A Word from Robert Whitfield<br />

The past five years since celebrating our 85th<br />

anniversary have been memorable for many and<br />

varied reasons. We have enjoyed many historic<br />

highs, and some challenges too. As always,<br />

you as employees continue to shine through<br />

whatever comes your way and I would like to pay<br />

tribute to that in this 90th <strong>Anniversary</strong> Yearbook<br />

introduction.<br />

90 years of The Dorchester truly is a milestone,<br />

and I am so proud to have been general manager<br />

for this incredible hotel for the past four years.<br />

When I first joined in 2017, I realised I had<br />

joined a remarkable hotel, cherished and cared<br />

for by each of its team members. 2016 had been<br />

a great year for the hotel, with highest revenue<br />

rates to date and the launch of our ‘Crafting<br />

Perfect Moments’ concept, which has grown so<br />

much over the past few years in our goal to put<br />

guest centric experiences at the forefront of what<br />

we do.<br />

In 2017, this work on guest centricity really<br />

started to come to life, and the word ‘Nexus’,<br />

now so familiar to us, was brand new. I have<br />

seen this grow over the past four years and am<br />

excited to see Nexus continue to develop and<br />

enhance our guests’ experience greatly. In 2018,<br />

we launched ‘DOR45’, what we now all fondly<br />

know as ‘DC Legends’, our internal employee<br />

intranet, which has been our cornerstone for<br />

communication, engagement and sustaining our<br />

Dorchester community in the last couple of years.<br />

In 2019 we relaunched The Grill with Tom<br />

Booton at the helm, and for me personally this<br />

was especially exciting, bringing in a fresh new<br />

concept to our much loved fine dining restaurant.<br />

We also celebrated ten years of 3-Michelin stars<br />

at Alain Ducasse, a truly remarkable accolade,<br />

and very well deserved for a team who I know<br />

put so much passion into every element of the<br />

restaurant. In 2019, we also saw the exciting<br />

return of our Junket business, and our event<br />

rooms were buzzing with excitement. This was<br />

also the year we began our partnership with<br />

Manorfield Primary School, and I look forward to<br />

seeing this relationship blossom even further as<br />

we continue to work with them.<br />

Last year the global pandemic saw the closure<br />

of our hotel for the first time in its 90 year<br />

history. Nevertheless, this did not stop us as we<br />

connected in every way possible, from my daily<br />

coffee chats, to charity fundraising, pub quizzes,<br />

history talks, kitchen master classes and even<br />

our virtual winter ball. Nothing could stop our<br />

Dorchester community from thriving.<br />

Innovation & Creativity became our mantra<br />

as we launched The Dorchester at Home and<br />

countless new guest experiences, and this spirit<br />

continues as we recently launched our outdoor<br />

dining in the Garden Globes, Bar Terrace and<br />

RoofTop Pop-Up.<br />

As I reflect on the past five years, I am incredibly<br />

proud of what you have achieved. Your humility,<br />

tenacity and passion is outstanding, and I<br />

continue to be excited for what will happen next<br />

for our hotel.<br />

As I write this, we are just around the corner<br />

from reopening fully and, hopefully, to the end of<br />

the pandemic. I am very much looking forward<br />

to the return of our busy hotel, buzzing event<br />

rooms, merry restaurants and of course, to our<br />

people doing what they do best; taking care of<br />

our guests.<br />

I am immensely proud to be a part of The<br />

Dorchester’s journey. Here is to 90 years of<br />

storied history, and to many more years to come.<br />

‘The Perfect Hotel’<br />

Celebrating 90 distinguished years of The Dorchester<br />

Louis Armstrong. Twiggy. Alfred<br />

Hitchcock. Peter Sellers. Stevie<br />

Wonder. Brigitte Bardot. Rod<br />

Stewart. Elizabeth Taylor. What<br />

do they all have in common?<br />

It sounds like the line-up for<br />

a dream dinner party, or a<br />

really, really interesting game<br />

of Cluedo (our money’s on<br />

Hitchcock). But no, there’s<br />

another thread that strings<br />

these illustrious individuals<br />

together; they were all guests and<br />

admirers of The Dorchester.<br />

Weddings & Romance<br />

Across our 90-year history the good and the<br />

occasionally, misunderstood, have married,<br />

honeymooned or fallen in love at the hotel.<br />

In 1937, multimillionaire Baron Jean Empain<br />

wed ‘golden girl’ of cabaret, Rozell Rowland,<br />

having caught his attention when she appeared<br />

in gold paint during a burlesque performance at<br />

the hotel. In 1947, Mary Churchill – daughter<br />

of Sir Winston – married Captain Christopher<br />

Soames at St Margaret’s Church in Westminster,<br />

before a reception at The Dorchester. The same<br />

year, Prince Philip, held his official bachelor party<br />

in the Park Suite of the hotel, a day before his<br />

marriage to Princess Elizabeth.<br />

In June 1959, Artistotle Onassis threw a lavish<br />

party for Maria Callas and it was in November<br />

of that year that they both ended left their<br />

partners and started their relationship. In 1964,<br />

actors Peter Sellers and Britt Ekland married at<br />

Guildford Registry Office – ten days after their<br />

first date, having first met in the lobby of The<br />

Dorchester (he would send her every bloom the<br />

hotel florist had). Hollywood royalty Richard<br />

Burton and Elizabeth Taylor, played out their<br />

tempestuous marriage at the hotel as regular<br />

guests. In 1964, they spent their honeymoon in<br />

the Oliver Messel Suite.<br />

In 1973, one-time James Bond George<br />

Lazenby and Chrissie Townsend held their<br />

wedding reception at the hotel, action man<br />

Sylvester Stallone married Jennifer Flavin in<br />

a civil ceremony in 1997, David Jason married<br />

Gill Hinchcliffe on the eve of receiving his<br />

knighthood at Buckingham Palace and the<br />

late, great Barbara Windsor tied the knot with<br />

Scott Mitchell in 2000. A year previously, Rod<br />

Stewart had met Penny Lancaster in the hotel<br />

– ‘a tall blonde girl in her twenties had come<br />

over and asked for an autograph’ he wrote in his<br />

autobiography and in 2012, another music star –<br />

Ronnie Wood – married Sally Humphreys at the<br />

Penthouse and Pavilion with 45 guests.<br />

Music Artists<br />

The 1930s must have been a magical decade<br />

to be at the hotel. We opened the hotel with<br />

a very strong musical programme right from<br />

the get-go. We held regular dinner dances,<br />

had feature artists on Sundays, the Midnight<br />

Follies were in cabaret, Alberta Hunter sang<br />

with the dance bands as did Gracie Fields and<br />

Helen Clare. Jack Jackson and his Orchestra<br />

had a five-year residency at the hotel and even<br />

Ronnie Scott (third saxophone) was part of<br />

the band until Jack sacked him. Henry Sherek<br />

was a theatrical agent booking the acts.<br />

Since then we have had an incredible number<br />

of musical artists who have been to the hotel as<br />

guests. Some of them to perform in the hotel for<br />

private parties, others staying in our suites while<br />

they have a series of concerts at London venues.<br />

We don’t have space to list them all here but<br />

let me tell you we have found images of some<br />

220 at the hotel so far. The list includes: Andy<br />

Beatles, Boy George, Celine Dion, Cliff Richard,<br />

Duke Ellington, Ella Fitzgerald, Frank Sinatra,<br />

Jennifer Lopez, Julie Andrews, Lady Gaga,<br />

Liberace, Louis Armstrong, Maria Callas, Maria<br />

Carey, Marlene Dietrich, Michael Jackson, Noel<br />

James Bond<br />

We believe we could probably claim the title as<br />

The James Bond hotel in London as we have so<br />

many good connections with the character and<br />

the film production company.<br />

Here’s the start of that list we have been building<br />

up as we explore our history:<br />

- Ian Fleming played bridge, stayed & dined at<br />

The Dorchester during WW2 and in the late<br />

40s and early 50s<br />

- All four Producers of Bond have been guests of<br />

the hotel<br />

- EON had an office at The Dorchester in the<br />

