<br />

Place cake mix into mixer, add water and oil and mix for 1 minute on 1st speed.<br />

Scrape down and mix for 4 minutes on 2nd speed, followed by 1 minute on 1st speed.<br />

Deposit 35g of batter into cupcake cases and bake at 185°C (370°F) for 25 minutes.<br />

VIENNESE WHIRLS<br />

Ingredients<br />

1000g Viennese Mix 500g Softened Butter or Cake Margarine<br />

Vanilla Rainbow ® Frosting Raspberry Jam<br />

Method<br />

Place Viennese Mix into mixer, add butter or margarine and mix on 1st speed for approximately<br />

30 seconds, followed by a further 5 minutes on 2nd speed. Fill piping bag fitted with star shaped<br />

nozzle and pipe onto baking tray lined with silicone paper. Bake at 190°C (375°F) for 15 minutes.<br />

Once cool sandwich biscuits together with jam and Vanilla Rainbow ® Frosting.<br />