60s and 70s<br />

- EON’s main offices were at Audley Square<br />

nearby<br />

- All six James Bonds have been guests of<br />

The Dorchester<br />

- Roger Moore and George Lazenby were<br />

introduced to the world’s press as the new<br />

James Bond at the hotel<br />

- Jane Seymour who played Solitaire in Live<br />

and Let Die, was interviewed for her role at<br />

the hotel<br />

- The Dr No. script was completed by<br />

scriptwriter Terence Young in a suite during<br />

Dec 1960 – Jan 61<br />

- Sean Connery was persuaded to return<br />

to be Bond in 1970 – the deal was done<br />

at The Dorchester<br />

M Hubert Givenchy, aged 28, using 120<br />

models, presented his clothes for the first<br />

time ever in the UK in the ballroom of The<br />

Dorchester at a society ball in 1955.<br />

Christian Dior came to the hotel in March 1957<br />

as the principal speaker at a Foyles Literary<br />

Luncheon and launched his autobiography<br />

‘Dior by Dior’. In April 1966, British fashion<br />

designer and fashion icon Mary Quant did<br />

the same with her book ‘Quant on Quant’.<br />

The Beauty industry icons of Helena<br />

Rubenstein, Elizabeth Arden both came to the<br />

hotels in the 1950s and more recently Charlotte<br />

Tilbury has attended various and personally<br />

came to do the makeup of Catherine Zeta-Jones<br />

who was the host for a Walpole event in 2017.<br />

We have also had three perfume launches at the<br />

hotel, in 2019 Mariah Carey with ‘Forever’, in<br />

2017 Nicloe Sherzinger with ‘Chosen’ and in<br />

1990, Elizabeth Taylor with ‘White Diamonds’.<br />

Fashion<br />

We have an incredible history with fashion with<br />

innumerable fashion shows in the late 1940s, 50s<br />

and 60s covering childrenswear, millinery and fur<br />

– some of them attended by Princess Elizabeth<br />

and Princess Margaret. The bridal shows started<br />

in the 1960s continue today in conjunction with<br />

Caroline Castigliano and BRIDES magazine.<br />

Other designers with catwalk shows at the<br />

hotel include Vivienne Westwood, Philip<br />

Treacy and Alice Temperley among them.<br />

Models that have been guests at the hotel<br />

probably started with Barbara Goalen and<br />

have continued in recent decades with Cindy<br />

Crawford, Naomi Campbell, Kate Moss, Elle<br />

Macpherson, Jerry Hall, Jodie Kidd, Bella Hadid,<br />

Claudia Schiffer, Kitty Spencer and David Gandy.<br />

Wartime Guests at the hotel<br />

Our most significant guest was General<br />

Eisenhower and his accompanying military<br />

leaders including, General Clark and Captain<br />

Harry Butcher. They stayed at the hotel from<br />

1942 to 1945 using it as their in-town base when<br />

they weren’t at Telegraph Cottage in Kingstonupon-Thames.<br />

Prime Minister Winston Churchill<br />

would occasionally visit the American General in<br />

his suite.<br />

The hotel’s modern structure of reinforced<br />

concrete and steel, completed just eight years<br />

before the outbreak of war, made the hotel a<br />

popular choice as it was thought to be bombproof.<br />

Six Government ministers came to stay;<br />

Halifax, Portal, Stanley, Lyttleton, Sandys,<br />

and Cooper. We also attracted society figures<br />

included: Emerald Cunard, Sybil Colefax, Doris<br />

Castlerosse, Margaret Greville, Irene Curzon,<br />

Margaret Sweeny and Clarissa Spencer-Churchill.<br />

We understand from various books that wartime<br />

affairs took place; Italian Ambassador Dino Grande<br />

visiting his lover ‘Baba’ Metcalfe, Churchill’s<br />

daughter-in-law Pamela Digby and Averell<br />

Harriman, Ian Fleming visiting Ann O’Neill.<br />

Many writers came to stay or dine at the hotel in<br />

wartime including; Somerset Maugham, Edith<br />

Sitwell, H G Wells, T S Elliot and even the film<br />

maker Rosie Newman screening her film ‘Britain<br />

at War’ which was attended by the Duchess of<br />

Gloucester. The hotel was also the base for war<br />

correspondents; Ernest Hemingway, Martha<br />

Gellhorn and Ed Murrow and they chatted<br />

freely with the RAF officers in our Park Lounge<br />

bar led by the legendary Harry Craddock.<br />

Politician, author and diarist, Sir Henry ‘Chips’<br />

Channon was a frequent guest and once observed,<br />

‘London lives well. I’ve never seen more lavishness,<br />

more money spent or more food consumed<br />

than tonight; and the dancefloor was packed...<br />

Everybody wanted a room at The Dorch.’<br />

British Prime Ministers<br />

at the hotel<br />

Since we opened in 1931 we have had all 20<br />

British Prime Ministers as guests at the hotel,<br />

be that staying or attending functions or private<br />

dinners. From Ramsay MacDonald coming to<br />

the hotel to meet Mahatma Gandi in 1931 to<br />

our present PM, Boris Johnson, attending the<br />

Fortune Forum Club Dinner. Margaret Thatcher<br />

had a 52 year association with the hotel. We first<br />

welcomed her to the hotel in 1968 and her last<br />

visit to us was in 2010. Similarly Prime Minister<br />

Harold Wilson has a 30 year connection with us.<br />

As well as seeing him during his premierships of<br />

1964–70 and 1974–76, we first saw him in 1947<br />

when he was president of the Board of Trade and<br />

then finally in 1977.<br />

British Royal family<br />

The British Royals have been regular attendees<br />

of the hotel. Queen Mary of Teck came to the<br />

hotel for a private showround with the Managing<br />

Director of Gordon Hotels Ltd in March 1931<br />

even before the hotel had opened. Then in<br />

the 1930s we had several visits to charity balls<br />

by the Duke and Duchess of York. Their two<br />

young children Elizabeth and Margaret came to<br />

the hotel for children’s parties. Edward, Prince<br />

of Wales, soon to become King in 1936, visited<br />

the hotel with Wallace Simpson in 1935. The<br />

coronation of King George VI in May 1937 was<br />

a busy time for the hotel with grandstand seats<br />

on the roof tops to give a bird’s eye view of the<br />

procession along Park Lane.<br />

After the war, Princess Elizabeth and Princess<br />

Margaret attended several charity balls and even<br />

fashion shows in the ballroom.<br />

In 1947, Princess Elizabeth was attending<br />

a private dinner in the Park Suite on the<br />

evening her engagement to Lieutenant Philip<br />

Mountbatten was announced.<br />

Later that same year on the eve of the wedding<br />

on November 19, HRH Sir Philip Mountbatten<br />

held his stag party with 11 naval friends in the<br />

Park Suite. After dinner he asked to be taken<br />

to the kitchens to meet the chef and thank him,<br />

he conversed in French with John Baptiste<br />

Virlogeux, the Maître Chef at The Dorchester.<br />

Princess Marina was a long term guest at the<br />

hotel in the post war years and left for the 1947<br />

royal wedding with her son and daughter who<br />

were a page and bridesmaid.<br />

In June 1953 the coronation of Queen<br />

Elizabeth II was a time of joy and celebration<br />

in the city with The Dorchester playing its<br />

part and the hotel’s main façade decorated<br />

by Oliver Messel. Many international guests<br />

from the Commonwealth were staying in the<br />

hotel including Prince Philip’s uncle, Earl<br />

Mountbatten of Burma and his wife.<br />

Princess Margaret attended many events at the<br />

hotel including the time she met The Beatles<br />

after the royal premier of their movie A Hard<br />

Day’s Night. In 1960 she married Anthony<br />

Armstrong-Jones (Lord Snowdon), who was the<br />

nephew of Oliver Messel. Many years later Lord<br />

Snowdon spoke at a Foyles Literary Lunch and<br />

held a book launch at the hotel attended by his<br />

children Viscount Linley and Lady Sarah.<br />

The children and grandchildren of HM The<br />

Queen and HRH Prince Philip have all been to<br />

the hotel. Prince Charles to meet The Goons<br />

and attend and an Australia Club dinner and<br />

Police Bravery Awards. Prince William and his<br />

wife Kate have been for private events and<br />

Prince Harry for balls for his charity Sentebale<br />

and other charity events. Princess Anne has<br />

been on several occasions, once accompanied<br />

by her first husband Captain Mark Philips. In<br />

more recent years her children Peter and Zara<br />

have attended events accompanied by their<br />

respective partners. Prince Andrew for NSPCC<br />

events and the Anglo-Spanish Society dinner.<br />

Prince Edward accompanied by his wife Sophie<br />

for various charity events. Princess Diana visited<br />

the hotel on several occasions, for the charities,<br />

ChickenShed Theatre, Barnardo’s and Shaukat<br />

Khanum Cancer Hospital.<br />

We are delighted to have been chosen as the<br />

hotel for nine State Banquets during the reign of<br />

Queen Elizabeth II, when the visiting head of<br />

state, reciprocates the hospitality of the Palace<br />

with a complementary dinner a few evenings<br />

later during their stay.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

We stayed connected via different methods:<br />

- Masterclasses and training at least twice a week<br />

with all the team and any team members of the<br />

hotel that wanted it.<br />

Which Dorchester Collection<br />

value, best represents your<br />

department and why?<br />

Even if Creativity is an inherent part of the usual<br />

work in a restaurant, we strongly believe that the<br />

team is the central focus of the restaurant in order<br />

to achieve greater goals. This is why we endeavour<br />

to share everything between the Front of house,<br />

the Kitchen and the administrative team of Alain<br />

Ducasse at The Dorchester and the other outlets<br />

of The Dorchester (even with our suppliers).<br />

WORKING TOGETHER is the value we cherish<br />

the most as we believe a well functioning team<br />

and happy team members is the key to success.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

In a nutshell, having three stars at The Michelin<br />

Guide since 2010.<br />

Since the opening of ADAD in 2007, the<br />

different teams of the restaurant always surpassed<br />

themselves to reach this level of excellency.<br />

Now with a focus only on the last five years,<br />

the restaurant has seen a lot of changes : a new<br />

executive chef, a new executive manager, a<br />

new restaurant director, the relaunching of the<br />

restaurant with a revitalised concept and new<br />

decor and a world pandemic… But despite of<br />

all these changes the restaurant has always been<br />

able to secure the three stars.<br />

- Visits of our suppliers facilities when we could<br />

and trainings with them on Zoom to maintain<br />

the relationship.<br />

- Charity involvements and personal projects<br />

were all shared through connected groups.<br />

(E.G. sommelier who visited vineyard showed<br />

pictures, chef gave their ‘at home recipes’, we<br />

even followed the hatching of the quail eggs of<br />

one of us.<br />

- Regular updates, promotions and masterclasses<br />

for the community of the restaurant.<br />

Banqueting<br />

Which Dorchester Collection<br />

value, best represents your<br />

department and why?<br />

To pick one then I would have to say<br />

‘WORKING TOGETHER’ . We are a<br />

very small team and we have been together<br />

for a long time. In events no two days are the<br />

same and we have to adapt all the time. We<br />

volunteered to run Chesters when we came back<br />

after the first lockdown as there were no events<br />

planned and we wanted to help out where we<br />

could. The team is also very passionate about<br />

Dorchester Collection and all its values.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

We were very instrumental in the successful<br />

running of the Chelsea Flower Show. We have<br />

also had some fantastic events in our rooms<br />

including the wedding of a Rolling Stone. We<br />

have also seen our Ballroom turned into a Harry<br />

Potter studio and when we had our highest<br />

grossing event it had many international singing<br />

stars singing on the stage. Where else could you<br />

have such events?<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

We had Zoom calls at least twice a week and<br />

we also had a picnic in Hyde Park, we attended<br />

many training sessions and masterclasses. We also<br />

did some departmental training such as how to<br />

interpret the P&L. Some of us also were helping<br />

in Manorfield Primary School for a few days.<br />

department and why?<br />

With a hotel kitchen as large as ours it is all about<br />

team work. WORKING TOGETHER is the most<br />

important of Dorchester Collection’s values for our<br />

section of the business.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

Banqueting had a record year on revenue during<br />

this period. Restructure of the workflow to<br />

increase productivity. Implementation to rotate<br />

chefs with their duties to be more agile with<br />

demand in every sense. 2019 Banqueting kitchen<br />

got awarded ‘Best Department’. 2018 been part<br />

of Chelsea Flower Show with afternoon tea.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

- Helmut made both video calls and phone<br />

calls to keep in touch with the team<br />

- Joe Flattery was in regular contact with<br />

his team.<br />

- We had regular masterclasses.<br />

- Who knew! It turns out we have a DJ in<br />

our team.<br />

- We enjoyed quizzes over Zoom.<br />

- Ismail delivered food for charity to vulnerable<br />

families during the various lockdowns.<br />

- Alasdair volunteered to help his local church to<br />

decorate and to help run an NHS Vaccination<br />

Centre.<br />

- Alisha, our Departmental Coach, updated the<br />

entire kitchen team with ‘Inter Department<br />

Training’.<br />

- Salvatore sewed some PPE for NHS and being<br />

one of the first to do so has encouraged others to<br />

do similar projects.<br />

- In between the lockdowns, some team<br />

members helped at Coworth Park which was<br />

very busy.<br />

- Since the start of the pandemic we have<br />

taken on the catering for all team members in<br />

‘Chesters’, which was well received.<br />

- Some team members helped at the Manorfield<br />

Primary School after the first lockdown as well<br />

at the Gorsefield Rural Studies Centre.<br />

WORKING TOGETHER are the two traits that<br />

commitment. Passion cannot be taught, it comes<br />

from within and working together as a close knit<br />

team makes us the success we are.<br />

In IBA World Cocktail Championship 2016 Lucia<br />

Montanelli was crowned winner of the Sparkling<br />

Cocktail Competition for her drink Sakura Blossom<br />

and came third overall, a tremendous achievement.<br />

In 2019 Denise Elisei represented The Bar in<br />

the Amaro Montenegro competition and took<br />

second place.<br />

Lucia once again proved her amazing skills and<br />

personality by winning the Beluga Signature<br />

Global Final which was held in Moscow in 2019.<br />

Giacomo Faure was voted as a DC employee<br />

of the year during the Winter Ball in 2020 and<br />

without a doubt brought a lot of pride to our<br />

department and was well deserved.<br />

Other great achievements of our Bar were a short<br />

notice creation of the The Dorchester Terrace<br />

and Garden this year.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

As a team we were having our regular meetings<br />

twice a week on Zoom alongside communicating<br />

daily via the WhatsApp and sharing some<br />

highlights of our day. A lot of informative<br />

trainings and tastings involving different spirit<br />

production by the brand representatives. Some<br />

trainings were arranged by us for the whole<br />

F&B department which included (gin history<br />

and production, vermouth history, history of the<br />

cocktails for the International Cocktail Day etc.).<br />

Inbetween the lockdown we visited the Hiver<br />

Tap Room to see how the beer is made and learn<br />

how to extract honey and taste some delicious<br />

products. Despite all the frustration we were<br />

trying to support one another and made sure that<br />

everyone knew they could rely on the team.<br />

Butlers<br />

your department and why?<br />

‘WORKING TOGETHER’ is the value that<br />

best represents the butlers. Although we<br />

are a very small team, our strength is in the<br />

connections and relationships we have with other<br />

departments in the hotel. Working together<br />

closely with our colleagues allows our small team<br />

to have a large impact on the guest experience.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

We are a team that often works behind the<br />

scenes due to the discreet nature of our role, and<br />

in the past we have not always shared the fun<br />

and exciting things we do with the rest of the<br />

hotel. The Butlers became part of the ‘Guest<br />

Experience’ team as a result of the Front of<br />

House restructuring, which means were are now<br />

letting our creativity shine through a bit more and<br />

sharing this with our colleagues also (you may<br />

have seen our videos and posts on DC Legends).<br />

The department was honoured to have<br />

Emmanuel Okang selected as The Dorchester’s<br />

Legend of the Year recently. With 29 years of<br />

service, Emmanuel truly is a legend. He takes<br />

the best lessons of our illustrious past and<br />

contributes them to discussions about improving<br />

what we do as a team in the future.<br />

Zoom, WhatsApp and phone calls all had<br />

a role and our regular Coffee & Connect<br />

meetings were often a highlight of the week.<br />

We used our time out of the hotel to do some<br />

learning and kept things fun. It started with<br />

Cultural Awareness Week, where we taught<br />

each other key aspects of the culture of<br />

guests we frequently serve. Our educational<br />

programme also included guest speakers from<br />

within the hotel (Christopher Delalonde)<br />

and even a local business (Sautter Cigars on<br />

Mount Street). Perhaps surprisingly, we grew<br />

much closer as a work family in 2020 despite<br />

spending very little time physically together.<br />

Barbara Corcoran used to say “You can’t fake<br />

passion”. This is so apparent in the Engineering<br />

department of this wonderful hotel. We constantly<br />

develop our PASSION by being creative and<br />

working together. This amazing combination of<br />

various personalities creates a department that is<br />

able to solve all problems and is always willing to<br />

help. Love The Dorchester!<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

Teamwork is critical to running the engineering<br />

department of a hotel of the size and complexity of<br />

The Dorchester. At no time more than during the<br />

pandemic was it important to maintain the links<br />

that bond an effective team. The challenges of<br />

doing this when varying numbers of the team were<br />

working remotely, self-isolating or on furlough,<br />

was met head on with a determination to not let<br />

what we had developed slip away. Jyoti Hirani<br />

(PA to the area chief engineer) led the initiative<br />

of ensuring that each member of the team was<br />

contacted personally by herself or the line manager<br />

a minimum of once per week. In addition regular<br />

social gatherings via Zoom helped stabilise moral.<br />

What did you do to stay<br />

the pandemic?<br />

2017 The main kitchen undertook an<br />

amazing transformation and now the state-of-theart<br />

kitchen you see today. It includes a large gas<br />

fired pizza oven and a wine tasting room which<br />

can hold up to eight guests for the ultimate wine<br />

tasting experience.<br />

2020 Team of the year – After what was a<br />

very tough year for us all, the engineering team<br />

powered on and kept our wonderful hotel looking<br />

immaculate. We were rewarded for our hard<br />

works at the end of year awards being crowned<br />

‘Team of the year’.<br />

2020 Pastry kitchen – Phase two of the<br />

kitchen project saw the pastry have a complete<br />

refurbishment. Daniel and his team can now<br />

bake the cakes and pastries from a state-of-theart<br />

pastry kitchen.<br />

department and why?<br />

Passionately working together with respect for<br />

one another. Too many values? Ok, well we love<br />

to do it all here in events but honestly, we feel<br />

like there is such pride in what we do every day.<br />

We are such a supportive and connected team<br />

that all of our values ring true for us every day! If<br />

we really HAD to pick only one then WORKING<br />

TOGETHER would be the value that best<br />

represents us. The entire team would selflessly<br />

take on a heavier load if they saw a colleague<br />

in need and no one is left to struggle when the<br />

going gets tough!<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

So many events, so many guests, so many<br />

memories… Over the last five years we have seen<br />

two of the largest weddings in Dorchester history,<br />

grossing in excess of £1million in revenue for the<br />

hotel and featuring some of the biggest global<br />

artists including J Lo, Enrique, Kylie, Robbie,<br />

Pink, Lionel and of course Sean-a- Paul! Now all<br />

that glitz and glam is completely overshadowed<br />

by our most high profile guest over the last five<br />

years… none other than her majesty Queen<br />

Elizabeth II herself. Putting the excitement<br />

aside, by far our greatest achievement has been<br />

the merging of the special visits department<br />

into events creating a larger Groups and Events<br />

department with a pool of incredibly talented<br />

Events managers who are now able to master<br />

both sides of this business.<br />

To be honest, we couldn’t stay away….. We had<br />

our usual weekly meetings, lots of video calls<br />

between the team, memes galore on WhatsApp,<br />

then came the four hour Quizzes before we<br />

realised the Zoom masterclass was where the<br />

real fun was! There ensued a good 6 weeks of<br />

cocktail making, we had guacamole making,<br />

Moroccan snacks, and daal masterclasses before<br />

we were finally free to meet again and had<br />

amazing picnics in the parks enjoying some long<br />

awaited laughs together. ‘A day at the races’<br />

Zoom Ascot experience, VE Day and a lockdown<br />

Hen party for Emily were particular faves for us<br />

during the summer. Lockdown 2.0 we may have<br />

lost the enthusiasm for the quiz but our love for a<br />

social continued with a Burns night extravaganza<br />

and so they continue.<br />

The Food and beverage division encompasses<br />

all Dorchester Collection values; however<br />

CREATIVITY and WORKING TOGETHER<br />

are the two values that best represent the food<br />

and beverage team. As a team we worked<br />

together creatively most recently to help<br />

launch our at home service including afternoon<br />

tea hampers and ‘Make it yourself’ kits in<br />

the Grill. We also launched The Dorchester<br />

Terrace and Garden along with garden pods by<br />

working closely with our supplier’s support.<br />

The entire food and beverage team worked<br />

together to support each other by being flexible<br />

and working in events, back of house and all<br />

areas of the hotel to support the operations.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

Over the last five years the food and beverage<br />

team have grown immensely with the arrival of<br />

many new talented leaders and teams across the<br />

entire division. With this we have seen a new<br />

level of energy and enthusiasm and improved<br />

service for our guests. The kitchens and pastry<br />

department have been completely refurbished<br />

along with Alain Ducasse. The Grill has been<br />

restructured and relaunched. A new strong<br />

partnership with Moët Hennessey in the last few<br />

years has also ensured further support for creative<br />

projects across the hotel and new outdoor<br />

dining activities. We continue to strengthen our<br />

partnerships with RHS for Chelsea Flower Show<br />

and The Chaine Des Rotisseurs with Russell<br />

Platt being inducted in to the organisation in<br />

2019 Richard Newell and Tom Booton were also<br />

recipients of the prestigious Acorn award.<br />

connected as a team during<br />

the pandemic?<br />

At the start of the pandemic the food and<br />

beverage teams stayed in contact through our<br />

group messages, Zoom one to one and team<br />

meetings and food and beverage masterclasses.<br />

When the restrictions allowed the team met<br />

for picnics and a trip to Gorsefield to help the<br />

Manorfield Primary School team and spend the<br />

day together. The team have also been connected<br />

through learning online by attending trainings in<br />

food, wines and supplier hosted events.<br />

department and why?<br />

For anyone who does not know, there are<br />

many different roles within finance; accounts<br />

payable, accounts receivable, cost control,<br />

income audit, management accounts, payroll<br />

and our management team. All our tasks are<br />

very different however we rely on, and support<br />

each other as we need to WORK TOGETHER<br />

with both our team and the hotel teams to pull<br />

together the profit & loss accounts and the<br />

balance sheet for three hotels to report to DC<br />

on a tight monthly time frame. This year even<br />

more so as we are spread across the London area<br />

in satellite home offices (aka kitchens/bedrooms/<br />

dining tables).<br />

connected as a team during<br />

the pandemic?<br />

Finance continued to work throughout the<br />

working from laptops. Our WhatsApp group<br />

allowed us to ensure we celebrated everyone’s<br />

special days and showed our sense of humour.<br />

We work with some crazy people but we love it<br />

Finance has evolved quite a bit in the past five<br />

years, with guest service, efficiency and the<br />

environment in mind.<br />

- Moving offices, returning to join our first floor<br />

friends in Tilney Street<br />

department in the last five years?<br />

We have had lots of successes over the last<br />

five years but the most notable has been the<br />

opening of our boutique just off the lobby at The<br />

Dorchester and the creation of ‘The Dorchester’<br />

Rose. The success of these projects was due to<br />

the hard work and dedication of the team and<br />

our passion to create beautiful arrangements<br />

for our guests. We have also had so much fun<br />

creating especially themed displays throughout<br />

The Dorchester and also at Chelsea Flower Show<br />

which is our favourite week of the year.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

The florist team have stayed connected<br />

throughout the lockdown via our famous Flower<br />

Power group chat. We have also enjoyed picnics<br />

in the park, where it was great to see each other<br />

and share our lockdown experiences.<br />

The WORKING TOGETHER value best<br />

represents the Florist team, we work across all<br />

Dorchester Collection properties in London<br />

including our Head Office, working closely with<br />

nearly every department to great beautiful floral<br />

arrangements throughout our hotels. Whether<br />

it be a bud vase for a guest bathroom or the<br />

iconic urns in the lobby of The Dorchester, the<br />

same care and attention to detail is applied to<br />

each design. We wouldn’t be able to make our<br />

creations without working together as a team, it<br />

certainly makes things easier at 3am when we are<br />

constructing the flowers in the lobby!<br />

We have even volunteered together at a<br />

vaccination centre, where it was so nice to be<br />

a part of the fight against Covid-19 supporting<br />

NHS staff.<br />

department and why?<br />

RESPECT. The reason the Front of House<br />

Department works as efficiently as it does is<br />

because when you strip the team down to its<br />

core fundamental attribute, it is respect for one<br />

another. We all care for one another and no<br />

matter what a co-workers position is, they are<br />

treated equally. A huge contributing factor to this<br />

respect is by simply taking the time to listen to<br />

each other and making each other aware that our<br />

voice is valued.<br />

achievements/milestones as a<br />

department in the last five years?<br />

One of the achievements we are most proud<br />

of is making the Front of House department<br />

borderless. Our restructure introduced the<br />

Task Master and Host Roles which gave clarity<br />

and differentiation to positions that are more<br />

administrative based in comparison to guest<br />

facing. This allowed us to get on board with the<br />

new ‘Guest Centricity’ concept set by DC. We<br />

are really proud of how fast we have adapted to<br />

this restructure. Additionally the new ‘Concierge<br />

2.0’ roll is a significant achievement. This newly<br />

developed roll involves the concierge carrying out<br />

receptionist tasks too. Not only will they book<br />

the restaurant reservation but they are also now<br />

able to complete a check in and a check out for a<br />

guest too. More recently our Director of Front of<br />

House being awarded Leader of the Year for 2020<br />

is something we are grateful for and proud of too.<br />

the pandemic?<br />

In addition to our biweekly departmental Zoom<br />

calls to convey new information we took part<br />

in multiple different activities to keep positive<br />

vibes throughout the department. Firstly a<br />

challenge known as – ‘The War of the Roses’.<br />

Split into two teams we had to answer riddles<br />

and puzzles that the answer was a landmark<br />

in London. After solving the riddle we had to<br />

take a selfie by the answer. A truly great way<br />

to become for familiar with London! The great<br />

Alberto did some fun cooking demonstrations for<br />

us including a tiramisu dish. A WhatsApp group<br />

chat for both fun and learning activities was set<br />

up. Days of the week were allocated towards a<br />

different submission to the group chat. These<br />

submissions included SOPs, quizzes, history<br />

presentations. Welfare calls from Director of<br />

Front of House were also hugely effective.<br />

department and why?<br />

We believe The Grill really represents all of our<br />

Dorchester Collection Values, the two that stand out<br />

the most to us are CREATIVITY and WORKING<br />

TOGETHER. Creativity with our fantastic MIY<br />

project started in June 2020 that continued over<br />

the festive period of 2020 giving our regulars and<br />

new guests the chance to experience a taste of The<br />

Grill in the comfort of their own homes. We had so<br />

many great comments from guests exclaiming we<br />

saved Christmas in such uncertain times. Working<br />

together has been demonstrated through our time<br />

in the lockdowns mostly with regular trainings not<br />

only with our own team but throughout the F&B<br />

division and beyond.<br />

phase where we implemented the new<br />

concept of the restaurant to our team. Here great<br />

friendships were formed giving us a fantastic base<br />

Over the last five years our department has seen<br />

a number of changes, the most exciting being the<br />

relaunch of The Grill. This consisted of a widely<br />

new, young and vibrant team and the beginning<br />

of a journey to achieving great things! Our<br />

pandemic?<br />

At the beginning of the pandemic we stayed<br />

connected as a team through picnics, football<br />

in the park, and girl’s nights. As the lockdowns<br />

grew stricter we moved to having more virtual<br />

activities keeping the team connected and<br />

engaged, a few examples are; our weekly<br />

newsletter, The Grill’s Thursday night quiz, wine<br />

tastings, internal trainings, trainings from our<br />

suppliers (e.g. HG Walter), weekly 121’s, girl’s<br />

night. We have also had members of our team<br />

volunteering at Gorsefield Rural Studies Centre<br />

and the NHS vaccine centres in Ealing and<br />

Marble Arch.<br />

I think we represent all Dorchester Collection’s<br />

values in The Grill kitchen, but the main one<br />

for me is PASSION, we use that word very often<br />

during our days and it’s the main word in our<br />

lives, it is what get us up early and why we give<br />

110% every day we work.<br />

The refurb’ was such a massive milestone for all of<br />

us involved and after the physical changes to the<br />

team, one of the greatest achievements is<br />

implementing Nexus and being so integral to its<br />

success; they have been able to master Nexus<br />

The hall porters and concierges are all about PASSION. No<br />

matter how difficult your request is our concierges are ready<br />

to fulfil it. No matter how heavy your luggage is, our Guest<br />

Services hosts will be there in moments. No matter how crazy<br />

the weather condition is our doormen will always welcome you<br />

with a smile.<br />

In the last five years we managed to stand together as a team<br />

overcoming difficult situations like luggage pulls of over 200<br />

bags coming in the middle of the night, wedding receptions<br />

with over 100 people driving to the hotel and asking for us to<br />

park their cars or finding that last minute ticket to the super sold<br />

out concert (we still have some of those if you need them).<br />

team during the pandemic?<br />

A good laugh and a chat, Zoom meeting after Zoom meeting we<br />

managed to carry on through these unprecedented times. At first<br />

we were having separate meetings for the door team and guest<br />

services hosts, but in the end it became natural to just be united<br />

under the same big call.<br />

Which Dorchester Collection<br />

your department and why?<br />

The Housekeeping and Laundry department<br />

is all about diversity and team spirit. We are the<br />

second largest department after F&B. We are a<br />

great representation of people working together<br />

from different culture, background and bringing<br />

various skills and individual talent to their role<br />

and to the make of the department. Our greatest<br />

responsibility to look after our guests, creating<br />

special moments, maintain our property and<br />

inspire each other.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

The department had several achievements<br />

over the years. Back in 2018 HSK has been<br />

awarded ‘Department of the Year 2018’. HSK<br />

has welcomed and mentored many graduates in<br />

the past years and after finishing the program<br />

couple of them has joined HSK to pursue their<br />

career further. Our room attendants had looked<br />

after so many famous celebrities and guests<br />

including Tony Bennett who stayed with us in<br />

the iconic and listed Oliver Messel suite. The list<br />

continues with Elisabeth Taylor in the Terrace,<br />

Harlequin and Audley suite. Celine Dion, the<br />

story with Celine: she visited the hotel with her<br />

children and we had to make the beds on the<br />

floor because she did not want the children to<br />

fall out of bed. Teresa, one of our room attendant<br />

who has just recently retired after working for<br />

the hotel 25years used to help servicing the Suri/<br />

Seri and looking after royalty and PM’s. We have<br />

organised charity sale events in HSK and donated<br />

over £1,000 to various charity organisations.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

Throughout the pandemic we have managed to<br />

stay connected and we have had loads of fun and<br />

fun activities online. We had quiz night – Shot<br />

in the dark. Hosted a Virtual Happy Hour –<br />

Funniest Christmas Jumper in December 2020.<br />

We had a fantastic picking in Hyde Park corner<br />

where the team members brought food and<br />

drinks and we played card games and activities.<br />

We have celebrated Housekeeping International<br />

Week at the roof top of the Suri suite.<br />

We have supported our sister hotels, 45 Park<br />

Lane and Coworth Park, see photos attached.<br />

We kept the communication going on a weekly<br />

bases and created what’s up groups where the<br />

team members shared photos of their home<br />

activates, puzzling, tapestry, walking in the<br />

forest… Baking challenge, again sharing the<br />

In-room Dining are PASSION and WORKING<br />

TOGETHER. Over the years the team has<br />

grown into a ‘family’, which lives by the moto<br />

‘one team one dream’. We are thoughtful in<br />

every action/task we do for our guests and for our<br />

colleagues no matter how big or small. We offer<br />

support to guests and colleagues alike. Making<br />

them smile makes our day.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

Closing the pantries and centralising everything<br />

was a big challenge, which the team mastered<br />

brilliantly. With the recent changes in the<br />

departmental leadership IRD was able to build<br />

a solid foundation and created a passionate and<br />

flexible team.<br />

During the last few years we have seen some<br />

team member’s move on to new challenges while<br />

new talent joined the team. This allowed us to<br />

inject our current knowledge with fresh energy<br />

and new ideas. As a family we had a very difficult<br />

year for numerous reasons, during which one of<br />

our members needed all our support. For the<br />

team it was the most natural thing to step up and<br />

organise daily lunches for his family for months<br />

on end. This unconditional support is the biggest<br />

achievement of all.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

The team’s wellbeing was and is the main<br />

concern for our team. We look at ourselves as one<br />

family. The team has come alive within our new<br />

WhatsApp group and they are looking forward to<br />

our regular coffee chats/meetings/training. Seeing<br />

each other gives everyone a chance to catch up<br />

with each other while providing the latest updates<br />

on any departmental or hotel’s information. On top<br />

of these things Yogesh calls each team member<br />

regularly in person for a personalised catch up. As<br />

result of that Yogesh received a personal video to<br />

show our appreciation.<br />

PASSION is our biggest value we represent as<br />

a team in the laundry department! We have a<br />

majority of long serving team which shows us<br />

their passion and commitment.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

Our greatest achievement is to have completely<br />

refurbished the laundry! We are so proud of that<br />

and it really helps us to operate smoothly.<br />

We are also very proud to have the biggest<br />

possible score on the ‘Your View’ with 100%!<br />

Nevertheless, if we can skip pandemic year,<br />

five years ago we achieved the best sales of<br />

one million.<br />

the pandemic?<br />

During the pandemic we had an extra time to get<br />

to know each other better, we have learned more<br />

about each other’s family and hobbies. We had<br />

a biggest walk ever in Richmond Park which is<br />

really a day to remember! We have also supported<br />

different departments which was highly<br />

appreciated. We had an amazing celebration<br />

of the International Housekeeping Week!<br />

Within the team we have a vast array of different<br />

cultures and traditions and this with our passion<br />

for cooking means that we make some lovely and<br />

tasty food from many different cuisines.<br />

CREATIVITY runs through the veins of all of<br />

us in Marcomms and has to be at the heart of<br />

everything we do. It’s our job to come up with<br />

fun and innovative ideas to get people talking<br />

about our incredible hotels and to ensure they<br />

stand out from the competition. We thrive<br />

on coming up with fabulously creative new<br />

initiatives to ultimately help drive business. We<br />

admit, sometimes we let our imaginations run a<br />

little too wild and beyond the realms of reality,<br />

but that’s the fun of it and ‘no idea is off the<br />

table’ is our motto.<br />

From a branding and marketing side, we’ve<br />

ensured that our bank of imagery has grown<br />

enormously meaning the way we present the<br />

hotel via our online platforms and printed<br />

collateral is truly beautiful and representative<br />

of the brand. As a test of our application of the<br />

brand guidelines, we have passed the annual<br />

collateral audit with flying colours each year. Our<br />

social media presence has increased dramatically<br />

with a combined following of over 225k followers<br />

Marketing and Communications<br />

across Instagram, Facebook and Twitter (as of<br />

March 2021). We’ve also had the chance to<br />

get involved with so many fun and innovative<br />

initiatives and a few that really stand out are the<br />

opening of Parcafé in 2017, relaunching The Grill<br />

in 2019, and launching The Dorchester Rose at<br />

the start of 2020.<br />

connected as a team during<br />

the pandemic?<br />

We’ve stayed busy during the pandemic,<br />

supporting the operational teams at all three<br />

hotels with messaging, and ensuring that we<br />

stayed front of mind for guests, clients, and<br />

followers throughout, despite the restrictions on<br />

business activity. As a team, we’ve met on Zoom<br />

every week to go through the latest updates<br />

and always to have a good chat too. Our very<br />

own archivist on the team, Chris, decided to see<br />

what he could find out about the history of The<br />

Dorchester and ended up delivering over 100<br />

presentations to audiences that included The<br />

Dorchester team members, the Berkeley Square<br />

team, our global Comms agencies and the RSOs.<br />

The geographical reach was from Brazil to Japan!<br />

He unearthed lots of interesting facts and his<br />

legendary history webinars affectionately became<br />

known as ‘ChrisTV’. We can’t wait to be back on<br />

site at our beautiful hotel all together one day as<br />

we love bouncing ideas off each other in person.<br />

The challenge of Parcafé since opening its doors<br />

five years ago, was to join the highly competitive,<br />

fast paced and ever-changing coffee-shop market<br />

of Mayfair, without compromising the five-star<br />

experience, which The Dorchester is recognised<br />

for. It is thanks to our training and PASSION that<br />

this has been achieved. Our passion is reflected<br />

in our attention to details, in creating high quality<br />

hot drinks and delivering a bespoke service to<br />

every single customer that comes in. We feel very<br />

pleased that we have brought a new experience of<br />

The Dorchester to a wider public.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

We have succeeded in creating our own business,<br />

rather than taking over an existing one. This was<br />

achieved by our unique brand. Over the years we<br />

have established a regular and ever-growing loyal<br />

customer base, that clearly appreciates our topquality<br />

food and beverage, along with our friendly<br />

atmosphere. This has helped Parcafé in becoming<br />

part of the local community.<br />

We have seen our profit grow year on year, showing<br />

that we have managed despite the increasing<br />

competition in the area, to establish a thriving,<br />

recognised and popular business.<br />

the pandemic?<br />

Parcafé is one of the smallest departments within<br />

the Collection. Erik and I, as the only members<br />

of the team have worked together, in a well<br />

organised and creative way, respecting each<br />

other and appreciating each other’s personalities.<br />

During the lockdowns, we stayed connected by<br />

weekly video calls and social network. We are<br />

both looking forward to working as a team again.<br />

The key value that we can say is our focus is<br />

WORKING TOGETHER<br />

Our department works around the clock and we<br />

coordinate with several other sections.<br />

We design and prepare the highest quality of<br />

pastries for the teams that look after our afternoon<br />

tea guests, in-room dining, banqueting, bakery,<br />

Parcafé. On occasions we even supply tasty treats<br />

to sales who take them out to our local travel<br />

agents, PAs and concierge companies.<br />

achievements/milestones as a<br />

department in the last five years?<br />

The Dorchester afternoon tea in Brunei which<br />

was done by our two team members for three<br />

weeks doing up to 5,000 covers, as well was a<br />

great honour for The Dorchester culinary team<br />

to participate in The Sultan of Brunei golden<br />

jubilee serving royals from all part of the world.<br />

We started serving afternoon tea at Chelsea<br />

Flower Show in 2017, was one of the highlights in<br />

London afternoon tea market. Successfully done<br />

two continuous years bringing lot of guests to<br />

the hotel. The Dorchester was one of the highly<br />

recommended places for Christmas afternoon tea<br />

in 2019 by Vogue. As pastry kitchen is one of the<br />

busiest kitchen in the building it was a dream to<br />

build a new pastry kitchen. Last year the dream<br />

came true with our management team to approve<br />

the project and there we have one of the best<br />

pastry production kitchens in London with a selfmotivated<br />

team.<br />

connected as a team during<br />

the pandemic?<br />

During the pandemic we have managed to stay<br />

well connected through the use of technology.<br />

Since the beginning the exchange of information<br />

has been fundamental to face up the new reality<br />

of Covid-19. The training online, video calls<br />

and chats helped the whole team to improve<br />

professionally and keep connected to the<br />

workplace. The motivation has been key and<br />

helped to build a strong relationship within the<br />

department during this time.<br />

Its hard to pick one in People & Culture as we<br />

love all values and really live them every day<br />

in what we do – which is looking after all of<br />

you! If we had to choose one value it would be<br />

PASSION, as our whole team is so passionate<br />

about creating an amazing place to work for each<br />

and every Dorchester employee, and we are so<br />

proud of everything we do.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

The pandemic was challenging for all of us, but it<br />

was also an opportunity for our People & Culture<br />

team to think differently and continue to place<br />

our people at the centre. As a team we did so<br />

much! From online HIT sessions to a virtual<br />

murder mystery, creativity flowed from each of us<br />

to keep us connected throughout the pandemic.<br />

achievements/milestones as a<br />

department in the last five years?<br />

We are very proud of our achievements from the<br />

past five years. We took it up a notch with our<br />

staff parties, taking everyone to the circus, Vegas,<br />

Hollywood and beyond for our Winter Balls, and<br />

we also took to the seas for our new summer<br />

boat party. Our People & Culture team have also<br />

achieved numerous award including: HR Team of<br />

the Year 2017, Global Talent Attraction Strategy<br />

2018, London Healthy Workplace and several<br />

recognitions with the Caterer Best Places to work.<br />

One of the things we are most proud is our<br />

partnership with Manorfield Primary School,<br />

which started in 2019. Together with the school<br />

we have managed to raise over £16,000 in funds<br />

to help them complete their teaching kitchen,<br />

restock the school’s library and help fund the<br />

food distribution scheme to support over 1,000<br />

families throughout the Covid-19 pandemic. We<br />

have also helped to support the school and their<br />

newly acquired education centre by encouraging<br />

over 100 employees to volunteer throughout<br />

2020.<br />

We also focused on communication and<br />

engagement as key priorities for our people,<br />

launching DC Legends in 2018, achieving the<br />

highest engagement score ever of 9.2 in 2020 and<br />

prioritising mental health and wellbeing and<br />

putting our people at the centre of all we do.<br />

We are extremely lucky in The Promenade to<br />

have such a large, diverse and amazing team as<br />

this allows us to demonstrate all five Dorchester<br />

Collection values on a daily basis. We are a big<br />

team who continually works with each other in<br />

high pressure and busy situations it is imperative<br />

that we always have RESPECT towards each<br />

other. Being the outlet that is described as the<br />

heart and soul of the hotel means we are an<br />

extremely busy department with lots of guests<br />

to look after! By WORKING TOGETHER<br />

as a team we deliver that flawless service/<br />

experience to our guests. To ensure that we do<br />

deliver the flawless service, our team needs to<br />

be passionate about what they do. The guests<br />

experience wouldn’t be as incredible and world<br />

renowned if the team didn’t have the PASSION<br />

for what they were doing! The PERSONALITY<br />

of each individual is one of the strengths of<br />

The Promenade. We have countless regular<br />

guests who return time after time so they can be<br />

looked after by that team player they have built<br />

a relationship with over the years! Personality<br />

plays a huge role in this but so do the other<br />

values mentioned above. We have seen a massive<br />

amount of CREATIVITY from our team in the<br />

last year due to Covid. The innovative idea’s<br />

they have come up with for our weekly meetings<br />

and team buildings arising during the lockdowns<br />

have all been amazing and so have the ideas they<br />

have brought to the table for how we operate<br />

in our ‘new normal’ environment. These ideas<br />

on how we can operate have helped us create a<br />

safe working environment and also a safe and<br />

enjoyable environment for our guests.<br />

department in the last five years?<br />

The team has won the certificate of excellence<br />

award year on year for the afternoon tea service,<br />

Danny Mook won the Trainer of the Year Award<br />

in 2016, the team has gelled and worked towards<br />

exceeding the budget in the month of December<br />

2018 and October – December 2019, some<br />

spectacular sales took place in the department<br />

thanks to the training program that has been<br />

intensified, the introduction of incentives and<br />

the relationship created with certain guests<br />

was key, the team survey score had the greatest<br />

improvement in October 2019.<br />

connected as a team during<br />

the pandemic?<br />

At the beginning of the pandemic we created a<br />

WhatsApp group so we could all stay in touch<br />

and share updates as we got them. Throughout<br />

the year the team has shared pictures, celebrated<br />

birthdays and also cheered for the milestones<br />

were crucial as quite a lot of the team live by<br />

themselves. The importance of these weekly<br />

group get-togethers can’t be underestimated as it<br />

gave everyone friendly faces to see! We also held<br />

different training sessions, enjoyed pub quizzes<br />

together and had a few ‘Happy Hours’ to start<br />

the weekend. Our team have worked together<br />

for a long time and get on very well so they did<br />

also call each other to check they were ok during<br />

the course of the pandemic. The Promenade<br />

management team reached out to us on a weekly<br />

and sometimes daily basis to the team to keep<br />

a close eye on their health and wellbeing.<br />

Lane, providing support and train as best we can.<br />

We are passionate about maintaining the high<br />

standards of cleanliness and hygiene, established<br />

during the pandemic. We are passionate about<br />

what we do. Our activities touch every aspect<br />

of hotel operations and we want that passion to<br />

the obsolete stock that had to be dealt with as<br />

- Transforming the loading bay during the first<br />

lockdown, with a minimal budget, to make a<br />

larger, airier and safer work environment<br />

- Introducing the Docuware based new supplier<br />

on boarding process, which has made that<br />

process considerably more rigorous and<br />

Our team went through something of an evolution<br />

during the pandemic. We lost five team members<br />

and welcomed the return of Tatjana from<br />

maternity leave and Dominic from the graduate<br />

program. That is a turnover of almost 50%<br />

At times, we have been working together in small<br />

or medium sized groups in the hotel, but our<br />

entire team had not met together for almost a<br />

year now.<br />

Throughout this period, we have never lost touch.<br />

Team Zooms, either serious or frivolous have been<br />

our main lifeline, but there have been countless<br />

phone calls and smaller group chats as well.<br />

All of the Dorchester Collection values are<br />

at the heart of what Sales, Marketing Team<br />

does, however we believe that PASSION,<br />

and WORKING TOGETHER are the ones<br />

leading our team spirit daily. Last year taught<br />

us a lot about agility and adaptability and<br />

we could not have been happier to show<br />

our support to the company by bringing our<br />

values to support other departments.<br />

achievements/milestones as a<br />

department in the last five years?<br />

Many of the team have been with us for the past<br />

five years, which makes us proud of growing and<br />

developing colleagues within our department.<br />

Tenacity and determination is strong amongst<br />

us and certainly helped us in achieving the best<br />

results in the history of The Dorchester in 2018<br />

for both transient and group sector, which was<br />

incredible! Marketing and Communications took<br />

on refreshing our website and launching new<br />

campaigns including re-launch of The Grill with<br />

their own Instagram page that was also a great<br />

success. We take each day and try to make the<br />

most of it: from a site inspection (we brought a<br />

car into the ballroom to help client visualise the<br />

event with us), Instagram post to fabulous events<br />

we get to host our clients. In the end, whenever<br />

we see clients returning to us and rebooking their<br />

events/stays, we consider it a great achievement.<br />

What did you do to stay<br />

connected as a team during<br />

the pandemic?<br />

We are grateful we have had our leader available<br />

throughout hosting Monday - Friday 10 am Zoom<br />

call as well as weekly updates every Thursday<br />

mainly for us to gather and talk, ask questions<br />

and most importantly see each other. We have<br />

also had plenty of fun on departmental Bingo<br />

and Charades calls (with winners receiving care<br />

packages via post) and joining events organised<br />

by People & Culture team e.g. Boot camp<br />

with Simon, pub quiz, book club and various<br />

masterclasses. We didn’t let the time slip without<br />

us learning something new either and worked<br />

on multiple projects around the hotel and<br />

department (painting the corridors, finalising<br />

CCD project etc.), joined revenue focus group<br />

and followed updates on everyone markets on a<br />

weekly flash report.<br />

Working Together immediately springs to mind!<br />

As a department, we welcomed team members<br />

from several departments to assist us in keeping<br />

the hotel and our guest’s safe during the several<br />

lockdowns we have experienced. With flexibility<br />

and creative thinking put to the test during the<br />

last year of lockdowns and semi openings, the<br />

Security Department strives to, as always work<br />

as a team, look after one another during these<br />

testing times and celebrate the victories achieved<br />

by The Dorchester and 45 Park Lane.<br />

interested parties, liaising and working with<br />

the Metropolitan Police, London Fire Brigade<br />

or London Ambulance Service in emergencies,<br />

assisting guests and staff members whenever an<br />

incident or accident occurs or keeping a watchful<br />

eye in the lobby, we strive to be of service to all<br />

staff and guests of the hotel. The work put in<br />

behind the scenes has culminated in the delivery<br />

and roll out of the most up to date and current<br />

procedures within the Security Department<br />

and the hotel as a whole for the last decade. This<br />

however is merely the beginning of the road for<br />

the department and stay tuned for more to follow!<br />

The last 12 months at The Dorchester has<br />

galvanised the Security Department into what<br />

it is today! A lot of the work carried out by the<br />

team is done out of the public eye and in many<br />

ways the eyes of team members at the hotel.<br />

And it is here where the magic and the hard<br />

work take place that binds us as a team and as a<br />

department. Whether it is escorting celebrities/<br />

politicians around the building out of sight of<br />

We as a Security department worked throughout<br />

the pandemic that started in March 2020. As a<br />

department, we pride ourselves on holding the<br />

fort whilst our colleagues are not here. In many<br />

ways, it has been a blessing in disguise. Being<br />

able to see members of the team regularly made<br />

sure that we as individuals had the opportunity<br />

to talk to one another when at work. Social<br />

interaction is very much a human trait, and in<br />

many respects where the rest of the world suffered<br />

due to a lack of interaction, we as a department<br />

had the chance to catch up and even get to know<br />

one another better, as not only staff members<br />

working at The Dorchester, but as people.<br />

‘WE CARE’ runs in our veins at The Dorchester<br />

spa. Whilst we live all the values, we are most<br />

proud of RESPECT. We all originate from<br />

various places in the world and have various<br />

amounts of experience. Spa teams are naturally<br />

sensitive souls and with that, comes intuition and<br />

empathy. Our aim is to make sure everyone feels<br />

comfortable at work so that they can perform<br />

well at their job and let their skills shine. We<br />

encourage every team member to check their<br />

colleagues are ok, both in the spa and in the rest<br />

of the hotel.<br />

What are your greatest<br />

achievements/milestones as a<br />

department in the last five years?<br />

Understanding our guests and marrying up<br />

their needs with our skilled therapists has been<br />

a highlight for us. It is wonderful to hear the<br />

fantastic feedback from guests when they leave<br />

the spa and then rebook with their favourite<br />

therapist. By listening to our guests needs,<br />

the team have achieved some record breaking<br />

Valmont retail sales. We have also promoted<br />

various team members to more challenging roles<br />

so that they can develop their skills. Our team<br />

have helped out at The Spa at Coworth Park and<br />

The Spa at Mayfair Park Residences. They have<br />

also done a phenomenal job in adapting to how<br />

we operate in light of the pandemic. They have<br />

adopted our ‘new normal’ with ease and have<br />

continued to delight our guests.<br />

Our skin care suppliers provided remote training<br />

courses and we also received training from other<br />

skin care houses such as ESPA and Nature Bisse.<br />

We meet each team member individually each<br />

week by WhatsApp which has really allowed<br />

us to get to know each other even better. Our<br />

weekly team meetings have been great fun too.<br />

We have had a number of quizzes, shared our<br />

baby photos as well as our first day at school<br />

photos. Bingo always made us laugh and Mario<br />

helped judge a pizza making competition. We<br />

even danced together – The Twist and Reaching<br />

for the Stars!<br />

Completely overhauling the complete IT<br />

infrastructure, culture and methodology – all<br />

whilst keeping everything running at the same<br />

time. This takes a great deal of planning and<br />

creativity and a willingness of every team<br />

member to invest in the new vision of IT that’s<br />

been adopted. The enforced transition of 200+<br />

colleagues to working remotely in a matter of a<br />

few days leading up to lockdown 1.0, cemented<br />

the belief that nothing is impossible.<br />

WORKING TOGETHER – Three hotels, one<br />

residence, 500+ users, 2,000+ assets – one team.<br />

It takes an enormous amount of collaboration,<br />

communication and teamwork to keep all of<br />

these moving parts in harmony. This team<br />

epitomises our ‘Working Together’ value.<br />

We have worked continually throughout the<br />

pandemic and have actually been busier than<br />

ever, trying to perform as many disruptive<br />

tasks as possible, with the opportunity of<br />

the hotels being closed. We have religiously<br />

met virtually twice a week to discuss plans,<br />

projects, team wellbeing and generally<br />

keeping the team together. These calls<br />

often last around two hours, so everyone has<br />

ample opportunity to participate and put<br />

forward their opinions. Long may this practice<br />

continue – but hopefully face-to-face soon!<br />
